This week... From the editor As I pen this column on the Monday public holiday in the ACT, around 25% of eligible voters have already cast their vote in the 2020 ACT election. The early turnout is higher than previous years as voters heed the ACT Electoral Commission’s ‘Vote safe. Vote early.’ campaign in the hope of avoiding big crowds on election day, Saturday 17 October. And possibly because there will be fewer, if any, opportunities to enjoy a democracy sausage on the day. For those who are undecided and/ or waiting to see how the final week of the campaign pans out, Canberra Weekly has approached each of the 137 candidates to provide 200 words about their policies. While not everyone has responded, you’ll find the ‘ACT Votes: meet your candidates’ compilation on the ‘news’ section of our website under the ‘politics’ tab. CW will never tell our readers how to vote; we trust you to make your own informed decisions. What we will encourage you to do is to cast your vote; make it valid and make it count. We must exercise our democratic responsibilities to keep our governments accountable. Reasons to be grateful this past week include democracy, a sunny long weekend (and only spending a few hours in the office on Monday), a youngster’s birthday gathering with family and friends, folding freshly sundried laundry and picking broadbeans from the veggie patch. - Julie Samaras

Incumbent Chief Minister, ACT Labor leader Andrew Barr’s campaign has centred on his government’s experience, stability and their plan to rebuild the local economy out of the pandemic.
Canberra Liberals leader Alistair Coe has promised to cut taxes, improve services and grow Canberra’s population should he win this month’s ACT election.
ACT Election 2020: Canberra decides With Canberrans heading to the polls in droves due to a push to vote early, Canberra Weekly has dissected the major battle lines upon which the 2020 ACT election is being fought. Without a key issue like 2016’s light rail to debate, incumbent Chief Minister, ACT Labor’s Andrew Barr and Canberra Liberals leader Alistair Coe have made their respective points of difference clear early in the threeweek campaign. For the Canberra Liberals, the crux of their proposition is Mr Coe’s catch cry, to make Canberra “the best place to live, work and raise a family”. He’s said they’ll bring a “fresh vision” for Canberra after 19 years of an “old and tired” Labor government – promising to cut taxes and improve services. The Liberals have called the Barr Government stale, arrogant and too focused on their innernorth stronghold at the expense of Canberra’s suburban fringes. Conversely, ACT Labor’s sell for another four years in government has centred on the stability they’ve brought over the last six years with Barr at the helm, and their plans to rebuild Canberra’s economy out of the pandemic with job promises and big-ticket infrastructure projects. “ACT Labor is progressive, 12
canberraweekly.com.au
experienced and has a strong track record of delivering on our promises,” Mr Barr said. Labor’s criticism of the Canberra Liberals is that Mr Coe would be an “L-plate” leader, even letterboxing not-so-cryptic L-plate flyers across town to drive that message home.
ACT Labor’s key promises
ACT Labor’s argument to retain government is that they have the “right plan” for Canberra’s economic recovery as the Territory emerges out of the pandemic, ambitiously promising to have 250,000 people employed locally by 2025. “Despite the bushfires and COVID-19 pandemic, the ACT still has the strongest labour market and lowest unemployment rate in the nation,” Mr Barr said. Labor has promised to continue creating jobs and rolling out their $4 billion infrastructure investment program which includes Light Rail Stage 2, the long-awaited Canberra Hospital expansion, a new CIT campus in Woden, and three new schools dotted across the city.
They have said they will add thousands of jobs to the ACT public service with 400 new jobs for health professionals to staff the hospital expansion and additional nurse-led walk-in health centres, over 400 additional teachers to staff their new schools, and 2,000 new jobs in the environmental sector in the next term of government. They will also look to incentivise private sector investment, and aid small and medium-sized enterprises by maintaining their $2m payroll taxfree threshold and exploring “new ways to give further opportunities to local SMEs to do business with government”.
Canberra Liberals’ key promises
In response to their main criticisms of Labor making Canberra too expensive to live in, the Canberra Liberals have, in turn, promised to freeze rates for four years and release more land. “Too many people are being priced out of Canberra. We don’t think it’s fair that so many Canberrans are finding it so hard
to live in this city,” Mr Coe said. Additionally, the Liberals will lower the cost of private car registration to NSW levels, creating a saving of almost $100 per vehicle per annum, and offer families with primary school aged children access to free before and after school care. Their slate of improved services includes an expansion of bus services, $40 million worth of road maintenance works, and $50 million spent creating new parking spaces across Canberra. The Liberals’ central promise to lower taxes and fees while simultaneously upgrading and improving services has been reiterated, without a detailed explanation to date for how it will be paid for. Mr Coe has continuously said he will pay for his promises by “growing the pie”, generating more revenue by growing Canberra’s population. Mr Barr has countered that by saying a larger population means a greater demand for service provision. Find an extended version of this article at canberraweekly.com.au - Denholm Samaras
news The tight race to the ACT Legislative Assembly Despite ACT Labor’s 20-year reign of the Legislative Assembly, history tells us this year’s contest might be closer than first appears. Picking up from the negative swing against all three major parties in 2016, (ALP -0.5, Canberra Liberals -2.2, Greens -0.5) less than 2% separates ACT Labor and Canberra Liberals – with the big unknown factor being the average 2.5% of votes determined informal and unable to counted. ACT Labor’s ‘coalition’ partners, the ACT Greens and their 10.3% of first preferences, does look to steady their ship, but the Canberra Liberals will be looking to take advantage of the 5.2% swing against ACT Labor in Murrumbidgee in 2016 and potentially pick up a seat in Yerrabi in the first post-light rail election since 2008. In the 31-year history of self-government, the ACT Legislative Assembly has been a tight battle, with only one government wining an outright majority when ACT Labor won the 2004 election with a two-seat majority. The first hung parliament occurred in 1989; ACT Labor had the largest representation and formed government with the promise of supply
from several non-aligned minor parties. ACT’s first Chief Minister, Rosemary Follett, was elected by the Legislative Assembly and became Australia’s first female leader of a government. 1992 saw another hung parliament; Labor retained power with the support of independent Michael Moore. 1995 saw the introduction of the Hare-Clark quota-preferential-voting system and a third hung parliament. Independent Michael Moore switched his support to the Liberal Party for their first tilt at government, with Kate Carnell as the Chief Minister. With Rosemary Follett still the Labor leader, this was the first and only time the leaders of both major parties at a state/territory or federal election, were female. 1998 was the fourth hung parliament in a row and Kate Carnell and the Liberals’ second term – also the last time the Canberra Liberals were in government. In 2001, Labor, Kerrie Tucker from the

Greens and Roslyn Dundas from the Democrats formed minority government. 2004 was the first election since the fixed four-year term was introduced and the first and only outright victory, going to ACT Labor. In 2008, four ACT Greens candidates were elected to the Legislative Assembly and after weeks of negotiations, Labor and the Greens signed the first of three consecutive official parliamentary agreements. This agreement made Greens leader Shane Rattenbury speaker; he became the first Greens party speaker anywhere in the world. The Greens’ representation dropped back to one seat in 2012 but they retained their agreement with Labor in another hung parliament. That is eight hung parliaments and numerous gender equality milestones for the Territory that voted against self-government in a plebiscite in 1978, with 63.75% of electors in favour of continuing administration by the Commonwealth Government. - Cassandra Power

news Road travel from ACT to SA allowed via Mildura ACT residents are now permitted to travel to South Australia by car through regional Victoria without having to isolate, as domestic travel restrictions continue to ease. Canberrans have been permitted to travel to SA by air since 16 September, with SA Premier Steven Marshall announcing this week (6 October) that road travel via the border town of Mildura, without stopping, was also acceptable. “People transiting from NSW or the ACT through Mildura will be allowed to pass through Victoria,” he said. “Not to stop for two days and go to the local pub, but if they are bona fide travellers they will be allowed to pass through Mildura without having to start the clock ticking on two weeks’ worth of isolation. “There will be checks on the borders to make sure they are bona

fide travellers rather than Victorians or Mildura residents that want to come into South Australia.” Previously, Canberrans were required to drive via Broken Hill in NSW to avoid Victoria to cross into SA, adding around three hours to the road trip. The changes come into effect from today, 8 October, and ACT residents will still need to complete a crossborder travel application form.
Where can Canberrans travel (as at 6 October)? NSW: Canberrans have been permitted to travel to NSW throughout the pandemic, although had previously been advised to reconsider unnecessary travel to COVID-affected areas. NSW – depending on case numbers. Those looking to travel to Tasmania must complete a G2G pass.
Queensland: ACT residents are only permitted to travel to Queensland without a quarantine period by air. From 1 October, Queensland extended its border zone with parts of northern NSW, however the rest of the state is still considered a COVID-19 hotspot. Those wishing to travel to Queensland via road will be required to undertake a quarantine period if travelling through COVID-19 hotspots as defined by the Queensland Government. ACT residents looking to travel to Queensland must apply for a Queensland Border Declaration Pass.
Tasmania: The Tasmanian Government announced it will ease border restrictions for ACT residents from 26 October. Travel will only be permitted via air, for those who have been in low risk jurisdictions, including SA, WA, the NT, Queensland, the ACT and possibly
NT: The NT border is open to ACT residents without a quarantine period. Like Queensland, those who have travelled through a COVID-19 hotspot identified by the NT Government will be required to complete a quarantine period at their own cost. All travellers must complete a border entry form before travelling.
WA: The WA border remains closed to all travellers except for exempt travellers. Those without an exemption into the state are required to quarantine for 14 days. Those looking to apply for an exemption can do so online.
Victoria: Travel into Victoria is currently restricted for other Australian residents. Anyone who does travel to the state must quarantine for 14 days upon their return.

Shining a light on pregnancy and infant loss
Canberra couple, Bonnie and Steve Carter, have experienced the unimaginable loss of their daughters, Grace and Matilda, and are spreading the word to raise awareness of pregnancy and infant loss. Photo: Kerrie Brewer.
When Steve and Bonnie Carter were grieving the loss of their two stillborn daughters, Grace (in June 2016) and Matilda (December 2017), they described the silence among friends and family as “deafening”. The pair now strive to raise awareness for those going through the same pain and hope the lighting up of iconic Canberra buildings this month will do just that. “We have lost both of our daughters, and after our first daughter Grace was stillborn, the silence was pretty deafening around friends and family,” Bonnie said. “Second time round when we lost our second daughter, Tilly, the support was a lot different. I think through us sharing memories of our first daughter, Grace, people realised the enormity of our loss. “The second time round, with the double-edged sword of having to go through it all over again, we felt a
much stronger sense of support.” Since 2018, the ACT has participated in International Remembrance Day for Pregnancy and Infant Loss on 15 October by lighting up iconic Canberra sites in pink and blue. Facilitated by Bonnie and Steve, and with just two sites lit up in the inaugural year, 2020 will see 10 Canberra landmarks show their support for the cause: Old Parliament House, National Carillon, Royal Australian Mint, National Archives of Australia, Canberra Airport, Bowen Place, Kings Avenue Bridge overpass, Canberra Times Fountain, various Light Rail stops and Telstra Tower. Canberrans are encouraged to visit one of these sites on the evening of Thursday 15 October to support those who have experienced infant or pregnancy loss. “It can be quite a taboo subject and we want to break that awareness
and have people feel like this is a time they can celebrate and share the memories of their children with their friends and family,” Bonnie said. They hope through raising awareness of their story, they can teach the wider community how to support those who go through pregnancy or infant loss – “a whole new level of grief”. “Before we could have imagined this would happen to us, I had a friend who had been through a number of losses and I didn’t know what to say to her and have since, in hindsight, realised things I could have done,” Bonnie said. “That simply would have been to be there with her, hold her up on those hard days and, as time goes on, not forget about that and remember her babies.” Find an extended version of this story at canberraweekly.com.au - Danielle Meddemmen

With clinics in Canberra, Sydney, Melbourne and Brisbane, the Vein Institute is in high demand for their service, which delivers essentially the same result as the “surgical stripping” of the veins, but with a far less invasive procedure. “Patients come to us because they don’t want to go under general anaesthetic and have a hospital-based procedure,” Dr Yassine says. “The other factor is the postoperative period, the after-care, is quite easy relative to surgery.” The Vein Institute’s highly experienced team have embraced the latest technology for the treatment of varicose veins, using laser technology to close veins in the legs. With a local anaesthetic, Dr Yassine and his team insert a very

fine laser tip into the damaged vein and, delivering a source of heat, cause the vein to seal. Because the vein is scarred and sealed, the body will eventually reabsorb it. Dr Yassine likens the sensation to that of “an injection or a blood test”, and said the treatments have a higher success rate than that of surgical treatments. “Especially with treatments such as Endovenous Laser and Radiofrequency Ablation, the varicose vein will return in fewer than 5% of cases.” He says the non-surgical treatments also minimise pain and discomfort and have very little recovery time – compression stockings are typically only required for a few days, compared with weeks or even months post-surgery. news Libs to match federal funding for Molonglo bridge, road upgrades The Canberra Liberals have announced they will match funding from the Federal Government for infrastructure projects in the ACT, including $87.5 million for the Molonglo River Bridge, if elected. Senator for the ACT Zed Seselja was joined on Monday 5 October by Deputy Prime Minister Michael McCormack and Canberra Liberals leader Alistair Coe for the announcement, which also includes $50 million for road upgrades in the south-west of Canberra, and $2.5 million for planning work for Parkes Way. Also announced was an additional $15.25 million for upgrades to the Monaro Highway. Mr Seselja said the “shovel ready” works would support “local jobs and businesses at the time it is needed most”. The Canberra Liberals have said they will match the Federal Government spending to fund the balance of the projects to “get them underway”. “If we’re elected in less than two weeks, we will get these projects underway as a top priority. We want to get things done to kickstart our economy and ensure everyone has the road infrastructure required to slash commutes,” said Canberra Liberals leader Alistair Coe. Liberal candidate for Murrumbidgee, Jeremy Hanson, said the Canberra Liberals would work to see the Molonglo River Bridge constructed within the next four years. Compliance checks continue ACT Policing are reminding Canberrans to follow health directions in the fight against COVID-19, as further restrictions will ease from this Friday 9 October. Late last week, ACT Chief Health Officer Dr Kerryn Coleman announced Canberra would move to Step 3.2 of the Territory’s Recovery Plan, which increases numbers at gatherings and venue capacity. ACT Policing’s COVID-19 Taskforce member Inspector Rachel Hutka said the team would continue to hold compliance checks over the school holiday period. “While the restrictions continue to ease, it is so important that the community don’t undo the months of hard work by becoming complacent,” she said. “When you are attending a Canberra business, please follow
staff advice to help them continue to comply with the health directions. We must continue to work together for our community’s safety. “School holidays continue in the ACT and while more people can come together, it is vital people physically distance and follow proper hygiene practices.” From 9am on Friday 9 October, all gatherings can allow up to 200 people and indoor seated venues can hold events of up to 50% of their capacity or a maximum of 1,000 people. Cinemas will also be permitted to hold 50% capacity or a maximum of 200 people, and GIO Stadium and Manuka Oval can hold crowds of up to 50% of their capacity. In the week prior to 6 October, ACT Policing conducted 733 quarantine checks, bringing the total number of checks to more than 13,500.

The weekend bus schedule will change from Saturday 10 October to accommodate for more regular services on Saturday mornings, while some minor changes will be made to weekday local routes and dedicated school bus services from Monday 12 October. There will be 210 more services on Saturdays, with local routes running at least hourly from 6am to 12pm. Acting Deputy-General at Transport Canberra, Ben McHugh, said “while we are
not yet at the point where we are encouraging people back to public transport, the updates to the weekend timetable will make it easier to practise physical distancing for those who need to use it”. Mr McHugh said driver training has been continuing since some restrictions were lifted in June and Transport Canberra is seeking casual drivers to help deliver weekend services. Brendan Egan says Parbery is dedicated to their local community in everything they do, with an ethos of being authentic, local and part of their community.
She says Parbery is uniquely equipped with a team that knows the sector from the inside out and can offer the right supports and advice. “The experience that I had in the sector is when you do need support from a consulting firm, the ‘known names ’and the ones that come to mind are way too expensive and don’t know the market,” she says. “Brendan and I come with a lot of experience in the sector and we know what it’s like to be in there. We know what the challenges are, we know what they’re trying to do and how great they are at doing it.” The team say the move to offer
dedicated services to the not-forprofit sector was a natural one for the fast-growing firm, with Parbery’s dedication to their local community evident in everything they do. “We’re a relatively small but unashamedly local provider in the professional services space,” Brendan says. “And we rely heavily on our ethos of being authentic, being local and being part of the community. “Those things are certainly a point of differentiation from larger organisations and multi-national firms, where it’s probably just another job and another number.”

news A shed for Canberra’s women The latest community project from local besties Sunita Kotnala and Robby McGarvey has come to fruition, as the red ribbon was cut on Canberra’s first Women’s Shed late last month and the co-founders declared it tool time. The Women’s Shed will operate in two separate venues with separate objectives. Workshops in basic tool competence will be held at Thor’s Hammer in Griffith, and mental health and wellbeing classes at the Jerrabomberra Wetlands. Sunita said the tool workshops would benefit women who had not been exposed to skills necessary for “day-to-day management” of the home. “You can learn to hang a picture or put up floating shelves, there will be classes in basic plumbing and electrical,” Sunita said. The community-minded women first met and bonded while volunteering at the Kingston Organic Community Garden. As they planted their share of 8,000 tulips in the Kingston area, they got talking about women in the community who felt “isolated and left out”.
Sunita shared with Robby her experience at a Women’s Shed in Sydney and suggested they find one in Canberra to go to together. “I love upcycling, picking up stuff from the side of the road and recycling and repurposing pieces of furniture,” Sunita said. “The basic tool workshop really gave me confidence to work on my projects.” Robby was keen. “I told her, ‘Yeah, I really need to learn that stuff and then I can teach my husband’.” They looked for one in vain. “So, what do you do when you can’t find something?” Sunita asked. “You create one.” Sunita’s master’s degree in social work and her experience with counselling, mental health and community development paired perfectly with Robby’s 25 years as an early childhood educator. The Griffith workshop at Thor’s Hammer was chosen because Sunita and Robby thought Thor’s business model of making furniture from recycled material “fitted in well” with their values. Thor said it was a “really fun process” working with the two women.
Robby McGarvey (left) and Sunita Kotnala at the recent launch of Canberra’s first Women’s Shed.
He said in the 26 years he had been in the business, its gender diversity had grown. “We have three women out of 10 [people] in the joinery and it’s really good having a better balance,” Thor said. “All the interest from young women to learn trades has really changed in the last 10 years; I don’t know what’s changed but it’s a good thing.” Find an extended version of this story online at canberraweekly.com.au - Cassandra Power

Now is the time to prepare for take-off... This quieter period in business is a great time to reflect on whether your brand is your best salesperson – because it could be. The role of your brand is to act as a sorting device for customers…to demonstrate shared values and offer a distinct reason to choose you over a competitor while creating an emotional attachment that is genuine and creates lasting value. When we come through this, and we will, your business could be primed to capture market share in your industry. The Canberra Raiders have forged their way into week two of the NRL finals, after a 32-20 victory at home over the Cronulla Sharks on Saturday 3 October. The convincing final score didn’t come until late in the game, after the Sharks got off to an early lead, going into the halftime break 14-10. George Williams scored a double for the Green Machine, with one impressive full field intercept try at the end of the first half. Star fiveeighth Jack Wighton also produced a double for the team on the night. Canberra fullback Charnze Nicoll-Klokstad made a strong return in the weekend’s win, after sitting out the Round 20 match against the Sharks to rest prior to finals. He said while the match wasn’t the side’s finest show of skill, he was happy to see the win. “We didn’t play to our standards and that showed in the score line and the amount of tackles we ended
up making,” he said. “Everyone was pretty frustrated with how we started the game … We had to turn it around pretty quickly and we had to do it fast.” The win will see a rematch of last year’s grand final this Friday night, with Nicoll-Klokstad saying the team needed a fast start to see the match through. “For us it’s about making sure we don’t miss the jump, start fast and match that pace that they want to start with,” he said. “There’s no doubt we’ll be able to come home strong, but we can’t put ourselves in that position where we have to claw back after 20 minutes.” “We do have a pretty good game plan against the Roosters but it’s about us putting it into play, it’s about what we do and what we can control, and we’ve got to start fast.” The Canberra Raiders will face the Sydney Roosters at the SCG this Friday 9 October 7.50pm.

UC $10k sports grants
The Plus500 Brumbies have farewelled some of their titlewinning teammates to other opportunities, following their 2020 Super Rugby AU win last month. Lachlan McCaffrey, Joe Powell and Tevita Kuridrani will all depart the team ahead of the 2021 season, after playing pivotal roles in the win. Thirty-year-old McCaffrey will take his career into the Japan league next year, while Powell and Kuridrani will stay in the national competition. Powell will pursue his career with the Melbourne Rebels, while Kuridrani will play for the Western Force. The Brumbies will retain 28 players from their 2020 squad for next season, with the hope of reclaiming the title in 2021.
Recipients of the University of Canberra’s 2020 Eldon and Anne Foote Athlete Scholarships were awarded the $10,000 grant last week, to help them balance their academic and sporting commitments. The grants were awarded to 11 athletes this year, some of whom were Tokyobound Olympians. Athletes across multiple sports were awarded the grants, including basketball, athletics, rugby and handball. The number of scholarships awarded this year was increased, taking into account changing training and competition schedules through the COVID-19 pandemic.

Visit Uganda: the ‘Pearl of Africa’
K
nown as the ‘Pearl of Africa’ since Sir Winston Churchill visited in 1908, Uganda is a true hidden treasure waiting patiently to be found by tourists. Putting that statement in a more contemporary context requires one to reflect on why that term was and is still used. The history of pearls as items of great value is widely known but perhaps less so is the process by which pearls were acquired. A few years before that statement was published, pearling was a particularly booming industry in Australia, which was not unknown to Sir Winston. Pearling at the time required diving into the ocean, holding one’s breath long enough to feel for clams and
retrieving them to see if they had a precious pearl within. The landlocked country beside Kenya is blessed by nature in all corners and while you might not be able to go pearling for clams, you’re invited to go pearling for the best of everything – from national parks to water sports. In the east, the mighty River Nile pours out of the great Lake Victoria, locally known as Nalubaale. Courageous tourists are welcomed to experience the best of the Nile with white water rafting in Jinja. Making your way to the west of Uganda, you could climb the mountains of the moon to discover the snow-capped peaks of Rwenzori. Down south you will discover the Bwindi Impenetrable Park, home to the largest population of silverback

gorillas, which are not to be found anywhere else in such large numbers and at such close proximity. Pearl further south to find the deepest crater lakes in the region in Bunyonyi, known for its green hills and variety of bird species. In the north of the country is where you will find the Kidepo Valley which is an escarpment of the great Rift Valley – roaming within is an astoundingly wide variety of wild animals – great for
game tracking and safari. If it is total cultural immersion you’re after, the central region is where you want to go. Here you will discover the pearls in hospitality and community. Uganda is truly the Pearl of Africa and more pearls can be found on the Uganda Tourism Board website at www.visituganda.com. Come visit the Pearl of Africa and go pearling the Ugandan way!

Steamed scallops with glass noodles Serves 4 2 Tbsp light soy sauce 1 tsp caster sugar
A taste of Hong Kong While we can’t travel around the world, we can still take our tastebuds on a journey through different cuisines, flavours and techniques. This week, food writer Libby Kimber brings you two recipes from Hong Kong’s street food scene, from chef ArChan Chan. Recipes extracted from Hong Kong Local by ArChan Chan, published by Smith Street Books, RRP $39.99. Photography © Alana Dimou, food stylist © Bridget Wald.
Place the soy sauce, sugar and 2 tablespoons of water in a small bowl and mix until the sugar has dissolved. Stir in the minced garlic and fried garlic.
1 Tbsp fried garlic (recipe below)
Cut the noodles into 5cm lengths. Place a thin layer of noodles onto the scallop shells, underneath the scallops. Spoon the garlic and soy sauce over the top.
20g glass noodles, soaked and drained
Pour water into a large saucepan to a depth of about 3cm and bring to the boil.
8 fresh scallops on the half shell, rinsed
Arrange the scallop shells on a steamer tray or plate (without overlapping), then cover and steam for 1.5–2 minutes or until the scallops are just cooked. Depending on the size of your steamer you may need to do this in two batches. Sprinkle with spring onion and serve hot.
1 Tbsp minced garlic
2 Tbsp thinly sliced spring onion, green part only
Fried garlic 20 garlic cloves, finely chopped 2L canola oil (or other cooking oil) 4cm piece ginger, sliced 3 dried bird’s eye chillies
Sai do si (Hong Kong-style French toast) Serves 2
Spread two slices of the bread with the kaya jam. Sandwich with the remaining bread and gently press to seal.
4 slices soft white bread, crusts removed
Whisk together the eggs and milk in a shallow bowl. Dip the sandwiches into the mixture to coat evenly.
1 Tbsp kaya jam (see note)
Heat the oil and butter in a frying pan over medium heat. Add the coated sandwiches and fry for 1 minute each side or until golden brown, then stand the sandwich up and the edges for about 30 seconds each. Serve hot with extra butter and some maple syrup.
2 eggs 2 Tbsp milk 1 Tbsp vegetable oil 20g butter, plus extra to serve Maple syrup, to serve
Note: Kaya jam is a sweet spreadable condiment made from coconut milk and sugar. It’s very popular in Singapore and Malaysia and is normally a light yellow–green colour. There is also a caramelised version, which is a darker brown colour.
Pinch of fine sea salt Rinse the garlic in water for 2 minutes, drain well and spread out on paper towel to dry for 15 minutes. Pour the oil into a wok or large frying pan and heat to 160°C or until a cube of bread dropped in the oil browns in 30–35 seconds. Add the ginger, then the garlic and reduce the heat to medium. Cook, stirring gently, for 30 seconds, then add the dried chilli, stirring so it doesn’t all clump together. Cook until the garlic is lightly golden, then strain into a clean saucepan. Spread out the garlic mixture on paper towel to drain and cool. As it cools it will become crispy. Season with salt, then store in an airtight container. It will keep for up to 4 days.

Put the egg yolks, mascarpone and caster sugar into a large mixing bowl and beat together. Mix in the melted white chocolate, then add the whipped cream a little at a time, gently folding it in with a spatula to keep the mixture light. Once all the cream has been incorporated, add the whisked egg whites a little at a time, again folding them in gently rather than stirring. Select your serving dish – I use a 26 x 18cm rectangular dish. Use as many sponge fingers as necessary to cover the base of the dish in a single layer, breaking some up if you need to fit them into corners or sides. Pour over the raspberry sauce and spread it out with the back of a spoon so that the sponge finger base is entirely covered, then add the whole raspberries in an even layer. Finally, pour over the white chocolate mixture and shake the dish to allow the mixture to fill any gaps, then smooth over the surface with a spatula. Sprinkle an even layer of the pistachios on top and refrigerate for a minimum of 8 hours or overnight before serving. For more delicious recipes and foodie news, check out canberraweekly.com.au

Beloved Canberra restaurant Monster Kitchen and Bar at Ovolo Nishi has announced it will go vegetarian for a year. The announcement forms part of Ovolo Hotel’s launch of the ‘Year of the
Salt baked cabbage from Monster Kitchen and Bar.
Veg’, which has seen their restaurants and bars across Australia and Hong Kong go vegetarian for 365 days, from Thursday 1 October. Monster’s menu will go vegetarian from November, however a number of ‘Year of the Veg’ menu items are available on the menu now. Monster has also announced the appointment of a new executive chef, Paul Wilson, formerly of Geranium in Denmark and the Great Barrier Reef’s Orhpeus Island. Ovolo says Wilson will incorporate techniques from previous experiences to “showcase vegetables through a refined menu offering”, with fermenting and pickling to be prominent across the menu, as well as produce from the in-house kitchen garden grown by Wilson and the team. Founder and CEO of Ovolo Group, Girish Jhunjhnuwala, said the hotel chain’s decision to overhaul its menus has come from a place of concern for sustainability and the environment. “We want to be conscious about what we are consuming and practise environmental sustainability as best as we can, as this leads to a larger impact on humanity, not just the environment.” For more information or to book a table, visit monsterkitchen.com.au
Krakatoa pops up at Kokomo’s The creative minds behind some of Canberra’s favourite foodie haunts have announced their latest venture, Krakatoa, a pop-up dining experience serving high-end Asian barbecue. Combining the flavour and style of their venues, Akiba and Sage Dining Rooms, owners Peter and Michael Harrington have temporarily fitted out the dining room at their other venue, Kokomo’s, for the limited pop-up. “We have decided to temporarily shift our focus from the nightlife scene to dining, so we can utilise our space more efficiently and offer locals a menu that is innovative and celebrates the reopening of the hospitality industry,” the pair say. “We want to bring the same atmosphere and energy that locals know and love us for into this new menu at a time where it has been harder to do so.” The omnivore menu will dish up the likes of Thai beef and macadamia pie tee, barbecue pork belly and wood fired duck curry, while an order from the vegan menu would include pickled shitake, tempura eggplant and sweet potato curry. Krakatoa opens from today, Thursday 8 October. To book a table, visit krakatoabbq.com.au

Sapphire Coast getaway: A whale of a time With spring here and the weather warming up, humpback whales are making their annual migration from the warm waters of Queensland south toward Antarctica. As they make their way down the east coast of Australia, NSW’s Sapphire Coast becomes one of the best places in the world for whale watching. CW’s Denholm Samaras recently spent a weekend on the Sapphire Coast taking in the scenery, a local brewery, secluded luxury accommodation and, of course, the sight (and smell) of whales. We stayed: at Currajong Retreat - a luxury private getaway on an angora goat farm nestled in the Sapphire Coast hinterland 40 minutes from Eden. Offering secluded glamping accommodation set on a cliff, each safari-style tent is magnificently appointed with a modern kitchen and ensuite, timber flooring, a cozy fireplace, and a completely private balcony with a barbecue and freestanding outdoor bathtub, offering views down to the river and valley below. We happened to visit during peak “kidding season”, which meant the property’s paddocks were littered with dozens of adorable baby angora goats. After taking the scenic three-and-a-half-hour drive from Canberra, we arrived at Currajong Retreat mid-afternoon and got up close with the kids, cuddling and even bottle feeding them. A special shout out to Pepper and Sprout, two
beautiful, extroverted little kid goats who could easily be tourist mascots for the entire region. Currajong Retreat | Big Jack Mountain Road, Burragate. T: 02 6496 7072. W: currajongretreat.com We went whale watching: with Cat Balou Cruises from Eden. Having made the 40-minute drive from our accommodation to be there by 7.45am, we were out on the water by 8am and had a close encounter with a whale pod before 8.30am. The boat then travelled an hour toward Merimbula to see another whale before returning to Eden, where we disembarked by 12.30pm. Over the course of the trip, we were greeted by scores of dolphins who came up close to ride the boat’s bow waves, plus plenty of diving seabirds. The Sapphire Coast’s rich and fascinating history of European settlers’ interactions with the whales – initially whaling but for the last 90-odd years conservation and protection – was well explained over the course of the tour. Antebellum (MA15+)
During the American Civil War, a group of new slaves arrive at a brutal Louisiana plantation run by the Confederate States Army. The plantation owner, Elizabeth (Jena Malone), gives the new arrivals the lay of the land: speak only when given permission and follow all rules lest they are permanently dealt with. Eden (Janelle Monáe) however, already branded for an earlier escape attempt, plots her next move. Former social action campaign advertisers Gerard Bush and Christopher Renz focus their passion as first-time feature film writers and directors on a movie in the same vein as Jordan Peele’s Get Out and Us. Using the setting of America’s slave history to reflect the USA’s current race issues, the movie is shocking in its depiction of plantation life. Like Midsomer, brightly lit scenes in beautiful, natural surrounds jarringly counter both the horrors taking
place on-screen and the usual tropes of the horror genre. The cinematography, lighting and score are beautiful, artistic and effective, serving a classic, tense atmosphere throughout. The story is (unfortunately) relevant, highlighting the issue of Confederate memorials, monuments and celebrations still in place in America’s Deep South. Unlike Peele’s outings, however, the film pulls its punches in visceral shocks and casting. Perhaps recognisable faces playing against type would have made a more memorable impact. Verdict: A solid horror, serving an apt metaphor for contemporary times. Such material in the hands of an auteur like Quentin Tarantino or Spike Lee, however, could have transcended it to a modern-day classic. 3 stars.

Book talk A Song for The Dark Times by Ian Rankin Orion, $32.99
A new Rankin novel is always a delight, and his latest is a great example of a crime writer at the peak of their ability. Former detective John Rebus is shaken out of his retirement doldrums when his daughter rings with the news that her husband is missing. Rebus heads north to the coastal Scottish town of Tongue to help, while back in Edinburgh his former colleagues, Siobhan Clarke and Malcolm Fox, are struggling with the murder of a rich Arab student. This wellcrafted mystery contains the usual Rankin trademarks of musical references, sharp social commentary, gritty characters and a wry sense of humour. One of the year’s best!
Jeff Popple reviews three very different crime novels. More of Jeff’s reviews can be found on his blog: murdermayhemandlongdogs.com City of Spies by Mara Timon
Over My Dead Body by Dave Warner
Zaffre, $29.99
Fremantle Press, $32.99
Mara Timon moves smoothly into Alan Furst territory with her first novel, City of Spies, about a British SOE agent caught up in a web of betrayal in Lisbon in 1943. Elisabeth de Mornay only just made it out of German-occupied France with her life, but now finds herself involved in a more dangerous mission to infiltrate a Nazi espionage ring which is targeting Allied ships. Timon ably sketches the historical settings with a patina of authenticity, and she knows how to advance her story at a good pace with neatly inserted surprises and the occasional burst of gunfire. Very enjoyable.
Probably one of the year’s more original crime novels is Over My Dead Body by Australian author Dave Warner. Set in New York in the near future, it features cryogenicist Georgette Watson who has mastered the science of bringing frozen bodies back to life. One of her first subjects is Sherlock Holmes, who joins her and the NYPD in tracking down a vicious serial killer who is apparently slaying unrelated strangers. Very different to Warner’s usual rural noir novels, this is an enjoyable, clever mystery that moves briskly along and offers some good suspense and nice touches of humour. Terrific fun.

wellbeing
Holistic medicine: feeling ‘whole’ again The English word ‘health’ derives from the old English ‘haelth’, meaning whole, or as the Oxford Dictionary describes it, ‘a thing that is complete in itself’. Similarly, holistic medicine is concerned with the complete picture of a person’s health including their physical, mental emotional, spiritual and social wellbeing. We are complex beings with so many layers that underpin our wellbeing, yet a common criticism of Western medicine is its tendency to focus on individual symptoms or body systems at the expense of this multifaceted whole. If your thyroid is playing up, you go see an endocrinologist, but if you have a skin condition you see a dermatologist, and so on. The benefit of specialisation is that
if you fall off your bike and smash your shoulder you get it rebuilt by an orthopaedic surgeon who has devoted a considerable portion of their life to gain the knowledge and skills to be able to perform such a delicate procedure. The downside is that the whole picture can so easily get lost. Once the surgery is complete, you’ll be referred on to a physio for rehab, your GP might prescribe medication to help you sleep or to control the ongoing pain, and you might see a psychologist to assist with your mental and emotional recovery. It may all work perfectly and seamlessly but, more commonly, one or more aspects of the healing process are left incomplete, even though technically the shoulder is now ‘fixed’. The legacy might be ongoing pain that impacts

sleep, creates emotional and mental distress, and inhibits future wellbeing. On the other hand, a holistic practitioner is trained to consider all aspects of your wellbeing: sleep, diet, stress levels, digestion, relationships, mental health, spiritual wellbeing, family health and so on. The starting point might be, in the case above, to alleviate the pain, but also to restore quality sleep, reclaim full range of movement and rebuild confidence so that you can ‘get back on the bike’ and resume an important physical and social aspect of your life. Holistic medicine is interested in symptoms but, where possible, rather than trying to simply suppress the symptoms with medication, it’s more interested in what body systems are out of balance and are causing the
symptoms in the first place. Support the body systems that are needing help and the symptoms resolve. Teach a person how to maintain their own equilibrium and these same symptoms need never return. Despite what we might have thought or been told, feeling whole again is possible, especially if that precious wholeness is being considered. Given the right support, our bodies, minds and spirits have an incredible capacity to be restored to wellbeing. Spring is for foraging Spring is one of the best times to forage for edible weeds as growth is more likely to be young, fresh and hydrated. This means they are both nutritious and palatable; they become unpleasantly bitter and often stringy as they age. Many edible weeds are relatives of modern cultivated varieties of leafy greens and veg, and most are far more nutritious. One famous example is dandelion; it is the most nutritious vegetable ever to be tested by the US Department of Agriculture! What’s more, weeds are pioneer plants; that is, they colonise neglected ground, preventing erosion, providing food and habitat for wildlife, and adding nutrition and organic matter where it’s desperately needed. Foraging for weeds is child’s play (and adult’s play, I must admit), providing you learn some fundamental rules beforehand: • You must be absolutely certain of a plant’s identity before consuming it – many plants are toxic– err on the side of caution if you are remotely unsure. Spend some time with experienced foragers and check out The Weed Forager’s Handbook by Adam Grubb and
48
canberraweekly.com.au
Annie Raser-Rowland (2013). • Avoid foraging where there is any risk of airborne or soil contamination such as industrial areas, adjacent to stormwater runoff, busy roadsides, and public spaces which are known to be sprayed with pesticides. • Weeds, like any new foods, should be introduced into your diet gradually, to give your body and palette time to adjust to these wild new flavours and dense nutrients. If you are pregnant or trying to conceive, avoid eating large amounts of wild or cultivated plants which have strong flavour compounds (e.g. shepherd’s purse or parsley). • Give weeds a good rinse before preparing them for the table. Some weeds may need to be cooked and/or blanched before consuming them, particularly those which contain oxalic acid (do your research!). Chop them up finely and sprinkle them in salads and over cooked meals – cooking them can also neutralise their sometimes-intense flavours. Two of the many wild edible greens to check out now:
WITH HORTICULTURIST TRACEY BOOL traceyboolgardenwriter.com
Wild lettuce: A fast growing and similar tasting relative of many domesticated lettuce varieties, wild lettuce can look similar to dandelion when very young, before becoming decidedly bitter, prickly and upright when mature. It can be differentiated from dandelion by distinct hairs growing underneath the leaves, along the central vein. Young, lighter green foliage can be used raw or cooked in stir-fries. Interestingly, the white sap in wild lettuce has sedative and analgesic qualities. Mallow: Once favoured by ancient Romans, wild and domesticated varieties of mallow are still used in many cuisines. It grows readily at most times of year. Young leaves have a fresh mild flavour and can be used raw, chopped up in salad or cooked as a leafy green, which also helps to thicken dishes. Immature seeds, rich in energy, healthy oils and proteins, can be fried, steamed or added to cooked dishes. Medicinally, mallow’s viscous sap is used to calm irritated digestive systems.

Weekly market wrap Buyers aware of increased competition
Zango turns purple for a good cause
Domain reported an 84% preliminary auction clearance rate for 3 October, indicating there is no relief in sight for buyers seeking established properties. There has been an increase in the number of quality properties coming to market; however, this has been met by an even greater increase in buyer demand. This imbalance is especially noticeable where values are under $1,000,000. Whilst there are strong results being achieved, there are still parts of the market which are especially price sensitive, making it important for vendors to keep a firm grasp of their reality balloon. Enquiries across my portfolio of projects located throughout Canberra demonstrate significant demand for off-plan property. I have noticed buyers are aware of increased competition and how this has changed market dynamics and created urgency for them to act decisively. This has condensed timeframes of being ‘actively’ in the market, thus placing greater importance on agent responsiveness. Twelve months ago, it was advantageous for agents to meet
Local property platform Zango is harnessing the power of community and painting the town purple for a good cause. Zango, participating agencies and agents will be dressed in purple at open homes and rental inspections on Saturday 10 October in support of World Homeless Day. As part of the platform’s ‘A Good Cause’ initiative, Zango will match participating agent donations of $10 for every open home or rental inspection held on Saturday, to show support to the Canberra community through Hands Across Canberra. “We all know that Canberra is a great place to live and work, but that doesn’t mean there aren’t people who are doing it tough,” said Zango managing director Ben Faulks. “Supporting homelessness is the natural place for Zango to activate our efforts on making an impact in the Canberra community. “And as a locally owned and operated business, we are looking forward to expanding our partnership with Hands Across Canberra to improve the lives of more Canberrans.” Hands Across Canberra works with more than 250 local community organisations and aims to “embed

prospective buyers after they had inspected multiple properties. Lower levels of competition allowed buyers to approach sourcing a property at a leisurely pace. Now it’s not uncommon for buyers to make a decision on the spot if a property is suitable. Once a decision has been made, there seems to be reluctance to consider alternatives. All markets comprise participants with various perspectives on how they interpret conditions. Even though new enquiries, buyer inspections and sales volume compared to available stock on the market indicate this is an upward cycle for values, there are some people who seem to believe otherwise. Relatively consistent market conditions in Canberra hide the compounding pain caused by indecision. Using results from Corelogic’s Home Value Index showing values increased by 1.5% over the last quarter, had you delayed purchasing for the quarter and purchased at the median value, you would need to spend an extra $9,668.71. If given the choice to save around $100 per day wouldn’t you take it?

a culture of giving” by helping Canberrans give to local charities. The partnership will see a Canberrawide local network comprising Zango, agents, agencies and Hands Across Canberra coming together for ‘A Good Cause’. Hands Across Canberra CEO Peter Gordon said the organisation is “delighted to be partnering with Zango to promote the cause and to encourage people to be generous locally”. “It might surprise Canberrans that many people don’t actually have a place to live. There will be 2,000 people homeless in Canberra tonight,” he said. “Connecting people looking for somewhere to actually live and a great cause like homelessness is perfect.” World Homeless Day is held annually on 10 October and aims to draw attention to the issue on a local level, providing opportunities for the community to get involved in responding to homelessness.

Life amongst nature Curtin 45 Jennings Street This is a rare offering in one of Curtin’s blue-ribbon streets. 45 Jennings Street boasts five bedrooms and space in spades for the whole family. “The position in one of Curtin’s blue-ribbon streets across the road from nature reserve is a true standout,” says McGrath North Canberra partner, Christopher Dixon. “The current owners have, over time, improved the house and gardens to create a wonderful family home with beautiful indoor/outdoor entertaining spaces and gorgeous shady gardens. “Curtin is very popular for families and this home is no
exception with spacious versatile living areas for the whole family,” Dixon says. “The downstairs office/rumpus space would also be ideal for those with home-based business aspirations or extended family.” The home boasts 238sqm of living space, and includes two living areas, separate dining room and a kitchen, family and dining space. The master bedroom includes ensuite and walk-in robe, and two bathrooms service the remaining four bedrooms. property’s elevated position with views to Black Mountain Tower and excellent access to nature.”

CAPRICORN 22 DEC – 20 JAN
Partnerships are of importance at the moment; things may not have been easy lately, but you’re ready to turn over a new leaf where at least one person is concerned and commit the relationship to a new footing. Be careful of losing control and going OTT with loved ones.
Avoid trying to force any issues on the career front, as this will be a waste of time. You need to be patient and let things naturally take their course; otherwise, being too assertive could backfire on you. Keep your feet on the ground where romance or children are concerned.
The planets indicate a need to be careful of what you say to a certain person, as it will be hard to know whether you’re really upsetting them or whether they’re in a fault-finidng mood. You could be drawn into a conversation that involves telling someone the stark truth.
This week is one of those times when it is wise to think before you speak, especially on the family front as it will save endless trouble. Mercury Retrograde indicates that you need to be careful of getting caught in other people’s emotional dramas. Your response is in your hands.
TAURUS 21 APR – 21 MAY
LEO 23 JULY – 23 AUG
SCORPIO 24 OCT – 22 NOV
AQUARIUS 21 JAN – 19 FEB
Something from your past is being stirred up this month and could be making you feel uneasy. If you need help to deal with this, speak to someone who inspires trust. Mercury Retrograde indicates that you may find yourself at cross purposes with loved ones.
This week, the planets could intensify your emotions. You will need to be careful of what you say and how you act when dealing with situations you are uncomfortable with. Mercury Retrograde indicates a need to get some handyman jobs done; you are best to call in the professionals.
The most secretive and hidden areas of your chart are highlighted this month. Use this quiet time to find out more about yourself; walks by the sea, listening to music will uplift you. Avoid taking on more than you can comfortably handle, pace yourself and take care of your energy.
You may need to deal with someone who has a rigid mindset which is likely to frustrate you. The spotlight is on faraway places, further education and spirituality, so all kinds of interesting developments are likely. Your world is expanding and you’re ready to explore different ways of thinking.
VIRGO 24 AUG – 23 SEPT
SAGITTARIUS 23 NOV – 21 DEC
PISCES 20 FEB – 20 MAR
Your defences are down at the moment and people can puncture your armour. It would be extremely easy to retaliate or brood over harsh comments, but don’t let things get out of proportion. This would be the ideal time to learn to meditate, especially if you’re feeling on edge.
The planets warn you to avoid overreacting in the face of any financial concerns. Mercury Retrograde indicates that you are going to be rather restless wanting to break free from your current set of restrictions, however the reality is that the chores keep on piling up around you.
GEMINI 22 MAY – 21 JUNE The planets suggest truth is a very elusive quality in your dealings with others. If your intuition suspects that someone is only giving you half the story, avoid taking the stress of this situation out on innocent bystanders. With Mercury retrograde, expect some disruption to your plans.
Try to avoid coming on too strong with someone as it could lead to a fall out. However, if you can avoid getting worked up, you’ll be able to win them over. The planets are focusing on your personal resources and financial security this month.
