LETTER Short for Texas Wok, this little propanepowered, bad boy can handle any culinary creation you can imagine. It’s official. June is here and the summer months are beckoning us all to the great out of doors! It’s that time of year where things are so busy I can’t help but feel pulled in a thousand different directions. The kids are out of school and summer camps are in full swing. Junior baseball leagues are filling up and families are preparing for a much needed “va-kay”! LETTER I have read a lot of "fake it 'til you make it" tips, but I am certain that my coffee grinds will get my thighs ready for the sand in no time! You may remember an article we brought you, in our April 2015 issue, about traveling and vacations. Well, I can honestly say that I am ready for a vacation! And, I will take the advice from the article, and leave all the planning to a highly qualified travel agent! Unfortunately, with work, kids stuff and all this rain, I have failed to put in the effort to get swimsuit ready. Lucky for me if I need to know something, I find a way to make it into an article and let our awesome team of writers do all the research. The topic of exploration this month, is tips and tricks for the last-minute beach vacation! I have read a lot of "fake it 'til you make it" tips, but I am certain that my coffee grinds will get my thighs ready for the sand in no time! Alright, I get it, coffee grinds aren't my save-all and are a temporary fix. But some everyday changes that make a huge difference are eating, using and consuming all-natural, organic products. We've discussed this topic a lot, over the last few issues. You may recall our March 2015 cover story about Micro-Family Farms, or our February 2015 cover story featuring Moon River Naturals. These entrepreneurs have taken personal passions and turned them into profitable businesses. Sure it's nice to make money off what you love, but when your business is formed out of passion and concern for the ones you love and those you've never met ... well, that my friends, is what you call smart. Some think that this whole "organic craze" is a trend. Some call it hokey. I think the farm-to-market era is brilliant, and that is why we are proud to know that we are surrounded by a community that embraces the home-grown, all-natural, organic and recognizably certified farmer's market businesses. We have told you about the Rose City Farmer's Market before, but we wanted to reconnect you with it simply

because it is bigger and better than ever. The vendors are vast and the products immense, you can get almost anything you need there and be assured that you are buying exactly what you think you are. One of the coolest aspects of a farmer's market is that everything is made locally and the money you pay goes right back to the community. This brings us to our June 2015 cover story, featuring Chef Philipp Norsetter, of Juls. He grew up on a farm where the importance and value of living off the land was instilled in him. This is one of the many reasons that next time you visit the Rose City Farmer's Market, you will see "Chef Phil's Community Garden", on the Juls property. A garden intended to offer the freshest ingredients in your favorite menu item and an educational opportunity for the community. Of course, he is an awesome Chef and has a cool look, but after spending about ten minutes with Chef Phil, you either want to be his friend (in hopes of regular invitations for you and your family to go over for dinner!) or you have an incredible desire to be more opened-minded and knowledgable about the foods you eat and where it comes from.

Kelly Laine Haney KHANEY@H3-Media.com

My husband met Chef Phil when Juls first opened, and all I heard was that I needed to meet him and that he had the coolest story. So, for that reason, and incase you haven't met the guy behind the exquisite menu at Juls, allow me to introduce you to Chef Philipp Norsetter. You can almost always catch him at the restaurant. Next time you can't decide what to order, just ask him. I guarantee you it will be worth it!

OUT OF THE KITCHEN Article By: Britt E. Stafford

ince it’s opening in 2013, Juls has become a culinary staple in Tyler dining. While many people enjoy the different flavors and cuisines offered, they often don’t take the time to take a look back into the kitchen at the mastermind behind their delicious dish. BSCENE had the opportunity to talk with the man behind the food East Texans have fallen in love with, Chef Philipp Norsetter. Originally from southern Wisconsin, about an hour outside of Madison, Norsetter was raised on a farm setting. Raising their own chicken, duck and lamb, he was introduced early on in a setting where they provided their own natural foods. He grew up in the restaurant industry, working summers at his parent's restaurant until he was 16 years old. From there his food and beverage expertise grew, working at a local butcher shop, a brewery in southern Wisconsin, spending one summer working for a Swiss chef, learning Swiss cuisine and learning some French Creole cooking along the way. With his culinary resume well built, Norsetter was ready to tackle culinary school at Le Cordon Bleu College of Culinary Arts in Las Vegas, Nevada. After graduating in 2006, Norsetter worked his way around Sin City, including six years in fine dining, until he worked his way to the executive chef position at T-Bones Chophouse. While some would find that to be enough career success in one lifetime, Norsetter was wanting more. With a new culinary opportunity set up, Norsetter moved his family from the hot and dry to the Piney Woods and has been here since the opening of Juls in 2013. While he, like many, found Las Vegas to be a fun place to live, he also explained he didn’t believe it to be a place to raise a family. Now he, his wife and five-year-old, with one more on the way, have found the family-driven place they can call home. “I like the fact that it can be a quiet place, but it can be a fun place as well,” Norsetter said. Norsetter also enjoys residing in a place similar to his hometown, and here he can focus on a concept he is passionate about, both professionally and personally.

Since his days in Wisconsin, Norsetter has been familiar with farm-to-table production, and it has become his pure passion. Farmto-table, otherwise known as farm-to-fork, helps farmer and local growers in the area by using their products in restaurants. Norsetter tries to use this methodology as much as possible, especially in the kitchen at Juls. While it isn’t possible 100 percent of the time, he works with what he can in the East Texas area. He explained that by purchasing locally, restaurants are decreasing their carbon footprint. The product spends less time in a truck being transported, being processed or in a factory. Restaurant patrons are getting food when it is ripe and at its best, meaning the flavors are at their best. It also helps local farmers economically by giving directly back to them, as opposed to a percentage of the profit going to the grocery store, who acts as a middleman between buyers and producers. “Living out in Las Vegas, you had the desert, where it was 115 degrees, so people felt much more disconnected to their food source,” Norsetter explained. “When I was out there, I tried to get involved with the local farmers market, which had people come from California, but it wasn’t the same as it is here.” By incorporating local, fresh, all-natural foods at Juls, and creating dishes around them, Norsetter is trying to set an example and show people the benefits of buying

No. 14 BSC ENE

from local farmers markets or farms. There is an authenticity to what’s really happening between the restaurant and the supplier when they buy locally, Norsetter explained. One product Norsetter is looking forward to integrate into the restaurant is local mushrooms. Once they can be acquired, Norsetter plans on using these mushrooms in many different applications, to best utilize them. One way Norsetter has decided to implement this mindset in the community is to give back through a community garden, partnered with Rose City Farmer’s Market and the East Texas Food Coalition. “Chef Phil’s Kitchen Garden” is located on Juls property. “My biggest focus on that is that I wanted people to see what they’re consuming and how it’s grown, where it comes from and the process that is required to get the product they consume,” Norsetter said. “There’s a huge disconnection in the community and people don’t understand. They just know they go to the grocery store and buy their food. I thought if I did [this], number one it would show the community what we’re using for the customer and how we’re using it. I also want kids to have an understanding of how food is grown and what it takes to take care of it.” When Norsetter isn’t participating in his extracurricular activities or spending time

with his family, he is back at Juls, serving up the dishes East Texans have come to know and love. During his time at the restaurant, he has created several dishes, with his focus on targeting everyday clientele. Each dish has its own influence and there are several options for patrons to improve their dining experience, such as the ability to choose to upgrade to grassfed beef in their burgers. “We want people to come back and visit us everyday, so we don’t want to target the higher demographic or the lower demographic,” Norsetter said. “We want everybody and we try to provide something for everybody. We have all different flavor profiles. Really we have a lot of different cultural cuisines lumped into one.” As one would expect, Norsetter described the kitchen scene to be quite hectic. There is always something going on, and whether it’s baking pastries or helping the front of the restaurant, being hands on is a must for the chef. Norsetter believes in using fresh products as opposed to pre made products, meaning more work must go into creating each dish. If you have not had a chance to experience the wide variety of cuisines at Juls, let Chef Norsetter’s suggestions and naturalist mindset encourage you to venture out and “Eat. Drink. Juls every day.” B SC EN EM A G.COM

I think it’s fun because Southern cooking is filled with love and passion. The meaning of Southern cooking is for it to be family driven on Sundays. How people get together after church for this huge family gathering with biscuits, collard greens and biscuits, those kind of things. That, I think, is awesome because it doesn’t matter what’s going on, it’s more about the family experience. That is the big thing I found in Texas: people here are looking for the large, family experience.

Q&A Q: What have you found unique about East Texas flavors that people really seem to enjoy? A: I think it’s the Southern influence. I get it, but I didn’t expect it to be predominant in what people want. Q: What has been your favorite dish to create? A: I think the most favorite dish I’ve created at the restaurant was the Oaxacan Roasted Chicken on the Modern Comfort menu. I based that off more of a Mexican influence because people like that Southwestern flare. What I did is I created a dish that used all-natural chicken and we marinate that for 24-36 hours. Then we pan roast it, using a little bit of tequila. Really what inspired me…last year I started buying butternut squash and I incorporated that into it. That’s really where the first influence of the dish started. It has just kind of grown from there. Now I’m just waiting for them to have more butternut squash so we can feature another local product in there. That’s been a really big seller. Largely because it has a little bit of spice and a little bit of that fire roasted flavor to it. It has great textures. It’s such a fun dish because you get to experience different textural profiles.

Courtesy Photo Q: How has your personal cooking style developed over the years? A: It’s changed a lot. I started in American fine dining, steakhouse. I grew up on a farm, so I was used to cooking whatever was in season. Which you can translate into fine dining. I think for me it started as classical French training, then school, then it started transitioning into local. I’m really more interested in what is locally available and what is locally on the market. For me, my biggest thing, I’m more of a naturalist where I prefer to have a lower carbon footprint, I prefer to buy non-GMO, I prefer to buy organic products. So finding ways to use organic products that are local and offer all those things has always been important to me. Q: What are your top three menu items you encourage people to try? A: Our top three menu items, one I would say is from our Asian side. I would encourage people to try our Kimchi Fried Rice. It’s kind of reminiscent of a Korean fried rice dish, but my main focus was to make something in house that incorporates kimchi into our fried rice. Then we do a poached egg with fresh cilantro and green onion on top. Lately I’ve been buying green onions from Highway 19 Farms out in Athens, which is a really good product. As far as our American line goes, the Oaxacan Roasted Chicken is good. Right now we’re about to get into the wild-caught season for salmon. So I’m starting to purchase more wild-caught salmon. During the off season, we purchase an organically raised salmon off the Scottish Isles, which is farm raised, but it’s raised in the Scotland Isles. It’s certified organic. It’s really neat that we have a little QR code on our menu where you can scan it and it takes you to Scottish Isles and get information about where the fish comes from. Every single fish that comes into my kitchen has a specific QR code so you can see where it was harvested and when it was harvested and how long it took to get to you. That’s really nice because people want to get organic and they want to know what they’re consuming. I know a lot of people like the fact that wild salmon is higher in nutrients, historically speaking. So as much as I can, I’ll use wild caught products when possible. Sometime within the next week or so, I’ll start getting copper river salmon, which will be really nice. Then we also have a salmon salad we use that in. As far as our appetizers go, we make our own pretzels. We do the warm pretzel with the beer-cheese fondue, and that’s a really fun thing if you’re coming to grab a beer after work or you’re just hanging out at the bar. We take two five-ounce pretzels with a cup of beer cheese fondue. It’s just a really good bar snack. Q: What would you say is the most unique dish you’ve created that wasn’t so popular? A: I don’t know. Everything has a pretty consistent flow. I would say it’s our mackerel, we do a Norwegian mackerel on our sushi bar. It’s called Saba Crudo. People just don’t get it. When they see it, they kind of get turned off, but then when I give them samples, they’re like, “Oh this is great.” And they love it. I would say that’s one of our big menu items that doesn’t get as much attention as I would expect. But it’s definitely a favorite of all the cooks and myself.

I

t’s a constant debate really. Work out or watch an entire series on Netflix in one night? Binge eat kale or make brownies for dinner? Food gets the best of you sometimes and so does laziness. If only there were a magic pill that could make you look as if you’ve been working on that beach bod all spring long. Although such a pill has yet to be invented, I have listed a few tips and tricks to help you get beach ready in a short amount of time. Fake it ‘till you make it, right?

No. 20 BSC ENE

before the beach: Get your feet sandal-ready: Kick those rain boots off and get yourself a pedicure! Embrace the carefree spirit of summer by choosing a bright nail polish color. Trying to save money or don’t have time to get a professional pedicure? Do it yourself! Mix together coconut oil, epsom salt and your choice of essential oils, then rub a generous amount onto your feet. After massaging for a few minutes, wash off the mixture, then put lotion on your feet before going to bed. For bonus points, if you sleep in socks that night– it will help keep the moisture locked in to ensure extra-soft soles in the morning.

self-tanner do’s and don’ts: do

exfoliate. Before you do anything, shave and exfoliate your skin. This will prevent the self tanner from sticking to dry patches, which could make you look blotchy.

do

apply a lotion or moisturizer to elbows, knees, ankles and wrists. These are naturally the most dry and rough parts of your body. Applying a light moisturizer and allowing it to dry completely before applying self tanner will create a more natural look.

do

blend the self-tanner in. Although selftanners come in many different forms, blending is always important. One of the best ways to evenly smooth self-tanner is by using a tanning mitt, which will gently blend the color into your skin without leaving those dreaded orange streaks. There are many high-end brands that can cost you a pretty penny, however, you can find them at most beauty stores for as little as five dollars.

do allow the self-tanner to dry completely

before getting dressed or wear dark, loose-fitting clothes. This is to protect your favorite white, linen pants from being stained and suddenly becoming your new go-to gardening outfit.

don’t

GO OVERBOARD! If the self-tanner is 10 shades darker than your natural skin tone, it won’t look natural … no matter how good you are at applying it. Pick something that is only a few shades darker and you’ll have a better chance of successfully pulling off a natural-looking fake tan.

do get the most out of your new tan. In order to retain the color, self-tanned skin needs to stay moisturized and exfoliated.

don’t

forget to touch up any spots that you may have missed, and reapply the tanner every few days or so.

at the beach: Take care of your skin: Skin cancer is NO joke. Protect your epidermis from the sun’s harsh summer rays by loading up on sunscreen with an SPF of 30, which will block 97 percent of the sun’s UVB radiation. Look for broadspectrum on the label and choose a sunscreen with the ingredients avobenzone, titanium dioxide and zinc oxide. Choosing wisely will ensure that you’re protected. If you’ve had skin cancer in the past, or are taking any topical or internal medications that make you more sensitive to the sun, such as acne products, most dermatologists recommend using a sunscreen with an SPF of 50. Don’t forget to protect your lips, they can get sunburned as well. Use a chapstick with sunscreen in it. If you want a little color, you can find tinted chapstick in a variety of shades at most drugstores. Another way to protect your skin from sun damage is to put on a sunhat while you’re lounging around on the beach. The hat will help protect your face and if you wear sunglasses, you’re ensuring that the super-sensitive skin around your eyes is protected from wrinkles and sun damage. Ideally, you would be covered from head to toe in dark clothing to prevent the sun’s rays from coming through, but that would be sweaty, hot and extremely uncomfortable. Another way of making sure you’re protected while staying cool is to wear flowy swimsuit coverups. Choose light colors so that you’re not sweating and making yourself miserable on the beach. An added benefit of layering up on sun protection is that it will help slow the aging process. Most wrinkles and age spots are caused by the sun’s wear and tear on your skin over time. Just another reason to add an extra coat of sunscreen! No. 22 BSC ENE

diy cellulite scrub: Scrubs are perfect for exfoliating dead skin, but what else are they good for? A homemade coffee scrub mixed with used or unused coffee grinds, sugar and coconut oil can help reduce cellulite. By stimulating the dimpled pockets of fat, the caffeine in the coffee scrub helps boost blood flow and tighten the skin. It only provides short-term results, but the difference is noticeable right away and perfect for a last minute beach bod.

start detoxing: Try replacing snacks with healthier options. Just because they’re healthy, doesn’t mean they’re not good! Smoothies and fresh pressed juices are better options than soda, which is loaded with sugar and will make you look bloated. Replace cookies with celery and peanut butter, or mixed nuts. Try to incorporate more dark, leafy greens into meals and drinking eight glasses of water every day will flush toxins out of your body. You’ll feel better, look better and have more energy. Don’t forget to get enough sleep every night, which can drastically change the appearance of your skin.

incorporate quick workouts:

stay hydrated: Staying hydrated is super important if you’re out in the sun. If you’re not a big fan of water, try shaking it up a bit by adding some mint and raspberries, or lemon and lime. If you’re running short on time, pre-flavored water works just as well, but make sure it doesn’t have a bunch of sugar in it. Plant-based water is also a great alternative and has been rising in popularity over the past few years. Coconut water is full of potassium and electrolytes and will keep you hydrated. Other plant-based waters include maple water, cactus water, aloe vera water, watermelon water and even artichoke water. Personally, I’m not so sure about that last one.

So, you just now realized that your beach vacation is only a week away and you’re still eating like it’s the holidays. Here’s a secret: you’re not alone! Maybe you tried to get back into shape at the beginning of the year but lost your way, for a bit, when life got busy. It’s hard to get motivated again. But in the meantime, try not to stress. That will only make things worse. Start incorporating short workouts into your daily routine at least a week before you leave for the beach. Try to focus on one area that you really want to tone and put all of your energy into that particular area. If you’re feeling bloated and want to wear a two-piece, focus on getting your abs a little more defined. If it’s your bum that needs a lift, start doing squats. If your arms have a little more jiggle than you’d like, dumbbells will tighten those guns right up. The most important thing is to leave the body stress behind when you go. It’s a vacation after all, so just enjoy yourself and try not to worry about what you look like.

pick a swimsuit: Women come in all different shapes and sizes, that’s why what works for one person may not work for another. Pick a swimsuit that looks best on your body and enhances your natural features while covering areas that you might not want seen. Try to shop for a swimsuit in person. Sure, it might look great on that supermodel online but you want to be sure that it will look great on you too. If you’re in between sizes, it’s usually best to go smaller because swimsuits expand a little when they get wet. If you’re pear shaped, get a swimsuit that will balance out your proportions while giving enough coverage for your bottom. If you have a large bust, try to find a top with underwire, which will give you a little extra support. If you have a small bust, try out a bandeau or a padded top which will give your bust a lift. If you have an athletic build, play with some styles that bring attention to your curves. If you’re trying to conceal your tummy area, a cute one piece can slim your figure, or you could go for a bikini with a long top or fringe that hangs down if one pieces aren’t your thing.

beach-proof makeup: Don’t feel the need to wear makeup to the beach. In fact, I encourage you not to. However, if you do want to look a little more done before making your way to the sand, use products that are sweat proof and have sun protection in them. A tinted moisturizer will give you a little bit of coverage and feel light on your skin. Make sure to pick one with an SPF of at least 15 to protect your skin from the sun. If you’re one of those people who feels wearing mascara is a must, go for a waterproof one. Be sure to get a good eye makeup remover as well so that you can easily take it off later. Find a bronzer that is a few shades darker than your skin tone to add definition or fake a healthy glow. Finally, set your makeup with a shine proof powder to keep oil and sweat at bay while you enjoy your time on the beach.

Get the most out of your holiday with these Fourth of July Activities:

RED&

TRUE

ost of us think of specific activities when we think of the Fourth of July. Whether it’s getting together with family and friends for cookouts, trying to perfect your grandmother’s deviled egg recipe, drinking (a little too much) Americanbrewed beer or setting off fireworks lakeside, the Fourth of July really just encompasses the best parts of summer and throws it into a patriotic shindig. Although most of us enjoy all of these traditions, why not shake it up a bit and try out some new activities?

If you’e not already hanging the American flag outside of your home, the Fourth of July is an excellent excuse to do so! If you have kids, get them to help you hang it. Tell them the history behind American Independence and ask them why they’re grateful to be an American citizen. Take some time to reflect on what being free means to you and how there are people overseas fighting for that freedom everyday.

Bake some festive foods or try your hand at patriotic crafts. Bake cupcakes in red, white and blue muffin liners and use sprinkles to create American flags on top of white icing. For a healthier snack with the same amount of patriotism, make fruit shish-kabobs. Stack chopped bananas with strawberries and blueberries in alternating patterns. If you’re trying to stay away from the food this year, do some Fourth of July arts and crafts with the kids. Make American flag shirts by using white tank tops and drawing red lines across them with paint. Leave a spot in the left corner for the child’s blue hand print to go. It’s simple, personalized and patriotic! Another easy, wearable craft is to cut red and white striped straws into one inch long pieces and string them onto yarn. Place a few blue stacked beads in between each straw, then tie the two ends together to make a necklace.

Lawn games are always a fun activity to do with family and friends. Set up some corn hole boards and try to get your beanbag into the hole, or play a round of badminton or pool volleyball. Try planning out a scavenger hunt for a kidfriendly game, or go with the classic potato sack race. (Old pillow cases work too!)

Get in the spirit and decorate the house! Lay out American flag blankets, pillows and kitchen supplies. Basically, anything you have with an American flag on it, bring it out for the Fourth. Try easy DIY decorations as well. Layering red, white and blue colored sand in a mason jar and topping with a tea light candle is a really inexpensive way to add some patriotic touches to your home during the holiday. Sew together red, white and blue bandanas for a makeshift tablecloth or get scrap pieces of fabric and tie them around a string to make a red, white and blue garland to hang across the fireplace mantle or large window.

Send a care package to a soldier overseas. Check out some websites that have information on where and what to send, like anysoldier.com, which allows you to choose exactly what unit or units overseas that receive your package and gives helpful information regarding what the soldiers need. This is a great family activity, as it shows both kids and adults just how good they have it in the United States. Cont’d on Pg.33

Cont’d from Pg.30 Go see a movie! Fourth of July weekend is when a lot of production companies release their biggest, most actionpacked movies of the summer. Check out a matinee so that you can leave the evening for grilling and fireworks. If you feel like staying in, watch some classic, patriotic movies that have already been released. Top Gun, Rambo III, Air Force One and Independence Day are always top choices.

Check out a baseball game or Fourth of July parade. What better way to celebrate the Fourth than America’s favorite pastime! Look up some local baseball games and take the family along for an afternoon full of hot dogs and home-runs. If you’re not a baseball fan, try to find a Fourth of July parade. Wake up early to get a good spot and pass out mini american flags for the kids to wave when the floats come by.

The classic apple pie is pretty much as American as it gets. Whenever journalists asked WWII soldiers why they were going to war, the answer they got the most was for their mom and apple pie. Celebrate Independence Day with a few new spins on the classic recipe. Add sour cream for a richer tasting pie or instead of a lattice crust use a brown sugar crumble mixture.

If you have young children who might not be old enough to understand the concept of America’s independence from British rule, try celebrating the holiday a little differently. Have a birthday party for America instead. Bake a cake with number candles that show how long we’ve been an independent country and blow up some red, white and blue balloons. Play patriotic games, wear birthday hats and light up some sparklers.

Take a road trip! Why not celebrate America by seeing what all it has to offer? Plan out a road trip with family or friends to a different state, or just a different town. Go camping and grill out, or explore a new city and join in patriotic festivities. But don’t forget to drive safely! Fourth of July weekend is one of the busiest times to travel.

he Rose City Farmer’s Market is always a great place to find products that are not usually sold in your neighborhood grocery store. The commodities that they offer are made locally and without harmful ingredients or additives. Finally, ingredients you can actually pronounce! There is a little bit of everything for everyone, even items that you might not expect to find at a farmer’s market.

Listed below are just a few of the many wonderful vendors that will be making appearances at the Rose City Farmer’s Market all summer long.

Texas Longhorn Soap Company

Texas Longhorn Soap Company sells spa products that are handcrafted. They specialize in using longhorn milk, from a small herd of cattle on an East Texas ranch. They sell Texas-proud products like the Shiner Bock shampoo and scalp bars that are infused with Shiner Bock beer, rosemary and eucalyptus essential oils. Other than soap, they offer scrubs, solid lotion bars and fun bath bombs that are both adult and kid friendly, as well as many other numerous spa commodities. They are very creative with their products. The “Birthday Bombs,” for example, come topped with sprinkles that turn the bath water different colors while melting and fizzing. Each birthday bath bomb has a special surprise inside and

Their “Guiness Shaving Soap” is infused with the classic Irish beer, a perfect gift for a manly-man. Even when a batch of soap turns out a little strange looking, the people at Texas Longhorn Soap Company dress it up with a nice label and call it “Really Ugli Soap,” which is actually just a fun way of saying organic and rough-textured. Porch Culture Coffee Roasters Porch Culture Coffee Roasters source, roast locally and deliver “profoundly good coffee.” The owners take special care to roast the beans just right. Instead of focusing on churning out as much profit as possible, they take the necessary time and effort to make sure that the coffee is of the best possible quality. Their secret lies in the amount of beans roasted at one time. They’re always roasted in small batches, which allows the full, bold flavor of specialty coffee to really come through and present itself. Porch Culture Coffee Roasters also offer coffee subscriptions, which are delivered to your doorstep by bicycle, jeep or mail, depending on where you live. That way, you never have to go without your morning cup of joe.

There are three different labels that you might find on a Porch Culture coffee bag that reveal how the beans in that bag were sourced: Direct Trade, Relational Trade and Fair Trade. All three use sustainable growing practices, ensure that the workers are paid the fair trade minimum or more, and have beans harvested from prime crops. Because the people at Porch Culture Coffee Roasters believe that freshness really helps influence how good the coffee will be, every bag of beans is stamped with a date that tells you when they were roasted. If you have a hard time committing, or simply would like to try the different coffees they have to offer, Porch Culture sells a four bag sampler pack. You can even buy a single cup at the Rose City Farmer’s Market every Saturday and try it there.

Sola Bread Company Sola Bread Company is Tyler’s first wood fire brick oven bread company. The name of the business comes from the meaning of the word “Sola,” which translates to “only.” It signifies that the bread made at Sola Bread Company, in Tyler, TX, contains only four simple ingredients with no unnecessary additives: flour, water, levain and salt. Sola bread is made using a natural starter with long fermentation time, which produces a bread that is easier to digest for the gluten intolerant, but still very flavorful with a richly colored crust and chewy interior. Sola Bread Company bakes their loaves one at a time to ensure that each one is given quality care. The brick oven is heated to 600 degrees fahrenheit by fire, then cleared of ashes. The bread then bakes while the oven cools. The heat inside the oven cooks the dough, while the steam helps it to retain moisture. The levain causes the dough to expand and the bread’s natural gluten is transformed into a more digestible variation. If you plan to gets your hands on some of this delicious-ness, you might want to get there early. I've heard they sell out within an hour after opening!

The Rose City Farmer’s Market is the perfect place to pick up a variety of goods that are made right here in East Texas. It’s not just a place to shop, it’s also a family friendly event with live music and activities for kids.

Haute Goat Creamery Haute Goat Creamery sells artisan cheeses and yogurt all made with natural, grade A inspected goat milk that doesn't contain hormones or antibiotics. The owner, Laura Vanderbilt, always had a passion for food and cooking, but in 2008 everything changed when she purchased cheese-making equipment. After two years, countless hours of research, classes and reading about the art of cheese-making, she was officially licensed by the state of Texas and began producing cheese commercially. Laura first noticed Haute Goat Creamery on a trip to Lubbock. While visiting, she found out that the owner was planning to sell

the business, so Laura decided to take over the company and bring Haute Goat Creamery to her home in Longview. When she purchased the creamery, all of the previous owner’s award winning recipes were included, but Laura set up a different business model. Instead of doing what the previous owner did and sell only to chefs in restaurants, Laura decided to make the cheese accessible to markets, stores and individual people. The business grew rapidly and more assistance was needed, so in 2012 Laura’s husband, Jeff, retired from organic chemistry to help his wife with Haute Goat Creamery.

Photos Provided By: Haute Goat Creamery Laura uses milk from goats on a farm close to Sulphur Springs. Around 175 gallons of milk a week are shipped to her in Longview, where she then begins the process of turning the milk into a variety of different cheeses. There are three different types of goats used. Because of staggered breeding, goat milk products are available year round and never frozen. The milk is also processed as quickly as possible to ensure a fresh-milk flavor. In order to keep your cheese as fresh as possible, it’s ideal to store it in the packaging in which the cheese was bought. The paper is designed to allow the cheeses to breathe while also retaining necessary moisture.

Delightful Baking Company

“If you ever think of me, think of all your liberties and recall: All gave some; some gave all.” -Billy Ray Cyrus supporting the community and local veterans. While still serving her country, Meshell is a student working towards a business degree and is also an employee of Longview’s Veteran Resource Center. She volunteers with the American Legion and American Red Cross and a full-time advocate for veterans. Meshell is currently active with Help for Vets, through the East Texas Veterans Resource Center, Longview.

Meshell Tee Horton grew up in the small town of Diana, Texas with her mom, three sisters, her church family and her friends. She loved school but called her mother her “best teacher” of them all. Her mother instilled in her to follow the example of Jesus, to love everyone and also to become a lifetime learner. At the age of 16, she learned of something unimaginable, the attacks of September 11,

2001. At that moment, Meshell knew that she had to fulfill a purpose, so she enlisted in the United States Army. She is a two-tour veteran of the Iraq War and continues to serve in the National Guard. Many are impressed by Meshell’s enthusiasm in learning what she can do to help others. She continually demonstrates her commitment to others in all that she does and she goes above and beyond the call,

When Meshell Horton was serving in the U.S. Army, she said she experienced something that today she can’t speak about. The memory of that experience lingers with the Army specialist, who was diagnosed with post-traumatic stress disorder. The severity spectrum of mental health symptoms varies, but Horton said she hopes to put a human face on PTSD. She now helps veterans with job placement at the Texas Workplace Commission in Longview. She also helps in assisting returning veterans who may not have means to find homes and other services. In testimony of Meshell’s dedication to assist others and the community, she was recently awarded for her support during the Military Veterans Peer Network Appreciation weekend in Austin. Meshell loves Longview and its friendly and caring people that live here. She is well-known by the community for her hard working energy, sense of humor and dedication. Mershell is truly a Star Over Longview.

ROCK

THE

WOK Article By: Addi Simmons Photos By: Bryan Stewart

I

showed up to my second week as an editorial intern for BSCENE Magazine and discovered that the day would entail eating good food, meeting new people and trying different beers. Is this real life? One of the many perks of being a journalist is that you never know where a story will take you. In this case, it took me to a cookout where I got to see first hand what three friends had come together to create, the Twok Grill: the world’s most awesome grill. Also known as Discada Cooking, Plow Disc Cooking or a Cowboy Wok, this is an innovative culinary apparatus. The Twok stands for Texas wok, and appropriately so because the removable wok pan is Texas-sized at 22 in diameter, which makes it the perfect size to grill up pretty much anything and everything.

HOW TO:

BLUE CHEESE TOPPED PORK WITH RED PEAR & HERB SALAD Total Time: 18mins Prep: 8mins Cook: 10mins INGREDIENTS SERVES 4

4 (4 oz) boneless center-cut loin pork chops, trimmed ₂ cup (2 oz) crumbled blue cheese ₂ tsp kosher salt, divided ₂ tsp freshly ground black pepper, divided 1 ₂ tsp olive oil 1 ₂ tsp butter 1 ripe red pear, cored and diced ₂ cup dried cranberries DIRECTIONS

Sprinkle ₄ tsp salt and ₄ tsp pepper evenly over both sides of pork. Heat your Twok Grill over medium-high heat. Add olive oil to wok; swirl to coat. Add pork to pan; sauté for 3 minutes on each side or until desired degree of doneness. Remove pork from wok, top with blue cheese crumbles and let stand for 5 minutes. Melt butter in pan; swirl to coat. Add pear; sprinkle with remaining ₄ tsp salt and remaining 1/4 tsp pepper. Sauté 4 minutes or until lightly browned, stirring occasionally. Serve on top of a fresh herb salad, garnish with dried cranberries.

Although it was raining, the weather didn’t scare us away. We waited for it to subdue and then the guys got to work grilling up a few of their recipes. Owner Shaun Galbraith started the festivities off right by throwing a few slabs of lightly seasoned pork on the grill with a sprig of rosemary to top it off. Then Ryan Ahlqvist, with R&K Distributors, brought out a cooler of beer. Everyone knows that beer and grills are a match made in heaven, so we cracked open a Goose Island IPA and talked about some of the cool features Twok Grill has to offer. My favorite add-on is probably the sidecar, a removable extension piece that was specifically designed for holding pretty much anything you might need while grilling. The flat section on top can be used as a plate holder, while the metal cut out inside can be used to hold spices or drinks, and the grooves along the side are perfect for rags, tongs, spatulas and other grilling utensils. It only took about 10 minutes for the pork to cook before it was ready to be served. Shaun plated it with a side of red pear and herb salad, then topped the meat with hand-crumbled blue cheese. We let it stand for a few minutes so that the cheese could melt, ever so slightly, before diving in. I’m not much of a blue cheese

fan and my initial impression was that the blue cheese crumbles were simply a garnish, but after my first bite I realized that the combination of the pork and cheese was a delicious balance of differing textures, giving the dish a savory finish. The pork was cooked just right, not too chewy and not too tough. The Goose Island’s aromatic, hop-infused IPA couldn’t have paired more nicely with the blue cheese topped pork. Next up were the Mahi Mahi tacos, which were my personal favorite. For this dish, Shaun created his own blend of spices along with an avocado sour cream sauce. The sauce ultimately put these tacos in the spotlight for me. Anything with avocado in it is a winner in my book. He seasoned both sides of the fish before adding it to the Twok Grill, then lined corn tortillas along the edge of the wok pan to toast. While it was hard to take my attention away from the tacos and avocados that were calling my name, I knew that I was invited to this backyard bash as research for my assignment. We talked some more about the Twok Grill and how each one is built and customized for the individual. That’s right, they can design and customize these awesome grills to fit your own personal style! In fact, anything metal on the Twok Grill is customizable. And believe me, they have created some very interesting Twok Grills! If the Texas Longhorns are your team, they can make the handles into Longhorn’s. Proud to be from the Lone Star State? They can cut a

Greg Burkhart, Ryan Ahlqvist, Daniel Tidwell, Shaun Galbraith Lone Star out of the bottom plate of the grill. If you want a Texas Ranger’s themed grill with the team’s colors, they can do that too. Heck, they could even make you a New York Yankees Twok Grill! Sure they may silently be disappointed in you, but they’ll do it. The best part about the Twok Grill is that when you buy one, you’re not only getting “the world’s most awesome grill,” you’re also supporting a local business. The company is owned and operated by three Tyler guys that were friends first and became business partners later. The entire process from start to finish is done right here in the city you know and love. However, these East Texas entrepreneurs ship and distribute their products all across the state. What’s not to love about that? While the tacos, that had been captivating my attention, cooled off on the table, we moved one of the grills over for a quick photo op with the guys. I was stunned to see how easily the Twok Grill could be transported. It was at that moment that I imagined what my life would be like if I had my very own customized Twok Grill. I imagined loading it up in the back of my SUV and all the places (pool parties! camping trips! tailgating!) we could go. It’s just small enough to take with you almost anywhere, but big enough to grill without having to bend over and break your back. You could cook breakfast, lunch and dinner on this thing if you wanted, and trust me, you’ll want to. If

descriptions were limited to one word, it would be VERSATILE. You can literally cook anything on the Twok Grill, no more grill grate limitations. Saute, blacken, boil, grill, toast, steam, fry … there are a plethora of things you can accomplish with the Twok Grill. If you can concoct it, you can cook it. Cooking on the Twok Grill transforms the mundane boring task of cooking meals into a fun and wildly entertaining experience! Finally, the time had come and I couldn’t have been more thrilled. I had been dying to try the Blackened Mahi Mahi Baja tacos with the St. Arnold’s Ale Wagger Brown. The dark, slightly nutty, brown ale had hints of chocolate and paired perfectly with the tacos. The Mahi Mahi had a light, blackened crust and was very tender and flaky inside. Drizzled with the avocado sour cream sauce and topped with cabbage, cilantro and avocado, with a spritz of lime, made these tacos melt-inyour-mouth good. Lastly, Shaun bathed some Red Fish fillets in buttermilk, then evenly coated each side in a seasoned pecan-andbreadcrumb mixture before placing them on the grill with a few lemon halves and asparagus. Instead of placing the fish in the center, or hottest part of the wok, he put them in the middle of the outer edge so that the fish could cook evenly on each side. The Red Fish was slightly spicy with a dense, flaky texture and paired really well with Shock Top’s unfiltered Belgian White JUNE 2015

MAN ABOUT

TOWN WITH DR. AUBREY D. SHARPE PHOTOS BY: BRYAN STEWART

THE PATIO AT CURRENTS While rain is no stranger to East Texas these days, it came a gully washer the night of our party at the new Patio at Currents. But we were not dissuade. We all met up ‘bout 5:30ish, and there being a break in the down pour, we scooted into the bar. Then, just as planned, the covered patio, was ready and awaitin’ for us. Chris Stephens and his staff had the table set to perfection with black table clothes, gold chargers and purple napkins. The drinks were soon on the way. Let me tell you about this patio. It runs the length of the restaurant with five sets of black stained faux French doors looking into the dining room and the bar. An aluminum awning serves as the roof and the outside edge of the patio is enclosed with a 3ft wall topped with 2ft of black lattice facing a beautifully landscaped courtyard. The trees and plants in the courtyard provide a secluded and private feel to this “Garden of Eden." Chris has installed plenty of ceiling fans for comfort, painstakingly placed plants and greenery for effect and has lit up the entire ceiling with decorative lighting for ambience. The stunning black and gray cushioned metal patio furniture provides seated groupings for cozy small parties and romantic dinners for two. There is an L-shaped table with couches large enough to seat parties of 8-10. Larry Lott assisted with the design which creates a New Orleans garden patio atmosphere you’ll not soon forget. Now we have said before that Currents Restaurant is an oasis tucked away in the heart of Tyler, offering elegant and contemporary interpretations of French and American cuisines in a Nouveau French atmosphere. But listen, “The Patio at Currents” takes it to a new level of uniqueness! The flavorful and beautifully plated menu is still the same, the picturesque dining rooms, the matchless attractiveness of the handmade Brazilnut stained Oakwood bar that hosts an array of the finest libations, and the attentive service are all still the same. What

is different and new is The Patio! It provides a casual, leisurely and semi outdoorsy refuge for drinks, snacks or a quiet dinner. The Patio brings the beauty of the outside into the luxury of the inside. Because of the rain, our party “trickled in,” but we were all toasting our drinks of choice with J.B. Smith keeping us in stitches with his stories and tales of lore. The rain on the metal roof of the patio was soothing and reminiscent of days of yore when that sound was more common for country farm houses and porches. Chris joined us for “a short one” to get the festivities a-goin!

Appetizers were served at the cozy bar with new rounds of “spirits” for all. The bar was covered with four eye-catching and tummy pleasing gastronomical delights. The offthe-menu specials were: Currents Smoked Salmon, smoked Atlantic Salmon, thinly sliced and drizzled with extra virgin olive oil; topped with fresh dill, diced red onion, capers, hard-boiled egg, fresh Roma tomato and cream cheese, which is served with toast points. Fig Puff Pastry, a handful of dried figs stuffed with blue cheese crumbles and wrapped in prosciutto; folded and baked into a puff pastry shell and served with a roasted pine nut cream sauce and a sweet port wine

reduction. Fried calamari that is hand battered and served with marinara sauce and the Currents shrimp remoulade with jumbo shrimp cooked to perfection, chilled and served with Currents’ spicy remoulade sauce. The gals ganged up at one end of the bar and the guys did the same at the other end. It reminded “the Man” of his youthful Baptist days when men and women met in different Sunday School classes. But not to worry, the delightful food and drinks brought us all back together, straight way. Seated at our table for eight, we ordered off the menu and every choice was over the top magnificent. Chris provided three of his “sinfully angelic” desserts for us all to sample and we finished the night with Bailey’s Irish Cream. Happy Day! We left this secret garden refuge for the rainy deluge outside, but so happy to have braved the weather for a wonderful experience. So, if you’re out and about, look for us, we’ll be about town! Audiences can learn about the power of one of nature’s most destructive forces in “Tornado Alley,” the newest show offered in the digital, 40-foot domed theater in the Center for Earth & Space Science Education at Tyler Junior College. The science center is located at 1411 E. Lake St., on the TJC main campus. “Tornado Alley” follows Sean Casey, from Discovery Channel’s “Storm Chasers” series, and researchers from the VORTEX2 initiative on a journey to bear down on a tornado at the closest proximity possible. Narrated by actor Bill Paxton (who starred in the movie “Twister”), “Tornado Alley” chronicles storm chasers as they head out into gale-force winds, torrential rains and hail, while measuring storms with advanced weather-gauging instruments and gathering extreme weather data, never collected before. Also this summer, science center visitors can learn about other devastating forces that exist throughout the solar system and universe in any of the “Summer of Destruction” shows: • “Supervolcanoes” explores the impact of giant volcanic eruption around our solar system. • “Earthquake” allows viewers to experience an all-digital recreation of a 7.9 magnitude earthquake. • “Violent Universe” shows the forces at work behind the beauty of a starlit sky and a future encounter between the Earth and large asteroid.

Beginning June 18, the TJC science center will offer two weeks of limited-engagement laser shows which combine full-dome, digital imagery with music by The Beatles, Pink Floyd, Led Zeppelin and more. Laser shows are offered 7-10 p.m. Thursdays-Saturdays. Weekday mornings in the dome are just for kids, with animated shows ranging from fun, Sesame Street-themed experiences to “The Little Star That Could,” the beloved show that shares one little star’s search for its own planets to love. Summer hours at the TJC science center are: • 9:30-11 a.m. Tuesdays-Fridays for children’s programs • 12:30-4:30 p.m. TuesdaysFridays for general public shows • 7-10 p.m. ThursdaysSaturdays, laser shows • 10:30 a.m.-4:30 p.m. Saturdays, all audiences • Closed Sundays and Mondays Ticket-holders can also enjoy interactive exhibits, “When the Earth Shakes.” “Summer is the perfect time for a trip to our science center,” said Kim Lessner, center director. “We offer a unique opportunity to show viewers how entertaining science can be and how prevalent science is in our culture.” Single tickets are $7 for adults and $5 for children and seniors; and economical, all-day passes are available. Revealing

Beautiful Skin Article By: Addi Simmons Photos Courtesy Of: European Wax Center

S

ummer is finally here, East Texas! What better way to say goodbye to the rainy season and hello to shorts weather than to get rid of some unwanted hair? Gorgeous has officially arrived. European Wax Center is new to Tyler and is offering first time guests complimentary waxing services. Women are able to choose between a free brow, bikini, or underarm wax and men have the option of a free ear, nose, or brow wax. The certified estheticians perform the waxing services by using a fourstep process. First, they remove any makeup, oils, or lotions from the skin. Secondly, they protect the skin by applying a pre-wax oil, which will ensure that the wax adheres to the hair and not the skin. Then they apply the “Comfort Wax” which, unlike most waxes, does not have a honey-like texture, but is hard and doesn’t require the use of strips. This allows the wax to grab only the hair, creating a more painless waxing experience. The secret is in the wax. European Wax Center carries an exclusive wax made in France that is made with no harsh chemicals and alcohol free. Finally, they rejuvenate the skin by applying their “Ingrown Hair Serum”. The wax specialists will take care of everything once you arrive to your appointment, all they ask in return is to let the hair grow out to about 1/4 of an inch, roughly the size of a grain of rice. This will make it easier for the wax to get a good grip on the hair and to pull it out directly from the root. Although they specialize in waxing, European Wax Center also has their own product line designed to compliment their services so that you get the most out of your wax. Their most popular product is the “Ingrown Hair Serum,” which you apply over the area that was waxed to prevent any ingrown hairs, or to alleviate any that have surfaced. They also sell their “Slow It,” which is a body lotion that makes hair grow back lighter and thinner. “The Exfoliate” is a gel that, once rubbed in, takes all of the dead skin off. Their “Restore it” is a product that allows you to accidentally over-pluck your brows without fret. A small amount of product on an over-plucked spot will help to quickly restore brows to their normal shape by encouraging the hair to grow back at a quicker rate. European Wax Center also sells brushes, tweezers, and makeup for brows. The entire product line can be found directly inside their Tyler location. The waxing process at European Wax Center is a very private, individualized experience. The business operates in a way similar to that of a doctor’s office. The client checks in at the reception desk in the main lobby, waits in the waiting area while the specialist prepares the wax, then walks back into a private room with the esthetician to be waxed. Although the customers are assisted in a high-end manner, the

waxing services themselves are reasonably priced at anywhere from 10 to 68 dollars, depending on what you’re getting waxed. European Wax Center offers three different “wax passes,” student, prepaid and unlimited. The student wax pass allows you to purchase three of any service and get one free. All you need to do is provide a student ID. The pre-paid wax pass allows the guest to save money on their waxes by purchasing a set amount of services at discounted rates. This is great

Although they specialize in waxing, European Wax Center also has their own product line designed to compliment their services so that you get the most out of your wax. for someone who may not be as frequent, but still come in enough. You can buy six services and get one free, buy nine and get two free, and if it’s your first time at European Wax Center, they will throw in an extra service so that you get three free. These passes never expire so you can use them whenever you want. The unlimited wax pass enables you to pay one price for a specific service and come in as often as you want for that service throughout the course of a year. So if you’re coming in on a regular basis, you will end up saving much more money with this option in the long run. Also, if it’s your first time at European Wax Center, you will get thirteen months instead of twelve. To make it more convenient to the guest they also offer payment plans for their passes. They allow you to break up the total cost over a period of four months. All of the passes can be used at any of the 400 European Wax Center locations nation wide. In addition to the passes, European Wax Center also has a point reward system so that you can save even more money on products and services. Ways to earn points include booking online, pre-booking your next appointment, and referring friends. European Wax Center is located at 8942 S. Broadway Suite 116 in the Village at Cumberland Park. the LOWDOWN ON DAD'S DAY

ARTICLE BY: TAMI SPENCER

T

he month of June is special for many reasons. It marks the beginning of summer, the release of school, and the celebration of the men we all love most in this world, Brad Pitt and Ryan Gosling. Just kidding, of course I'm talking about our fathers! Whether it's the one who raised you or the one raising your children, on June 21 we will all buy a greeting card and probably a nice tie to pay tribute to dear 'ol dad. We all know that dads deserve more than one day of thanks for all they do for us, like that time he bailed you out when you "accidentally" maxed out all your credit cards, or for some, that time when he literally just bailed you out. But why do we celebrate Father's Day in June? And is this a real holiday or just something Hallmark created to sell us more cards with pictures of tools and recliners? Since you asked, let's answer these questions in true Dad-fashion and tell you way more than you really wanted to know on the subject.

Sonora Smart Dodd

The Mother of Father's Day While we wouldn't put it past dad to declare his own holiday, Father's Day as we know it was born from the brain of a woman. Sonora Smart Dodd of Spokane, Washington was so thankful for her widowed, war veteran fatherof-six that she began to push for a day to honor all dads, the third Sunday in June 1909, close to her own father's birthday. Petitions were circulated, city governments contacted, and the tradition began to spread across the Nation.

No More "Mr. Mom" According to US Census Data, there are approximately 70.1 million fathers in the United States. In 2013, an estimated 214,000 of those fathers were

International Daddy Love Father's Day is celebrated in at least 103 countries across the globe with about half of those countries observing the holiday BS CENEMAG. COM

A Side of Grammar with your History Lesson Smart originally termed the holiday Fathers' Day, the possessive plural form of punctuation that includes all fathers as a collective, but because the precedent had already been set with Mother's Day, the official holiday became known as Father's Day, using the singular possessive punctuation. There has been a surprising amount of debate and controversy around this topic with some claiming the singular form is most appropriate because it is a day reserved to celebrate their own father, not all fathers collectively, and some claiming the exact opposite. Who knew that a little comma placement could cause such a firestorm!

Moving at the Speed of Government It took three different presidents and almost 50 years for Father's Day to be officially slated as a national holiday. Calvin Coolidge was the first to back the idea in 1924, but it wasn't until 1966 that President Lyndon Johnson actually declared the national holiday. It would be six more years before a law was signed by Richard Nixon stating that the holiday would be celebrated on the third Sunday in June.

don’t forget, Father’s Day is June 21

The Greeting Card Stats Father's Day is the fourth largest greeting-card holiday in the United States, preceded only by Mother's Day, Valentine's Day and Christmas. More than 80 million cards are purchased and exchanged on Father's Day. Only 50% of cards purchased are actually for the purchaser's father. Cards purchased for husbands account for another 20%, with grandfathers, sons, brothers etc. making up the rest. 25% of all cards purchased are humorous in nature and the top two selling categories are "Dad from Daughter" and "Dad from Both." Hallmark has been producing Father's Day cards since the early 1920s.

stay-at-home dads with a spouse working outside the home. In recent years, there has been a big push to abolish the term "Mr. Mom" by the National At-HomeDad Network. "A man who takes care of his child doesn't make you Mr. Mom, it makes you dad," Al Watts, the organization's president, said. Touché, Mr. Watts, touché! on the third Sunday in June. In Spain and Portugal, fathers are honored on St. Joseph's Day, March 19. In Australia, it's the first Sunday in September. In Russia, the holiday has evolved from a military commemoration to an unofficial celebration of all men marked by parades and gift giving on February 23. JUNE 2015

No. 67

The Ties That Bind Approximately $12.5 billion was spent purchasing Father's Day gifts in 2014, averaging about $113 per person. We're guessing a large lump of that went to purchasing dad what has become known as the "traditional" Father's Day gift, a necktie. But why a tie? You guessed it, retail-driven marketing and consumerism. In the early 1920's, the popularity of the fashion necktie had grown to the point that it became a safe and traditional gift for any man. When the necktie appeared on some of the earliest Father's Day greeting cards, retailers capitalized on the opportunity to increase the association between the holiday and the popular gift. Many clothiers and department stores began to release new styles,

patterns, and ad campaigns in early June to boost low summertime sales figures. And so, that warm fuzzy feeling you have towards buying your dad a tie was born.

Beer & Barbecue While there is no official data surrounding the actual number of barbecue's that take place on Father's Day, we can tell you that 79.1 million Americans participated in a barbecue during the year 2010. Watch one or two commercials during any sporting event and you can quickly see that we associate the backyard barbecue with Dad. Beer in hand, dads across the country will gather in their "Kiss the Cook" aprons to flip some burgers and burn some hotdogs. Popular BBQ related gifts include mail-order steaks, grilling tools, and grill-related books.

Celebrity Dads, they're just like us! While most of the world will pander to a celebrity's fame and status, to their kids, they are just dad. Here are some of our favorite quotes on fatherhood from celebrity dads. "It's the ultimate in caring, you're wiping their a**, and someday, they may have to wipe yours." - Chris Rock, father of two. "I'm solid at changing a diaper... If a guy's not good at changing a diaper, I don't know what he's there for, really, 'cause they're not there for the first seven months for anything other than to do that." - Channing Tatum, father of one. "My daughter said, 'Daddy, are we rich?' and I say 'No, baby. You're broke. Daddy worked really hard." - Will Smith, father of three. "Fatherhood is the best thing I ever did. It changes your perspective. You can write a book, you can make a movie, you can paint a painting, but having kids is really the most extraordinary thing I have taken on." - Brad Pitt, father of six.

Recycle Those Roses Try to salvage the bouquet of roses you got for mom this year and pass them along to dad because roses are the official flower of Father's Day. You can also wear a rose on your lapel to honor your father. A red rose symbolizes a living father or a white rose if he is deceased. Whether you choose to wear a rose, buy a tie, or fire up your barbecue grill, don't forget to do something special to celebrate the dads in your life on June 21. To my dad, my husband, and my father-in-laws, consider this special shout-out in a magazine your official greeting card from me. I'm just doing my part not to feed the consumerism machine!

ometimes you just have to step outside and breath in the fresh air! Stop for a minute and listen to the birds chirping, watch the squirrels play and ignore the mosquitos! East Texas summers, if you can tolerate the heat, are meant to be spent outside … on the lake, barbequing with friends or stargazing. Nature truly is sometimes the best remedy for our day!

Think back to your days in a sandbox and use your imagination! As kids we played outside in the sand with no inhibitions I

...

say lose the walls

My dad always tells the story of how when I was a little girl the doctor told my mom to set me in the sandbox and just let me play in the dirt. Doing so, was the very way to make my immune system stronger as a growing kid! As an adult, I believe that still applies. This need, to be outside and connect with our surroundings, is always something I consider when designing homes because being outside improves mental and physical health. For home design this summer, I say: Lose the walls, let’s play outside! Last month, in Austin, I designed this tiny home for FYI’s “Tiny House Nation." The house is only 350 square feet inside, so addressing outdoor living for this couple was a critical part of the design process. Try applying some of these ideas to make your home one sunny space!

Large windows and transoms flood the space with natural light and create a stunning backdrop of art through nature inside the home. If you have the opportunity to add windows to your home, consider adding transoms as well. I suggest setting the transom just above the window if your structure allows it, so the view is maximized vertically. In the living room, we anchored the corner of the unit with two sliding glass doors with screens, so on nice weather days, it almost feels like a screen porch. One of the least expensive, but effective ways to create outdoor living is to throw up a few hammocks! If you have tons of squirrels in your yard, consider the nylon, parachute style hammocks, as I’ve seen the little rascals nimble through beautiful rope hammocks. If you entertain outdoors a lot, consider adding a pass through window to your kitchen for simple access. We created a drink rail style bar top on this pass through so guests will have a place to set glasses. Outdoor furniture doesn’t always have to be a patio set purchased at a department store. On this tiny house porch, we designed a built-in bench and utilized the otherwise dead space underneath as a doghouse. Consider areas where you can create destinations for entertaining and quiet time … a lounge chair under a tree for reading, or a table for dining.

This need to be outside and

surroundings is always something I consider when

designing

homes because being outside improves mental and physical health.

Owning a fire pit was one of my favorite things about our house in California. Having a campfire style setting in your yard creates a nostalgic setting perfect for roasting marshmallows or telling stories.

Obviously the Texas heat can be brutal. Fanimation has some really stylish outdoor fans that truly are a decorative fixture in their own right! Depending on the size of the outdoor space, sometimes wall-mounted fans in corners will offer greater circulation and air movement. String lights are a must! Simple to install and low cost, these lights instantly create a stunning setting that will impress guests. For this tiny house, we used copper panels from Parasoleil to create our own screen doors for privacy on the patio. The pattern of the screen brings an artistic element to the setting. Art is not just for the interiors! Screens can create a backdrop for vines and foliage, or offer shade from the sun. I call the style of this home “Mid-Century meets Boho”. We used $10 serape blankets to give the outdoor space a cozy, yet colorful vibe. Custom outdoor cushions made with outdoor fabric offer lovely places to sit around. For me, the fun in design has always been about taking a bit of a risk … doing something unexpected. BS CENEMAG. COM

This tiny home is nestled under the oak trees in Austin. The couple owns an urban winery and plan on entertaining guests outside for their wine business, so flexibility in seating number was important. I decided to make the stairs leading up to the house unusually wide, so they double as a stadium style seating arrangement. Because art isn’t just for the interiors, I painted each stair riser a different color to go along with the bohemian style of the homeowner. Notice none of my tips for outdoor living have mentioned

the obvious … landscaping. There is a reason for that! I want to encourage you to consider outdoor living more like indoor. Pull outside the very elements that make you feel cozy inside. Through art, lighting, textiles and color, your outdoor space can truly take on a personality of its own! Think back to your days in a sandbox and use your imagination! As kids we played outside in the sand with no inhibitions … I say lose the walls and build your own unique ‘sand castle’ in your backyard! B SC EN EM A G.COM

Happy Hues If you would like to stick with paint, but want to add some “oomph” to a tired space, happy hues and an accent wall can add that vibrant look you desire. Create visual interest through paint and contrasting colors! Express yourself through a bold pattern or a stunning color combination. An accent wall can define your space and focus your room while making a bold statement. An accent wall can also help with the flow of the room by tying in to the furniture, fabrics or accessories throughout the space. Colorful, bold shades of colors are great for accent wall paint colors, because they accentuate the space without overpowering it. A subtle contrast in color also works for an accent wall. If you prefer a more gentle tone, try using varying shades of your existing wall color to give it a little more depth. When choosing the best accent wall hue for your space, try using a color from an accessory, pillow or piece of artwork as your inspiration. This will tie it all together with a colorful bow.

Texturize Sure, your colored walls look nice, but once combined with a texture, the room takes on an entirely different shape. There are endless colors to choose from when painting, but these hues can be enhanced beautifully with a visual texture. Plaster has been a long-time staple for adding immediate texture to any wall but, grass cloth wall coverings or a fabric featured wall are both growing interior design trends. For a more subtle texture, planked walls add charm and character to a space with a clean and crisp look. When designing or remodeling your home, the details make all the difference. Adding texture to your walls adds a visual contrast that complements the room. Creating a focal chalkboard wall is also a great way to add some texture and creativity to your interior. The chalkboard wall breaks up the wall color used throughout the home and adds a gritty texture to that space. Plus, you can change up your artwork on the wall any time you’d like!

BONUS TIP: It’s always best to test! Since you will more than likely be living with your new walls for a while, it is always best to perform a small test to make sure that you are getting the results you are looking for. Whether it’s a certain color of paint, fabrics or a bold plaster texture, cordon off a section of wall to help you visualize the final product. A little preplanning in this department will go a long way to ensure your decorative happiness.

BONUS TIP: An accent wall can also take away the stress of decorating a child’s room. If you are having trouble settling on a color, let your child choose the color they want for their accent wall while keeping the other interior walls a more neutral shade.

The Wood Works If you are interested in a more cabin feel, or even a rustic accent wall, Appalachian Antique Hardwoods (available through Larry Lott Interior) offers beautiful wood pieces from reclaimed barn wood. This will allow you to be a trendsetter, as well as an environmental steward. Each piece is a combination of rustic beauty and traditional craftsmanship, giving your interior project special character with a unique story behind it. Your piecing could travel from around the world with styles in brown, chestnut, gray, mixed and painted barn wood. Â BONUS TIP: It is always best to assume that any painted piece of reclaimed wood is lead based. Be sure to cut off & discard these pieces of wood or coat them in a polyurethane paint to provide a protective barrier for any person or pet they may come in contact.

MAKE A STATEMENT Rather than transforming the direct color and texture of your walls, you can let a statement piece do the work for you! A large piece of artwork, a framed photo wall or stencil design can add that pizazz that will have all of your guests talking. Glass wall art is a hot new trend in home dĂŠcor and a perfect concept for an interior wall statement piece. I was able to see these pieces by Viz Art Glass first hand at Larry Lott Interiors and they were absolutely incredible! They fused creative design with bold colors. The pieces of glass art come in vibrant, fun designs, and are 100% customizable to your taste so you can create your statement pieces to fit the ambiance you desire. Use one or two pieces for a more subtle look, or transform the entire room with a colorful glass art wall.
