The pancakes we make here in the UK are quite different to the American version. US pancakes are fluffier, and more like a thin sponge cake, than the British version. The reason for difference between the two is the use of some kind of raising agent. The pancakes we serve on Shrove Tuesday don't use one, whereas the variety served in the US do – typically baking powder, or whipped egg white, or both. British pancakes are traditionally eaten plain, rolled up and sprinkled with sugar and lemon juice. Golden syrup is a popular alternative for children, whilst more recently fillings such as Nutella have found their way into our family’s Shrove Tuesday pancakes!

Making Pancakes Ingredients ● 4 oz (100 g) plain flour ● ½ pint (300 ml) mixed milk and water ● 1 egg, beaten ● Pinch of salt

side so that a thin layer of batter runs into the pan. Rock the pan from side to side until the bottom is covered. ● Cook over a moderate heat until the bottom of the pancake is golden brown. Turn with a palette knife (or now is the moment to toss your pancake if you’re feeling brave) and cook the other side in the same way. ● Turn out and sprinkle with sugar.

Method ● Sift the flour and water into a bowl, make a hollow in the middle and pour in the beaten egg. ● Gradually add the milk and water mixture, beating with a fork all the time, so that the mixture becomes smooth and creamy. ● Mixture can be used straight away, but you’ll achieve better results if you leave for up to an hour and beat again before using. ● To cook your pancakes heat a small amount of oil in a 7” diameter heavy-based frying pan until it is really hot, swirling it around the pan to coat the sides as well as the bottom. Pour off any surplus as you don’t want greasy pancakes. ● Raise the handle of the pan slightly and pour a little of the batter in from the raised

● Repeat the process, wiping the pan with a kitchen towel soaked in oil each time. ● If you are cooking a number of pancakes keep them warm by putting them, as they are made, between two plates in a warm oven. ● To serve in the traditional manner, sprinkle them with freshly squeezed lemon juice, roll up and serve with extra sugar and a wedge of lemon to squeeze over them.
