EDITORS LETTER L’Wren & Peaches British MODE is vibrant with the colours and feel of British Springtime, April has truly arrived and everything is glorious however, this Editor’s letter is tinged by sadness at the sudden and unexpected losses of two impressive women: designer L’Wren Scott on the 17th March and on the 7th April the unexpected death of Peaches Geldoff. L’Wren began modelling for Thierry Mugler and Chanel later going on to become a designer worn by none other than the First Lady, Michele Obama and actresses such as Angelina Jolie and Penelope Cruz. Her collections have been inspired by artists such a Klimt, in his Golden Period and David Hockney’s drawings of Yorkshire. Scott’s SS14 Collection, ‘Tagasode’ beautifully hybridises Eastern and Western aesthetics. The feel is light and airy with a delightful feminine silhouette. Distinctive and effortlessly stylish L’Wren will be sadly missed but never forgotten. Still reeling from this news the British MODE team was further shocked by the loss of model, writer and TV Presenter Peaches Geldof- daughter of Sir Bob Geldof and the late Paula Yates. Far from being a wallflower, Peaches was expressive, often outspoken and a devoted young mother. A writing talent who began with a fashion column for Elle Girl when she was merely 15, Peaches went on to write for the Daily Telegraph and the Guardian. Peaches is was a distinctive voice whom the fashion world will sorely miss.

There are many elements to ‘The Perfect Date’, of course top of the list is the perfect partner! However the chances of you knowing all about this person before your first date is rare. So remember the fist rule within 5 seconds of meeting someone, whether it be an important meeting or a first date, a subconscious opinion will be formed about you based solely on your appearance! This means one thing and ONE thing only - your date outfit must to be perfect! Firstly, find out the venue, you wouldn’t want to make a huge faux pas and be dressed inappropriately. If the date is going to be a surprise then ask whether jeans are appropriate, this will give you a good guideline. There are not many places you can’t go to in jeans and with denim being so big this season the choice is absolutely huge! Steer clear of the shredded look for a first date, it may be ‘cool’ but you’ll want to look sleek and sophisticated. A satin blouse for instance, when paired with a statement necklace and sexy heels would be ideal in this instance. You’re aiming for it to look effortless, even if its taken hours to achieve. The idea is to look natural and know what will work so that you will carry yourself with ease and confidence.

Stem Ginger Cheesecake, Pine Nut Cream, Pineapple Sorbet & Wild Sorrel

Ingredients For the Cheesecake:
Pineapple Sorbet:
* 500g Cream cheese *100g Icing sugar * 200ml Double Cream * 3 tblsp Stem ginger puree
* 350g Water * 150g Sugar * 250g Pineapple puree * 3 tblsp Glucose Syrup * Juice of 2 lemons
Pine Nut Cream: *200g Pine nuts
This recipe serves 8
Method 1. Beat together cream cheese and Icing sugar until smooth. Add double cream slowly and continue to mix until thick. Fold in stem ginger and put into a piping bag. Keep in the refrigerator until required. 2. For the sorbet: bring water, sugar and glucose to the boil. Remove from heat and add puree. Cool then add lemon juice and churn. Keep in the freezer in a covered container until required. 3. To make the pine nut cream: blend pine nuts in thermomixer at 37 °c for 20 minutes. Transfer the creamy mixture to a squeezy bottle and keep in the refrigerator until required.
Serve Using a stainless steel ring, pipe the cheesecake mixture onto the centre of the plate. Spread the top with a palette to even it out. Use a blow torch to gently heat the ring and remove carefully. Squeeze random dots of pine nut cream onto plate. Place some wild sorrel leaves or edible ower on top of cheesecake and then carefully place a scoop of sorbet on the top.

Ingredients Hot Chocolate Fondant:
Rose Ice Cream:
* 120g butter * 120g dark chocolate * 2 tsp rice flour * 4 egg yolks * 2 egg whites * ¼ cup caster sugar
* 10 egg yolks * 200g sugar * 500ml milk * 500ml double cream * Good quality rose water to taste * Drop of red food colouring
Cooking time: 10mins
Method (Fondant) 1. Pre-heat your oven to 190c. 2. Gradually melt the butter & chocolate. 3. Add in the rice flour and egg yolks. Meanwhile, whisk the egg whites and slowly add sugar until it forms a stiff peak. Then fold into the chocolate. 4. Pipe into greased and lined moulds. 5. Bake in the centre of the oven for 10 minutes. It should be runny in the centre.
Method (Ice Cream) 1. Heat both the cream & the milk together. 2. Whisk the eggs yolks and sugar well. 3. Pour thehot cream and milk over the egg and sugar mixture and mix. 4. Once mixed, return to the pot and stir constantly over a low heat until thickened. 5. Strain and chill the mixtured and add rose water to taste. The final step is to add the red food colouring to, enough to get a light pink colour, before churning.

Ingredients For the trifle:
Caramel Sauce:
Gingerbread:
*5 ripe bananas, sliced *6 tbsps Badger Blandford Flyer Ale *2 knobs of stem ginger, finely chopped *500g pot ready made custard *300ml double cream *100g honey roasted cashew nuts, chopped *1/2 tbsp light muscovado sugar
*100g golden syrup *50g salted butter *100g light muscovado sugar *120ml double cream *2 tbsp syrup from stem ginger jar
*225g plain flour *125g light muscovado sugar *1 tsp baking powder *1/4 tsp salt *A few good grinds of black pepper *1 1/2 tsp ground ginger *1/4 tsp ground cloves *120g salted butter *120ml Badger Blandford Flyer Ale *160g black treacle *1 large egg, beaten
Prep: 30 minutes / Cook : 25 minutes
Method For the gingerbread, preheat the oven to 180C, fan 160C, gas 4. Firstly mix the flour, sugar, baking powder, salt, black pepper, ginger and cloves together in a large bowl. Then melt the butter in a saucepan with the Badger blandford flyer ale and treacle. Pour the wet ingredients into the dry ones and mix until smooth, and fold through the egg. Pour into a lined 30cm x 18cm baking tray and bake in the preheated oven for 20 minutes until a skewer comes out clean, and cool. For the caramel sauce add all the ingredients into a saucepan aside from the cream and ginger syrup, melt over a gentle heat and then simmer for 3 - 4 minutes, stirring often. Add the cream and syrup and simmer for a further minute, remove and cool. To assemble the trifle, turn out the gingerbread and cut in half. Spread a little of the caramel sauce over half of it, then sandwich together with the other half and cut into pieces and use half to line the base of a 3 litre trifle dish. Drizzle over 3 tablespoons of Badger blandford flyer ale over the gingerbread, top with half of the sliced bananas followed by half of the remaining caramel sauce. Repeat these layers. Stir the stem ginger into the custard and spread over the top. Whisk the double cream to soft peaks and spoon on top of the trifle. To garnish sprinkle over the cashews and sugar and refrigerate for an hour before serving.

Created by celebrity chef and sweet potato lover Felice Tocchini, this recipe makes enough to feed the entire family, and would be a delightful end to a traditional roast dinner on Easter Sunday.

¼ pint/140ml puddings
Ingredients *100g butter, plus extra for greasing *75g caster sugar *75g brown sugar *50ml vegetable oil *2 eggs *150g self-raising flour, plus extra for dusting *½tsp chopped dried or fresh lavender *200g sweet potatoes, grated
Method 1. Grease 6 pudding basins with butter then dust with flour, shaking out any excess. 2. Beat together the butter, sugar and oil. 3. Add the eggs, one at a time, beating after each addition. 4. Fold in the flour and lavender, then add the sweet potatoes and combine. 5. Pour the mixture into the prepared pudding basins. Cover each pudding with aluminium foil and cook in a steamer for about 40-45 minutes or until cooked (if using a single large basin the cooking time will increase to about 1hour 15mins). 6. Remove the puddings from the moulds and serve with a dollop of crème fraîche. (If you don’t have a steamer cover the bottom of a deep roasting tray with kitchen paper, place the puddings on the paper and fill the tray with water half way up the pudding moulds. Cover the tray with foil and place in a preheated oven 180°C/gas mark 4 for 40-45 minutes.)

Summer bbq’s or sharing foods, such as homemade pizzas with all the relevant accompaniments, is all the rage at the moment and can often be much lighter on the budget than a traditional evening buffet. A great coordinator generally has a solution, but of course you must be realistic!

Even if you have an ideal place in mind, I always advise to view at least 5 other spaces to spark ideas and inspire you both. Ensure you add those personal little touches and have some fun! Maybe you want to create your very own ‘wedding breakfast cocktail’ or invent a pudding in honour of your new surname!
