When I last wrote to you, we’d just watched Italy quarantine the entire country, and the panic stockpiling had just begun on this side of the world. Time has felt so elastic since those early March moments: some days feeling like weeks, others disappearing in a swell of trying to absorb whatever massive shift in reality has suddenly arrived. It’s always a little odd to write this note several weeks before it lands on readers’ doorsteps—even in non-pandemic times it’s difficult not to wonder, What if something huge happens between now and then? So now, as always, I can only reflect on what the present day has brought. After six weeks of working at my kitchen table, I finally spent a weekend reorganizing my home to have a functional office, and I write this at my newly placed windowside desk, watching the neighbourhood cat explore the empty lot next door. (Will being a few further steps from the kitchen help me resist the constant stress snacking? Stay tuned.) The team at Western Living is busy chatting with me on Slack from their own home desks, and we’re all now masters of the quick Zoom check-in. And while we had to hit pause on our May issue, this entire June issue was all done remotely—except the photography, which was taken many months before coronavirus was the daily conversation. It seems like a bit of kismet that we’d always planned for this to be our Bathrooms Issue: a space in our home environments that can offer us some respite from the stress of the world, now more than ever. And so, yes, we’re making it work, and there’s much that feels the same as before (banter and laughter over our various technological connections, to name one). But if anything has become crystal clear in this current crisis, it’s just how much we all miss true connection— the type that’s not made over a wifi signal. I hope I’ll never take that for granted again: the ease of hugging someone you haven’t seen in a while, of popping by a neighbour’s for a coffee and a chat, of hopping on a plane to visit family back east. There will come a time when we can look back at all this in our rear-view mirrors, when we can put faith in reality again, and writing a letter a few weeks out from when it will be read won’t feel like crafting a relic from a faraway time. While we wait for that, I hope that you, like me, are finding moments of respite and comfort in your own home— and that you, and all of your loved ones, are safe, healthy and staying connected in whatever way you can.
My go-to source for comfort these days is gardening. Sprouting seeds never ceases to make me smile. Tilling last year's compost into the soil gives me visceral joy. Raking the earth calms my nerves. For now, we tend. Soon, we feast.

What do you give a clothing designer
who specializes in low-key, comfortable luxury? A master ensuite to match. Donni Rae Edmondson, founder of @styleforthepriv and mother of three (with a fourth now on the way) was looking for a place to “get away from the craziness” when she approached Gregory Funk, co-owner and lead designer at Interiors by Peridot, to design her new home. “When we met, we talked for two hours about our lives and barely even talked about the project,” says Funk. “We just hit it off right away.” The pair quickly zeroed in on a shared design dream for the ensuite, inspired by Edmondson’s favourite Mexican resort, Cabo Azul. “It’s this comfortable luxury, low-key Cali chic kind of vibe,” says Funk. “Everything should feel effortless.” So in came the planked bleached white oak for a light, airy and super natural look, but the expansive floor plan needed a dramatic anchor to pull the room together. Using Edmondson’s manufacturing connections, Funk commissioned a custom round tub from natural black stone to be the crown jewel of the space. “We didn’t want a little tub that felt like it was floating in the middle of the room,” says Funk. “We wanted it to be really obnoxious.”

Calgary interior designer Amanda Hamilton cut her teeth in the restaurant industry, and designing conversation-starting washrooms was her signature move. “I’ve always loved to design in a way that inspires people to come back to the table and say, ‘Check out the washrooms!’” she says. With residential projects, her attitude remains the same: the powder room is the perfect chance to break the mould and have some fun. “It’s an experience that can stand on its own without having to think about how it speaks to the rest of the space,” she says. “We also have fewer restrictions than a washroom, where people are showering or putting on makeup, so we can play around with light, reflection, materials and pattern in a way that is bolder and bigger.” For this Calgary powder room, in the home of a young family with two kids, Hamilton installed a showstopper of a wallpaper from Khroma, featuring bold, contrasting colours and gingko flowers, alongside a custom marble vanity and glam alabaster-and-gold wall sconces. “I love going wild and bold in this room,” says the designer. “Why not make a statement?”

On paper, a wall covered in 3-by-12 white tiles might sound pretty but plain; in practice, it’s downright playful—at least under interior designer Tori Palynchuk’s hand. “We wanted something impactful, but still simple,” says Palynchuk, who designed the master bathroom in her parents’ new home in Kelowna last year in collaboration with Fawdry Homes. Here, simple white tiles are placed in alternating vertical and horizontal blocks, all accentuated with black grout. These same tiles are used in the steam shower, arranged vertically on the wall and in the same topsy-turvy pattern on the ceiling. Taken together, it’s minimalist but playful, timeless and textural… anything but basic.

THINK OFF THE WALL False Creek neighbourhood provides plenty of light, but also takes away valuable wall space. “We had to get a bit creative with the towel bar situation,” says Michelle Miazga-Hall, principal of Port and Quarter. Custom ceiling-mounted towel bars crafted by local makers at New Format Studio were the designer’s fashionable and functional solution. Coupled with the bathroom’s hexagonal flooring and black mirror details, the hanging towel rack is a minimalist solution with maximum cool factor. “Our goal was to make a strong artistic and architectural statement with just a little bit of geometry,” says Miazga-Hall.

room. The homeowner wasn’t afraid of taking risks and loved pattern, notes designer Kevin Mitchell of Mitchell Design House. She fell in love with those Kilim floor tiles right from the get go, and he encouraged her to pair them with a piece of architectural salvage from Northern China that he discovered at Calgary’s Wu and McHugh—a wooden screen that separates the Wetstyle bath from the commode. The vertical tiles on the wall above the bath are intentionally quieter, but they’re just as beautiful. “They’re my cheap date secret,” laughs Mitchell. “You don’t have to break the bank on the tilework for it to look cool.” Two sizes of the same tile are alternated in a vertical stacking pattern, and contrasting grout allows the design to pop. “It’s an easy way to add a subtle, visual emphasis and pattern in a room,” says Mitchell.

Calgary bathroom designed by Aly Velji and Katie Mooney of Alykhan Velji Designs and Alloy Homes. Floor-to-ceiling black porcelain tile with marbled veining is paired with brushed brass fixtures in the shower, but it gets an extra hit of glam thanks to that niche that runs all the way across, lined with a swath of brass honeycomb tile. “Not only does it add visual texture,” says Velji, “but it’s super fun and very glam. The tile backs the niche in the shower, so it’s perfect for storing shampoos and soap.” In the rest of the room, the black-and-brass theme is strong, but the choice of millwork—pale, flat-front white oak cabinets that line the wall—tempers the cool treatment. “We opted to forgo going the sleek and modern route by choosing warm, white oak cabinetry,” says Velji. “It adds another layer to the space and helps to make it feel more inviting."

y the time these homeowners were expecting their third child, they knew it was time to move out of their modest three-bedroom home in Calgary’s Currie Barracks, an inner-city neighbourhood that was once the site of the city’s military base. But they weren’t ready to leave the area. “They really loved the neighbourhood,” says designer Reena Sotropa of Reena Sotropa In House Design Group. “They just wanted a durable, family-friendly space they could grow into, and grow with.” The couple bought a lot and new home from Crystal Creek Homes, then brought the team from Reena Sotropa on board for the interiors, thanks to a referral from a good friend. “The clients were so fun to work with,” says designer Alanna Dunn, who worked with Sotropa on the project. “Aside from some basic details about the family and their needs, it was about as close to carte blanche as it gets.” The homeowners wanted the new home to be light and bright, says Sotropa, and, above all, easy to keep and practical for the kids—nothing too fussy. And Sotropa’s team was careful to design the space so it could evolve over time. The kids’ playroom on the main floor, for example, will convert into a formal dining room down the road with a few simple changes. “We wouldn’t have done a coffered ceiling if it was just going to be a playroom,” laughs Dunn. The team selected furniture pieces rather than built-in millwork for toys and art supplies, and the overhead lighting is a semi-flush fixture that sits higher than a dining room pendant might—though it can be swapped out in the future once a table and chairs are ready to take the place of playdough and art easels. That playroom also connects to the kitchen via a butler’s pantry—perfect for when it’s a dining room, of course, but also helpful for when either parent is prepping in the kitchen and keeping an ear out for what the kids are up to. Just across the hall is a warm and moody home office for him, the walls lined with white oak, and accents of brass and gold contributing

to a more masculine vibe in the room. A custom builtin Parson-style desk of black marble features a panel behind it that disguises any messy computer cords. The office is more than roomy enough for him, so Sotropa was able to borrow a few square feet from that space for a truly family-friendly space around the corner—a walkin closet for the mudroom on the other side of the wall. “The one thing we’ve come to discover,” says Sotropa, “is that while lockers are nice, if we have the space, we love to do a large walk-in closet off the mudroom. With the climate we have, everyone has five coats, ski pants, backpacks—they’re chaotic and messy rooms.” The main living spaces on the floor—kitchen, living room and eating nook—are one open space, and operate as the core of the home, where the family spends its time.

Bring the Warmth
Throughout the space, the designers paired black and warm-metal finishes on lighting, drawer pulls—even furniture. The angular, bevelled fireplace was inspired by an emerald-cut diamond.
The classic white kitchen—lacquered cabinets, Caesarstone counter and marble subway tile backsplash—is warmed up with brass pendant lights over the island, and rust-brown moulded leather bar stools. There’s a strategic and thoughtful mix of metals throughout the space: the kitchen’s black plumbing fixtures pair up with brass lighting; in the living room, brass pulls on the millwork are matched with black and brass sconces and an emerald-cut black marble fireplace surround. Upstairs, the kids were given their own playful spaces in their bedrooms. “We tried not to do anything that wouldn’t easily be changed,” says Sotropa, “and that could grow with the child.” For one of the boys, the homeowners had chosen a Restoration Hardware bed that resembled a treehouse, and so Sotropa’s team designed the room around it, a woodsy Cole and Son wallpaper providing the appropriate forested backdrop. In another, a love for Pikachu was translated into bedsheets adorned with the Pokémon character, and a colour-coordinating Hygge and West bedspread and wallpaper adorned with golden birds. “He feels he got a Pikachu room, but his mom is very happy,” laughs Dunn.

Into the Woods
For one son’s “Pikachu” room, the team paired a sheet set with a duvet and wallpaper in the same colour scheme (bottom left). The other’s Restoration Hardware bed is surrounded by a Cole and Son wallpaper, emphasizing its treehouse feel.

The master bedroom’s colour scheme was inspired by a Kelly Wearstler paper that the team fell in love with. The graphic teal design adorns the commode room at one end of the adjoining master ensuite; on the other side, an upholstered bed picks up that shade and unifies the space. In between, a stunner of a black soaker tub is the visual anchor to a bathroom filled with textural references: basket weave tile on the floor, dark-grouted subway tile on the steam shower, richly veined white marble on the counter. It’s a home that feels incredibly tailored to the clients’ current needs, but also ready to adapt as their family grows. “This particular family was really flexible and open-minded, which made them a dream to work with,” says Dunn. “It shows in their house—they just trusted the process, even when it was challenging. I think they’re very happy with the way it turned out.”

Celery, Apple, and Peanut Salad SERVES 4
This salad is a textural flavour bomb, and one of the Skinners’ all-time favourite salads. It has all of the freshness, with only a little bit of the fuss. It’s also delicious with grilled tofu or tempeh if you’re craving some extra plant protein. Ambrosia apples work well with this recipe, as the tartness pairs nicely with the sweetness of the dates.
Salad 1 head celery 2 apples (ambrosia or similar), sliced and tossed in a splash of beet juice 4 to 5 pitted dates, sliced ¼ cup Szechuan peanuts (pick them up at your local Asian market) Handful of torn mint leaves Handful of torn Thai basil leaves
Tamarind lime vinaigrette 2 tbsp vegetable oil 2 cloves garlic, peeled and chopped 1 tbsp ginger, peeled and chopped ⅓ cup water ⅓ cup vegetable oil ¼ tsp chili flakes 1 stalk green onion 2 tbsp tamarind paste 1½ tsp salt 2 tbsp lime juice Zest of 1 lime 1 tbsp chopped dates

Place celery on a stable surface, hold it firmly, and peel into shavings with a potato peeler. (Discard the first shaving or two, as they tend to be stringy.) Soak shavings in ice water for minimum 30 minutes or up to 2 hours. Toss the pale green baby celery leaves in the salad too (but not the bigger dark green leaves, they’re too bitter). Toss with everything else, except for dressing ingredients.

To make the dressing, place oil together with garlic and ginger in a pan over medium heat. Cook for around 2 to 4 minutes, or until it begins to gently bubble. Remove from heat and set aside to cool. Blend garlic and ginger oil together with remaining dressing ingredients in a highpowered blender. Blend until smooth. Dressing will keep in the fridge for 1 month. Add dressing to salad to taste and toss.

plant protein bowl Yes, plants have protein—plenty of protein—and this bowl proves it. If you don’t have almond butter, whole almonds work (so long as you have a high-powered blender). Peanut butter is also very delicious. Or both—the more nutty the butter, the better. As for the garnishes, the sky’s the limit: edamame beans, shredded carrots, roasted beets, candied butternut squash, grilled cauliflower, cut grapes... the list goes on.

Almond Butter sauce Maple Tofu 1 350-g pack firm tofu ¼ cup soy sauce ¼ cup maple syrup 1 tbsp rice vinegar (balsamic is also weirdly delicious) 1 garlic clove, squished 3 to 4 slices of ginger Drain and slice tofu into a funky shape. Place in a wide frying pan with remaining ingredients and bring to a simmer. After 5 to 10 minutes, flip tofu, turn off heat and let it absorb the flavours for another 5 minutes.

Two words: savoury waffles. Drop the syrup and grab the feta cheese. Spring is here, so think asparagus, fresh peas and even some sautéed stinging nettles. If you’re feeling ambitious, you can also make a double batch of batter, and freeze the extra waffles for quick and easy toaster snacks. And don’t panic, these waffles are still delicious with butter and maple syrup if you’re craving something sweet.
Chickpea waffle batter 2½ cups chickpea flour 2 cups water 1 tsp cane sugar 1 tsp salt ½ tsp baking soda 2 tbsp extra virgin olive oil
For serving 1 bunch asparagus ¼ cup plant-based feta (find it at your local natural food store) Handful of edamame or fresh peas (optional) A few torn mint leaves Extra virgin olive oil (good quality) 1 lemon wedge Place all waffle ingredients in a blender, and blend until smooth. Allow to rest in the fridge for minimum 30 minutes before using. Keeps in the fridge for 5 days. Prepare 8 waffles in a waffle iron. Toss the asparagus in some oil and salt and grill for 3 to 4 minutes. Serve waffles with asparagus, edamame or peas, mint and a lug of olive oil.

Bulgogi Mushroom Tacos SERVES 4
Bulgogi is a Korean marinade that is served traditionally with beef, but mushrooms love this sauce too. Ssamjang is a Korean sauce used in lettuce wraps. The mushrooms in this recipe are sweet, salty, smoky, spicy and sticky Korean food goodness. And everyone loves tacos, so how could you go wrong?
Bulgogi mushrooms ½ cup water 2 cloves garlic Small piece of ginger ½ cup soy sauce or tamari 2 tbsp BBQ sauce ¼ cup maple syrup 1 tbsp rice vinegar ¼ cup cane sugar or coconut sugar 1 tsp sesame oil ¼ tsp chili flakes ½ lb oyster mushrooms Generous splash of vegetable oil Pinch of salt
Additional taco ingredients Soft white corn taco shells (check your local Latin market) Ssamjang mayo (see recipe below) Kimchi Shredded red cabbage Fresh corn, grilled and scraped off the cob Cilantro Grilled lemon wedge (optional) Place all ingredients except the mushrooms, vegetable oil and salt in the blender and blend until garlic and ginger are in tiny pieces. Transfer to a pot and bring to a boil. Once boiled, allow to cool. Any extra marinade will keep in the fridge for 2 weeks, or in the freezer for 6 months. Preheat oven to 375°F. Toss mushrooms in oil and salt. Cover in tinfoil and roast for 45 minutes. Once out of the oven, pour approximately ¼ cup of the marinade overtop and toss to coat. They’re ready for the tacos!
ssamjang Mayo 1 cup vegan mayo 2 tbsp gochujang (Korean chili paste) 1 tbsp miso paste 1 tbsp white vinegar ½ tsp sesame oil 2 tbsp sesame seeds (a mix of black and white if you have them both) 1 tsp fresh ginger, grated with microplane Mix all ingredients together in a blender.

Vegetables in dessert? Well, we’ve already got carrot cake, sweet potato pie, zucchini cake, pumpkin loaf… why not peas? They’re sweet, and they’re in season. And let’s be perfectly honest—any kind of icing is going to be hard to resist.
Almond shortbread 1 cup coconut oil, softened ⅔ cup icing sugar ½ tsp salt 1 tsp vanilla 2 cups all-purpose flour 1½ cups almond flour 5 tbsp cold water
Sweet pea icing 1 cup vegan butter, melted (Earth Balance is best) ¾ cup green peas, fresh or defrosted ½ tsp mint extract (optional) Pinch of salt 3 cups icing sugar Preheat oven to 350°F. Cream together icing sugar and softened coconut oil (microwave in 10 second intervals if necessary). Start the mixer slowly to prevent getting icing sugar over your entire kitchen. Mix on high for 2 to 3 minutes. Add salt and vanilla and mix until smooth. Add flours and mix until dough is crumbly. Lastly, add the water and mix until a dough is formed. Form dough into flat ¼-inch-thick cookies, and bake for 15 minutes, or until the edges of the cookies are just starting to turn light golden brown. Set aside to cool. To make the icing, blend the melted butter, thawed peas, mint extract and salt in a highspeed blender until super smooth. Transfer the pea purée to a mixing bowl and beat with a mixer. While mixing, add icing sugar, adding ½ cup at a time to prevent clumping. Store in the fridge to allow it to firm up. When you are ready to ice, place cookies in fridge for 30 minutes—this will make the icing easier to spread. (Any extra icing will freeze just fine, or drizzle it on pancakes with fresh raspberries.)
