BUFFALOBEERWEEK Proudly Serving

WNY For Over

85 Years!

Happy Birthday, Buffalo Beer Week!

At a time when local newspapers seem to be running low on new superlatives to describe local beer, Buffalo Beer Week turns 6 years old! Six years ago, WNY had two breweries and three brewpubs – now we have a total of 20 with more on the way. Along the same lines, downtown Buffalo is seeing the addition of many new restaurants, pubs, hotels, and event venues. Buffalo Beer Week itself has experienced roughly 25% growth in the number of participants and attendees year over year. Whether this is a beer bubble or an atavistic moment remains to be seen. What is clear is that the WNY “beer system” -which yesterday included only a couple brewers- now includes farmers, maltsers, dozens of brewers, and scores of distributors, pubs, beer events, and – crucially – a growing number of beer fans from near and far who are keeping the beer system alive and growing. How much has changed in 6 years – and how much it will change in the next 6 years! Who would have guessed that Western New York would be home again to malt houses and hop yards? The impressive heritage of NYS malts and hops (two former Buffalo mayors were maltsters) is one thing. But to see three malt houses and countless hop yards re-open here is a stunning new development. This new small batch artisanal industry, like any, is addressing supply chain challenges as it fields new local malts and hops for local demand. But, given our local heritage of brewing-related agriculture, brewers and drinkers alike are excited to make and drink such truly local indigenous beers. In order to celebrate and support this, we are launching a Farm to Pint Passport Program that allows you to sample about 15 F2P beers in various participating taprooms and pubs . This is a fun way to get out and about, support local farmers and brewers, and win prizes in the process See center spread for more info – and don’t miss our booth at the Brew Bash at the Ballpark. Look for the F2P decal indicating that farm to pint beer is available. As beer week turns six, so does the 6th Annual Ballpark Brew Bash at Coca Cola Field on Sept 26th in downtown Buffalo from 5-8PM. Put on by the Buffalo Bisons and Consumers Beverages, this premier fest supports many worthy causes by fielding beer from 50+ local and global breweries. Join over 4000 beer lovers from WNY and Canada to usher in this year’s 6th Brewbash on the first Saturday of Buffalo Beer Week (tickets available at all Consumer’s Beverages locations, the Buffalo Bisons ticket office, and at Tickets.com). If you miss the bash, don’t miss Pub Crawl Saturday on Saturday October as many local pubs and brewers roll out 6 pub crawls to beer lovers out to celebrate great beer in walkable neighborhoods – a regional beer festival! There is also much that is new this year, but perhaps the most exciting new development is our ability to let our neighbors in Ontario know about what we have on offer. Thanks to the efforts of the Empire State Development Corporation and I Love NY, the Buffalo Niagara Brewers Association (which turns two this year) has been afforded the occasion to do signification outreach to Southern Ontario about Buffalo Beer Week. We welcome you at the Brew Bash and at the whole of beer week. We even have a Vines-and-Bines Beer Dinner on Sept 29th with Toronto beer expert Setephen Beaumont at Oshun restaurant and the Beaumont Beer Blast on September 30 at Pizza Plant (see Stephen’s article inside “Beer With a Sense of Place.”) In addition, look for Canadian craft brews at the Ballpark Brew Bash and local pubs and expect more of those in coming years. With all that is going on this year, we would like to call your attention to our plans for next year (see article on page 24 about our planned festivals and events). In the meantime, we look forward to seeing you out and about at Buffalo Beer Week 2015!

Beer with a Sense of Place

– Stephen Beaumont

BUFFALO BEER WEEK 2015

If there is one romantic attribute wine has always held over beer, it is its undeniable sense of place. As oenologists and aficionados never tire of reminding us, wine is born of the soil, what they call terroir, which encompasses everything from the clay content of the earth to the trade winds that rustle the leaves of the vinestock to the climate of the growing season and even, if you believe the biodynamists, the phase of the moon during harvest.

Beer? Well, beer has barley malt, but a brewer can work with the same stuff whether she is in Atlanta or Alsace, and while hops have a definite terroir of their own – check the differences between Cascade hops grown in Washington state, New Zealand, and northern Argentina if you have any doubt – you needn’t live near the hops to gain access to them. Which leaves us with water, I suppose, except that water profiles can be so easily manipulated these days that so-called “Burtonized” water can bring English Midlands minerality to anywhere in the world. All of which is why I have long maintained that beer’s sense of place resides not in the making, but in the drinking. A kölsch poured from the barrel in the shadow of the Cologne cathedral, for instance, or a sulphurous cask-conditioned pale ale supped in a time-worn pub in Burton-on-Trent, or a one-litre Mass of otherwise unexceptional helles lager enjoyed on a sultry summer day in Munich’s famed Englischer Garten. All these experiences, and many more besides, help connect the drinker to the drink, and definitely further the understanding of the beer. Having spent the last half-decade traveling the world while researching The World Atlas of Beer and two editions of The Pocket Beer Guide, however, I’m beginning to doubt my once-strongly held conviction. With craft beer now having taken hold almost anywhere brewing is permitted by law, and brewers in countries as diverse as Canada and South Korea, Italy and New Zealand, struggling to put their own nationalistic marks on their respective brews, perhaps there is more to beer’s place than I originally thought. The notion first dawned on me about a decade ago in Italy, when craft brewing there was still in its relative infancy. A nation defined far more by its wine than its beer, Italy was breeding brewers interested in working not only with what raw materials they could get on the global market – the country boasts neither an abundance of local barley nor a hop crop of any significance – but also local flavouring agents. Over time, this inclination has led to outstanding Italian ales and lagers flavoured with all manner of spices and herbs, even a salt beer conceived before gose took off as a popular fringe style, and even better beers made using the detritus of the wine industry, from used barrels to left-over grape lees. continued on page 8

What began as an isolated glimmer of a notion turned to a theory when I made visits to Brazil and New Zealand. In the former, the largest craft brewing land in Latin America, brewers had embraced the figurative and literal fruits of the Amazon, from woods typically used in the aging of cachaça, such as the cinnamony amburana, to fruits entirely unfamiliar to North Americans, like jaboticaba and taperebá. Their efforts were tentative at first, and in fact still form a small segment of an only modest market, but have grown bolder and more impressive with each passing year. New Zealanders, meanwhile, have embraced Nelson-grown hops as their global calling card, and despite what you may have tasted in terms of domestic beers juiced with Nelson Sauvin or Motueka hops, are doing it far better than is anyone else. From the refinement of the New Zealand pilsner as pioneered by Richard Emerson of the now-Kirin-owned Emerson’s Brewing to the tropical fruit blast of a Tuatara Aotearoa Pale Ale, Kiwi brewers simply know how to use their own hops better because they have been doing it for longer. Much like Americans have for years been with US-grown Cascades and Centennials and Amarillos.

2nd annual “Tapping of the Pumpkin” Thursday, October 1st

Eventually, I’m convinced, nations the world over will be touting their unique, indigenous approaches to beer. Japanese brewers are already doing it with various varieties of rice and saké yeasts, just as the northern French pioneered the use of chestnuts in beer – later taken up and improved upon by Italian brewers – and Mexicans have been developing the molé-inspired Mexican Imperial stout as their signature style.

Next up? Perhaps the Galaxy hop will lead to a definitive Australian beer, or Thai brewers will embrace various uses of green papaya and lemongrass, or Russian or Polish brewers will find some way to link their efforts with those of the country’s famed vodka producers. Whether one of these or something else entirely, you can be sure that it will draw us that much closer to beer having at last its own undeniable sense of place.

BUFFALOBEERWEEK

Building a Buffalo Beer for the World

– Kevin Wise

How does one go about building a Buffalo beer? By that, I’m referring to the creation of a beer with all Western New York ingredients. I’m referring to a beer that other regions of the world will recognize as an exclusive and unique Buffalo-born beverage filled with heritage and cultivated from the local lands. The ideal Buffalo beer should have a distinct taste profile that cannot be found nor recreated anywhere else in the world. With wine, such a discussion of beverage profile is commonplace. The “terroir” (prounced ter'wär) of wine is defined as: “the complete natural environment in which a particular wine is produced, including factors such as the soil, topography, and climate.” French winemakers developed the concept of terroir by analyzing wines made in different geographical locations. The philosophy of terroir states that wines are inherently a sum of their geographical and human influenced parts, ranging from the mineral composition of the regional soil of to what grape cultivar a winemaker decides to plant. But is the terroir discussion really all that well suited for discussion of beer? Some large breweries take careful measures to insure that their beer tastes exactly the same across multiple brewery locations in different parts of the world. Such a quality control endeavor is, in some ways, “anti-terroir”. So, like wine, is soil the ultimate factor that accounts for wide differences in beer quality? If the goal is to build a Buffalo beer, then the soil and products of the area are important. Brewers must choose four main ingredients, and the selection of these ingredients can be very important in determining the “place” a beer occupies in the beer landscape. Those decisions are: what water to use, what malt to purchase, what hops to choose, and what yeast and/or other organisms to ferment with. Let’s look at each of the four ingredients more closely and examine how a Buffalo beer might be constructed. Water. Certainly water plays an integral role in the brewing, as beer is 90-95% water. There are famous breweries that highlight the attention given to water composition in beer. Mostly notable is the water quality at Burton-on-Trent. Water in this area of England is characterized by a high concentration of sulfates, bicarbonate, and calcium. Hill Farmstead in Vermont is quick to state that water is a key flavor profile ingredient in their beers. Most breweries agree that Lake Erie water can be readily used for brewing, although many breweries filter to remove high levels of chlorine and other undesirable compounds. Some brewers even add salts and buffers back into beer in an attempt to enhance beer quality. Malt. Most breweries order their malt from well-established malt suppliers. However, local maltsters have taken root Western New York in an attempt to rekindle the longlost local art of malting. Robert Johnson of Niagara Malt states that one must become “intimate with your grain”, as factors such as water-sensitivity, pathogen continued on page 12

BUFFALOBEERWEEK continued from page 10

infections, and climate change all play a role in determining the quality of flavor profile of malt. Maltsters might not be able to compete with the low cost of malt obtained from large maltsters from the west, but they certainly can provide uniquely grown malt cultivated in the soil of Western New York. Hops. Perhaps locally grown hops could contribute to a Buffalo beer terroir. Western New York’s fertile and moist lands allow many different hop strains to be grown successfully. The hotter temperatures in Western New York this summer resulted in slightly smaller cone size and hops that aren’t quite as aromatic. The interaction between plants and local fungal pathogens may also influence the flavor profile of hops. But perhaps the artisanal brewer will decide to explore seasonal hop variability when designing a local Buffalo beer. Yeast. The multitude of orchards in Niagara and Erie counties possess great potential for putting a local terroir stamp on Buffalo beer. A coolship approach might be envisioned, whereby wort is allowed to ferment with organisms that happen to find their way into an open-air vessel filled with nascent beer. Such a tactic is already employed by numerous breweries including Allagash Brewing Company in Maine. Placing a coolship downwind of a Niagara county orchard might yield interesting and unexpected flavor profiles as fruit yeast find their way across the landscape. Another possibility is aging beer in barrels obtained from local wineries or new distilleries. So how does a beer capture the Buffalo terroir? The possibilities are endless, but would undoubtedly involve highlighting water, malt and hop crops, and organisms from the region. Locally-sourced beers have already been the focus of numerous festivals, including the popular Farm-to-Pint event. As the maltsters and hop growers continue to learn from and cultivate the land, and as local breweries increase their use of locally grown products, new Buffalo grown beers are bound to emerge.

Kevin Wise has a Ph.D. in Biochemistry and has conducted research on yeast genetics and applies that knowledge to his love of beer. Kevin also maintains his beer blog “Buffalo Beer Biochemist.”

From Grain to Charcuterie and Back Again

– Michael Chelus

How Beer Making Byproducts Feed Western New York Restaurants The much heralded Farm-to-table movement has been bringing locally grown produce and livestock directly to local diners in Western New York for many years. Another movement – or cycle – that delivers the same increased quality in production and involves local farms, restaurants and breweries, has not received the same popularity. In the last few years, several local breweries have been giving their spent grains from brewing to a notable local farm that supplies local restaurants. Talented local chefs then use these products in their cooking and produce dishes that not only taste great, but pair incredibly well with the beer that was made with the spent grain that started the cycle. In exploring this cycle more deeply, we start with the local breweries. Community Beer Works (CBW), Resurgence Brewing Company (RBC) and Big Ditch Brewing Company (BDBC) all give their spent grains to T-Meadow Farm, a Lockport farm that raises antibiotic free heritage breed pigs. The breweries are able to rid themselves of a product that would be wasted otherwise and put it to a good use. T-Meadow Farm gets a product that allows it to produce a better kind of animal that suits the needs of local restaurants and chefs while allowing the animals to be raised in a healthy and humane way. The spent grains are very beneficial for T-Meadow pigs according to owner, Rich Tilyou. The spent grain is “high in protein, and has a little sugar left in it for quick energy. It also has vitamin B,” said Tilyou. This allows his pigs to gain a “nice, firm fat” which is very desirable for chefs and diners. Once they attain the proper weight and fat content, T-Meadow pigs are sold to local restaurants where they are used both respectfully and skillfully. A long time patron and advocate for T-Meadow Farm is Steven Gedra, chef and co-owner of The Black Sheep. Chef Gedra has made a name for himself – both at The Black Sheep and at his former restaurant, Bistro Europa – by using T-Meadow pigs in countless preparations and employing nose to tail cooking that has won him the hearts and stomachs of Western New Yorkers. From the Burro di Chianti made from lard from T-Meadow pigs that accompanies the breads made by his wife, chef and co-owner, Ellen Gedra, to a smoked T-Meadow pork chop that has appeared on The Black Sheep’s menu on several occasions, Chef Gedra’s menu is frequently filled with T-Meadow pork. Another use for T-Meadow pork that Chef Gedra has locally championed is charcuterie or pork that is cured by salting and drying. Chef Gedra’s charcuterie board has changed throughout the years but is held together by one constant – T-Meadow pork. The current

version has meat cured in both the French and Italian traditions and features Capicolla, Lonza and Rillettes. The Capicolla salted and cured for two months. Lonza made from the pork loin displays the work of the spent grain. Both would pair well with That IPA from CBW or Hayburner IPA from BDBC. The Rillettes, prepared like pâte was redolent with pork fat and stock and carried the aromatic flavors of thyme and garlic. This rich paste would pair well with Imperial Red IPA from RBC or The Whale Brown Ale from CBW. The effervescence, malts and hops in the varying styles of beer made with these grains each bring something different to the pairing. It’s not a coincidence that they naturally pair with these dishes and do so wonderfully.

Diners can enjoy equally delicious dishes made from T-Meadow pork prepared by Chef Jeffrey Cooke, Jr., executive chef and co-owner of Osteria 166. Chef Cooke is also quite accomplished with charcuterie and other dishes that are made better by the use of T-Meadow pork. For his charcuterie, Chef Cooke offers Spalla, a cured meat made from the fore shoulder of a T-Meadow pig. Cured for over a year, it has developed a wonderful red color and a deep pork flavor that pairs well with local beers with hop content, like CBW’s Frank American Pale Ale or RBC’s IPA. Chef Cooke’s Culatello is a wonderful homage to its cousin made in Italy which some covet more than Prosciutto di Parma. Its salinity and sweet pork flavor would be a natural pair with Low Bridge Hoppy Golden Ale from BDBC. Another dish in which Chef Cooke uses T-Meadow pork is in his Bolognese sauce. His version, made mostly from T-Meadow pork, was balanced and rich – the perfect accompaniment for properly cooked pasta. When paired with a darker beer like a brown ale, the deep caramelization obtained with the T-Meadow pork is highlighted. The life cycle from spent grain to charcuterie that pairs well with local beer is as viable as farm-to-table cooking. It’s a process where everyone wins from the brewers to the restaurants to the diner. It’s just one more way to support and celebrate all that Western New York has to offer.

Q. A.

What is special to you about the heritage of local beer brewed from locally raised malt, hops, and other locally sourced brewing inputs?

– Bob Johnson,

Niagara Malt

“Hops followed much the same trajectory as malting barley in NYS. In the early 1900’s, New York was the top hops producing region in the US. Finger lakes hops farms had direct access to the railroads that brought hops to New York city’s many breweries. Downey mildew and the prohibition ended that agricultural enterprise. But hops farming is on the rise in New York these days and hops processing facilities as well… farms, infrastructure and demand are rising together to make it a sustainable agricultural industry, with a local flavor.”

Buffalo Beer Bubble Boom

– Erik Wollschlager

If you’ve ever elbowed up to the oak and ordered an IPA, chances are, somewhere, sometime, you’ve had to have the ‘craft beer bubble’ conversation. In fact, I’d bet a good amount of money that you’ve heard the ‘craft beer bubble’ conversation more often than you’ve heard Journey at any of the local watering holes. In the off-instance that you haven’t heard, the craft beer bubble is a mythical creature lurking deep in the shadows of society, waiting to steal your delicious craft beer and replace it with something more ‘Merican… or Canadian… or, well… you get the idea. Basically, the craft beer bubble is a number. No one really knows what this number is, but many, many people are very certain we are approaching it – both on a local and a national basis. This number is the point where the market has become too flooded with craft beer and sales begin to decline, which means a diminished number of craft beer taps per tavern, and in turn, the closing of craft breweries. While craft brewing is still fairly new to Buffalo, whispers of the craft brew bubble have been echoing off of the majestic purple mountains from sea to shining sea. In 2013, economist Bart Watson wrote an article for the American Brewer’s Association, entitled “The Craft Beer (Non) Bubble.” This is a great article, which highlights several important points, and backs each point with statistical data; for example, “Germany has 1,300 breweries, with a heck of a lot less people. If the United States had the same number of breweries per capita (our population is over 3.8x bigger), that would mean 5,000 breweries.” Watson goes on to point out that the bubble is probably more dependent upon average brewery production, but it is clear that in 2013, brewing was still on the rise, and nowhere near approaching its peak. The information provided in this article alone should have been enough to put the topic to rest, however, the craft beer bubble is still out there, forming in the mist and preparing to fill your pint with something-Lite. Locally, we are experiencing quite a boom in craft beer. Our growth as a city seems to parallel this brewing explosion, and writers nationally and internationally would agree. Buffalo has become a destination once again, and few things are written about the city that don’t mention the great brews available locally. Even still, Buffalo is not immune to the glaring eye of the craft beer bubble. Despite the great response of consumers in the region, there is speculation that Western New York is reaching the apex of the craft beer bubble. Matt Kahn, President of Big Ditch Brewery, and all-around good guy, is on a mission to quell the raging fire of fear that fuels the craft beer bubble. Matt was kind enough to take the time to offer his thoughts on the topic over a pint of Citraburner. As a businessman, it is in Matt’s best interest to study these trends and to be able to respond to any negative fluctuation that may occur in the market. His response, in short: He ain’t worried. continued on page 16

BUFFALOBEERWEEK continued from page 20

“Before 2012, there were three breweries in and around Buffalo; Pearl Street, Flying Bison, and Buffalo Brew Pub – this doesn’t include those in the southtowns. Less than five years later, there are nearly 30 breweries, with three or four more set to open soon.” This exponential growth may seem to be pushing toward an inevitable decline, but statistically, the numbers tell a different story. “In comparison, Portland (Oregon) has about double the population of Buffalo, but SEVEN TIMES the number of breweries!” Numbers and statistics are great for predicting trends, but physical evidence is the best proof that Buffalo brewing is not in danger, and Kahn goes on to point out the obvious; “Even with all of these breweries opening, how many have closed? That would be the first indicator that we’re nearing the bubble.”

“In comparison, Portland, Oregon has about double the population of Buffalo, but SEVEN TIMES the number of breweries!”

Matt is confident that there is still a lot of room for growth. Using and idea from the article by Watson, he points out that there are mainly two types of breweries here in Buffalo: brew-pubs and production breweries. Brew-pubs typically brew small batches – enough to stock the taps of their home tavern for their in-house customers, but not really enough to distribute offpremises. The potential for one of these types of establishments is nearly limitless – each neighborhood has a corner bar. If that corner bar turned into a brew-pub, that place already has a customer base. Some of those consumers will try the craft beer, and some of those will enjoy it, and become craft beer consumers themselves. The best defense against the craft beer bubble is not an incantation or a precise ceremony to ward off evil. According to Matt, the answer is simple; “Make beer good enough to attract beer drinkers to Buffalo.” End of discussion.

The Governor and the State Legislature have passed legislation that supports craft breweries, increases demand for locally grown farm products and expands industry related economic development and tourism. The BNBA’s mission is to advocate for the craft brewing industry on behalf of the local industry and supply chain partners in Western New York. “Legislative action such as ‘Taste NY’ further reflects the growing demand and interest in making craft breweries part of New York State’s many tourist attractions,” said BNBA board member Tim Herzog, and general manager of Flying Bison Brewery Company. “Harnessing the opportunity to further develop the industry through the BNBA is key to making this movement an integral part of Buffalo’s evolving economic landscape.” For more information about the Association, including membership, please visit www.BuffaloNiagaraBrewersAssociation.org. Buffalo Beer Culture: Attainable Felicity

– Willard Brooks

A hundred years back, our city had many breweries, countless family-friendly neighborhood taverns, beer gardens, and a rich assortment of public festivals and societies that were frequently accompanied by the consumption of our local lagers. Given that past and this present, it’s tempting to suggest that we’re in the midst of an evolutionary throwback to an ancient form that’s been dormant in our collective DNA. Yet this apparent return to form is certainly not driven by biology but instead by culture—beer culture, to be specific.

Beer culture, you say—what’s that? Academic treatises could be expounded on this. But, in this short space, we’d best convey an example from another city. A few years back we had the pleasure of hosting here in Buffalo a crew of filmmakers from Bamberg, Germany, who were screening their (then) new film described as a “documentary film about the Bamberg beer culture.” The film reviews the history and social life around the brewing domain of the Franconian town of Bamberg located in northern Bavaria. What’s offered therein is a veritable object lesson in beer culture that offers inspiration for anyone who wants to understand their own beer culture. By culture the filmmakers mean to include beer business; brewing-related architecture, trades, history, annual festivals, and parades; local brewing traditions; and the social life surrounding beer in general, especially beer gardens and brewpubs. Bamberg, with many centuries of brewing tradition and more than 50 different beers brewed in town, is indeed a treasure trove of every aspect of beer culture. The film details the full supply chain, including barrelmakers, local barley farms that supply local malt houses that supply local brewers, the oldest brewing equipment manufacturer in the world, and a nearby hops growing region that meets a substantial amount of local and world demand. All of this allows Bamberg’s nine in-town brewers and its roughly 100 surrounding breweries to produce local beer from local malt and hops at the hands of locally trained workers using locally made equipment. As a result, the world flocks to Bamberg to taste and see this UNESCO World Heritage wonder known to many as the “True Capital of Beer.” It might seem at first glance that Buffalo and Bamberg have little in common. On closer examination, though, we can identify many elements from our past and many current trends that allow direct comparisons guided by the Bamberg example. First, Buffalo was once a major center of malting and brewing, with many standing former breweries and malt houses and hundreds of thousands of acres of barley planted annually in and around Western New York. Second, New York State was one of the largest hops growing regions in the world beginning in the 19th century up until around Prohibition. Third, Buffalo was a meaningful contributor to the continued on page 30

brewing equipment business: Indeed, Buffalo’s Arrow Tank Company, which makes barrels and tanks, began in the halcyon days of local brewing and continues today. Buffalo also still has Zahm & Nagel, a brewing equipment company from back in the day that remains at full pressure). It would be anticlimactic if all of this were simply a curiosity of the past. Yet, amazingly, all of this seems poised for a comeback. Last year Governor Andrew Cuomo and his legislative partners were able to pass a new farm brewery license, which makes it possible for brewers who use local ingredients to enjoy some of the same benefits enjoyed by the state’s wine-makers. Critically, the new license embodies the recognition that brewing is as much an agricultural business as it is an industrial business—and furthermore, that what New York State was once, it can be again.

Right on time, our brewing region, with help from the North East Hops Alliance, is seeing the rebirth of the hopyard and the malthouse (see Farm to Pint article in this volume). Given that American craft beer is literally booming nationwide, these are incredibly well timed developments that many believe will place NYS and Buffalo back on top in the course of time. For this author, though, perhaps the most promising development is the return of beer-centered third places that serve the public by offering cozy environments for the enjoyment of social life accompanied by our own New York State- and Buffalo-made craft beer. You might think that Buffalo and Bamberg cannot be compared, as we do not have 500-year-old brewpubs the likes of Schlenkerla, serving up world famous beer (Rauchbier in particular). Yet, we have a raft of one-of-a-kind pure Buffalo places that we all know and love. It’s also astonishing that, we are seeing the return of masterfully executed public places such as Canalside, Larkin Square, Riverworks, and others in planning stages. We are back and brewing! Farm to Pint – A Case for Local Beer

– Scott Russell

Step into a pub or brewery tap room during this year’s Buffalo Beer Week and you’ll likely spy a poster of a friendly farmer inviting you to raise a pint of fresh, cold, locally grown and crafted beer. Our thirsty farmer is heralding the availability of a relative rarity—truly local beer. Indigenous beer. That is, beer not only brewed locally, but crafted entirely with New York state grown grains and hops. The Farm to Pint initiative, or simply F2P, is a pilot program launched by the Buffalo Niagara Brewers Association to raise consumer awareness of the benefits of drinking local as well as the challenges faced by the farmers, maltsters and brewers as they strive to bring us indigenous beer. Both of these goals will be best achieved in the spirit of celebrating our localness with a cold pint and a nod to the farmers, maltsters, brewers and venues that together grow, craft and serve us beer we can enjoy with local pride. You may be surprised to learn that indigenous beers are not very common, and there’s good reason for that. Many factors contribute to the scarcity of F2P beer, chief among them the lack of consistently available local hops and malting barley. I spoke with local maltster Ted Hawley about this. “About 100 years ago, New York State used to be the largest producer of barley, the largest producer of malt, the largest producer of hops in the whole country,” Hawley said. “Some fungus came in and kind of knocked it down a little because of the farming practices and repetitive planting and (the state) never recovered after Prohibition.”

Ted, who with wife Patricia owns New York Craft Malt in Batavia, is part of a small but growing community of hops and grain producers working hard to resurrect the once flourishing industry. They’ve gotten some help from The Farm Brewery Act, enacted in 2012, which provides tax incentives and other benefits to farm breweries i n exchange for their pledge to use New York state grown grain and hops. Farm breweries are currently required to use 20 percent each of grain and hops, with an increase to 60 percent starting in 2018 and finally up to 90 percent in 2024. The legislation is modeled after the hugely successful 1976 Farm Winery Act, which tripled the number of New York wineries. “In addition to producing some of the finest beer in the world, New York’s craft breweries are creating jobs, supporting our state’s farmers and hops growers, as well as bringing in tourism dollars in local communities across New York,” said Governor Andrew Cuomo at the bill’s signing. continued on page 40

BUFFALOBEERWEEK Only a handful of the 20 brewery members of the BNBA are licensed farm breweries—including Hamburg Brewing, Old First Ward, and Rusty Nickel—but BNBA President Willard Brooks thinks these numbers will rise and that there is a need to jump start the local brewery supply chain in order for farm breweries to meet their required quotas. And perhaps more importantly, there’s also a cultural undertone to the F2P initiative. “Local grain and hops is an important part of our brewing heritage,” said Brooks, “Grain fields once blanketed western New York and Buffalo was once a major global player in the malting industry. Two former mayors were in the malting business. As such, this is an atavistic moment wherein we are recapturing our heritage and slowly returning to form. I believe the importance of beers made this way are key to the re-establishment of Buffalo’s true beer culture.” To get the brewers’ perspective, I spoke with Matt Conron, Brewer and Owner at Old First Ward Brewing Company. “It’s not only about using local farmers’, maltsters’ and hops growers’ products, but we’re evolving with them and working together to perfect the craft.”

New York Craft Malt & NY State Farmers

Together, We Grow Beer!

Support for the F2P initiative has been encouraging with 14 BNBA member brewers offering an F2P beer. Some breweries like Resurgence always have an F2P beer available in their taproom, while others including Big Ditch are planning year-round offerings. All F2P beers will be available at the producing breweries while most will be available at the Ballpark Brew Bash event and a few will be offered at venues strategically located to make it easier for consumers to sample F2P’s from the geographically more isolated breweries. An F2P Passport contest encourages beer lovers to sample as many F2P’s as they can and earn a stamp for each one. Prizes are awarded based on how many breweries and participating venues are visited. Thirsty consumers should be prepared to pay a bit more for F2P pints than their nonnative counterparts because of supply-side economics too complex for this article—but nonetheless an issue the BNBA sees Farm to Pint helping to solve with future statewide support and implementation.
