oday, this 195-room resort still feels amazingly exclusive and cozy. The lodgings feature two distinctly Mexican concepts: Pueblito, or small city and Jungle (think swanky Swiss Family Robinson). Hidden stone pathways lead to each of the individual casitas, all just steps from the white sand beach. Our ocean-front casita is literally 37 steps from the surf and our private plunge pool has an unobstructed view of the Caribbean. Book a pottery lesson and explore your artistic talents while learning traditional hands-on ceramic painting techniques. Each unique finished piece is placed in an old-style kiln overnight, ready to be picked up and admired the following morning. The Mayan-inspired interior design of Revive Spa features no visible corners, allowing a continuous flow of energy throughout the facility. A welcome state of relaxation washes over you as you are greeted with a special Mayan reception, involving incense and chanting. The spa itself encompasses 2,500 sq. ft. of utter bliss highlighted by a bubbling Jacuzzi under a huge

A weekend escape to Dallas’ timeless Adolphus Hotel is a welcome revival of the lost art of service, wrapped in a blanket of history. And some good ‘ole Texas tall-tales too!

T

his lone star landmark, built by beer baron, Adolphus Busch in 1912, is on the National Register of Historic Places. Although recently renovated, the “new” Adolphus still remains a grand example of the Beaux Arts architectural style, a predominate style in America from 1880-1920. Hallmarks of this ornamental design abound, from the grand staircase to the flat roof, arched windows, and limestone sculptures both inside and outside the building. Carefully curated artwork throughout the hotel melds old and new.

Stories of the past are also abundant around the Adolphus. My favorite is that of Renard, the sneaky fox known for his trickery. Legend tells during Prohibition, “those in the know” knew to look for an illuminated fox on the building. If Renard was lit up, come on in and get lit. The Adolphus’ own coffee shop, in anticipation of the repeal of prohibition, changed to a bar overnight, striving to be the first bar in Big D, post prohibition. Upon word the ban was not repealed, they flipped back to a coffee shop, serving piping hot Joe by morning.

For two days, I lost myself at the Adolphus, making new discoveries at every turn. I met my group in the drawing room, a seating area with original dark wood walls and a welcoming mixture of contemporary furnishings, comfy blue couches, and Italian fireplaces, flanking the two seating spaces. Directly across from the drawing room, the Social Lobby and City Hall Bar invite guests and locals to use the communal table as a workspace. Although beer was the business here at the Adolphus, wine receives a nod from Bacchus via the antique Bacchus mirror - original to the property. Another original, the King of Beers Chandelier, still presides above the escalators, its soaring eagles surely whispering secrets of days gone by.

From the escalators, head down to reception and note the new mosaic tile that blends so perfectly with the décor it compels you to ask, “Is that original?”. It isn’t; the entire hotel was previously carpeted. Yet another ode to the past, weathered, brass room keys hang as a work of art on display behind the registration desk. This level, which used to open to the porte-cochere and carport, now houses Commerce Goods, Otto’s coffee shop and a barbershop.

The brand was known to design hats for Adolphus Busch himself and continues this tradition with exclusive designs for this store. “The Renard” is a hat style created just for the property and is made locally at their Garland factory. “The store is meant to be an introduction to the city,” says Christine. Otto’s Coffee & Fine Foods is a casual Viennese coffee shop. Pop in for a quick salad, Europeanstyle baguette sandwich or a delicious apple strudel.

Chef Jeramie Robison heads up the culinary team at this property, bringing a bit of his Louisiana flair to each menu. With stints at the Mansion on Turtle Creek, Uchi, (“I thought I knew fish,” he says) and La Colombe d’or, Chef Jeramie gives Dallas a new reason to head downtown. City Hall Bistro is open all day, featuring a communal dining table and a Southern European vibe. For something unique, start with a brandy and rosé drink called “Renard Spiked the Punch.” Appetizers like Hot Crab and Pimento and Farro Risotto make sharing here fun. The highlight of my stay was a visit to the The French Room, one of the most revered names in Texas fine dining. Before dinner, our bartender Angela lit up our group with their signature drink. Bringing a little France to Dallas, the “Why Not Sazerac” is an elaborate cocktail

created tableside, complete with a small fire to add a smoky taste to the glass. “It’s basically our twist on the Old Fashioned but with Cognac and Absinthe,” she says. We find it complex, yet easy to drink. It’s certainly fun to watch as the smoke hits the glass. On your way to dinner, turn your gaze toward the grand staircase and imagine the esteemed diners of the past, in whose footsteps you follow. Pause a moment to take in the perfectly curated art collection showcasing Texas artists and Texas related pieces and don’t miss the grand piano, an 1893 Steinway, once owned by the Guggenheims.

Other design elements include the original marble floor, gilded Louis XVI style chairs, ornate sconces and two Italian Murano Glass chandeliers. In the kitchen, executive chef, Michael Ehlert, is a purist. Each dish is more

The summer of 2016 ushered in the first pool (ever) on property. This became the preferred meeting place for my group. Open 6:00 am to midnight, the six spacious cabanas allow for ample shade when necessary. We enjoyed the watermelon salad, flatbreads and guacamole. We also enjoyed the proximity to the spa. Modern and inviting, the Spa Adolphus is a downtown oasis. Set to a tone of greys and beige, the indoor/outdoor relaxation

Special events have a special place here too. Love reigns supreme considering the number of weddings hosted here in the past century. The Grand Ballroom holds up to 400 guests and the Century Ballroom can hold 250. Gala anyone? Each ballroom has a separate entrance, secluding multiple events. Perfect for a “do-gooder” supporting two charities in the same evening! Hop on the original elevators to the 19th floor and the iconic Century Room. This elegant venue, with a view as big as Dallas, has been called “The French Room in the Sky,” and hosts a capacity of 136 guests. Sure! There’s more fun to be had in Dallas, and just steps away from the hotel. The Neiman Marcus flagship store, and Dallas Arts District are nearby. We just never left.

I revisit Durango, Colorado 17 years after honeymooning in this historic mountain town. Being a native Texan, it’s hard to admit that another state could possibly steal my heart. Colorado comes on strong with jaw dropping views and rich First Nations history. My journey starts in Mesa Verde County, with the picturesque towns of Cortez, Dolores, and Mancos situated near the Four Corners area of the United States (where Utah, Colorado, New Mexico, and Arizona meet). Because I’m short on time, I fly into Cortez via Boutique Air; however, most visitors access this community by vehicle to take in the amazing landscapes driving in. Cortez has

lots to offer with various wineries, rich Pueblo and Anasazi history, and hiking trails to keep you occupied for days. Canyon of the Ancients, a working ranch, turned Bed and Breakfast is the place to stay. Each cabin is uniquely decorated with a rustic chic flair and comes stocked with the things you need to feel at home. They have so many ranch dogs, it seems one comes with each cabin. The owners love sharing the rich history of their ranch. Guests enjoy hiking, herding sheep during “rush hour,” feeding animals, etc., or exploring the proud town of Cortez.

Canyons of the Ancients National Monument houses the original dwellings of the Ancestral Puebloans, circa 750 AD, a favorite place for hikers. Over 3 million artifacts from the Southwest Colorado region are housed in The Anasazi Heritage Center. Inside, a multi-sensory learning experience highlights the culture and ingenuity of the great First Nations people. Within the cultural center is a simple walking/hiking trail to the top of a hillside with an original “kiva,” native Puebloan dwelling. Visitors also enjoy breathtaking views of the valley of Cortez and neighboring river regions. Mesa Verde National Park is a short drive away over winding roads with postcard worthy look outs. The area is known for crazy


stry weather patterns. As we drive up in May, it snows, hails and rains; all within a short time span. At the top of the mountain, where the Far View Lodge is situated, we marvel at the view of the four corners region. The Far View Lodge has comfortable rooms, casual and upscale dining options and noteworthy wine selection, but people stay there for the

views. We enjoy breathtaking views of daytime scenery and stellar night skies. There are numerous excursions that explore the park and original Navajo dwellings.

A park ranger with the Mesa Verde National Park leads us through Balcony House, an original Navajo settlement abandoned in approximately 1200 AD. Not for the faint of heart, the journey entails climbing 20 yards along the side of a mountain on a large, ladder of tree trunk-like sections and crawling through “fox-hole� like tunnels. But all of the hard work is worth it to witness the sheer ingenuity of the First Nations people and the vantage points they were able to see across the canyon. There is much speculation as to why the tribe left, but no conclusive evidence. From the Mesa Verde National Park we travel to Mancos, Colorado, a small town teeming with creative artists and their work. We could stay for hours,

if not days, in this welcoming community of local artists, artisans, and writers. In the heart of Mancos we lunch at the Fenceline Distillery, which sits along a winding creek where patrons drink cider and wine. Then we head to the movie house. The Mancos Creative Arts group takes us through their original movie house, once abandoned, but being restored. During its heyday, the theater was a stepping stone for a cinematic legend, Dianne Keaton. From Mancos, we continued to our final destination, Durango, Colorado. An original settlement from the Wild West days, it began as a railroad town in 1881 and has grown into an excellent biking and ski town. A lot has changed since the early days, but historic old buildings, an

antique railroad and rich history keep the 1880s feel alive. The historic Strater Hotel is close to everything in Durango. Built in 1902, it houses the country’s largest collections of American Victorian antiques and stained glass artwork. For 60 years the Barker family has owned the hotel and after three generations, Mr Barker still gives tours of their wonderful property. Author, Louis L’Amour was a regular patron of the Strater Hotel and has a room dedicated to him. Each room has a journal and guests are encouraged to document their stay and share their favorite experiences; reading the old entries is entertaining. Restaurants, meeting rooms and an old fashioned saloon are all inside the hotel. Experiencing the artifacts and rich history makes me feel the Strater is more of a museum than a hotel.

In downtown Durango we find a railway station for the Durango and Silverton Narrow Gauge Railroad (D&SNGRR). The old steam engine originally pulled cars filled with silver and gold from the mines into town. Today it pulls tourists along a 45 mile trek around mountain ranges

and past canyons, waterfalls, rushing rapids, wildlife and more; actors portray famous Durango residents who share their stories about the Wild West days. The train ride was voted “ one of the world’s top ten train rides” by the Society of American Travel Writers and “number one North American train trip” by National Geographic Traveler. Rides are available May to October and take roughly five hours for a round trip. Tourists can opt for a one way trip or simply tour the museum to save time.

Texans are flocking to Durango and buying second homes. Scenery, outdoor activities and a thriving farm to table food scene create an environment and lifestyle Texans want to experience. Colorado is and will always be my “go-to” for satisfying my outdoor, nature fix. Until you experience Colorado’s beauty, you don’t even know what you could be missing. Durango and Mesa Verde Country Colorado will welcome you like an old friend and will stay in your heart and mind forever.

Seasonal ingredients locally sourced from sustainable suppliers are the future for restaurants, at least according to Current’s executive chef, Richard Mendoza, who preaches on creating ecologically sound menus. I’ve heard the sermon. Sitting at his desk wearing his tall chef’s hat with his feet flat on the floor, he spits fire and brimstone rhetoric on the sins of the food business. To paraphrase him: “Thou shalt not order product from California and waste hundreds of gallons on fuel having it delivered to Texas. Thou shalt not support a supplier who spits emissions into the air, or harms our streams, lakes or oceans. Thou shalt not serve aging and wilting ingredients that rode on a truck from afar. Thou shalt honor world-classic dishes created from fresh local ingredients.” Amen, brother. I travel all over the world researching our “On the Menu” features. The kitchen at the Westin in The Woodlands (in which Current resides) is the most professional I’ve ever seen, from the facilities to the staff and processes. I spent an afternoon listening to their culinary philosophy and cooking secrets. When it came time to practice the recipes I learned, I realized how true they were to the chef’s philosophy. I ventured out to the beach, snagged a couple redfish and harvested crabs from my traps. I purchased dairy products, corn, edible flowers and shallots from Central Market. Virtually everything else came out of my garden. Get ready for a fresh, real Texas meal.

Tomato Burrata Salad

ENTERTAINMENT

Lump Crab Cake with Creamed Corn and Romesco Sauce

Place a mound of Burrata cheese in the center of a plate. Cut a variety of heirloom tomatoes into slices or wedges and scatter around the cheese, making sure not to overcrowd. Season the tomatoes and cheese with sea salt and freshly ground black pepper. Drizzle lemon-infused extra-virgin olive oil and white balsamic vinegar over the tomatoes. Garnish with micro arugula, basil and edible flowers.

For the Creamed Corn:

3 ears corn 3 cups heavy cream 2 tablespoons olive oil ¼ cup diced red onions ½ cup diced green bell peppers salt and pepper to taste

For the Sauce:

3 red bell peppers ¾ cup vegetable oil ½ cup almonds 1 loaf white bread, cubed 3 garlic cloves ½ teaspoon red pepper flakes 2 tablespoons red wine vinegar 1 small shallot 1 (1-ounce) package ancho chiles, rehydrated salt and pepper to taste

For the Crab Cakes:

tablespoons olive oil, divided celery stalk, minced yellow onion, minced fresno peppers, seeded and diced green bell pepper, diced tablespoon minced garlic cups fresh bread, cubed cup mayonnaise tablespoons old bay seasoning tablespoons chopped parsley tablespoons minced chives, plus more for garnish pound jumbo lump crab

1. Make the corn: Shuck the corn, and then remove the kernels and set them aside. 2. Place the corn cobs and cream in a pot over medium-low and and simmer for 20 minutes. 3. Meanwhile, warm the oil in a skillet over medium and sauté the onions, peppers and reserved corn kernels for 3–5 minutes. Strain the cream and add to the skillet. Allow to reduce and thicken to your desired consistency. Season with salt and pepper. 4. Make the sauce: Roast the bell peppers over an open flame, cover, steam, then peel off the skin. Warm the oil in a skillet over medium and lightly toast the almonds, bread, garlic and pepper flakes. Place the roasted peppers and skillet mixture (including the oil) in a blender and puree with the remaining

ingredients, adding water if needed to thin. Season with salt and pepper. 5. Make the crab cakes: Warm 1 tablespoon oil in a pan over medium and sauté the celery, onions, both peppers and garlic, until translucent. Remove from the heat and let cool. 6. Combine the bread, mayo, seasoning, parsley, chives and cooled vegetables in a bowl until incorporated. Gradually add the crab, being careful not to overmix and break up the crab. Shape the mixture into patties. Warm the remaining oil over medium-high and cook the crab cakes on both sides until golden brown, about 2 minutes. 7. Serve the crab cakes with the creamed corn and Romesco sauce on the side, garnished with chives.


Blackened Redfish with Beurre Blanc Southern Green Beans with Herb Butter For the Herb Butter:

stick butter roasted garlic cloves cup chopped parsley cup chopped thyme cup chopped chives

For the Green Beans:

½ pound bacon 3 tablespoons herb butter 1 cup julienned onions 2 cups haricot vert, trimmed, halved and blanched salt and pepper to taste 1. Make the butter: Cream together all the ingredients in a bowl. Transfer the mixture to parchment paper and roll into a log. Chill in the fridge until firm, about 1 hour. 2. Cook the bacon in a pan over medium until the fat renders and the bacon is slightly browned. Add the herb butter and onions and cook until the onions are translucent. Add the beans and season with salt and pepper. Remove from the heat once warmed through. 3. Serve with the Blackened Redfish (see plating in last step, at right).

THE CLASSIC FRENCH SAUCE BEURRE BLANC IS RICH AS CAN BE, THANKS TO A HEAVY DOSE OF BUTTER AND CREAM. LITERALLY TRANSLATING TO “WHITE BUTTER,” IT’S BALANCED HERE BY AROMATIC SHALLOTS AND ACIDITY FROM WHITE WINE AND LEMON JUICE.

For the Beurre Blanc:

shallots, roughly chopped peppercorns bay leaves sprigs thyme cup lemon juice cup white wine cup heavy cream sticks butter, cubed and at room temperature

For the redfish:

2 tablespoons butter 1 pound redfish 1 tablespoon blackened seasoning microgreens for serving

1. Make the beurre blanc: Place the shallots, peppercorns, bay leaves, thyme, lemon juice and wine in a pot. Simmer over low until reduced by three-quarters. Add the cream and reduce by half. Remove from the heat and begin adding the butter. (Note: Add the butter to taste; the goal is to mellow the acidity with the butter.) Once complete, strain and keep warm. Remember that too much butter will break with too much heat. 2. Make the fish: Melt the butter in a skillet over high. Coat the redfish in the seasoning and sear for 3 minutes. Flip and cook for 2–3 minutes. 3. To serve, ladle some beurre blanc in the center of a plate and top with the redfish and Southern Green Beans with Herb Butter. Garnish with microgreens.

Mule Yakult Mojito

YAKULT IS A PROBIOTIC YOGURT DRINK THAT DELIVERS AN ALMOST LASSI-LIKE, CREAMY FLAVOR TO THIS MOJITO. For 1 drink, muddle fresh mint to taste with 2 teaspoons sugar and the juice from 2 lime wedges in a Moscow mule cup. Add ice and then 2 ounces rum. Top off with club soda or apple cider and Yakult. Garnish with more mint, 1 lime wedge and blueberries (optional).
