Buffalo Beer Week is turning 10. Flashing back to 2010, Buffalo’s brewing scene was in its infancy. With only three operating breweries in Buffalo, this was a time before Hayburner, Sponge Candy Stout, Borderland, or any of the other hundreds of local beers that make up a craft-beer lover’s Untappd check-ins list. And just like an infant, once the local brewing scene got its feet firmly planted, it was off to the races from there. Over the past ten years, Western New York has added three dozen more breweries to its ranks. From production breweries, farm breweries, nano breweries, crowd-sourced breweries, and of course, meaderies and cideries, the selection is at an all-time high. Gone are the days of hoping for a craft beer or two on tap at your favorite restaurants or corner neighborhood dive; nowadays you can pretty much guarantee a selection of high-quality local beers at every selfrespecting venue. You can find them in bars, bowling alleys, beer stores, gas stations, grocery stores, and in your favorite brother-in-law’s beer fridge. It’s truly a good time to be a beer drinker in Buffalo. Each year for the past ten years, Buffalo Beer Week has come along to help illuminate the rich and inviting world of craft beer for every Western New Yorker. Focusing on food pairings, music, inclusion, and education, Buffalo Beer Week has always been about focusing on the positives in the local beer community. This year is no different.

The 10th anniversary of Buffalo Beer Week brings with it all of the usual trappings you’d expect. And this book is filled with over a hundred events and locations to help you get the most out of all ten days. In the subsequent pages, you’ll find vital information, comprehensive articles, and essential spotlights designed to help introduce you to some local beer faces you may run into. It’s a version of the type of IPA that Buffalo breweries have been perfecting for years. Not quite a West Coast IPA and not quite a New England IPA, Buffalo IPAs are juicy and refreshing while still providing some resinous hop flavor and bitterness. You won’t find these celebration beers in stores; they’re pilot-sized and extremely limited. When the kegs kick, they’re gone. The Next Ten Years of Beer

As Buffalo Beer Week enters its 10th year, Buffalo’s brewery culture approaches its bicentennial after its inception in Black Rock at the Webb Brewery in 1825. Over this long beer history, Buffalo rose to prominence in brewing and malt making and was famous for its many small family-friendly German-American beer gardens. In these bygone days, the Buffalo beer scene was a true vertical industry with barrel makers, farmers, equipment manufacturers, architectural firms, and many breweries and malt houses. The most breweries Buffalo has ever had open at the same time was 38 in the late 19th century with a population of about 100,000 – which is 2,500 residents per brewery. Similarly, at this same time on the US national level for about 38 million residents there were 4000 breweries – which is 10,000 people per brewery. Fast forward to 2019 – Western New York has about 38 breweries again – which is about 32,000 people per brewery for about 1.2 million people. As a point of reference, Portland, Oregon, which is widely cited as having the largest number of breweries per capita in the US, had 112 breweries in 2018 for 2.7M metro area residents - which nets out to 25,000 people per brewery. On the national scale there are now an all-time high of 7,500 craft breweries (50,000 people per brewery) selling 26 million barrels of craft beer against a total beer market (including craft) of 194 million barrels. Furthermore, though no exact numbers are available, it’s often repeated by industry insiders that WNY sells about 725,000 barrels of beer per year of which local craft is often estimated to be lower than 10%. On the national level, according to the Brewer’s Association, craft beer is about 13% of the total volume sold. As the number of craft breweries grows, there is often talk of saturation. Yet, on the level of the number of breweries per population, and the size of the WNY beer market, there still appears to be room to increase market share in order to catch up to the national average (13%).

That being said, the US craft beer market is clearly changing. The Brewers Association reported this year that year-over-year growth dropped to 4% in 2018, a decline of 1% from 2017 and the lowest growth rate in the last ten years. These numbers reflect what we are seeing anecdotally in Buffalo; that brewers are focusing on local markets and direct taproom sales rather than on higher-cost, lower-profit 8 – continued on page 10

distribution networks far from home. These numbers are reflected by the fact that of the 7,500 US craft breweries, 35% are brewpubs, 62% are microbreweries (up to 15,000 bbl/yr), and 3% are regional breweries (15k to 6M per year). In terms of volume per brewery, about 75% of American craft breweries produce less than 1,000 bbl per year with the average size of brewery in 2019 being 400 bbl/year. Furthermore, growth in this 400 bbl/ year sector has been flat which implies that the overall industry growth is coming more from new breweries opening than expansion of existing ones. Overall, this represents a big change from how breweries operated ten years ago and this is reflected in the way Buffalo Beer Week works. A decade ago, only five breweries were operating: Flying Bison, Ellicottville Brewing, Southern Tier and Pearl Street. Buffalo saw the rise of the beer geek culture and Beer Week events in the early days emphasized beer bars and events around craft beer from breweries outside of the region. Now, with 38 local breweries, Beer Week has taken a strong focus on local beer at local bars, Beer Week public festivals (like the Opening Gala, Ballpark Brewbash, and Borderland), and events & beer releases at taprooms. The goal overall is to build depth close to home in order to raise awareness among loyal locals and interested travelers. The role of the Buffalo Niagara Brewers Association is to aid local breweries and craft beer businesses in building awareness among locals and tourists by hosting events like Buffalo Beer Week and four additional festivals (Brewers Invitational, 4th year, Farm to Pint, 7th year, Buffalo Brewers Festival, 7th year, Canadian American Beer Festival, inaugural). The Association would like to support the growth of local breweries and remain strong by growing the local enthusiast base through the efforts of its enthusiast club, the Buffalo Beer League. In ten years, it is expected that every neighborhood in WNY will have its own small brewery making fresh flavor forward beer. Our festivals and Beer Week will grow and attract many tourists from nearby metros such as Rochester, Pittsburgh, Cleveland and Toronto. A few local breweries will achieve fame on the national level. A few others will become regional status. Some may close or be purchased by larger breweries. The Buffalo Beer League will have thousands of loyal members. Buffalo will be a recognized destination for craft beer. We may win the Super Bowl and the Stanley Cup and drink a beer or two to celebrate. Sit back. Pop open a cold one from your favorite local brewery. Turn on the Bills game. Enjoy the ride. The next ten years is on its way.

Online trade groups have brought once limited local releases to broader audiences. Facebook groups like Buffalo Beer Geeks seem to have risen above the wave of negativity that once threatened it. Ten years ago, Buffalo had zero chance of ever being the host city for an event like Shelton Brothers: The Festival. So the emergence of local breweries, beer stores and the general fervor for craft beer locally has really put WNY on 12 the craft beer map.”
Celebrate Buffalo Beer Week with Scott a Freshly Brewed Buffalo IPA –Panfil Go to a craft-beer bar. Find a guy with a beard. Strike up a conversation about IPAs. Here’s the trick: call it an “Indian Pale Ale” and wait for the “Well, actually…” He’ll probably tell you that it’s actually an “India Pale Ale” and it was brewed with excessive hops to survive the trip to British Colonial India. You see, the British beer at the time would spoil over the long, hot voyage and only the new highly-hopped IPA could survive to quench the thirst of the British Soldiers there. Upon returning to Britain, they demanded more of the beer they had fallen in love with while in the service. He would be, of course, be wrong… or at least mostly wrong. Pick up a copy of Joshua Bernstein’s book “Complete IPA: The Guide To Your Favorite Craft Beer” for a quick version of the actual history, or even better, Mitch Steele’s book “IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale” for a more in-depth look at the evolution of the IPA. No matter what the source material though, you’ll find it lacks the newest forms of IPAs, even though some are already being included in BJCP competitions as a separate category. (See Clint Perez’s BJCP article for more information about style guidelines). That’s because IPAs make up a substantial amount of the growth of craft-beer and brewers are constantly trying to differentiate their beers in an increasingly-crowded marketplace. Within the past two years, we’ve seen the rise of heavily-fruited IPAs, New England IPAs, Glitter IPAs, Brüt IPAs, Milkshake IPAs, and more. This year, the brewers of Buffalo are formally introducing what is known as a “Buffalo IPA.” Even with the wide array of IPA styles, you’ll recognize the Buffalo IPA as something unique. It’s the reason that local IPAs tend to resemble other styles, but fail to fall squarely into a single classification. They tend to borrow from the clear, bitter, citrus and pine flavored West Coast IPAs and from the hazy, soft, fruity flavored New England IPAs to blend something that tends to be slightly hazy, with strong hop aroma and flavors of tropical fruits, citrus, and piney or dank resins. In short, it’s a “juicy” IPA with some bite to it. Many Buffalo breweries already have a beer that matches this style in their standard rotation, and the number of taps at local restaurants that feature local IPAs proves their popularity. – continued on page 16

To celebrate the 10th Anniversary of Buffalo Beer Week, a handful of breweries have collaborated to brew a “Buffalo IPA” specifically for Beer Week. Each will be known by a different name, but each can be ordered as a “Celebration Beer.” Using a similar agreedupon recipe and mostly New York State ingredients, each participating brewery will have a pilot-sized batch in their taprooms throughout Beer Week. A pilot-sized batch will vary in size depending on the pilot-system each brewery is using, but you can be assured that quantities will be limited, and when they’re gone, they’re gone. Find the “Celebration Beer” at the taprooms of the breweries below and make sure to check it in on your favorite apps. Embrace the “Buffalo IPA” as a style when sharing your favorite beers with out-of-towners. We wear it with pride. Farm To Pint and Table Dinner 100 Acres @ Hotel Henry – Clint Perez The Hotel Henry is a true Buffalo historical landmark. This year for Buffalo Beer Week, the Buffalo Niagara Brewers Association is partnering with the Hotel Henry’s 100 Acres Restaurant to produce a special Farm-to-Pint-AndTable Dinner celebrating Western New York’s rich tradition of agriculture and craft brewing. “We have a long history of Farm-to-Table here at Hotel Henry,” said Kristie Pottle, Hotel Henry’s Director of Events. “Going back to the earliest days, we’ve had our own garden and served those vegetables in the facility. We carry on that tradition today with a Farm-to-Table menu featuring fresh vegetables from our garden.”
Courses include Intoduction to Brewing/ Distilling, Sensory Evaluation of Beer, Science of Brewing/Distilling, Food & Beverage Sevices and Sanitation, and Brewing/Distilling Internship… all designed to prepare students for eve employment in the ever-expanding industries of brewing and distillation. Students obtain hands-on experience with the Blichmann TopTier Modular Brewing System – the gold standard for equipment in the industry. And courses take place in Trocaire’s state-of-the-art brewing laboratory at our convenient location in Williamsville.
The dinner will feature craft beers and cider from four area breweries and cideries. Each beverage will be paired with a dish specially crafted by Hotel Henry’s chefs to accentuate both the beer and food. “We’ve done several beer dinners, but this will be the first in which we are able to bring in multiple breweries and share the breadth of what our craft brewing scene has to offer,” said Pottle. Participating breweries represent both the old and new in the Buffalo brewing scene. Thin Man Brewery, Froth Brewing, 42 North Brewing and Blackbird Cider Works will feature their beers and ciders. “We’re really excited to be partnering with the Hotel Henry,” said Willard Brooks, founder and former President of the BNBA. “This event brings together two great icons in Western New York and Hotel Henry is the perfect partner for us.” The event will take place Monday, September 16 from 6:00 - 8:00pm. 10 Truths & Tips If You’re Thinking of Starting Homebrewing – Scott Panfil Do you brew beer? If you don’t, I’ll bet you know someone who does. I had my first taste of homebrew about 10 years ago and had the same thought many of us had: this isn’t as good as the stuff I can buy. It was because the person who made it had just started brewing. A handful of my friends started about 10 years ago, three years before I did. Since then, the amount of information and help available about brewing has exploded. New brewers don’t have to spend a year making bad beers through trial and error. Some still do of course, but it’s not for lack of information. You can get brewing help from books, podcasts, YouTube, blogs, or from experienced brewers themselves. Whenever possible, you should be talking to other homebrewers and tasting beer. If a beer really “wows” you, figure out what you like about it and ask them how they did it. Do the same for beers you don’t like, or those that have an off-flavor. Most homebrewers would love to talk shop about one of their beers. Where do you find other homebrewers? That’s the easy part. We have multiple homebrew shops in Western New York with knowledgeable owners and staff. Start there. When you go in to buy a kit, some ingredients, and some hardware, strike up a conversation. Ask questions like: “I’m brewing a hefeweizen, what do you suggest?” You’ll get useful advice from people who have brewed for themselves and have talked to thousands of others who have done the same. All of the local homebrew stores have been around for decades and can pass that experience to you. Just like anything else, you can look at those people who started 10 years ago and think “Why start now? I’ll never catch up. I’ve waited too long to start.” Or, you could imagine where you would be ten years from now. If you still think you’ll be DRINKING beer, do yourself a favor and start making it yourself. In the interest of starting, and to celebrate Buffalo Beer Week’s 10th year, I’ve spoken to many experienced homebrewers and will share with you this list of 10 truths and tips to get you going: – continued on page 24

10. Brewing beer is NOT always cheaper than buying it. An individual batch can be very inexpensive if you buy in bulk and don’t count equipment costs, but expect to pay similar amounts for a good homebrewed beer compared to a good craft beer. 9. It’s addictive. Talking about those equipment costs, very few homebrewers I know stay with their first system. They’re always trying to upgrade some portion of their system to create better or more consistent beer.

8. Homebrew upsets your stomach. I’ve heard this since I started, and if you’re swigging down the yeast at the bottom of a bottle-conditioned homebrew, you may pay for it afterwards, but it’s not a rule. It’s very easily avoided. 7. There are so many great beers out there, it’s not worth making it anymore. I suppose it’s up to you, but I enjoy brewing beer that I couldn’t get here, or couldn’t get fresh. A homebrewed traditional German style beer will be better than the export version that eventually makes its way across the ocean. 6. Your first homebrews will be slightly disappointing. It’s awesome to drink your first homebrew, but you’ll immediately start thinking about what you can do better. It’s part of the process. 5. Control your temperatures. If you upgrade anything on your system, start with fermentation temperature. Anything you can do to keep it constant or controlled is a step in the right direction. 4. It’s a deep well. There is so much to learn and so many sources from which to learn, that you’ll never run dry of reading or listening material. 3. There are best practices, but endless ways to make beer. You can get fancy or you can keep it simple. Stove-top extract beers can be just as good as commercial beers with a little knowledge. There is no reason to go big. You can fit this hobby to whatever lifestyle you want to live. 2. Clean and Sanitize. This is the best tip for beginners. Clean everything often. Sanitize before use. Many off-flavors can be prevented by good cleaning practices. 1. Get started. You improve by doing. You must get started to get better. Keep it simple, talk to other brewers, and start enjoying this rewarding hobby. It’s just as rewarding as any other hobby, except you end up with beer at the end! Cheers!

I was a relative craft beer “greenhorn,” lucky enough to find myself on a beer trip of a lifetime… without enough knowledge to even know it was happening. But that would quickly change as the unfettered access and beer VIP introductions quickly snapped me into the reality that I should perhaps not drink so much of the free beer constantly being offered, keep my wits about me and pay attention to what was going on!

This was a “working vacation” and my first time in Europe. I was traveling with Dan and Will Shelton of the highly respected (albeit confrontational) Shelton Brothers Importers as a photographic assistant. I was doing quite a bit of graphic design for the company by then, so Dan and Will thought that it would help if I had some first hand knowledge of the interworkings of their business and meet some of the brewery owners that I was interacting with. Although I had to pay my own way, who would say no to that? Despite having VIP access to breweries such as Kulmbacher, Spezial and Mahr’s in Germany, Thellier and Au Baron in France, plus a host of others in Belgium, my true epiphany didn’t arrive until waiting in line at Cantillon’s “Open Brew Day” to witness the koelship in action. As I stood gingerly on the attic wooden steps, wondering just what photographing spontaneous fermentation might entail, I turned around to see Sam Calagione (Dogfishhead founder) and Vinnie Cilurzo (Russian River founder) conversing in line behind me.

Perhaps it was the legendary Pajottenland wild yeast in the air, or Sam and Vinnie’s words of just how awe-inspiring the scene was, but the thought that I was in a rarefied time and space had started its fermentation. Quickly! (there’s also the story of me prompting Sam with the idea for a group of us to pick up and move a car that was blocking our bus from leaving “Grote Dorst” lambic festival - but ask me about that one in person) My craft beer indoctrination continued in the USA as well. The next year, while volunteering for the Shelton’s at Ommegang’s “Belgium Comes to Cooperstown” Festival, I witnessed first hand just how far the importers had to go on their “in order for us to be successful, education is everything” quest. To serve everyone in line, we had to rapidly uncork Cantillon gueuze bottles and pour away at the 26 – continued on page 28

outstretched arms. Despite knowing that there was Cantillon “aging” on the shelves of Premier Gourmet back home, I was still shocked to witness at least 25% of those in line spilling out their samples! “This beer is bad/ infected/awful” they would yelp while quickly overturning their glass. Now that I had the knowledge (and Lambic appreciation) - I was infuriated to see this happen at a BELGIAN beer festival. Certainly it would take decades for Americans (Western New Yorkers) to embrace these beers.

Fast forward just a few years and Blue Monk opens in our city. The game changer (with major props to Pizza Plant for preparing the field). I finally had a place to enjoy the beers I had to struggle mightily to obtain and hopes were raised, but just because the amazing portfolio of the Shelton’s was on the chalkboard, didn’t mean they would sell. Bottles would still gather shelf dust and glasses would still pour into drains, right? Well, we happily know the answer to that question. Curiosities were quelled, knowledge was gained, sixtels were emptied, apps were loaded, palette’s expanded, bottle shops opened, Zwanze Days obtained and breweries would pop up like flowers on a spring day… and those Cantillon gems would never be seen sitting on a shelf again. At this point (despite slowing imported craft beer sales) The Shelton Festival was well on it’s way to becoming the best traveling beer fest in the country - if not the world. Myself, along with other local fanatics, would travel to other cities to enjoy the vast wealth of world-class beer. But this amazing event could never, ever come to our city of good neighbors, right? In just over a decade (okay, more like 15 years) I’ve watched this incredible transformation happen. I couldn’t be happier or more proud that “we” right in here in the City of Good Neighbors, have The Shelton Fest in 2019 (October 4 & 5th, Central Terminal) and that ticket sales were faster than for any of their previous events. If attending The Festival, try to expand your beer horizon and sample from breweries you may not of heard of. Try different styles and expand your palate. “For Beer Week, I imagine the talks started after seeing ads for other Beer Weeks popping up in the Great Lakes Brewing News with Philly being the main one. Dan Syracuse, Bill Metzger, Willard Brooks & myself started talking about establishing a Buffalo Beer Week and a Buffalo Beer Hall of Fame. This was at a time where the only local breweries in the city were Flying Bison Brewing and Pearl Street Brewery. So most of the on premise craft beer drinking occurred at the likes of Coles, Pizza Plant, Mister Goodbar & Alternative Brews. And at the time there weren’t many people promoting beer in Buffalo, so Mike [Shatzel], Dan [Syracuse], Bobby [Rabb] from Mr. Goodbar and myself decided to do something to better promote the beer being made here in Buffalo. At the time, I was publishing newspapers on beer and those guys were running craft beer bars, so the few of us started Buffalo Beer Week. Within a couple of years a lot of people signed on and it really got really big, as did the entire craft side of the industry. When we started back then, there weren’t that many craft beer places, but it was the idea of building upon the movement of pushing beer to where it is today, promoting it and focusing on quality and small businesses. Anchor Brewing had a sign in their taproom that said “Don’t Say Beer Say Buffalo.” Turns out the biggest brewer of Steam Beer was called Buffalo Brewing Company and was founded by Hernan Grau from Buffalo, who was the son-in-law of Alfred Ziegele, who started the Phoenix Brewing Company.”

I started Buffalo Beer Geeks, which now has 5000 members. I also started thinking about an association capable of managing the growth of Buffalo Beer Week. After some thought and study of beer weeks like Philly and San Francisco, we came to the conclusion that what we needed was a brewers association - the thinking being that great beer cities have great breweries. “After tossing around the idea of celebrating all things BEER, Mike Shatzel, Bill Metzger and I convened in a booth at the Walker Plaza Pizza Plant in early 2010 to discuss ideas. At this time, the Buffalo area’s beer scene was mostly at bars, so like other Beer Weeks nationally, we knew the venues just needed to host unique beer related events, which is of course, much easier said than done. We talked about creating a logo, which should definitely include local ties, and Mike described how we should make it like a nickel with a beer-filled buffalo. Next, we needed an online presence. Bill had the web platform with the Brewing News, so I registered the name “BuffaloBeerWeek.com,” and his staff created our first website, complete with the ability to upload events and display ads. Craft Beer Gets High Marks as Brewers Association Releases – Brian Campbell Growth Report The Brewers Association has released their annual craft beer industry growth report, which craft beer passed with flying colors thanks to 4 percent total growth. The report states that, in 2018, craft brewers produced 25.9 million barrels, increasing craft beer’s market share by volume to 13.2 percent. That marks a 0.6 percent increase over 2017, and a 1.1 percent increase over 2016.

Furthermore, the growth report states that retail dollar value, estimated at $27.6 billion, represents 24.1 percent market share and a 7 percent growth over 2017, despite the overall beer market dropping 1 percent by volume in 2018.

However, perhaps the most important metric was that craft brewers provided more than 150,000 jobs nationwide, an increase of 11 percent over 2017. 7,346 craft breweries operated in 2018, including 4,521 microbreweries, 2,594 brewpubs, and 231 regional craft breweries, with only 219 brewery closings over the past year as compared to 1,049 openings.

Some examples are the “Brewers Association,” the Bay Area Brewers Guild, the California Craft Brewers Association, the San Diego Brewers Guild, the Michigan Brewers Guild, the Vermont Brewers Association, the New York State Brewers Association, and the Buffalo Niagara Brewers Association. It is the assumption of the author that many every day beer drinkers have heard of these groups but are unclear on who they are, who they represent, what they do, and why they even exist. Fortunately, it is simple to untangle. Simply put, Brewers Associations are 501.c.6 trade associations that operate on either federal, state, or the local level to advocate for craft brewers on each of these levels. Let’s look at each level in turn. National Brewers Associations This level contains a single national association called the “Brewers Association,” which was established in 2005, through a merger of the “Association of Brewers” and the “Brewers’ Association of America” to “promote and protect small and independent American brewers, their craft beers and the community of brewing enthusiasts.” Two of the largest programs supported by the BA are the American Homebrewers Association which was founded in 1978, the annual Great American Beer Festival (GABF) founded in 1981. Other events the BA puts on are the Savor beer and food event, the World Beer Cup international competition, and the Craft Brewers Conference annual trade show for member craft brewers. The BA has 5,240 US brewery members and 46,000 members of the American Homebrewers Association along with allied trade, beer wholesalers, retailers, individuals, associate members and BA staff. The work of the Brewers Association includes: Government Advocacy (especially in Washington, DC around taxes), Best Practices, Community Building, Supply Chain Support, Marketing, and Brewer Education. 50 – continued on page 52

State Brewers Associations State brewers guilds and associations are nonprofit trade organizations formed to provide an effective, united voice for protecting and promoting the interests of brewers in a given state or region. All 50 states have some form of brewer’s guild. Many are highly organized with executive directors and support staff. State associations are at the forefront of the effort to raise up, put into action, defend, and keep in place beer policies at the state level. In NYS, the relevant organization is the NYS Brewers Association founded by Tim Herzog of Flying Bison Brewing Company and Dave Katleski of Empire Brewing Company. The NYS Association, currently led by Executive Director Paul Leone, has won many legislative victories since its inception that have helped maintain the growth of the craft beer industry in NYS. The NYSBA also puts on several key beer events around the state - including collaborating with the Buffalo Niagara Brewers Association on its annual festival, the Buffalo Brewers Festival at Canalside this past June. New York has approximately 400 breweries and the NYSBA has about 250 members. Local Brewers Associations Local brewers associations operate at the level of the region or the municipality. Well known examples of local brewers associations are the San Francisco Brewers Guild, the San Diego Brewers Guild, and the New York City Brewers Guild. Most of these groups are less than ten years old and coincide with the expansion over the past ten years in the number of breweries in the US, which has given rise to promotional needs of a more granular nature than what state or national associations can offer easily. Many of the local brewers associations have a few annual events that anchor their activities, such as a large annual festival or a beer week. The mission of local associations tends to be more simplified as compared to State and National associations. The reason for this is that the relevant laws that govern craft breweries exist principally at the state and federal levels and much less so on the local level. However, the preponderance of breweries in the US has given rise for the need for local associations to market local breweries to residents and 52 tourists. – continued on page 54

Never Fear… More Breweries – Eric Wollschlager Are On The Way! In 2015, the Buffalo Niagara Brewer’s Association published an editorial criticism of the idea of a Craft Beer Bubble in Western New York. With helpful commentary from Big Ditch Brewing Company’s Matt Kahn, the conclusion was that there was plenty of room for growth in Buffalo, and statistically, we hadn’t even approached the peak number of facilities. Fast forward three years, and Matt’s predictions appear to have been true. Not only has the number of regional breweries grown since that fateful interview, the quality of beer has increased as well, with many local favorites boasting award-winning brews. As Buffalo Beer Week kicks off the final quarter of 2019, there seems to be no stopping the growth of the craft beer market in the area. No fewer than 35 breweries and cideries exist, with seven more coming soon, and another two known breweries still in the planning stages.

In Williamsville, a new brewery will be joining the ranks of some of the region’s best-known pubs. In their own words, BriteSmith Bewing takes its name from the subset of Blacksmiths known as “Brite Smiths”. Just as the “Brite Smiths” specialized in tin and pewter to perfect the shine and finish of metals, BriteSmith Brewing specializes in delivering perfectly polished pints. And while there are nods to the past throughout the brewery from the towering stainless-steel “Brite” tanks above the bar to the wood-fired Neopolitan pizza, BriteSmith is crafting the perfect brewpub experience. One-Eyed Cat Brewing has spent 2019 getting their beer out to the masses. They have participated in several events in the Buffalo area, which has garnered them a bit of a following. Their oatmeal stout and BIPA have received solid reviews from the brewing community, and a few of their other offerings have begun to generate a buzz. Steel-Leaf Brewing is working hard to get ready to open. In July and August, the brewery debuted images of some very sharp packaging and a gorgeous amber. They also commented that their plan for an Allentown location has fallen through, so they are looking for a facility at the time this is written. It’s also been a year for expansion for some existing Buffalo breweries. Ellicottville’s Steelbound Brewing is opening a second location in Springville, five minutes from the end exit of the 219. 3 Sons Brewery in Dania Beach Florida along with Willard Brooks are opening a new beer hub called the Iron Belt Collective. Iron Belt will house multiple brewers from around the country (and the world) - including a 3 Sons Brewery - and it’s own house brand Iron Belt Brewing. Their plan is to introduce new brands to the area but also to enable collective brewers to access the American northeast market. Iron Belt will be in the former Keystone Manufacturing industrial building at 41 Chandler Street and expects to open in the summer of 2020. Grace & Abe’s Brewpub recently opened in Westfield, NY, brewing under the moniker of Abes Ales with help from 7 Sins Brewery in nearby Ripley, NY. This new brewery is Wesfield’s second, in addition to Five & Twenty Brewing. In the Mix Brewing & Creamery, recently opened in the old Barker Brewing space in the town of the same name. They are an incredibly unique business that uses their house-made craft beers (available on their own) to make adult, alcholic frozen custard - the first such “creamery” in NY State to do so! South and east of the city, our friends at 42 North have been developing their property to expand to a space that will add additional storage and production, as well as 4 Air B’n’B rooms to their fullservice facility. It will be the first of its kind in the area, and will certainly help to drive beer geek tourism, adding to the local economy. Orchard Park could be seeing it’s first brewery soon, with the addition of First Line Brewing - a brewery centering on the promotion and support of first responders. They are currently in the Kickstarter stage, but a location has been chosen. Also branching out is Thin Man Brewery, who is celebrating successful summers at their initial Elmwood Avenue and second Chandler Avenue locations. Their third installment will be housed in Brennan’s Pub, adjacent to the Eastern Hills Mall. According to owner Mike Shatzel, the new taproom will be located within Brennan’s current banquet room, with plans calling for 20 tap lines featuring an array of Thin Man beers, along with a few guest beer and cider taps.

Recall that hilarious Monty Python sketch where John Cleese walks into a cheese shop and orders a long list of cheeses? Among the English cheeses he requests are: Red Leicester, Caerphilly, Red Windsor, Stilton, Lancashire, Double Gloucester, Cheshire, Dorset Blue Vinney, Caithness, Sage Darby, Wensleydale, Ilchester, and Cheddar. That seems to be a dizzying array of cheeses, no? Perhaps not when considering that the British Cheese Board lists over 700 cheeses. Cheese is such a big part of British food culture that a British cheese shop with no cheese would indeed be a joke! The love the Brits have for cheese seems bested only by beer in the form of over 2,000 different brands. This cornucopia of English beer and cheese flavors suggests that wine might play second fiddle to beer on an English cheese board. To decide which cheeses pair best with which beers, a few key points are in order. Consider pairing delicate with delicate and strong with strong (blue cheese with barleywine or Belgian quad). Another angle is to play on complementary flavors (creamy St. Andre with silky cask pours). Contrasting flavors also work (tangy clean California Teleme with complex sweet Chimay Blue). The characteristics of cheeses are firmness, complexity from age, and intensity. Beers have hop bitterness, carbonation, adjunct flavors, malt sweetness, yeast characteristics (fruity esters) and acidity in sour beers. Beer contains as many as 8000 potential components that may impact flavor. The possibilities are literally endless! Experimentation is encouraged, surprises are welcomed. Give it a try. Fortunately in Buffalo we have no shortage of great beer or great cheese. And for those of you familiar with Premier Gourmet (3904 Maple Road, Buffalo), you know that both can be purchased there. Premier Gourmet is also one of the biggest local purveyors of the Shelton Brothers beer portfolio, whose highly anticipated event “The Festival” is coming to town October 4 and 5. “The Festival” in Buffalo and the abundant stock of cheeses and Shelton beers at Premier Gourmet inspires this article. Mahr’s U. (Classic German Lager) with Cabot Clothbound Cheddar or Wrangeback. Cabot is meaty, bright and flakey. Wrangeback is nutty bright and fudgey. Both pairings will work nicely with this clean and bright lager. Cuvée de Ranke: A classic, slightly sour blended Belgian ale brewed with whole cone hops… acidic, but with hop balance. Pair with Le Charmoix, which is brine washed, yogurty and yeasty with a bit of a floral component that pairs well with hops.

de la Senne Taras Boulba: A low-ABV Belgian hoppy ale from Brasserie de la Senne that is light and crispy, with light Belgian yeast character. This pairs well with the Robiola Tre Latti, which is a mixed-milk cheese with a grassy and mousse-like texture. This will be a textural dream with the body of Taras Boulba. Cuvée des Jonquilles: A classic Biere de Garde, which has a saison profile that’s dry and hoppy yet also fruity. Try with Brebirrousse D’Argental, a decadently creamy cheese that pairs perfectly with dry and crisp Belgian ales like this one. Buttery with a bit of lanolin notes. Also try 1655 Gruyere, which is nutty with caramelized onions, tropical fruit, and rich in texture. Põhjala Must Kuld: This is a rich porter with smooth honey notes that pairs well with either L’Amuse Signature Gouda (two-year Dutch gouda - rich, acidic and tastes like burnt caramel). Also try Shropshire Blue, a salty but balanced Stiltonstyle from the UK. Dyed with annatto, but very similar in recipe to stilton. Blues are easy pairings for malty beverages but Shropshire has a cool toasty and nutty component that is quite special. Panil Barriquée: A Flanders Red style ale brewed by Panil Birrificio Torrechiara - pair with Delice de Bourgogne. This luscious triple-creme is a perfect pairing. Also try Gouda-styles like OG Kristal, Signature Gouda or Brabander. These sweet, rich cheeses and the funky tartness of this beer creates a perfect umami-bomb.
