Shenandoah National Park is renowned for its Fall Foliage.

Many stay at the historic Skyland Resort, the picturesque Big Meadows Lodge, or the rustic Lewis Mountain cabins, the only exclusive in-park accommodations. Certified Organic Farm in the Shenandoah Valley

T

he Shenandoah Valley was known as the Bread Basket of the Confederacy as its farms kept the armies of Robert E. Lee and Stonewall Jackson fed and in fighting condition for much of the Civil War. Today, the Valley continues as a major source of food for the cities in the MidAtlantic region. In fact, Shenandoah County and its neighbor to the south, Rockingham County, are the two largest agricultural producing counties in Virginia. With the strong focus on green products today, there is new interest in organic farming, and one of the most unique biologically diverse and environmentally friendly farming operations is Cannon Hill Farm in Shenandoah County. Gary and Martha Lantz transitioned from conventional agricultural farming methods to raise organic beef in 2000 and, for the past 8 years, the entire farm has been certified organic by Global Organic Alliance, Inc., Bellefontaine, OH. Certified Organic beef has to be grown and processed according to strict uniform national organic standards set by USDA’s

National Organic Program and verified by independent third-party inspection organizations. Located just west of I-81 at Mount Jackson, Cannon Hill Farm was originally Martha’s home place. The Lantz’s take great pride in their humanely-raised speThe distinct features of cialty beef which includes the Belted the Heritage breed, Belted Galloway. Galloway, as well as Angus and Hereford. As Gary states, “We work our cattle with horses, not fourwheelers. All our cattle have free access to barns year round and are encourGary Lantz aged to come into the barns to eat.” In fact, the waste products

from the barns are used to generate compost which is used as fertilizer on the farm. “We are on Virginia’s short list of farms that has control of its animals from conception to consumption and we produce all of the grain and feed required to sustain the entire beef operation,” says Gary. Belted Galloway, a remarkable breed of cattle, may be one of the oldest known to man. Originating in a desolate and bleak province in Scotland, this is a small breed and has not been cross-bred. “The Belted Galloway cow has developed two

layers of hair, over 5000 hairs per square inch.” This double coat provides additional insulation against exposure to the elements; therefore, they do not produce the extra fat that other cows do and that is why their meat is lower in calories, fat calories, both total fat and saturated fat, and cholesterol. Studies have shown that this beef is higher in protein, calcium and niacin. Beltie beef is fine-grained and well-marbled which insures tenderness and flavor that consumers expect in high quality beef. Families from Bryce Resort, the Shenandoah Valley, the Maryland, Washington, DC and Northern Virginia areas can come to the farm and select their own beef. The beef will be ready for pickup at Gore’s Processing, a certified organic processing facility located just northwest of Mount Jackson, after it is processed and vacuum-sealed wrapped. Families are encouraged to join with friends and neighbors to split the purchase of a beef, thus affording them the availability of enjoying more Certified Organic Beef throughout the year. For details, contact Gary or Martha Lantz at 540-477-3817 or email: canhill@shentel.net.
