WNY Craft Brewers Celebrate Continued Growth – Willard Brooks

As Buffalo Beer Week enters it’s 8th year, Buffalo’s brewery culture approaches it’s bi-centennial after it’s inception in Black Rock at the Webb Brewery in 1825. Over this long beer history Buffalo rose to prominence in brewing and malt making and was famous for it’s many family-friendly German-American beer gardens. In these bygone days, the Buffalo beer scene was a true vertical industry with barrel makers, farmers, equipment manufacturers, architectural firms, and many breweries and malt houses. The most breweries Buffalo has ever had open at the same time was 38 in the late 19th century with a population of about 100,000 – which is 25,000 residents per brewery. Similarly, at this same time on the US national level for about 38 million residents there were 4000 breweries – which is 10,000 people per brewery. Fast forward to 2017 – WNY has 26 breweries – which is about 45,000 people per brewery for about 1.2 million people.

On the national scale there are now an all time high of 5300 craft breweries (60,000 people per brewery) selling 26 million barrels of craft beer against a total beer market (including craft) of 196 million barrels. Furthermore, though no exact numbers are available, it’s often repeated by industry insiders that WNY sells about 725,000 barrels of beer per year. Overall, on both the national and local levels, craft beer is about 12% of the total volume sold. Given the rapid growth in the number of craft breweries of late there is often talk of saturation. Yet, on the level of the number of breweries per population and the size of the WNY beer market, there remains plenty of room to increase market share, especially for our small innovative microbrewers that all make high-quality beer. Buffalo has made lots of beer in the past, drank lots of beer in the past, and sold lots of beer in the past. This is an example of a history we are glad to see repeating 4 itself… one local craft beer at a time! – continued on page 6

The goal of Buffalo Beer Week is to foster knowledge of our brewing heritage and to showcase the innovation and quality of our local breweries and the venues that support them. We are also happy to welcome in and learn from the many wonderful American craft beers from other cities that are on offer during beer week. Local breweries, distributors, good beer bars, many pubs and restaurants have gotten enthusiastically on board for Buffalo Beer Week 2017 – more than ever. And with Buffalo Beer Week 2017 our theme is beer and music – where we celebrate the brews, bands and bars of WNY. This will bring flavorful pints together with melodious reverie. Thanks to the sustained efforts of the local breweries, beer bars, and enthusiasts, the Buffalo craft beer market is growing faster than it has in it’s history. So, come out to one of our festivals, dinners, music shows, tap events, or brewery spotlights. Feast your eyes, taste buds, and ears on the wonderful symphony of sound and flavor on offer for Buffalo Beer Week 2017 – it just gets better every year. Come on out! Prost Buffalo!

Buffalo Beer Week: 10 Days of Music and (Duh) Beer – Brian Campbell By now you should know that Buffalo Beer Week is the perfect opportunity to get out, try someplace new and drink something local, but there are also ample opportunities to catch a great live show while you’re at it because each and every day during Beer Week there will be live music to be found. Music and beer just go together, plain and simple. It’s a scientific fact that music enhances the taste of beer. Take for example the world’s largest ever multi-sensory experiment, in which, by matching the tastings, aromas and flavors to instruments, notes and soundscapes, Charles Spence, a professor of experimental psychology at Oxford University, researched 3,000 people’s reactions to taste, sound and light while drinking a selection of beer. The study found that changes in both color and sound can immediately change taste by nearly 10 percent. So, it’s time to put that theory to the test. Starting on Friday, September 22 at the Buffalo Beer Week Opening Gala at the Adam Mickiewicz Library & Dramatic Circle, an extravaganza fitting of Buffalo Beer Week that will feature fresh local beer and great local bands, all for a $5 donation at the door. Pierogi’s will be served a la carte and Smokers Haven will have a cigar table. After hitting the Ballpark Brew Bash at Coca-Cola Field on Saturday, Sept. 23, make a stop out to Lockhouse Distillery for the Ballpark Brew Bash After Party. There will be local beer specials that last all night long and The Rifts will be performing starting at 8pm, and going until midnight. No cover charge. The following day (Sunday, Sept. 24 for those not paying attention), Pizza Plant Transit will host the Flying Monkeys Canadian Rock Show, featuring, you guessed it, all that Flying Monkeys has to offer on tap while Canadian rock music blares through the speakers. Monday, Sept. 25 brings a rather unique beer and music pairing event in Flights of Fancy at St. Joe’s University Parish. The event features 1000 years of choral masterworks brought into concert with 1000 years of brewing master styles. It will be led by Maestro Daniel Bassin, PhD, Music Director of the Buffalo Master Chorale. 10 – continued on page 12

A Beer & Music Happy Hour at Shango Bistro, featuring farm-to-table tapas, local brews and jazz by trumpeter Daniel Bassin takes place Tuesday, Sept. 26, 5-8pm, and the Twang Gang will be performing live at the Sportsman’s Tavern. The event will feature brews from CB Craft Brewers and Flying Bison with proceeds going to benefit the Sportsman’s Americana Music Foundation. Authentic German music from the Auslanders hits the stage at the Official Oktoberfest Kickoff Party at Schnitzel & Co. on Sept. 27. There will be a three course Oktoberfest menu and beer specials as well. On Sept. 28, live bluegrass from Buffalo Music Hall of Fame members Mark and Chris Panfil featuring Scott and Katie Panfil, along with special guests, comes to Hamburg Brewing. Enjoy folk, acoustic, and eclectic music with a Smoker’s Haven cigar table and fresh Hamburg Brewing beer. Mr. Goodbar will host live music on Friday, Sept. 29 with The Revenge Therapist playing down on the first floor with karaoke upstairs. Buffalo Brewed Rock & Roll Beer Festival goes down on Sept. 30 at the Town Ballroom with The Werks. Buffalo’s only rock and roll beer festival will feature several Buffalo bands paired with a beer selection from all nine local packaging breweries. And finally, on October 1, Buffalo Brewed – Grüvology goes down at the Colored Musicians Club. The event is $10 at the door or free for members and features beers from Two Roads Brewing. The OFest! Harvest March will also take place the same day in the Old First Ward, featuring the tapping and blessing of the ceremonial cask of Oktoberfest, a parade through the streets of the Old First Ward, live music and German food specials all day. Let’s face it – winter is coming. There’s not much time between Buffalo Beer Week and the impending colder months and all that they bring, so use these 10 days to fill your life with music and your pint glass with local malts, barley and hops. We’re lucky to live in a city that offers not only a rich and vibrant music scene but also a booming and bustling beer scene, so the next time you attend a concert, grab an ice cold pint and make a memory.

My husband loves Billy Joel, so we got tickets for his birthday and took in some bootleg Founders KBS and red solo cups. That was nice.”

Best concert/beer pairing: A really memorable recent one is dancing my tookus off to Karen Gwyer and crushing Natty Boh at Pinhook in Durham, North Carolina last summer. Favorite band/favorite beer: Lets say the specific touring edition of the Afghan Whigs that played Styleen’s Rhythm Palace right before Valentines of 1999 and Orval. Not at the same time.

Beer and Wood: A Match Made In History PROUDLY SERVING WNY FOR OVER 100 YEARS!

For hundreds of years, a wooden barrel was the storage and shipping container of choice. Beer for instance, found a home in hand-crafted oak barrels for storage, transport, and dispense. Many breweries throughout Europe used wood for production vessels and found that quality wooden tanks not only functioned well but seemed to result in a terrific finished product. Fast forward to today and breweries throughout the world continue to produce incredibly complex flavors using wooden vessels. The relationship between beer and wood is more complex and interesting than one might imagine, on both historical and scientific fronts. From nails to butter, our ancestors stored and shipped almost everything in barrels until the creation of steel drums, cardboard and plastics. Cooperages operated all over the world for hundreds of years. A highly skilled group of individuals spent their days building barrel after barrel; legend has it you can even trace their lineage to a certain Hangover movie actor. Buffalo itself was home to many cooperages with one of the most prominent being the Forlorn Cooperage on Chicago Street. As a very popular commodity, especially throughout Europe, beer spent many centuries being transported in oak barrels by land and sea. Wood also became the material of choice for beer production including fermenting and aging. First used out of convenience and function, brewers began to realize that wood held the keys to the success of complex, aged, sour beers and this helped inspire their continued use today. Many beer geeks consider the great Lambic breweries such as Cantillon and 3 Fonteinen in Belgium the finish line of one’s journey of discovery into great beer. Rodenbach and other West Flanders breweries have known for a very long time the true power of oak in the production of mixed fermentation beers. One of the secrets to the success of these mixed fermentations (using yeast or bacteria other than the usual Saccharomyces) is that a wooden vessel allows a controlled transfer of oxygen into the aging beer through the wood and between the staves. The right amount of aerobic, oxygen-required, chemical and biological processes take place without the off-flavors that too much oxygen can produce. Historically, the wood also allowed a great home for the “zoo” of yeast and bacteria developed by the likes of Cantillon and Rodenbach to produce an excellent flavor profile. 16 – continued on page 18

The microorganisms could reside in the wood between batches and inoculate batch after batch with their magic combination of acids. Certain strains of the wild yeast Brettanomyces can even metabolize some cells in the wood to produce unique flavors. Finally, the wood itself contributes flavors to the beer, either from its previous contents, typically wine or spirit, or through tannins, caramelization, or phenolics like vanillin. As US craft brewers began scouring the world for the best brewing techniques, the use of oak began making its way back into the craft. Thankfully, American craft breweries began widely experimenting with wood flavors in the 1990’s using previously filled whiskey and bourbon barrels to produce some great barrel-aged stouts. Some even designed their own wood containers with hand-selected, flavor-centric woods including Dogfish Head’s Palo Santo Marron brown ale, aged in large wooden tanks built right here in Buffalo at Arrow Tank Company. Later, pioneers like Vinnie Cilurzo of Russian River Brewing began using oak wine barrels for the long-term aging of mixed fermentation, sour beers with incredible results. Brewers now hold a detailed understanding of the biochemical processes going on in a sour beer Dogfish Head’s Palo Santo Marron barrel and have the availability of raw aging tanks – built in Buffalo, NY materials to make these incredible beers. I had the experience of touring Allagash Brewery and Jester King Brewery this year and trying their best barrel-aged beers was a phenomenal treat. There was something magical about those wild fermented, barrel-aged beers. Maybe it was the idea that those drops of water took a two-year journey to get to my glass, or maybe it was the state of homeostasis; the beer seems to be in at almost zero residual sugar, a low 3.2 pH and a high carbonation. I left both places feeling inspired. My love of beer and brewing is not just about the liquid. It is about the culmination of art, science, and history that collide in any given tulip glass. For me, there is no greater example of this than a great oak-aged beer. It is beer that my ancestors drank, a challenging balance of the wood-derived and/or acidic flavors in addition to the malt, hops, and yeast. For this reason, 42 North will soon be 18 – continued on page 20

launching a barrel-aging facility in a nearby stone basement we are calling “42 Below.” This will allow us to separate our long-term sour projects from the rest of the brewery and grow our barrel program from 16 barrels today to 60, by 2018. We hope to integrate even more local ingredients into these beers through the use of fresh fruits, and we’ll use this basement as our oak and sour flavor lab. Now get out and explore the fringes where beer and wood unite. Step outside your comfort zone, learn about the history and various styles of barrel-aged sour beer, or ask about those whiskey barrels at your closest brewery. Now, personally when I was playing rhythm guitar and singing for blues rock band Stone Voyage, my favorite onstage moment and beer pairing was playing a packed Buffalo Iron Works while drinking a Hayburner from Big Ditch. That was just as Big Ditch was taking off so it was just a cool night all around.”

Music and Beer Pairings to Beat the Band

Other than food, is there any better consumable that one could pair with our favorite adult beverage than music? Food pairings, of course, are ubiquitous and countless tomes have been written on the subject, but to the best of this author’s knowledge there hasn’t really been much in the way of coupling the passion for music with our love of beer. Years ago I was asked by an importer to think of my favorite pairings of specific musical pieces with my favorite beers, which was to be a part of their website. Sadly, it never came to be. The remainder of this piece will be a free-form rekindling of those thoughts, with updates based on how styles have evolved over the decade that has passed since that original request. My first pairing will be a classic one. Belgian Lambic with gypsy jazz. Gypsy jazz was essentially the creation of Django Reinhardt, the Belgian born creator of this “hot guitar” jazz style. With this, there could be no better pairing than Cantllion Gueuze; masterly blended oak-aged Lambics crafted in Brussels. The Hot Club of Buffalo is a local gypsy jazz combo that regularly gigs around town, so if live music is desired, Django will have to take-five for this combo. From here, I move onto a Franco-Belgian style, the Farmhouse Ale or Saison. But I would choose to pair this rustic, highly drinkable beer with North-American folk rock, say Neil Young’s Harvest with Standard from Prairie Artisan Ales (Tulsa, OK). Now that’s a pairing I could be happy with on any desert island. India Pale Ale. IPA. Although English in origin, most of us equate IPA with the USA, having watched it evolve into the iconic American style it is today, right before our eyes. With my cold can of Deep Cut from Buffalo’s own Big Ditch Brewing, I’ll sit on the porch with The Best of Tom Petty blasting on the boombox. Although anything from The Boss would be great here too - with a Woodcock XPA perhaps?

Next up, I’d pair a style that, for this writer, conjures up relaxing at an oceanside cabana with Bob Marley’s reggae on his timeless Exodus. Despite being German in origin, the lightly salted and tart Gose takes me to warmer climes and summer breezes, so 24

When the mood calls for a darker, heavier tunes, the beer I would turn to is an easy choice: Black Metal from Jester King (Austin, TX). This 10% ABV, aggressively hopped dry stout screams out for the classic metal of Black Sabbath. Its barrel-aged cousin Funk Metal could open up this concert pairing with the Red Hot Chili Peppers, that is if Rick James doesn’t show up and demand the stage first! The artwork alone on these bottles will make you want to turn up the stereo! After angering the neighbors with the last set of tunes and beers, it’s time to quiet things down a bit. For me, classical music calls for sophisticated and subtle flavors, and a quality Grisette fills the bill perfectly here. This southern-Belgian “table beer” is best known for being light bodied and low in alcohol, yet filled with a complex mix of flavors. Oxbow Brewing’s (Portland, ME) Grizaca will accompany the masterfully subtle works of Eric Satie here, in a match sent down from the heavens. Saving the best beer for last? Well, perhaps not, but since my favorite beer style is a Flemish Red, extra care (and time) was put into pairing this complex and layered beer. After much consternation and analysis of my large musical catalog, I grudgingly set-aside the prog-rock mastery of Steven Wilson, to choose the complexity John Coltrane’s Giant Steps as the perfect accompaniment to my favorite Oud Bruin ale of all time - Panil Barriquée from Birrificio Torrechiara brewery in northern Italy. The wonderful La Roja from Jolly Pumpkin (Dexter, MI) or Hustler of Culture from our own Thin Man Brewing would easily fit the bill in this pairing as well. Having to conclude this article with the myriad of incredible pairings still dancing through my head is a difficult task. I’d still love to describe how perfectly David Bowie’s Ziggy Stardust would pair with an English Bitter, how wild fermented Brett IPA’s remind me of my favorite Tom Waits records or how a crisp Pilsner is the best beer to have while enjoying some 70’s “yacht -rock” in a post-yardwork quench-session. Now that your proverbial whistle has been whetted, what are some of your favorite music and beer pairings?

Pockets of people who crave the most obscure of things form what anthropologists call ‘subcultures.’ Our little Buffalo beer subculture is new, innovative, and on the cutting edge of trends throughout the world, just as a certain musical subculture was 40 years ago. The following is meant to generate a conversation among the friends you’re with at your favorite venue when you read this. It is encouraged to disagree with this writer. “Successful growing festivals like Buffalo Beer Week and the Buffalo Brewers Festival highlight how strong an impact local craft brewing has on the revitalization of Western New York,” Brooks adds. “The BNBA was formed as a way to showcase Buffalo’s rich beer-making history and to stimulate further interest in the local beer industry from surrounding counties in the region, as well as Rochester and Southern Ontario.” Looking forward to 2018, the 1st Annual Canadian-American Beer Festival, an unprecedented cross border beer festival that will feature never-beforeseen collaborations between Buffalo-Niagara and Ontario breweries, will take place on April 7 and the Buffalo Niagara Brewers Invitational will return on January 18. “The BNBA will be involved in many initiatives this year to expand outreach and raise awareness about the craft brewing industry,” Brooks adds. “We have a very diverse team of talented individuals on our board who are committed to advocating on behalf of the local craft beer industry throughout the Buffalo Niagara region.” Government leaders such as New York State Governor Andrew Cuomo have also recognized the positive impacts of the craft brew industry through initiatives such as “TasteNY.” The Governor and the State Legislature recently passed legislation that supports craft breweries, increases demand for locally grown farm products and expands industry related economic development and tourism. In 1994 I met Bill Krauss, a musician, at one of my favorite Albany watering holes – the Lark Tavern. The Lark was known for putting the best of music and drinks together and Bill was no exception. Soon after I learned of his annual ‘staff party’ and embarked on a 20 year journey of music, friendship and of course… beer. The ‘staff’ were simply friends and family that gathered every year around Thanksgiving to share music, drink beer and make memories. It was a coveted role to be the first to the keg on Friday afternoon. That keg joined us from sing along, to bonfire, from hayrides to the big party Saturday night and even sometimes for some hair of the dog on Sunday AM I don’t even remember what beer it was, but I remember that if we were in fear of running out, folks would put up their own money for a replacements. The kind of beer wasn’t what mattered, what mattered was that beer, like music is always better with friends.

Buffalo Beer Week is the perfect opportunity to take stock of just where we are as a beer scene in Buffalo. Over the past year we have seen the openings of, to name a few, West Shore Brewing, Windy Brew and Riverworks Brewing, with many more in planning, making it that much harder to ignore the elephant in the room. Can the Buffalo beer scene support such rapid growth? Perhaps the real question everyone is afraid to ask, is the craft beer bubble about to burst? Depending on who you ask, the ‘simple’ answer is yes and no. Incoming President of the Buffalo Niagara Brewers Association, Flying Bison Brewing Company owner Tim Herzog, the man many credit with giving Buffalo beer its groove back, thinks it’s as simple as just drinking more local beer. “If Western New Yorkers put down their (insert major international brand here), or latest, coolest rated beer that you can’t find, and pick up locally brewed craft beer, then there is room for more growth,” Herzog says. “If they don’t, there will be a bubble burst. It’s up to consumer preference at this point. The variety of beers brewed and concept of each brewery in Buffalo are among the best around. If you want it; it’s here.”

In terms of local market share, Buffalo is doing just fine when compared to the rest of the country, currently sitting at approximately 12 percent, with over two dozen breweries in operation. Current President of the Buffalo Niagara Brewers Association Willard Brooks says that while things are tight at the moment, Buffalo and its breweries will persevere because people want locally sourced products. “I have not heard one local brewery locally complain about not being able to sell their beer. Are things getting tighter? Yes,” Brooks says. “Buffalo is definitely one of the coolest cities in the nation. It’s an awesome place, but I don’t think we’ve achieved our potential yet. I think all the breweries locally are doing a pretty good job. People want an authentically made product. They want a product where they can 38 – continued on page 40

“I think we still need one of the area’s breweries to become popular enough to drive people to come here,” Kahn says. “Every great craft beer city has one or two breweries that are well known nationally for putting out amazing beer, and I don’t think that any of Buffalo’s breweries have risen to that level yet. But, I’d be surprised if it didn’t happen in the coming years.” Perhaps now more than ever, especially considering the impending opening of a Labatt USA brewery in the Cobblestone District, is the Independent Craft Brewers Seal, a visible and tangible stamp that allows consumers to discern if the beer they are buying is independently produced or not.

Craft breweries offer that.” Big Ditch Brewing President Matt Kahn thinks that it may be up to the breweries to put the beer scene on their back and carry it to the next level, something he says could happen sooner rather than later.

The upside-down beer bottle emblazoned with the words ‘Independent Seal’ symbolizes how the U.S. craft beer movement has literally turned beer on its head worldwide. “Beer lovers really care about who makes their beer,” says Brewer’s Association Director Paul Gatza. “What this provides is a clear message to the beer drinker that this beer comes from a small and independent craft brewer.” Since its release in June, 37% of brewing companies have signed the independent craft brewer seal agreement, with the Brewers Association reporting that over 1,250 brewing companies representing more than 1,500 brewing locations, have signed the agreement, or approximately 50% of U.S. craft brewer volume. “Transparency is paramount,” Julia Herz, Craft Beer Program Director at the Brewers Association, adds. “Beer lovers want to know who is brewing their beer. For many people, beer is more than just what’s in the glass—it is also about the people who brew it and who owns the brewery behind the brands.” Look for the independent craft brewer seal in a variety of places, including on packaging and labels, at events, on tap handles, menus and websites. Kahn himself agrees that Buffalo breweries on the whole are doing a good job, differentiating themselves from each in terms of not only beer but also space and feel. “We have many independent breweries, but each has a very different feel,” he says. “Community Beer Works doesn’t feel anything like Resurgence or Flying Bison, which is wide open and very relaxed, which doesn’t feel anything like Thin Man, or Pearl Street, or us, 40 – continued on page 42

which definitely has more of a food component, or even OFW which is more like a classic pub. Also, each of these breweries brings a different feel to their beers, Resurgence more experimental, Flying Bison more classical, and others sort of in between. So, visiting Buffalo will give beer lovers a very diverse experience - but also a high quality experience, as the beer being made here now is maybe better than it has ever been in its history.” Resurgence Brewing President and Owner Jeff Ware is also in agreement, adding, “Not only do we have a rich brewing history here, we have a new vibrant brewing scene that is actively part of the resurgence of the city. Breweries are breathing life into long dormant neighborhoods across the region. It is a great time to explore the great things going on in these neighborhoods and catch a local pint in each one!”

Regardless of whether or not the bubble is about to burst or not, one thing is for sure – the Buffalo-Niagara beer scene is only set to grow in the coming months and years. Community Beer Works is moving to a larger brewery and has a new Niagara Falls brewpub coming, Jamestown Brewing Company (Jamestown), Hertel Brewing (Buffalo) and Stillhouse Brewery & Distillery (Ellicottville) are currently in planning and a new brewery will soon open in the Barrel Factory in the Old First Ward. SATO Brewpub, who are brewing their own Japanese and Belgian inspired beers in-house with Head Brewer Andrew Hardin, is also now open in the former Soundlab space in the Dun Building. “Buffalo may be considered late to the game by some of the more recognized beer destinations, but we have the Buffalo Brew Pub, the oldest brewpub in New York State, hosted one of the earliest Craft Brewer Conferences in the country and our first homebrewer’s club was founded in 1987,” Herzog adds. “Buffalo has been quietly growing a beer culture for decades. The recent explosion of breweries might seem ‘late to the game,’ but this momentum has been building for some time.”

Homebrewing: A Hole-In One Hobby

About $200 for a starter set of clubs, another $25 for 18 holes at an easier course, 4 hours to play, $20 for beer afterwards, and all you get is a filled-in scorecard to take home. This is a hobby that is easily accepted and even viewed with favor. Think of all the friends you have who golf, or the number of times when being a golfer brought you closer to a colleague or a boss. There may be times when you’ve even lost out on an opportunity because you weren’t a golfer, or even a good-enough golfer. In comparison, I brewed a Belgian Dubbel in my driveway recently which elicited these responses: “You could just buy beer,” “Wouldn’t buying beer be cheaper,” “Do you actually enjoy this?” and “Your wife is pretty cool for putting up with this.” Instead of trying to decipher all the things going on with that last comment, I thought about golf: I love golf. I golfed every day in the summer before my first child was born. Being a teacher, I could get to the course when my wife left for work and spend two months there. People were understandably envious whenever the topic came up. Then my son was born and I golfed 6 times that following summer. Then on my first day of summer vacation the summer after that, my daughter was born; I’ve golfed exactly 1 time per year since then.

With both kids at home over the summer with daddy, my brewing exploded for the same reason I love golf, except this time I could stay home with the kids AND I would have beer to show for my efforts. Homebrewing as a hobby has a very similar buy-in to golf. Instead of clubs and balls, you go to Niagara Tradition or Kegworks and buy a starter kit for about $100, then grab an ingredient kit for about $40 and a turkey fryer from Walmart and you’re set. A round of golf at a midlevel course is similar to the cost of the ingredients for a 5 gallon batch when you buy in bulk. If you’re into science, there’s no end to the amount of information available to you as a brewer, but it’s also easy to step in and just follow directions. Plus, you don’t have to give up the day-drinking, which was always one of the best reasons to golf anyway! 44 – continued on page 46

Like golf, it’s easy to learn and takes a lifetime to master, but unlike golf, you’ll probably have a good result from the first time out, even if it’s not yet comparable to the pros. You’ll be making beer your friends will want to drink. You’ll have entrance to a secret society that isn’t a secret at all, but is outside the knowledge of the average American. That’s why people say they’d “... rather just buy beer.” They don’t realize how easy it is, or maybe they’ve had a beer from a friend who got a Mr. Beer kit and it turned them off to homemade brews. Maybe they think that homebrew makes them gassy because no one explained to them how to pour a bottle-conditioned beer correctly. Don’t worry about the friendship aspect of golf; brewing and drinking are both social activities too. In Western New York, you can join homebrew clubs like The Sultans of Swig, The Niagara Association of Homebrewers or Das Hausbrauers Von Buffalo. You could join enthusiast clubs like the Buffalo Beer Goddesses or the Buffalo Beer League. You could brew alone in your driveway or with 20 other guys and make some barbecue. Wherever there’s beer, there will be friends. Instead of asking your friends which course they’d love to play someday, you could ask what beer they’d love to try, look up a clone recipe, and brew it for them. It will be the same as hitting a hole-in-one: you get the glory and your friends drink for free. It’s one of the greatest joys of homebrewing and the reason why it doesn’t matter that industrial lager “beer” is cheaper than making your own: you can make whatever beer you want. You’re not limited to the selection at the grocery store or even a well-stocked beer store. You’re not even limited to a style. You brew for your own tastes. 12 Gates Coffee Porter - especially served Nitro on draft - is one of my favorite local craft beers because it is simply delicious and so smooth. When I say “coffee porter” to most casual beer drinkers they assume it’s something heavy and rich–but the beauty of this beer is how light and smooth it is, not heavy or cloying at all… supremely drinkable even if you typically aren’t a dark beer fan. I’m pairing this with another local favorite - the band First Ward. Initially the pairing was made for me the first time I saw the band at the 12 Gates Grand Opening Party in June 2016. But they go together well! First Ward is original rock music (which alone makes them distinctive among local bands.) Fronted by Zak Ward, their stuff is very melodic alternative rock - so they have an edge to them but are supremely listenable, memorable – just like my favorite dark beer.

Homebrewer, Sultans of Swig Burt didn’t have to dig too far back into his memory bank for a memorable concert experience. “My best concert beer pairing has to be 311 and a nice flight of various beers I enjoyed from Brewed and Bottled recently,” he says. While he admits his top band and top beer are legendary Canadian rock trio Rush and Ommegang flagship Three Philosophers, if the laws of space and time no longer applied, his dream concert/beer pairing would be “the Beatles in their prime with an English 48 IPA.” Sounds good doesn’t it? We currently have 6 charitable partners: USO, Human Rights Campaign, ACLU, Girls Who Code, and Habitat for Humanity, and the World Wildlife Fund. The only suitable beer would be a “Queen Bohemian Lager” from RnR Brew in the Czech Republic. Having sang after drinking many different kind of beers, I still find myself drawn to pilsners while on stage. But, I always search for something I’ve never had first, then local next. A Vision for WNY: Buy 1 Million Pounds of NYS Malt by 2021 – Willard Brooks New York State was the biggest brewing and malting state in the USA in the late 1800’s and early 20th century. Owing to its strategic location, Buffalo was at the epicenter of the North American malting industry with several million pounds of malt produced annually in Buffalo. Early on grain for Buffalo malt was grown locally – Niagara County was blanketed with barley fields as our climate and soil is conducive to growing grain. Later, grain was shipped in from across the lakes to be malted in Buffalo. After prohibition, the grain and malting industries all but Jason Perkins, Allagash’s Brewmaster, disappeared from chats with Josh Buck of New York State Maine Malt House and Buffalo. Fast forward 100 years to 2013 when Gov. Cuomo signed the Farm Brewery Law causing the rebirth of the NYS malting industry. Since this, the number of acres of malting barley planted across NYS has continued to increase. According to Cornell Cooperative Extension, the greatest single barrier to market growth is uncertainty about market demand. If there is a certain market demand, farmers are willing to devote additional acreage to growing malting barley. Cornell data shows that there is currently sufficient malting barley being grown in the state to meet the 20% NYS malt required by the farm brewery licence. However, to meet expected demand in the coming years NYS must commit significantly larger acreage to growing malt barley. There has been a lot of work undertaken in NYS to position the industry for growth and grain output is now well over 1,000,000 pounds per year. But that is a bare beginning and far short of where NYS once stood and can stand again. Many strategies could work to prime the industry, but what Allagash Brewing Company in Portland Maine is doing for Maine malt is instructive for us here in Buffalo. Allagash has pledged – continued on page 62

that by 2021, Allagash will be buying one million pounds of Maine-grown grain per year. The increase will require a significant adjustment in current grain sourcing. To give perspective, in 2017, Allagash is going to use around 115,000 pounds of Maine-grown grain. In terms of total grain – both local and non-local grain — Allagash expects to use about five million pounds this year. Allagash’s reason for choosing a specific number comes from two main lines of thinking, which their brewmaster Jason Perkins, describes this way. “[Allagash] chose a hard number rather than a percentage [of total grain used] to give farmers a concrete number to shoot for while making sure that we increase our use of local grain no matter how much we grow.” Allagash already uses a great deal of local grain in their beer, but this commitment sends a strong message to farmers which allows them to take the risk of expanding production. The infrastructure for that level is not yet in place. But by Allagash making a concrete pledge to buy 1,000,000 pounds of local malt, Allagash aims to give their farmer partners and growers a solid feeling for future demand so they can invest in the equipment and storage required for a higher yield. Ultimately, this is a choice to invest in partners and friends that are helping to strengthen their own local communities. These small, family farms are bringing economic vitality—and by consequence, people—back to rural Maine. Everybody wins… the farmer, the brewer, the consumer and the whole community. Last fall, Flying Bison Brewing Company and Buffalo Brewpub (New York State’s oldest brewpub) collaborated on a beer to celebrate the Brewpub’s 30th Anniversary. During this collaboration it was realized that Buffalo’s only 2nd generation brewers were working on this project. There are some things in life that belong together - peanut butter and jelly, peanut butter and chocolate, peanut butter and well, anything actually, I guess. Along with George Washington Carver’s infamous spread, beer seems to go together with most things as well. Beer goes with sports, it goes with friends and food, but perhaps the most loving, passionate pairing for everyone’s favorite drink is music. Beer and music are similar in many ways. There are many, varied types of beer, and there are many, varied types of music. People will defend their favorite beer with the same intense doggedness that they will defend their favorite band or genre. Another very important way that beer and music are similar is the way that the two are considered. There is big beer – mass produced, all filler, no flavor. It’s made to be consumed with little thought given to what it is you’re actually drinking. There is also big music; formulaic and lacking substance, tragically shallow and made for thoughtless listening. Pop music may have made a comeback in the new millennium, but a generation ago, pop was the enemy, just like big beer is the enemy now. Entire cultures were built around the idea of independence. Music made for mass consumption was garbage, and only independent labels put out anything of quality. These small labels were limited in their resources – the internet wasn’t even a thing (can you imagine?!) and people did not have immediate access to an entire band’s catalogue. These bands and labels like Sub Pop, Lookout!, Dischord and Epitaph depended upon small distribution chains, constant touring, and word of mouth. Records were recorded to tape and then re-recorded over and over until a song from Berkeley ended up on the shores of Lake Erie, sounding very low-fi and very loud and angry. 66 – continued on page 68

What made an independent label (or a band on an indie label) credible was their ability to stave off the off the offers from major labels. They refused to sell their souls, saying no to the money and staying loyal to the product they produced and to their fans. Indie bands and labels were noted as such because they remained small, choosing honor over growth.

Small beer is experiencing a similar revolution, unsurprisingly led by the same generation that broke the cycle of major label domination and made the world take notice of Offspring’s Smash. These brewers and their DIY startups have the same fire that burned brightly during their formative years. Limited in resources, thanks to big-beer’s evil plot to own ALL THE INGREDIENTS like some weird enslaving overlord, independent beer depends on small distribution chains – in both incoming and outgoing products. Most independent breweries rely, at least in-part, on local farms for ingredients. They forge relationships with regional growers to produce the best, freshest possible products. They are committed to excellence, despite being constantly handcuffed by bigger breweries and the money they throw around. A very wise, very anonymous person once said, “Everyone has their price. God knows I do.” It would be easy for any of these brewers to take the money and run; sell their products to big beer and open up a world of new channels. They would get bigger distribution, bigger recipes, and access to an entire globe of ingredients. Instead, indie beer has recently doubled down on its independence. As mentioned in Brian Campbell’s Buffalo Beer Scene article, the Brewer’s Association has created the Independent Craft Brewer seal. This will become the trademark; a shining beacon that consumers can rely on. Much like the word of mouth and tape-trading of our childhood, this label will certify a brewery’s commitment to using the 68 – continued on page 70

Of course, some choose to take the door on the left. There is an argument to be made for taking the money and making it count – the Green Days of brewing. Sure, it leaves a sour taste in your mouth, like hearing a Clash song on a car commercial. But it doesn’t change the song, does it? A great song is a great song. A great beer is a great beer. If someone is spending a little extra, does it really hurt? Sometimes. Maybe. There is a certain communal nature to the independent spirit. A circling of the wagons as it were and when one steps away from that circle, they are facing the backs of their former friends. It’s easy to see the move as a betrayal, when that was certainly not the intent. There are well-known examples of such in both music and in beer. It’s also commonly thought that selling out to a bigger entity comes at its own price, and no matter what that sacrifice is, it is seen as a piece of your soul by the community you leave behind. There are people who love pop music. There are people who love ‘pop’ beer. There are people who relish in the idea of independent music, and there are people who feel it is important to keep good beer independent. As with everything, there are two sides to the beer/music coin. Whichever side you fall on, one thing is undeniable: those who choose to remain independent deserve a modicum of reverence. It is hard to shrug off comfort and certainty, but the brewers who are committed to independence are committed to uncompromising excellence, in the exact vein of their musical predecessors.

The love the Brits have for cheese seems bested only by beer where they list a jaw dropping 2,000 different brands and many regional styles. Yet, the combination of cheese and beer may appear strange, as that combo seems reserved in the minds of many for wine and cheese. Perhaps, but, on closer examination, the beer and cheese combination makes perfect sense. Farmers grow grasses and grains—cows eat grasses to produce milk that farmers use to make cheese; the same farmer takes the grain from the grasses and makes malt for beer and flour for bread. Given this, doesn’t it seem natural that a farmhouse would make breads, beers, and cheeses? Perhaps wine and cheese is the odd man out!

Another approach is to work either with complementary flavors (e.g. a creamy St. Andre with a Belgian Blonde ale) or with contrasting flavors (a simple-tangy California Teleme with a complex-sweet Chimay Blue). The characteristics of cheeses are firmness, complexity from age, and intensity. The features of beers are hop bitterness, carbonation, fruit, spices, malt sweetness, yeast characteristics and, sometimes funk and tartness. Experimentation is encouraged, surprises are welcomed.

Look for the Seal The Brewers Association, launched a seal for independent craft brewers in summer 2017. The design is an upside beer bottle, which symbolizes how craft beer has essentially turned the beer market on its head. The seal sends a “clear message to the beer drinker” that a beer is made by a small and independent brewer, explains Brewers Association Director Paul Gatza. Look for it on brewery websites, beer packaging, menus and more. That’s how you know you’re buying beer made by an independent craft brewer.
