Ultimate Pigs in Blankets
- Mulled wine Sausage Seasoning Mix (100g) - 10 Dried Plums (included with mix) - Minced Pork (500g) - Streaky bacon (30 Rashers) - Mulled Wine or Red Wine (130ml) Method: Add the mince, plums, seasoning mix and wine into a large bowl. Stir all the ingredients together and for best results put the mix back through a mincer (3mm or 5mm mincing plate recommended). With the mix thoroughly blended we are going to save a little time with a cheeky shortcut. Instead of now stuffing the mix into sausage skins we simply use a jerky gun to pump out approx 3 inch strips of sausage meat. We then tightly wrap these strips with the bacon to act as the sausage skin.

hristmas dinner is not complete without the festive favourite, pigs in blankets. This year we have sourced some exquisite festive flavours to give mouth watering results with a minimum of effort. The recipe uses pork but we tried it with Venison and it was delicious.
Repeat until all mix is used up, which should make approx 30 Pigs in Blankets. For cooking we found it best to use the oven (200°C for 20 mins approx). If using venison meat remember to alter the ratio to approx 400g venison 100g pork belly, just to add a little fat to the sausage.

Santa’s Seasonal Sausage
- Port and Cranberry Seasoning Mix (100g) - Minced Pork (500g) - Port/Red Wine (130ml) Method: This recipe again uses pork but venison or game could be easily substituted in, just remember to add 20% pork belly if using low fat game meats. Simply add the mince, seasoning mix, and port/ wine into a large bowl and mix together well. We feel for best results the mix should be put back through a mincer. Most mincers come with sausage nozzles so it is possible to mince straight out and into the devro casings, however some people prefer the extra control a dedicated sausage stuffing machine gives, this is really personal preference. Depending on how big you like them this recipe should make approx 20 sausages packed full of unbeatable festive flavours.

Santa’s Festive Drunk Duck
T
his festive holiday recipe works well with assorted game birds or poultry and we will be using a fresh duck. A simple seasonal dish, loaded with tasty herbs and spices, and the delicious fat is used to flavour the roasted vegetables. Ingredients: - 1 Duck - 1 tsp Cinnamon - Pinch of Cloves - 1 Orange (zested and halved)
- 150ml Mulled Wine - 1 tsp Grated Nutmeg - 1 tbsp Sea Salt
The Beer Roaster is designed to simultaneously cook your vegetables in the fat and juices from the bird. For best results parboil the veg and add to the beer roaster for approximately 1 hour.
Recommended Drunk Duck Kit
Method: Seasoning Rub: Combine the cinnamon, cloves, nutmeg, orange zest and sea salt. Pierce the duck skin with a sharp knife in multiple locations, although make sure not to pierce through to the meat. Rub the mixture all over the duck, inside and out. Squeeze the juice from the orange over the bird and remember to keep the orange halves for later. For best results cover with tinfoil and leave in the fridge for a few hours to let the flavours infuse. Preheat the oven to 180°C. Take the orange halves and stuff into the cavity, plug the duck neck opening with a shallot or potato, pour mulled wine into the Beer Roaster and insert duck. Cooking times will vary depending on the size of the bird. Allow approx 2 hours for cooking and always check meat is thoroughly cooked before serving.

here is no better way to prepare a Christmas turkey than to slow smoke it. The end result gives wonderfully complex and delicious flavours; better still with this style of cooking it is almost impossible to overcook and dry it out! Try it and you may never put another one of these noble birds in a conventional oven again. To help you get the job done right, we’d like to serve up some turkey smoking tips. Pick the right bird. Big is not always best and choose a realistic size. Smoking is a slow cooking process and the bigger the bird, the longer it will take. It takes about 6-8 hours to cook a 14lb turkey. We recommend mixing together brown sugar, salt and rosemary with cream sherry to make a thin paste which can then be applied to the outside of the bird and between the skin and meat. This would
be the time to add any other herbs or seasonings of your choice. Important: set the turkey in a greased, disposable cooking pan. Smoking with your usual pans will leave a smoke stain on them that cannot be removed. Preheat your smoker to 100°C. We recommend pecan flavor bisquettes but the choice is yours. Keep an eye on your temperature gauge to make sure your heat is consistent. Every hour you should baste the turkey using the juices from inside the cavity and continue cooking and basting every hour until it’s done. Total smoking time will run 3-4 hours or so with a 10lb turkey. Smoke until your meat thermometer reads 75°C. Turkey Leftovers... again!

hristmas dinner is over, the feast slept off on the sofa and the extended family have finally left, leaving the entire kitchen to tidy. Dishes aside, what should be done with the mountain of turkey and ham leftovers? This year try something a little more adventurous than sandwiches, try making these delicious turkey and ham burgers, obviously if you only have turkey or ham then the recipe still applies.
Simply mince the leftover turkey and/or ham into a large bowl and add in our delicious Cranberry and Rosemary seasoning (£7 Code: 345021) and some water (adjust the amount of seasoning and water accordingly, remembering that the
