The History of Christmas Carols Carols were first sung in Europe thousands of years ago, but these were not Christmas Carols. They were pagan songs, sung at the Winter Solstice celebrations as people danced round stone circles. The Winter Solstice is the shortest day of the year, usually taking place around the 22nd December. The word Carol actually means dance or a song of praise and joy! Carols used to be written and sung during all four seasons, but only the tradition of singing them at Christmas has really survived! Early Christians took over the pagan solstice celebrations for Christmas and gave people Christian songs to sing instead of pagan ones. In AD 129, a Roman Bishop said that a song called 'Angel's Hymn' should be sung at a Christmas service in Rome. Another famous early Christmas Hymn was written, in 760AD, by Comas of Jerusalem for the Greek Orthodox Church. Soon after this many composers all over Europe started to write carols. However, not many people liked them as they were all written and sung in Latin, a language that the normal people couldn't understand. By the time of the Middles Ages (the 1200s), most people had lost interest in celebrating Christmas altogether. This was changed by St. Francis of Assisi when, in 1223, he started his Nativity Plays in Italy.
The people in the plays sang songs or 'canticles' that told the story during the plays. Sometimes, the choruses of these new carols were in Latin; but normally they were all in a language that the people watching the play could understand and join in! The new carols spread to France, Spain, Germany and other European countries. The earliest carol, like this, was written in 1410. Sadly only a very small fragment of it still exists. The carol was about Mary and Jesus meeting different people in Bethlehem. Most Carols from this time and the Elizabethan period are untrue stories, very loosely based on the Christmas story, about the holy family and were seen as entertaining rather than religious songs. They were usually sung in homes rather than in churches! Traveling singers or Minstrels started singing these carols and the words were changed for the local people wherever they were traveling. One carols that changed like this is 'I Saw Three Ships'. When Oliver Cromwell and the Puritans came to power in England in 1647, the celebration of Christmas and singing carols
was stopped. However, the carols survived as people still sang them in secret. Carols remained mainly unsung until Victorian times, when two men called William Sandys and Davis Gilbert collected lots of old Christmas music from villages in England. Before carol singing in public became popular, there were sometimes official carol singers called 'Waits'. These were bands of people led by important local leaders (such as council leaders) who had the only power in the towns and villages to take money from the public (If others did this, they were sometimes charged as beggars!). They were called 'Waits' because they only sang on Christmas Eve (This was sometimes known as 'watchnight' or 'waitnight' because of the shepherds were watching their sheep when the angels appeared to them.), when the Christmas celebrations began. Also, at this time, many orchestras and choirs were being set up in the cities of England and people wanted Christmas songs to sing, so carols once again became popular. Many new carols,such as 'Good King Wenceslas', were also written .
New carols services were created and became popular, as did the custom of singing carols in the streets. Both of these customs are still popular today! One of the most popular types of Carols services are Carols by Candlelight services. At this service, the church is only lit by candlelight and it feels very Christmassy! Carols by Candlelight services are held in countries all over the world. Perhaps the most famous carol service, is the service of Nine Lessons and Carols from King's College in Cambridge, UK. This service takes place on Christmas Eve and is broadcast live on BBC Radio (and all over the world). In my house, we listen to it and it means Christmas has really started!! The Service was first performed in 1918 as a way of the college celebrating the end of the First World War. It is always started with a single choir boy singing a solo of the first verse of the Carol 'Once in Royal David's City'. Sing along to Once in Royal David's City! (on a different site) A service of Nine Lessons and Carols, has nine bible readings (or lessons!) that tell the Christmas story with one or two carols between each lesson. Sometimes you get carol services which are a combination of nine lessons and carols and carols by candlelight! So you have nine lessons and carols by candlelight!

4 Food Traditions
1. Make traditional dishes for your holiday meals and include foods from your culture or foods you ate growing up. Ask for recipes from relatives to keep your family food traditions alive. 2. Organize a cookie-baking party. Invite friends and family, or a group of your kids' friends. Ask everyone to bring their favorite holiday cookie recipe. 3. Make the same entree for Christmas Eve (such as stew) and Christmas Day (ham or turkey) every year. Or, choose a side-dish that becomes the yearly tradition, even if it's just for laughs. 4. Make a gingerbread house with your family. Those premade sets make it easy and provide you with everything you’ll need! Another option is to use graham crackers, some royal icing and candy you've saved for this purpose.
Neighbourhood and Community Traditions 5. Get a handful of friends together and go caroling. You’ll be surprised by how well-received your singing group is, even if you’re out of tune! 6. See a local production of ‘The Nutcracker,’ ‘A Christmas Carol,’ or another holiday-themed show. 7. Check out holiday lights in your area. Get in the car, turn on your holiday playlist, and find brightly lit houses. 8. Record local holiday events on your calendar. Most cities have concerts, festivals, plays, and more to celebrate the season.

Around the Home Traditions 12. Start the ‘Elf on a Shelf’ tradition. Your kids will love it and it will keep them on their best behavior! 13. Read holiday books before bed each night. The Polar Express, Santa Mouse, and How the Grinch Stole Christmas are all excellent tales to boost your family’s holiday spirit. 14. Go to a tree farm to locate the perfect Christmas tree. At home, decorate it as a family or let the kids do their thing. Have some treats and hot cider or cocoa on hand to keep energy levels up! 15. Create a holiday playlist that your family listens to in the car or at home. Don’t forget classics like ‘White Christmas,’ ‘I’ll Be Home For Christmas,’ and ‘The 12 Days of Christmas.’ 16. Use an advent calendar to count down to Christmas. There are many varieties of advent calendars, from candles that are burned daily to boxes you open daily.

Holiday TRADITIONS 17. Set aside one night each week to watch a holiday movie or television special, such “Miracle on 34th Street” and “A Charlie Brown Christmas.” 18. Have your child start an ‘I Am Thankful’ list. Have him add one thing he is thankful for each day. You can turn this into a decoration by having him write it on a paper Christmas tree or snowflake that you then hang across the fireplace or some other area. 19. Purchase or make a holiday ornament for each child every year. This is a great reason to reminisce during holiday decorating.

22. Make holiday decorations yourself! Decorate windows with paper snowflakes, glue glitter onto pinecones and arrange in a bowl, and visit kid-friendly crafts sites to get creative and fun ideas that will involve your children. 23. Start a holiday village display. Add a new house or shop to your display each year. 24. Camp out in front of your Christmas tree one night. Keep the tree lights on, read holiday stories, and snack on holiday treats.
Giving Back Holiday Traditions 25. Volunteer your time as a family at a soup kitchen or a food bank that hands out food to families in need.
20. Sit down with your child and write a letter to Santa. 21. As a family, write your holiday letter. Have each member contribute one memorable moment from the year to be recorded to share with friends and family.

Rudolph The Red Nosed Reindeer Rudolph, the red-nosed reindeer had a very shiny nose. And if you ever saw him, you would even say it glows.

All of the other reindeer used to laugh and call him names. They never let poor Rudolph join in any reindeer games.

Cranberry Christmas Tree Bread Not only does this tree-shaped loaf use a convenient frozen bread dough, it also uses purchased frosting. What a time-saving gift to make! Number of servings: 1 tree-shaped loaf Ingredients: • 375 ml (1 1/2 cups) fresh or frozen cranberries • 180 ml (3/4 cup) sugar • 15 ml (1 tbsp) fresh orange juice • 7 ml (1 1/2 tsp) grated orange zest • 1/2 package (8 oz) frozen bread dough, thawed • 30 ml (2 tbsp) butter, melted • 80 ml (1/3 cup) chopped walnuts (optional) • 60 ml (1/4 cup) cream cheese-flavored ready-to-spread frosting
Method: In a medium saucepan, combine cranberries, sugar, juice and zest, stirring well. Frozen berries do not have to thaw first. Cook over medium-high heat, stirring constantly, until thickened (about 10 minutes). Set aside and cool. Roll dough into a 23 x 46 cm (9 x 18 inch) rectangle; brush with melted butter. Spread cranberry mixture over dough to within 1,25 cm (1/2 inch) of edges. Sprinkle with walnuts, if desired. Roll up dough, starting at long edge, pressing gently to contain filling; pinch ends to seal. Cut roll into 16 equal slices (about 2,75 cm (1 1/8 inch) thick). On lower third of a large greased baking sheet, arrange 5 slices, cut side up, in a row with edges touching. Form tree with additional rows of rolls, ending with 1 roll on top of tree and 1 roll on bottom for trunk. Cover and let rise in a warm place 30 ºC (85 ºF), free from drafts, 30 to 45 minutes or until doubled in size. Preheat oven to 175 ºC (350 ºF). Bake 20 minutes or until lightly browned. Carefully remove from baking sheet and cool on a wire rack. Place frosting in a 500 ml (2 cups) glass measuring cup. Microwave, uncovered, on high power (100%) for 20 to 25 seconds or until drizzling consistency; drizzle over bread.

Santa's Whiskers Ingredients:
3/4 cup (6 ounces) flaked sweetened coconut 1 cup (2 sticks) unsalted butter, room temperature 1 cup sugar 2 tablespoons whole milk 1 teaspoon pure vanilla or rum extract 2 1/2 cups all-purpose flour 3 ounces red candied cherries (coarsely chopped) 3 ounces green candied cherries (coarsely chopped) 1/2 cup (4 ounces) coarsely chopped pecans Equipment:
2 large baking sheets wax paper
Method: Arrange two approximately 12-by 12-inch square pieces of wax paper on a work surface and spread half the flaked coconut in the middle of each. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on medium speed, scraping the bowl occasionally, until light and fluffy, about 2 minutes. Add the milk and vanilla or rum extract and beat until fully incorporated. With the mixer on low, add the flour in 3 batches, followed by the red and green cherries and the pecans, and stir until just combined, about 2 minutes. Divide the dough in half and form each half into a 10-inch-long log, about 1 1/2 inches in diameter. Transfer each log to a sheet of wax paper and roll to coat them in the coconut. Once the logs are completely covered in coconut, roll the wax paper around each log, cover in plastic wrap, and chill for at least 1 hour and up to 24 hours. Position a rack in the upper third of the oven and a second rack in the lower third then preheat to 375°F. Slice each log crosswise into 1/4-inch-thick cookies and arrange on baking sheets, leaving about 1 inch between cookies. Bake, switching the baking sheets between the upper and lower racks about halfway through baking, until light golden brown, about 12 minutes. Cool the cookies on the baking sheet for 10 minutes before transferring to a wire rack to cool completely. Continue baking cookies on cooled baking sheets. DO AHEAD: The cookies can be baked ahead and stored, in an airtight container at room temperature, up to 3 days.

Butter Tarts
21 Almond Roca
Crust: • 2 cups flour • ½ cup brown or white sugar • Dash of Vanilla • 1 cup butter or margarine • 1 egg • Pinch of salt

Mix by hand until sticky. Roll in small balls and flatten with finger into greased muffin tins. Filling: • 1 egg • 2/3 cups butter (or margarine) • 1 cup brown sugar • Pinch of salt • 1 tsp Vanilla Mix together over med heat until melted. Add whatever you like in your butter tarts I put about 1 cup of each: Coconut, Raisins, Walnuts & Almonds
1 cup butter 1 cup white sugar 1 tbsp corn syrup 3 tbsp water 2 cup white or dark chocolate wafers
Melt first 4 ingredients over medium heat, then bring to a boil until hard cracked (350 degrees on a candy thermometer). Layer cookie sheet with slivered almonds, pour candy mix on top, cover with white chocolate wafers (approx. 2 cups). Spread and once melted sprinkle with more almonds.
Mix and fill pastry shells. Bake at 375 degrees for 15 mins or until brown.

He was made of snow, but the children know he came to life one day. There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around!

Down to the village, with a broomstick in his hand, Running here and there, all around the square, sayin', "Catch me if you can." He led them down the streets of town, right to the traffic cop; and only paused a moment, when he heard him holler, "Stop!" For Frosty, the Snowman, had to hurry on his way, But he waved goodbye, sayin' "Don't cry, I'll be back again some day."
