S OUR BELOVED CIT Y OF HOUSTON CONTINUES TO RECOVER FROM THE HAVOC OF HURRICANE HARVEY, our own office warehouse has become the new home for the Harvey Relief Hub, now rebranded as the Houston Relief Hub. First the forklift arrived, and then the volunteers followed. Then, supplies by the truckloads! At our humble but spacious warehouse in The Heights, volunteers sort donations, assist those in need and support local relief centers. Thanks to the efforts of Houstonians like Bill Baldwin, Erin Locke, Chris Brombacher, Pablo Vega and Rick Smaile, donation centers like the Houston Relief Hub are still going strong after 90 days in operation. The Harvey Relief Hub started by helping Houstonians find food, housing and other basic necessities, and now, as the Houston Relief Hub, it also supports Hurricane Maria relief efforts in Puerto Rico. Donations and volunteers are welcome and appreciated, and if you’re in a position to make a monetary donation, please do so at houstonreliefhub.org. Inside When the IRS’ Eyes Began to Cry
T The new budget will set us back a measly couple of trillion dollars. by Lynn Ashby

HE EVENING NEWS – Here is one of Donald Trump’s daughters—I can’t tell which one, they are all beautiful—standing in front of the White House saying, “I will be traveling across America, and on April 15th will be seeing how happy everyone is to have their taxes cut.” Beautiful, but clueless. April 15 is the deadline for filing our 2017 taxes, last year, under Obama. President Donald Trump’s tax cuts don’t go into effect until 2018. Nevertheless, it’s easy to get confused over the new budget and how it will change our taxes, our medical coverage and the coffee we drink. It’s called America First: A Budget Blueprint to Make America Great Again, and costs $4.1 trillion. Your share is every dime you’ll ever make, plus money earned by your descendants even until the fifth generation. During the last presidential campaign, we were told we could fill out our federal income taxes on a postcard. But do you really want your postal carrier knowing how much you make in light of that crummy Christmas tip you gave him? Anyway, let’s look at the new blueprint: Trump has said he wants to “restrengthen” our military—despite the fact that we spend more on our military than the next six nations combined, upwards of $650 billion a year. Expanding our military has more to do with air bases and naval docks in Congressional districts than defense. The Pentagon today is not so much a war machine as a jobs program. In the 2018 defense authorization bill, Congress called for strength increases, including 8,500 new soldiers, 5,000 new sailors, 5,800 new airmen and 1,000 new Marines. Trump has also
publicly promised a 355-ship Navy and at least another 100 combat aircraft for the Air Force. This is in keeping with his campaign promise to “take care of the generals”—General Dynamics, General Motors and General Electric. Elsewhere, the Department of Homeland Security gets increased spending on border security, and to build a wall on the U.S.-Mexico border, despite promises that Mexico would pick up the tab. You are now a citizen of Mexico. How will we pay for all of this? We won’t. After eight years of screaming about the Obama administration’s deficits and debt spending, this GOP budget will increase the national debt by— hang on—$1.4 trillion. Assuming current programs remain unchanged, the federal debt will swell by an additional $9.4 trillion over the next decade. Our children will understand. Still, the new budget does cut some wasteful spending, like on education, pollution and health. Smokey the Bear is going on welfare: The budget eliminates more than 4,000 jobs in the Department of Interior, and decreases funding for the United States Forest Service. Hey, California, you don’t really need all those trees, do you? It cuts funds to NOAA. Houston, you’ll be happy to know that the budget reduces funding for FEMA. The EPA, that pesky agency that tries to protect us from acid rain, coal sludge in our creeks and air you can climb, will eliminate more than 50 programs and 3,200 jobs. It will cut funding for the protection of endangered species, like conservative Democrats and moderate Republicans. The State Department’s budget will be reduced by almost a third— 29 percent. Here’s something we can all support: The new budget will
reduce funding for the Internal Revenue Service. But according to press reports, “Since 2010, Congress has cut the agency’s budget by nearly $1 billion, or 18 percent, as the IRS processes about 10 million more tax returns.” Its workforce has been reduced by 21,000, or nearly one-quarter. This means when you try to call the IRS for advice and help in filing your own returns, you will be put on hold for like three days. The size of the compliance staff—the pros who go after tax evaders—will shrink by one-third, so a lot of tax cheats will be able to dodge Uncle Sam. Guess who gets to make up the difference? I suppose we’ll never see Trump’s income tax return. We are promised lower federal income taxes, but maybe not. Our first clue was the lobbyists circling above the Capitol. Stealing from other researchers, I find that a law was passed in 2004 giving companies a tax break on income that manufacturers earned from making things in the United States. Starbucks’ lobbyists claimed that it, too, was a producer, because the company roasts coffee beans. Deduction allowed. Then movie studios got the break because they produced films, and tech giants won it next for making computer software. Construction companies got it for making buildings, and so did engineers and architects for designing them. The government initially estimated that the 2004 law would cost a net $27.3 billion from 2005 through 2014. It ended up costing more than $90 billion during that period. Finally, I’m all for cutting out fraud and waste, like weekly golf trips on Air Force One to Mar-a-Lago. I’ll run it by the Trump daughters. H Ashby pays at ashby2@comcast.net

RIGHT AND SHINY AS A NEW PENNY, 2018 HAS PRESENTED A NEW YE AR FILLED WITH HIGH HOPES AND EXPECTATIONS. But dark memories and struggles of 2017 remain. Yes, in August 2017 we witnessed the worst destruction to our city that we have ever encountered: the horrors of Harvey. We also experienced the heroism of Houstonians, where the true heart of the city was on display. Houston gained the admiration of the nation and the world. The courage and generosity of neighbor helping neighbor has inspired us all. As though a gift from the universe, a guardian angel wrapped its gigantic wings around us, and the Houston Astros won the World Series. Through all the suffering and devastation, spirits soared. #houstonstrong

What of the restauranteurs, bakers and individuals who provided tens of thousands of meals for first responders and evacuees forced into shelters, and those who provided clothes and temporary bedding? What about those who could and did provide money, and those who provided toys to comfort the misplaced children and those who came out to entertain them? (We’re looking at you, Spiderman!) There are too many acts of kindness that occurred that can possibly be enumerated, but here’s what we learned: Harvey did something that was inconceivable. It united the hearts and souls of 6 million people in Houston and its surrounding areas.
HEROES AND ANGELS AMONG US Can too many words be written about JIM (MATTRESS MACK) MCINGVALE, who opened his stores to allow evacuated people refuge and a bed on which to sleep? Can too many words be written about J.J. WATT and his fund-raising efforts that started with a goal of $1 million, and landed at a figure around $37 million? Can too many words be written about CARLOS CORREA, who led the drive for the Houston Children’s Charity Relief Fund to provide $500,000 for those in need and to put 5,000 children back in beds? Putting Correa over the top was the last $100,000 donation from the Houston Astros. And what of those who provided boats, canoes and

Theatre, a New York-based company in 1986. MAREITTA MARICH was an actress, singer, writer, stage director and television host. Longtime Houstonians will remember that she hosted the television show Midnight with Marietta and operated several live theaters in Houston of which she was principal director. She originated the role of Miss Mona in the first Houston version of The Best Little Whorehouse in Texas. She sang with the Tommy Dorsey Orchestra. Nationally, she was best known for the her role in The Texas Chainsaw Massacre. LORRAINE GEORGE, founder and artistic director of A.D. Players, was a pioneer in Christian theater, Golden Globe–nominated film and stage actress, playwright, author, Bible teacher, radio personality and national speaker. To the Houston modeling world: ELSA ROSBOROUGH, the original Houston model and DALLAS HILL, a well-known model and artist. Pass. Scientists from the Perelman School of Medicine at the University of Pennsylvania found that prolonged delayed eating could lead to a slew of health issues, including weight gain. Nine healthy adults underwent two separate trials: In the first, they ate three meals and two snacks between 8 a.m. and 7 p.m.; they ate the same foods in the second, but from 11 a.m. to 9 p.m. People not only packed on more pounds in trial number two, but they had higher cholesterol and decreased energy levels, plus an uptick in hormonal markers related to heart disease and diabetes. On the flip side, there was a spike in the levels of leptin, the hormone that keeps you feeling full, in the early eaters, which researchers speculate helped to prevent night noshing, a common pitfall dieters make. —Amanda Altman

In the study, 800 subjects were asked to respond to a series of computer-based q’s that measured cognitive capacity (how well the brain can store and process data); some were randomly instructed to put their silenced phone facedown on a desk beside them, others in their pocket, bag or in another room altogether. Those who had their cell in a different room performed the best—much better than those with their phone beside them and slightly better than those with their device tucked away. Society The Children’s Museum of Houston and Houston’s philanthropic community raised more than $975,000 at the museum’s Miami Vice–themed gala. The fundraiser, which took place at the Corinthian, focused on continuing the development of educational and outreach programs at the museum. Co-chaired by Dr. Devinder and Gina Bhatia and Molly and Matthew LaFauci, the scene captured The Magic City’s exquisite nightlife and palm tree-filled essence. More than 500 guests in white suits, aviators and kinetic colors danced the night away to the sultry sounds of ’80s pop. The museum also displayed a white Ferrari Testarossa, thanks to Valobra Master Jewelers. To keep Houston’s children strong, the museum, in conjunction with the Houston Food Bank, devoted part of the live-auction proceeds to help families affected by Hurricane Harvey. The museum’s Fresh Café and the Houston Food Bank will provide enrichment programs and meals to nearly 4,000 children each week at community centers in affected neighborhoods.

VEN THOUGH PARTS OF THE BUILDING SUSTAINED DAMAGE FROM HURRICANE HARVEY, The John P. McGovern Museum of Health and Medical Science recovered quickly and is now featuring two dynamic exhibitions: Human Plus: Real Lives + Real Engineering and 40 Chances: Finding Hope in a Hungry World–The Photography of Howard G. Buffett. Human Plus offers a fascinating peek into the process of developing brand-new engineering solutions to improve human lives in a range of ways, from brain-machine interfaces, to body replacements, to technologically advanced tools that push human potential beyond all limits. Included in the exhibition: a touch panel that converts music into vibrations for the hearingimpaired; a computer mouse that is controlled by slight movements of the head; and even a neuroprosthetic limb that can be controlled by a person’s thoughts! Forty Chances reveals Howard G. Buffet’s quest
to document the world-hunger crisis as part of a global awareness campaign. Through 40 powerful photographs, Buffet, a philanthropist and farmer, depicts his call to action to find solutions for hunger and poverty. The exhibit includes important, life-saving educational activities such as learning the basics of origami gardening, water purification and surviving on food from povertystricken countries. and performed its epic rendition of Tchaikovsky’s Swan Lake, including the rarely seen Waltz of the Black Swans. Composed in 1875, Swan Lake tells the story of Prince Siegfried and the beautiful Odette, who has been transformed into a white swan by an evil sorcerer.

Houston-based blogger and lifestyle expert Caroline Harper Knapp knows a thing or two about effortless entertaining. Here she shares her best tips for seamlessly adding those little touches that everyone will remember.
The Art of Helping Tragedy often inspires creativity. But local artist Erick Sandlin takes it one step further, using his talent to help others in need. A litigation attorney by day, Sandlin picked up spray painting as a hobby, but his art quickly drew outside attention. Using wood and cotton canvases, Sandlin works exclusively with spray paint, a particularly fickle medium. “I’m just letting the creative process control it instead of trying to force something to happen.” Clearly, his technique is working— his pieces are abstract, mesmerizing and oftentimes don’t look like they were created with spray paint. They’ve been displayed at art shows and in various businesses, churches and galleries around Houston. Hurricane Harvey was a blow to Houston, and to Sandlin personally: “I live in the Heights, and the water flooded up my porch steps and into my backyard, where I paint. When the water

finally receded, I went into my backyard to paint and reflect on my own personal experience of the past five days.” The piece Sandlin created, splattered with raindrops, captured the emotions, the chaos and the confusion many felt during Harvey. Sandlin sold the original painting to the highest bidder, and then began selling prints; the proceeds of all the sales were donated to the Hurricane Harvey Relief Fund. He continues to sell prints and give to hurricane relief efforts, and also donates proceeds from the sales of his other paintings to various charities, such as Art for Hope, Heart and Harmony (benefitting health care for the homeless) and Advocate Through Art and Color and Sound (providing care for those with HIV). ET UNDER A MORE-THAN-ACENTURY- OLD OAK TREE , THE NAMESAKE OF THE OAK TREE MANOR BED AND BRE AKFAST, the Bridal Extravaganza team enjoyed a carefree photo shoot, featuring beautiful bride-to-be, Sidnie Dangel. A native Houstonian, Sidnie is planning a spring wedding to her beloved fiancé, Blake Williams. The couple met in college at the University of Mary Hardin-Baylor. Blake is a local, from a small town near the college, and when they met, he really helped Sidnie warm up to small-town life. When it came time to pop the question, Blake had a traditional proposal planned for his big-city gal. Late this past April, Blake was scheduled for his cap-and-gown senior photo session in
Salado, TX. He asked Sidnie to accompany him so they could squeeze in a couple portraits. During the shoot, Blake casually asked the photographer to snap some shots of just Sidnie. As she sat, looking picturesque on a stone ledge next to a lively creek, Blake stepped in and took one knee. From his pocket, Blake removed several slips of paper Sidnie had given him on their first Valentine’s Day together. Each sweet note described something she loved about him and their relationship, and each one brought back a flood of memories. Through her tears, she saw his next offering, a wooden ring box. He popped the question, and without hesitation, her answer was yes. Luckily, the photographer was already on hand to capture the spontaneity of their special moment. Sidnie thought she couldn’t be happier after Blake slipped the ring on her finger, until both of their families appeared from over the hill to congratulate them and share in their joy. Small-Town Proposal
Manor, just on the outskirts of town in Spring, TX, was designed to capture the essence of a smalltown bride. A selective team of experts were onsite to style the shoot. According to beauty stylist Mayra from Simple Beauty Artistry in Houston, “these days brides are looking for whimsical hair with braids and lots of body.” She achieved this look on Sidnie using high-quality, braided hair extensions. Mayra did Sidnie’s makeup to accent her bright-blue eyes. The glamorous gown chosen for the shoot was a billowy ball gown, featuring three-dimensional floral lace appliqués, with an illusion neckline and a cathedral-length train. Hand-picked from the Mori Lee Wedding Dress collection, this gown is available at Ventura’s Bridal Fashions. Floral artists Belinda Lewis and Michelle Woodward created two exquisite bouquets for

Oil's Well That Ends
Well ...maybe. One thing’s for sure: There’s a new meaning to the term “Spindletop.” by Lynn Ashby
B “
UT I’M NOT IN THE OIL BUSINESS,” I PROTESTED. Glenn McCarthy, aka Jett Rink, leaned over his desk, in front of a huge blowup of a Time magazine cover hanging on the wall behind him featuring—one guess—Glenn McCarthy. “Son,” he said. “We’re all in the awl bidniss.” He was right, of course, at least in Texas and particularly in Houston. Oh, sure, we like to say that we are diversified with NASA, the Port of Houston and the Texas Medical Center (indeed, the Methodist Hospital System is the singlebiggest employer in town), but it’s still about oil and gas, and when that industry sneezes, like in fracking, the Houston economy comes down with double pneumonia. But what happens when the music stops? Nothing lasts forever, as the steel industry told Pittsburg, clothing and furniture told North Carolina and when Kodak said goodbye to Buffalo. As for coal, sorry, West Virginia. There will always be an energy business, but it may not be with oil derricks, gas pipelines, the Petroleum Club and OPEC. Even the Houston Oilers have left town. Energy is abandoning dead dinosaurs and turning to other forms of feedstock far more rapidly than even the experts forecast. Here are just a few examples I have plagiarized from researchers:
• In China, solar capacity more than doubled this past year. Just think: In a few years the Chinese may be able to see their toes. What about nuclear power? Like coal, the nukes may be in retreat. Electricity generated by wind, solar and hydroelectric sources in March and April 2017 exceeded power provided by nuclear plants for the first time in more than 30 years, when nuclear plants were still coming into the power mix, according to the U.S. Department of Energy. A BUMPER CROP There is another major item to consider about Houston’s future in the petroleum game. During our lifetime, we shall continue to see cars, trucks and planes, but what will fuel them? Maybe not gas nor diesel. Detroit and its European competitors are betting on electricity. (Of course, electric cars don’t generate their own electricity. That comes from oil, gas, coal or corn stalks.) General Motors, America’s largest car maker, announced in October plans for 20 new all-electric models, including two within the next 18 months as of press time. Ford followed by announcing that it would add 13 electrified models over the next several years, with a five-year investment of $4.5 billion. Tesla has begun delivering its Model 3 to customers, and has backorders through the end of 2018. The following year, 2019, looks even better. All Volvos will be hybrids or 100 percent electric beginning in 2019. This comes from Volvo’s CEO who admitted he had been wrong to resist clean technology, and that his customers expect better. CEO Hakan Samuelsson also said his company is moving toward all-electric power trains. Volkswagen, another European car maker that has poo-pooed new engine types, plans to phase out the internal combustion engine. The company will roll out two SUVs, a sedan and a hatchback that are battery powered in 2019. Renault, the French carmaker, has announced that half its models will be electric or hybrid by 2022.

• The amount of solar energy installed on the world’s power grids increased 50 percent year over year in 2016, according to a report by the International Energy Agency or IEA. • Between March 2016 and March 2017, wind power increased by 16 percent and solar power by 65 percent. That growth is expected to continue this year, with wind power projected to increase another 8 percent and solar generation for utilities jumping 40 percent. • While renewables, mostly wind and solar, accounted for more than 10 percent of U.S. energy consumption, natural gas use has risen in the past decade. In 2016, natural gas use was about twice that of coal, according to the Energy Department.

Guilty as Charged A MAJOR DRAWBACK TO ELECTRIC CARS, AND THUS A PLUS FOR THE HOUSTON ECONOMY, IS THAT THEY REQUIRE CONSTANT CHARGING, AND THAT CAN BE A REAL PAIN IN THE CRANKCASE. Right now, you may need an overnight charge to drive off the next morning. Even at a commercial charging station, a charge can add an hour to your trip. There are two kinds of chargings: Level 1 is an AC outlet of between 1 and 1.5 kilowatts of juice—like powering your lamp or PC. That will give your Ford Focus a range of 115 miles, but takes 30 hours to fully charge. Level 2 is a professionally installed 240-volt outlet, the same kind used by your electric clothes dryer or oven, cutting the charge time to about 5.5 hours. Even more powerful are fast chargers that can fire up that same Ford Focus to reach a 90-mile range in 30 minutes. Tesla has a gizmo that will give its cars a 300-mile range in 75 minutes. Better ranges and shorter charging times are on the way, but currently, so to speak, you wouldn’t want to drive your Focus to Marfa unless you bring along an extremely long extension cord.
Elsewhere, six new models are on the way, including long-range cars from Audi, BMW, Jaguar and Mercedes-Benz. Note the abundance of European car companies getting in on the clean-air act. But many of their potential customers aren’t Europeans at all. They’re Chinese. These statistics send mixed messages, with solar usage going up as well as the number of electric cars, but, on the other hand, gas guzzlers are still here, so what are we to think? The Big Mo is for reusable energy, while the future of cars and trucks seems to be running on something other than the traditional combustion engine. What is Houston to do? First, don’t panic, we still love our oil biz. Petroleum remains the fuel used most in homes and businesses, and petroleum consumption has increased every year since 2012. Second thing to do: panic. As we have seen, natural gas consumption has increased mightily, but coal is dead. Act accordingly. Another idea: Texas has a forest of oil derricks scattered over the land. We put wind-driven propellers on the derricks, and watch the money flow in. Gives a whole new meaning to the term “Spindletop.” One more idea: Solar, wind, hydropower and other sources combined for a global increase in renewable capacity of 6 percent last year. Renewables made up 24 percent of total electricity output, with 70 36

percent coming from hydropower dams. Get that last part—hydropower dams? Hydro power increased by 14 percent from a year earlier. Thousands of Houston homes, including mine, were flooded because the U.S. Army Corps of Engineers built and maintained the Dams That Didn’t Dam. Hook up those useless levies and locks and floodgates to hydropower generators, then splice them onto our power grid. We can have free electricity while we bob for our furniture. SUN STROKE OF LUCK Pilgrim, welcome to your new home, but Houston and Texas didn’t begin the day you stepped off the United flight from Cleveland. Our economy started with small farms and ranches. Southerners brought the cotton industry and slaves to Texas in the 1840s and later. During the Civil War unfenced ranchland and a lack of cowboys allowed cattle to run free and reproduce. When Johnny Reb came home, he saw an ocean of cattle–about 7 million–and a northern market. Cattle drives kept the Lone Star State in business until Spindletop. It’s been oil and gas ever since. Cotton, cattle and oil. If timing is everything, Texas was lucky because in each case, one industry petered out just as another one arrived. So what’s next? Let’s examine one of the major suspects that might reduce Houston to a third-world economy:

the sun, specifically solar energy. It’s booming. Solar energy installed on the world’s power grids increased 50 percent year over year in 2016 (see page 33). One reason for this huge jump is the decreased cost of what the sun charges. Last year Dubai reported receiving bids on a segment of its desert solar farm of less than 3 cents per kilowatt hour—that compares to customers in the United States paying 12 cents per kilowatt hour. It won’t be long until power, that is electricity, will run our AC and the warehouse freezer will be getting cheaper and cheaper. WIND AT OUR BACKS—AND BUCKS Now I’d like to say a few words about Texas. It produces the most wind power of any U.S. state, accounting for 12.63 percent of the electricity generated in Texas in the 12 months ending October 2016. The wind biz in many parts of Texas is very large. Farmers and ranchers may lease their land to wind developers, creating new revenue. Wind power has created more than 24,000 jobs for local communities and the state. Texas wind power is seen as a profitdriven leader for America. We’ve got windmills in the Panhandle, and along the Gulf Coast. Wind turbines are on the windswept high plains of the Llano Estacado, Lubbock County. The Roscoe Wind Farm, near the town of Roscoe— wherever that is—is the largest wind farm in Texas. While there are upwards of 10,700 wind turbines currently operating in Texas to generate electricity, there are still 80,000 windmills operating in Texas for pumping water. This shows the growth potential still left for windpower generation. The wind boom here was boosted by new rules and quicker transmission construction, the latter being a major part of the mix. I mean, we can generate all the electricity, we want in Pecos but it has to get it to Dallas. This brings us to an
odd situation. Starting in 2008, the wind powerdevelopment boom in Texas outstripped the capacity of the transmission systems. Until 2008, the growth in wind power “piggybacked” on existing lines, but had almost filled to capacity. As a result, in winter the West Texas grid often had such a local surplus of power that the price would fall below zero. Free electricity for everyone! Incidentally, wind power has a long history in Texas. After building his house, or sometimes before, a Texas pioneer would erect a windmill. West Texas State University (now Texas A&M South of Amarillo) began wind energy research in 1970, and led to the Alternative Energy Institute (AEI) in 1977. It has been the go-to source of major information about wind energy for Texas ever since. Our major concern in all of this is the usual: What’s in it for us? We have already discussed some possibilities, but it might be a good idea to sell your ExxonMobil stock, along with any investments in the coal industry. Buy shares in manufacturers of windmills, electric cars and dams that work. Natural gas has no smell. An odor is added so we can run away when we detect that gassy smell. Electric cars make no noise, thus pedestrians can’t dodge the oncoming Tesla. Invent a moderately loud sound that will, by law, be installed in every electric vehicle. Consider moving to a house along the Houston Ship Channel. You see, with no oil refineries there, there will be no smog pouring out of smokestacks, and Houston will be free of air pollution. However, remember that President Trump’s 2018 budget proposal cuts funding for clean energy research by 70 percent, slashing it from $2.1 billion to only $640 million. So get ready for major changes in the Houston economy, and don’t say you weren’t warned. But right now, Son, we’re all in the awl bidness. H

LEGENDARY GOLFING In the early 1990s, a man named Dr. David 42

Bronner managed the retirement systems of Alabama. He felt strongly that the state’s pension fund would stay healthy if its investments were diverse, and believed that building and operating a group of championship golf courses would be a sound investment. Somehow he convinced legendary golf course designer Robert Trent Jones to come out of semi-retirement to design the courses for this huge undertaking. The original courses opened in 1992 and 1993, with seven locations and 324
holes of first-class championship golf. It became known across the golf world as the Robert Trent Jones Golf Trail (RTJGT), and has since expanded to 26 courses in 11 locations around the state. These courses were designed to challenge the world's best golfers while still providing an enjoyable and memorable round for beginners and casual golfers. Five of the locations are in Northern Alabama, between Birmingham and Huntsville. These courses are particularly spectacular because
they incorporate the beauty of the many lakes and rivers in the area as well as the stunning Southern Appalachian Mountains. Elevated tees and greens with gorgeous panoramic views are common on these courses. Here are the details on two of the can’t-miss courses: SILVER LAKES Located near Gadsen, AL, Silver Lakes is one of RTJGT’s premier locations, with 36 holes of forests, wetlands and grasslands. There’s a short course and three championship nines named Backbreaker,

Mindbreaker and Heartbreaker. Surrounded by the Appalachian foothills and Lee’s Lake, they each provide their own unique challenges and beauty, and feature dramatic elevation changes. All 36 holes boast Champion ultradwarf putting surfaces. HAMPTON GROVE This location outside Huntsville has two championship courses: the Highlands and the River course. It also features an 18hole links-style short course. The Highlands course was renovated in 2008 and restored
to its original Scottish links design; longwaving grasses frame rolling terrain and many fluctuations in elevation. The River course is mostly flat as it winds its way along the Flint River, and has the distinction of being the only RTJGT course with no bunkers. Before thinking that might make it an easy course to score on, take note that it has water on 16 of the 18 holes! The course features massive oak trees, including an enormous, 250-yearold black oak behind the 18th green, touted as the third oldest in the state.
Green fees along the RTJGT average $50; during peak season, the highest fee at most courses is $64. MORE GOLF HEAVEN There are other great courses to play in North Alabama that are not on the RTJGT. Twin Bridges Golf Club in Gadsen is a 6,800-yard layout set along the Coosa River featuring Bermuda fairways and bentgrass greens. This course is enrolled in the Audubon’s Silver Signature Sanctuary program, which integrates natural resource conservation
with economic progress and community education. It has a beautiful clubhouse atop a bluff overlooking the river, and houses a fully stocked pro shop and clubhouse grill. After golf, head over to Local Joe’s at Little Bridge Marina. Relax indoors or outdoors and enjoy some of the best smoked barbecue anywhere. Get the ribs! Heading north, about halfway between Gadsen and Huntsville, is Guntersville. It’s nestled along scenic Lake Guntersville, home to Guntersville State Park. Alabama has six state parks

with lodges and golf courses. The lodge and convention center at this location is outstanding in every way: It sits atop a foothill overlooking the lake, and each modern room has its own balcony with incredible views, not to mention the amenities of a fine hotel. The dining room and cocktail lounge are also excellent. Across the road is The Eagle’s Nest Course at Lake Guntersville State 44

Park. This unique course sits on top of Taylor Mountain and offers golfers majestic mountain scenery. It has many elevation changes throughout the course; the fairways are wide but tree-lined, and welcome strolling deer from time to time. Also located in Guntersville is a course that is a true masterpiece called Gunter’s Landing. Some of the views from the tees will take your
breath away, as they overlook the mountains and the Tennessee River. The elevation changes are dramatic, and some of the par-3s are over gorges. The staff goes the extra mile to make your golfing experience one you won’t forget. About 10 miles from Guntersville, in Union Grove, AL, is a treasure known as Cherokee Ridge Country Club. This beautiful tract features a 17-acre lake on the front nine and an 80-foot waterfall cascading into Lynn’s Creek on the back 9. The lush fairways are Bermuda, and the greens are bentgrass. The signature par-3 fifth hole features five separate tees with bulkheads on the lake— it’s a photographer’s
dream. Cherokee offers lodging at the newly renovated sevenbedroom Lake House overlooking the course and the lake. This Cape Cod–inspired facility has all the comforts of home, including a full kitchen, conference room, bar and living rooms. The huge back patio overlooking the lake has barbecue pits, rocking chairs, cozy tables and chairs. It will accommodate 15 to 20 guests for group gatherings, family reunions or just a weekend getaway. and Lake Guntersville. Lake Guntersville is Alabama’s largest lake— it’s 75 miles long and covers 69,000 acres— and was created by the building of Guntersville Dam on the Tennessee River. Surrounded by mountains and foothills, the scenic views on this lake are stunning. Free boat ramps and private marinas dot the lake’s perimeter, and so do great places to eat and drink. One of the best is Somewhere on the Lake in Guntersville. This place is a beach bar that’s nowhere close to a beach. Not only does it have a fun atmosphere, but it offers an excellent menu featuring a wide variety of entrées from grouper to prime rib. The lake is widely known as one of the best bass fishing spots in the nation. Large-mouth bass are the main draw for anglers but the lake also has an abundant supply of other fish including brim, crappie and catfish. Boating, camping, kayaking, hunting and eagle
watching are also popular activities on and around the lake. The Tennessee River runs from the northwest corner of Alabama down through the heart of north Alabama and back up to the northeast corner of the state. It has been dammed up to form several lakes, and provides recreational activities as well as commercial transportation use. Flint Creek is a major tributary along the river, and is utilized for many water sports near its confluence with the river because of the vast width of the creek and calm waters that are created by the sheltering geography. BEER BLAST The North Alabama Craft Brew Trail was unveiled in 2016 by the Alabama Mountain Lakes Tourist Association to invite beer enthusiasts on a self-guided tour of eight craft microbreweries. Each microbrewery offers tours of the facility and awesome taprooms,
where their unique beers can be sampled and purchased. Back Forty Brewery in Gadsen is one of the first breweries to open in the area, and is currently the largest producer of alcoholic beverages in the state. Owner Jason Wilson is a walking encyclopedia of beer. The tour here is amazing: Back Forty uses almost only locally grown ingredients in its beer, and recycles the grain used in production through local cattle companies and bakeries so the hamburger patties and buns served in the taproom are “coming home.” The brewery produces a beer called Cart Barn that’s the official beer of the Robert Trent Jones Golf Trail and is available at all their locations. Yellowhammer Brewery in Huntsville is another mandatory stop. General manager and part owner Ethan Couch has built one of the best taprooms anywhere. In addition to the wide variety of award-winning beers offered, in 2015 the
brewers paired the brews with popular former food truck Earth and Stone Wood-Fired Pizza to open a brickand-mortar version at Yellowhammer’s new location. The result is a beer and pizza lover’s dream. Yellowhammer’s T-Minus Kolsch is a tangerine Kolsch named in honor of Tang, and is the official beer served at Huntsville’s U.S. Space and Rocket Center nearby. The center is an official NASA visitor center and home of Space Camp. It provides a great experience while in Huntsville. North Alabama offers these great destinations and more. There is a Wine Trail, a Barbeque Trail, a Birding Trail and a Hallelujah Trail featuring historic churches more than 100 years old. H

HEN YOU HEAR THE TERM “BADL ANDS,” you probably envision the barren, rocky terrain and the unique rock formations portrayed in movie westerns, most often associated with South Dakota. But similar “badlands” terrain also exists in the far-northwestern part of Nebraska. Although this corner of Nebraska is known as the Oglala National Grasslands, the abundance of eroded sandstone has revealed a hidden treasure: the natural wonder of Toadstool Geologic Park. Named for its magically balanced, unusual rock formations resembling mushrooms, this park includes a campground and picnic area that’s open 24-7.
A HIKE AND A HISTORY LESSON Toadstool Park offers a one-mile scenic loop hike that’s best experienced in the earliest hours of daylight. I decided to go for the longer three- to six-mile hike that features several geological points of interest. I started my hike from an area known as the Hudson-Meng Bison Kill. There’s a visitor and research center there dedicated to the farmers who, in 1954, accidentally found the largest cache of fossilized bison bones on record. I was greeted by two friendly Nebraska Parks and Recreation rangers delighted to show me the path. We set out on a long walk through open pastures, with occasional colored markers to help hikers stick to the trail. On this hike, you’ll need to keep an eye out for cattle because they “own” the land here. After the first mile, the elevation of the
trail starts to descend as you make your way down to where the three-mile Bison Trail begins. In the depths of this terrain, you can clearly see where millions of years of water and wind have created the unusual rock formations the park is known for. These “toadstools” were created by the uneven erosion of the harder sandstone rock layers and the softer layers of clay, sometimes resulting in a larger rock perched atop a clay pedestal. Among the toadstool formations you’ll also find fossilized remains of tortoises, rhinos, saber-tooth cats, threetoed horses and camels that were overtaken and buried by windblown volcanic ash 12 million years ago. SETTING UP CAMP AT THE FORT Western Nebraska not only has a varied geologic landscape, it has a rich historical significance as well. Just 23 miles south of
Toadstool Geological Park, you’ll find Nebraska’s premier state park, Fort Robinson. As its name implies, Fort Robinson was operated as a military stronghold from the early days of the Old West until after World War II. Many original buildings have survived and remain in use at the park today; others have been reconstructed. Fort Robinson was the site of the 1879 Cheyenne Outbreak, and the death of famed Sioux Chief Crazy Horse. Over the years, the fort was repurposed as a cavalry remount station, a K-9 dog training center, a POW camp and a beef research station. Finally, in 1962, It was established as a state park. These vast parklands span more than 22,000 acres of breathtaking pine ridge scenery, featuring comfortable lodgings, scenic camping and hiking; they're also home to several native buffalo and longhorn herds. State Historical Society operates a museum and many restored or reconstructed exhibit buildings to represent Fort Robinson’s history. The University of Nebraska operates the Trailside Museum, which lets guests explore the unique geology and natural history of the region. Of all the ways to spend a day at the fort, the most authentic experience may be a horse-drawn tour through the pine ridge forests. You might also choose to enjoy a refreshing early morning horseback ride, book a nature tour aboard the Fort Robinson Express or opt for an openair Jeep ride. When the weather gets too warm, you can always head for the indoor pool and sundeck. There are several options for overnight lodging from midApril until September: There’s the original 1909 enlisted men’s quarters repurposed as cabins, the Officer’s Barracks halls and even a modernized campground complete with restrooms, showers, running water and picnic tables. Located along some of Jamaica’s most stunning beaches, the Royalton Negril Resort and Spa is a hideaway you won’t soon forget. by Matthew Abernathy

N A RECENT WEEKEND GETAWAY, MY WIFE AND I DISCOVERED A HIDDEN GEM ON THE WEST COAST OF JAMAICA . The Royalton Negril Resort and Spa is nestled on one of the Caribbean’s most idyllic settings along a stretch of seven miles of the most beautiful beaches imaginable. The Royalton Negril is an all-inclusive experience (they call it “All-In Luxury”), and we were blown away at the attention to detail put forth. (For starters, we were greeted with the warmest of welcomes that included chilled cocktails and cool eucalyptus wash cloths after a somewhat arduous trip from the airport in Montego Bay.) The resort features 407 elegantly appointed yet modern suites, as well as worldclass, reservation-free dining, a top-tier spa, a splash park for the kids and a fitness center with all the bells and whistles. There’s no shortage of daily entertainment, and the nightly shows don’t disappoint. (More on those later.) A DREAMY START The resort is made up of three distinct sections— the Resort, the Diamond Club and the adults-only spot called The Hideaway at Royalton Negril—with the goal of personalizing your stay. Being that my wife and I were looking for a romantic getaway, we opted for The Hideaway. When we arrived at our room, we were greeted by our own personal butler who showed us around. Right away, I fell in love with the bed, which the butler explained was the resort’s very own handcrafted DreamBed—dreamy indeed! The rooms come equipped with Wi-Fi (there’s connectivity throughout the resort), and there’s also complementary long-distance phone calls to North America if you need to stay in touch with your loved ones back home. Once we settled in, it was time for a bite to eat. We were delighted by the outdoor dining

experience at Ocean Point Bistro. The food was excellent—we ordered the Chef’s tasting menu filled with delectable, fresh seafood and local fare. The staff was attentive, and the atmosphere on the bay was breathtaking. To finish off the night, we stopped by the popular Martini Mix; when you visit, you must try the espresso martini. NATURAL BEAUTY The next morning, we hit up the buffet at the Gourmet Marche. The restaurant offers a wide variety of both international and local favorites to please even the most discerning of palates. They even have a good selection of healthy options, and a designated section for the kiddos. After our a.m. fuel session, we hopped on a bus to one of the most beautiful regions of the island that proved to be one of the highlights of our entire trip. We traveled off the beaten path and through the deep countryside and into the heart of Westmoreland, which includes the renowned Mayfield Falls. The picturesque area comprises several widely spaced cascades and all-natural pools (folklore purports healing powers of these pools). The property is approximately 14 acres of exotic plants and wildlife, and our guides took the time to explain almost everything that we encountered along the way. With one mile of river and numerous cascades along the way, comfortable water shoes are a must At the end of the tour, we were treated to an authentic Rastafarian lunch of curried chicken and dirty rice—it was a real treat. A MEAL TO REMEMBER Later that evening, after a short rest in our room, we attended the C/X Culinary Experience. This seven-course meal was truly unique in both the ambience and the delicious food. Each course was presented by the executive chef with wine pairings and musical selections. To round out the evening, we decided to attend one of the resort’s nightly entertainment venues. Magical Michael—inspired by Michael Jackson, of course—was the show of the night; it was lively and energetic, making for a fun night out. 50

A BITTERSWEET GOODBYE With one day left, it was time for some muchneeded relaxation at The Royal Spa. The spa has an amazing hydrotherapy circuit, along with a full roster of treatments, including full-body massages, couples massages, body wraps and other therapeutic practices such as authentic shiatsu and Hawaiian Lomi Lomi. Now we were relaxed and ready for our next outing at the iconic Rick’s Cafe. After a short bus ride, we were greeted at the front door of a very unassuming entrance; once we entered, we were left speechless! Overlooking the bay on the far west end of Jamaica, the cliffs at Rick’s are known for some of the most beautiful, uninterrupted sunsets in the world. It’s a must when visiting Negril. The café was the first public bar and restaurant of its type on the West End Cliffs, offering an alternative to the majestic seven-mile beach. The night was just getting started, though, and we were off to Hunter’s Steakhouse. The open-kitchen eatery made it the ideal place to watch as the chef and his crew cooked our aged beef steaks to perfection. We capped off the evening at the XS Disco Bar, where we knocked back creative cocktails and danced until the wee hours of the morning. If you get the chance to visit Royalton Negril, make sure you have more than a few days to explore this side of Jamaica. I wish we would have had more time to discover the rest of the area, as we truly enjoyed every minute we spent in paradise, along the seven miles of bliss. She might be small and blonde—and a woman—but the host of Super Bowl XLIX is a sports authority to be reckoned with. “I grew up in a huge sports family,” explains the sportscaster, who also covered the most anticipated fight of the decade, Mayweather vs. Pacquiao. “My entire family is obsessed with sports. So for me it was like, either learn to love it, or hate your life.” A native Houstonian, McCormick became involved in sports and cheerleading at an early age. Her grandfather was drafted to play football for the Washington Redskins, and both he and McCormick’s brother went on to work for NASCAR. McCormick attended Auburn University in Alabama, where she got involved with the campus news station. When
the resident sports anchor went out of town one weekend, McCormick was asked to cover the Auburn football games. She immediately fell in love with it. “When he came back to town, I refused to let him have his job back,” McCormick admits with a laugh. One weekend, McCormick was on the sidelines covering
Auburn play LSU, and ESPN’s College Gameday was in town and saw her in action. “They offered me a job as an intern with ESPN SportsCenter, and that was how, at 20 years old, my career started.” McCormick’s expertise isn’t limited to football, either: She’s covered basketball—she was the sideline reporter for the

McCormick contends, “I’ve had my fair shake with just about every sport, except baseball.” However with the Astros’ World Series championship win, she hopes to add it to her repertoire. Her resume is impressive: McCormick was the stage host for Super Bowl Sponsor SAP alongside Marshall Faulk in San Francisco and served as NBC’s Sunday Night Football Social Host; she’s hosted the 2012 NFL Draft for CBS Sports, The Fan on Comcast SportsNet and was a panel analyst for Rip City Live. She also appeared on ESPN.com’s Streak for the Cash and ESPN College Pick’em and MTVU’s The Dean’s List.
BREAKING THE GLASS CEILING With McCormick’s success in a male-dominated industry, there’s no avoiding the question of how she, a woman, made it to where she is today. “When I started 10 years ago, there were only a handful of women reporting sports. Erin Andrews was just getting started, Suzy Kolber had been there for some time, Linda Cohn…these were all women I looked up to, and they paved the way for other women to come into the field.” Even with the help of these trailblazers, McCormick concedes it wasn’t easy. “I would go into these interviews knowing I had a lot to prove. I was going up against all of these men, and I had to prove my sports knowledge. The first question I would get was, ‘Why

I felt I had to work twice as hard to prove to an audience that I knew what I was talking about.” The boxing world, she reveals, has even fewer female broadcasters. “I’m hoping I can help change that over time.” TRAVEL 2018

I go back and forth between here and California, but maybe I can finally learn some more about baseball by hanging out with the ‘Stros…” H

She was in H Town, in fact, during Hurricane Harvey. “I drove out to stay with my parents when it happened. Our entire neighborhood got flooded. We stayed up for two nights straight in parkas holding buckets, trying to keep the water from coming into our home.” Hurricane Harvey was a tragedy, and one that many Houstonians are still dealing with. “It’s amazing to see how the city has bounced back,” McCormick says. “And I think the Astros have a lot to do with that. Their win helped the city shift their focus from a tragedy to something that binds us together. I love how

Does meat deserve its bad rap? We asked health and medical experts to break it down. by Joanna Powell

ONFUSED ABOUT WHETHER ME AT IS GOOD OR BAD? Welcome to the club. Veganism has increased an astonishing 500 percent in three years; meanwhile, meat-loving paleo followers (those who eat only foods prehistoric man supposedly could have hunted or gathered) are equally vocal. So the meat debate can be a head spinner. On one hand, carnivores preach that eating animal protein is essential to vigor and longevity. They point to the Plains Indians, who survived on bison meat—and had the highest number of centenarians in history. Yet vegetarians hold up the Seventh Day Adventists, who eschew meat and are some of the longest-living people in the world. The discussion intensified in 2015 when a red flag was raised by the World Health Organization (WHO), which released a report linking processed meats such as sausage, bacon, ham and certain deli varieties to cancer. Even scientific studies don’t offer clarity. While some research suggests that carnivores risk increased heart disease and cancer, other experts point out that many of these studies included people who smoke, drink too much, eat too much sugar and processed foods, or don’t exercise.
No doubt, there are very real risks involving meat, not the least of which are health concerns as well as the ethical issues regarding the treatment of animals raised in feedlots. And climate scientists have long warned of the harmful effects of livestock farming on the environment. But from a medical and wellness perspective, substantial arguments exist for a diet that contains meat—in moderation, of course! Let us count the ways.
1.
PACK A PROTEIN PUNCH
Known as the “building blocks” of life, proteins (which break down into amino acids) affect every cell of your body. We need relatively large quantities of it to stay healthy. And unlike carbs and fat, the body doesn’t store protein, so it has no “tank” to draw from when it’s running low. Not getting enough protein results in muscle shrinkage, weakness and a host of other maladies. There are nine “essential” amino acids that the body does not produce and needs to acquire through food. Meat provides all of these lifesustaining components, while most plant sources do not. Moreover, at an average of 30 grams of protein per four-ounce serving (chicken is one the highest at 36 grams), meat is the protein king.
IS THE GRASS REALLY GREENER? Most of the beef Americans consume has been raised on a diet consisting mainly of corn and soy, which can be inflammatory, breed E. coli bacteria and take a heavy toll on the planet. Even though grass-fed meat can be twice as expensive, many experts say it’s worth ponying up for. It contains less total fat, which means fewer calories ounce for ounce, as well as more antioxidants, vitamins, minerals and heart-healthy, anti-inflammatory omega-3 fatty acids, notes dietician Lauren Kelly. “Meat is a complete protein containing all the amino acids,” notes dietician Lisa DeFazio, MS, RD, “and the body can utilize it immediately.”

END YOUR ENERGY CRISIS
Feeling sluggish and drained? Maybe you need a burger, not another cup of coffee. Some studies indicate that up to 39 percent of the U.S. population may be suffering from a B12 deficiency. Meat is the only significant food source of vitamin B12, which plays a leading role in the body’s strength and vitality. In fact, B12 provides such an energy punch that injections of it have become trendy among celebrities and sleep-starved executives. TRAVEL 2018

As a Pilates instructor, Nichols notes, “This has obvious implications for those of us who practice Pilates!” To bring your A-game to the studio, pair lean cuts of meat with high-fiber, low-glycemic vegetables to feel the power boost. Foods containing vitamin C (like citrus fruits,
red bell peppers, kale and broccoli) help your body absorb iron.

SPEED WEIGHT LOSS
High-protein, low-carb diets have been repeatedly proven to be one of the most effective means of losing weight and keeping it off. In the 2010 Diet, Obesity and Genes (DIOGenes) study, regarded as the world’s largest diet study, a high-protein, low-glycemic

You can also make the meat you choose leaner by trimming off visible fat before you cook it and using low-fat cooking methods like baking, broiling, grilling and roasting. Otherwise, here are the butcher’s best bets.

Organic turkey One of the leanest meats on the market, whitemeat turkey sans skin has only 152 calories and 36 grams of protein per four-ounce serving. “But you can have a little dark meat, too,” says dietician Lauren Kelly. “Dark meat has higher levels of nutrients such as iron, and while it’s a little more caloric and higher in fat, the difference isn’t significant enough to avoid it, if you enjoy it. Choose skinless, though, to stay away from unhealthy fats.” Go for organic, which doesn’t contain hormones and antibiotics, and tastes better. Ditto for chicken and other poultry.

“Vitamin B12—found primarily in animal foods—is a crucial nutrient for energy production,” says nutritionist Lauren Kelly, MS, RD, CDN, “If you aren’t consuming enough of it, you may feel more fatigued and listless.” People who follow a vegan or egg-free vegetarian diet, she adds, should consider adding a vitamin B12 supplement. The best food sources of B12? Beef liver, which contains nearly 1,200 times the Recommended Daily Value, comes in second (clams, with 1,400 times the DV, are the winner).

Why so efficient? “Protein facilitates weight loss because it increases satiety and boosts our metabolism,” says Dr. Loren Cordain, PhD, who’s considered the founder of the paleo movement. Protein can also promote lean muscle mass and fire up thermogenesis, according to a 2008 study in the American Journal of Clinical Nutrition. In fact, about 30 percent of protein calories are burned off during digestion alone! Digesting carbohydrates torches only five to 10 percent. “We know that Americans consume too much carbohydrate, which not only can promote hunger and weight gain, but also inflammation and increased risk for chronic diseases like heart disease and diabetes,” says Kelly. “Protein, along
with fiber, helps you feel satiated for longer and this combination can promote a healthy weight.” And meat and poultry are some of the best sources of protein around.
5.
CRUSH CRAVINGS
Along with a feeling of satiety not provided by grains and vegetables, animal protein can also put the brakes on hunger for longer periods between meals, reducing cravings for sugar and other unhealthy foods. “Protein foods are naturally very filling and help regulate the appetite,” says Nichols. “If you’re the type of person who is hungry very soon after eating, you may not be getting enough protein (or fat, for that matter).” Protein also targets our neurological reward system,

Bison, which is more often grass-fed than cattle, packs optimum nutritional benefits and is high in heart-healthy omega-3 fats.
MEATS TO AVOID? “Among the worst would be processed meats (i.e, deli meat, hot dogs, bacon, sausage),” warns Lauren Kelly. “They have been associated with an increased risk for cancer as well as heart disease.”

Beef No need to ditch the occasional juicy steak! Just swap T-bone and prime rib for leaner cuts. Nutritionists recommend (in order of leanness) sirloin tip, top round, eye of round, bottom round or top sirloin. Choose cuts that are graded “choice” or “select” instead of “prime,” which usually have more fat. “Stay away from cuts with white marbling, such as that found in porterhouse, prime rib and rib eye,” advises Kelly.
Six cuts of pork meet the USDA guidelines for “lean,” which translates to less than 10 grams of fat per serving. In fact, pork tenderloin is actually leaner than skinless chicken breast. The healthiest cuts are all taken from the loin or leg (usually made into ham); look for “loin” or “chop” in the name.

“When we’re low in protein, cravings take over and crack the whip in search of a quick fix,” she says. Including protein—such as meat and poultry—at every meal will help increase satiety and keep cravings at bay.
6.
BUILD BRAINPOWER
Researchers think humans developed bigger brains than our cavemen ancestors because of meat. It’s believed that our carnivorous diet with its extra calories and fat contributed to

the evolution of more complex, smarter brains. Can eating meat make the modern-day brain sharper? Yes, thanks to its high B12 content, which in addition to helping energize you (see #2), also increases brain power. “Animal protein is the main food source of vitamin B12, which is an important nutrient for neurological function,” says Kelly. Plus meat is filled with omega-3 fats, which have anti-aging effects on the brain, from cognition and memory to mental health and Alzheimer’s prevention, according to a 2015
study published in Frontiers in Aging Neuroscience. Although the best source of omega-3 fatty acids is oily, wild fish, such as salmon and tuna, they’re also found in pastureraised animals.
7.
GET GORGEOUS HAIR AND NAILS
Yes, meat can help make you slim and healthy, but the benefits don’t stop there. Experts say getting more animal foods in your diet might even save on salon visits. “Protein is important for your hair, nails and skin,” says DeFazio. “In fact, hair and nails are mostly made of protein, which your body uses to build and repair tissue.” When someone’s hair changes, it is often linked to diet, notes DeFazio. “Meat and fish will arm the body to make keratin, a fibrous protein that builds hair and nails,” she says. “Omega-3 fats in the diet help make hair shine.” Beautiful! For one thing, studies have shown that vegetarians generally eat fewer calories, weigh less and have a lower risk of cardiovascular disease than carnivores. Even if you don’t go cold turkey on meat, eating less of it is associated with a reduced risk of cardiovascular disease, obesity, type 2 diabetes and some types of cancer, according to the U.S. government’s Dietary Guidelines for Americans. While paleo fans and barbecue buffs may disagree, the mainstream American Heart Association recommends consuming no more than six ounces of lean meat, poultry and seafood per day. The Dietary Guidelines for Americans suggests shifting from protein sources such as meat, poultry and eggs (which men and teen boys in particular consume in excess), to more seafood and plant sources like the ones here. Note: Quinoa, soy and hemp are complete proteins, containing all the essential amino acids.
EDAMAME One cup contains 17 grams of protein—about the same as ¾ cup cottage cheese.
TOFU One-half cup of this bean-curd food contains 10 grams of protein—about the same as a serving of Greek yogurt. QUINOA One cup contains 8.14 grams of protein—about the same as a large piece of beef jerky. BEANS One cup contains 16 grams of protein—about the same as two slices of Swiss cheese. But note: Green beans have far less protein than other legumes—just 1.8 grams per cup. GREEN PEAS One cup contains 7.9 grams of protein—about the same as a cup of milk.
HEMP SEEDS Two tablespoons contain about 7 grams of protein—about the same as two pieces of smoked salmon. Tip: Sprinkle hemp hearts on cereal, salad or smoothies. NUTS One ounce (24 almonds, 18 cashews or 14 walnut halves) contains 4 to 9 grams of protein—about the same as an extra-large egg.

I
T SEEMS LIKE EVERYONE IS JUMPING ON THE GOURMETBURGER BANDWAGON THESE DAYS. Bernie’s seems to have hopped on the gourmet-burger school bus. A replica of Big Yellow frames their kitchen, and everyone from kindergartners to the principal ride on the menu. The scholastic burger names make the menu a little hard to follow; it’s even harder to make a socially acceptable dinner choice. As a mature male, I cannot bite into a Preschooler, Kindergartner or First Grader—all burger names on Bernie’s menu—especially in today’s political climate. I shied away from The Principal during my school years, because I was the Class Clown and often in Detention (more burger monikers). I finally decided to relive my glory days and put my hands around the Cheerleader (burger). We’ll see if anyone will notice. There are some unique ingredients on their burgers: Slow-roasted garlic tomatoes, tipsy onions (caramelized in Jack Daniel’s), fried jalapeños, chipotle aioli and chili are options. My Cheerleader came out on a plain white plate; no paper wrapping, dressed only in a bun. This hot little dish was fired up with fried jalapeños, pepper jack cheese and jalapeño ranch; the garlic tomatoes cooled her down and gave her a little depth. I barely made my move before she ran to my wife’s side of the table, laughing at me (maybe crying), and then disappearing into my wife’s belly. It’s all right. I got to hang out with the fries. Everyone has their cliques, and I hung with the truffle-laced Parmesan set. They were nice, but I wondered if it would be more fun to chill with
the green chile–cheese and smoked-bacon fries. But the most fun of all might be the Lunch Lady: These fries are covered in slow-cooked beef, gravy, cheese curds, white cheddar and green onions. The Detention burger is Bernie’s signature dish. Two cheeseburger patties with all the fixings are sandwiched between two baconfilled grilled-cheese sammies. This concoction definitely needs its own room and some serious supervision. In high school, this monster was named Bubba. He stole my lunch money, not to mention the cheerleader I was maybe gonna ask out someday. Now he just bullies bellies and dares them to finish him. It may sound odd, but my wife and I split a Cheerleader (our first time), and the truffleParmesan fries came along for the ride. Both were good, and there was plenty of food. The beer and wine are cheap. Our bill was around $35, including several adult beverages that cannot be served on or near a high school campus. The Heights location has a nice patio and bar. The service was good and the solid-gold classicrock music finished off the ambiance. So if you’re missing the school atmosphere from 1987, you can listen to Pour Some Sugar on Me and order up a Cheerleader, just like the old days. H

HE WOODL ANDS HAS IT GOING ON. The master-planned community has always been known for big trees, great homes (at great prices) and excellent golf courses, and as the area has grown, a mall filled with quality retailers. Then the Woodlands Waterway opened with high-end shops and entertainment venues. But where could you get a good steak? Robard’s Steakhouse sits on the 18th green of the Panther Trail golf course. A salute to Howard Robard Hughes Jr., they have the finest dry-aged meat, an impeccable wine list and artwork featuring Hughes, a Houston legend. During a recent visit, they invited me to the kitchen and taught me how to recreate a Robard’s meal at home. The team at Robard’s dry-ages the choicest meats in-house, their oven heats to 1600°F, and the experienced waitstaff provide topnotch service as guests enjoy their two- to three-hour meals. Although these details make it near impossible to recreate the exact experience at home, Chef Sammy showed me how to get close with the help of a good cast-iron skillet and a few thick-cut steaks from H-E-B. Don’t forget to pair your rib eye with its trusty partner, the potato, served any way you like it. H

BEEFSTEAK TOMATO SALAD For the dressing: 1 EGG YOLK 1 TABLESPOON DIJON MUSTARD 1 TABLESPOON MINCED WHITE ONIONS 1½ TEASPOONS MINCED GARLIC 1 TABLESPOON SUGAR 2 TABLESPOONS WATER 3 TABLESPOONS BALSAMIC VINEGAR 1½ CUPS SALAD OIL DASH SOY SAUCE 1 TEASPOON KOSHER SALT ¼ TEASPOON BLACK PEPPER For the salad: 2 BEEFSTEAK TOMATOES, SLICED ½ RED ONION, SLICED ROQUEFORT OR BLUE CHEESE CRUMBLES TO TASTE MICROGREENS TO TASTE CHOPPED HERBS FOR GARNISH 1. Make the dressing: Combine the egg, mustard, onions, garlic, sugar and water in a bowl. Add the remaining ingredients and whisk until smooth. Set aside. 2. Assemble the salad: Layer the tomatoes and onions on a plate. Top with a thin layer
of microgreens and sprinkle with the cheese crumbles. Drizzle on the dressing and serve garnished with the chopped herbs.

GO BIG AND GO THICK BUTTERY RIB EYES 4 (10-OUNCE) RIB EYES, AT ROOM TEMPERATURE SALT AND PEPPER TO TASTE 4 TABLESPOONS BUTTER 1. Preheat the oven to 450°F. Liberally season the steaks with salt and pepper. 2. Melt the butter in a cast-iron skillet over high until the pan begins to smoke. Add the steaks and sear for 2 minutes per side. 3. Transfer the pan to the oven and cook for 3–5 minutes, or until the internal temperature reaches 130–140°F. Remove from oven and allow the steaks to rest on a plate for 10 minutes. 4. Warm the skillet over medium and sear the steaks for 10 seconds per side. Serve immediately.
ROBARD’S GREEN BEANS 12 OUNCES GREEN BEANS, RINSED AND TRIMMED 1 TABLESPOON BUTTER ½ TEASPOON CHOPPED GARLIC ¼ TEASPOON CHILE PASTE 2 TABLESPOONS CHICKEN BROTH PINCH SALT 1. Blanch the green beans in boiling water for 1 minute. 2. Melt the butter in a pan over medium-high. Add the garlic, chile paste, broth and salt. Stir to combine. Add the beans and toss/stir until the beans are tender. Serve immediately. 94

CANDIED-BACON FRENCH TOAST For the bourbon-cherry syrup: ½ CUP BOURBON ½ CUP DRIED CHERRIES 1 CUP SUGAR 1 CUP APPLE JUICE ½ CUP MAPLE SYRUP ½ TEASPOON ORANGE ZEST ½ TEASPOON BLACK PEPPER For the candied bacon: 8 SLICES APPLEWOOD-SMOKED BACON 2 TABLESPOONS DIJON MUSTARD 2 TABLESPOONS BROWN SUGAR ½ TEASPOON DRIED THYME ½ TEASPOON RED PEPPER FLAKES For the French toast: 2 EGGS 1½ CUPS MILK ½ TEASPOON VANILLA EXTRACT 1/8 TEASPOON GROUND NUTMEG 1/8 TEASPOON GROUND CINNAMON 1 LOAF FRENCH BREAD, CUT INTO 2-INCH SLICES 2 TABLESPOONS BUTTER ROQUEFORT OR BLUE CHEESE CRUMBLES FOR GARNISH
1. Make the syrup: Cook the bourbon and cherries in a pot over medium until the cherries soften, about 3 minutes. Flambé by tilting the pan toward the fire and letting the bourbon ignite. (The fire will burn off the alcohol, but leave the flavors in tact.) Once the flames have vanished, add the remaining ingredients and bring to a boil. Reduce the heat and simmer for 5 minutes. 2. Make the bacon: Preheat the oven to 400°F. Line a sheet pan with foil and place a baking rack on top. Arrange the bacon on the rack in a single layer. Brush on the mustard and sprinkle on the sugar, thyme and pepper. Bake until the bacon is fully cooked and slightly crispy, about 25 minutes. 3. Make the French toast: Combine the eggs, milk, vanilla, nutmeg and cinnamon in a bowl. Working in batches, melt 1 tablespoon butter over medium in a large skillet. Dip the bread slices in the batter and cook in the pan until golden brown; flip and cook the other side. Remove from the pan and repeat until all bread is cooked. 4. To serve, place 1 piece French toast on a plate, top with 1 slice bacon and drizzle on the syrup. Lean a second piece of toast on top and add more bacon and syrup. Top with the cheese crumbles and serve hot.

Walter W. Fondren (1877–1939) began as an oilfield roughneck, but went on to cofound the immensely successful Humble Oil Co., one of the corporate ancestors of today’s ExxonMobil. With their wealth, Walter and his wife, the former Ella Cochrum (1880–1982), began a systematic program of philanthropy to benefit their home city and state. Devout Methodists, they gave generously to Houston’s Methodist Hospital and St. Paul’s United Methodist Church 96

Opened in 1949 (among others); they also endowed the Fondren Library at Southern Methodist University in Dallas. In 1946, the widowed Ella gave even more lavishly to establish a Fondren Library at what was then called Rice Institute. The facility, designed by renowned architect John F. Staub (1892–1981), opened in 1949. Today it functions as a research library, holding considerably more than a million volumes, as well as housing archival materials and serving as a federal depository for government documents. The descendants of Walter and Ella, meanwhile, continue to benefit the Houston community through the Fondren Foundation, established in 1948. —Clifford Crouch
