I
t’s already that time of year, when the sounds of summer and splashes have finally given way to the twinkle of Christmas lights and the faint call of jingle bells in the distance. Yes, the Holidays are upon us. And, with this time of year, also comes the inevitable temptation of the most decadent desserts we will sample all year long. Every year, we, here at Cabarrus Magazine, try to theme one issue towards something related to food. After all, it is something that is a part of each of our lives – more passionately in some than others. With it being the Holiday season, we thought a great topic would be to focus on everyone’s favorite part of the meal – dessert! However, we also recognize it’s not in everyone’s best interest to succumb to the temptation desserts bring, so we have an article for those who are looking for healthier alternatives when it comes to sweet treats. In addition, we will offer up suggestions for food-related gifts and party offerings to make you a hero. People aren’t the only ones who like treats, however. That’s why we will also give you some ways to pamper and spoil your fur babies this season as well! For you home chefs out there, our friends at 44 Mills Restaurant have offered up their Bread Pudding Recipe to make in your own kitchen. I would also like to especially thank them for our beautiful cover photo this month, taken by Sue Sidzina Photography! No matter your interest, the real reason many of us are so passionate about food is because, generally, we share it with other people. It represents family, community and can often spawn fond memories of Holiday seasons gone by. he Holiday season is approaching, and with it comes the family-famous desserts! It can be especially hard to maintain a healthy diet and stay on track this time of year. There are healthier alternatives to sugar that provide lifelong benefits to those seeking a sweet treat, but still wanting to stay healthy. Health is not always about a trend, dieting or weight loss. Being healthy is important for core health issues that develop over time such as obesity, heart disease, diabetes and even cancer.

Follow with us as we dig into the negative outcomes of sugar consumption, as well as dive into the most common sweet tooth cravings, offering a healthier sugar substitutes (including recipes) and list potential benefits of using sugar alternatives! Sugar, it is fulfilling to our sweet tooth. Satisfying a craving is the only thing it is good for. However, there are natural sugar substitutes, containing absolutely no sugar, which make for scrumptious, “guilt-free� desserts.
Not So Good After All
For starters, there are no health benefits for the body when consuming added sugars. There is no protein, no vitamins or minerals, and no healthy fats to add to your diet. The only impact sugar may have on the body is negative. Weight gain is, of course, an outcome of too much sugar intake. And it can also lead to diabetes and heart disease as well. One of the main reasons for obesity in America is the average daily diet of many people, which includes added sugars. Everyday foods and drinks contain more sugar than most people are aware of. Sodas, for example, are one of the highest sugar-containing drinks. Even drinking one soda per day can increase the risk of heart disease and cancer substantially. Everything we put into our bodies is broken down. Sugar and starches (carbohydrates) are broken down into another type of sugar, called glucose. Glucose is used to produce energy which can be used immediately or stored for later use. Without insulin in the body, glucose stays in the blood stream and then causes high blood pressure. This is how a disease, like diabetes, can develop. An excessive amount of sugar is not good for any person’s body. While it is not clinically proven yet, some studies do suggest that sugar helps cancerous cells grow and develop quicker. Cancer cells grow off glucose (sugar). Therefore, a higher sugar intake makes for a more comfortable and livable environment for those cells to grow. Luckily, there are substitutes to use in place of sugar, allowing you to eliminate it completely.
Healthy “Sugars”
There is a way to enjoy homemade desserts with a healthier approach! There are all-natural sugar substitutes that surprisingly offer health benefits, instead of risks. Take a look at these all-natural sugar substitutes that Healthline.com has named the top four alternatives. You can try these this holiday season, giving your favorite homemade chocolate chip cookies and apple pie a healthy improvement.
Stevia The first most used and highly recommended alternative is Stevia. Stevia is derived from a shrub found in South America, called Stevia Rebaudiana. Stevia has been studied on humans with no found health risks, and no results of weight gain. In fact, Stevia offers health benefits instead of damage to the body. The benefits of Stevia lie within a component called Stevioside. This sweet component can lower high blood pressure, blood sugar levels, and insulin. These factors of Stevia may actually help fight Diabetes and is overall the best sweetener to choose if you are looking for a healthier choice.
Xylitol Xylitol is a sugar alcohol that has a sweetness similar to sugar. However, it does not contain any fructose. This provides a great alternative to High Fructose Corn Syrup, which is what makes sugar such a risk for humans. Xylitol is made from corn or birch wood and is, surprisingly, found in many of our everyday fruits and vegetables. This sweetener contains forty percent less calories than sugar and does not raise blood sugar or insulin levels, providing another great option for those at risk of Diabetes or looking to prevent the disease. Xylitol, like Stevia, offers health benefits and can help improve your health in certain ways. Studies show that Xylitol helps reduce the risk of teeth decay and cavities. The sweetener increases the absorption rate of calcium, which increases bone density and in the long run can fight against osteoporosis. Be aware that Xylitol is extremely toxic to dogs, so it should be kept away from them completely. Just like any sweetener, Xylitol should be used in moderation, due to digestive side effects, such as gas, diarrhea, and stomach bloating. These negative side effects are only a result of over consumption.
Erythritol Erythritol, like Xylitol, is also a sugar alcohol, but it contains less calories. It tastes very similar to sugar, so the substitute won’t be much of a dramatic change. The body does not have the enzymes to break down Erythritol, so it is directed right into the bloodstream and flushed out of the body directly. This sugar substitute does not raise blood sugar, insulin, or cholesterol. There are no shown side effects from the consumption of Erythritol, besides over consumption resulting in digestive issues. Like anything we consume, these sweeteners should be used in moderation.
Yacon Syrup Yacon Syrup is all natural, from the Yacon plant found in South America. This syrup can be used in coffee, tea, or oatmeal, but it can not be used to cook because of the consistency. Cooking this sweetener will cause the syrup to break up. There is a special sugar molecule (fructooligosaccharides) that the body cannot digest, but the molecule reduces the hunger hormone, causing humans to actually eat less and suppress the hungry feeling. There have not been enough studies conducted yet, but as seen on the Dr. Oz show, one case was shown to prove weight loss in those who use Yacon Syrup. An important benefit from Yacon Syrup is the impact it provides to maintain a healthy gut. A healthy gut has been linked to a decreased risk of diabetes, obesity, and an improvement to brain function and immunity. This sweetener is especially beneficial to those who may want to lose weight. There are other sugar substitutes available, but these top four alternatives are all-natural and offer the most health benefits.

Trim Healthy Mama is an outstanding source to check out for some guilt-free desserts, that contain these healthy sugar substitutes and will provide health benefits to the body.
Blueberry Muffins INGREDIENTS & DIRECTIONS Preheat your oven to 325 degrees. In a medium size bowl, assemble and whisk together the following dry ingredients: • 1 ½ cups almond flour/meal, measured from 2 ½ cups blended, sprouted almonds • ½ cup flax seed meal • 2 T. coconut flour • ½ t. sea salt • ½ t. cinnamon • ½ t. baking soda*, (not GAPS-friendly, optional) • 1/16-1/8 t. powdered stevia, or less (NuNaturals brand preferred; use “to taste”) Assemble and blend together, in a large bowl or food processor, the following wet ingredients: • 1/3 cup packed dates • ½ cup extra-virgin coconut oil, softened slightly • ½ cup sprouted, homemade almond butter • ½ cup finely chopped fresh apple or applesauce • 3 eggs, pastured preferred Add the dry ingredients to the wet ingredients and mix thoroughly. Fold in the following: • 1 cup blueberries • ½ cup optional sprouted walnuts
Drop the batter into a lined muffin pan; or spray your muffin pan with coconut oil spray to prevent sticking. Bake until muffins are puffed, browned on top, and a toothpick inserted in the center of one comes out clean. Yields 1 dozen muffins. VARIATIONS 1) Chocolate-Peanut Butter-Banana~ Use peanut butter in place of the almond butter, use banana in place of the apples, one portion mashed and one portion diced and folded in, add ½ cup chocolate chips (Lily’s makes a stevia-sweetened chocolate chip or here’s a new unsweetened chocolate chip that I love) or nibs. 2) Pumpkin-Chocolate Chip~ Replace the pureed fresh apple with ½ cup cooked, mashed pumpkin (BPA-free, canned, organic pumpkin is fine), add ½ cup chocolate chips or nibs. 3) If allergic to almonds, use any other sprouted nut you can tolerate, to create homemade “flour” and butter, so cashew flour and cashew butter, for instance would replace the almond flour and almond butter. 4) Substitute the blueberries for ½ cup finely chopped fresh apple or applesauce

A must-have favorite Chocolate Chip Cookies of course! These cookies are sugar free and contain Stevia, as well as sugar free chocolate chips. INGREDIENTS • 2 1/4 cups Flour • 1 tsp Baking Soda • 17 tbsp Butter softened to room temp • 1 cup Stevia • 1/2 cup Surkin Gold • 1 tsp Vanilla Extract • 8 ounces Sugar Free Chocolate Chips DIRECTIONS Start by preheating your oven to 350 and prepping a cookie sheet for nonstick (I use parchment paper for an easy clean up). In a medium sized bowl, whisk together the flour and baking soda. Set this bowl aside. Next, in a mixing bowl, cream together the butter and the sugars. I use a paddle attachment and scrape the sides of the bowl as needed. For the next step we are going to add the dry ingredients from the first bowl to the ingredients in the second bowl. To do so, add half of the dry ingredients to the mixing bowl, stir gently and then add the remaining ingredients and stir gently again. Then add the eggs and the vanilla extract. Lastly, fold in the chocolate chips. Bake your cookies for 1012 minutes or until they begin to brown. Larger cookies will most likely take longer than smaller cookies to bake. Also, some folks prefer their cookies baked longer than others. November 2019 | 9

Senior Health Options A s we get older and closer to retirement, the question of where we will spend our golden years is always on the horizon. We are lucky to live in America in which we can retire at a fairly young age in relation to our life expectancy and have a few years to enjoy retirement. However, it is very possible that as you age your or your spouse/partner’s healthcare will require more assistance than you will be able to provide on your own. Continuous Care Living provides care for seniors that are still very active. I
f you are a pet owner, or own a business that deals in pet products, it doesn’t take much research to realize that pet products and services are a goldmine. According to the APPA (American Pet Owners Association) about 68% or roughly 85 million households in the United States own one or more pets. If that makes you think “ca-ching”, you aren’t alone. There are endless types of businesses that cater to your favorite pet and they exist because we spend billions of dollars each year on everything from veterinary fees to toys.

[ Feature ] More households own a dog, but cats top the list at the total number of pets owned. The third on the list is fish, followed in order of number owned, by birds, Guinea Pigs and Gerbils, hamsters, rabbits, turtles, Ferrets and finally snakes and lizards, and horses. In addition to the growing number of pet owners, the necessity for an expanded number of pet services has surfaced. Some of the more popular services include behavioral training, dog walking, daycare and boarding, mobile grooming, pet photography, pet sitting and playtime services, and last but not least, pet insurance. After all, our pet companions have become part of our families and we have come to the point where we desire the same focus on health and wellness as we do for ourselves. According to the Bureau of Labor Statistics, the average household spends approximately $500 a year on their pets. This figure equates to over $42.5 billion spent each year on pet services and products. With that in mind, we thought this Holiday season it was only fair to dedicate an article to ideas for pampering your pet. After all, if we’re going to spend that much money, let’s look at some creative ways to do it locally and in style. For those that love luxury and want to extend that to gift ideas for their pets we offer these suggestions:
Warm Beverages After spending time outdoors, especially as the weather gets cooler, your pets might like their own healthy hot beverages. According to ilovepets.com, some suggestions for these beverages include bone broth. They suggest making a bone broth in a slow cooker, then freezing extra broth in an ice cube tray. When you want to warm up a cup, microwave a cube to just warmer than room temperature, stir and serve. Other ideas for savory brews are using chicken or vegetable stock from your favorite grocery store. However, be sure to look for the low sodium varieties that don’t contain onion. Herbal green tea is a healthy treat for your pet, plus it is packed with vitamins and antioxidants.
Spa treatment Spas for pets have become very popular. Extended grooming packages can include; deep shampoos and conditioners, nail grooming, tear stain removal, ear cleaning, specialized hair styles and teeth cleaning. These little eccentricities are not only refreshing, they add to the overall health and well-being of your pet. There is a growing industry of petfriendly hotels, as pets love to be included in festivities. Dog Parks are a favorite and we have some very nice ones in Cabarrus County, such as Weddington Road Dog Park, that offer fenced, wooded areas and large gated fields for both small and large dogs to run. Not too far away is Fisher Farm in Davidson, NC. It offers multiple walking paths and paved trails. You can also take a picnic and have a game of Frisbee, mountain bike and it even has a 5K cross country course. If you want to travel further and also offer your dog a luxurious place to vacation, the James Island Country Park in Charleston, SC provides a special place. According to their website the park features a dog beach, four acres of open grassy space, a cleaning station, fenced play area for small dogs, and waste stations and a paved walking trail. Plus, you’re canine even gets a cookie when they go through the gate. For more suggestions, go online and surf for day trips for pets in North Carolina. There are a variety of suggestions that are fun for both your pet and you.
INGREDIENTS • 2 ½ cups whole wheat flour • 2/4 cup nonfat dry milk powder • 1 egg, beaten • ½ cup vegetable oil • 2 cups beef bouillon cube • 2/4 cup boiling water • 2 tablespoons brown sugar DIRECTIONS 1. Preheat oven to 300 degrees F (150 degrees C). Lightly grease one cookie sheet. 2. Dissolve bouillon cubes in boiling water and allow to cool. 3. Combine the flour, dry milk, egg oil, beef broth and brown sugar. Mix well and knead dough for 1 minute. 4. On a floured surface roll out dough to about ¼ inch thickness. Cut out bones and place on cookie sheet. 5. Bake for 30 minutes and allow to cool.

DIRECTIONS 1. In a large bowl, toss bread, brown sugar, cinnamon, fruit, fruit puree and vanilla until bread is coated. 2. Spread on baking pan and dry in oven at 300°F for about 20 minutes. Stir every 5 minutes. 3. In a medium-sized sauce pot, add cream, milk and white sugar. Bring to a slight simmer and shut off heat. 4. Gradually add heated milk mixture to egg yolks in a separate bowl, adding 6 ounces at a time. 5. Line dried bread in baking or brownie pan with parchment paper lining the bottom. 6. Pour milk mixture over bread. Bread will slowly absorb milk, which leads to adding more. (You may not have to use all the mixture, depending on how dry the bread is.) 7. Once bread absorbs the milk mixture, move bread around to ensure all air pockets are removed. Cover with parchment paper and then foil. 8. Bake at 325°F for about 25 minutes. Remove covering from top and bake for an additional 5 minutes to add color on top. 9. When the pudding is solid with a little bit of movement, remove from oven and cool. 10. Serve with your favorite ice cream, or gelato, and a warm hot toddy. Chef Mike Watson is a Jacksonville, FL native and one of five kids. Speedway Christmas Returns This Month
T
he 10th edition of Speedway Christmas, featuring 4 million lights on a 3.75-mile course, will return to Charlotte Motor Speedway on November 22 and will feature an array of attractions including Santa’s Safari, a themed portion of the drive-through lights display, featuring safari animals from the Serengeti, as well as a 75-foot Christmas tree which changes color in sync with the holiday music played through your vehicle radio, as well as a 100foot LED Tunnel, a new walkway tunnel, decorated from top to bottom in lights. The infield area will highlight several perennial favorites, such as the Bethlehem Village, where the Christmas story is

told via character mapping and live animals, a 50-foot Ferris wheel, a 50-foot hard slide, photos with Santa, vendors and fun foods to purchase. The Carolina Mall has announced the results of its inaugural search for Concord’s Next Great Pop-Up Shop, naming two winners, Concord’s Best Dressed Kids and Lovely Lines Boutique, that will each be awarded a six-week pop-up shop in the Mall this Holiday season. “We received many great applications from businesses and entrepreneurs here in the Concord area. It was difficult to choose just one winner, so we are thrilled to work with both Concord’s Best Dress Kids and Lovely Lines Boutique. Local Retired OB-GYN Doctor Now Delivers Paintings, Not Babies Dr. Wanda Jenkins, an Obstetrician and Gynecologist in Concord for more than 20 years, took care of many women in her practice and delivered thousands of babies. She is a native of Concord. Having painted occasionally during her professional years as an OB/Gyn, in retirement she has actively explored color and texture in landscapes, florals, and abstracts, predominantly using oil paints. She

Dr. Jenkins is partnering with ClearWater Arts Center & Studios, which seeks out local talent for its ‘Guest Artist’ shows. Numerous Cabarrus County Entities Participating in National Homeless Awareness Week, Nov. 16-24 Code Gray Day, a local 501c3 that recognizes the need to rectify the current conditions of homelessness in Cabarrus County through unification of resources, educations, awareness, and community service, is working with several Cabarrus organizations and entities in order to bolster homeless awareness during National homeless ness Awareness Week, taking place this
month, November 16-24. The kickoff event, called “Faces of Homelessness”, will be a forum, developed by National Coalition of Homeless, to dispel myths and stereotypes of the homeless, as the audience will have the opportunity to interact with homeless people. Open Mic, Community Service, Fundraisers, Drives, and Resource Fairs. All events are open to the public and will benefit the homeless community organizations. They will take place in Cabarrus County. The List of Events includes: • Monday, November 18 & 20, 5:30 PM; Cabarrus County Libraries will provide public screenings at the leisure of each participant with information about homelessness, hunger and poverty. Rowan; Cabarrus YMCA’s Merging to “Increase Community Impact”
The boards of directors of the YMCA of Rowan County and Cannon Memorial YMCA of Cabarrus County have voted to merge effective January 1, 2020. The new Association will be called Rowan-Cabarrus YMCA. The merger follows successful shared services between the organizations that have been ongoing since 2013. A task force of board members representing both Ys recommended the merger after months of positive dialogue and planning. Final details of the merger will be completed over the coming months. YMCA of Rowan County CEO Jamie Morgan becomes President and CEO of the new YMCA beginning in January 2020, which coincides with the retirement of Cannon Memorial YMCA CEO Ron Davis. “Blending the efforts of our YMCAs makes great sense,” says Davis. “We began working together six years ago to maximize our resources. Our
teams are already working together and the direction of proven leader Jamie Morgan will ensure a smooth transition for members, participants and volunteers.” Leaders say the history, culture and values of the two Ys are perfectly matched and the relationship between staff and volunteers is positive and strong. Collectively, the Ys will serve more than 53,000 adults and children and employ more than 670 staff with an annual operating budget of $12 million. “This merger is the coming together of two equals. Combining these successful YMCAs in this growing region creates opportunities for us to deepen our impact and become better together as one,” says Shane Wolford, YMCA of Rowan County board chair. “Together, we will be positioned to make a huge difference in our communities. We will be able to expand our base of volunteers, donors and partners to transform lives and impact youth. The YMCA is more than just a place to work out. At the Y, we help build a healthy spirit, mind and body for all with the core values of Caring, Honesty, Respect and Responsibility at the heart of everything we do,” says Rob Betler, Cannon Memorial YMCA board chair. The two volunteer boards of directors will combine to provide oversight to the Rowan-Cabarrus YMCA. The new Y will serve the area with six branch locations: • J.
