For us this season brings a new issue of Canarias online magazine with loads of information about the Islands and the Canary Islanders. To begin with, we offer an article about the Leal Theatre in La Laguna, which is celebrating its centenary, and follow with an interview with the music group Atlantes, who have touched our hearts deeply with their folk music. All sorts of artists played in the Leal Theatre from 1915 to 1920. From José Gómez’s Zarzuela’s Company to Spanish national theatre performed by Carlota Pla’s Drama-Comical Troupe and Pablo López’s Zarzuela and Spanish Opera Company, as well as many others. These productions alternated with cinema and variety shows such as the performances of Maruja Keller in March of 1916. Finally, in La Laguna one could enjoy Spanish theatre, and under its influence, inspiration and culture flowed through the veins of the city. And so, the Leal Theatre was
also a cinema, beginning with the projection of silent movies with musical accompaniment by pianists such as Juan Estany, Luisa Machado and Fermín Cedrés. Among the movies mentioned by Torres Santos in his book are: Cabiria by Gabriel d’Annunzio or Amor de Ciega. As an anecdote, we can even cite the prices of the cinema tickets; 0.25 pesetas for children’s seats; 0.15 for balcony and 0.10 for upper balcony seats. Adults paid 0.30 pesetas per seat: 0.20 for balcony and 0.15 for upper balcony seats. In the 40’s the theatre offered movies such as An American in Paris or Such is my Country by Cantinflas. But it was also the centre of social activity of the times time and it was there that people celebrated everything from the Canary Island traditional fighting called Lucha Canaria, to parties, tributes, concerts, literary sessions…the Leal Theatre became, as it still is today, the dynamic centre of the city.

The Leal Theatre today In 2000 a complete renovation of the Leal Theatre commenced. The theatre had been closed for 20 years, and no longer was part of the cultural scene in La Laguna. The entire interior was refurbished and totally restored, and on 18th September 2009, the Leal reopened with a capacity for seating 608 spectators. Today, we have almost forgotten that it was ever closed, as it once again offers delirious pace of art and culture, and is a source pride for all Canary Islanders.

What does the cheese-making process involve? Ur products are elaborated exclusively with raw goat’s milk. We start milking at 4:30 in the morning. The milk goes through suction tubes and from these to a filter which removes all bacteria. From there it goes to a glass pumping container which propels it to the cheese Factory where there are casks which hold 218 litres each, which we fill. The milk must be between 32 and 34 degrees Centigrade and we then add the fermenting agent, and leave it to ferment for 30 minutes. After this time we add the curdling agent, which will give the milk the consistency of yogurt. We leave it for another 30 to 45 minutes and then check to see if a yellow liquid has settled on the top surface of the mass - that’s the whey - or if we see that the mass has contracted away from the sides of the cask, which means that the curdled milk is set and ready to be cut. Then we take the cheese lyre and cut gently through the mass only once horizontally and once vertically. We let it set for 5 to 10 minutes and then cut it again, let it rest and continue, until it is cut into pieces about the size of a lentil. The size of the curdled milk mas will vary depending upon whether it is winter or summer. We then let it set and to ensure that the mass sinks and the whey rises to the top, we put iron pieces on top, so and this way we eliminate the whey. Once the barrel is drained of whey, we cut the curdled milk mass in cubes and put them into cloth-lined. We press them by hand into the moulds, filling them one by one. When we press on them and see that enough whey has been drained, we take the cloths off and put them back into the moulds, continuing to press until there is no more whey. Once this is done, we put them on shelves and put sea salt on them, leaving them with the salt overnight. The next night we turn them over and again put sea salt on them, leaving them until the following day, when we remove the salt from the cheese. Two days later, more or less, we remove them from the moulds and put them into refrigerators, where we turn each cheese over daily until they are sold.
