Editor’s Letter HANG ON: It’s going to be a wild ride!
I
’ VE LOVED THE HOUSTON LIVESTOCK SHOW AND RODEO SINCE MOVING HERE AND HAVE SO MANY MEMORIES SURROUNDING THE ANNUAL EVENT. A group of us Aggies chartered a bus to the event for a surprise date night in my college days. As a young single, I got my first glimpse of some big stars at HLSR concerts (Garth Brooks in 1993—yeah!). My good friend Chad used to let my single girlfriends and me crash his suite and experience the luxury side of rodeo. And who doesn’t love scooting around the packed dance floor in The Hideout? When I became a parent, I discovered a different side of rodeo. The educational component I’d always glossed over came to life for my family and me. Watching chicks hatch and seeing bunnies and bees are really just the beginning. The first time I walked through Fun on the Farm, I was so amazed at the thought-provoking layout. From planting seeds to harvesting and selling your goods at the store, children are learning true life lessons! Although my children are still too young to fully comprehend money, one son recently reminded me what he did with the two dollars

he earned: he bought a snack with one and put the other in the bank. Mutton Bustin’ has long been a fan favorite at The Junction area in the carnival grounds and kids still compete there several times everyday. Several years ago, it was added to the lineup inside NRG during the rodeo—Mutton Bustin’ went mainstream! I became obsessed with watching 5and 6-year old kids, hanging on for dear life, ride the wily, wooly, bouncing muttons through the arena. These lucky, little cowboys and cowgirls are selected through a lottery to compete on the main stage. I was so thrilled to receive the message that our twins’ numbers were selected! We are looking forward to Rodeo Houston this year in a way we never have before. Just when I thought the family rodeo experience couldn’t get any better, it did! ISLE 4 – CUCUMBERS, TOMATOES, CARROTS, K ALE . Why is kale such a hot item these days? Every yuppy and Gen X recipe features kale. Yuk! I’d rather suck rocks. One thing they all have in common is that customers put the veggies in these little translucent plastic bags. They are handy, and certainly beat wrapping your lettuce in a damp towel. But plastic bags can be a nuisance, or even deadly, which brings us to the Texas Legislature. It seems that some Texans don’t like those plastic bags, and want to outlaw them, at least in their area. West Texas ranchers say their horses and cattle eat plastic bags that blow into the pastures, and die. Galveston residents who depend on tourism, say plastic bags clutter the beaches and hurt business. The endangered Kemp’s ridley sea turtles seem to love a good plastic bag for lunch, making the turtles even more endangered. Other towns just don’t like the clutter of bags clogging sewers, hanging from trees making their towns look blighted, or in some cases even more blighted. So they passed local ordinances banning the bags. Fort Stockton in West Texas approved a ban. The Galveston City Council unanimously backed an ordinance to ban those bags at stores. So did Laredo and Austin. Houston and San Antonio were taking steps in that direction. All told, about 11 Texas cities have banned the bags. Statewide, they have been prohibited in places like California and Hawaii. But Texas is going in the opposite direction. Our Legislature passed a statewide law that, in effect, prohibits local governments from prohibiting the bags.
Laredo merchants took note of this state law and sued. The city of Laredo argued it imposed the ban to avoid spending hundreds of thousands of dollars to clean disposable bags from the sewer system. Now the Texas Supreme Court has ruled Laredo can’t impose a ban on plastic bags. This ruling by the Texas Supreme Court not only tosses out the Laredo ban, but will soon do the same to other cities’ ban ordinances, and end efforts by Houston, etc. to enact similar bans. Republican Attorney General Ken Paxton applauded the decision and warned cities with existing bans to reconsider. “I hope that Laredo, Austin, and any other jurisdictions that have enacted illegal bag bans will take note and voluntarily bring their ordinances into compliance with state law,” he said in a statement. “Should they decline to do so, I expect the ruling will be used to invalidate any other illegal bag bans statewide.” That’s pretty clear. Who would want to mess with Texas’ mess? Merchants, as mentioned, and Big Oil. You see, those bags are petroleum products, and with California and Hawaii already opting out of plastic bags, who knows how many other states will follow? But that industry doesn’t make state laws, does it? Of course the oil and gas biz gets what it wants from the Texas Legislature. But there is another, and most disturbing, movement afoot: our state lawmakers telling local governments what to do, because our legislators know what’s best for us. If the good people of Galveston want to clean up their beaches, what business is it of some lawmaker in Pampa or San Augustine? Why should a legislator from a Dallas suburb care about horses in Fort Stockton? Again, you must be new in town. Follow the money.
Check the campaign donations of those who voted for the statewide ban on bans. This long-distance meddling also follows a hypocritical power grab by our top state leaders. They love to exercise their power. Lieutenant Governor Dan Patrick got involved in a Houston referendum on gay rights (it wasn’t called that, but it still lost). Governor Greg Abbott endorsed one Republican candidate for the state legislature over a more moderate one, who won. The governor once called these local rules “a form of collectivism.” The Republican-controlled legislature has even passed laws dealing with local governments’ ordinance on Uber, Lyft and cutting trees. Okay, all this time you have been wondering about plastic bags. The popularity of these bags began to snowball from the mid-1980s onwards. It is estimated that the number of plastic bags discarded worldwide is about 1 trillion annually, and an estimated 300 million plastic bags end up in the Atlantic Ocean alone. While the average consumer in China uses only two or three plastic bags a year, U.S.: about 300. Waterways and drains can be clogged by plastic bags and have been linked to severe flooding. Wonder if we should stop blaming the U.S. Army Corps of Engineers for the aftermath of Hurricane Harvey. Plastic bags can take up to 1,000 years to decompose, especially if they are filled with kale.H

TILMAN FERTITTA, CEO of the restaurant empire, Landry’s, Inc., recently provided Houston with its first AAA Five Diamond Award for his Post Oak Uptown hotel. This prestigious rating has only been earned by 89 hotels nation-wide, making Post Oak Uptown one of three in Texas and the only one in Houston to have earned this rating. Last year the Fertitta Center was opened at the University of Houston, and he was honored by induction into the University of Houston Athletic Hall of Honor. Recently, in his role as Chairman of the Board of Regents for the University of Houston, he welcomed new UH head football coach, Dana Holgorsen. Fertitta is the Chairman of the Board of Houston Children’s Charity and the Chairman of the Board of the Houston Police Foundation, where he has hosted, with his family, the “True Blue Gala” in his home for 11 years. LESTER AND SUE SMITH have been called the “King and Queen” of Houston philanthropy. SBP announced that as of December 31, 2018, it was on track to complete its 100th home and plans to remain in Houston for the next five years. JIM CRANE is the man who bought the Astros, Houston’s oldest professional sports team, and has, after eight years, turned it into one of the city’s best assets—winning the World Series in 2017. Spurred by the popularity of the Astros, the downtown area of Minute Maid Park has seen a healthy revitalization. Jim Crane’s next project? Saving the Houston Open at Memorial Park by revamping the golf tournament to be held in October of 2020 and returning the premier PGA event to Houston. The $40 million needed to accomplish this project will be raised by private funds.

Don’t hold the cheese, please! A new study published in The American Journal of Clinical Nutrition reveals that consuming the saturated fats found in dairy—and that includes everything from cheddar to cream cheese to that ghostspiked jack you can't get enough of—doesn’t increase your risk of cardiovascular disease. Researchers assessed nearly 3,000 healthy adults over a 22-year period, and found that participants with higher levels of the dairy-related fatty acids in their blood had a 42 percent lower risk of stroke and heart Jean disease. I have a gluten sensitivity and have adopted a gluten-free diet. Why do foods like glutenfree oats and cereals still upset my stomach?
A.

The first thing to consider is that you may have additional food sensitivities. Cereal grains like oats are common foods that the immune system adversely reacts to. Current research has clearly indicated that gluten breaks down the integrity of the intestinal barrier for
those with gluten sensitivities. When the gut barrier is compromised (often referred to as “leaky gut”), food particles can pass through the barrier wall and enter into the circulation where the immune system will regard the undigested food particle as a “bad guy,” creating a new food sensitivity.
Furthermore, the undigested food particle is a protein made up of a chain of amino acids. In a handful of identified foods, a small portion of this amino acid chain mimics a similar chain found in gluten. This similarity can be close enough for the immune system to react as if it were gluten, even
though you consumed gluten-free oats. Other foods that have been identified in laboratory research to potentially cause a similar glutenassociated crossreaction include: dairy, yeast, oats, millet, corn and rice.

Cost is another factor to consider, and nutrigenomics should not be used as a predictor of disease, diagnoses or a short-term fix. Plus, there are privacy concerns surrounding the access to DNA testing. They say that you are what you eat, but now, some believe we should eat based on who we are. Although the idea of using food as medicine has been around for centuries, nutrigenomics takes it into the 21st century by revolutionizing the future of how we eat. With the breakthrough of the human genome, nutrigenomics studies the relationship between your genes and diet and the impact it has on your health, especially regarding the prevention or treatment of disease. But it’s not as easy as picking up a book and following a pre-set plan. The first step is finding a reputable company that specializes in DNA nutrigenomic testing. A blood or saliva test will detail specific genetic markers that will help determine what you should be eating and drinking. One caveat, however, is you must work with an experienced clinician who can accurately analyze these results, formulate a diet, and teach you how to choose, prepare and cook foods in ways that fit your genetic profile. Even though you may be more apt to stick to a diet specifically designed for you, remember that

Are there any adverse effects of fish oil supplements?
A.
The American Heart Association recommends consuming at least two servings a week of fatty fish, such as tuna, wild salmon, halibut and sardines. These fish are just some of the excellent sources of omega-3 fatty acids, an essential fat necessary for normal growth and development with powerful anti-inflammatory effects. Not a fish fan? Fish oil supplements may be a good alternative to reap the benefits. Some of the science-backed benefits include: an increase in good cholesterol and a decrease in triglycerides and blood pressure; protective properties from certain cancers; possible relief from rheumatoid arthritis; and an improvement in symptoms of depression as well as cognitive function and brain power. Omega-3s have also been shown to lower the risk of kidney stones and alleviate the severity of some skin ailments.
Recently, however, conflicting research has surfaced. A new study published in the Journal of Nutritional Biochemistry found that longterm intake of fish oil in rats increased chances of developing serious liver diseases. Another showed a possible increased risk of prostate cancer. Although these results seem alarming, it’s difficult to draw definitive conclusions in isolating the effects of fish oils without looking at other health factors (and without further research). Before taking any supplement, always consult with your doctor. The typical recommended dosage is no more than three grams a day, unless otherwise directed, as it may interfere with clotting and lead to an increased risk of bleeding. Since supplements are not regulated, make sure to read labels carefully and only buy from reputable sources. —L.D. WINTER 2019

What exactly is “alkaline” water? Is it really better for my body than the regular stuff?
A.
Water is a necessary part of our diet, as critical as your intake of essential vitamins and minerals. It comprises more than two-thirds of our body weight and plays a vital role in our bodily makeup and functions, including digestion and temperature regulation. And because we naturally lose water through breathing, sweating, urinating and bowel movements, health experts agree that proper hydration is key for optimal health.

The latest trend to help replenish these fluids is alkaline water. If you can recall basic chemistry, the pH scale measures whether water-soluble substances are acidic (< 7), neutral (7) or alkaline (> 7). Pure drinking water is considered neutral, while alkaline water has a higher pH as a result of changes to the chemical and gas composition. Proponents of this super-charged water suggest that benefits range from slowing
the aging process and neutralizing stomach acid to boosting postexercise recovery, the immune system, bone health and your overall energy level. Sounds impressive, but the science has yet to back up these claims. Plus, this fancy water comes at a higher price tag, whether it’s delivered in a bottle or through a pricey do-ityourself ionizer. Alkaline water in moderation is generally regarded as safe, but remember that too much of anything
can have potential adverse health effects, especially for those on certain medications or with kidney issues, and can cause nausea, vomiting and muscle twitching. Bottom line, don’t buy into the hype—at least not until long-term research provides some real proof. If you’re looking to quench your thirst and rehydrate, a tall glass of plain H2O is all you need to do the trick! —L.D.
An Early Dinner Keeps the Doctor Away Yet another reason to nix the late-night noshing: In addition to keeping acid reflux and weight gain at bay, eating an early dinner might reduce your risk of breast and prostate cancers by 20 percent, according to a study in The International Journal of Cancer. Researchers found that the key is to schedule your evening meal before 8 p.m. (or at least two hours prior to bedtime). JDRF Kick Off Soirée JDRF Houston Gulf Coast Chapter kicked off the 20th anniversary of its annual gala, Promise Ball at 51fifteen. Society On November 15, Houston CityPlace Marriott at Springwoods Village officially opened its doors to guests and visitors. New books coming from Texas authors TELL NO ONE By Barbara Taylor Sissel (Paperback, $14.95; amazon.com) Texas novelist Barbara Taylor Sissel’s newest release, Tell No One, hits newsstands May 14. As the author of ten books, she draws on her experience of being raised in various places across the U.S. and her page-turning thrillers focus on family at the heart of the crime and this one is no exception. In Tell No One, Caroline Corbett, abandoned at a young age, wants nothing to do with her father who vanished from her life almost 30 years ago, but a dying wish from her beloved aunt changes everything. Her failing marriage and personal troubles are pushed aside as she begins a desperate search to look for him. Thirty-five years ago, Houstonian Bartee Haile began writing a column titled "This Week in Texas History" for small-town and suburban newspapers. HE LOVE STORY OF ALEJANDRO AND HIS BEAUTIFUL BRIDE , BL ANCA , IS A TIMELESS ONE , BUT THEIR ENGAGEMENT WAS ONE-OF-A-KIND. Alejandro arranged a unique surprise trip to Austin, a thrilling hydroplane ride, and a candle lit dinner on the water. If this enchanting story sounds too good to be true, there was one hitch. The plane had mechanical issues, so ultimately, they didn’t fly. However, the crew made sure the couple had their candle light dinner. As they departed the plane, Blanca was surprised to see an easel featuring photos of their life together. They flipped through pictures, telling their story from the first day they met through present day. The final picture had a caption that asked, “Are you nervous yet? Imagine how I feel.” Blanca turned to see Alejandro down on one knee, the brilliant Austin sun setting behind him in the distance. There on the banks of Lake Travis, he asked her to be his bride and she said yes. When the couple attended the Bridal Extravaganza to kick off their wedding planning, it was Alejandro who suggested Blanca sign up for the Billboard Bride promotion. Blanca says she never wins anything, but she took a chance and we’re sure glad she did! Her dazzling smile lit up the Houston skyline as the face of the Bridal Extravaganza; inviting future brides to plan, shop and wed. For the Billboard Bride photo shoot, Blanca’s mother accompanied her to Ventura’s Bridal Fashions to select just the right gown. “I’m glad I took my mom with me,” says Blanca of this special mother-daughter moment. “It was

the first time I tried on a wedding dress.” The selection at Ventura’s is extensive. “Mrs. Ventura brought out a variety of gowns; some were heavy, some were light, some were all blinged out. When I tried on the dress you see here, everyone said, that’s the one!” LOCATION, LOCATION, LOCATION Featuring a picturesque arbor overlooking a charming pond, 15 Acres is a beautiful location set against acres of green meadows. The park’s paramount ride starts with a vertical 100 plus foot climb followed by, of course, a 100 plus foot drop— straight down! Our great state has birthed some memorable figures— and some we wish to forget, too. by Lynn Ashby

HAT DO SAM DONALDSON, NOL AN RYAN AND DWIGHT EISENHOWER HAVE IN COMMON? No, they were not brief members of the Trump cabinet. They were all born in Texas. So were Debbie Reynolds (El Paso), Joan Crawford (San Antonio) and Tommy Lee Jones (San Saba). Actually, the entertainment industry is filled with our former neighbors: Carol Burnett (San Antonio), Gary Busey (Goose Creek), Cyd Charisse (born Tula Ellice Finklea in Amarillo), Spanky McFarland (Fort Worth), Steve Martin (Waco). And what would the musical world be without Texans? Willie Nelson (Abbott), Trini Lopez (Dallas), Selena (Lake Jackson). And although Larry Hagman (Fort Worth) didn’t sing, his mother Mary Martin (Weatherford), did. Who can forget our favorite singing Longhorn, Janis Joplin (Port Arthur) or the Big Bopper, aka Jiles Perry “J. P.” Richardson, Jr. (Sabine Pass). We also have Beyonce (Houston), Ernest Tubb (Crisp) and Tommy Tune (Wichita Falls). Ragtime composer Scott Joplin (Texarkana) was reintroduced to millions in The Sting. Speaking of films, Humphrey Bogart never did say, “Play it again, Sam” in the 1942 film Casablanca. The line, “Play it once, Sam,” was from Ingrid Bergman. Sam was played by Dooley Wilson, who was born in Tyler. Notice that you never see Sam’s fingers on the keyboard. That’s because he was a drummer. The military has more than its quota of Texans. While Admiral Chester Nimitz (Fredericksburg) commanded the Pacific Fleet in World War II, General Dwight Eisenhower (Dennison) commanded all Allied troops in the European and African Theater. An interesting story about Ike. He thought he was born in Abilene, Kansas, where he grew up, and put down Abilene as his birthplace on his application to West Point. When Ike became a famous five-star general, a lady in Dennison thought she remembered babysitting little Ike at the Eisenhower home there. (I’ve visited the house, a tiny, humble place.) Ike was surprised to learn he was a native Texan.

An interesting story about Ike. He thought he was born in Abilene, Kansas, where he grew up. When Ike became a famous five-star general, a lady in Dennison thought she remembered babysitting little Ike at the Eisenhower home there. Ike was surprised to learn he was a native Texan. The most decorated soldier in World War II was Audie Murphy (Kingston). He could also be listed in the Hollywood category because, after the war, he made more than 40 movies and a TV series. This military thing is traditional, according to the Western Monthly Magazine in October, 1838: “…the Texians being entirely a military people, not only fought, but drank, in platoons.” Nobel laureate John Steinbeck, in Travels With Charley observed: “Among other tendencies to be noted, Texas is a military nation. The armed forces of the United States are loaded with Texans and WINTER 2019

often dominated by Texans. Even the dearly loved spectacular sports are run almost like military operations. Sectional football games have the glory and despair of war, and when a Texas team takes the field against a foreign state, it is an army with banners.” While it is interesting to learn that so many famous people hail from the Lone Star State, it is also interesting to learn that most of the founders of Texas came here from other places. Sam Houston and Stephen F. Austin were born in Virginia. William B. Travis and James Bonham came from South Carolina. James Bowie was from Kentucky. The Alamo defenders came from 20 states and six countries. There were only 11 native Texians at the Alamo and they couldn’t speak English. Twenty-two of the defenders just appeared, and no one knows where they were born. At San Jacinto, the Texas Army came from 24 states, 11 countries, and Texas. The only native 34

Texians were 30 Tejanos from San Antonio. “A scene singularly wild and picturesque presented itself to our view. Around 20 or 30 campfires stood as many groups of men: English, Irish, Scots, Mexicans, French, Germans, Italians, Poles, Yankees, all unwashed and unshaved, their long hair and beards and mustaches matted, their clothes in tatters and plastered with mud. A more savage-looking band could scarcely have been assembled.” Some things never change. All these newcomers give fresh meaning to the bumper sticker; “I’m not from Texas, but I got here as soon as I could.” This also includes Dr. Michael DeBakey (Lake Charles), Walter Cronkite (Saint Joseph, MO) and Roger Clemens (Dayton, OH). Getting back to those who were born here, the Texans have rather dominated the evil media, especially the TV news. We have Dan Rather (Wharton). Then there are Bob Schieffer (Austin) and Scott Pelly (San Antonio). Lou Dobbs is not

from Childress, but from “Childress County.” When it comes to athletes, we can’t list them all. Nolan Ryan (Refugio), Ben Hogan (Stephenville), A.J. Foyt (Houston), most of the NFL, Roger Hornsby (Winters), “Babe” Didrikson Zaharias (Port Arthur) and a newly pardoned Jack Johnson (Galveston). Incidentally, Johnson fits into a sub-category: BOI. That’s Born On the Island (of Galveston). The BOIs are very proud of that, although most are descendants of Jean Lafitte. Only two U.S. Presidents were born here, Ike and Lyndon Johnson (Stonewall). Since Jim Hogg, most of our governors were Texan-born. George W. Bush was an exception (New Haven, CT). In other areas, we have Dr. Denton Cooley (Houston), former U.S. Supreme Court Justice Sandra Day O’Connor (El Paso), H. Ross Perot (Texarkana), Katherine Anne Porter (Indian Creek), Howard Hughes (Houston), painter Robert Rauschenberg (Port Arthur) and Gene Roddenberry (El Paso).
Who was the first white female to be born in Texas? It could be Mary James Long, or maybe not. On December 21, 1821, Jane Herbert Wilkinson Long gave birth to Mary James on Bolivar Peninsula, and throughout Jane Long’s life she claimed to having given birth to the first white baby in Texas and was called “The Mother of Texas.” However, censuses between 1807 and 1826 reveal a number of children born in Texas to Anglo-American mothers prior to 1821. Stephen F. Austin is called “The Father of Texas,” and he once romanced Jane Long. Hmmmm. Finally, also born in Texas were Bonnie and Clyde (Rowena and Ellis County, respectively), and Barrow and David Koresh of the Waco siege fame (Houston). Let’s assume they forged their birth certificates. H

SPRING 2014 ROASTED BONE MARROW WITH PARSLEY SALAD CROSTINI Bone marrow is a healthy, nutritious fat (think avocado). The bones are typically cut into circles about an inch-and-a-half thick or visit your favorite meat market and the butcher will cut them on request. For the salad: 2 TABLESPOONS OLIVE OIL 1 TABLESPOON LEMON JUICE 1 CUP FLAT-LEAF PARSLEY, CHOPPED 1⁄3 CUP SLICED SHALLOTS 1 TABLESPOON CAPERS, CHOPPED SALT AND PEPPER TO TASTE For the marrow: 8 BONE MARROW PIECES SALT AND PEPPER TO TASTE CRUSTY WHITE BREAD, TOASTED 1. Whisk the oil and lemon juice together. Place the parsley, shallots and capers in a bowl. Add the oil mixture and then toss and season with salt and pepper. Chill for at least 30 minutes. 2. Preheat the oven to 450°F. Line a baking sheet with foil. Arrange the bones on the sheet and season with salt and pepper. Bake for 15 minutes. Remove from the oven and season again. 3. To serve: Place 2 bones on each plate with a couple of pieces of toast. Add some parsley salad and pour the marrow drippings from the baking sheet over the bread. 36

FALL 2014 GRILLED LAMB CHOPS WITH BLUEBERRY–JUNIPER SAUCE The unique combination of plump, juicy blueberries and piney, citrusy juniper berries stands up well to heat and pairs perfectly with luscious, tender lamb. This dish is sure to be a standout at your next get-together. For the sauce: 1 TABLESPOON OLIVE OIL 1 TABLESPOON BUTTER ¼ SHALLOT, MINCED 2 TABLESPOONS HONEY 1 TABLESPOON WHITE BALSAMIC VINEGAR 1 CUP BLUEBERRIES, SMASHED 4 JUNIPER BERRIES 1 DRIED CHIPOTLE CHILE 6 MINT LEAVES, CHOPPED For the lamb: 2 POUNDS FRENCHED LAMB CHOPS OR LOIN 2 TABLESPOONS OIL 2 TEASPOONS SALT ½ TEASPOON GARLIC POWDER ½ TEASPOON CORIANDER 1 ⁄8 TEASPOON GROUND CAYENNE ¼ TEASPOON WHITE PEPPER 1. Make the sauce: In a saucepan over medium, soften the shallot in the oil and butter. Add the honey, vinegar and blueberries, and allow the mixture to come to a simmer. 2. In a spice grinder, or using a knife, finely chop the juniper berries and chile. Add to the sauce and simmer for about 5 minutes then finish with the chopped mint. Remove from the heat. 3. Make the lamb: Lightly rub the chops or loin with the oil. Combine the remaining ingredients in a bowl and dust each side of the lamb with the spice blend. Grill the chops on medium-high for 3½–4 minutes per side. 4. Allow the lamb to rest for a few minutes before plating. Serve the chops with the sauce drizzled along the plate.

BEST OF 2016 FIDEOS-STYLE PASTA PAELLA Chef John Hamme, one of Alabama’s top chefs, joined Laurette and Tom in their home and shared his pasta paella recipe that’s sure to please any palate. The stock recipe (all Hamme’s) is so delicious that some of the guests were sipping it out of coffee mugs. For the stock: 1 POUND CHICKEN WINGS (LEGS OR QUARTERS) 2 ONIONS, JULIENNED 3 STALKS CELERY, JULIENNED ½ GARLIC BULB, PEELED AND THINLY SLICED 1½ POUNDS JUMBO SHRIMP, PEELED, DEVEINED AND SHELLS RESERVED 4 OUNCES TOMATO PASTE 2 BAY LEAVES 15 BLACK PEPPERCORNS, CRACKED 2 POUNDS SMOKED PORK NECK BONES OR HAM HOCKS 1 GALLON LOW-SODIUM CHICKEN BROTH ½ GALLON WATER For the paella: 5 CUPS STOCK (FROM RECIPE ABOVE) 2 TABLESPOONS OLIVE OIL 2 CUP FIDEOS NOODLES OR 8 OUNCES ANGEL HAIR PASTA , BROKEN INTO 1-INCH PIECES 5 LOBSTER TAILS , HALVED 2 MEDIUM SPANISH ONIONS, JULIENNED 3 GARLIC CLOVES, THINLY SLICED 1 SHALLOT, JULIENNED 2 GREEN BELL PEPPERS , JULIENNED 1 RED BELL PEPPER, JULIENNED 1 YELLOW BELL PEPPER, JULIENNED 1 (7.9-OUNCE) PACKAGE MILD SPANISH CHORIZO ½ CUP WHITE WINE ¹⁄8 TEASPOON HOT SMOKED PAPRIKA 1 POUND BLACK MUSSELS 1 POUND SMALL CLAMS 1. Make the stock: In a large pot over high, brown the chicken on all sides, then caramelize the vegetables starting with the onion. Add the shrimp shells and sauté slightly. Add the tomato paste and cook to slightly caramelize. Add the bay leaves, peppercorns, bones, broth and water. Slowly bring to a simmer and cook for 4½ hours on low. Strain, reserving the liquid. 2. Make the paella: Heat the stock in a separate saucepan until lightly boiling. (Note: While assembling paella, never stop stirring the contents. Two cooks are a big help, one to add the ingredients and one to stir.) 3. Meanwhile, warm the oil in a 13-inch paella pan. Add the pasta and toast until golden brown, about 5–6 minutes. Remove the pasta and set aside. 4. Sear the lobster (meat side down) and reserved shrimp, then remove and set aside. Add the onions, then the garlic, shallots and peppers. Add the chorizo and sauté a moment longer.
5. When the vegetables are half-cooked, add the wine and deglaze the pan, scraping the browned bits from the bottom. Return the pasta to the pan. Sprinkle in the paprika and add 2 cups hot stock, stirring constantly. Add the remaining stock 1 cup at a time, continuing to stir, working the starch out of the noodles. As you add the last cup of stock, test the noodles for doneness; they should still be somewhat firm. 6. Add the shrimp and lobster back into the pan, then the clams and mussels. Cover the pan and finish cooking until the mussels open. 7. Preheat the oven to broil. 8. Remove the lid from the paella and place the pan under the broiler until the top is crispy and the pasta begins to curl.

For the stock: 8 POUNDS CHICKEN WINGS 2 ONIONS, SLICED 2 CELERY STALKS, SLICED 1 CARROT, SLICED 1 GARLIC BULB, HALVED 4 SPRIGS PARSLEY 10 CUPS WATER ½ TEASPOON DRIED BASIL ½ TEASPOON DRIED THYME 4 TEASPOONS SALT 1 TABLESPOON CRACKED BLACK PEPPERCORNS 40

For the brine: 9 CUPS STOCK (FROM RECIPE AT LEFT) 1 CUP DILL PICKLE JUICE 2½ TABLESPOONS SALT 1 TEASPOON CORIANDER SEEDS ½ TEASPOON MUSTARD SEEDS 1 BAY LEAF 1 LARGE ORANGE, QUARTERED 1 SMALL LEMON, QUARTERED ½ HEAD GARLIC, HALVED ½ BUNCH THYME 2 WHOLE CHICKENS, CUT INTO PIECES For the breading: 2 QUARTS FLOUR 2 CUPS CORNMEAL 1 CUP CORNSTARCH 2 TEASPOONS PAPRIKA 2 TEASPOONS SALT 1 TEASPOON GROUND CELERY SEEDS 1 TEASPOON CHILE POWDER 1 TEASPOON GARLIC POWDER 1 TEASPOON ONION POWDER ½ TEASPOON PEPPER ½ TEASPOON GROUND CAYENNE 1 TABLESPOON OLD BAY SEASONING 1. Preheat the oven to 450°F. 2. For the stock: Arrange the chicken in a single layer on baking sheets and top with the onions, celery, carrot, garlic and parsley. Bake for 45 minutes. 3. Remove from the oven and place all the ingredients in large stockpot. Bring to a boil then reduce the heat, cover and simmer for 2 hours. Strain the liquid into a large bowl and chill. Discard the wings and veggies. (Tip: The wing meat is delicious. Don’t let it go to waste, separate it from the bones and make chicken salad.) 4. When the broth is chilled scrape the fat off the top. 5. For the brine: Combine all the ingredients except the chicken in large stockpot. Bring to a boil and simmer on high for 15 minutes. Strain and cool liquid to 40°F. Once cooled, place the chicken in the brine and marinate in the fridge for 24–48 hours. 6. For the breading: Combine all the ingredients in a large bowl then equally divide the mixture into separate bowls. Set aside one bowl of breading mixture; you will coat the chicken twice and the second coat is easier with a fresh patch of breading mix. 7. Fry the chicken: Preheat a deep fryer to 360°F. Preheat the oven to 200°F. Place a wire rack on baking sheet. 8. Remove the chicken from the brine and drop into the breading mixture. Coat, shake off excess mixture and set aside for 30 minutes. Repeat with all pieces. 9. Drop the chicken in the reserved breading mixture and immediately into the deep fryer. Fry until golden brown. Remove, place on the wire rack and put in the oven until ready to serve. Repeat until all the chicken is cooked. Chicken can hang out in the oven for more than 1 hour.
SUMMER 2018 ROASTED GRAPE BRUSCHETTA The summer edition of On the Menu titled “Flight of Fancy” paired wines with each course to create fond memories for all. For this tasty appetizer, Hattingley Valley Classic Reserve Sparkling Wine and Chateau Trocard Monrepos was the perfect pairing. 4 CUPS RED GRAPES 1 TABLESPOON OLIVE OIL 1 TEASPOON CHOPPED THYME 1 TEASPOON SALT ¼ TEASPOON PEPPER 1 TABLESPOON BALSAMIC VINEGAR ½ CUP GOAT CHEESE 24 SLICES BAGUETTE, LIGHTLY TOASTED ¼ CUP CHOPPED WALNUTS, TOASTED HONEY FOR GARNISH THYME SPRIGS FOR GARNISH 1. Preheat the oven to 325°F. Coat a baking dish with nonstick spray and set aside. 2. Place the grapes, oil, thyme, salt and pepper in a mixing bowl and toss. Transfer to the baking dish and roast in the oven, stirring occasionally until the grapes begin to wrinkle, about 50 minutes. 3. Remove from the oven and drizzle on the balsamic vinegar. 4. To serve, spread the goat cheese on the bread, top with the grapes, walnuts and a sprig of thyme. Finish with a drizzle of honey. WINTER 2019

1. Make the lamb: Liberally season the lamb with salt, pepper and Cajun seasoning. 2. Heat the oil in large cast-iron skillet over medium-high. Sear the lamb on all sides until golden. Remove from the heat and set aside for 1 hour. 3. Preheat the oven to 375°F. 4. Combine the breadcrumbs and rosemary in a bowl and set aside. 5. Rub the fat cap of the lamb with the mustard and garlic, then pack with the breadcrumb mixture. 6. Bake until the internal temperature reaches 118°F–120°F, slightly past medium-rare. Let rest for 15 minutes and cut into individual chops.

7. Make the sea bass: Preheat the oven to 350°F. Cut the fillet into 6 pieces and remove the skin and lingering bones. 8. Heat the oil in a cast-iron skillet over mediumhigh. Working in batches, sear the fillets until the bottom sides are brown and crispy. Meanwhile, season the top sides with salt and pepper. 9. Remove from the heat and set aside to rest on a paper towel–lined plate, crispy side up. 10. Place the chips in a food processor and grind to a breadcrumb texture. Using a pastry brush, paint the seared sides of the fillets with oil and top with the chip crumbs. 11. Transfer the fillets to a sheet pan and bake for 12–15 minutes, or until desired doneness. Remove from the oven and set aside.
12. Make the maque choux: Cook the bacon in a large skillet over medium-high until caramelized. Add the potatoes and carrots and cook until they begin to brown. 13. Add the butter, garlic and remaining vegetables. Cook for 8–10 minutes, stirring often until desired doneness is achieved. Add the chicken stock. Season with salt and pepper. 14. Plate it Perfectly: Neatly place 1⁄3 cup maque choux in the center of each plate. Serve with the sea bass and lamb chops. Garnish with parsley.

Literally translating to “white butter,” it’s balanced here by aromatic shallots and acidity from white wine and lemon juice. For the redfish: 2 TABLESPOONS BUTTER 1 POUND REDFISH 1 TABLESPOON BLACKENED SEASONING MICROGREENS FOR SERVING 1. Make the butter: Cream together all the ingredients in a bowl. Transfer the mixture to parchment paper and roll into a log. Chill in the fridge until firm, about 1 hour. 2. Make the beurre blanc: Place the shallots, peppercorns, bay leaves, thyme, lemon juice and wine in a pot. Simmer over low until reduced by three-quarters. Add the cream and reduce by half. Remove from the heat and begin adding the butter. (Note: Add the butter to taste; the goal is to mellow the acidity with the butter.) Once complete, strain and keep warm. Remember that butter can break with too much heat. 3. Make the green beans: Cook the bacon in a pan over medium until the fat renders and the bacon is slightly browned. Add the herb butter and onions and cook until the onions are translucent. Add the beans and season with salt and pepper. Remove from the heat once warmed through. 4. Make the fish: Melt the butter in a skillet over high. Coat the redfish with the seasoning and sear for 3 minutes. Flip and cook for 2–3 minutes. 5. To serve, ladle some beurre blanc in the center of a plate, top with the redfish and green beans. Garnish with microgreens.

Cover the peppers with boiling water in a bowl and soak for 15 minutes. When soft, remove and discard the stems and seeds. Reserve 1 cup steeping water.
2. Combine the peppers, honey, lemon juice and reserved water in a blender and puree until smooth. Season with salt and pepper. Pass through a fine sieve to strain and let cool. 3. Warm the oil in a deep fryer or high-walled pot to 350°F. Working in batches, fry the Brussels sprouts for 2 minutes. Drain on paper towels. 4. To serve, drizzle the Guajillo sauce over the sprouts.

Still, and I use the term loosely, the “average” suites can make you feel like royalty with a huge bed, spacious seating area, a gargantuan bathroom equipped with a separate shower and tub, walk-in closet, an outdoor patio and your very own fireplace. Every night after dinner, as soon as I stepped into my casita, the fire was already lit and waiting for me to kick off my shoes and plop down on an armchair to relax with my Kindle. It’s these little details that make it clear why the resort is so highly rated. There were many other first-class touches that gave me the impression that I wasn’t just at any other hotel or resort. When housekeeping stopped by while I was out, they would neatly wrap up my charging cords, securing them with a velcro strap. Every morning, a pitcher of freshly squeezed orange juice waited on a ledge by the front door. The mini-bar was completely complimentary, stocked with snacks and beverages. I truly felt spoiled!

IT’S A SPA LOVER’S DREAM COME TRUE.
The Spa at Rancho Valencia is separate from the main building and the casitas that dot the property. Once you’ve passed through the checkin area, it’s like being transported all over again, perhaps to Italy to bask in the sun by the pool, surrounded by olive and palm trees, complete with cabanas and food and drink service. It’s also
where many of the resort’s fitness activities are housed (more on that next). After checking in and hanging out in one of the tranquil waiting areas stocked with healthy treats, teas and juices, I was more than ready for my hot stone massage. As I’m writing this story in a stiff office chair, I wish I could book another appointment; I felt completely rejuvenated and blissed out after my treatment. Friends of mine opted for other treatments that showcased the gamut of services offered. One had a facial and a body scrub to slough off dull skin to reveal a glowing layer underneath. Another tried one of the spa’s custom wellness “rituals” that included aromatherapy, a facial massage and guided meditation. Out-of-the-box treatments like that showcased why the spa has become so popular.

THE WORKOUT CLASSES ARE PLENTY AND COMPLIMENTARY!
At the spa complex, there is a gorgeous yoga pavilion that’s Instagram-worthy thanks to a floating platform in the center of a pool. Pilates lovers will love the fully-equipped studio with classes for all levels. If getting drenched in sweat is your thing, try the spin studio across the way. As stated above, the classes are complimentary for guests—yes, you read that right. Be sure to sign up for a session or two during your stay to not only feel relaxed, but also accomplished, especially if you happened to binge on the minibar offerings on the first night like I did.

large, chic dining room while the Pony Room has a saloon-like bar and outdoor seating for lunch and dinner. Both have seasonal menus with a Mediterranean slant. On the afternoon I arrived, I had a late lunch that consisted of poached eggs and avocado toast topped with sprouts. It set the tone for the rest of my dining experience—simple food with a sophisticated touch.
During my stay, I learned that Rancho Valencia is also considered a world-class tennis resort. They had just installed red clay courts, an uncommon feature in the U.S. but recognizable for fans of the French Open. The distinctive clay courts provide more support for softer landings. Guests have access to complimentary court time as well, and private lessons can be arranged. I had the privilege of taking a lesson and running drills with Robin White, a two-time U.S. Open Champion.

Granted, the ballad’s lyrics have virtually no mention of food, but the consistent reference of believing, then experiencing the refinement of all things being perfect is incredibly beautiful. Why this reference? Landry’s Inc. The only reason you might not have heard of Landry's and the company's incomparable impact to the entertainment and food industries is if you've been in a coma for the past 25 years! So, prior to giving an insightful collection of some of the finest dishes prepared by many of the top chefs from the Landry’s Corporation, allow me to share my background for understanding and experiencing culinary perfection. With prescription opioids causing more problems than they solve, itâ&#x20AC;&#x2122;s hard to know where to turn for relief from serious pain. These alternative therapies can help! by Joanna Powell

Until about 25 years ago, if you were one of the unlucky sufferers, you would have endured this misery with few options for relief. Researchers found that pain was vastly undertreated until the 1990s, when drug companies stepped up to fill the void. A new class of painrelief medicine was developed–most notably OxyContin, a synthetic form of morphine–and the opioid use exploded. A massive PR campaign contended the new opioids were not addictive; the argument being that “pain cancelled out feelings of euphoria” in the patient. Doctors began prescribing OxyContin and other opioids right and left–sometimes with some shady incentives from big pharma. For many, it felt like a miracle. “My life was miserable before opioids,” says one long-time pain sufferer. “And honestly, it never occurred to me to abuse them.” But as opioid use skyrocketed in the early 2000s, so did misuse. Addiction, it turned out, was a problem. And we now know that painkillers often create many, if not more problems, than they solve, with some studies showing they’re not effective in the long run. Over time, it turned out, many patients found that the more drugs they took, the worse their pain became.
WHAT EXACTLY ARE OPIOIDS Technically, opioids are a class of drugs that
include powerful pain relievers available legally by prescription, such as oxycodone (OxyContin), hydrocodone (Vicodin), codeine, morphine and fentanyl, as well as the illegal drug heroin. They act on opioid receptors in the brain to reduce the sensation of pain by interrupting signals from the nerves. While they’re generally safe when taken for a short time and as prescribed by a doctor, with extended use they hold pain at bay for shorter periods of time, often causing patients to increase doses. Moreover, because they produce euphoria in addition to pain relief, misuse is common: Recently deaths from opioid overdoses have reached an all-time high, killing more people in the last two years than died in the entire Vietnam War. Now that we’ve reached a full-blown opioid crisis, many physicians—and patients—are backing away from narcotic pain meds, for good reason. “I’m not saying that opioids should never be used,” notes Tor Wager, PhD., professor of psychology and neuroscience. “But they aren’t nearly as good as a solution as we thought they were. Studies show a variety of potential harm including increasing inflammation and increasing longterm pain.” With opioids on the chopping block, what are the options for chronic pain patients? No one wants to revert to those tough-it-out times before medications. Fortunately, there are a number of effective non-opioid remedies. While none carry the immediate relief of popping a pill, many experts believe that complementary therapies can help
reduce or eliminate the need for opioids altogether. Below, a look at some of the more effective options.
PHYSICAL THERAPY (PT)
W H AT I T I S : The longtime gold standard for regaining mobility after injury or surgery, PT can also significantly reduce chronic pain through therapeutic exercise tailored to the patient. The tools of PT, which include manual therapy, exercise and education, “can have a mediating effect on pain,” explains licensed physical therapist Lise Stolze, MPT. In fact, the Centers for Disease Control and Prevention guidelines state that physical therapy and exercise “may actually work better” than opioid painkillers for managing chronic pain.

W H AT I T I S : A talk therapy that’s used to treat phobias, addictions, depression and anxiety and is now increasingly used as

In addition to talk therapy sessions, patients may be given homework assignments, such as keeping track of the feelings associated with their pain throughout the day in a journal. isn’t all in your head. On the other hand, researchers say, it’s not all in your body either. That’s where CBT comes in. “We now understand that pain is not simply a biological phenomenon—rather pain is strongly influenced by psychological (mood, ability to cope) and social factors (work, stress),” says Roger Chou, MD, a pain specialist at Oregon

Health and Science University. “In order to effectively manage pain, it is critical to address psychological contributors to it.” People react to pain in different ways, notes Wager, who runs the Cognitive and Affective Neuroscience Laboratory at the University of Colorado Boulder. For example, imagine someone being stung by a bee at a picnic. For one person, it might be no big deal. For another, they might never go on a picnic again. It’s a matter of how their brain processes the pain. “CBT works to reduce the fear and anxiety surrounding the pain, reducing avoidance and getting people to go back to moving and accept that it’s okay to hurt sometimes,” explains Wager. “Even though someone has hurt their neck or
back, it doesn’t mean that moving is going to injure them more. By overcoming fear to confront pain actually seems to help normalize a person’s system and reduce pain for a lot of people.” Bottom line: “Everything in your mind is reflected in your brain systems and nerve chemistry,” explains Wager. “Therefore psychological therapy can have a physical effect.” TIME REQUIRED:
CBT works far more quickly and effectively than other types of talk therapy–which makes it a more efficient and affordable alternative. Often patients are able to adjust their levels of pain in just a few individual or group sessions.

Acupuncture points are believed to stimulate nerves and muscles, which may in turn boost your body's natural painkillers. Some experts suggest that acupuncture reduces pro-inflammatory markers, or proteins, in the body. A 2018 study presented at the Academy of Integrative Pain Management (AIPM) summit found that
when acupuncture was used in the emergency department of a suburban Milwaukee hospital, it reduced pain by approximately 50 percent, a better result that is often achieved with narcotics. Stress and anxiety levels were cut even more drastically. “Acupuncture has been a life saver for me,” says Betty Girard, a chronic arthritis sufferer in York, PA, “It has reduced my joint stiffness and keeps the pain bearable.” TIME REQUIRED:
W H AT I T I S : In the
growing number of states where it’s now legal (cannabis is legal in 11 states but don't get any crazy ideas— it's not legal here in the Lone Star state), medical marijuana generally includes oil, tinctures, sprays, creams, suppositories, patches, edibles and “flower,” (what was formerly known as smoke-able pot), from the marijuana plant. Patients get a “marijuana card” (with a doctor’s prescription) which allows them to purchase cannabis at a dispensary. For some people, CBD oil (which doesn’t contain THC, the element in cannabis that makes you “high”) can provide pain relief. But adding the full spectrum of THC is most effective. “You can push a chair across the floor, which

By learning to simply notice pain and accept it, “it really helps people to keep it from growing and expanding,” he says. “By retraining the brain with a mindfulness practice, we’ve seen a really dramatic reduction in both pain and other negative emotions.” According to a 2015 study in the Journal of Neuroscience, researchers found that mindfulness meditation reduces pain by activating the areas of the brain associated with the self-control of pain. Other studies have shown a 40 percent

P I L AT E S A N D PA I N :
We know Pilates gives us a flatter tummy, a stronger core and can help heal a wide range of physical ailments. But Pilates is also one of the top exercises doctors recommend for managing chronic pain. Research shows that
it’s especially effective for back pain, most notably in the lower region. A small study published in the Journal of Bodywork and Movement Therapies found that people with a history of neck pain experienced significant relief after a six-week Pilates program. Pilates instructor Juliet Harvey is also a licensed massage therapist. While she treats pain patients with both massage and Pilates, she says that Pilates is often more powerful. “With Pilates, I’m giving people the tools to fix themselves,” instead of relying on, say, a once-a-week massage, she says. “Once you take control over making your body stronger with Pilates, you’re going to be truly better.” WHY IT WORKS:
“Pilates provides many options to exercise ‘out of gravity’ to prevent aggravating pain,” says Stolze, who is a Pilates instructor as well as a physical therapist. “The goal initially is to simply move without making the pain worse. Once fear of movement subsides, the patient can do some home mat exercises. When exercise becomes more regular in their life, patients with chronic pain can start to feel the analgesic effects of exercise.“ From people who have pain from poor

But Harvey points to her “poster child,” a woman who came to her studio in so much pain she could barely walk. “She was planning to get a hip replacement because her pain was so severe,” recalls Harvey. Once she started coming twice a week to Pilates, she was able to hold off the hip replacement for 13 years. “It was so powerful to see her go from being in so much pain she could barely move to saying, ‘I can walk around town. I’m doing great!’” TIME REQUIRED:
It depends on the condition, but most people start to feel some relief after a single session. Significant pain reduction can take many months, however. PS

ISOU, OR ‘KISS’ IN FRENCH, IS THE L ATEST ADDITION TO THE CLÉ GROUP, WHICH WAS FOUNDED IN 2014 BY FOUR SE ASONED HOSPITALIT Y VETER ANS. Current award winning venues include, Clé Day & Night, Spire and Bisou with more planned for this year, as well as an expansion into the Dallas market. Bisou opened in October 2018 in the upscale and classy River Oaks District (next to Steak 48). Inside is contemporary chic, bright, and romantic with beautiful flowers atop each table. There are several large tables, perfect for accommodating parties of up to 10 friends. The chef at Bisou is Master Chef Frédéric Perrier. In March 2015, Chef Frédéric was inducted into the exclusive Maitres des Cuisiniers as a Master Chef—one of the most respected honors in the industry with just over 300 chefs in the world being given the title since its inception some 60 plus years ago. (For those in Sugar Land and the surrounding Fort Bend County area, you may remember his restaurant, Aura.) We headed to Bisou for Sunday brunch and had a blast. The atmosphere was amazing, the food was delicious, the service was well-executed and the live jazz player was terrific. This place is perfect for date night or a get together with friends and cocktails. Thanks to the knowledgeable staff, we had the most fun I’ve had in quite some time while dining out. The cocktails are as delicious as they are aesthetically pleasing—you’ve got to try the Mint to be Melon—and the Last Kiss! Looking for dinner, cocktails and entertainment? Check out Bisou after 8 p.m. when the crowd really picks up and it becomes more of a bar/club-type setting. The atmosphere and decor are all A plus, plus. You can tell when you walk in, it’s a place to

see and be seen in Houston. But more so than that, the food is amazing. The dinner menu is diverse and well-designed with starters like the Escargot and Bone Marrow that’s prepared in a shallot compote, pickled mustard seeds and topped with fried parsley. Another favorite starter on the dinner menu is the Crispy Smoked Rabbit Mac and Cheese Croquettes that are finished with a carrot top pesto, old fashioned mustard and creme fraiche. For the main course, we suggest the Fresh Horseradish Crusted Double Boned Pork Chop served with creamy white cheddar grits and sauteed greens. The Seared Texas Flounder served with a decadent lobster risotto, butternut squash and finished with a herb vinaigrette is delicious. They also have a fine selection of juicy steaks to choose from—we suggest the
16-ounce Dry Aged Ribeye served with seasonal local vegetables and your choice of buttery mash potatoes or fries. To top it off, choose from one of four finishing sauces. We chose the gorgonzola horseradish. This is the perfect venue for a girls’ night out, bachelorette/bachelor party, bridal shower or really, any type of celebration. I recommend arriving ‘dressed to impress’ to fit right in. The DJ plays great music which gets louder and livelier as the night goes on. Bottle service is delivered in a fun and entertaining way. If you have a group, be sure to try their shareable cocktails—yum! Lastly, if you’re celebrating a birthday or any special occasion, be sure to order a bottle of Veuve, club style with all the sparklers! It will be sure to ‘wow’ your guests and the place to be ‘seen’ will be yours for the taking! H

ESTLED NE ATLY BET WEEN WALKER AND RUSK STREETS AND SURROUNDED BY THE HIGH RISE OFFICE BUILDINGS OF DOWNTOWN HOUSTON, lies a beautiful, tranquil green space with rolling hills and sparkling fountains that provides many Houstonians a serene environment to relax, play and enjoy the outdoors. Tranquillity Park, as it is known, was built in 1979 to commemorate the ten year anniversary of the Apollo 11 Moon landing in July of 1969. Notably, differing in spelling, Tranquillity Park, takes its name from the Sea of Tranquility, the lunar mare where Apollo 11 touched

down. In fact, Neil Armstrong’s first words from the moon were, “Houston, Tranquility Base here. The Eagle has landed.” This year marks the 50th anniversary of that historic moment. While you may not be able to visit the moon or, even closer to home, the Johnson Space Center, to commemorate the anniversary, perhaps you can visit the park and check out the bronze plaques that outline the important role that NASA and many Houstonians played in the landing of the first man on the moon.
