PUBLISHER'S LETTER It may not be uncommon to find celebrities living in East Texas, but it is fascinating to have so many professional athletes from here. Besides Hollywood, I don’t think there is another community in the country that has more celebrities, per capita, than East Texas. Whether they were born and raised here or have decided to settle here (like our last cover guy, Joe Nichols), many “famous” people like to call East Texas home. On any given day, you can run into them at the grocery store, the gym or church. It's possible you sat next to one of them at dinner and never even knew. Certainly, East Texas, is a safe and familiar place to get away from the hustle and bustle of everyday life. And because they blend in so well, we forget that we should probably be a little star-struck when we see them. Fitting right in, they live next door and enjoy the same things about the closeness and support of the community as you and I.

When we reached out to Nick Rumbelow, Josh Tomlin and Philip Humber, we had a feeling they'd be nice, down-to-Earth guys. We even felt strongly that they would give us a few minutes of their time, for an interview. However, we didn’t expect them to be so humble, as to hang out with us for a couple of hours during their photo shoot. My wife, Kelly, broke the ice real quick when they stopped by. Josh Tomlin arrived at the studio sporting his

Cleveland Indians baseball cap and she asked him if he played for the Chiefs. She loves sports, but clearly doesn't know which teams are in which leagues or which leagues belong to which sports, for that matter. I really thought I had taught her better. The guys laughed and made sure to give her a hard time. Although it made them feel right at home, I’m sure she won’t make that mistake again. It may not be uncommon to find celebrities living in East Texas, but it is fascinating to have so many professional athletes from here. Though in different phases of their careers, Rumbelow, Tomlin and Humber not only live here but also train here, during the off season. They have extremely different personalities and play for different teams, but are surprisingly similar. It is refreshing to see the relationship they have with each other and their communities. When you actually get down to the heart of who these guys truly are, you will see how much they really have in common. Read the cover story (pg.12) to see why we felt compelled to tell you their stories and what the key is to their success. You may be surprised to find that the secret is something that we all have the ability to achieve and teach those around us.

EDITOR'S LETTER After continually seeing how wildly popular these simple cures for chaos have become, we decided to do a little research to help get you started. How many times do you wish you had a simple solution to what ever problem you are facing? I have those moments all the time. And there is always that one person that seems to know it all. If you tell them you need help with something and have no idea where to start, they can merely glance at what you are agonizing over, leave the room, reappear less than a minute later and voila! Problem solved! No matter how creative I try to be, these types of quick fixes do not come naturally for me.

With the new age of social media, such as, Facebook, Twitter and Pinterest, an everyday gal, like myself, can be the next Martha Stewart. When I scroll through social media sites and see how creative and cost efficient people can be (when it comes to making household items into organized works of art), I find myself wondering, why didn't I think of that? Who comes up with this stuff? It's so smart and makes so much sense. Seriously, why didn't I think of that? And please, don't get me started on the Pinteresters out there. They make all of us non-crafty moms feel like we don't deserve to have kids. Luckily for me, I have some extremely crafty friends that could have invented Pinterest!

To most of us, this is a fairly new term. But the fact is, the term was actually coined in the 1980's by the hacker culture, originally referring to computer and geek-tech communities. However, being associated with “hacking� now affords one bragging rights! After continually seeing how wildly popular these simple cures for chaos have become, we decided to do a little research to help get you started. The tips and tricks provided throughout this issue can guide you on your journey to becoming more organized, on a budget, and plug you into the "life hacks" trade (pg. 34). I know some of you are already thinking that you know a few "life hacks" you would like to share, so please find us on Facebook and post your simple solutions. You never know, you might just solve a few problems for someone looking for a "life hack"!

TO BIG LEAGUE East Texas Boys Find Success in Major League Baseball Article by: Tami Spencer
It’s America’s favorite past time, as indicative of summer as bathing suits and boat traffic, and for three East Texas boys, baseball also happens to be their profession. Nick Rumbelow, Josh Tomlin and Philip Humber may all be in different phases of their baseball careers, but the three have more in common than one might imagine. The right-handed pitchers largely attribute their success to the work ethic they saw displayed daily in their East Texas community. When asked what the greatest contribution their hometowns provided to their success, each cited the examples of their parents, who knew they could achieve the success they desired through hard work and dedication. “The biggest lesson I learned from growing up in East Texas was

really a ‘never give up’ attitude. People in East Texas are just hard working people. If you’re willing to work, you can make a living and have a nice life. Putting in a full days work is more respected than driving the fanciest car or living in the biggest house,” Humber stated. The trio carry these lessons with them onto the field and also into their off-season training. As often as possible, they report back to APEC to train with Bobby Stroupe. APEC, a local Tyler training facility, focuses on providing a competitive training experience for all athletes, at all levels. A spirit of friendly competition and mutual respect is ever-present during these workouts, although the individual personalities couldn’t be more unique.

NICK RUMBELOW NEW YORK YANKEES
Rumbelow, described by his peers as the quiet and reserved one, is focused and serious during these sessions, soaking in as much guidance as possible from his experienced coach and training partners. After spending more than 150 hours training with Stroupe, Rumbelow felt ahead of the crowd as he walked into spring training. A graduate of Bullard High School, Rumbelow made a name for himself during his collegiate career at Louisiana State University. He helped lead LSU to the College World Series in 2013 shortly before being drafted in the 7th round by the New York Yankees. While he cites being a part of the baseball program at LSU and their incredible fan base as one of his greatest experiences in baseball, nothing holds a candle to signing on with one of the world's most renown sports franchises. "I think the biggest thing I have to look forward to is being with the New York Yankees...and being part of one of the most historic franchises in all of sports,� Rumbelow said. “That's just kind of surreal and awesome to say that you're part of the New York Yankees organization. Everyone knows who that is, you know, one of the pinnacles of all sports franchises and it's a really humbling thing that has happened for me and I'm just really grateful to be able to say I'm part of that organization.� On the little league fields in Bullard, Texas where Rumbelow's baseball career began at the age of five, Jay Rumbelow, coach and father, was more focused on instilling the values of hard work and faith in his son than grooming him for a major league career. Whether it was his mom, Lori, driving him back and forth to games and practices, or his dad, who he was fortunate enough to also call coach until he was 15 years old, Rumbelow points back to his parents as the key to his success. "I think there's a direct correlation between good parents and successful people, and so, when I look at who my biggest influences are, I have to look straight at my parents and know they have been the biggest part of what I've done so far," Rumbelow praised. Rumbelow's East Texas roots are still deeply planted. His parents still call Bullard home while his older brother is a football and track coach at Whitehouse Junior High. He also has a younger brother who plays catcher for the University of Texas at Tyler baseball team. While he misses his family and home in Bullard, Rumbelow knows his pursuit of baseball has led him right where he is supposed to be. "I think that everybody has to leave...and find what their calling is in life and venture out to find who they are," Rumbelow advises. "My family at home is supportive of my dream and of me and that's helped me kind of be out here and have that peace knowing everything is ok back there and everyone at home is supporting me to do this." Tomlin, in the early prime of his career, is the self-described "outspoken one" of the three who trains hard but also keeps it his mission to provide the comic relief. He works hard but tries

not to take himself too seriously. A graduate of Whitehouse High School, Tomlin went on to play at Texas Tech University and was drafted in 2006 by the Cleveland Indians. After earning his stripes in the minors, Tomlin made his major league debut for the Indians in 2010, in an appearance that could have read straight from the pages of a Hollywood baseball movie script.

Tomlin received the infamous "call" the night before a big game that he would be starting for the Cleveland Indians the next day. His mom, dad and cousin happened to be in Colombus, Ohio that day hoping to see Tomlin pitch for his current minor league team, the Colombus Clippers. When he got the call, his family's plans quickly changed, taking the short drive up to Cleveland to watch their son make his major league debut against none other than the New York Yankees. Tomlin says he still gets chills when he thinks about that day. Not only was the work he had been putting in, since he was four years old, finally coming to fruition, he was facing the defending world champion Yankees and going head-to-head on the mound with the legendary CC Sabathia. The night before the big game, Tomlin looked to his dad for some words of advice. When he expressed his disbelief that he was about to face the Yankees, his dad responded, "Do you think they put their pants on any different than you?" With those words, Tomlin realized he was on the same playing field as Sabathia and any of the Yankees. "There were some amazing players on that team, don't get me wrong, but it wasn't like I didn't belong. There was a reason why they were giving me that chance and my dad reiterated that to me the night before," Tomlin said. To understand that truth eased the tension and anxiety Tomlin had going into that day. He knew he needed to go out there and do what he knew how to do. Tomlin walked away from the game with his first Major League victory, a 4-1 win over the Yankees. That day, one of the greatest of Tomlin's life, taught him lessons that he has carried through his career in the majors, approaching each game knowing that he has to go in and give it his all. He
learned to play the game how he plays it best and not be intimated or affected by the name or stature of whoever's standing at the plate. He also learned to compete as hard as he can to help the team win. "It's never been about individual stats for me, it's about doing what I can to help that team win in that moment," Tomlin said. The support that East Texas gives Tomlin has also been a large part of his success over the years. The tight knit community of Whitehouse is still the place he calls home. Coming from what Tomlin describes as a "blue collar family," he accredits his parents for teaching him that hard work and dedication are the key to getting where you want to be. The way they worked hard to provide and afford the opportunities for him to have a better life are values deeply rooted in Tomlin that he continues to implement into his own life. mom's ever-ready support and encouragement, Tomlin says he definitely wouldn't be where he is today without them. In 2012, baseball took a halt for Tomlin as he underwent Tommy John surgery, which requires a full 12 months of recovery. After working hard to rehab his elbow in 2013, Tomlin is back on the mound for the Indians and already garnering high praise for his pre-season showings. Fighting to earn the fifth spot in the Indians starting rotation is nothing new for Tomlin, who says he has never gone into a season assuming he has a spot in the rotation. True to his East Texas upbringing, he knows the only way to achieve that is to work hard and compete every day. Entering his ninth season in Major League Baseball, Philip Humber could be considered the Pro of the three East Texas players. While his career has led him to six different teams over B SC ENEMAG. the past eight years, having his wife Kristen by his side has made each new city feel like home. The addition of their son in 2012 only made life sweeter for the newly signed Oakland A's pitcher. Born and raised in Carthage, Texas, Humber has enjoyed the taste of victory from a very young age winning three Texas little league state championships as part of the Panola County Dixie League. He went on to lead his Carthage High School baseball team to the state championship game in 2001, earning player of the year honors and a nod from the New York Yankees as a 29th round draft pick that same year. Humber opted to forgo the majors for the time being and accepted a scholarship to play baseball for Rice University. He led his team to a College World Series Championship in 2003, an achievement that Humber marks as his greatest baseball memory to this day. "When you set a goal as a team, at
the beginning of a season and the whole team is working towards that one goal, of course there will be individual failures and accomplishments along the way, but when you get to that last game and are able to win it and say, you know what, we're the champs- I don't think there's anything better than that in sports," Humber said laughingly as he noted that there may still be room to top that moment if he were ever, fortunate to be on an MLB Championship team! Selected by the New York Mets as the third overall pick in the first round of the 2004 draft, Humber worked his way quickly up through the minors, but suffered a setback when he had to undergo Tommy John surgery in 2005. After a successful surgery, Humber was called up to the majors in 2006, where he remained for two seasons. Humber then went on to play two seasons with the Minnesota Twins, and one with the Kansas City Royals before being picked up by the Chicago White Sox in 2011. Humber's career really began to take off during his time with the White Sox, earning a spot in the starting rotation and entering the 2012 season with a guaranteed spot on the roster, the first time in his baseball career. April that year, Humber achieved the dream of every pitcher by throwing a perfect game in a 4-0 victory over the Seattle Mariners, making him one of only 23 pitchers in history to achieve this feat. In 2013, Humber spent a season with the Houston Astros before becoming a free agent and signing with the Oakland A's for the 2014 season. With a resume of accomplishments that places Humber in an elite group of professional athletes, one might be surprised by the humility he displays when discussing his journey through baseball. Humber, like Tomlin and Rumbelow, first credits his parents with teaching him to honor his commitments and stick with things even when the going gets tough. "I never felt pressured to

CHICAGO WHITE SOX play sports but I played basketball, soccer, and baseball growing up. Basically the only requirement was if I signed up for a season, I was going to finish the season, no matter if I got tired of going to practice or whatever. My parents told me, 'if you start something you're going to finish it', and that was a great lesson for later in life as well," Humber remembers of his upbringing with sports. Humber also cites family friend and former Carthage resident Robert Ellis as someone who motivated him to get serious about baseball. A minor league pitcher while Humber was in high school, Ellis would spend time in his off-season giving pitching lessons to Humber along with other kids in Carthage. The city of Carthage also provided Humber with a unique inspiration to pursue baseball. Unlike most small towns in Texas, football took a backseat in Carthage where baseball ruled supreme, largely in part to the highly successful Dixie League and High School programs. The original dream was to wear the Carthage High School uniform and play under the Friday night lights. "The tradition that they had at Carthage High School of successful players and winning teams instills that in you, that there is hope of a future in this. Other people have done it, so why can't I do it?" Humber said.
This is what I do. It's a fun job. It's a stressful job a lot of times, but that's what I do for a living. It's what I do to support my family. While Humber gives credit to his East Texas upbringing for his never-giveup, hard working attitude, he also points to his Christian upbringing and personal faith as ultimate in his life. "To me, there's nothing bigger than that, no matter what you're doing," Humber said regarding his faith. While baseball has given him the opportunity to see most of the country along with traveling to Amsterdam, Italy and Sicily, he also mentions taking a mission trip to the Philippines as one of the greatest opportunities he's been afforded due to the sport. Humber maintains a gracious attitude that he is able to do what he loves but as he has matured in his career, he doesn't find his identity in being a professional baseball player. "This is what I do. It's a fun job. It's a stressful job a lot of times, but that's what I do for a living. It's what I do to support my family," Humber said. Knowing that there's always someone standing in line wanting his job gives the extra motivation to work hard to maintain his spot on a roster. His ultimate life goals include continuing to be a leader for his family, a person of good character, and someone who works hard at whatever he does. Whatever the next step is, he is thankful to have the support of his wife and family wherever the journey may lead. While the humility of all three of these players keeps them from openly admitting that their probability for continued success in the Majors is high, the future for these three East Texas pros is definitely bright. In the next five years, Rumbelow hopes to see himself pitching in the big leagues, and "God willing," in a Yankees uniform. Tomlin dreams of continuing to play with the team he's come to know and love over his MLB career, the Cleveland Indians. Humber looks ahead to hopefully continuing to pitch, but ultimately just enjoying each day as it comes. There are few sure things in baseball, but this trio of East Texans are definitely sure of one thing; they want kids in East Texas to know that with hard work and commitment, anything is possible. The opportunity is there, and Rumbelow, Tomlin and Humber are tangible evidence of this. In Tomlin's words, "The coolest opportunity we have, as professional players, is for young kids from our area to see it is possible to do something like this. You have people that are behind you and people that have done it from your town. I think that's the biggest joy that baseball has given me, to be on that stage and show kids that it's possible. I was never the best player on any team but the consistency is what drove me to get where I am now and I want kids to see that and know that." Another sure thing for these three players, as long as they wear a uniform, is that they will have all of us in East Texas cheering them on.

hink back to the pieces of colored tape you have spotted on an athlete’s body. Ever wonder what or why that was there? That is kinesio tape (KT). Mostly seen at high-profile sporting events, many athletes have been sporting the tape on various parts of their body. Because of the widespread attention on athletes, the tape has become popular enough to be available at local pharmacies for anyone to use. But, is KT just a trend or a treatment product? Should people invest in the tape because it “looks cool” or that it may help improve our performance? Over time, your body is constantly changing and your muscles, joints and bones deteriorate. Though we want to be able to grow better and stronger, we can not help the science of health and what our body goes through as we progress through life. In efforts of trying to stop the unstoppable, KT was invented. Though some may believe that the application of KT is just a fad, evidence has been found to its efficacy. Meaning, in our quest for wellness superiority, the unstoppable is stoppable and we can find hope in kinesio taping thanks to Japanese chiropractor Dr. Kenzo Kase. Researching into muscle taping, tape elasticity, adhesiveness and breathability, Kase developed the Kinesio Tex® tape and the kinesio taping method in the 1970s. He found that the taping method was helpful in the physical and healing treatment of damaged tissue and muscles. “Basically, the general benefit of it and what it can do is reduce inflammation and swelling, as well as support tissue or relax tissue," Dr. David Flynn, of East Texas Doctors of Chiropractic, says. At the 1988 Seoul Olympics, 50,000 rolls of KT were distributed to 58 countries and the product gained much exposure. Since then the product has been seen at other Olympic games, European Football Championships

and on the likes of Novak Djokovek, Kerri Walsh and David Beckham. Though athletes wearing the tape seem like endorsement deals gone popular, that is not the case. Many athletes swear by the product, claiming the tape helps keep things in place and without the tape they feel unstable. The tape is also a fast option for athletes to heal during their play season. “People that have shoulder injuries, that can’t get surgery during the season but still need to play, can use KT to get through the season, Flynn advises. Not limiting the tape to just athletes, the tape can be used on anyone. “I use the tape, all the time, with people who have posture problems to patients with any kind, of acute or chronic pain.” Unlike other tapes, KT is latex free, 100 percent acrylic, heat activated and can evaporate water as well as dry quick. It is also said to last longer, up to 3 days. The method of kinesio taping helps strengthen muscles, increase motor nerve conduction and decrease inflammation, while preserving full range of motion. Meaning, the tape can therapeutically assist while one is being active or just going about with their daily routine. To be effective though, KT is dependent on how the tape is applied and in what direction. “When you follow the protocol on how to tape correctly, it works better than if you just throw the tape on,” Flynn suggests. UK osteopath Richard Moore has also researched into the different applications of KT. “The tape is said to lift the epidermis as it recoils after being applied with tension. This ‘lifting’ increases space between the skin and the underlying connective tissues, vessels and muscles to improve mobility and aid lymphatic and venous movement. The ‘lifting’ also has an effect on underlying fascia, reducing pain, decreasing susceptibility to microtrauma and improving muscle performance,” Moore says in his 2012 Literature Review. When applied from the bottom going up, the stretched application is referred to as muscle inhibition (or relxation). When applying the tape from top to bottom, the stretched application is referred to as muscle facilitation (or tightening) and that helps with weakened muscles. To reduce edema, a single strip of the tape can be cut into multiple strips and placed over the edema. The strips should meet together at the top and towards the lymph nodes. To increase joint stability, the tape should be placed over the unstable joint without being stretched. KT has become quite popular overtime not just for the reason that it is effective but that it helps keep people who use it active, as well as that it can be a low cost alternative. For those looking for a fast and low cost alternative to surgery, KT treatment has shown to work in various situations. For example, kinesio taping is a method used to help heal a sprained ankle. A sprained ankle is a common injury for athletes, especially runners, as well as an injury that can occur from a simple fall. KT can be put on immediately for a fast healing process. Got a bruise you want to get rid of? KT is a cheap product to help the bruise heal quick. “We had a lady come in from a ski accident and she had a huge bruise on her thigh. We put a piece of KT through the middle of it and had her come back in three days to see if it made a difference. It did. When she came back, we lifted the tape off and the bruising under the tape was days ahead in healing than the areas that weren’t taped,” Flynn says. Kinesio taping is trending to become a lifestyle people can easily adapt to. So, is kinesio tape a fad or effective? Both. KT is an effective fad. The only downside to kinesio taping is that the process of treatment must be shown by a skilled therapist. Though you may find instructional videos online, it is advised that you get your particular situation checked out by a skilled professional who will be able to properly guide you. APRIL 2014

Not that long ago, most people believed a diagnosis of cancer was a death sentence. Radiation aimed at cancerous tumors could kill them, but could also cause cancer in previously healthy tissue. Fortunately, the last three decades saw major breakthroughs in cancer diagnosis and treatment. Many of these improvements came in the area of radiation therapy and have one thing in common: ultramodern technology. Tim Ochran, vice president of clinical integration and ancillary services at UT Health Northeast and radiation physicist, doesn’t hesitate over the three most important technological advances in radiation therapy. “First, we can tailor the radiation dose for each tumor, so it kills the tumor, but causes very little damage to the healthy tissue around it. We can even shape the dose in three dimensions, matching the actual shape of the tumor,” he says.

A STITCH IN THE SIDE A side stitch is a common ailment one can experience while running. It is an ache that feels like a sharp stabbing pain under the lower edge of the ribcage, usually on the right side. A simple adjustment has been found to eliminate it. First find out which foot you are exhaling on. If it’s on your right side, exhale as your left foot hits the ground. Do the opposite if the foot you are exhaling on is on the left side. If a side stitch persists, it’s best to stop or greatly reduce the activity you’re doing.
FLUMOX THE REFLUX If you eat a big meal and it leaves you feeling full as you go to sleep, lay on your left side. That’ll keep you from suffering from acid and help lay your stomach lower than your esophagus. That should keep the stomach acid from sliding up your throat.
ICE TO BURN Want to burn a few more extra calories? Here’s an easy hack. Simply ice your water. It takes more calories to burn cold water than room temperature water because the body must get it to body temperature before it can digest it. Every calorie counts.
WALK AND CHEW GUM AT THE SAME TIME If you’re trying to lose weight you should always look for every opportunity to increase your daily activity. So take the stairs instead of the elevator and park at the back of the parking lot instead of taking that empty space up front. The extra effort adds up. Research also shows that chewing gum between meals can help curb your appetite. Put the two together and you’ll see results.
HYDRATING LIKE AN ULTRA-MARATHONER I’ve experienced finding a life hack in the most obscure place. So we all know how important it is to stay hydrated while working out, right? As an avid worker-outter, I make frequent trips to the water fountain to chug down H2O only to experience these gulps sloshing around in my stomach. One day, while reading “Between a Rock and a Hard Place”, the book by mountain climber Aaron Ralston and popularized by the movie “128 Hours”, I found a life hack. As Ralston was exiting the desert with his freshly amputated arm, he needed to find a way to conserve the precious water he had left. He used the tip he’d learned from ultra-marathoners who hold a sip of water in their mouth for as long as they can before they swallow it. Not only does that help conserve water and keep your head cooler; It gives a consistent source of hydration rather than the deluge you receive from a water fountain. I started to employ this technique in my workouts. I found that not only did I avoid a waterlogged tummy, but focused on breathing through my nose more. This added up to a more comfortable workout and increased my ability to regulate my breathing.

Sofie, named after the brewmaster’s daughter, is a tart, dry and sparkling ale. It is fermented with wild yeasts and aged in wine barrels with orange peel. his month, Tasting Room returns to its roots with a sampling of Belgian ales geared towards the wine aficionado. R&K Distributors recently brought us a bounty of flavorful brews and we were more than eager to have an impromptu taste-test. Immediately, one can not help but notice the shape of the beer bottle itself. Apart from their traditional beer bottle, Goose Island opted for a vessel more kin to wine or champagne to show off their latest offerings. With names like Pere Jacques & Pepe Nero, you may feel like you are reading more from a wine list than making a beer selection. So, whether you are a lover of the vino or simply a fan of a more hardy brew, we highly recommend the selection highlighted this month. Like wine, these beers are also prepared to be paired with food. With each sip out of a wide mouth glass, the preferred glass pairing, you are sure to escape to Belgium.

Matilda is a Belgian style pale ale that is wild in character, with a slightly fruity aroma and a spicy yeast flavor that is as unique as it is satisfying. Pepe Nero has an aroma of roasted chestnuts and a mysteriously dark, mahogany hue. It is a farmhouse ale brewed with black peppercorns and a strong Belgian yeast smell. The roasted sweetness melds into a lingering, earthy, black pepper finish. A very carbonated beer, Pepe Nero will leave your tongue tingling. I
t all began at Ted Hudson’s Papasitas. Yep, that’s where Chris Smith and Samia Massad met in 1992. They were servers and Moe Rezaei was manager. Wedding bells rang for the couple in 1996 and Samia did a seven year or so management stint with Applebee’s. She says that “what God didn’t give her, Applebee’s did.” The energetic pair bought Stanley’s Bar-B-Q from Mr. Stanley in 2000 and operated it till 2007 before selling it to follow other opportunities. Chris went on to be a landman while Samia managed our local TGI Fridays. Their minds were still focused on their own special restaurant concept though. Now, "the Man” met Chris and Samia in 1998-1999 while Chris was serving and bartending for Bernard. It’s been a 16 year friendship with support to their every endeavor. But that was then and this is now, right? In December of 2013, Chris and Samia opened their dream restaurant: Chris and Sam’s Bar and Grill. The restaurant is in The Market at the Crossing Center off Old Jacksonville (next to Fresh of Brookshires). They wanted a place that took advantage of the gifts that each brought to the table. Chris is a self-taught chef who loves cooking and creatively pushing the envelope on flavor with an unusual twist. Samia is an experienced

Between them, this hard working duo bring together the best of their skills for a home run destination bar and grill. Basically, Samia runs the front of the house and Chris the kitchen. The place has a casual upscale feel with an eclectic western setting. The walls of yellow, gold, sea foam green and deep rose make it cherry and the accessories of dark timber washed pine planks, wagon wheels, saddles and bigger than life framed oil paintings provide an upbeat classy atmosphere. It is ideal for both small and large groups (seats 50-60) and has a semi private “chef’s table” in the rear for business meetings or special parties. The kitchen is compact, functional and cleaned to the core at each nights end. The cooking staff are handpicked, trained and supervised by Chris, whose menu is a result of his years of experience and love for cooking. He says that the talented kitchen staff are also creative and have come up with variations that have improved the menu.
Chris and “the Man.” It was staged at the “chef’s table” and started with drinks and appetizers of shrimp cocktail with homemade remoulade sauce and basilmozzarella brushetta on naan points. Perfect! The sampling continued with platters of Chris’s homemade smoke sausage with Creole mustard, house specialty brine and smoked corn beef with creole mustard (a must try item-to die for which is on the menu as the corn beef, cheese and sauerkraut sandwich), lemon garlic hummus and naan points and a vegetable medley of roasted red peppers, carrots, butternut squashes and red onions. We closed the place down. Go figure! We left because it was time to, not because we wanted to. Listen, Chris and Sam’s is an ideal place for a casual business lunch, an after hours “watering hole” which is always hoppin’ or a special dinner with family or friends. The food is excellent, unique and beautifully presented. It’s the new hot spot in South Tyler. So, if you’re out and about, look for us, we’ll be about town.

A BETTER WAY TO BATTER I love pancakes but hate wrangling the mix. It drips everywhere, creating a mess, and I can never get the pancakes to be a consistent size. An easy fix, save an empty ketchup bottle and fill it with the pancake batter. Simply squirt it into the pan and voila! No fuss, no mess and you have the control to create everything from silver-dollar dollops to monstersized flapjacks. Cap up the leftover mix and throw into the fridge.
CUTTING CORNER I have a very small kitchen. When I start to chef a fullfledged spread I quickly run low on usable counter space. If you have a similar issue, take a cutting board and lay it over an open kitchen drawer. In my case, I instantly increase my counter space by a third.
LAZY LIKE SUSAN Despise sifting through the butter, yogurt and mustard to get to the sour cream at the back of the fridge? Get a lazy Susan and place it on the top shelf. Sorting through your refrigerator will be as easy as a spin. There was a reason she was called a “lazy” Susan.
HANDLE THE SPOON The little hole on the end of all my pots is not just for hanging them up. It can also serve as a spoon holder, I've found. Simply wedge the spoon handle into the hole of the pot handle. Now, I no longer drip soup or sauce on anything but rather let it gracefully fall back into the pot wasting nada.
THE JAM JAR There is always that one jar that does not want to give up its contents. My grandfather used to be the only one who seemed to be able to open it. I call it old man muscle. However, if there is no old man muscle around, try this. Take about a foot of duct tape and wrap one end onto the lid of the jar. Then, fold the remaining tape in half length-wise in order to make a strong handle. Pull away from the jar and it will pop right open. If the lid doesn’t want to come off with a single layer of duct tape, try multiple layers for added strength and that should make it a successful hack.
ICE CREAM CAKES OR BIRTHDAY CONES Bake your cupcakes directly into an ice cream cone. It will make for much more fun and is easier for kids to eat. This also makes a great alternative to traditional birthday cakes too. Group them together, place your candles, sing “Happy Birthday” and give each kid a cone.

But if you want to increase the amount of time before your bananas over-ripen, wrap a bit of plastic wrap around the stem where the bananas come together and extend the life of your fruit by 3-5 days.
My burgers always plump up and become round and tend to shrink. Now I know that by pressing a thumbprint into the center of each patty, they will cook flat instead of round.
Another great tip is throwing an apple into your bag of potatoes. This keeps the spuds from sprouting before you get a chance to bake them up.

these items last much longer. I always think I’m going to get back to the pot before it fully boils over. But I am more often alerted by the sound of whatever I’m cooking spilling onto the burners. A simple fix is to place a wooden spoon over the pot, which pops the bubbles as they rise to the top. This will give you added time to get back to that pot before it completely overflows. Is your cooking oil ready? Take a wooden skewer or spoon and place it in the oil. If bubbles form around the wood, then you are good to go. Have trouble cutting fresh bread and pastries? Instead of a knife take dental floss and wrap it around the loaf, cross the strands then gently pull. This makes a more effective cut and does not smash or tear the bread nearly as much.

LEARN TO TIE YOUR SHOES You would think that this is one we’ve all learned. Though it is a basic ability that we perform everyday, I've learned there is a right and wrong way to perform the task of tying a shoe. Luckily I found this trick in time because the rounded laces on my new hiking boots were constantly coming undone. But I found this little trick. Instead of looping the last string over your first bunny ear, loop it under. The first way will make your loops fall parallel to your laces creating a weaker knot, while the former will make your loops fall perpendicular to your laces and create a stronger one. Tie the stronger knot and you won't have to retie your shoes so often, especially those with rounded rather than flat shoestrings.
PUT YOUR ICE ON ICE About once every six months I am commissioned by my wife to untangle her jewelry. She uses a jewelry drawer and over time all her earrings, bracelets and delicate necklaces become a writhing mass of entangled glitter that apparently only a husband can sort. But this little trick has made my life so much easier. I filled that drawer with ice cube trays. Now each small set of earrings, each little gold strand, baubled ring and diamond pendant has its very own place. When I open the drawer it is not as attractive as the Mahogany jewelry box I bought her on our 7th anniversary, but it is much more practical.
KEEPING THE BARN DOOR CLOSED As I was researching this piece, I was dealing with an exact problem I came across the answer to. I have a pair of pants I love. I have spent years cultivating these jeans to the exact shape of my body. The holes in the knees, far from being damaged that keeps me from putting them on, are vents that let my legs breathe and make sitting so effortless. There is just one problem. The zipper will not stay up no matter what. When the jeans are on, I keep thinking I will stay on top of it, continually nonchalantly checking to see if it has fallen below an acceptable level. But, inevitably, I come back from a get together or school event, go to the bathroom, look down and ask myself, “How long has my fly been undone? How many people wanted to tell me of my embarrassment but were just too embarrassed?” A simple unused key ring is all you need. Thread the key ring through the zipper-hole then loop the ring over your button or snap before you do your pants. Not only do you never have to worry about it coming down, you have just created a much larger handle to grab when nature calls.
T-RRIFFIC SPACE SAVER I am a T-shirt connoisseur. I have literally dozens. My wife jokes I will be buried in one. But I am always rummaging around to find whatever my current favorite is (which right now is my Millennium Falcon Target special). This inevitably messes up my drawer and creates a clump of wrinkled shirts. I've found that by stacking my T-shirts vertically in the drawer, not only does that give me easier access to whatever shirt strikes my fancy but also doubles the capacity allowing me to purchase more T-shirts. It also creates a tiny graphic art display every time I open my drawer.
INTO THE FRAY Threads make a habit of unraveling from time to time. When that happens to a sewn-on button you have to find matching thread and reattach it. You can stop these threads from fraying with a little bit of nail polish. This technique also stops a run in panty hose from continuing to run.

Steven Rosenbalm, AKA Stevie Jo, is climbing the ladder of stardom, if not national than at least East Texas stardom. If you haven't heard of him yet, because you either don't watch “The Voice” or live under a rock, get ready because the guy is talented and very humble. Seeing as how well he has done in the reality competition thus far, Stevie Jo is looking to make national stardom whether it be with or without his success on the show.
Just as he had hoped, Usher chose Stevie Jo to be a contestant on his team. The budding singer blew Usher away with his rendition of Usher's “There Goes My Baby.” And so far, the match up has been a promising and learning experience. “Usher is a very technical singer. He is able to move and do amazing things with his voice. That is why I wanted him. But when I was coached by him, I found that it's not about that stuff. It's about feeling the song, getting into it and connecting with it by living in the moment of the song. It was a flip of perspective. I wasn't thinking of emotion the way he does. That is something I needed to hear from him to improve,” Stevie Jo says. Incorporating what Usher taught him, Stevie Jo sailed through “Higher Love” in the first battle round and Usher chose him over his opponent. Now, Stevie Jo is gearing up for the next battle round, as well as the rest of the competition. How is he getting through each process? “When I started out, I just wanted to make it to the blind auditions. I just wanted to be able to sing on that stage. When Usher turned around, it was about making it to the next level. Then the battle rounds happened and again, it was about making it to the next level. I'm not thinking about winning at all right now. That's how you become complacent,” Stevie Jo explains.
Stevie Jo is a Tyler native who credits his parents for his musical upbringing. “My parents were both in metal bands. They both played guitar and I was always surrounded by it. I was brought up to love it at a really early age. I wanted to be just like my dad but [play music] in my own way,” Stevie Jo reflects. He soon began playing the drums and started an instrumental band with a few friends. The band grew but they lacked a singer that could match the style of what they wanted to accomplish musically. After gaining a new band mate, who pushed Stevie Jo to become the band's singer, Stevie Jo discovered that he could play and sing. The band played in Longview and Dallas before breaking up leaving Stevie Jo a desire to write and play guitar on his own. Though his taste in music is very ecclectic, Stevie Jo's passion for music lead him to join the choir at Chapel Hill High School. Upon graduating, he went to Trinity Valley Community College, in Athens, for two semesters and continued to play music. “Everyone kept telling me to try out for 'American Idol' or 'The Voice',” Stevie Jo recalls. After doing his research and finding that “The Voice” has a good reputation for a show that wants the contestant to succeed, he signed up. “It doesn't matter if it's the camera man, a producer or one of the coaches. No matter how far he makes it in the competition, Stevie Jo feels blessed for the opportunity as well as the connections he has made. When asked how much his life has changed since auditioning for the show, Stevie Jo remains humble to his experiences and newfound fan base. “I'm so grateful. I would have never imagined this happening,” Stevie Jo shockingly expresses. With as much humility as that, East Texas is happy to cheer on Stevie Jo regardless of his outcome on the show. want to start this “At Home” section in a rather unconventional way; by telling you a story.
Meet Charlie, a sweet man that picked me up at the airport, in New York City, as I headed to the Architectural Digest Show to see the latest design trends. He had Willie Nelson blaring over the radio as we drove through the concrete jungle. The windows were down and the sun was glaring; all the elements to make this southern heart feel right at home in the big city. Charlie told me he was put into foster care at the age of 13. He had just lost his wife of nearly 41 years and was still carrying a laminated card of her from the funeral. In short, he told me how he has found strength and survived it all, while still wearing a smile. What’s the moral of the story? Everyone has a story. You might be wondering how does this relate to design? Well, I say the products we place in our home should also have a story. How would home décor have a story to tell? It all starts with the artist. Just before I hopped on the flight for NYC, I ventured to the Renegade Craft B SC ENEMAG. COM
Fair in Austin, Texas to see the latest on the homemade fashion front. Innovation, creativity and passion overflowed from the exhibitors there! I love supporting small business, and always prefer buying from local artists over the big retailers. I just think there is something so special when a product is handmade with love by another human being. An editor of the magazine, Hand Eye, once wrote, “Our hands are made to make things to please the eye.” Stop and think about that for a second. When someone gives you a gift, isn’t it so much more special when they made it? Do you not cherish the gift so much more? (I do.) Why would the things we surround ourselves with at home be any different? There are so many emerging artists to get excited about! Socially responsible products that give back to communities around the world are on the rise. Now this is a trend I have always backed up! As the weather is warming up and we are venturing outdoors more, I can't help but notice a company named Bush Smarts – started by two wilderness trekking, mountain men based in Brooklyn. The Local Branch Co. was founded by a vagabond spirited couple whom are passionate for products that reflect the history, culture and geography of America. Empowering artisans in Guatemala, Teysha offers custom crafted leather boots mixed with local handmade textiles from different villages in the country. They literally traced my foot on a piece of copy paper, put my name on it and sent it off to Guatemala to make boots just for me! I got to pick out the one-of-a-kind textiles to

So I was walking through the Renegade Craft Fair and stumbled onto this artist from Paris who makes cut out maps, with fabric scraps. I asked her would she mind showing me what Smith County would look like on the wall and here it is East Texas!

oller Derby has not been part of my conscience for quite some time. What I remember from the 1970s, was that I saw the sport, as a bunch of rowdy women performing choreographed sequences. It was very fake and seemed to be like the female cousin of pro wrestling. And until the movie "Whip It" came out a few years ago, that rowdy sport quietly went out of style. The last couple of years, I've started noticing that roller derby is making its come back. A former colleague of mine posted on Facebook

that she had joined the roller derby team in Houston. That colleague of mine is Sarah, a sweet timid orchestra teacher. There had to be something I was missing. When the topic came up in conversation with some of my girlfriends, I learned that a few of them had friends on the East Texas roller derby team. The team is known as the East Texas Bombers. Wanting to see what all the fuss was about, I went to check them out and saw a very different game than I remember of the 1970s.

In fact, the sport is being looked at as a potential Olympic event. The new derby culture has a mystique. It’s been described as “playing speed chess on skates with bricks being thrown at you.” People really want to know what would drive women to be a part of this extremely physical sport.

GONE IS THE SLEAZE AND DRAMA OF OLD DERBY. have had a complete change of perspective on the game and the girls who love it. This past week I was able to sit down with five of the East Texas Bombers to get educated on the ins and outs of roller derby. I felt my cool stock go up exponentially just by being in their presence! As I began to ask questions, I saw the knowing looks between them. They must get these questions a lot. Right out of the box, I had to ask what their day jobs were. Within the five, there is an oil and gas analyst (with a degree in anthropology), two nurses, an advertising executive and a zoo keeper. I’ve never met a zoo keeper in my whole life! The whole team is comprised of professional women with an impressive variety of degrees. They all manage careers, families and derby duties of practice, philanthropy, strength conditioning and bouts. My next question was on how they ended up being on the team. I am so glad I asked this question, B SC ENEMAG. COM
because this is where I really found out why they joined the Bombers. Some were looking for a challenge, a way to take on fear. Others wanted to shake up a structured life and find a side of themselves they didn’t know existed. Whatever it was, I could see the deep passion for the sport and a sincere regard for their teammates. “I didn’t have a choice. I was infected. Derby crawls under your skin, takes a hold of your heart and gives you purpose and drive for everything else. Derby lets you be you ... you don’t have to make any excuses to anyone,” Professor Mary Catherine, AKA MC2, claims. The girls used the words "empowering," "life changing" and "character building" to sum up their derby experience. Often, women try so hard to please everyone, so I wanted to know how their peers felt about their hobby. Though support is varied, they all agreed that, at first, family and friends questioned their sanity upon joining the
Bombers. Petite Adriana, AKA Indiana Bones, comes from a family of cops. Not wanting to take a chance on her daughter getting hurt, Adriana’s mother makes sure to stock up on padded safety pants. Always the athlete, Monica (Cheekilicous) played rugby for some time, so it was no surprise to her circle that she chose to take on roller derby. They also had to tell their significant others that they would become “Derby Widows” during the six month season. Although some did not get the initial reaction they hoped for, it seems like the Bombers’ family and friends are supportive of their love for the sport. After hearing “Cheekilicous,” you must be wondering how they got their nicknames. I know I was. So naturally, I asked. The girls explained it could be from a physical or a personality feature, profession or a passion, that drives the naming process. Lindsey, who goes by Paranormal Smacktivity, is not just A P R I L 2 0 1 4 No. 85
It’s been described as “playing speed chess on skates with bricks being thrown at you.” intrigued by the paranormal, but was an actual paranormal investigator in Dallas. Christy can’t make a decision so her frequent response of “could care less” became her moniker. I was a little jealous of Amber’s nickname, chosen by her husband, Homoci-Doll. To prevent having the same name as someone else, the names get registered with the Women’s Flat Track Derby Association (WFTDA). Though there is no exclusivity to the names, it is a courtesy to not use a registered name. As the sport gains more popularity some players have opted to use their legal names to make the sport more legit. Before even choosing a name though, one must decide if they want to be a derby girl. I was curious to know how derby girls are selected, so I asked them. The Bombers are always on the lookout for potential teammates. I guess they didn't consider me derby material, because it wasn't suggested I show up for try outs. After the awkward silence, they continued to say that no specific skills are necessary and try outs are available for women over the age of 18. In fact, they like to shape and mold the person to the style of the sport. The girls who are in the process of joining are referred to as “fresh meat.” As Amber explained, “it’s not a natural talent, it’s a trained activity.” The team roster can be as large as they want, but only fourteen can participate in any given bout. You must also be able to pass a minimum skills test to be on the roster. One of the things they do look out for is strong thighs. I asked them how often they get hurt and the resounding answer was “not that often.” The girls learn skills on how to fall properly to avoid injury. I specifically

wanted to know how often someone rolled over their fingers. Turns out, that is one of the least frequent injuries. Actually, most of the injuries occur in practice when they are in creative mode, trying out new game plans. They are very proud of their giant bruises, often giving them names. My last question for them was which Bomber keeps everyone in check. The Bombers function as a family and Amber is the captain/matriarch. Each player also has a "Derby Wife" who is someone they connect with and will be their confidant and conscience. Amber has created a team that is both disciplined and compassionate. That compassion goes out to the community as well. As a 501 (c)(4) organization, the team strives to make an impact in the community. The proceeds from their bouts have benefited several East Texas agencies, such as Meals on Wheels, Crisis Center, Alzheimer’s Alliance and Salvation Army. The girls have recently adopted Bergfeld Park and work diligently to keep it in pristine shape. My time with the East Texas Bombers was very eye opening. The sport is real and requires time, energy and practice. What they seem to get out of it is worth the sacrifice. The new derby is a different experience that is exciting, fun and family friendly. It was a pleasure to see women who are so different from each other but willing to work and support one another. If you are thinking about going to a bout, throw your misconceptions on roller derby away, if you had some like I did. In fact, if you are wanting to attend a game, look into the WFTDA World Cup series, being held in Dallas this year. Geaux Bombers!

On the heels of last year’s successful Jurassic Summer adventure, the Center for Earth & Space Science Education at Tyler Junior College and Discovery Science Place are again teaming for a summer blockbuster, this time featuring the inventions of Leonardo da Vinci.
Leonardo da Vinci Machines in Motion takes a unique, backward glance at a forward-thinking fellow. This unprecedented, interactive show will be open Memorial Day through Labor Day at the TJC science center and DSP. The 5,000 square-foot exhibition is the largest hands-on display of full-size machine replicas, constructed according to da Vinci’s famous codices. The exhibition uniquely presents 40 operational, actual-size working machines, as opposed to miniatures or static displays. The exhibit was designed by a modern team of scientists and artisans who used the craftsmanship that Leonardo would have used in his time. Organized into four parts, the exhibit is based on da Vinci’s study of the elements of nature and applied knowledge: earth, water, air and fire. Highlights include a revolving crane, a full-size armored tank (large enough for several visitors to explore inside), a working robot, and four flying machines. Other displays include the hydraulic water saw, the pillar lifter, floats for walking on water, the parachute and the machine gun. The exhibition is of particular interest to students and young audiences, because it provides an engaging combination of education and entertainment in an experience that explores history, science, mechanics and physics, invention and innovation. The exhibit has appeared in Athens, Istanbul, and Mexico City to broad audiences, positive critical reviews and substantial media coverage. Three leading scientists collaborated to rebuild as perfect as possible replicas of the machinery described in Leonardo da Vinci’s drawings and created a museum of da Vinci’s machines in Florence, Italy. The project is a result of in-depth research and study of da Vinci’s codes, his personality and his way of thinking. The Center for Earth & Space Science Education at TJC is located at 1411 E. Where does that other sock go? I had them both on and they both went in the hamper. As I stand in front of the dryer, one is in my hand and the other is in the Bermuda Triangle of my laundry. Here are three ways to use the lonely socks:
If you have a small dent on one of your car panels you can use a plunger to try and get it out. When pulled back the suction of the plunger also pulls the dented part of the panel forward and back into place.
Throw one over your hand and see how perfect it is for cleaning, especially intricate items like sculptures and knick-knacks.
CAN OPEN PLASTIC
Tired of that cold toilet seat? If you have the split seat, throw a couple of those matchless socks over the two halves. And if you have the round kind, cut the socks lengthwise and use stickybacked Velcro to create a toilet cozy and never fear that icy seat again.
People that work in packaging must really be unhappy and they tend to make the rest of us miserable with their hard to open containers. When I was a kid it seemed you could rip into any item within seconds. Now every other product seems to come in a clamshell; those frustratingly hard to open plastic containers. Go to your kitchen to find a solution to opening your package. Grab your can opener and open the clamshell as if it were a can. The sharp wheels of the can opener will cut the plastic without injuring your hands. It won’t go around the corners so you'll only be able to cut open one side at a time.

I loathe the noisy tumbling of my sneakers in the dryer. If you do too, try knotting your shoelaces together then shutting dryer door with the knot on the outside. That should keep them from banging around.
Tired of battling the unruly plastic bags that seemingly regenerate under your sink. Take an empty tissue box, or in my case five empty tissue boxes, and stuff them in. This keeps them neatly corralled and ready for use.
Socks make the best bags for loose items like dominoes, chess pieces or change. On a trip, you can stuff your undies into a sock, as well, and you never have to empty the suitcase looking for them.
Get a little extra use out of those used dryer sheets too. They are great for dusting.
EXTEND YOUR SINK Use a standard dustpan that is designed to snap onto a broom handle. The portion of the handle that snaps on creates a perfect channel to extend the reach of your faucet and over the sink to your bucket.
PRECISION HANGING When my Mom hangs a picture she usually taps the wall to find a stud. Wherever the hammer busts open the drywall is where her picture goes. There are a few rules to help you easily find them without an electronic stud-finder. Often you can look for small indentations that indicate a nail that has attached the drywall to a stud. If you are using the tapping method, remember you’re listening for the higher pitched sound. A low sound indicates a hallow area. Also, most light switches and electrical outlets are mounted to a stud. Remove the cover plate and you can usually see which side it’s on. And if you need to hang something onto a wall with exact holes such as a multi-plug, make a photocopy of the backside of the item, (making sure your copier is not set to increase or decrease the image size) mount it to the wall and use it as a guide.
DON’T GET HAMMERED When you are hanging a picture, try using a clothespin or a comb to hold the nail as you get it started. Your thumbs will thank you.
