To Our CCAE Community, Since April 2020, we have run over 900 online classes thanks to the dedication of our talented instructors and the persistent curiosity of our students. It is because of the support of our community that we have been able to offer highquality online learning opportunities as we endure these challenging times together. In this catalog, you will find a combination of engaging online classes, fun summertime outdoor classes, and a small selection of in-person classes that will meet inside our historic buildings on Brattle Street at a limited capacity. We have outlined our in-person class safety guidelines at ccae.org/in-person-classes. We also encourage all able students to receive their COVID-19 vaccination to ensure the safety of other students, instructors, staff, and community members. As more and more people receive COVID-19 vaccinations, we are optimistic about offering a wide selection of in-person classes in the fall term. We will continue to follow state guidelines and limit the capacity of classes in order to give students more space and more personalized attention. We look forward to seeing many more of our students and instructors in-person again, and we will also continue to offer online classes in all departments. Thank you for your support! Our online classes are interactive. You are welcome to cook along in our cooking class by choosing a few or all dishes to cook with or just watch and learn, unless otherwise noted. For online classes, you will receive a link and recipe packet once the class is confirmed to run, which may be between 3-7 days before the class starts.

BASIC KNIFE SKILLS Lars Liebisch | Private Chef

Demonstrations by professional chef, Chef Lars Liebisch will show you how to properly slice, chop and dice. He will demonstrate cutting techniques for a variety of different vegetables. You’ll learn about the many types of knives and how to use them for different tasks. Chef Lars will show you how to sharpen your knives at home and how to take care of them. We recommend cutting vegetables along only if you are comfortable with your own knife and can multitask as the instructor may not troubleshoot any issues in real time. A large cutting board and a chef’s knife are best suited for this class. If possible follow this class on a larger screen device like a laptop or tablet. FRENCH MACARONS AT HOME Evelyn Schichner | Culinary Instructor

French macarons are sweeping the nation. These delicate and colorful almond confectionaries will be a sweet ending to your homemade meal. In this online interactive class, you’ll learn step-by-step techniques to make shells and various fillings including Swiss buttercream and ganache. Impress your family with your delicious macarons.

Tea and pastries are a match made in heaven. Let’s bring a British vibe to your home kitchen and make delicious afternoon pastries paired with your favorite tea. ARMENIAN COOKIES AND COFFEE Linda Khachadurian | Chipper Confections Sugar Art, chipperconfections.com

Join Chef Linda, our native Armenian chef instructor, and learn how to make Armenian cookies and coffee while learning about the vibrant creative culture in Armenia. We’ll be kneading and learning the technique to sculpt perfectly symmetrical khurebehs, which are traditional Armenian sugar cookies, and mahmours, which are artisan, filled cookies that use a similar shaping technique as kuftehs. The cookies are filled with a buttery date and walnut mixture. We’ll serve the cookies with homemade rosewater infused marshmallow dip. Nothing is better than having delicious snacks in the afternoon during summertime. We’ll make two popular fried snacks from scratch. We’ll make chocolate cannoli with ricotta mascarpone cream and churros with chocolate sauce and vanilla cream sauce. You don’t need cannoli molds to cook along. CHOCOLATE HALVAH COMPASSION CRUNCH TART WITH SUGAR ART Linda Khachadurian | Chipper Confections Sugar Art, chipperconfections.com

As seen on episode 2 of Food Network’s Candy Land, our CCAE instructor, Chef Linda has been cast as a sugar artist. We’ll make a variation of the triple lemon compassion crush tart she made on the show, using her original chocolate halvah recipe. The magical touch of this tart came from her unique sugar art and backstories for the confections. You’ll learn how to make all the components of this tart including tart crust, chocolate halvah custard, meringue, and sugar art. You’ll hear the story behind the show, the cast, and the cause to raise awareness of global issues, such as safe water, through her partnership with the nonprofit Pure Water for the World.

Let’s explore the magical world of matcha with Kelly who is a matcha lover, a slow foodie, and a supporter of sustainable food. You’ll learn about the history and culture of matcha in Japan and how to source good quality matcha in the USA. You’ll learn a proper way to make two traditional matcha teas including usucha and koicha. Then, we’ll turn the matcha tea into three different mocktails. MASSACHUSETTS CHOCOLATE HISTORY WITH A TASTING KIT Victoria Kichuk | Professional Chocophile, cocoabeantown.com

The state of Massachusetts has many historical connections to chocolate, starting with the Revolutionary War and continuing from that point in time, including being the home of the very first chocolate factory in North America and the first forays into commercial white chocolate production. However, expanding our understanding of chocolate includes looking at it from a global perspective. Learn more about chocolate’s sweet local history as well as its complicated global future with this fascinating program brought to you by Victoria Kichuk of Cocoa Beantown. Let’s elevate your cookies with beautiful royal icing flowers. You’ll learn how to create a number of different royal icing flowers including apple blossoms, primroses, dahlias and more and we’ll use them on cookies. You can choose to flood your cookies in advance and use it plain. Once you understand the foundation of royal icing flowers, you can replicate the techniques as decorations on cookies, cupcakes, or cakes. You can use the same techniques for buttercream icing. You’ll need basic supplies including royal icing, a flower nail, multiple decorating tips, and cookies. Let’s make the most out of the bountiful fresh herbs this summer. We’ll make delicious steak with herb butter and chimichurri sauce, a refreshing salad, freshly baked herb crackers and dips, and decorative summer focaccia. While we cook, we will talk about how to store and cook with different fresh herbs.

You’ll learn the secret of the beautiful buttercream flowers that look sophisticated but actually very easy to make. We’ll talk about different Russian piping tips and how each tip will create a different look on cupcakes. You’ll learn how to color and squeeze the buttercream in a proper way to get beautiful flowers like magic. You’ll need basic supplies including buttercream, multiple Russian decorating tips, and plain cupcakes. BOSTON CHINATOWN: SUGAR RUSH TOUR

Come and learn about techniques for grilling and marinating BBQ steaks in our CCAE open space courtyard. We’ll grill and enjoy steaks, chicken kebabs, and shrimp skewers. Chef Lars will reveal his techniques to make homemade BBQ sauces, marinades, and rubs. We’ll also prepare side dishes including collard green coleslaw, watermelon salad, Mexican grilled corn, and grilled peaches with cinnamon sugar butter. HISTORICAL TOUR AND PIZZA IN THE NORTH END Elliot Savitzky | Culinary Instructor, Chinatown Expert

This historical tour is as much about history as it is about pizza. We’ll learn about the history of the North End and wind up sampling pizza from 3 of the best pizza restaurants. We’ll talk about history from the 17th century by visiting many sites within the one square mile of the neighborhood. The tour will convene on Cross Street between Hanover and Salem Streets. The tuition includes the cost of pizza, taxes, tip, and admission fee to the Old North Church (depending on Covid restrictions at that time.) If you are bored with steamed lobsters with butter, come and join this class to explore a new world of cooking lobsters. You will learn different techniques to cook lobsters from preparation to serving. You’ll also learn how to break down the lobsters before and after cooking. Let’s cook up some lobstah in our CCAE open space courtyard.

Enjoy a walking tour of Boston Chinatown. We will be visiting many different locations and retail establishments that specialize in desserts and sweet snacks. We will stop by and take out some sweet treats including sweet waffles, boba tea, rolled ice cream, and more. During the walk, we’ll talk about the menu and how to order for each type of sweet treat so you can come back and enjoy Chinatown on your own. HISTORICAL AND ARCHITECTURAL TOUR AND DINNER IN CHINATOWN Elliot Savitzky | Culinary Instructor, Chinatown Expert

The tour includes the history of Chinatown from 1840’s till today and the major events that impacted its development. The history can be traced by observing its architecture, anywhere from Anglo-Saxon brick buildings to the art deco style incorporated into the garment district office buildings. The walking tour will take 1 hour and 15 minutes and followed by dinner in Chinatown. The tour will convene at Pai Fung Arch at the end of Beach Street in front of the Hot Pot Buffet restaurant. Learn how this electric pressure cooker can make it easy to serve meals that taste like you spent all day in the kitchen. With the Instant Pot, you can master eggs in different doneness in no time. We’ll make chicken adobo with jasmine rice, kabocha squash with caramel sauce, and pineapple upside down cake. Don’t worry if your Instant Pot is still in the box. The first part of this session will be getting to know your Instant Pot: how it works, which are the essential functions, four pressure release methods and how and when to use them. Salmon is an exceptional fish. It makes healthy meals that cook quickly and taste great. We’ll talk about how to buy fresh salmon and how to prepare them. Lars will start with how to break down the whole salmon into different cuts. Then, we’ll make salmon crudo with fennel and celery, potato crusted seared salmon, baker’s rub salmon served with caramelized fennel and garlic sautéed spinach. We’ll also talk about how to select fresh cuts at the market and proper methods for handling and storage.

Explore the wonders of farm to table cuisine in New England. Summer is the best time for the bountiful produce and vegetables. We will highlight different vegetables from your local farmers’ markets prepared with ease with the taste of Italy. We’ll make baked zucchini, fresh basil, and mushroom frittata, Tuscan beans, escarole, and heirloom tomatoes with rigatoni, Sicilian stuffed peppers with roasted eggplant, rice, and seasonal vegetables, baked summer squash and parmesan casserole.

It’s about time to enjoy nice weather and fresh air. Whether you are planning to set up your picnic basket or picnic table in your courtyard or in a public garden, it’s always fun to bring your homemade French food. In this online interactive class, we’ll make the ultimate crudité platter filled with a white bean dip and a rainbow of vegetables. MAKING VEGAN PASTA IN THE SICILY FARM Fabio Santuccio and Annarella Susini | Farmers and Chefs, Zisolhouse Farm

In Zisolhouse farm, fresh ingredients are the key elements to make delicious and nutritious food and wine. Before we start making pasta, let’s have a quick tour of this farm and see how olive and lemon trees have been cultivated. In this online interactive class live from Sicily, Fabio and Annarella will teach you how to make pasta from scratch using semolina flour. Then, we’ll turn our pasta into Tagliolini al limone. Sunday morning is the best time to get up, relax, and have a delicious brunch. How’s about doing a virtual trip to Russia and making Russian brunch in the comfort of your own kitchen? In this online interactive class, we’ll make Blini and Blintzes (Russian pancake), Mannaya Kasha (semolina porridge) served with jam or fresh fruits, Sharlotka (Russian apple cake). With different plating styles and flavors with fire and sparkles, we’ll have fun learning and making brunch. We’ll begin with magdalenas, Spanish lemon cupcakes. We’ll make Spanish potato salad where this recipe is like no other. We’ll also make famous tortilla espanola, Spanish omelet. We’ll bake huevos flamenca, Andalusian flamenco eggs in a sofrito bed with layers of chorizo and serrano ham. A special Spanish flan will crown our brunch. AFRICAN COOKING: FLAVORS OF CAMEROON Mirabel Mainoh | Owner and Chef, motherlandcookingxperience.com African countries are diverse in culture and rich in traditions. We’ll take you to Cameroon and experience Cameroonian culture through cooking, storytelling, and music. Join Mirabel, the founder of Motherland Cooking Xperience, the only African cultural experience in America. We’ll make Cameroon chicken potato hot pot, a one-pot dish of chicken and potatoes cooked in tomato sauce, fresh herbs, and lots of vegetables. We’ll also make sweet banana puff puff and finish up our meal with a delicious cocktail. While you sip your cocktail, you’ll enjoy a live music performance from Mirabel. CCAE offers classes throughout the summer at beginner, intermediate, and advanced levels taught by highly-trained and experienced instructors. Communicative, learner-oriented teaching methods and the multicultural atmosphere facilitate not only language learning, but also friendships with people from all over the world. Our online classes can be joined from everywhere and this allows us to welcome back students who left the Boston area and meet at different time zones. We use the Common European Framework of Reference (CEFR) to assess students and establish learning goals. Approximately 422 million people worldwide—both Muslim and Christian—speak Arabic, which includes three varieties: Classical Arabic (the language of the Islamic religion), Standard Arabic (official language, news, documents, etc.), and colloquial Arabic (different dialects). Spoken both in the Arabian world and in several Asian and African countries, Arabic was adopted as one of the six official languages of the United Nations in 1973. Learn the basics of sign language as a first step to developing receptive and expressive skills. In this class, we will cover verbs from each group of French verbs. We will conjugate these verbs in three tenses of l’indicatif, the present, the future, and the past tense (passé composé) with practice and correct pronunciation. Pour l’édition estivale de “Á Livre Ouvert” je propose la pièce de théâtre La guerre de Troie n’aura pas lieu de Jean Giraudoux. Vous connaissez déjà l’histoire: Paris a enlevé Hélène et l’a ramenée à Troie. Ménélas, avec une armada de soldats grecs, les poursuit pour laver l’affront. Deux camps s’affrontent au sein même de Troie: Hector et Andromaque veulent rendre Hélène aux grecs et ainsi éviter la guerre. Priam et Paris veulent garder Hélène quelles que soient les conséquences. Jean Giraudoux écrit cette pièce de théâtre en 1935 au moment où l’Allemagne succombe à la rhétorique nazie et construit une machine de guerre pour assurer sa domination sur le vieux continent. Giraudoux crée ainsi un parallèle incontournable entre la mythologie grecque et l’entre-deux-guerres en Europe. GERMAN The German language boasts about 120 million native speakers. It is the most widely spoken native language in the European Union. The German-speaking countries are ranked fifth in terms of annual publication of new books, with one tenth of all books (including e-books) in the world being published in German language. Count yourself among its learners in this series of engaging classes, emphasizing spoken production and interaction. CINE-CITTÀ: PINOCCHIO—ITALIAN LITERATURE INTO FILM Maria Grazia Lolla | Native Speaker, Ph.D., University of Cambridge

One of the most translated books in the world, Le avventure di Pinocchio by the Florentine writer Carlo Lorenzini, better known as Collodi, originated in nineteenth-century Italy. The story of a wooden puppet who became a boy has been the subject of countless retellings. The most influential by far is the 1940 cartoon adaptation by Walt Disney which gave international currency to a book that resonated quite differently in its native nineteenth-century Italian context. Disney’s interpretation significantly departs from Collodi’s original. So does its latest film adaptation by Italian director Matteo Garrone. We will dedicate the first class to Collodi’s book and the second to Garrone’s 2019 film. Students of all levels of Italian are welcome as long as they are prepared to immerse into the language. LETTURA E CONVERSAZIONE IN ITALIANO Pasquale G. Tatò | Native Speaker and Professional Linguist

This is an advanced class for students who have had the equivalent of two years of college-level Italian and have acquired basic reading, speaking, and listening skills in the Italian language. A book, typically a collection of short stories, will be read in class and discussed from the standpoint of both form and content. The classroom discussion will also be the basis for conversation and occasional grammar review. Additionally, the instructor may introduce other Italian-language materials, such as newspaper articles, grammatical exercises, well-known Italian short poems, as well as topics of current relevance for classroom discussion and conversation.

Inspired by an episode in Dante’s Divina Commedia, Giovanni Boccaccio’s novella about the love travails of Nastagio degli Onesti in turn became the subject of a cycle of four paintings by Sandro Botticelli. The story’s central scene where, to teach a lesson to women who refuse themselves to suitors, a spurned lover takes revenge on a girl who did not reciprocate his affection by chasing her, dismembering her body and feeding her heart to the dogs, has puzzled generations of readers and viewers. We will read Boccaccio’s novella closely and compare it to parts of Canto XIII from Dante’s Inferno and to Botticelli’s figurative renderings as well as delve into some of the many literary and anthropological interpretations that have been offered by scholars. Japanese is spoken by more than 125 million people around the world—primarily by the inhabitants of Japan, but also by populations of Japanese origin in Hawaii, as well as in North and South America. Nearly 4 million people around the world study Japanese. Japanese is an agglutinative language whose origins are not clearly established. The writing system consists of two syllabaries—Hiragana and Katakana—and the Chinese Kanji characters.

GET READY FOR THE OLYMPICS: LEARN ABOUT JAPAN AND JAPANESE The Tokyo Olympics and Paralympics, which had been postponed for one year, are finally approaching this summer. The enthusiasm and excitement of this global sports festival is accompanied by challenges posed by the ongoing pandemic. We will guide you safely with a virtual tour. Although the Olympic Torch Relay and the flame's journey across the 47 prefectures of Japan couldn't be carried out as originally planned, we will visit some of the places. Especially as for Tokyo, which will be the main venue of the Olympics/Paralympics, we would like to share useful information (for your next in-person trip!), such as history, geography, and tourist attractions etc. Also, let’s practice Japanese essential phrases as if you were on a trip to Japan! In this course, we will listen to a few examples of Charles Ives’ music to explore his life and how he thought his new music was truly fit for a modern 20th-century vision of America. A thoroughly American composer—who promoted American ideals and debated a young Franklin D. Roosevelt during World War I—he was also a local New Englander. He was inspired by New England stories, ideals, and traditions, as seen in songs like “The Unanswered Question,” “Holidays Symphony,” and “Three Places in New England.” An accomplished organist, we’ll also examine some of the eerie organ-like tones in some of his symphonies.

Can science be unbiased? Is your body yours after you die? How and when should governments control people’s behavior for the greater good? In this course, we’ll discuss episodes in medical history that have implications for medical ethics and for the role of health and the body in society more broadly. Some topics we’ll cover include eugenics, medical graverobbing, consent issues in research, and Typhoid Mary. Each class meeting will include a mix of lecture and discussion, with about 30 minutes of reading per week between sessions. All course reading materials will be provided.

Two of the world’s most charismatic self-made scientist-engineers, Thomas Edison and Nikola Tesla, each had very different ways to exploit this force of Nature. One thought electricity could make an enormous profit, while the other thought it could be had for free. The ultimate test between these two brilliant but eccentric men came down to an argument on the best way to kill an elephant. Where was this source of “free electricity” from Tesla? Why was a certain circus elephant in trouble and which electrical promoter engineered her doom to prove his form of electricity was the best? Japan modeled itself as the Asian-Pacific equivalent of the British Empire and made friends with Britain, took on the Russian Empire, and joined sides with Britain and France during World War I to secretly expand its imperial ambitions. In the end, Japan’s methods to integrate Korea and China with a massive colonization and exploitation program, and the still-puzzling decisions to attack the United States in 1941 and team up with Nazi Germany, proved its undoing. Create a low relief mold made with ceramic fiber (a soft material easily cut or torn) on top of which 3 layers of glass (8” x 11”) will be kiln-fired at 1500°. The glass sheets will become one solid piece and take the imprint of the texture and the shapes of the fiber pieces exactly like you handcrafted it. You will have the option to bring colors to your project by cutting colored pieces of thin transparent fusible glass. Your instructor will fire your creation in his own kiln. Through a series of demonstrations and discussion, you will be introduced to a variety of wood carving techniques and styles, all of which can be carved with a modest set of small wood carving tools. We will explore surface texture, low-relief, raised line, and incised carving. Each class will include a project demonstration, and between classes you will have an opportunity to create the project. We will share our work and the instructor will answer questions before moving on to the next carving project. Learn the basics of glass fusing techniques and play with colored glass pieces, glass powders, and frits, stringers, and glass beads. After a series of fun exercises, you’ll design and create a 4”x 4” dish and one 8”x 8” plate or 8” diameter bowl or a 4” x 13” channel plate. These pieces will first be fused flat, and then “slumped” in a second firing to give them their final shapes. Your fused pieces will be available at CCAE within a week after class. Qi Flow is a grounding hybrid class that calms and collects your internal forces to develop inner strength. In this 8-week class, you will learn a combination of ancient techniques from Tai Chi, Qigong, and breath work to harmonize and strengthen yourself from the inside out.

In this course, you will be guided through gentle patterns of movements designed to calm the nervous system and transition the body out of neurological cycles of pain. Each class will consist of an Awareness Through Movement lesson from the Feldenkrais Method, a neuromuscular reeducation system derived from human motor development, martial arts, and physics. The lessons aim to be easy, engaging, and pleasurable. After the guided portion, there will be time to share, discuss, and ask questions about our experiences. Each lesson will be recorded for use in at-home personal practice during the week. On the Boston side of the Charles River, students will learn about the development of Storrow Drive and the Esplanade. This class will meet offsite. Herbal tincturing has been a form of preserving the beneficial properties of a plant for centuries. In this hands-on course, students will curate their own herbal tincture that they will later be able to strain and bottle at home. The basic folklore and scientific principles behind this process will be discussed. Wild foraged plants will be used in this course, alongside a few other herbs students can choose from. Students will learn basic processing techniques and take home a detailed pamphlet of the processes discussed. ONLINE CLASSES

CCAE reserves the right to cancel classes due to low enrollment or other considerations . We begin cancelling classes with low enrollment up to 10 days before a class is scheduled to start, so register as early as possible in order to reserve your seat and help it meet the minimum enrollment .

Online classes take place on Zoom . If you are unsure if you are able to use Zoom or if your camera and microphone work, we recommend testing it out by joining a test meeting before your class starts at zoom . us/test .

An $8 registration fee is charged for any class whose tuition exceeds $25 . Only one registration fee is charged per person per term . The registration fee is not refundable if you withdraw from a class . The fee is refunded if CCAE cancels your class or if changes to the class schedule prevent you from attending . This does not apply to individual classes rescheduled due to inclement weather or other significant factors beyond CCAE’s control.

Credits and refunds

If you withdraw 1 week or more before the start date of a class, we will issue you a course credit (good for 18 months from the date of issue) . If you prefer, we will refund the class tuition minus a $10 processing fee . Withdrawals from courses and events under $25 are only eligible for a course credit . No cash refunds are given .

Online class withdrawal policies

For multi-week online classes, if you are unhappy with the format of the class, you may withdraw up to 24 hours before the second meeting of the class for a full class credit (no refunds given) . For online Food and Wine classes, you can withdraw three days or more before the start date of a class for a class credit . After we send out a Zoom link and a recipe packet, no credits or refunds will be given .

For one-day online classes (with no curbside pickup component), you can withdraw the day-of for full class credit (no refunds given) . For online classes with curbside pickup, you can withdraw up to two days before the date of curbside pickup or the first class meeting, whichever comes first, for a class credit minus the materials fee (no refunds given). If you attended the first class or already did curbside pickup, no credit or refund can be given .

Transferring to another class

For classes that are three sessions or longer, contact the registration office before the second meeting of the class in order to transfer . For one- and two-session classes, you must contact us at least five business days before the start of the class. For all cooking, wine, beer, or spirit classes, you must contact us at least five business days before the start of the class. If there is a difference in price, we will issue a class credit or there will be a remaining balance to be paid . Refunds are not given .

We may occasionally take pictures of students in our classes for use in promotional materials. Your enrollment in a class indicates your approval.

Student expectations for online classes

Classes will take place on Zoom . Do not share the Zoom meeting invitation and link with anyone who is not registered for the class . Classes will take place at the time they are scheduled . One registration is for one person . If you are planning to invite your spouse, partner, or friend to attend this online class with you, please sign up for an additional seat . Inform anyone in your household that you will be in a class; if your camera and/or microphone are on, they will be seen and/or heard .

For the security of our instructors and students, please do not record the class . Please do not take photos of the class without the permission of the instructor and the other students .
