Carlos Lischetti By Cake Masters Magazine

Master in the art of modelling figurines, author, teacher and cake artist Carlos Lischetti is an inspiration to all cake decorators across the globe. Editor Rosie, had the honour of interviewing Carlos and brings you this exclusive and fascinating interview. Tell us about your background I started when I was a child, when I was 9 or 10 years old - I was really keen on being in the kitchen baking in Rosario, where I live (Rosario, Santa Fe, Argentina). I liked to try any recipe from all the books that I had on the shelves in my house; from pound cakes, light sponges and fruit cakes.

Everything started like child’s play. It was very relaxing for me to be in the kitchen. Every other kid enjoyed being out playing football, but not in my case. I really enjoyed being in my house doing cakes for my father or my sister; whenever I had the chance to create a birthday cake for my sister or for myself as well. Are you based in Argentina? Well I’m normally based either in Argentina or in Edinburgh, in Scotland. But you lose a bit of the language when you move to a different country, so I’m at the stage where I’m a bit rusty now.

Did you bake with your family? My mum and my granny – they were giving me a hand, but I was pretty much left on my own because they knew that I wasn’t doing anything risky or anything dangerous in the kitchen, just basic things. They helped with the oven and the equipment, or just to help get the ingredients at the local shops. Were you inspired by your family? Yes, absolutely, especially my granny. She’s a great cook and she loves baking as well. How did your interest progress? After that, when I was 15, I decided to sign up for training in cake decorating at a shop 10

near my house in Rosario, which were my first steps into cake decorating. I learnt basic recipes such as fondant or gumpaste or modelling paste; because in Argentina we don’t buy those things, we have to make them ourselves. That’s how everything started and this was my first training course in cake decorating.

How long did your training last? The training course lasted for a year. I feel lucky as I discovered from an early age that this is what I wanted to do. Some people are still struggling to find something they are really, really interested in or passionate about. But in my case, I had the privilege of getting to know what I wanted to be in my life since I was a child. Tell us about your training in Paris and London After I finished secondary school, I started to work in a local bakery in Rosario called Dulce y Salado. Sweet and Salty. It’s a local bakery that I worked in for 10 years. I started when I was 17 years old and I quit after 10 years. I decided to set up my own company in my house, where I used to bake and cater for weddings and birthdays and different things. While I was working in the bakery, I got the chance to sign up for classes in London and Paris. Back then, I was saving money to sign up for these classes in Paris at Lenôtre. It’s a well-known company on the outskirts of Paris – about an hour away. It’s a nice school where you learn all the basic French styles and French techniques. That really helped me to have a vision of every field in pastry and master a wider range of techniques, like chocolate tempering and ganache. How long were you in Paris? I spent a month in Paris, as it was all I could afford back then to be honest. It was quite expensive for me. I paid everything on my own; I didn’t have any help from the government or my family so that’s all I could afford. In a way, it was enough to come back home with a wide range of recipes and ideas.

Award winning cake artist and author Sharon Wee is known for her fun, gravitydefying, whimsical and extremely clean lines. Cake Masters Magazine was very excited to interview Sharon to find out more about her cakey world!

Where do you get your design inspirations from? Usually from cartoons, kids books or toys, store display windows, wedding dresses or just Googling ‘cute animals’.

Tell us a bit about you and your family I am originally from Singapore and moved around a lot when I was younger. I have one younger brother and we lived in Singapore, America, Guam and Vietnam, before settling down in Sydney, Australia. I now live with my partner, Nick, and my bunny, Bear.

What is your background - have you always made cakes full time? I have a degree in Media and Marketing and only got into cakes when I started my first corporate job. I hated the whole 9-5 thing and so I started looking for a hobby. I loved sweet things, so when I saw a class for cake decorating I thought, ‘hey, why not?’ I got obsessed and the rest is history! When did you start your caking career? I started in early 2006, when I enrolled in my first cake decorating class. When did you start your business? Sharon Wee Creations started in 2008.

Do you remember your first paid for order? What was it? Yes, I remember it fondly! It was two dozen Christmas themed cupcakes for a friend of a friend. It took me ages to model all the figurines and I charged about $50 for it! It was the first time it occurred to me that someone would want to pay me for what I do. How would you describe your cake style in three words? Cute, whimsical and fun.
