A day best forgotten! My generosity came back to literally bite me... Last weekend a client turned up to stalk a Scottish pine forest in June without a single item of bug clothing! As always Muggins here, generous to a fault, “Oh just have my bug jacket, I’m sure I have a spare anyway. No don’t mention it.” Client and my bug jacket gone (& my spare non existent), I was inspecting the release pens (the poults arrive next week), when a cloud the likes of which I have never seen descended. If swarms of midges were one of the signs of the apocalypse then this had to be the end of days. The biting tsunami were relentless, so much so my faithful mutt, Max, tucked in his tail and deserted, choosing instead to run the mile or so home... Visit Our Retail Stores

...An itchy few hours later, home safe and a shade anemic, my bites appear to have bites and to add insult to injury I just found a tick settled in for a meal on my scrotum. Ho-hum! Only a mistake if you don’t learn from it, bug coat and bug spray now on order and Mrs K’s reading glasses found. On the plus side, while I was battling my way home I am sure I caught sight of those antlers again, was hard to tell in the fading light but I think the legendary monster of the forest has reappeared. Will try get back to the clearing in better light to get a really good look at him...

A pile of feathers at the release pen was the push I needed... Not sure why I had resisted buying one of these for so long! Cracking Fun

Boys now on holiday and getting restless already, decided to distract them with some target practice and training. The Game Fair is days away and we could all do with a little warm up on the clays, important to hold my own on the flush shoot. Bush A-Fair

Head pounding, over did it yesterday, got together with the gang at the Game Fair and as always one thing led to another. A mediocre performance at the clays was quickly forgotten as we got entrenched in the beer tent and the booze and banter started to flow fast. Next thing I knew the fair was closing and I hadn’t even grabbed any bargains… shame as I really need some new waterproofs. Did however get a long overdue invite from one of the guys for a day at the pigeons. The Boys have hardly been seen for days. I spotted one of them carrying a salt block into the woods and my youngest was reeking of aniseed at dinner... £100 the price for silence?

Sizzled Sausage

Nothing says summer has reached the highlands like the smell of cremating veni sausages and burgers on the BBQ. Uncle John and his mob made the journey down the Glen for the feast. His legendary smoked pheasant drumsticks are always a hit with the boys and his new experiment with duck jerky was pretty successful…. a great gathering, ruined only by the midge and the boys’ improvised charcoal grenades. Boys were grinning like Cheshire cats before bed... somethings up. Checked the usual pranks; Max still has all his hair and there were no feeder pellets in my boots. I’m a little nervous.

Ensure All Food Is Cooked Thoroughly Before Serving

Venison Shish Kebab

Ingredients: - 5lbs Venison, cut into chunks - Vegetable oil (2 tbsp) - 6 white onions, cut into large chunks - 8 bell peppers, cut into large chunks - Jalapeno jerky seasoning (96.4g)

Dissolve the seasoning in 600ml water, place

the venison chunks and dissolved seasoning into a large bowl and cover the bowl with clingfilm and leave to marinade in the fridge for at least 8 hours. Preheat your BBQ. While the grill is heating, remove the venison from marinade and squeeze off any excess. Thread the venison cubes onto the skewers, alternating with onion and peppers, brush with a light coating of vegetable oil. Now cook to your desired taste, it should take about 10 minutes in total for medium-rare.

Ingredients: - 150g Royal Venison Burger Seasoning (adjust to taste) - 1.5kg venison meat - 500g fatty pork (i.e. belly) - 400ml water - A little white wine - Burger buns

Venison Burgers

Combine 1.5kg venison meat with 500g of the fatty pork belly

and put through your mincer on a coarse (8mm) plate. Add the burger seasoning and the water to the minced meat and mix well, add a splosh of white wine to achieve a good, moist-but-firm texture. Using your hands or the burger press, take some of the mixture and shape into a patty, about 1-2cm thick. When you’re happy with the form of the burger, barbecue for 3-4 minutes each side, until nicely browned and cooked through. Serve in some good-quality baps with a dollop of tomato chutney.
