Our theme for this issue is children’s celebration cakes, and what a cute issue it is!
In this issue, we have four tutorials. Firstly, an adorable toy box cake by Tracey, from The Little Cherry Cake Company, that takes you through all the steps from stacking, carving, ganching and detailing to modelling the sugar toys. All our tutorials give you easy to follow, step by step photo instructions, to help you whatever skill level you are. If you do give this toy box a go, share it with us on Facebook, we would love to see what kind of toys hang out of your box! Next, we have a very beautiful, vintage style carousel by Kathryn, from Candytuft Cakes. Kathryn shows us how easy it is to make and structure the carousel, and how to create beautifully effective decorations, using moulds and cutters, for key detailing on the cake. It might look like a challenge, but when you break it down, it’s totally manageable! We also have a fabulous robot cake from Cheryl at Particular Cakes, and last but by no means least, Barbara from Sweet Janis gives us the best of both worlds and shows us how to make and decorate a split tiered cake. This design basis can be used for pretty much any combination, and we love how Barbara takes us through each step in detail, sharing her pirate and ballerina themed decorations too! We have a very special article on Baking Therapy in this month’s issue, where readers and organisations have shared personal stories with us to demonstrate the psychological and physical benefits of baking. New for Cake Masters Magazine, we share highlights of US based cake show “That Takes The Cake” - it’s great to be showcasing some wonderful artistry from across the pond. With two fantastic cake spotlights this month, we explore the inspiration behind Akiko White’s wonderful children’s story cake-illustration and Nisha Fernando’s fabulous cake to celebrate the 50th anniversary of The Sound of Music. Q: I struggle to get strong colours; they appear quite pastel and soft. Do you have any tips to get bold colours without adding too much? A: Building colours is important. Nothing in nature is one colour. For bright red, start with pink then add red. For purple, start with bright pink and then add purple. For orange, start with yellow and then add orange. With dark colours, it is best to add the colour to the liquid part of whatever you are making (cake, fondant etc.). For dark buttercream, take a small amount of the buttercream, melt it in the microwave and add colour to this. Mix well then beat into your buttercream. Remember, your colour will deepen as it sits.

Q: What is the best way to get really gold metallic colours on fondant? A: To get a nice shiny gold, start with a gold coloured icing or fondant and then paint or dry brush your gold on top. Make sure you are using a high-quality edible gold dust.
Rip Repairs
Q: Other than sticking a flower over a tear in sugarpaste, what is the best way to repair a rip flawlessly? A: The best way, in my opinion, would be to make some fondant goop by mixing a small amount of water with your leftover fondant, smooshing in a small bowl with a small offset spatula until it is a creamy paste, then spreading into your tear. Smooth out the top and buff with a little shortening on your finger until smooth.
Modelling Chocolate Mess
Q: I struggle to work with chocolate modelling paste, any tips? A: Modelling chocolate can be frustrating but, once you understand that you can’t hold
it in your hands, it gets easier. Either model on the table or upon a structure. Break off a piece of your set MC, work it in your hands until it is smooth but not oily and add it to your structure. Do not hold it while you add details, the heat from your hands will cause it to melt.
Filling Flood
Q: Can you help me fill cakes properly? When dirty icing, my filling seeps into the crumbcoat. A: Your filling might be too wet. If you are making your own filling, add a little cornstarch and bring it to the boil to thicken it.
Wasted Wafer Paper
Q: What is your opinion on eating cakes with a tonne of wafer paper? A: I love working with wafer paper but it is not the most palatable thing – but neither are sugar flowers. A lot of things on cakes aren’t really meant to be eaten, but we keep them edible so that if someone does eat it, it’s safe to do so.
