A Letter from the editor Article by Sean Edwards I can’t believe we have achieved 50 issues, wow! I did not think we would ever get there after making the decision to go digital during the last two years when Covid hit the world. Fifty issues is a major achievement over the last 10 years for the Café Culture team and we have seen thousands of people involved in the process of creating a café trade journal. Personally, I have written hundreds of stories - which is not too bad for someone who endured the cane and detention for avoiding creative writing at school. Writing became interesting to me when I saw the enjoyment on readers’ faces when we told their stories and shared their successes. Telling the real story at times isn’t easy as a journalist because the people we speak to often highlight the good parts of their journey and forget the struggles. However, by reporting the complete success processes, including the challenges, helps others on their business path and hopefully assists them in avoiding the speed humps. Our coffee industry has been influenced and communicated to by a broad cross section of people from entrepreneurs, educators, corporates, story tellers and trendsetters. I love the huge range of content our fun industry generates, and I am constantly reminded why this is why I do what I do, and I love to share successes to help newcomers jump the hurdles that they face. A big thank you to all the team behind Café Culture Magazine as sponsors, writer, graphic designer, proof editor and importantly the reader.

Talking about hurdles, it’s time now to reset your business and embrace the after-effects of Covid. We have been very lucky in Australia to have had lots of Government support, with JobKeeper and many business grants and funding which helped so many hold on to their businesses albeit in a smaller modified model. Hopefully you have been left with the framework of your business which now can be adapted to the café business of today. Things have changed, and how you run your business won’t be the same. As an example, a busy corporate city café won’t have the same volume of people they used to experience, so to lure back their customer base different methodology needs to be applied. Concepts we have seen as a result of Covid are focusing on stronger digital angles to the business, like cashless systems and paperless QR code menus. More marketing online and social platforms to promote all sides of the business. Café owners now need to step up and train staff as the pool of hospitality workers has shrunk. You can’t expect new staff to have the skills of past workers, so time needs to be invested in training to secure a team of regular employees. I am seeing more cafés offer traineeships to younger workers, locking them in for longer employment periods, also offering full time work will help our industry become less transient. Take away coffee systems have been a major part of the Australian café structure and many businesses have fine-tuned their speed of service in this area. Automation has helped here and some investment in this new

technology has proved to add more revenue into the business. There are many new innovative products available like auto tampers, milk delivery systems, auto steamers and super automatic coffee machines that make an amazing espresso. A big congratulations to the Golden Bean team for putting together another great event during these challenging times. It was a three times success for two coffee businesses in taking the winners’ podium. Coffee Snobs for overall grand champion and Black Bag Roasters for large chain store. This year Golden Bean will be expanding into a larger global format and plans are underway for the USA and UK events. I would like to offer my condolences to two industry friends who have passed in the last few months. Ross Bright who was an inspiration to many of us who travelled throughout south east Asia over a period of 15 years. Ross had an exciting coffee journey heading up coffee programs in Singapore for Dome Coffee and Spinelli Coffee before starting his own business Bright Coffee. Another shock to us was the passing of Jim Elliott from Little Big Dairy Co who we had the privilege of spending a few days with at Golden Bean, the week before being tragically killed. Our heart goes out to both these men who were still very much in the prime of their lives and had young families. Please enjoy our fiftieth edition of Café Culture magazine and stay positive about the future. The nice thing about owning your own business is you have control of your destiny and you make the rules in your kingdom and glass ceilings only exist if you let them.

News from Above. What The Great Resignation means for the hospitality industry in Australia

Words by Phillip Di Bella You might have heard about The Great Resignation – a term coined out of the US in response to a growing trend of workers quitting their jobs and reassessing their lifestyle after COVID-19. Australia’s hospitality industry is not exempt from these issues. We have a talent attraction and retention problem in this country – and it is only going to grow over the next 12 months. The reasons for this are threefold. Firstly, our state and international borders have remained closed for the better part of the past two years. We saw the majority of foreign students and hospitality workers go home in March 2020 when our borders first closed – that’s a lot of frontof-house staff, bartenders, cooks, chefs and cleaners. The workforce has diminished, and businesses have reported skilled migrant shortages ever since. Then we’ve had the majority of state borders (Queensland in particular) being closed off to the rest of the country for most of 2020 and 2021, which has meant less migration of people moving within the industry like there would normally be. Secondly, there is a supply and demand issue, where the demand is high but supply is low. A higher demand for staff across different industries results in wage inflation. Some industries can handle this, but others cannot. Unlike someone serving alcohol in bars, clubs or gambling, cafes and restaurants that run off already tight margins cannot handle wage inflation. Finally, what we’re seeing is people wanting a change in lifestyle, whether this means working less or more flexible hours. Unfortunately the nature of the hospitality industry doesn’t allow this – our

staff cannot choose to work from home. This creates a shift in lifestyle, where people are rethinking the type of job they want in the future. While there will always be a place for the best and brightest at their jobs, others will be looking for new trades and occupations. And certainly a lot of people have left the industry looking for something the Government won’t shut down every few months. With borders open once again, businesses must be prepared for all avenues, from staffing to education to legislation. This will likely bring forward opportunities for others to help solve this problem, in terms of specialised recruitment focused on the hospitality industry. But perhaps the solution lies closer to home, where upskilling and educating our staff – not a reliance on foreign workers – is the answer. Part of what we’re doing at The Coffee Commune is bringing the community together to collaborate and helping people accelerate their potential. One area we are working hard on is attracting more people to the hospitality industry and upskilling them, so that we’re helping to solve the retention and attraction problem as best we can. It’s the businesses that can solve these problems – whether through worker placement, consultation or simply by pooling resources – that will prosper in the future. Plant based in café is here to stay If you own a café and don’t have plant-based o p t i o n s , i t ’s t i m e t o r e c o n s i d e r y o u r b u s i n e s s m o d e l a s 30% of café patrons are making this choice.

Article by Sean Edwards Plant Based Consultant Today’s customers are far more likely to pick a plant based option for their regular café visit, not because they are on a vegan or a vegetarian diet, it’s now about a lifestyle choice. Green and clean has been thrown around loosely for years, but now global trends are seeing more people mixing their food and beverage choice on a weekly basis. Plant based milk in café coffee service is now around 30% of all drinks sold and almond milk has outgrown soy. Oat milk is hot on almond milks tail and will probably be the next new kid on the block. The stigma of having an unusual diet has gone out the window, mainly due to covid lockdown conditions where more people prepared meals at home and discovered new healthier and tasty diets to overcome the Netflix belly. Plant based options were a good choice as people realised that they

could replace meats and bread-based foods with fruit and vegetables without putting on too much extra weight. Exercise was limited in some cities, so diet was a way out of countering the lack of movement in one’s day. There has been a lot of recent studies around switching to a plant based diet to reduce disease, and the constant bombardment of covid figures made many of us think deeply about our lifestyles. Now that we are emerging from home lockups and starting to revisit hospitality venues, we will be asking aloud what our plant based options are? These options don’t have to be too radical, they can be as simple as having more choices in salads, or hot options can be vegetable soups or a veg lasagna. The possibilities are endless for plant base choices in café and most of the largest food service businesses globally are getting involved in development and launching café-ready products.

Plant based food and beverage companies are throwing mega dollars at the industry with now some of the biggest food base giants like Nestle, Kerry and Danone raising billions to enter the market. Amazon’s Jeff Bezos, along with plant based converted celebrities like Roger Federer and Lewis Hamilton helped raise 235 million dollars for new start plant business NotCo with NotMilk.

Closer to home startups like “Buds” have launched some tasty new meat replacements for meat and chicken patties. Renee Rogers, the General manager for All G Foods, creators of “Buds” told me about their launch into retail and food service with café meat substitutes. Renee has been blown away by the real investment “All G Foods” has raised for the development of food service replacement meat like burgers, schnitzel and bacon. The company was a financial recipient of the Clean Energy Finance Corporation funding along with other well-known brands like V2food. Renee, who has spent the last 10 years in the plant milk café manufacturing and sale sector is excited about new opportunities extending into the café menu. Plant based milks have definitely taken centre stage in positioning in café, with over 20 brands alone in the Australian café market. Popular brands like Alternative Dairy Co, MilkLab, Vitasoy and Bonsoy

are dominating cafés with barista-designed milks. There is now a 25% take up of plant based drinks in all milk based coffees served in café according to the 2021 Café Pulse report. The quality of plant based milks have been raising the bar and many people are willing to switch if they are offered a healthier option to dairy. Social media has been one of the big pushes in plant base media, and Insta groups like @ Plantbasednews, @Vegan_food_uk and @bestofvegan have massive followings including mainstream celebrities. People have been glued to their phones over the last two years, so groups like this really get into their minds and make consumer trend changes. Successful documentaries have also had an effect, such as “The Game Changers” and “A Life on our Planet” and Netflix hit “Rotten”. Media has done a pretty good job at giving people a different view of lifestyle movement. So, the motivation and moral of this story is, if you are running a café without plant based options you will probably be missing out on that most important part of the business – Revenue. It’s easy to get on board and these decisions are helping the world as we all become aware of the importance of a sustainable future.

In the past 12 months green bean prices have risen by 30-40%. This begs the question – will coffee, an everyday expenditure for most consumers, become a luxury? There are a variety of factors behind the rising price of coffee, but the most important one is the price of raw green coffee beans. “Brazil is experiencing a shortfall in production,” explains Raihaan Esat, General Manager of International Coffee Traders. The world’s largest coffee producer – and the second largest importer of coffee products to Australia – has suffered extreme weather events that have destroyed roughly 20 percent of their coffee plants. “Unfortunately, these weather events have caused damage that will also affect next year’s harvest, so the market is speculating that there’s going to be a shortage next year as well, which causes prices to go up further.” To add to this, global shipping constraints have escalated over the past few months, with the ongoing pandemic causing disruption to supply chains around the world. We’ve seen shipping costs double and triple in some cases within the past year. Cafe owners have had a rough couple of years with the pandemic, and the last thing they want is for the cost of coffee to go up. But many cafe owners buy coffee from roasters, who are having to pay more for green beans, so they can’t keep their prices where they are. “I’m expecting that we’ll see the price of coffee for cafes go up by about $2 to $3 per kilogram, on 20.

average,” says Raihaan. “That cafe owner now needs to make a decision – do they increase the price of each cup by 10 cents, or do they try to find savings somewhere else so they don’t have to put their prices up?” But finding those savings can be difficult, because it’s not just the shortage of beans from Brazil and rising freight costs that are adding to cafe owners’ expenses. Other trends such as the sheer amount of milk options on offer mean cafes have to carry a wider variety of stock to satisfy customer demand, which also impacts workflow. “Coffees can’t be bulk-prepared like they used to be. At the same time, nobody wants to wait more than five minutes for a cup of coffee, so you have to keep the speed up, even though we’re dealing with an infinitely more complex product. And the only way to do that is usually to put another barista on.”

How do rising prices affect coffee culture? While the price of green beans will plateau eventually, we should expect them to remain high for the foreseeable future. “We’re going to see little increases in the price of a cup of coffee over the next year or two,” says Raihaan. And rather than giving up their cup of joe altogether, Raihaan expects that the everyday coffee drinker will simply become more choosy about where they buy it. Just as craft beers have become mainstream, we can expect specialty coffees to become more popular as consumers take more of an interest in their coffee’s origin, and the nuances and subtleties of its flavours. “Right now, I think convenience drives coffee buying behaviour, if we’re talking about your everyday coffee drinker,” Raihaan says.


“We’re going to see little increases in the price of a cup of coffee over the next year or two,” “If someone drinks a coffee in the morning and another one after lunch, most of the time their choice is based on convenience – they’ll go for whatever’s close by and reliable. “But if we gradually raise the price by $2, or even $3, then eventually we hit a tipping point where people choose quality and value over convenience, because people can justify any purchase as long as they see the value in it. At that point, the question people ask themselves won’t be, ‘Should I drink coffee or not?’ It will be, ‘Where do I go to ensure I get the most value for my $6 or $7?’ ” For cafe owners, this means the challenge is going to be delivering value for the $6 or $7 you charge. “You can’t just bump your price and not give the customer any extra perceived value for it. I’m not talking about giving things away for free – I’m talking about providing great service, remembering customers’ names, and giving them good human interactions. “If there’s something special about your coffee, let your customers know. If you put your prices up slightly because you buy coffee from a more ethical supply chain, for instance, then you should educate your customers about the benefits of that in your face-to-face interactions, instead of being worried that your customers will complain because they’re just there for cheap coffee.” While you cannot control the cost of green beans, you can control your other costs, such as rent, wages and buying power. The impact of COVID-19 on the coffee industry Article by Justin Metcalf Popular with consumers around Australia, the coffee industry is both valuable and expanding. However, with Covid-19 slowing both production and demand, and disrupting the global supply chain, the international coffee industry has stalled in recent months. With Australia being a huge coffee-drinking nation, of course, Covid-19 has had an effect on revenue. The impact of Covid-19 on the overall global coffee supply chain has been enormous from seed to cup. After a shock in both demand and supply, coffee prices have been volatile. At the beginning of the pandemic prices had started to fall, and yet over the last 2 years we have seen them increase based on several reasons. Many coffee growers have indicated that they predict travel restrictions and social distancing measures (among other impacts of Covid-19) will affect their ability to employ workers and lead to a higher cost of production. Looking down the supply chain, export nations have negative downstream factors. Issues such as that of logistics, container availability and port operations would all feel an unfavourable impact of Covid-19. Also, issues with supply chain contracts have become challenged, or even cancelled. Climate change has also had an effect on the coffee industry. Being involved as a board member of

the Asean Coffee Federation, many of our board discussions are based on climate fluctuations/change relating to yield drops within the region. What has come to light in our discussions is that due to climate change (such as abnormally high temperatures or reduced rainfall) during growing periods, the Asean farmers are not able to produce the same amount of coffee as normal, resulting in lower crop yields. On top of that, higher temperatures create a breeding ground for pests and disease, which may also enable the spreading to regions where they couldn’t normally survive. This could increase the costs of coffee production even more as farmers work harder to fight issues such as leaf rust and coffee berry borer. With further additional consequences such as the prevalence of coffee leaf rust and other pests/ diseases that may increase, the rising cost of mitigation measures such as pesticides, fertiliser, and technical assistance will have a long-term impact on price increases. Communities are also being displaced as temperatures change. Another impact of changing temperatures is that the ideal altitude for growing coffee may change with it. Looking at Arabica as an example, warmer temperatures could push production of this bean type higher up mountains – displacing the communities that live there. Farmers who live in lower lying regions may have to adapt and move upwards, or risk losing their livelihoods.


Cup of coffee price increase The impact of Covid-19 on the global coffee supply chain, and the changing climate certainly will continue to influence the price of your cup of coffee. Looking over the few years prior to Covid-19 a standard café latte across Australia was between AUD$3.50 - $3.96. Moving forward to the year 2021, your average price of a standard café latte is between AUD $4.00 - $4.50. Once again, depending on the outlet and the quality of coffee they serve. There have been many reports in the media that the coffee prices will continue to increase as we move into 2022. I am certain that this will be the case based on not only raw coffee prices but increases in cost of goods across the board. Rents, G.S.T, staffing shortages, logistics, and general cost of living will all play a role in this. One final point to note, well made, good quality coffee will always be available to us if there is a demand, and I don’t see the demand going away anytime soon. Happy drinking!

Golden Bean Wrap up 2021 Another huge success!

Even with the pandemic all around us, we couldn’t imagine not having the competition that brings the whole community of coffee lovers and coffee roasters together to once again discover the best roaster in the industry. The Golden Bean 2021 competition was a huge success, with over 1,000 entries and 200 people in attendance. This latest Golden Bean surpassed all expectations! The Elite category was a new category for the 2021 competition. It covers all the historically premium coffee like Jamaican Blue Mountain, Panama

Geisha and Cup of Excellence coffees that cost over $60 per kilogram for the green beans. We introduced this category to cover the unfair advantage that the bigger corporate roasters have over new starters in the game. Evidently, this was a huge leveler for every participant who contested the Elite category. In the past, the Golden Bean awards have gone to brands with much bigger budgets available to them. We wanted to give everyone a fair competition without compromise, hence this category for premium coffee, and it was successful in that it included every participant who showed an interest.

Aside from the new Elite category, the remaining six categories were the same as the previous years, which included: Category 1: Espresso Category 2: Milk-Based Category 3: Filter Category 4: Alternative Milk - Almond Category 5: Chain Store - Milk Category 6: Chain Store - Espresso For Golden Bean 2021 the alternative milk was almond. Alternative Dairy Co. (ADC) were the proud suppliers of the almond milk. ADC has worked tirelessly to create one of the favourite Almond Milks in the cafe marketplace. The almond milk is part of the popular ADC range which also includes Oat and Soy. To become the overall Golden Bean champion coffee roasters needed to enter category one, two, and three. The contestant who had the highest combined score for these three categories received the award and took home a custom Reg Barber Golden Bean trophy. The Golden Bean also awards the Chain Store champion, combining their best category five and six scores.

The Competition Golden Bean 2021 was again based in Port Macquarie, NSW, the home of Cafe Culture and it also boasts 17 gorgeous beaches, a lush hinterland, and a diverse variety of attractions including the Koala Hospital, Billabong Zoo, river cruises, as well as a choice of accommodation from luxury hotels to camping by the beach.

Officially, the event started on Tuesday night at Stick PMQ. Cocktails and yakitori were on the menu and the night was dedicated to socializing and networking. Everyone had the time to relax, converse, meet new friends and connect with old acquaintances. In the spirit of great sportsmanship, this official Golden Bean opening was an important part of the competition, as it fosters relationship building across the board, partnerships, and future collaborations. On Wednesday morning, the Alternative Dairy Co bike, with a built-in espresso machine, served some amazing coffee to start the day strong and cure some sore heads from the night before. Everyone was ready to start the competition with some coffee tasting, after Sean Edwards’ – the Head Bean – introductions. The espresso category and filter category (a crowd favourite) were on the menu for the first official day of coffee judging. Steve Chesworth from Little Big Dairy Co spoke about starting their business, how they treat the cows, and interestingly, maybe a bit too much information about bull sperm… That evening the energy was kept high all around with wine, beer, and pizza during a fun event, for what some said was the most important prize – winning The Coffee Pub Trivia, sponsored by SliverChef. Eventually, after long discussions and a bit of deliberation on the answer of one question, Ben Gleeson’s team “The Older I Get, The Better I Was” emerged as the winner.

Thursday, day 3 of the competition was an intense day, with the judging of the milk category. Then followed a relaxing night with a little fun competition sponsored by Alternative Dairy Co. The Engine Room, led by Ainsley Harrison, was pumping out the coffees using the Fiamma coffee machines, supplied by Xtracted Espresso Solutions. The baristas were all volunteers at the Golden Bean, and they did an absolutely amazing job under intense pressure over the three days. During the lunch break, Caleb Holstein, co-founder of Green Square, a platform to bridge the gap between coffee roasters and green bean traders, where green bean prices are compared. He spoke passionately about how this can help the industry. Next was Alternative Dairy Co, who spruiked their range of alternative milks, in particular the rising star that is oat milk. During the evening, a new and innovative event took place at the racecourse - The Golden Hoop! The Golden Hoop was a fun, timed competition between teams of two, with one person required to make a coffee using Alternative Dairy Co oat milk with a latte art heart, then running to their teammate without spilling a drop. The teammate then had to skol the coffee, do a 360 spin, then shoot the basketball into a hoop. After successfully getting a hoop shot, they then ran back to their teammate, with both required to race around a set of poles back to the starting position with a carton of Alternative Dairy Milk. The team with the shortest time to complete this daunting yet interesting competition was announced the winner!

On Friday, the competition progressed with those in attendance continuing their coffee tasting and judging. During the lunch break, Sunbeam showcased their range of coffee machines and spoke about their interactions with coffee roasters. Callan from Zexa Clean gave a passionate speech about their new innovation of ditch3, cleaning products which come in reusable bottles and are provided with cleaning tablets. Just add water! This saves companies freight costs and is better for the environment. Later, Sean Edwards and Ryan Mein had an intense debate about “Who should pay for the price rise of a cup of coffee?” The conclusion, made by the roasters after the debate was that there should be a dollar increase in the price of coffee in all cafes. The roasters planned to bring this idea to life by suggesting the price increase to their cafes. Saturday morning was the grand finale: the coffee finals! Several people were secretly wishing that the coffee judging would not end. However, the top contender had to be chosen to close out the event. The highest scoring coffees from the previous few days were then tested by the head judges to get their final, hand-picked ruling.

Price Rise of Coffee When did you last update your price of coffee? By Ryan Mein, General Manager Cafe Culture This seemingly simple question triggered a robust discussion with the 150 attendees at the Golden Bean. I’ve also happened to speak to a close friend in the beer industry and you know what, they are laughing at us! While beer in pubs is increasing at roughly 50 cent increments year on year, he mentioned it felt like a cup of coffee has been four bucks for the past 10 years. It may be that it just ‘feels’ like, but perhaps it is closer to the truth than we would care to admit. It is a stark reality that our other business costs have increased over the past 10 years. Freight, green bean, equipment and staffing is definitely not getting any cheaper, so why have we, as coffee industry experts, sat back and not-yet increased the prices of coffee? At the end of our Golden Bean discussion, it was unanimously agreed upon that we, as the coffee industry, must increase the price of coffee… right now. How much? Well that will depend on each individual cafe, but as a general rule, an 8oz cup of coffee should be on average $5, where a one kilo bag of roasted coffee should be on average $35. Even at these prices we aren’t being selfish, and that isn’t what it is about. We are just ensuring longevity for cafes and coffee roasters during these difficult times. So let’s all get onto helping this industry we love so much by making this change in 2022.

Summing It Up After a thrilling and exciting few days with the interaction of diverse people together under the same roof, the Golden Bean Competition 2021 ended with a caffeinated cheer! In Memoriam It is with shocked and heavy hearts that we share with our community the passing of Jim from Little Big Dairy Co, as a result of a devastating accident just the week after Golden Bean 2021. The future of Golden Bean Globally. We have all been deeply affected by Covid restrictions and we all have been working hard to restore the future of our coffee industry, dealing with real problems like increased costs of green bean, high freight costs, decreased wholesale leading to cafe closures and also a massive labour shortage in hospitality. The last two years we have completed Golden Bean with a much smaller, scaled down version of the event in Australia, keeping the industry excited and engaged as well as enabling continued connections with peers. We are now looking at how we can improve and create a new version of Golden Bean moving forward as the world resets. We have always had the vision to make this event global and to have a play off between countries to find the world’s best coffee roaster. This year we will make this dream come alive with a Golden Bean play off between Australia/NZ and North America. We have chosen tentative dates in August for North America, to be hosted in Columbus Ohio, and we will have the Australia/New Zealand competition in Port Macquarie in October. We are also introducing a brand new event which will be a finale of medal winners in Hawaii in December. Creating a real global competition will allow coffee professionals to again join forces, providing a platform to improve their business knowledge and concepts through the networking opportunities and sharing of new ideas and friendships. Tell us a little bit about 3Brothers Coffee… 3Brothers represents quality Brazilian coffee producers. Our offering represents the diversity of terroir, production formats, performance dimensions and, above all, we carry the strength of the stories of the people that drive these production processes wherever we go.

What role do you play in this relationship between producer and coffee roaster? Our role is to build long lasting relationships with our producer partners and promote healthy mutual growth. We try and connect coffee and its stories with the world. In this relationship, we value closeness to producers and their families, discussing production aspects, management and market trends and empowering their social, socioenvironmental and sustainable development. We travel around Brazil looking for specialty coffee and special people, who can go around the world with us, from roça to international coffee shops.

This is what we call Expedition: a true immersion in the daily lives of producing families, seeking to understand their culture and their processes, in order to bring the product traceability in the richness of details.

What coffees do you offer from Brazil? We look for the best coffees in Brazil, results of special elaborated processes, and coming from different Brazilian regions. The coffee that comes to you originates from different regions of Brazil: South of Minas Gerais, Matas de Minas, Mantiqueira, Cerrado, Mogiana Paulista and from Caparaó, between Minas Gerais and Espirito Santo States. Our producer partners plant several varietals such as Catuaí Red and Yellow, Obatã. Bourbon, Yellow Caparaó, Mundo Novo, Icatu, among others, with different types of post-harvest, such as natural processes, semi washed, pulped natural, fully washed, honey, fermented.


Can you tell us a little about your analysis protocols for the coffee you offer?

Where do your coffee beans go? What countries are you distributing to?

Our headquarters are based in Poços de Caldas, Southern Minas Gerais. It is where we receive the coffee beans and continue their improvement process. In order to achieve product excellence, we have the support of professionals who work in the reprocessing of the coffee beans, ensuring a quality standard based on physical and sensory analysis. Samples are cupped and selected 6 to 10 times prior to shipment. Upon arrival, monitoring continues with new analysis. On our first contact with the coffee batch, an analysis takes place. We look at the beans still on the terreiros, checking with the producer the aspects of drying. The journey of physical and sensory analysis is complex. In every stage of the process, from processing at the farm to leaving the port, the results are checked in order to guarantee the quality and traceability of the grains. The analysis continues month by month, both in the countries where we are based, as well as in the originating headquarters in Brazil.

Our coffees are spread around the world. We have partners that import and distribute our coffees, as well as roasters that import directly from us. Each one of our headquarters aims at distributing the coffees selected in Brazil, with excellence, providing dynamic logistics and access to local roasters or neighbouring countries. At the moment we are distributing coffee in Europe, Asia, New Zealand and Australia.

The Future of Coffee. Barista Engage Workshop / Mentor Program:

Held at The Coffee Commune in Brisbane’s Bowen Hills, Café Culture’s Barista Engage workshop aimed to educate baristas and aspiring baristas, to the possibilities of their coffee career. The cafe and coffee industry has advanced into a hefty $13 billion segment. However, despite this, career advancement in many hospitality positions can seem rather dim. Once a hospitality superstar progresses into a management role within a business, the question will then start to stir, “What’s next for me?”.

Alternative Dairy Co’s Rachel Glasbergen was fully behind this project, looking at how the industry is changing after Covid and the importance of career path opportunities in the coffee and cafe industry. The Alternative Dairy Co business is built around sustainability and longevity of business and locking in long term futures in the industry is vital to their business ethos. “This is such an amazing program for our baristas, at a time when it’s most needed too”. Hospitality workers often find themselves in a kind of rut, lost in finding the right direction to take in order to follow their passion, but also with a desire to continue to move forward with their career. To discuss the possible career progressions for this booming industry, Café Culture introduced the first event of an annual Barista Engage Program. Sponsored by The Alternative Dairy Co (ADC), this free one-day workshop (which was also livestreamed to those who couldn’t attend) focused on the positive career paths for baristas who want to advance in their full-time career. Jeff is an experienced General Manager, Asia Pacific Sales Manager & National Sales Manager, used to managing people. He has a history of building brand recognition, sales and profitability across multiple countries simultaneously, combined with extensive experience in the development and achievement of budgets.

The story of Toby’s Estate began in 1997, when coffee loving lawyer Toby Smith made a lifechanging decision, swapping legal books for coffee cups to follow his passion for his favourite brew. In 2001, Toby’s Estate was born when he opened his very first cafe, espresso school and roastery. Toby shared some of his favourite moments of industry and travels created by his involvement in coffee.

SAM TAYLOR – SOUL ORIGIN.

Phillip started one of the fastest growing coffee companies in Australia known as Di Bella Coffee, and has seen global success in his international start-ups. He now sits as the CEO of The Coffee Commune. Phil discussed how his success story was built around creating a vision and strong team management.

Sam spent the 2000s and early 2010s running cafes and pursuing the craft of a barista. A National level competitor and now ASCA Latte Art Judge, Sam has spent the past 5 years sharing specialty coffee with Australia in his role as head of coffee for Australian franchise group Soul Origin. Sam, quite the achiever, had plenty to share about his ongoing journeys.

PAUL ASQUITH – JOSIE COFFEE. With 20 years already spent committed to coffee, Paul’s passion is for digesting the endless possibilities and knowledge surrounding coffee flavour development. Paul has done the full circular, starting on the tools as a barista now years later he is back behind the machine again in building a new business with a qualitative approach to all aspects of the coffee program.

RAIHAAN ESAT – INTERNATIONAL COFFEE TRADERS (ICT). Raihaan has been a part of the ICT for nine years, focusing his attention on the green bean sector of the industry. He has followed his passion for coffee by learning everything he can within the industry, from roasting to competing in the highest level of barista competitions. He now sits as the General Manager of ICT. Rai explained the art of being thankful and how to appreciate the journey of coffee.

We were looking for this workshop to not only be both educational and motivational, but also to be effective practically. Which is why we offered our attending barista guests the opportunity to be a part of an ongoing Mentor Program. Four lucky entrants, chosen for their passion and drive for the industry, received the opportunity to utilise our speakers as coaches, capturing their experience and knowledge in the industry to direct them towards the right path to achieve their goal within the industry. These lucky baristas sprawl from Brisbane to Sydney, and go by the names of Brendan Kesby, Melinda Brown, Anastasia Chandra, and Amos Sharma. “My goal is to be producing continuously high quality coffee and making every cup the best I can and with the highest level of efficiency possible!

Amos, for example, received the chance to join the Golden Bean 2021 as a barista, contributing to over 1000 coffees for judging over the duration of the event. “This has been so great, I’ve had so much fun here”, he smiled, unable to mask his happiness. Amos even had the opportunity to meet his mentors in person at the event, which really contributed to the positivity of his program. Amos is a fantastic example as to the future of the industry. Moving forward, the Barista Engage workshop aims to shine a different light onto the barista career path and take away Covid-19’s negative industry downturn. Practical solutions for the common good.

Recycling Coffee Grounds to make innovative water filters in the Developing World.

Who would have thought your daily cup of coffee could help bring clean drinking water to the developing World? Abundant Water, a local product, is making a difference Abundant Water (AW) is an Australian NGO, started in 2008 by Sunny Forsyth, an Australian engineer and the current CEO. Developing a groundbreaking manufacturing process using spent coffee grounds AW began in Laos by training local potters to create low-cost, low-tech easy-to-build clay water filters, to bring clean water to low-income schools and households. Sustainable and scalable AW intends for all its projects to be sustainable and scalable so that local communities develop the capacity to maintain the filter systems and spread them to neighbouring communities. To achieve this AW has developed its social business program by training and supporting local vendors to sell and install ceramic water filters in their communities. This model empowers local people and disadvantaged communities in developing countries, spreading the knowledge of the filter technology creating sustainable and scalable projects. AW works every day to support and improve the vendor network.

Access to safe drinking water in the developing World Access to safe drinking water is a major challenge in many developing countries. Drinking water often comes from unprotected water sources that harbor harmful pathogens and risk contamination. Those in rural communities are disproportionately affected, with women tasked with the burden of water collection. On average women in rural communities can spend up to 5 hours travelling to collect water, this not only greatly reduces their time but puts them in harms way to a variety of physical risks, including asthma, tuberculosis and pregnancy complications. The need for the AW project continues and the success of this approach demonstrates what could be possible across the globe. Through this current initiative we are looking to bring clean drinking water to Laos. It is estimated a mere 25% of health facilities have access to safe drinking water in Laos. Water pollution and contamination remain among the most serious of public concerns as many improved or so-called ‘safe’ water sources are often contaminated during the supply process. Most household water supply is tainted with E Coli and few households treat the water before consuming it. As a result, diarrhoeal disease continues to affect communities and limit their livelihoods despite better access to improved water supplies.

The lack of access to clean drinking water is directly linked to the spread of water-borne diseases, such as diarrhea, typhoid and dysentery. Due to the likelihood of obtaining these diseases and the difficulty in gaining access to ways to treat this water, average water consumption is quite low. Less than half of schools in Laos have access to safe drinking water.

The potters continue to develop the technology and improve the production and firing processes to make the filters more affordable and easier to maintain and service.

In northern Laos, a 2017 survey showed that more than half of the children attending claimed to be drinking no water during the school day. Worse, out of the children claiming to be drinking water, 48% were drinking untreated possible harmful water. This lack of access to clean safe water is one of the main causes of malnutrition in children, a major developmental issue Laos faces today.

How do clay and coffee ground filters work?

How coffee grounds bring clean drinking water to disadvantaged communities in Laos Coffee is a key player in producing our water filters. AW has trained Lao potters in this unique manufacturing technique mixing coffee grounds and clay to produce filters for use in their communities, their households and schools. The AW workshop trains local potters to make ceramic

The filters are simple in their design and use. Coffee grounds and clay are mixed with water and molded into the shape of a filter. After drying in the sun for a few weeks, the filters are sent to be fired in the kiln. During the firing, the clay will solidify but the coffee grounds will burn off leaving microscopic holes in the ceramic filters. These holes are big enough to let the water seep through, but too small to let bacteria pass through, therefore removing any bacteria from the water making it safe and drinkable. per year, and has installed over 10 000 filter sets across the country in the past 10 years, benefitting over 95 000 people, and close to 500 schools. AW has also created meaningful and profitable livelihoods for countless potters and local vendors who contribute to improving the health of their community and their local economy. An example of making a difference Abundant Water partners with schools in Laos to provide children with access to clean drinking water. In a partnership with Swiss Red Cross in 2019, 120 water filters were installed giving over 600 students daily access to safe drinking water. By providing access to clean water at school, children’s health is not only improved but their overall attendance to school increases and the likelihood they will continue on and graduate also increases. The flow on effect of clean water is undeniable to the improvement of livelihoods and sustainable futures. As a resource so readily available to us in Australia it is easy to forget the consequences of a lack of access to clean water and how this may limit children’s futures.

Article by Sean Edwards I too looked at fixing some long-term health issues whilst I had the spare time to recover. I had an accident when I was a teenager resulting in a broken nose and have been putting off nasal surgery for years. Before my operation I was determined to have a massive detox and gave away things like sugar, coffee, carbs and alcohol. I am not a big drinker but like most Aussie men I have one or two beers a day. This established habit was going to be a hard one to kick. I gave up drinking two weeks before surgery, not surprisingly came the constant urges to have a beer every afternoon after work. I had the surgery, which was horrific, and it took two weeks before I could even think about having a beer again. I then realized it had been a full month since I’d had a drink, so was still craving having a refreshing beer. My Son Charlie runs a restaurant cocktail bar called “Stick” and he had had many requests for nonalcoholic beer, he did his research and came up with a beer called “Heaps Normal”. I grabbed a four pack from him and was absolutely shocked that this zero alcohol beer tasted so damn real. The beer is brewed as an XPA and is hoppy and has enough gas in it to let you have a good beer burp. Thank you Heaps Normal as you made giving up alcohol very easy and I have now gone three months without the urge to have a drink. I take my fake beers with me to parties and don’t feel like I’m missing out on anything. I am even finding my mates pinching them out of the communal BBQ esky, not even realising they are zero alcohol and low in calories. The health benefits of no alcohol in the mix are, I have lost 10kgs and now sleep through the night

which I have not done for years. My wife even said I am a much nicer person and not the stress head she had been putting up with. Low alcohol beers are not new, but the quality has become a lot better and there are also now a bigger range to choose from. Most of the mainstream brewers are making an option as health trends has moved young people to drink less than their ancestors. The NA craft beer market is huge around the world and it’s already grown in the USA to a two hundred million dollar year revenue-making since 2019 to 2020. Australia has seen many Brewers taking up the challenge to design a good tasting beer that will appease this lucrative space. The price of a carton is still close to a fullstrength beer, so it makes sense for brewers to invest in the health trend. Heaps Normal was created by four guys who all had had enough of the world of real booze and could see a way they could produce a good tasting beer, with the added benefit of waking up in the morning with a clear head. The team is led by CEO Andy Miller who had many years in craft brewing. Andy’s brewing mates Peter Brennan and Ben Holdstock also joined the team after meeting each other in the craft beer industry. Peter’s long-term mate and pro-surfer Jordy Smith became the final member of the Heaps Normal crew. This fabulous four have lots of plans to create more great tasting beers over the next few years as the brand and segment grows. I am excited to be on this trend, getting back to good health and well-being while still enjoying a well brewed beer.

In June 2021 during the Café Pulse survey data capture and with the bi-annual survey now in its 8th year of cafe Industry research, we see that many coffee related businesses are in fact returning to positive trading vs. 2019. Many CBD coffee businesses such as cafes and restaurants suffered the early smaller dips in revenue at the start of Covid-19 as they were quicker to offer takeaway, local family menu changes and delivery options.

The hospitality industry is on average trading at or near pre-Covid levels, however many would argue that pre-pandemic there was an oversupply of coffee businesses in most Australian CBD locations, so this is possibly the result of reduced trading and cafe closures of under-performers and independent owners who have simply shut up shop. The oversupply of cafes in Sydney and Melbourne CBD’s and the inner suburbs before the pandemic had eased with the closure of some businesses, enabling venues still operating to attract more customers. Many of these smarter CBD owners moved OUT of the inner cities to relocate in new cafe businesses in outer suburbs and regional locations to reconnect their long term branding and extensive cafe business knowledge.

While sadly, many others simply left our cafe industry altogether due to the impact of Covid-19 reduced trading. It’s true that some cafe venues based in CBD office buildings and caterers remained down, while suburban and regional cafes and restaurants had recovered thanks to the greater numbers of adult people working from home. Areas such as Darling Harbour, Taronga Zoo and Sydney’s The Rocks, still remain down due to their reliance on interstate visitors, international tourists and cruise passengers. Truth is most Australian Cities have had the same effect, in many ways these inner city area’s mirror the Sydney CBD impacts of Covid 19 on cafe futures and opportunities still into 2021.

Mr Simmons said the pandemic had depressed trade by deterring office workers and shoppers from visiting the CBD until March 2021. “The positive is that we are now 85 to 90 per cent of pre-COVID trading and hoping to see that increase over the coming months,” he said. Mr Simmons, who also operates cafes in Brisbane and Melbourne, said the Sydney venue had been the quickest to recover in the past six months thanks to lower case numbers and less restrictions. He said the impact of COVID differed between states: “Brisbane was mainly back on track in early winter of last year, while Sydney took until the start of summer and Melbourne has been in perpetual state of FIVE lockdowns that have taken its toll on most CBD cafes struggling to return to the new normal trading patterns as seen in other states during 2021.

During the pandemic regional cafes have bloomed with many independent and franchised coffee chains experiencing solid growth in and out of lockdown restrictions. We interviewed Golden Bean Winners 2020, Glee Coffee Roasters in Wyong NSW, Mr. Ben Gleeson “Our regional cafes have mostly seen a steady increase as more people opt to work from home or at their local cafe. Although it has been a different story during lockdown, with most cafes financially trending down, they are needing to find creative ways to continue to stay viable - for most, it is about survival. I believe our industry will benefit greatly from this in the long run - as it has highlighted the financial benefit of becoming more adaptable. Another observation is that cafes which are easily accessible for a takeaway trade i.e. on a main road with easy parking access, have been far less impacted when compared to a ‘destination’ cafe that isn’t built around that same ethos. As a roaster, I’ve found that more people are opting to drink coffee from home. We can clearly see that trend through the traffic on our online store & personally, I’ve been asked more than ever to recommend home coffee machines for each different budget.”


What has developed during the pandemic is online customer trading that had accelerated the adoption of technology by coffee/cafe lovers such as ordering apps, direct order QR codes, table-ordering systems and loyalty programs. Even coffee and cafe menu app delivery options are now becoming extremely popular. We have found that the majority of people choose to work from home on Mondays and Fridays, so we found that the middle of the week are now our busiest days whereas it was always the brunch weekend crowds pre-pandemic. The future prediction post lockdown as the harsh Delta Virus restrictions cease will be a return of the relaxed Brunch weekend crowds in the new cafe normal trading. The NSW state government’s Dine and Discover scheme, which has been extended to June 2022, offers adults four $25 vouchers to spend on dining and entertainment. More than +5 million vouchers have been used in cafes and restaurants, including 500,000 alone used in the city of Sydney’s mostly affected areas. These dining vouchers encouraged customers to order more and choose premium items from the menu, even ordering items they wouldn’t normally try. For the future we will see a trend of smaller sized cafe’s in CBD / Inner City locations than that of the past “Coffice” style larger spaces, cafe’s with a focus on an enhanced takeaway menu of gourmet food and beverages. In outer suburban and regional locations cafes will both increase in overall size and menu offerings. Many existing cafes in these areas will renovate and refresh to cater for new local regular customers’ demands and many will adapt for Coffice style business meetings and staff catch ups Out Of Home (OOH).

With these dine in or delivery options, we have seen many cafes with tempting and innovative gourmet food menus and matching premium beverages all benefiting from this new normal of social trends over the past 18 months of Covid 19 trading. Drink Competition. We all know that plant-based milks make extremely good bases for cold blended drinks, so with some creative minds of industry we formulated an online competition that rewarded the clever café worker for their skills in presenting a delicious, iced beverage to a panel of industry experts. With $10 000 worth of prizes to be won thanks to ADC and Cafe Culture, the competition allowed the entrants to show their creativity with drink styling, pricing and overall taste. The drinks were presented each week with a different ADC plant milk - oat, soy, and almond - as an upload to each entrants Instagram profile. The cold beverage could incorporate any complementing additive, apart from alcohol, and be indulgent or super healthy. Drinks could also be any desired consistency, smoothie-style bowls welcome. Bluecow Gelato: “We have thoroughly enjoyed being a part of the Alternative Dairy Co (ADC) and Café Culture competition. Blue Cow Gelato was founded by the owner Donna Harding approximately 4 years ago who decided her love for gelato needed to be shared with our beautiful town of Port Macquarie. All our gelato is hand-made onsite by our gelato makers using only fresh and natural ingredients, incorporating traditional Italian methods. We are always up for new challenges and this competition saw our love for gelato and coffee combine to give you 3 of our most favourite summer beverages. All our staff joined in to make sure we offered the best dairy alternative beverages we could think of. The first week [of the competition] we couldn’t wait to share our staff favourite Biscoff Latte made with the ADC Oat Milk. Our Biscoff Latte was founded through a staff obsession with the Biscoff spread and we soon took up the challenge to see how many different ways we could incorporate it into our menu”.

Brew Box iced latteThis drink was created because here at The Brew Box we love to minimise waste. With spare coffee shots we created our icey cold latte. Ingredients and method is very simple, 4 frozen coffee shots and milk of your choice. We found the ADC milk perfect for our favourite drinks and was super creamy and yummy! Coconut iced chocolateThis one is another favourite of ours here at The Brew Box. Ingredients include, a handful of ice, 2 scoops of chocolate powder, drizzle of chocolate syrup for glass, 250ml of choice of milk, 2 pumps of coconut syrup. Method, put all in blender and blend until combined and drizzle glass with chocolate syrup. The ADC milk works super well with this drink and gives the best flavour as well.

Corey Williams The Blueberry Muffin Iced Latte was something I conjured up in around 2015. Which was about the same time Turmeric, Black Sesame, Matcha, Spirulina and other weird stuff was showing up on drinks menus all around the country. Using ‘superfoods’ to produce variations to the classic latte felt pointless to me. I figured the superfood phase would pass. But amazing flavours was bound to stand the test of time. And thus, this tasty beverage was born. Using a classic powdered sweet chai as a base, I added elements that would pair well and offer a completely different drinking experience. Ingredients/Method 500ml Highball Glass (or whichever you prefer) Add crushed ice (build on top) 30ml 1883 Blueberry Syrup 60ml Arkadia Spice Chai (mixed with water) 20ml Fraus White Chocolate (mixed with water) Topped with Alternative Dairy Co Almond Milk Finished with shaved white chocolate, fresh mint and blueberries.

The coffee is awesome, I always try the different ones on offer, but you can’t go past their special house-blend “Gratitude”. Awesome service as always. So happy to see the place filled with customers after the lockdown, it goes to show the quality of their coffee and amazing food. -

cafe reviews BANKS CAFE - by Kathryn Kraska In my younger years I made the weekly trek out to McInherney Park on the Hastings River in Port Macquarie for my absolute highlight of the week – to race sailboats. However, my latest return to the pristine banks of the Hastings River was with my family, not to sail but to chat over brunch at Banks Cafe in a Hamptons-style setting. The weather was a little damp and cool on the day, still the staff couldn’t have provided better attention and care, lowering the clear blinds and even offering to heat the outdoor seating space. I had only heard great things about Banks Cafe and can now categorically add my positive review to the rest. Three of the four in our group chose the Banks Breaky Roll with a coffee. True, hard to comment on the deliciousness of the other menu options when the consensus was bacon and eggs, however, if circumstances allowed, I’m sure fingers would have been licked post-meal. Of course, saying it was just bacon and eggs is a far injustice of what was delivered on the plate. Our coffees, including a coconut piccolo, were delightful and well received! The youngest in our group decided on the fruit toast and a babycino (she’s four, so coffee was not an option). The fruit toast was not just your average variety, it had proper substantial weight and goodness baked into it, and from a sneaky nibble I can highly recommend this Urban Grain Bakery selection on the menu. Yes, the location and therefore the view may initially be the reason to visit Banks Cafe, please take my word for it though, there is far more to like about this relatively new, stylish cafe right on the waters’ edge. 02 6583 2114 | bankscafe.com.au
