****As the headlines says, this contest is for AMATEURS ONLY**** The cooking takes place starting Sunday morning after the meat inspection with a turn in time of 1 pm for chicken, 2 pm for Tri-Tip and 3 pm for Pork Ribs Your $100.00 entry fee allows you to compete in the listed categories (pork ribs, tri-tips, chicken and tailgate decorations). Teams may compete in one or all categories. There will be 1st through 3rd place awarded in each category and
one Grand Champion.
WAIVER OF LIABILITY: In consideration of your accepting this entry, I the undersigned, intending to be legally bound, hereby for myself, my heirs, executors and administrators, waive and release any and all rights and claims for damages I may have against the Spring Valley Tailgate & BBQ Festival Committee, the Spring Valley Chamber of Commerce, Cali Comfort Restaurant, the Los Toros Football & Cheer organization or any individual or group responsible for the organization of this festival. I hereby grant permission to the Spring Valley Tailgate & BBQ Festival Committee and or/agents authorized by them, to use any photographs, videotapes, motion pictures, recordings and any other record of this event for any legitimate purpose. WOOD, CHARCOAL OR GAS COOKERS MAY BE USED FOR THIS COMPETITION!
1. THIS CONTEST IS FOR AMATEURS ONLY! 2. Early Bird Teams must register by September 25, 2010. Deadline to register is October 10,2010. 3. Each team will be given a 10x20 area for their $75.00 or $100.00 entry fee. If additional space is needed please purchase another spot. 4. Each team must provide their own meat, cooking ingredients, cooking devices, utensils, fire extinguisher, shade tent & prep table. (Styrofoam containers for food turn-in will be provided & should be picked up at check-in). 5. It is the responsibility of each team to see that their contest area is kept clean. Each team will provide their own container and extra garbage bags. A dumpster will be just off site for your convenience. 6. The Chief Cook (name on application) will be held responsible for the conduct of his/her team and guests. 7. No pets are allowed on the festival grounds. 8. No outside alcohol is allowed on Event grounds. 9. Spring Valley Tailgate & BBQ Festival Committee and the Spring Valley Chamber of Commerce will be not be held responsible for tents, cookers, equipment and/or personal items left on grounds before, during or after the contest. 10. Event Committee reserves the right to make additional regulations and/or changes to existing regulations as the situation warrants. Decisions of Event Committee are final. 11. Violations of any rules and regulations of the contest may result in disqualification, expulsion from the grounds, and/ or disqualification from future participation.

Check-in/Setup will be from 6am-7am October 17, 2010. Meat inspection will be immediately following check-in. Turn in time will be 1 pm for chicken, 2 pm for tri-tip and 3 pm for pork ribs. Blind Judging will begin at 1 pm. Awards will be presented at 3:30 pm. Clean up and breakdown at 4:00 pm. Entire site must be torn down and free of litter by 5:30pm
Rules of competition 1. Wood, Charcoal or Gas Cookers may be used for this competition. 2. Food must be presented to judges tent in 9x9 Styrofoam containers (provided by the organizer). 3. Entries will be judged on Appearance, Taste & Tenderness using Committee scoring rules. 4. Meat inspection will take place at check-in. 5. Meats may not be pre-cooked, sauced, spiced, injected, marinated in any way, or otherwise pre-treated prior to meat inspection. 6. Meats must be maintained at a temperature of 40 degrees Fahrenheit or less prior to cooking and at or above 140 degrees after cooking. 7. People’s Choice Awards & BBQ Samples: Each team will be allowed to sell BBQ samples to the public for $2. The People’s Choice will run from 1:30 until 3 pm. Attendees of the event will purchase People’s Choice tokens for $2 for a 2 oz. sample with 50% going to the team and 50% going to Los Toros. Tokens collected by the teams will be turned in for cash at the token table by 6 pm. Meat must be served out of a covered server and kept at 140 degrees. Teams are encouraged to inform the committee if they are interested in selling samples.
