APRIL fOODS DAY

Is it possible to be sick of tea and cake? Well, not tea, obviously. An Englishman who is tired of tea is tired of life, to bastardise Samuel Johnson.

But we’ve really pushed our limit with cake. It’s got so bad that now all we can eat is crisps and chips. If we can’t get back on the cake soon we’ll be forced to eat vegetables, heaven forbid. But after a few meat-heavy Food Issues – burgers, curries, fry ups, roasts – we’ve gone all veggie for this one. For Six Of The Best we even went round to our favourite vegetarian restaurants. The only carnivore is MC Cashback, whose brilliant hip hop cookbook is sizzling flesh to the bone.

This is our third annual Food Issue, and we’ve come to rather look forward to them. As well as the chance to get gluttonous there’s also the amazing feedback we get. The most popular articles on the SOURCE website every month are still our ‘Brighton’s Best…’ round ups. And whenever we have a food related question – ‘Where’s the best Chinese takeaway that delivers to the Nortn Laine?’ ‘Is there anywhere that hasn’t run out of halloumi?’ are two genuine ones – you always have the answers.

So let us know if you agree with the tea and cake article. Just give our stomachs a chance to settle first.

The programmes for Brighton Festival and Fringe have hit the streets, so we’re bracing ourselves for a May stuffed to the gills with art, music, theatrical fun and nonsense. With beloved children’s author Michael Rosen in the guest director chair, there’s a strong literary strand at the Festival, as well as big music shows from The Flaming Lips and Sinead O’Connor.

With more Brighton Fringe events than the mind can comprehend, there’s bound to be something worth catching that hasn’t already sold out in a flash.

The line-up for next month’s Meadowlands Festival over in Glynde is taking shape, with our own British Sea Power, French DJ/producer Laurent Garnier and Tru Thoughts rapper Ty among the latest musical confirmations. Other attractions include The Pop Up Casino and a theatre space run by the experienced Otherplace Productions team from the Three And Ten. Meadowlands takes place Fri 24th - Sun 26th May, with full weekend tickets priced at £95.

Shakedown festival is back for 2013 with a line-up that sees former SOURCE cover stars Rizzle Kicks headline, backed up

by Labrinth, Maverick Sabre and Mikill Pane. The dancier element finds DJ Fresh bringing his live band and the everexhilarating Jaguar Skills throwing down his powerful multigenre party tunes. Sub Focus and RAM Records supply the drum’n’bass while Krafty Kuts, Zane Lowe and Delilah fill in the gaps. With many more names promised for 28th September event, this seems a very good start.

BIMM win

Former BIMM Brighton student Tom Odell won the Critics’ Choice award at this year’s BRITS, placing him in an enviable lineage with previous winners Adele, Jessie J and Emile Sandé. The Chichester songwriter releases his debut album ‘Long Way Down’ on Mon 15th. Meanwhile, the BIMM has appointed The Who’s Roger Daltrey as its first patron. With his many personal and artistic links to the area, Daltrey’s pledging to lend his experience to nurture the next generation of musical talent.

Southampton’s Takedown Festival returns on Sat 11th May, with a bunch of Brighton-related bands (Your Demise, Collisions, The James Cleaver Quintet) joining headliners The Blackout, Don Broco and We Are The Ocean for a big day of punk, rock and metal. Tickets for the multi-stage event start at £30, with a £37.50 coach package from Pool Valley available to take local fans to the festival and back.

For as long as SOURCE can remember, North Laine institution The Dorset has been the de facto local to our sometimes louche, always lively musical family. It’s half Parisienne café, half English pub – they call it a Street Bar, which sums it up well, we think – and this month marks their 20th birthday. As you’d imagine, they have a blow-out party planned with tons of DJs from over the years, including Dave Mumbles, Hush Club and Night Boat To Wigan. It all goes down on Thurs 11th – even if just their regulars turn up it’s going to be one heck of a do.

In a strong achievement for an independent salon, Simon Webster Hair on Gardener Street has been awarded three places in the regional finals of the L’Oréal Colour Trophy competition. Simon Webster has a small team of five stylists, three of whom entered the competition, with all three qualifying.

The team go up against entrants from many of the country’s biggest chain salons in a live styling event at London’s Park Plaza on Weds 3rd.

SOURCE Foodies Comp

Foodies Festival returns to Hove Lawns next month (4th – 6th May) and SOURCE has five pairs of tickets to give away.

Guests at this year’s event include TV featured chefs Gennaro Contaldo (Two Greedy Italians), and Matt Gillan (Great British Menu), along with Stephen Crane (Ockenden Manor), Jake Northcote Green (Yum Yum Ninja) and Michael Bremner (Food For Friends). Short of Ricky Gervais deciding to set up an actual stationery firm in Slough, the launch of OMG LOL at Audio is the most brain-bending art into life move we’ve ever seen. You’ve probably already watched the behind the scenes antics of OMG LOL in their spoof YouTube series This Is Brighton (tinyurl.com/ThisBri), its smart parody of local club promoters generating a lot of “Is this for real?” comments and a few guilty laughs in the SOURCE office. If you want your own clubbing adventures sent up for an online comedy hit, get down to OMG LOL every Tuesday night.

Heliopause Presents

Belfast musician Richard Davis has been impressively prolific since moving to Brighton, his regular Heliopause releases treading a fine line between lush and lo-fi tune experiments. Now he’s turning his hand to promoting, with a short run of Heliopause Presents gigs getting underway at The Hope this month. First up on Tues 23rd is cult artist Stanley Brinks, the performing alias of André Herman Dune, with soulful Canadian songwriter Ingrid Gatin following in May.

Hot food store Pie Society moved into Western Road just before Christmas, turning their landmark Churchill Square property into an eye-catchingly decorated pie haven. Pie Society uses only British meat and veg ingredients, with a menu including soups, sandwiches, sweet pies and pastries. Sign up to the members’ mailing list and you get free use of their Pie-Fi (ie wi-fi, for those slow on the uptake).

The Troll’s Pantry

With time called on its pitch at soon-to-be redeveloped Clock Street, gourmet burger stall The Troll’s Pantry has found a new home at The Hobgoblin pub. Originator of such awesomely named meat treats as the Stinky Breath and the Hellfire, the Pantry just celebrated its first year of burger service with an Easter party at the Hob. Competition may be coming though, with persistent rumours that fashionable London burger joint Meat Liquor is opening in Brighton soon.

One of the few traditional pubs on Brighton’s “world in one street”, Preston Street, Chequers has recently reopened after a full refurbishment. The cosy pub has a new programme of live music, stand up comedy and DJs, starting this month with the soul, funk and hip hop sounds of Ghetto Blaster on Fri 5th, while their new kitchen offers take away and delivery service.

SOURCE contributor Adam Peters loves the Brighton Rockers roller derby team so much he’s started a fanzine about them. Turn Left is a free, glossy mouthpiece for the unofficial fans’ group BRATS (Brighton Rockers All Terrain Support), with dozens of photos, interviews and match chants. He’s aiming to publish a new edition for every one of the Rockers’ home games, read the first issue at brightonbrats.com

Street Diner

The city’s first weekly market dedicated to street food launches at Brighthelm Gardens, Queens Road on Fri 26th. The Street Diner market represents traders from Brighton and across the south east, with an array of burgers, pies and cake stalls next to flavours from across Europe, Asia and Central America. Street Diner takes place 11am – 3pm, perfect timing for your end of week lunchtime blowout.

This month’s Slip Jam:B offering is Genesis Elijah, who has been part of the UK hip hop scene since the early noughties.

From his collaborations and interactions with Klashnekoff, Rodney P and Guilty Simpson, Genesis Elijah is a scene stalwart for the best possible reasons. Emerge MC will be using the night to launch his new album, and as usual there will be an open mic section allowing local rappers to get on stage and test out their latest bars. (JMM)

Swans

Concorde 2 Tues 2nd

They’ve had more line-ups than a New York cop shop, but Swans are still at it. Michael Gira’s band have been pushing pulsing rhythms, experimental noise rock and some extremely harrowing lyrics around the world since 1982. A lenghty hiatus found Gira focusing on his Angels Of Light, but following a recent reformation, Swans have released two albums. The latest, ‘The Seer’, was lauded as the culmination of thirty years’ work. A word of warning: they’re legendarily punishing live. Avant garde Xui Xui are in support. (JMM)

Teen

Haunt Weds 3rd

Teen are three sisters and a couple of their friends who hail from the US. So far, so Haim. Well, not quite. Teen have a more lo-fi sound with a psychedelic direction that should sound even more expansive on the live stage. They released their debut album ‘In Limbo’ for Carpark Records last year, and are currently funding a follow up EP ‘Carolina’ on Kickstarter, so will be looking to show off some new material tonight. For one night only the Justice Force 5 have reassembled to fight the powers of evil and save the world with scorching rock riffs and electrifying synth pop. Expect robots, confetti, blood, pyrotechnics and a hefty dose of the unexpected in arguably the most unique stage show ever to come out of Brighton. As well as watching our trusty heroes musically battle their arch-nemesis The Organ Grinder, there’ll be a free comic and a download of unreleased tracks for all attendees. (AT)

Over the last year, Emeli Sandé’s relentless TV exposure must be starting to bore even her most ardent fans. There’s only so many times you can hear ‘Next To Me’ or ‘Read All About It’. Judging

by Sandé’s plans to take a break and record new music, she probably feels the same way, but we’re sure both parties can still muster up some enthusiasm for her overly familiar material. After all, they’re still great songs – even if they’ve been played to death. (AJM)

RAZOREATER

Green Door Store Sat 6th

Punk Vs Hardcore’s monthly treat comes in the form of Church Of Fuck Records’ Razoreater, whose Pig Destroyer-esque grinding thrash hardcore will leave you feeling like you’ve been beaten up underwater. Labelmates Iced Out play main support, while two local bands begin tonight’s chaos. Hove’s Protect Ya Neck supply the mosh, with their own brand of south coast hate, followed by ex-Dopefight/Jovian outfit War Wolf. Expect violence.

Just chilling on the sofa watching the football, maybe. Right? No. You’re wrong. All wrong. Sundays are for brain-melting noise, experimental audio/visual performances and freeform jazz. ASTRO-PHYSICS

Green Door Store Tues 9th

Six-piece hip hop collective Astro-Physics aren’t like you’d imagine a hip hop collective to be. Firstly, there’s a female presence in passionate vocalist Rachel Mosleh; secondly, they have a highly skilled band which includes a pianist; and lastly, led by MC Skilf, their tracks dispel the typical lyrical content in favour of songs about self-improvement and having a good old time. They’re all accomplished, seasoned performers, which means their live sets are always executed with fun and flair. (JMM)

Ryan Keen

Komedia Tues 9th

Male singer-songwriters may be two-a-penny at the moment but if the right one comes along we’re still a sucker for a pretty voice and a melody that hooks you in. You can hear the influence of the countryside and seaside towns in the music of Devon’s Ryan Keen. As with Ben Howard and Damian Rice, it makes all the difference to catch such performers in an intimate setting before their songs lose their subtlety in bigger venues. (SE)

THE HOUSE OF LOVE

Haunt Weds 10th

There was a point at the tail end of the 80s when The House Of Love were tipped for mega-stardom. The predicted stadium tours never materialised and a fractious relationship between band members lead

to slow self-destruction. Leader Guy Chadwick went solo, while Terry Bickers, ranked by many as second only to Johnny Marr as a guitarist, formed Levitation and others, and took to teaching music in Brighton.

With a new album just released and hatchets long buried, The House Of Love continue to shine on. (AP)

OJO DE GRINGA Green Door Store Thurs 11th

Come prog out at the Green Door Store with a Brighton-based line up of Ojo De Gringa, Bearded Youth Quest, Cousin and Calico showcasing the strength of experimental, varied musical talent our fine city has to offer. Anyone who’s caught an Ojo De Gringa set before will be familiar with their musical craftsmanship, jazzy influences and complex compositions. Without the need for vocals, their performances are mesmerising. Fellow, beard-free instrumentalists Bearded Youth Quest add some quirky humour to the mix. (JMM)

Pere Ubu

Haunt Sat 13th

Formed in Cleveland, Ohio in the mid-70s, Pere Ubu’s long career at the avant garde end of rock has thrown up innovative, synthesiser strewn music, ambitous theatrical productions and dense, obtuse lyrics from frontman, and sole constant member, David Thomas.

Pere Ubu’s new album ‘Lady From Shanghai’ is described as the group’s attempt to ‘fix’ dance music, an unsettling concoction of film noir influences and thick, abstract electronics. Definitely get there in time for support band Variety Lights, a rarely seen group formed by original, long lost Mercury Rev vocalist David Baker. (SH)

Following up their Christmas show at The Haunt, One Inch Badge bring one of Britain’s biggest underground bands back to Brighton for this intimate trio of tiny pub gigs.

Fronted by wordsmith David Tattershall, The Wave Pictures have released a string of smart albums over the past 10 years alongside collaborations with likeminded artists including Darren Hayman (Hefner) and Stanley Brinks (Herman Düne). The chance to see such direct, intelligent guitar pop in any of these venues shouldn’t be missed. (SH)

Hope Sun 14th

Hailing from Nashville, the beating heart of the American alt-country scene, Night Beds deliver heartbreaking vocals and haunting melodies. Debut album ‘Country Sleep’ has more than a few parallels with Bon Iver’s ‘For Emma, Forever Go’, with Winston Yellen, the driving force behind the band, creating musical landscapes of desolation and despair. With elements of Fleet Foxes and Arcade Fire also mixed in, this show promises to be the perfect melancholic Sunday compliment to a heavy weekend. (AT)

Concorde 2 Tues 16th

With a rapidly growing fan base, it’s no surprise that Don Broco sold out their entire UK tour earlier this year. Those who missed out on their first Brighton date now have another chance to see the Bedford boys and they won’t want to miss out again. Expect their trademark mix of push-ups, dance moves and mosh pits. With support from Pure Love, who also tore The Haunt apart as headliners, this could be the rock gig of the year. (AJM)

King Charles

Haunt Weds 17th

Having toured with the likes of Laura Marling and Mumford & Sons, it’s safe to say that King Charles has sat on the periphery of fame for a number of years. His sound is primarily composed of haunting electric guitar moans, which makes him as an artist comparable to the greats of Jimi Hendrix and George Harrison (Steady now – Hyperbole Ed.). King Charles’ sound isn’t an exact copy by any means, rather a mix of indiepop and that electric twang. (MS)

THE INDELICATES Latest MusicBar Thurs 18th

Despite their Lewes base, The Indelicates largely favour London over Brighton when it comes to gigs – this will be their first Sussex outing in well over a year. Having taken time out to compose a musical about the Waco siege and mentor punk trio The Thlyds, they launch new album ‘Diseases Of England’, a scabrous authority-baiting dissection of the UK today. A recent Facebook request for musicians suggests the poetic art rock duo may premier a new line-up tonight. (AP)

Jessica Bailiff & Boduf Songs Green Door Store Fri 19th

Regular home of the haunted, the ethereal and the strange, The Outer Church club opens its doors to current touring partners Jessica Bailiff and Boduf Songs this month. Discovered in the 90s

by Low’s Alan Sparhawk, Toledo’s Jessica Bailiff made her international breakthrough on post rock label Kranky, stretching her music into slow, shimmering psychedelic trails. Former labelmate Boduf Songs is the alias of Southampton musician Mat Sweet, whose intimately recorded songs combine hushed acoustics and cosmic imaginitive flights. (SH)

The Growlers

This month’s SOURCE New Music finds us welcoming back one of our very favourite Brighton bands, AK/DK, for the launch of their new single. Following their genius reincarnation as AC/DC for Sea Monsters earlier in the year, the duo packed out the Green Door Store for Brighton Noise and start this month bringing their double drum/synth motorik to our continental friends on a Swiss tour. It’s not just SOURCE who rate them as one of Brighton’s best live bands, so hopefully they’ll bring everyone back a Toblerone to say thanks. (SH)

Hotly tipped, hugely hyped Californian band The Growlers bring their unique ‘beach goth’ sound to Brighton’s shores.

Drawing on influences from psychedelia and garage and fusing them with a wide spectrum of modern vocal effects they create an enthralling surf pop landscape and a spectacular live show, more performance than gig. Touring their new album ‘Hung At Heart’, this show is going to be one hell of a psychedelic journey into the heart of the 1960s via 2013. (AT)

When Mallory Knox supported Don Broco in February, they engaged with the crowd as if they were headliners. There to warm the audience up, they wore them out, destroying them as if they were putty in their clenched fists. Now the Cambridge boys are back as bill-toppers and things are likely to get even more intense. Support comes from the New Forest’s popinfluenced Natives who will make sure fans from across the rock spectrum will have a good time. (AJM)

James Jackson Toth’s various incarnations of Wooden Wand started making a name for themselves in the noughties, in the uneasily defined – by Brit critics – New Weird America movement (Devendra Banhart, Joanna Newsom etc). Toth’s voice is that of a classic wandering troubadour, while Wooden Wand’s music covers the ground between slocore country, psychedelic excursions and free folk. New album ‘Blood Oaths Of The New Blues’ is a hushed, intense listen. (SH)

PHYSICS HOUSE BAND

When Ohio’s Attack Attack! revealed they were changing lead singers for the third time, Welsh grungers Attack! Attack! were hoping this would spell the end for their metalcore rivals.

Unluckily for our home grown talent, Attack Attack! (US) continue to tour under their confusingly similar moniker, and have no plans to stop soon. Attack! Attack! (UK) are also gigging tonight, but in Bridgend, not Brighton. Just make sure you’re in the right town, seeing the right band, whichever one it is. (AJM)

Brighton’s most intense rock band Physics House Band have a following almost as fevered as their music. They recently released their debut ‘Horizons/Rapture,’ a 26 minute swervea-thon through psychedelia, math rock, prog and basically any other genre that marries insane musical ability with really good tunes. To fully appreciate this band, you need to see them live – the three young musicians have a contagious energy that will leave you either gazing in awe or flailing on the dancefloor. (JMM)

The downside of being described as a Next Big Thing is that if you don’t breakthrough almost instantly, you’re branded a failure. Hotly tipped for success in 2012, Jamie N Commons didn’t live up to the hype. Instead of releasing the album the press expected, the buzz subsided while he focused on touring and festivals. However, if reports that Eminem is sampling his husky vocals are true, he’ll soon rocket far beyond what any critics could have predicted. (AJM)

Seattle’s Narrows are something of a supergroup when it comes to the hardcore and metal scene. Comprised of members of various defunct bands – including Botch vocalist Dave Verellen, Some Girls/ Unbroken bassist Rob Moran and Ryan Frederiksen, who played guitar in These Arms Are Snakes – they sound exactly like a sum of their parts. The group’s hardcore punk-influenced mathcore left our ears ringing last time they played here. Heavy. (CB)

Nately’s Whore’s Kid Sister Hope Mon 29th

Named after a character in the seminal novel Catch-22, Nately’s Whore’s Kid Sister take the dark satirical themes of their inspiration and turn them into brooding heavy stoner/sludge rock dripping with bold riffs and hypnotic vocals. Their live shows often involve the band taking to the stage dressed in tiny shorts, covered in gaffer tape and face paint, with sinister projections behind them creating a eerie landscape of addictively heavy, dark noise that you’ll want to get lost in. MC CASHBACK hip hop recipe LP is educational, funny and hummable Words By James Kendall Photos By Kenny Mc Cracken at Create Assisted By Lucy Beavis Sometimes an idea is so good you can’t believe it hasn’t been done already. When we were cornered in a club and excitedly told how MC Cashback had made an album where every track was the recipe to a different meal we just knew it was going to be great, or at the very least great fun. We’d already seen him perform and had soaked up his charismatic humour but never knew he had such a classic idea in him. Turns out it was the album he was born to make.

“I’d worked in kitchens for about ten years, annoying all of the chefs by rapping about what I was doing while I was cooking,” he says. “I worked at The Hop Poles for a long time, Komedia, Jamie Oliver’s. I thought, ‘No one has done a rap cook book,’ or any kind of musical cook book, as far as I know. So I did it.”

He did it indeed, writing both the raps and the recipes on ‘The Dinnersty’, as well as all the beats and melodies. It’s a hugely enjoyable collection, bringing in hip hop, reggae and bits of world music. The track ‘Homemade Burgers’ is not only a clear simple way to make Brighton’s favourite meal, it’s also extremely catchy, with a chorus by Emma B that stays in your head even longer than the meaty meal stays in your belly.

Elsewhere you can get stuck into ‘Lasagne’ (a meal that will “fill you up/make you slow like a panda”), ‘Lamb Tagine & Couscous’ (with its advice about marinating), or the Eastern European-styled ‘Goulash’ (“straight out of Hungary for when you’re feeling hungry”). But which is MC Cashback’s favourite recipe on ‘The Dinnersty’? “’Jerk Chicken’ I think,” he says without needing much thought. “It’s my favourite song as well.”

With reggae backing and guest vocalists Dandelion and Uncle Roy, it’s one of the many tracks that take a bit of the taste of the meal itself into the music (‘B.U.R.R.I.T.O.S’ channels Herb Alpert’s Tijuana Brass for example). “Make it real smokey,” growls Dandelion with a straight face. As if it wasn’t informative enough, Cashback finds time to throw in a verse about how to cock rice and peas. Two for the price of one, Tesco-style. But the raps didn’t come without their unique problems.

“I found myself repeating some words a lot,” he says. “There’s loads of garlic, onion, chop, dice. It’s quite hard to make it sound interesting all the way through the album. I didn’t want people to think, ‘Oh, he’s just saying garlic again.’”

All the recipes are Cashback’s own. It’s quite a feat even before getting to the fact that the LP is really quite funny too, which of course can be a double-edged sword. Does it make

it more difficult for people to take him seriously?

“You’ve got to impress people on two levels,” he admits, “with your musical skills as well as being able to make them laugh.

I’m not gonna lie, I’ve been booed off a few times, but you learn from that.”

He’s had plenty of time to get used to audiences, having cut his teeth at the age of 14, MCing in, of all places, a strip club in his then hometown of Norwich. Moving on from jungle and garage, he fell in love with hip hop and moved to Brighton. And that’s when food started to find its way into his rhymes.

“I don’t know where it came from,” he recalls. “I just got a bit obsessed with it. That was what I wanted to rap about. Before that I’d rap about the usual shit really, being the best and all that sort of crap. But that doesn’t really mean anything to me.

Food is something that I love and it’s more real to me to rap about food than it is to rap about the usual hip hop subjects.”

What we really love about ‘The Dinnersty’ is the thought that some kids will find themselves learning to cook by osmosis.

One day they’ll be yearning for a burger and ponder going to McDonalds, only to have the realisation that, ‘Hey, we could cook our own burgers.’

“That’s what I want to do really,” he says with a smile.

MC Cashback might just have made Brighton’s most influential album.

Musically it’s a bit like transporting back to a 90s school disco, in a really good way – you won’t get a detention for slow dancing too enthusiastically, the booze is free-flowing, and somewhere in the depths of your mind are all the slinky lyrics you need. (JMM)

Also on the bill this month are Deadboy, Redhino, My Nu Leng and Dom 877, with a host of Brighton producers in room two. (JMM)

Following a few afternoon try-outs at the Blind Tiger last year, rockabilly club Spinout! has a new home as a semi-regular night at The Temple Bar on Western Road. Taking place on the first Friday of every other month, resident DJs Tiki Stew and Karl Thorne plus guests play a vinyl selection of surf, blues, soul and rock’n’roll sounds. Admission is a mere quid and, with it being the Temple, there’s more varieties of booze than you can shake your voodoo stick at. (SH)

The music industry’s first attempts to capitalise on the nascent Gameboy phenomenon brought with it some fine novelty chiptune singles, but it would be many more years before Nintendo’s simple soundblocks infiltrated DIY music making. This free chiptune celebration features music from enthusiasts Forbidden Colour and Lazerbleep, retro videogaming, live ‘analogue art’ and computer melodies from DJ Ten Kings.

There ain’t no place like Super Mario Land, but tonight Sticky Mike’s runs it close. (SH)

Mesmerist Weds 10th

Busking big band The Swing Ninjas launch their third album of infectious 30s dance sounds at tonight’s instalment of their weekly Mesmerist shindig. The Swing Ninjas’ mix of New Orleans jazz and Parisian gypsy sounds has become a Brighton club sensation, and tonight’s party throws a carnival of lindy hop dancers and circus performers into the mix. You’re not likely to be hearing them on Pete Tong’s Essential Mix any time soon, but if he’d been broadcasting between the wars they’d have caused a riot. (SH)

Missing Cat Club Komedia, Fri 12th

It’s on the second Friday of the month starting in April, it’s new, it runs from 11pm to 3am, and it’s completely free. What else do you need to know about Missing Cat Club? The music policy would be a good start – from what we can work out it’s a pretty diverse amalgamation of dancehall, house and techno, focusing more on the popular than the obscure. And the name? No idea.

It might be his first set in Brighton but Flori knows how to work a dancefloor, from years of residencies under other guises, and he comes highly recommended. Weaving soul, funk and jazz influences into minimal house doesn’t sound like it would work, but somehow Flori manages to layer them to build an organic, constantly evolving sound. It’ll be a good opportunity to check out the revamped venue, formerly known as the Jazz Place, too. (JMM)

The first contact we had with Chase & Status was heading into an event at the Concorde while hundreds of wide-eyed sweaty students stumbled out muttering about “the best gig I’ve ever seen”. Since then they’ve conquered the world with their intense, noisy drum’n’bass anthems, so it’s impressive to see them back at the Concorde for this DJ set. They’re currently in the studio with Nile Rogers (ask your grandad, or Daft Punk) which is really odd. A new disco direction? The internet reckons the new LP will be darker, but the internet is a liar sometimes. We guess we’ll find out tonight. (JK)

We use the word ‘legend’ all too easily, but Greg Wilson is one of that rare group of British DJs worthy of the term. Starting out as a teenager playing funk and soul, he was one of the first homegrown DJs to turn on to the early US electro sounds, spreading the word via his residency at Manchester’s freshly opened Haçienda. These days he’s widely known for his pioneering disco re-edits, which he’ll be bringing to tonight’s Disco Deviant with Fingerman and Pablo Contraband. (SH)

Bristol producer Redlight makes a welcome return visit to Supercharged this month, alongside Bondax and Karma Kid. Since his 2009 Lobster Boy debut, Redlight’s rise to chart star has been rapid. Collaborating with Ms Dynamite and Roses Gabor on the way up, he crossed over in a big way last year with the thumping piano rush of ‘Get Out My Head’ and ‘Lost In Your Love’. Definitely expect to hear his new single ‘Switch It Off’, out the following Monday. (SH)

Somehow Warehouse put on enviable line-ups week in, week out. This particular iteration is no exception, with Shadow Child coming straight from supporting Disclosure on their UK tour to man the decks at Audio. Not merely a side project for big room house chap Dave Spoon, Shadow Child finds him very much out there in his own right as one of the players in the underground bass-groove, cool kid house scene, mostly thanks to his fantastic debut ‘String Thing’ on Dirtybird. The JetSet International

Ivy Lab is the new joint project of Sabre, Stay and Halogenix and, as you’d expect, this collaborative brainchild is pretty mixed up. Blending the traditional and thoughtful drum’n’bass of Sabre with the minimalism of Stay and the experimentalism of Halogenix makes for an inspiring, different take on the genre, which will undoubtedly have the Concorde jumping.

Technimatic – formerly Technicolour and Komatic – are also playing, offering highly charged, heavy and emotional d’n’b.

Jah Shaka has been at the forefront of the British reggae scene since establishing his celebrated soundsystem back in the 70s. Sticking by his belief in the power of the dance to spread socially conscious messages, Shaka hasn’t waivered in his mission to bring roots reggae sounds to the world. He’s also assisted community projects in Jamaica and several African countries through his Jah Shaka Foundation, so ultimately you know that your money for tonight’s five-hour workout is helping the greater good. So many DJs wear masks now – SBTRKT, Deadmau5, that fella out of Modestep – you have to wonder how ugly they’re all getting.

Jaguar Skills has beautiful eyes, but that’s all we’ve seen from behind his ninja balaclava. Not that we’d get to see much anyway, he moves more swiftly behind the decks than a Japanese assassin.

His tune selection is just as manic, covering every genre you can dance to. Jag’s Toolroom Knights mix album of a couple of years ago is typical of the energy of his sets, cramming 40 tracks into 67 minutes. You’ll be breathless. (JK)

In the past decade Noisia have grown from three young Dutch men with a penchant for drum’n’bass and online message boards, to a genre-leading group who own a trio of record labels, have released dozens of successful singles and tour the globe pretty much constantly. If you’re looking for a riotous night out then bingo isn’t normally your first stop off. Sure, it gets your gran’s heart racing, but that’s a frail old vessel these days and Benedict Cumberbatch is almost enough to tip her over the edge. Rebel Bingo would give her a full-blown coronary in about 40 seconds. But for the rest of us, it’s about the most mental night out going.

The first half sees a loudmouth host and sassy burlesque girls turn bingo into the rudest thing possible. The calls start with “Incest is good old family fun… number one!” and get swiftly

filthier. With lights worthy of a decent touring band, this is more of a show than a club night, but when the bingo stops and the tunes start, hundreds of drunk people with felt tips is going to lead to chaos. But there’s never been a better way of flirting than drawing on someone. Who knew?

Three years is a long time in midweek clubbing – even the legendary Poundance only made it to five – so tonight’s third birthday bash is pretty special for the Bastard gang. And despite a torrid night that is apparently the first day of spring, their fans are out in force. Even at the typically sedate clubland time of half past twelve the Bastard Poppers are bouncing off the walls.

With just a flash of light ricocheting around the packed dancefloor every now and again, it’s like Sodom and Gomorrah has been relocated to the Black Hole of Calcutta – only with a really pumping soundsystem. At one point we have to escape to the bar to catch our breath. Oh, this is not a gentle midweek affair, this is utter madness.

Partly it’s the music – a solid selection of genre-crossing party tunes – but mainly it’s the crowd. The promoters can’t say enough good things about their punters and put the success down completely to them. So happy birthday to them – if they make it through the night alive.

Our Time In Ice, a group exhibition at the ONCA (One Network for Conservation & the Arts) gallery, brings together new artistic commissions responding to the changing climate of the Arctic. There’s some unexpected names involved, including musician Robyn Hitchcock and Dafila Scott, granddaughter of Robert Falcon Scott (of ‘of the Antarctic’ legend). Accompanying events this month including a reading from journalist and author Nick Hunt on Tuesday 9th and a new work from Feral Theatre on Wednesday 10th. (SH)

Macabre, frequently twisted, often bombastic puppetry full of crazed marionettes and fag-toting, spun-out takes on Judy courtesy of Touched Theatre, a bunch of master storytellers with a knack for physicality. Miranda, the haggish host puppet, is usually positioned as a monstrous master of ceremonies, but she’s invariably outdone by the gaggle of maniacal figureheads she heralds, confounding preconceptions of the strung art form and creating something substantially darker and more satisfying. Try not to cackle or soil your boxers. (BM)

Snogging in clubs, bedroom spliff sessions, rap-offs in warehouses and taxi cabs – you can feel the sweat and sleaze saturating Ewen Spencer’s images, although his more high-profile (but no less down-to-earth) collaborations have been with Jack White and Mike Skinner. Comedy: Boothby Graffoe Komedia Thurs 11th

Boothby Graffoe has been playing the comedy circuit for so long he’s already retired once. As well as his joyful stand-up routines, Graffoe’s a musician too – a regular collaborator with Canada’s Barenaked Ladies and Brighton’s own Nick Pynn. He deftly combines both talents live, so you can sometimes lose track of whether you’re watching a comedian playing oddball tunes or a songwriter with exceptional on-stage banter. Either way, it’s a cause for celebration that he’s back on the boards. (SH)

Taking a speech by some gruesome neoconservative tit and turning it into both a transfixing, spooky convulsive reaction and an examination of the way emotions can entrance and poison, Lisbeth Gruwez’s piece is one of numerous transformations. This ain’t exactly an easy one, then, as the Belgian immerses herself in the increasing violence and despair of a televangelist’s address.

But in what could well be the most compelling round of gesticulations ever, it fathoms beauty out of a frothy rant. (BM)

These genrecrossers with their Billy Childish looks and claims to be west country shamen – it’s enough to make anyone want to use the word pigeonholed. Fluffypunk is a moustachioed maverick who has won a number of slams and been lauded by many poets, so we’ll assume that will be his main trick for his new show, where he’s apparently agonising – via sock puppetry – over his responsibilities to his four-year-old son. The Brighton University Drama Society apparently spent the formative years of their existence drunk. However, it seems they occasionally sober up enough to produce serious theatre: taking on Shakespeare and Victor Hugo in the last few years. This month the company return to the Sallis Benney with their most ambitious show yet. Based on Terry Pratchett’s much-loved fourth Discworld novel, Mort is a story of a hapless boy and the Grim Reaper. A must for Discworlders. (CY)

Camper than a bivvy and a set of poles, Pedro Almodóvar’s new flick is a ridiculous air romp aboard a plane peopled by angsty Mexican-bound travellers and a trio of attendants whose double-entendres are the stuff of groans, brisk head thuds and slaps with wet fishes. Along the way, Penélope Cruz and Antonio Banderas are united for the briefest of kitschy cameos. Tonight’s screening is sandwiched by red carpet footage and a satellite interview with Almodóvar. Screening this afternoon as part of Brighton’s Record Store Day celebrations, Last Shop Standing is a celebration of the country’s surviving independent record shops and an investigation into why so many hundreds have closed in recent years. Borderline and Resident feature, as does the late Rounder Records, adding a poignant note to today’s retail festivities. Former Rounder employee Norman Cook is among the musical talking heads reminiscing about the importance of record shops to the community. (SH)

The shifting sands we’re all stumbling along might make it somewhat hard to judge but, in some respects, the world of artists’ books and self-publishing seems stronger – or at least more prolific – than ever these days. Phoenix are putting some of the best examples of the lo-fi aesthetic into a purpose-built installation for your perusal, showcasing artists across a whole load of mediums with a focus on hand-made, limited edition and experimental formats. It’s almost impossible not to be consumed by Pat Kinevane’s treatment of a homeless drinker who’s misplaced his mind, adorned as it is with breakneck theatricality, morbid humour and, in a one-night-only return for a show which has received no end of praise on the fringe circuit, a powerful message about loss and ill fortune. Fishamble, the Irish group behind it, are coming back to Brighton in aid of Emmaus, a charity that helps the homeless across the city. (BM)

Less than three years after forming, Spun Glass have established themselves as one of the most promising new theatre groups in the city – a reputation they’ve enhanced by repeating their inventive fringe shows far beyond the boundaries of Sussex.

Five teams of new writers will be given ten-minute slots in which to test poetry, scripts, stories, stand-up and miscellaneous risky ideas here, offering a safe place to experiment or inspiration for those just there to watch. (BM)

It’s not enough in London to have brightly coloured nails these days. The hippest girls are having unique designs painted onto their talons, thanks to nail bars like the pioneering Wah. If heading up to Dalston seems a bit of a trek then thank god for Scallywags’ newly opened Needles & Nails. It’s part tattoo parlour, part beauty salon, but what makes N&N exciting is what happens with that second N. Rather than employing nail technicians, the new venture above Loaded (where Edgeworld used to be) is staffed by fine art students. So if you want strawberries, Muppets or burgers painted on your claws you know they’ve got the skills. Basically your imagination (and the size of your nails) is the limit with what you can have done.

Like Wah there’s a friendly, hangout-y vibe, but you might have to fight your way past MTV and Cosmopolitan magazine, who have both been down to check out Needles & Nails already.

The hype machine has been whirring for this duo since last summer and we’re thrilled that their debut EP has finally been released. Producer Max, formerly of hip hop act Dirty Diggers, and magnetic front woman Victoria are a perfect match, creating tracks that are gloriously light despite rambunctious bass lines. Merging 90s house influences with playful, soulful vocals and cut-up beats, Anushka make an original sound that’s equally appropriate for a dirty dancefloor or driving in the sunshine. (JMM)

With roots as an alt-folk trio, The Creaking Chair have narrowed focus to become essentially the solo project of Andrew AC Cooper. As the musicians decreased, the scope of the music has widened, with layers of keyboards, loops and electronics colouring the palette. The title track appears twice, first as a mysterious, literate pop song, later as a lo-fi but lush instrumental, while ‘Spun’ adds effective synthetic brass and steel sounds. It’s a sweet and slightly ambient package. (SH)

Having spent time in the industry as performer (with War Makes Heroes), label boss and publisher, songwriter Charley Bickers’ solo debut has been a long time coming, sidelined by a succession of personal tragedies that inevitably colour the finished album. Despite the shadow of death, uplifting songs like ‘Three Little Words’ and ‘Burning Bridges’ help keep ‘Our Frail Hearts’ on the sunny side, with a full cast of collaborators (including The Verve’s Simon Jones) filling out Bickers’ lively tunes. Single: Blaenavon ‘Into The Night’ (Paradyse)

Blaenavon is a town in south Wales, but the indie rock trio who’ve taken its name split their time between Brighton and Hants. However unassuming the boys appear, they’ve been quietly going places in the last 12 months, with this debut 7” arriving on an imprint of Foals’ home Transgressive Records.

Blaenavon are a little moodier, the choppy guitar melodies of ‘Into The Night’ continually butting their heads on the chorus’ ceiling, while ‘Denim Patches’ is a shuffling, dour epic. (SH)

‘Fulminant’ (Foolproof Projects)

Reduced to a duo following the departure of David McNamee, Kellar’s Dan Cross and Andy Pyne get seriously creative with this epic double album of noise improvisations. The 14 tracks shift from simmering percussion rumbles and distant guitar to boiling battles of thundering drums and scorched effects work. The fearsome nine-minute descent of ‘Through Mantle And Core’ is the most full-on and impressive sequence, but there’s ample more on-the-fly electric experimentation here to get lost in for months. ‘Obituaries’ (Folkwit)

Based around the songwriting of Willkommen Collective member Daniel Green, five-piece folk pop band Laish reconvene at last for this second album. Despite the gloomy title, much of ‘Obituaries’ is a breezy listen: ‘Warm The Wind’ and ‘Carry Me’ are among Laish’s poppiest songs, and the 60s nugget ‘Choice’ positively swings. Longer tracks ‘Visions’ and ‘Petty Ruiner’ find the Laish musicians enter into waves of flowing repetition, throughout which Green cunningly examines themes of love and death. Feels like springtime at last. (SH)

The latest release on Skint’s Under 5’s imprint is the debut EP from Brighton’s prolific Murder He Wrote. He’s released remixes for a diverse set of artists including Daughter, Sergio Fernandez and Mwen, but this three-track EP shows a stylistic progression into something deeper, more anxious and more synthy. Owl-eared listeners may recognise the tense rumblings of ‘Your Code’ from recent mixes by Throwing Snow and My Nu Leng, but even if you’re familiar with the sound, it’s unsettlingly good. (JMM)

Single: Bat For Lashes ‘Laura’/’Marilyn’ (Parlophone)

Bat For Lashes has released a special 7” for Record Store Day every year since 2010, and this time around it’s a conceptual coupling of two tracks from last year’s ‘The Haunted Man’. You’ll already know the inescapable and beautiful ‘Laura’, finally making its appearance as a vinyl single. ‘Marilyn’, from Vogue’s online Love Songs Sessions, gets an entirely different, simple and propulsive arrangement with Natasha Khan’s reverberating guitar chords leading the way.

Single: The Leisure Society ‘Fight For Everyone’ (Full Time Hobby)

Taken from The Leisure Society’s new album ‘Alone Aboard The Ark’, ‘Fight For Everyone’ is a brighter than usual pop tune tugged along by a snappy 70s keyboard line straight off a Chicory Tip record. The group’s organic, brass and piano embellished sound is still present and correct, with leader Nick Hemming calling his Olympian-inspired vocals in from a retro radiogram set. This RSD 7” comes on blue vinyl.

‘Pip Paine (Pay The £5000 You Owe)’ (Because Music)

Metronomy’s album debut finally gets a belated vinyl pressing for RSD, a double LP edition in a green fabric casing (matching the cloth packaging of the sought-after original CD edition). Far removed from their later incarnation as a sly dancepop group, ‘Pip Paine’ was an assemblage of Joe Mount’s bedroom electronic sketches, taped at home in Devon from 2002-06 and released while he was making his name as a resident on the Brighton scene. Pip Paine, where are you now?

Tru Thoughts’ RSD offerings include a new 7” from Rodney P from Sleepin’ Giantz/London Posse. The suave ‘Success’ finds him joined by soul vocalist Harleighblue and the Renegade Brass Band, with a first time on vinyl appearance for reggae groove ‘Live Up’ on the flip. Harleighblu reappears on the latest in Tru Thoughts’ Black Gold promo series with the unreleased ‘Enough Now’. The ubiquitous cupcake, formerly the sole preserve of undersevens’ birthday parties and known simply as a bun, has taken over Brighton. But what if three inches of garish sickly ‘frosting’ isn’t really your thing, because you’re a grown up, and don’t even like Sex & The City? If, like SOURCE, you eschew the Yankee cupcake – all style over substance – then where do you go for a refined slice of cake with a nice cup of Darjeeling? Not the Mock Turtle if our experience is anything to go by (see our review at tinyurl.com/MockTurt).

With the coffee drinkers taken care of in February’s coffee shop feature we asked for your tea and cake recommendations, and then spent a month troughing down butter-cream in the name of research. Competition was fierce and your favourite may be missing because it was kicked into touch by one of these exceptional cafés.

This is all about cake - so we’ve ignored pastries, biscuits and tarts. We’ve even ignored cream teas though it hurt us to do so, except to mention that all of our picks serve one in its correct clotted cream format except for cream tea-free Marwood and Slice Sussex.

44 cakes later we assume the recovery position, book up a diabetes test and bring you SOURCE’s best tea and cake.

B&R

Tea and cake for two £10.50. Trafalgar Street, Brighton

Only open for six months, B&R feels like a well-kept secret at the moment. The parquet floor, rickety teak folding tables, wicker chairs and lacy tablecloths create the impression that we’re taking tea in an Edwardian colonial conservatory – helped by the huge windows which make this a quaint, calm spot for watching the world go by. The small selection of cakes doesn’t disappoint. We go for the light, citrusy carrot cake which has butter icing filling as delicate and fluffy as raw meringue. The chocolate and Guinness cake fortunately tastes nothing like Guinness other than a subtle booziness which puts us in mind of Christmas. The combination of a lemony cheesecake ‘head’ sitting on top of a brownie-esque sponge is unexpectedly delicious.

With its panelled interior, chintzy china and broderie anglaise tablecloths Blackbird is a fully realised step back in time – the waitresses even have ‘Allo ‘Allo hairdos. Though lacking in chocolate options when we visit (presumably something to do with rationing) there are plenty of homemade cakes to choose from. We try the lemon drizzle cake – a classic WI example, with sloppy lemon curd sandwiching it together and glacé icing – and a Victoria sponge given a twist with the unusual blackcurrant jam and custardy vanilla filling. The cakes are excellent and reminiscent of your mum’s best efforts, and it’s a delightful experience with incredible attention to detail. We can’t fault it – it’s the priciest of our recommendations, but worth every farthing.

There might not be much elbow room, or as much character as some cafés in our list, but Cream Tea do make* exceedingly good cakes. There are loads of them to choose from too.

Loads. We try the classic light fluffy Victoria sandwich which is dusted with icing sugar and tastes wonderfully fresh, and the chocolate orange cake which is in contention for our best overall cake – the gooey sponge and tangy chocolate citrus icing are outstanding. Slices are big enough to share if you’re skint, and they get extra points for serving proper Cornish Rodda’s clotted cream. Don’t let their tourist-friendly location put you off, this was top of our league table for most of the competition and is well worth a visit. (*buy and serve)

At the top of the curved staircase which leads up from the general store we arrive in a French country kitchen, pleased to find we’ve inadvertently popped in for a cuppa with Papa and Nicole just before their photo shoot for an interiors magazine.

The presentation of the slightly unusual cakes is exceptional, served with fresh fruit and a berry compote they prove the most middle class of all our cake eating adventures. The rustic carrot cake has big pieces of seed, carrot and fruit set against a light decadent icing, and almost tastes like it’s good for us.

We thankfully can’t taste the almond in the orange and almond cake, nor can we tell that it’s gluten free, it’s so sticky and delicious.

Prioritising fun over refinement, Marwood is piled high with old tat and car boot curiosities, giving the space a very distinct personality. Their junk shop aesthetic spills over into the cheap and cheerful refreshments. No fancy bone china here - tea is strictly of the builders’ variety, served in big mugs. The enormous slabs of cake mean that you could happily share a slice in the run up to payday. We try the parsnip and caramel cake which is dense with a gingery edge, the parsnip comparable to carrot as a cake ingredient, with the caramel icing just the right side of sickly. The raspberry and white chocolate cake is very sweet with a hint of cheesecake, and leaves us needing a quiet lie down.

Although the current vogue for coffeeshops is all monochrome and hard wooden edges, Mr Wolfe combine this style with an airy tranquil feel which is helped by the languid goth soundtrack of Low and sun pouring through the big windows. If this was an indie film the clientele would be falling in love – the tiny room is full of attractive singles reading broadsheet arts columns. The tea is as strong as hell but the owner couldn’t be nicer when asked for a hot water top up. The cakes are homemade by Mrs Wolfe, who has knocked up a chocolate beetroot raspberry cake, the earthy taste of the light sponge perfectly balanced by a zingy berry icing. We’re blown away by her incredible sticky chocolate fudge layer cake with orange blossom ganache which melts in our mouths. It’s a contender.

This bustling café, with its ramshackle interior of utilitarian butcher’s shop wall tiles and bare wood, is quirky and charming. It has the most extensive range of cakes, all of which are beautifully made by the owners. Impressed by the number of gluten-free options we struggle to choose but eventually plump for the glitzy Victoria sponge - which is extravagant with several layers of very buttery butter-cream and blackcurrant jam. The gluten-free white and dark chocolate kirsch and lemon cake is stunning – and arguably beats our two favourite chocolate orange cakes into joint second – with liqueur-laced cherries in the sponge and a lavish filling which tastes like fresh cream, although we’re told it’s made from white chocolate. A lot of love has gone into these cakes.

Some of the vintage cafés we visit feel a bit like a Spirit Of The Blitz Theme Park but this one feels like it’s always been here, with its lovely old shop fittings, weighing scales and mismatched tables, all squeezed into the tiny shop amongst towers of full flour sacks, reminding us that this is a busy working bakery. The unassuming little cakes are a joy, served on pretty porcelain. The lemon and poppy seed has a dense, seed-packed sponge and interestingly leaves all the sweetness to the crunchy royal icing, which is topped by wonderful candied peel. We’re equally impressed by the flourless chocolate cake, with its indulgent truffle-like sponge and double layer of icing. A refreshingly simple and unique elevenses experience.

Tucked away just off Western Road, this homely little teashop feels like your mates’ front room but caters for the serious tea aficionados – with five pages of the menu devoted to the old Rosy Lee, which is made with filtered water and served in jolly little coloured teapots. The owner happily recommends a brew based on our personal preferences, with no sniffiness about our usual PG Tips habit. The cake selection is small but flawless. The apple cake is dense with chunks of fruit and a generous layer of cinnamon fondant icing which proves less cloying than the butter-cream we’re usually met with. The white chocolate and raspberry cake tastes fresh and fruity and is the best raspberry cake we try.

With a dark, cosy interior that feels more arty pub than café, we can imagine hanging out in here all afternoon - even the fact that half the customers are mid-business meeting doesn’t detract from the relaxing atmosphere. The emphasis is clearly on the coffee but the friendly staff talk us through their homemade cakes, advising us that the carrot and orange cake with its sultana-stuffed sponge is “technically three of our five a day” although the rich cream cheese icing may well undo these unproven health benefits. The chocolate and red wine cake is a very grown up treat - the absence of cream and icing in no way a negative. The sponge is laden with firm dark chocolate and outclasses most of Brighton’s chocolate cakes.

• Line 8” tin with baking paper. Set oven to 170*C. • Boil two medium oranges in water for three hours.

Change the water twice and make sure they don’t boil dry (this removes the bitterness). Cut in half, scoop out and discard the centre.

• Put the warm rind into blender. Add six large eggs and 200g caster sugar. Blend til thick and creamy in texture and light in colour.

• Scrape into a bowl. Fold in 200g ground almonds and one level tsp baking powder. Pour into tin and bake for around 40 mins. A skewer inserted into the cake should come out clean if it’s ready.

While cooking, make your chocolate glaze: • In a small pan, bring to boil 80ml water and 45g glucose syrup. Pour onto 150g chocolate (60-65% cocoa) and allow to melt. Mix together one heaped tsp cocoa powder and one tbs vegetable oil. Add to the chocolate. Mix well. Cool slightly before use.

• Once cake is cooked, make a syrup out of 4 tbs caster sugar, 4 tbs water and two crushed cardamom pods. Bring to a simmer, allow to infuse for a few minutes, then strain onto cake. Allow cake to cool properly before glazing it.

• Pour glaze on top of the cake and spread around to coat top and sides. Refrigerate to set.

It’s been a very long and very dreary winter, almost monochromatic. So thank god for Johana, a ray of sunshine, a girl not afraid to embrace a dash of colour, here balanced beautifully with a sky-grey coat.

“I’m from Colombia and we wear a lot of colourful stuff there,” she explains in the same accent as Modern Family’s Sofia Vergara. “I don’t find wearing colours difficult, maybe because I do it all the time.

It’s easy for me to know what to match with what.”

She’s taken the best that the high street has to offer and injected her own South American character into it.

The result is a joyful outfit bursting with spring.

“I do think about making the colours work together,” she explains. “If I am wearing colours I like to be colourful from head to toe – but maybe with a plain jacket. But if I wear just black and white I like to wear that from head to toe.”

Ex Stompa Phunk boss Anthony Prior took over Brighton’s Bagelman chain two years ago, after running nightclubs like Audio and Coalition for many years. He’s now planning more branches around and beyond the city.

Why move from club promotion to bagels?

I’d been a customer of Bagelman for years but never imagined I’d end up owning it. The guy who was running it was looking to move on and I was looking for a business to invest in, so my wife and I did a deal and took over. I’d been running venues, club nights and live music, which involved working all night, all week and all weekend. One of the main things I wanted to get away from was that lifestyle burden.

What attracted you to Bagelman?

It’s a trusted local brand and something I felt I could work with and develop. Although it was quite a big gamble I knew that part of what we were investing in was all the know-how within the business and we needed to protect that.

How are you planning to develop the business?

We’re working on a rebranding project and we’re about to start redesigning and refurbishing the existing shops. We’re also looking at a couple of interesting new sites around Brighton and then we’re going to take it into other towns.

We have a bakery that serves our local shops, so we could replicate that model in other areas: set up another bakery and open shops around it, and probably work on a franchise model as well.

What are Brighton’s favourite bagels?

My favourite, which I had for lunch today, is still the Reuben, which is pastrami, dill pickle and tomato. That and the Lox Deluxe, which is smoked salmon and cream cheese, are the two best sellers. Over in Hove we’ve had things like the hot salt beef doing well, so we thought we’d bring it over to Brighton. The minute we introduced it in Bond Street it was a success.

How much free time do you have these days?

It’s a seven day a week business, but not a seven day job.

I try to keep my work and home life separate and have time off as much as possible. I’ve got two babies so my time’s quite taken up hanging out with the children before I think about other things, but I go sailing and do a lot of running now.

Food & Drink Festival Eat, drink and think local Words by Stuart Huggett

Frightened by the horsemeat? Getting sick over GM crops? Brighton & Hove Food & Drink Festival has been promoting local alternatives for over a decade and this Easter’s Spring Festival brings a full week of events to central Brighton (see website, FYI below). Managing director Nick Mosley is your guide.

How big is the festival now?

We run two festivals each year, the Spring Harvest and September’s Autumn Harvest, engaging with around 350 local food growers. We also run the weekly Churchill Square Farmers’ Market, and from 20th April we’re running another major monthly farmers’ market on Old Steine, which has been two years in the planning.

What are the consumer benefits of buying local?

We should all be eating more locally and seasonally, but that doesn’t mean we can’t enjoy food and drink from abroad. Globalisation has meant that many of the poorest in the world are entirely reliant on the West buying their produce. To turn our backs on them would be sentencing them, their families and communities to abject poverty or worse. The ethics of food are an absolute minefield and there’s no easy solution. The festival obviously celebrates local food and drink, and creates ways for consumers to engage through our events and farmers’ markets, but until local food supply chains are established then we’ll never remove the dominance of the big supermarket chains and the convenience and economy they bring.

How have recent meat scandals affected local producers?

The horsemeat scandal has probably been a good thing on the whole. It’s made consumers from all walks of life think a little harder about what they’re putting into their mouths and what they’re feeding their children. It’s not only an issue about

horsemeat entering the food chain, it’s also about the crap that goes into cheap meat produce – if you saw it in its raw state it would probably make you heave. We don’t like to preach about what people eat, however animal welfare, sustainability and locality are all seeping into the popular consciousness and that can only be a good thing. We don’t need to eat red meat every day of the week – there are plenty of delicious and healthy alternatives out there. But I’ve no issue with eating horsemeat as long as it’s not pumped full of veterinary drugs and is correctly labelled.

How does the festival reflect changing public tastes?

When the festival was founded a decade ago, local food wasn’t really on the table. People enjoyed good food, but I don’t think they thought too hard about where it came from or the methods used to produce it. An interesting example of a local food we’ve nurtured is the Sussex wine industry. We’ve always put local wine at the heart of the festival events and it’s pleasing to see the profile grow not only in our region but also nationally and internationally.

What do you think about the minimum alcohol pricing proposals?

Ultimately it’ll only affect the poorest in society: middle class drinkers are easily going to find a few more pence for a bottle of wine. I think we should probably be looking a little more cleverly at this, perhaps reducing tax for on-sales in pubs and bars but increasing tax for retailer off-sales. Brighton is packed with off-licences and corner shops that are selling the cheapest alcohol out there, and for some reason they all get WEB: brightonfoodfestival.com 24-hour licenses, whilst WHEN: Thurs 28th Mar - Weds 3rd Apr restaurants still struggle to gain TWITTER: twitter.com/brightonfood a midnight liquor license. When we said we could eat a horse, we didn’t mean it quite so literally. So, while the international meat industry gets its house in order, We pick out six of the city’s finest vegetarian and vegan eating out specialists.

Cowley Club

London Rd A pearl amongst swine on the love-it-or-hate-it London Road gateway to Brighton, this punky anarcho café/venue/meeting place is renowned for its fund-raising Sunday barbecues and bargain roasts.

The Cowley serves the cheapest veggie lunch in town Wednesdays to Fridays, with a themed evening meal most Thursdays. It’s run by volunteers so expect an ever-changing menu at this friendly, politically active haven. You can also enjoy a fish gut-free beer from the vegan bar. (SC)

Gourmet Girls Pop-Up Restaurant

Islingword Rd The only place in town that offers a wholly plant-based gourmet dining experience, Gourmet Girls’ informal Friday night pop-up restaurant at Fanny’s Of Hanover is a much-loved staple for Brighton’s vegans. The seating is spread across two floors and the always inspired menu takes on a different theme each week. This month they have Japanese, Spanish, North African and Thai nights prepared by expert chef Paula Young. This little bring-a-bottle gem is deservedly popular so book in advance. (SC)

Trafalgar St It’s incredibly brave for a pub to serve only vegetarian food, but this saintly boozer had our tipsy custom repeatedly before we even noticed the lack of meat.

There’s a lot on offer at the George, and they encourage swapping sauces, dips and sides as you desire. The three-cheese nachos will keep even the most committed of carnivores sated, whilst the juicy halloumi burger makes us scoff at the memory of dry bean burgers and slimy portobello mushrooms. (JMM)

East St One of Brighton’s long established and most coveted foodie hotspots for veggies and omnivores alike, the award-winning Terre à Terre on East Street has recently re-opened after a pre-Christmas kitchen fire. The layout may have changed slightly but the playfully indecipherable offerings remain. You may not be sure what you’re ordering but the presentation and combination of flavours rarely disappoint. Prince Albert St Friendly and informal but still suitable for a special occasion, Food for Friends is, in many people’s opinion, the best vegetarian restaurant in the city. The food is absolutely delicious with a large variety of dishes and they also cater extremely well for people with food sensitivities. Dessert is a must as the banana fritters with rum batter are one of the best things we’ve ever tasted. Thoroughly deserving of being crowned Best Restaurant at the 2012 Brighton & Hove Foodies Awards. (RS)
