Carbohydrates are organic compounds, which consist of sugars, starches and fiber.

pasta, cereal and cookies must be broken down into monosaccharides, otherwise known as “sugar,” in order for them to be absorbed by the small intestine. These sugars are absorbed quickly when they reach the intestines. Any sugars that are not immediately used for energy and are not able to be stored in the liver and muscles as glycogen will be stored as fat.
Q. What is the essential amount of carbohydrates needed? A. Unlike protein and fat, there is actually no physiological requirement for dietary carbohydrates. Even the RDA handbook acknowledges this fact right before recommending that “a prudent diet should contain a lot of carbohydrates.” In today's society, most people have diets that are too high in carbohydrates. Just take a look at a typical breakfast that consists of a ¾ cup serving of Honey Nut Cheerios, 1 cup of skim milk and 1 cup of orange juice. This breakfast alone has 59 grams of carbohydrates, which might be justifiable if you just spent the past 45 minutes performing some type of exercise such as running. In that case, you might have used up that amount of carbohydrates and need to replenish your glycogen stores. However, if you are consuming this breakfast soon after waking up and are then going to be sedentary for most of the day, you certainly do not need to consume even half of that amount of carbohydrates.
