Around the WORLD... ...in 40 Cakes! I’m so excited to be bringing you this extra special edition of Cake Masters Magazine! This issue has taken over a year in planning, and boy is it spectacular!

40 amazing cake artists from around the globe were tasked with taking us on a journey around the world in cake. Inspired by landmarks, cultures, mountains, oceans, festivals and personal experiences, this has to be one of the biggest cake projects with such a cohesive travel theme!

The cakes that have been created for this feature are truly breathtaking – far beyond my expectations! The digital version of the magazine has additional pictures for some of the pieces, showing amazing attention to detail - I hope that you take advantage and get an extra cakey fix on your smart phone or tablet by downloading a copy in the AppStore or GooglePlay! Organising 40 cakes artists and 40 cakes was no easy task and could not have been achieved without the help from my super admins Tracy Rothwell and Avalon Yarnes – thank you ladies for all your help!

This month’s tutorials also have a travelling flavour. First up, we have a beautiful hot air balloon cake project, inspired by the novel and film, Around the World in 80 Days. Laura Loukaides, from Laura Loukaides Cakes, has put together an easy to follow step-by-step tutorial, showing you how to add the necessary supports to make a total show stopper! Keeping with the travel theme, Calli Hopper from Callicious Cakes shows us how she makes her signature Venetian inspired masks. These delicately decorated masks are so impressive, it is lovely to see how simple it is to create such beautiful decorations, you must give it a go! Even Jen and I had an afternoon tea that fits with the travel theme! We were fortunate enough to have a very unique afternoon tea experience on the BB Bakery Afternoon Tea Bus, combining sightseeing around London with delicious cakes and sandwiches! I really hope you enjoy this issue, I am not sure how we will top this one! All that is left to say is, please ensure your seat belt is securely fastened, your seat back and tray table are in their full upright and locked position, get ready to take off on a trip around the world - first stop Hawaii!

France, Paris A city that is known for romance, fashion, historic art, modern art, unbelievable landmarks, architecture, and unforgettable history. So many notable characteristics compacted in these city lines. How is one to fit all of these amazing attributes on to one cake? So I thought, what would be my top priority if I were to set foot in this momentous city? What is the first thing that truly comes to my mind at the first mention of “Paris”? And then, the child in me reveals herself, the PASTRIES and DESSERTS!

Mouth-watering, hand crafted macarons, Napoleons, éclair’s, bombes, fruit tarts, OH MY! Let’s not be fooled, I chose this profession for a reason, to eat my way out of it! I dream of visiting Paris and I imagine a map of the city with gold destination stars on all the premiere bakeries. I, of course, wouldn’t miss a sinlge one. The next thing that comes to mind of my childhood dream of Paris? That somewhat cliché, yet fabulous, idea of the classic French woman. Drenched in sophistication, black and white stripe shirts and their red scarves… I imagine she too dreams of French pastries and desserts. And that is where I found this piece, roaming around my brain space... a French woman, dreaming of French sweets. Each dessert is modelled with fondant and modelling chocolate to create a realistic impression of these desserts. The French woman is sculpted and covered in modelling chocolate and fondant, and then hand painted with food colour. A whimsical piece, representing only a small puzzle piece of a beautiful and amazing city.

Artisan Cake Company Greece, Athens I chose this location because ever since I can remember, I have been obsessed with the marble statues and sculptures of Greece. I remember pretending I was sculpting chunks of marble into beautiful statues when I was about 13, out of clay.

I thought this would be the perfect opportunity to really put my heart into a sculpture but instead of marble, I decided to go with some delicious white modelling chocolate. Choosing a proper subject for my sculpture was difficult at first but once I started thinking about Greek mythology (another obsession of mine as a teen) it all clicked in my brain. Athena! The Goddess Athens is named for would be the subject. I spent four days on her likeness alone. I Decided to go with a version of Athena that is strong and beautiful in her golden armour, her shield portraying the owl, an animal often associated with her. For the fountain, I actually purchased a fish tank pump so that I could make the fountain really work.

After a little YouTube research on wiring, I assembled my fountain from a bowl, PVC and my pump. All the details are also made from white chocolate. I really could have worked forever on this piece, I enjoyed it so much. I also learned that there is much more science involved in making a fountain than you might think. It took quite a long time to get all the little scoops perfect so the water flowed out of them evenly. This project made me fall in love with Greek mythology all over again and I’m thinking of some more chocolate sculptures are in my future.

Netherlands I’ve never been to the Netherlands but spent a lot of time looking at images online. The thing that struck me (other than the incredible colour), was the texture and depth of fields. The tulips seemed to go on forever and off in the distance were these majestic windmills. I wanted to convey that colour, texture and perspective in cake form. Initially I was thinking of floating tiers and played with a hanging cake design, but in the end I decided to try and keep it simple. I decided to focus on creating a single scene that played a bit with perspective to show the magnitude of the tulip fields. I have a series of paintings of flowers in fields in my home and immediately knew I wanted to use fondant confetti to create the illusion of flowers at a distance. I also liked the idea of a grey slat windmill... the contrast of a colourless structure against the vivid natural beauty appealed to me. The hardest part was finding different ways to make the tulips graduate from circles to a full flower and I have to admit I may have overthought this part. It was the first time I’d made tulips and I definitely made them en masse for this piece.

I hope I have done this beautiful country justice and the tulip fields are well and truly on my bucket list.

Callicious Cakes Italy, Venice Venice is a city of romance, festivities and opulent traditional carnivals with masks being the city’s iconic feature. Elements of glass beaded jewellery inspired me in red and green tier designs. I was taken with the canals and old architecture on the watery avenues and created the lower hand painted tier to this effect. The masks are all made from pastillage and decorated with royal icing. The top mask I was inspired by a traditional Venetian mask and re-created a handpainted detail of artist Canaletto’s “Grande Canale”.

India My design inspiration is based on the incredible vibrancy in colour and unique architectural styles of some of India’s amazing landmarks. From the ornate details of the Thillai Nataraja Temple to the grandness of the Taj Mahal - India has some of the most universally admired masterpieces of the world’s heritage. I really wanted to translate the skill of the artisans and craftsmen who created these amazing buildings into cake. I can only hope I did them justice.

I also really wanted to capture the bright colours and gorgeous details of the traditional Indian sari, the majesty and grandness of the painted elephants, and divine beauty of the lotus flower. India has always been fascinating to me and is on my top 10 places in the world that I want to travel to. The amazing culture and incredible architecture is what I am hoping to embody in to the cake and I hope it inspires others to also want to learn more about this truly fascinating country!

China My location was China which I was thrilled about as it is such an inspirational place full of colour and culture. The art and craftsmanship of the terracotta army is a life long wish to visit and see the art behind each man, horse and cart that was made hundreds of years back but is just as beautiful now as it was then.

I thought of the culture behind the place, the beautiful fabrics and boxes we see in films and books, so the idea in my head was to try to get the feel of old art and history behind the China we all love. I wanted to create a piece I’d love to see sat on my desk at home and inspire me and tell me a story of my chosen place. My piece is 2.5 foot tall and is made up of my very own terracotta man standing on top his plinth on a hand painted lacquer box . As I look at my piece, I smile and it makes me want to see the real thing even more now. It is fully airbrushed and hand painted onto white icing and I enjoyed every moment that went into this project!
