WHAT IS DU MONDE? Du MONDE is a proposed restaurant that specializes in countryspecific menus. The restaurant will have a seasonally rotating menu that focuses on 3 countries’ food and drink styles. Du MONDE also gives customers experience with interactive menus using smart table-top technology. This allows the user to navigate their own experience in the restaurant, including the opportunity to learn more about the dishes, culture, and ingredients. The restaurant gathers data, such as votes for the next country for cuisine, and most popular dishes to visually showcase in the space.

RESEARCH PRINT JOURNALS SAVEUR “SAVEUR is a magazine for people who experience the world food first. Created to satisfy the hunger for genuine information about food in all its contexts, the magazine emphasizes heritage and tradition, home cooking and real food, evoking flavors from around the world (including forgotten pockets of culinary excellence in the United States). It celebrates the cultures and environments in which dishes are created and the people who create them. It serves up rich, satisfying stories that are complex, defining and memorable.” THE ART OF EATING “The Art of Eating is about the best food and wine — what they are, how they are produced, where to find them (the farms, markets, shops, restaurants). Sometimes we present the most cutting-edge cooking, but more often than not the best food and wine are traditional, created when people had more time and food was more central to happiness than it is today.” GASTRONOMICA “Just as there is no one ‘right’ way to eat, there is also no one ‘right’ way to think about food. Rather, much of the inherent pleasure associated with food comes from our curiosity in exploring the many different ways that people throughout the world think about, use, and value food. RESEARCH INAMO Inamo is a restaurant in London that allows the customer to control their culinary experience with use of touch-screen table ordering systems. It is known for being one of the first restaurants to use this technology. Inamo uses projectors to project the information on the table, which creates an interesting tactic for food placement. In recent years, more restaurants have begun to adopt the use of smart screens for menus, and technological advances have allowed for less projected interference with dishes on the table.

RESEARCH EBONY - DUBAI “Not only can customers use their tablet tables to order, they can display table cloths, send greeting cards to other tables, order taxi rides home, plus view photos and share them with their companions on their individual seats on the table.” (eater.com)

MTT 300 Moneaul has created a table-top touch screen called the MTT 300. The touch screen allows users to order, browse, and pay with their credit card without leaving the table or needing the help of wait staff. Debuted in 2013 but wasn’t immediately available.
JUST DESSERTS - TUCSON The cafe in Tuscon has adopted tabletop touch screen technology for gaming between users. They hope that eventually the table will be used to also place orders, browse menus, and more. Tables have been in use since late 2014.

PERSONAS ANNA HARRIS, 28, UNDERGRAD NURSE UW BACKGROUND Anna is currently attending the University of Washington for a BSN degree. She is from Southern California originally, but moved to Seattle after high school to pursue her degree in a city she’s always loved. One of her favorite memories of home is meal-time. Her mother enforced a strict dinner-time ritual, requiring the whole family to join in. Anna has always been a lover of food, and recently calls herself a ‘foodie,’ trying to get a taste of everything that there is to offer in her area. She is single, mostly because her schedule is incredibly busy between school and her 2 cats, Lily and Rabe. LEISURE ACTIVITY When she does have spare time, Anna enjoys feasting with friends. She holds a bi-monthly potluck for some close friends that is usually themed (ie ‘Mexican Night’). CHARACTERISTICS Though busy with school, prioritizes spending time with family and friends (almost always over food). Interested in innovative technology, especially in the medical field. TECHNICAL TOOLS Fluent in smart phone, both iPhone as well as Android. Works with medical technology, so has a good grasp on existing and forward-thinking tools. She doesn’t obsess, but enjoys using Instagram and Facebook to share her food photos.

PERSONAS CHUCK MAYBERRY, 31, APPLE STORE GENIUS BACKGROUND Chuck is a self-proclaimed ‘uber-nerd.’ He grew up outside of Seattle, but moved to the big city to be part of the technologically forward movement. He works at the Genius Bar in the Mac store and fancies bleeding edge technology. His love for all things techie blends into his interest in sustainability and green movements as well. He usually rides the bus or rents a smart car. He lives in yuppie Ballard with his wife and dachshund, Apple. LEISURE ACTIVITY Chuck and his wife are always out and about in the community. They enjoy dining out in downtown Ballard, which is walking distance Fromm their home. Chuck also enjoys taking apart devices and putting them back together. CHARACTERISTICS Always has device in hand. Savvy with all Mac products. Buys the newest of the new when it comes to iPhone. Loves the new kiosks that are popping up in fast food restaurants. TECHNICAL TOOLS Owns the Apple trifecta- iPhone, iPad, and a Macbook Pro. Subscribes to Apple TV. Very active on Twitter, Instagram, and Facebook.

PERSONAS CHIN LU, 34, WRITER FOOD & WINE MAGAZINE BACKGROUND Based in New York City, Chin Lu is a traveling writer for Food & Wine magazine. Her friends consider her a jet-setter as she travels all across the country (and sometimes globally) to try new and exciting restaurants. When she graduated high school she worked with Habitat for Humanity and traveled around the world to help build homes for families. During her travels she enjoyed experiencing different cultures through food. When she arrived back home in the States, she decided that she would dedicate her time to finding the most innovative, exciting, and culturally accurate dining experiences in the nation. LEISURE ACTIVITY While her favorite thing to do is eat, Chin admits she has a bit of a shopping addiction. She loves to shop online while she is airborne and enjoys the ease of her digital wallet. She loves giving back to the community, and strives to take time off each year, not just to vacation, but to dedicate herself to one of her chosen non-profits. CHARACTERISTICS Constantly moving. Friendly and bubbly. Loves learning about the food she is eating and the culture the food was inspired from. Follows many top chefs and pop-up restaurants. TECHNICAL TOOLS Blackberry user. Uses a Kindle tablet to read while she travels. Excited for the release of RIM’s (Research in Motion) refreshed Blackberry digital wallet platform.

PERSONAS MARTIN AVERY, 29 SEO & SOCIAL NETWORK EXPERT BACKGROUND Martin is a Seattle native who grew up in the technology boom. He had a knack for online networking that grew when he began gaming online. He works for SEO Moz, a searchengine-optimization company that helps businesses show up early in Internet searches. He lives downtown and often rides his bike around the city. He is an avid blogger when he isn’t at the office (and even sometimes when he is on the clock). He enjoys exploring the city and meeting up with friends. He always seems to know about the latest trends in the app store. LEISURE ACTIVITY Photography and writing are some of Martin’s passions. He is active in the online community with a food blog as well as Instagram account. He loves trying new food and sharing his experience with others. His ideal weekend is filled with great food and brews. CHARACTERISTICS His status is never set to “offline.” Martin runs his personal blog as well as Instagram account on the go, which means his phone is always handy or physically in his hand. He carries a phone charger where-ever he goes because he lives online. TECHNICAL TOOLS Owns a smart phone. Active in the online community. Very good with Twitter, Instagram, Facebook, Blogger, and many online gaming forums. Owns a Nikon digital camera.

WHAT SHOULD DU MONDE LOOK LIKE? Du MONDE should look like foodie heaven. With bistro-style influence, it should feel cozy and welcoming. While technology is immensely present the restaurant shouldn’t feel overwhelmingly futuristic or sterile. Warm colors, rich woods, natural brick, and water-color maps, will create a comfortable environment.

WHERE IS DU MONDE LOCATED? Seattle is a hub for a growing food community. Names like Tom Douglas, Ethan Stowell, and Renee Erickson have helped generate an interest in cultural cuisine. As Du MONDE should garner a techie and foodie crowd, Ballard seems like a fitting area for the bistro.

WHAT IS THE MENU LIKE? The menu at Du MONDE focuses on 3 different countries at a time. It is up to the chef to choose items from the selected countries that not only showcase the culture but make an efficient menu. When the menu rotates, the next featured countries are chosen by vote per customers both online and in the restaurant. The chef chooses 6 countries to choose from that clients may vote on. Each country has two small plate options and three large plate options. They also have three side options and suggested drink pairings.

WHAT DOES THE BRAND LOOK LIKE? Du MONDE’s proposed branding creates the feel of an inviting, yet worldly bistro. Deep red and warm brown and beige create a welcoming color palette. Collateral pieces include business cards, napkins, to-go bags and boxes, gift cards, and coasters.

LOGO IDEATION WORD MAPPING In order to establish a name for my restaurant, I created a word map. I did not think it was necessary to allude to the technological nature of the restaurant in the name, but potentially in a tag. Words like curiosity and experience create a feeling of self-education which in turn might be telling to the customer about the kind of restaurant it is. SKETCHING While sketching, I found that I liked the use of a circular or spherical shape that gives the idea of a globe, but doesn’t have to be obviously a world map. The type choice will be very important, as it will have to be complimentary to the shape, legible, and give a good feel for the price-point and concept of the restaurant. A sans-serif typeface will create a modern/ techie feel as well as fit with the sphere.

HOW DO THE WALL GRAPHICS WORK? On the interior of the restaurant there is a wall that will display data gathered from customers in the restaurant as well as online voting. This data will also be shown from screens in the front windows to entice those walking by to see what’s going on inside. Data includes most popular dish, most popular country per vote, etc.

INTERIOR GRAPHICS WALL GRAPHICS This main wall in the restaurant shows a series of graphics with the use of a projector. Some screen examples include: a map that shows the most popular places according to the votes for the next country menu, graphs that show the most popular country menu, graphs that show the most popular dish, etc. These graphics will be timed and will rotate through.

EXTERIOR DESIGN EXTERIOR WINDOWS The two main windows in the front of the restaurant create interest in the business by those walking by. The windows show the same graphic information (the selected countries, favorite dish, next country to be voted in etc.) as the interior wall. By using movement, catching the attention of passersby is increased drastically.

HOW CAN CLIENTS INTERACT? Even when a customer isn’t in the restaurant they can interact with Du MONDE on the website, and through social media networks like Twitter and Instagram. When a client is in the restaurant they can interact through the smart table touch-screen.

WHAT IS IN THE FUTURE FOR DU MONDE? To further round this project out, I plan on creating a phone app that customers may use instead or with the digital tabletop menu, or for to-go orders. I will also either create a trade booth for one of the many open air markets throughout Seattle or a mobile food station where a few dishes can be featured to create interest.
