I
T ’S NOT AN UNDERSTATEMENT TO SAY WE ARE IN A TURBULENT TIME FOR OUR CIT Y, OUR COUNTRY AND OUR WORLD. The onset of the Coronavirus (COVID-19) has created fear, concern and sweeping disruption. As we hit publish on this issue, we have been directed to shelter in place as a COVID-19 protective measure. The emergence of COVID-19 shows us how interconnected we are, as a global community, and how the health and wellness of individuals everywhere touches us all. Our hearts go out to all who have been affected by the COVID-19 pandemic. During my career in publishing I experienced truly tragic events such as 9/11…a very scary moment for our country. When travel and events were cancelled, many worried we would never recover. I also witnessed the devastation of Hurricane Ike, directly followed by the recession of 2008; all national advertisers cancelled in one day. Ultimately, it was Hurricane Harvey that really set me on the path to embrace virtual work and cloud storage. Each of these instances has driven me to look at myself and my business and find ways to be better.

I’d like to encourage you, dear reader, to stay positive. Take this time to curl up with our magazine and a cup of coffee. If it’s time to redefine your focus as a business owner, leader, coworker, parent or partner, take the time. I spent some time recently at Deer Lake Lodge and Spa, a rustic retreat in nearby Montgomery, where the focus is on mindfulness. Here, we can learn to be fully present and aware of our surroundings. It’s a great time to make plans or do other things you’ve been putting off. As for me, I’m calling people I haven’t seen, clearing out the clutter in my closets and spending more time at the park. I hope you are doing well during these unprecedented times. We will weather the storm, and together with everybody’s help, we will come out stronger on the other side.

HE T V – I’M WATCHING A NEW SHOW, 9-1-1 LONE STAR, WITH ROB LOWE . A New York City fireman takes a job in Austin, with culture change and the old fish out of water plot. In the first show, (entitled “YeeHaw,” no kidding), on the way to his new job, the firefighter drives from Manhattan to Austin across the desert and the tumbleweeds. Huh? He must have been terribly lost. Yes, once again Texas is portrayed by Hollywood and TV as what we are not, but it makes for interesting stories. Many programs were Westerns, set in Texas, or at least partially. We have gangsters, Bonnie and Clyde, astronauts in Apollo 13 and films about ordinary folks, as in Terms of Endearment, set in Houston, which won five Academy Awards and four Golden Globe Awards. So let’s look at few movies and TV shows that depicted our state. New York Times columnist David Brooks, who usually writes about politics, once observed he thought The Searchers was the best movie ever made. It was a John Wayne and John Ford Western. New York magazine called it the most influential movie in American history. Films about the Alamo began with Davy Crockett at the Fall of the Alamo. It was a 1926 six-reel silent film, the only film to depict Crockett as a slave owner. Slave owner? John Wayne wanted to play Crockett in the 1960 version, and bankrolled the project himself. The Alamo was a critical and financial flop. In that version of the story, Crockett went down fighting. In the 2004 version, Tommy Lee Jones, as Crockett, is captured and about to be executed, telling Santa Anna, “I’m a screamer.” Giant was a 1956 movie based on Edna Ferber’s novel. Giant was the last of James Dean’s three films as a leading actor. He was killed in a car accident before the film was released. Another actor was called in to do some voice dubbing for Dean’s role. Fast forward to Brewster McCloud, director Robert Altman’s next movie after his huge hit, M*A*S*H. Filmed mostly at the Astrodome, it got favorable critical praise although critic John Simon wrote. “Brewster McCloud is a pretentious, disorganized, modishly iconoclastic movie…” I agree. It was probably the worst movie ever made. Did you ever see Twins? It was a 1988 buddy comedy about unlikely twins (Arnold Schwarzenegger and Danny DeVito) who were separated at birth. The final scene is set in Houston. A funny actual ending: Instead of taking their usual salaries for the film, Schwarzenegger and DeVito agreed to take 20 percent of the film’s box office returns. The film was a huge commercial success, grossing $216 million
worldwide. Schwarzenegger and DeVito received the biggest paychecks of their movie careers. “Hud,” played by Paul Newman as a thoroughly despicable character, didn’t hit audiences that way. Newman said, “His amorality just went over [the audience’s] head; all they saw was this western, heroic individual.” Yes, the Lone Star State has been the backdrop for many a good flick: The Best Little Whorehouse in Texas, Urban Cowboy, The Last Picture Show, Bernie, Boyhood (which all the critics raved about, but I thought was pointless), No Country for Old Men, Tender Mercies, Red River, and, of course, The Texas Chainsaw Massacre. Incidentally, Oscar was a Texan. In 1931, a librarian at the motion picture academy, Margaret Herrick, upon seeing the little statue, said, “It looks just like my Uncle Oscar.” Oscar Pierce of Texas. And the first award for Best Movie was given in 1927. It was Wings, made in San Antonio. Turning to TV, as a novel, Lonesome Dove won Larry McMurtry the 1986 Pulitzer Prize for Fiction. It was intended to be a movie, starring John Wayne, James Stewart and Henry Fonda, but John Ford advised Wayne against it. The television miniseries in 1989 drew an estimated 26 million homes. At the 1989 Emmy Awards, the miniseries had 18 nominations and seven wins. (Years ago I had an idea for a movie about a West Texas high school football team. Then came Friday Night Lights, the book, the movie, the TV series. It will probably become a Broadway musical.) Dallas debuted in 1978, as a five-part miniseries on CBS. However, due to the show’s popularity, it was subsequently turned into a regular series and broadcast for 13 full seasons. The program drew an estimated 26 million homes. Everyone went around asking, “Who shot J.R.?” At the 1989 Emmy Awards, the miniseries had 18 nominations and seven wins. Lone Star was a stupid show about a Texas con man who secretly had two families, one in Houston and one in Midland. It was cancelled after only two episodes, and none too soon. Walker, Texas Ranger with Chuck Norris ran for nine seasons. It had a great theme song. Don’t forget to watch 9-1-1 Lone Star. The first episode includes cowboys line dancing in a honky-tonk. ID WE THINK WE WOULD EVER EXPERIENCE ANY THING LIKE THE CORONAVIRUS PANDEMIC? In my own family, both my husband and I had grandparents who succumbed to the flu pandemic in 1918. But, to think we could ever experience something akin to this in our lifetime was too far afield to ever be imagined. Yet, here we are—in 2020—on semi-lock-down, timeout—with guidelines to stay sequestered as much as possible, keeping a six-foot distance from others when absolutely necessary for human interaction. I can’t help but think how lucky we are. We get the news from television, radio, internet, social media and calls from friends. Our forefathers had few outlets to forewarn them and guide them through the process. What a difference a hundred years make. It’s easy to understand why people can become depressed in these situations where so many are losing jobs, experiencing lost wages, worrying about how to feed their families and keep them safe and of course, the most devastating, the loss of loved ones. At the same time, there are so many positive things occurring every day. I have enjoyed sitting on the back porch, watching neighbors walk or ride by on bicycles and waving to them. It’s the most I have never seen before. I have enjoyed seeing photos online of Molly Glentzer’s garden, senior writer of The Houston Chronicle, and the new flowers that seem to bloom there daily. I look forward to what Clifford Pugh and John Dascoulias are posting on Facebook every night to keep spirits up—banging on pots and pans to lively music.
With all the uncertainty and upheaval in our world, it is natural to experience the fear that comes with the unknown. Knowing how we can best help each other is the question. Kindness and thoughtfulness are key—and prayer. 8

Famous violinist, Itzhak Perlman, has posted a brilliant offering as “a little something to brighten your day!” Many national musicians are donating their time and talents to television specials. Drew Brees, the New Orleans Saints quarterback, has donated five million dollars to combat the disease. Conor McGregor, the Irish boxer, has donated over a million dollars for hospital supplies in Ireland. Rihanna and Taylor Swift were among the first celebrities to make big donations. Also on the national front, Mike Lindell, the My Pillow man, has turned from manufacturing pillows and bedding to producing masks by the millions. Houston designers David Peck and Chloe Dao and the non-profit fashion house, Magpies & Peacocks, are producing free face masks. Houston Texan J. J. Watt and new bride Chicago Red Star, Kealia Ohai, donated $350,000 to the Houston Food Bank. Houston Astro ace pitcher, Justin Verlander has donated the paychecks he will be receiving while the MLB season is suspended. These funds will go to a different organization each week to support their efforts highlight the great work they are doing during the COVD-19 crisis. As Verlander said, “We hope to contribute to the families, the healthcare workers and first responders and many others in need of basic necessities, medical supplies and support at home.” Houston Texans Senior Chair, Janice McNair and the McNair Family have donated $500,000 to Interfaith Ministries’ Meals on Wheels and the Houston Food Bank. The Houston Texans Foundation donated $100,000 to launch the Greater Houston COVID-19 Recovery Fund Texas partnering with the United Way of Greater Houston and the Greater Houston Community Foundation. Rockets coach, Mike D’Antoni and his wife, Laurel, donated $100,000 to the Greater Houston Community Association saying, “The only way to get through this is for everybody to help everybody.” H.E.B. has committed three million dollars to supplement organizations that are helping the most vulnerable residents in the area impacted by the Coronavirus, including seniors, children and low-income families. While Houston Grand Opera is closed, they are keeping staff and using them and costume materials to make medical equipment. A quote from HBO, “As this global situation evolves, our staff is doing what they can to support those on the front lines. The incredible artisans from our costume shops are tirelessly creating surgical masks and gowns

for health care providers. We have donated all the appropriate fabrics for this effort and are honored to work with such caring individuals.” Paul-David Van Atta, PDV Special Events president, well known for his command of the kitchen, has been cooking for weeks, filling overflowing baskets of delectable cuisine and delivering them to friends and neighbors. Deborah Duncan on KHOU Channel 11 Great Day Houston is shining a positive light with her “Upside of the Downside” programs. Benjy Levit immediately turned his Local restaurants into fresh food markets. The Southern Smoke Foundation, founded by Chef Chris Shepherd, is providing emergency cash assistance to people in the hospitality industry who are in crisis. Berg Hospitality Group Family Relief Fund staged drive-through pick-up foods with 100 percent of the profits going to hourly employees. Tony Vallone’s restaurant, Tony’s, is providing special take-out menus with free delivery within six miles. Chef Jonny Rhodes is opening a grocery store, Broham Fine Soul Food and Groceries, in order to keep his staff employed while his acclaimed restaurant, Indigo, is closed. Taste of Texas is including a roll of toilet paper with each order. Many restaurants are offering take-out meals, delivered curb-side or to your door at lowered prices. Support them when you can. Ronnie Killen of Killen’s offered free barbeque sandwiches and chips to hospitality workers affected by the Coronavirus shutdowns at Killen’s on Heights Blvd. Jim McIngvale is providing free sandwiches, fruit and juice to families in need in the parking lot of Gallery Furniture at the North Freeway location. Jeff Gremillion, Editor-in-Chief of Houston CityBook, has offered to help promote your
business. He said, “During this challenging time, our website and social media channels are offered to help promote you and your business.” Well-known realtor, Walter Aymen, brokerassociate with Keller Williams Metropolitan, calls people every day for lists of groceries to deliver to their homes. Personal trainer, Cody Souter, is driving those who need help to medical appointments, getting prescriptions filled and delivering meals. Sharon Abercia and daughter, Madison Wilner, are gathering donuts by the dozens from Shipley’s Donuts on Bissonnet to distribute to the homeless. Then, when they heard of the seven firefighters diagnosed with the virus, they created baskets of AuBonPan croissants, sandwiches, cookies and assorted pastries and delivered them to Precinct 11. Scott Evans, Social Book editor, has kept Houstonians informed of the many closings and changes in charitable and social events. Plus, he and partner, Jeff Henry, cook and deliver food to an elderly neighbor each evening. INHALE THROUGH YOUR NOSE. “Breathing slowly and deeply through your nose is best when we want to engage our executive functioning, which is what allows us to have more rational thoughts. Breathing through the mouth, on the other hand, can mimic hyperventilation.” EXPERIMENT WITH ALTERNATE-NOSTRIL BREATHING. “Take one deep breath in through one nostril and then a deep exhale through the other nostril [use your fingers to hold your nostrils closed]. You’re engaging both sides of your brain and engaging your executive functioning.”

GET OUT. “Remove yourself from whatever it is that’s triggering you,” he says. “So if you’re in the break room and see a big, gorgeous chocolate cake and you know that might be a trigger, remove yourself from that situation.” MAKE GOOD USE OF YOUR NOTE-TAKING APP. Planning is key for achieving any goal, and being able to update your to-do list, whether it’s to remind yourself to buy nicotine patches or sign up for Pilates class, on the go can be extremely helpful. You can also use it to say, make a list of what you’re grateful for or to keep a food diary. “For weight loss, journaling can be effective,” Aston says. “Instead of writing down the calories of what you eat, which can be very shaming, write down everything you ate that day (and not just each meal). Also, jot down the experience you had with it—e.g., the cookie at work made you feel guilty. It’s not meant to be shameful, it’s meant to promote awareness.” This also works if you want to quit smoking, exercise more or just get more organized. —Amanda Altman

Let’s face it, everyday life can be stressful. When things get tense, our brain signals the release of certain hormones (adrenaline, norepinephrine, cortisol) to help the body prepare to react. In the short term, our blood pressure rises, our breathing gets heavier and we may lose our appetite. But as the stress subsides, everything should return to normal. Problems occur when stress is chronic, and these hormones, especially cortisol (aka the stress hormone), remain elevated. Over time, studies have shown that

persistently high levels of the stress hormones can increase our appetite and cravings for sugar, carbs and fat. It might come as no surprise that when you’re under a lot of pressure, you may find yourself overindulging on sweets, alcohol or your favorite comfort food to make you feel better. But unfortunately, in the long-term they can actually make you feel worse. Instead, focus on eating foods loaded with vitamins and minerals that will help counteract these effects. Potassium-rich produce, like bananas
and avocados, will help lower blood pressure. Salmon, almonds and walnuts, which are high in omega-3s, vitamin C superstars like oranges, and antioxidant-rich chamomile tea can reduce cortisol levels. Even a little bit of dark chocolate, in moderation, can help, too. Complex carbs, such as oatmeal, are good for maintaining blood-sugar levels while increasing the mood-boosting neurotransmitter serotonin. Eggs and vitamin D-fortified low-fat milk and Greek yogurt help with muscle relaxation. Another trick? Munching on
crunchy veggies, like carrots, broccoli, and celery, will also alleviate tension. Stress affects everyone differently, but over time can result in serious health issues, such as anxiety, high blood pressure, diabetes, weight gain, impaired memory, insomnia and a suppressed immune system. So finding ways to manage it, with diet as well as with plenty of sleep, regular exercise and mindfulness practices like yoga and meditation, is a worthwhile goal. —Leslie Horowitz

Are there foods that can help you combat stress?

I keep hearing about intuitive eating, but not sure how it works. Is it a good way to lose weight?
A.
If you’re tired of counting calories or eliminating entire food groups (carbs, we miss ya!), you might want to give intuitive eating a try. It’s not a diet per se (in fact, it’s often called the “anti-diet”); instead it relies on listening to your body’s needs and hunger signals—not following the often arbitrary rules of traditional diets. The principles were first outlined in a 1995 book, Intuitive Eating, by dietitians Evelyn Tribole, MS, RDN, CEDRD-S, and Elyse Resch, MS, RDN, CEDRD-S. The first tenet is to reject the diet mentality; intuitive eating is founded on the idea that no food is off limits. You’re also encouraged to eat when you’re hungry: The plan uses a scale to guide you, from one (you’re so famished, you can’t concentrate) to ten (you’re after-Thanksgivingdinner full). Optimally you want to learn how to stay in the middle of the scale, from four, the onset of hunger, to six, the point of satisfaction. Other key aspects of intuitive eating include learning other ways to cope with stress besides heading to the refrigerator. You also need to learn to love your own genetic blueprint, warts, 10 extra pounds and all by understanding that there is no such thing as the perfect body. The program encourages exercise, not simply as a weight loss tool but as a way to feel better. Finally, you learn to realize that it’s impossible to always eat a perfect diet—and that one meal or snack won’t define your overall well-being. Promising research has shown intuitive eating to be an effective plan, especially for those with eating issues since it frees you from obsessing about every bite and promotes a healthier body and self-image. But while weight loss may result from embracing intuitive eating, that’s not the goal—and there is no guarantee you will. There’s not much evidence to prove it’s any more effective than following a calorie-restrictive diet. (In fact, having permission to eat whatever you want may give a false sense that it’s okay to feast with reckless abandon.) Bottom line: Intuitive eating requires discipline and takes practice, and as we are learning, diets are not one size fits all. There’s no real downside to intuitive eating, and as most dietitians agree, learning to listen to your body is the healthiest approach to eating. —L.H.

The game prompts you to do “Fit Skills” throughout, divided into four categories, arms, core, legs and yogainspired moves. Stuck at home? Interfaith Ministries’ 7th Annual Wags & Whiskers Brunch Puppy love and cat fever filled the air at Hotel Zaza in Houston’s Museum District as Brunch Chair M.A. Shute, along with Honorary Chair Don A. Sanders, hosted 200 guests who helped raise upwards of $112,000. The “On Broadway” themed brunch and pet fashion show benefited the Animeals program that provides free pet food and vet care to more than 1,300 dogs and cats of Interfaith Ministries’ Meals on Wheels homebound seniors. This year’s brunch honoree and longtime Animeals supporter Fred G. Marshall announced a $500,000 donation for the Linda and Fred Marshall Volunteer Welcome Center at Interfaith Ministries for Greater Houston at the 7th Annual Wags & Whiskers Brunch.

The 10th anniversary of The Houston Sweetheart Tea was celebrated at Saks Fifth Avenue this year and honored 10 Houston Sweetheart Icons: Rose Cullen, Paige Fertitta, Joanne King Herring, Trini Mendenhall, Sybil Roos, Joan Schnitzer, Phoebe Tudor, Martha Turner, Margaret Williams and Lynn Wyatt. Fashion for Good The Haute Dogs & Fancy Cats by Fashion For Good fashion show supported the Rescue Pet Movement which takes animals out of shelters and transports them to forever homes. To date, they have found homes for more than 38,000 animals reducing the kill rate at the city pound. Fashion for Good also hosted a fashion show featuring the couture creations of Nicholas Nguyen. Children at Risk Celebrates 30 Years at Accolades Luncheon More than 250 Houstonians wished Children at Risk “Happy Birthday” at the annual Accolades luncheon that raised $195,000 for the organization. Deborah and David Roylance chaired the event which celebrated the nonprofit and honored child advocates. For 30 years, Children at Risk has been leading the way in improving the quality of life for Texas’ children through research and advocacy. Throw Down Society hosted the third annual Black Tie Boxing event, in partnership with Savarese Fight Fit and Berg Hospitality’s B&B Butchers & Restaurant, and exceeded the $1.1 million mark for Hope Rising and Houston 20. The proceeds from the evening will help the organizations continue to fight against child and youth sex trafficking by going towards the purchase of a facility that will provide emergency care for boys and girls who have fallen victim of this crime. This year’s fight night brought together 18 amateur boxers, including local businessmen such as energy commodity traders, brokers, investment bankers and executives representing companies such as Chevron, Kayne Anderson, Shell, Musket, Vitol and CitiGroup. Each boxer was regulated by USA Boxing and trained under professionals like former Heavyweight Boxing Champion Lou Savarese at Savarese Fight Fit for three to six months.

The Bridal Extravaganza’s Billboard Bride photo shoot highlights a new trend in entertainment venues. By Laurette M. Veres Photography by Ivan Garcia Studios

EXI ABREGO IS HOUSTON’S NEW BILLBOARD BRIDE . Selected from thousands of brides who attended the January Bridal Extravaganza Show at the George R. Brown Convention Center, Lexi demonstrated her enthusiastic passion for wedding planning along with her grace and beauty. The Billboard Bride photo shoot was a whirlwind of excitement for Lexi. A magical trip to Ventura’s Bridal Fashions was the first step. The vast array of gowns made Ventura’s the perfect place to search for her dream gown. “Each gown was prettier than the next,” says Lexi. With dress in hand, the photo crew headed into the woods of North Houston to Blackberry Park to utilize one of the latest crazes in entertainment venues. Set among the trees, this alluring 15acre venue is perfect for all sorts of events and weddings. Tipis (also known as teepees) with enchanting interior fairy lights create festival-like settings which adds depth and details for fun and interesting photo ops. An array of talented vendors from the Bridal Extravaganza Show put their creative genius together for this unique photo shoot. The design team at Holyoak Floral Designs, headed by Stacie Holyoak, added the perfect floral touches. “The boho chic look is definitely trending,” says Holyoak. “I’m trying to capture what mother nature has and bring the beauty to life in a different, meaningful way.” A mixture of dry and fresh flowers creates an organic and natural vibe versus the traditional. “This look makes a statement for the brides who want to show their organic side,” she says. On the billboards, Lexi holds a light pink bouquet with purple accents created by the talented designers at H-E-B Blooms. Hair and makeup can create a variety of intriguing looks. In this case, Mayra Malik of Simple Beauty Artistry knew braids would be a great addition. “Lexi has great hair to work with,” says Malik. The setting at Blackberry Park is truly charming. “We're so excited to offer this new type of entertainment option to the Houston area,” says Lexi Snyder, owner of Inventive Events. Her team spent six months gathering items to enhance the dreamlike aesthetic. From silverware, to place settings and antique glassware—the venue staff has lots of options. For this shoot, a macramé wall hanging was added as an additional focal point, and baskets along with colorful rugs were incorporated throughout. Although the entire venue is actually outside, a ceremony site was set up right outside the tipi. Just before dusk, the light was simply perfect for Ivan Garcia of Ivan Garcia Studios. “Lexi is a natural; each pose better than the last,” he says. With the tipi wall as a backdrop, the floral arch and vases, each holding a single flower, are highlighted perfectly. Benches take the place of pews leading to the altar. Lexi and Emilio’s relationship began in 2014 and has grown deeper with time. Over the years,

they found their favorite restaurant: Gaido’s Seafood, located on the Seawall in Galveston. “It’s one of the most romantic dinner spots and great for date night,” says Lexi. For years, this has been a favorite spot for the happy couple. On a particularly beautiful evening in early November, they were sitting at a special corner table at Gaido’s when “Emilio just leaped out of his chair and got on his knee and asked me to marry him,” says Lexi excitedly. The ring box even had a light in it. Was it the glow of the ring box, or Lexi’s glow? Suddenly other diners noticed as they broke into applause and sent champagne and cake to congratulate the couple. Lexi found out later that Emilio’s original plan had been to propose during family Thanksgiving, but Emilio just couldn’t wait. “The whole family was supposed to do this as a team and then he ended up doing it intimately at Gaido’s, which was just as special,” she says. Lexi has about a year to enjoy being engaged and plan her big day. Her wedding will be at Sacred Heart Church in Galveston and the reception will be at the San Luis Resort. How the Astros fanned the fans. by Lynn Ashby

INUTE MAID PARK— WELCOME TO THE HOME OF THE HOUSTON ASTROS, A 41 ,168-SE AT STADIUM . The name startled a lot of people who didn’t know Minute Maid had a presence in Houston—no Minute Maid Marathon, no Minute Maid Museum, or anything else. But it’s still better than the former titles: The Ballpark at Union Station, Astros Field and the unforgettable Enron Field. The stadium can be used for concerts and dog shows, but not for the Nutcracker Market in November. You see, while the stadium has a retractable roof and A/C, it has no heating. That saved a lot money, unlike NRG Stadium which also has a retractable roof, but when was the last time you saw the Texans play in their stadium under an open sky? Anyway, up here is the Diamond Club where CEOs get to eat, drink and occasionally watch the game. Come along and I’ll show you something new. Rob Manfred, the commissioner of Major League Baseball, or MLB as we fans call it, deemed that, because the Astros cheated with their signalstealing operation, they should pay a five-million dollar fine, forfeit their first- and second-round picks in the 2020 and 2021 drafts and two officials had to stay out of baseball for a year. Oh, and one other punishment: the Astros’ new Hall of Fame has been renamed the Hall of Shame. These are large photos of the 2017 team that won the World Series, the only time a Houston baseball team has done so. There was a lot of cheering around town, a big parade and much was made out of the timing—Houston had just suffered the calamity of Hurricane Harvey, and everyone told everyone else we could use a boost to our morale. The World Series victory was also a muchneeded boost for the Astros, which have had a checkered past of recent times. They got Roberto Osuma from the Toronto Blue Jays following his 75-game suspension for violating MLB's domestic violence policy. The Blue Jays were happy to get rid of him. The Astros’ season ended with a whimper in the World Series—they blew a 0-2 lead in games. Then Houston’s ace starter, Gerrit Cole, joined the Yankees in December, signing a nine-year, $324 million contract. There’s more: They had to fire assistant general manager Brandon Taubman, who directed an obscenityfilled tirade toward three female reporters. The Astros apologized to a Sports Illustrated reporter whom they falsely accused of fabricating a story about the episode. A woman sued the Astros for $1 million, claiming her index finger was “shattered” when her hand was struck by a T-shirt fired from an air-powered cannon wielded by Orbit, the SPRING 2020

CAN THE TRASH TALK In case you spent the last six months putting up “Amy Klobuchar for President” signs, here’s the background on the scandal. On Nov. 12, The Athletic published a story in which former Astros pitcher Mike Fiers confirmed the long-held suspension that the team’s sign-stealing methods in 2017 and perhaps later: When the Astros played at home, a camera in center field would take a live video feed of the opposing catcher’s sign to the pitcher. That video was then communicated to a TV monitor near the Astros’ dugout, where a teammate or staff member would alert the hitter as to what pitch was coming, by banging—or not banging—on a trash can in the tunnel near the dugout. Fiers’s whistle-blowing came because he had a beef with the Astros: they had “non-tendered” him following the 2017 season, one in which he led them in innings pitched. But he got his revenge when he received his World Series ring in 2018 as a member of the Detroit Tigers. He’s now with the Oakland Athletics.
As for the fans’ reactions since then, they have varied from, “I’ll never watch another Astros game,” to “What’s the big deal? They all did it.” Well, the scandal hit the fans, the media and the MLB, which launched an extensive investigation. Over two months, Commissioner Manfred’s investigators interviewed 68 witnesses, including 23 current and former Astros players, and scoured thousands of emails, communications, text messages and videos. Because the scheme was player-driven, there was no good email trace tying it to management. Even so, the team’s manager, the well-liked A.J. Hinch, who has a degree in psychology from Stanford, was given a one-year suspension from baseball. So was the team’s general manager, Jeff Luhnow, who told investigators he had no knowledge of the scheme. Sort of like Sergeant Schultz in the TV series Hogan's Heroes: "I see nothing! I hear nothing! I know nothing!" Team owner Crane quickly fired both of them. The fired spread. Alex Cora, manager of the Boston Red Sox and Carlos Beltran, the newly minted manager (three months) of the Mets got fired, too, for their involvement in the scheme back when they were Astros. Beltran set a baseball record: He never lost a game as the Mets manager, but he never won one, either. 36

Here are some of the newspaper clippings about the scandal, and there were plenty of them. The New York City papers were particularly upset, claiming that the scheme had cost the Yankees a victory in their American League playoffs in the 2017 season. The Los Angeles Dodgers lost to the Astros in that World Series, and the Los Angeles City Council unanimously voted that the Dodgers be declared the true champions in 2017 and 2018. U.S. Rep. Bobby L. Rush, a Democrat from Illinois, requested a congressional oversight hearing “to determine the extent to which this cancer has spread.” Members of the 2017 Astros were harassed. “Everybody in here is getting death threats,” shortstop Carlos Correa said. “It feels like when you open social media these days, it’s the norm. You don’t see positive comments anymore. You just see ‘If you come to New York, you better watch out. Your wife better watch out.’ They start talking about raping, killing all this stuff.” There was some talk of opposing pitchers throwing bean balls, and everyone poo-pooed that idea. But the season in still young. Players on other teams took umbrage and a lot more. Alex Wood, a pitcher for the Los Angeles Dodgers—whom, again, the Astros defeated for the title in 2017—tweeted: “I would rather face a player that was taking steroids than face a player that knew every pitch that was coming.” “The word that keeps popping into my mind is ‘unfathomable,’” said the veteran catcher Stephen Vogt, who played for the Oakland Athletics in 2017, in an interview. “Maybe that’s me being naïve, but you would never even think to do it. The integrity of our game is what we have, and now that’s been broken.” “Now you’re telling me that could have potentially shortened my career or sent me back down” to the minor leagues, Indians pitcher Mike Cleavinger said in a video posted to YouTube, “because they knew what I was throwing when I was in their park?” Trevor Bauer of the Cincinnati Reds: “This will be talked about forever—more so than steroids. Like the steroid era, you can say what you want about it, but steroids weren’t really illegal at the time. The sign-stealing that was going on in Houston, though, was blatantly illegal. And with the rules that were implemented last year and the year before—that, by the way, were then still broken—it was very clear." Sport reporters had their say: Hannah Storm, who left Houston TV and radio in the late 1980s and is now with ESPN: “I understand the depth of what the (2017) World

team’s mascot. (Incidentally, there is a movement to change the mascot from Orbit to Cheetah.) When Nolan Ryan’s son, Reid Ryan, was essentially replaced as team president by Jared Crane, son of Astros owner Jim Crane, Nolan resigned as executive adviser to the owner.

It’s a life-size model of the one person who came out ahead in this entire saga: Houston Texan head coach Bill O'Brien. On Jan. 12, the Texans faced the Kansas City Chief in a playoff game. The Texans were ahead 24-0 with 9:55 left in the third quarter, and they blew it. The Chiefs won 51-31. It was the biggest choke since the 1993 NFL playoff game between the Buffalo Bills and the Houston Oilers. The Bills overcame a 32-point deficit to win in overtime, 41–38. It remains the largest comeback in NFL history. This year’s Chiefs debacle made Houston fans livid, and they demanded O’Brien be fired—but that target soon changed. On January 13, the very next day, Manfred announced the results of the investigation. Houston fans were stunned, and their attention wheeled away from the Texans to the Astros. O’Brien was saved. As for the fans’ reactions since then, they have varied from, “I’ll never watch another Astros game,” to “What’s the big deal? They all did it.” This, of course, brings up the question: Were the Astros so sloppy, so stupid, as to be the only ones who got caught? Actually, the sign-stealing by the Astros did not begin with the 2017 season. Originally, a team employee was stationed in the seats in center field with binoculars and a patch to the stadium’s PA system. When she spotted the

catcher’s sign, would yell into the mic: “He’s gonna throw a slider!” After about three innings, the umpires caught on and ordered her to stop. Smoke signals were outlawed by the fire marshal. Carrier pigeons ended up being sold as squab in Section 108. In comparison, banging on a trash can seemed highly scientific. This mess was bad enough until the explanations and the aftermath. Crane held a press conference in which he tried to, uh, non-apologize. His performance was variously described as “embarrassing,” “defensive” and “a disaster.” In this glass case you see a piece of metal. When asked if the Astros’ 2017 World Series championship should be put down in the record books as not exactly fair, Manfred said in an interview with ESPN: “The idea of an asterisk or asking for a piece of metal back seems like a futile act.” Piece of metal? He backtracked faster than a runner caught in a run-down between third base and home plate, but once again players on other teams went into orbit (or cheetah). Behind this velvet ribbon you see the pièce de résistance, the outstanding item in the collection: The one and only trash can, slightly dented. It took the Astros four years to slide from baseball’s worst team to its best, then to the most disliked. Now every time the Astros take the field in any stadium, they get booed. Their solution? Al Davis, the late owner of the (then) Oakland Raiders, put it all in perspective: “Just win, baby, win.” Or maybe they can become heroes again in Houston if they find out what to do with the Astrodome. The Astros are the latest in a long line of Houston baseball teams. It all began when an amateur team had a meeting on April 11th, 1861. The team was known as the Houston Base Ball Club. It never played a game because of the Civil War, but began afterwards—although the war was remembered. The team name changed to the Houston Stonewalls which defeated a team from Galveston, The Robert E. Lees, at the San Jacinto Battleground on San Jacinto Day in 1868. Houston’s first minor league team was organized by city leaders on December 31, 1887. The team was called the Babies because Houston was the last team to join the Texas League. Later, the Houston Buffaloes also known as the “Buffs”—were affiliated with the St. Louis Cardinals. The Buffs played in the Texas League, which is still around and included, over the years the Ardmore Territorians (this was in 1904—Oklahoma didn’t become a state until 1907), Dallas Hams, Longview Cannibals, Paris Parisians, Sherman Orphans, Temple Boll Weevils and Texarkana Casket Makers. The Buffs lasted until 1961 when Houston got a major league franchise, known as the Houston Colt 45s. When construction on the new stadium—not the Astrodome—was begun, instead of using the traditional shovels, the owners fired Colt 45s in the ground. his country for 12 years in the United States Army during Operation Iraqi Freedom in 2003 and Operation Enduring Freedom in 2008 and 2010. Back in Houston now, Dr. So is dedicated to ensuring the best dental care for his patients. Having stepped away from his patients for long periods of time for army duty deployments, he felt leaving the army was necessary in order to make his patients top priority—what he strives for since he began his career—although he will always be honored to have served the country for the time he did. By successfully completing continuing-education classes, Dr. So remains at the forefront of advancements in dental healthcare. He specializes in cosmetic and general dentistry, including Zoom Whitening, Invisible Braces, veneers, crowns, fillings and dental checkups. His office is equipped with the
latest in dental technology, such as digital x-rays, which are beneficial in educating his patients. In addition, Dr. So is certified in intravenous sedation to allow patients further relaxation during procedures. “My primary concern is the health and well-being of my patients. I want them to feel relaxed and comfortable from the beginning of their treatment and into recovery,” says Dr. So. “Our team works hard to build relationships with our patients so that they feel comfortable, not only in the dental chair, but also with the decisions they make regarding their dental healthcare.” Dr. So received his undergraduate degree from Texas A&M and his Doctorate of Dental Science from the University of Texas Dental Branch in Houston. He was a director on the Board of Houston Academy of General Dentistry and is a member of a number of national and local dental organizations.

TURMOIL. When an argument begins, leave. Just get out. If you lost your temper it may be from button-pushing: some comment or gesture, perhaps deliberate, that predictably triggered an emotional response over which you felt no control. After you have restored your sense of calm, think back to the conversation and play it back like a video. When you get to where you lost your temper, reverse the memory video. The remark or gesture the other person did immediately before you lost your temper was them pushing your button. Be on the

AVE YOU EVER WALKED INTO A R AMEN RESTAUR ANT AND WONDERED WHY YOU HAVE TO FORK OVER $10-15 FOR A SPOON AND A BOWL OF SOUP? I decided to experiment with my own version and soon discovered answers. Depending on the type of ramen you create, authentic broth to bowl may take up to two days and the fresh ingredients get pricey. In my search for Eastern ingredients, I head west of Houston on I-10 to Ranch Market. There I can find everything needed to complete a ramen recipe as well as a cultural excursion. You can buy a duck (complete with head and feet), watch fish in giant tanks get selected (then executed) and buy almost anything, dried. Exit I-10 at Blalock to begin your adventure. With ramen, there are numerous nuances, tweaks and techniques to perfect. The process reminds me of poker—a day to learn and a lifetime to master. My ramen routine became making a batch, then going back to my favorite restaurants to see how my home flavors compared. Further experimentation revealed that it becomes more convenient to keep some broth on hand. Once cooked, individual servings can be frozen for up to six months. Fun, interactive dinner parties can then charmingly revolve around ramen as guests build their own bowls and fumble with chopsticks. Ramen’s rewards have made the challenge well worth its effort. Here are some sample selections for an evening of ramen. H

EDAMAME 1 POUND FROZEN EDAMAME 10 THAI PEPPERS, HALVED AND SEEDED 3 GARLIC CLOVES, MINCED 2 TABLESPOONS OLIVE OIL KOSHER SALT TO TASTE 1. Add the edamame to 5 quarts of salted, boiling water. Return to a boil and cook for 5 minutes. Drain and set aside. 2. Warm the oil in a wok over high heat. Add the garlic and peppers and cook until the garlic softens, about 1 minute. 3. Add the edamame and toss. Liberally season with salt and serve immediately.

GLAZED PORK BELLY SKEWERS WITH PINEAPPLE For the pork: 2-3 CUPS CHICKEN STOCK ¼ CUP RICE WINE VINEGAR ¼ CUP GRANULATED SUGAR 1 POUND PORK BELLY 3 GARLIC CLOVES, HALVED 7 INCHES GINGER, PEELED, MINCED AND DIVIDED SALT AND PEPPER TO TASTE 2 TABLESPOONS OLIVE OIL 1 JALAPEÑO, SEEDED AND MINCED CHOPPED CHIVES FOR GARNISH For the pineapple: 1 TABLESPOON BUTTER ¼ CUP DARK BROWN SUGAR ½ FRESH PINEAPPLE, CORED AND SLICED INTO 4-6 WEDGES For the glaze: 2 TABLESPOONS BROWN SUGAR 2 TABLESPOONS HONEY 5 TABLESPOONS DARK SOY SAUCE PINCH OF SALT AND PEPPER
1. Make the pork: Combine the stock, vinegar and sugar in a medium saucepan. Add the pork, garlic and 2/3 of the ginger and bring to a boil. Reduce the heat to low, cover and simmer for 2 hours. 2. Make the pineapple: Melt the butter in a cast iron skillet over medium heat. Place the brown sugar in a large resealable bag, add the pineapple and shake to coat. Cook all sides in the butter until they begin to brown. Slice the wedges into cubes and set aside. 3. Make the glaze: Combine the brown sugar, honey, soy, salt and pepper in a bowl. 4. Finish the pork: Season the prepped pork belly with salt and pepper. Warm the oil in a pan over medium heat. Add the jalapeños, remaining ginger and saute until softened. Place the pork in the skillet and cook until golden on both sides. Cut the pork into 1-inch cubes. Place the pork back in the pan over high heat and coat with the glaze, reserving some for later, and saute until the glaze thickens and sticks to the pork. 5. To serve, spoon a dollop of glaze in the center of each plate and add a couple pineapple cubes. Skewer the pork belly pieces and place on top of the pineapple. Garnish with the chives. SPRING 2020

RAMEN For the broth: 6 POUNDS CHICKEN WINGS 4 MEDIUM CARROTS, QUARTERED LENGTHWISE 20 SCALLIONS 15 GARLIC CLOVES, HALVED 10 CUPS WATER 3 INCHES GINGER, PEELED AND SLICED 5 OUNCES DRIED SHIITAKE MUSHROOMS 2 SHEETS DRIED KOMBU (SEAWEED) 1 TABLESPOON BENITO FLAKES, CONTAINED IN A TEA BALL OR SPICE BAG ¼ CUP SOY SAUCE 1 CUP WHITE WINE 4-6 (7-OUNCE) PACKAGES UDON NOODLES For the tare sauce: ¼ CUP DARK SOY SAUCE, 2 TABLESPOONS MIRIN 2 TABLESPOONS SAKE For the garnish: CHOPPED PURPLE CABBAGE TO TASTE CHOPPED CILANTRO TO TASTE CHOPPED SCALLIONS TO TASTE DICED JALAPEÑOS TO TASTE CHOPPED BASIL TO TASTE SLICED RED RADISHES TO TASTE LIME WEDGES FOR GARNISH SRIRACHA TO TASTE …JUST TO NAME A FEW 1. Preheat the oven to 450°F. 2. Make the broth: Bake the wings in a roasting pan until browned, about 45 minutes to 1 hour.
3. Reduce the oven temperature to 375°F. Add the carrots, scallions and garlic to the pan. Stir to coat everything with grease and bake for 30 more minutes. 4. Transfer the wings and veggies to a large stockpot. Add the water, ginger, mushrooms, seaweed, benito flakes and soy sauce. 5. Deglaze the roasting pan with the wine and add to the pot. Cook over high heat until the water begins to simmer. Reduce the heat to low and steep until the chicken is falling off the bones, about 3-5 hours. (Note: You may need to add water now and then to keep the chicken covered.) 6. Strain the broth into a large bowl, cover and refrigerate overnight. (Tip: The leftover chicken is pretty tasty in chicken salad and stir fries). 7. When the broth is chilled the fat will rise to the top; scrape off the fat and discard. 8. Meanwhile, make the tare sauce: Combine all the ingredients in a bowl. Cover and chill in the fridge overnight. (Note: This will be added to the broth before right serving. A little goes a long way so add a little and taste; repeat until it's right.) 9. When ready to serve, cook the udon noodles per package instructions. 10. To serve, slowly warm up the broth and season to taste with the tare sauce. Place some noodles in each bowl and ladle in the hot broth. But before you dig in, make it your own! Add your favorite toppings and protein—chopped tofu, sliced cooked chicken breast, medium boiled eggs with a runny yolk—and enjoy!

OUTH MAIN BAP TIST CHURCH HAS BEEN AN INTEGR AL PART OF THE HOUSTON COMMUNIT Y FOR MORE THAN 110 YE ARS. The location is ideally set between downtown and the Texas Medical Center. The congregation has been active in the Houston community and abroad throughout its history and is also well known for its stance on issues such as civil rights and women in ministry. In 1903 the Texas Baptist Convention invited Dr. Livingston T. Mays to Houston for a series of “tent revivals.” Dr. Mays’ charismatic preaching took the city by storm and shortly thereafter he was called to become the pastor and on November 15, 1903, the Tuam Avenue Baptist Church was founded with 32 members. Dr. Mays and the Tuam Avenue Baptist Church were instrumental in helping another local Baptist leader establish an 18-bed Baptist Sanatorium in Houston. This facility became known as Houston’s Memorial Hospital, which has now evolved into today’s Memorial Hermann Healthcare System. By the early 1920’s the congregation began to outgrow the original church on the corner of Fannin and Tuam. So, in 1924 the church acquired property on Main Street near what is now the Houston Medical Center and in 1930, the Sanctuary building, where they still hold services was finished. The current location is 4100 Main Street and that’s when the church changed its name to South Main Baptist Church. From 1935 to 1939, the church also provided space for the University of Houston, until the University’s current campus on Cullen Boulevard was completed. As many of the churches in the area moved from downtown to the suburbs, South Main’s congregation made a commitment to remain close to downtown. In 1989, a Touch The Future campaign led to the renovation of many of the existing buildings, as well as the addition of a new Welcome Center facing Main Street. Under the current leadership of Dr. Steve Wells, the congregation has continued to embrace a heritage of diversity and a passion for service. In the past decade the church built a new Youth Center, renovated classroom buildings and improved the children’s facilities. The church also completed an $11 million
