Chocolate “TIS THE SEASON…FOR ETHICAL SINGLE ORIGIN CHOCOLATE! BY: TAMMY FREEMAN
Chocolate is a favorite indulgence enjoyed by many across the globe, Americans spend $22 billion on chocolate per year. That is a whopping 2.8 billion pounds of chocolate. We love our chocolate sweet; we love our chocolate in savory meals…we love to eat it, drink it, and even use it in our beauty products. Unfortunately, chocolate has a dark side. The leading chocolate makers add high amounts of additives and sugars to cheapen the chocolate to maximize profits. The big chocolate makers have come under fire for paying notoriously low wages to cacao farmers who turn to slave and child labor to farm cacao. Most of the cacao (the main ingredient in chocolate) we eat in the U.S., comes from West Africa, specifically Ghana and the Ivory Coast. Interestingly, however, many cacao farmers have never tasted the finished product their cacao is essential in creating. This is because they simply cannot afford it. The cacao they farm is shipped (to Europe) where it is used to make chocolate. The price of the chocolate is prohibitive for most cacao farmers, so they usually do not get to enjoy the fruit of their labor. Gillian Goddard, a chocolate maker, and founder of Sun Eaters Organics, who works with rural farmers in Trinidad and Tobago has this to say about it, “Nothing tastes good if there are no ethics involved, no matter how delicious that chocolate, if you oppress someone and mistreat people for it to be made it leaves a sour taste in your mouth whether you realize it or not”. Indeed, it is disheartening to know that something we love so much can have such a bitter side. Thankfully, there is hope. There are many small batch single origin chocolate companies that work in cacao farming communities, they pay well above fair wages to farmers for the cacao, avoiding the need for farmers to resort to forced labor to account for tiny margins.These chocolate makers support the communities that farm the cacao and produce the chocolate from bean to bar at the point of origin. This is a big deal. This makes room for economic justice, for children to have the opportunity to go to school, for jobs to be created in local communities, decreasing unemployment rates and upward mobility.
Soul and Story is an online marketplace that works with black and indigenous chocolate makers who are empowering cacao farming communities through the production of chocolate from bean to bar. Soul and Story supports chocolate makers from Haiti, Trinidad, and Ghana. Keep reading to learn more about these chocolate makers and the important work they are doing in their respective communities. Askanya Chocolates is the first bean to bar chocolate company in Haiti. Many people do not know that Haiti produces a significant amount of cacao and usually it is sold to larger companies to make chocolate. Askanya is keeping cacao in country and producing delicious milk and dark chocolate made in Haiti but available to the world. Similarly, in Trinidad and Tobago, the Alliance of Rural Communities is producing various dark chocolates with infusions such as mocha, cinnamon and orange. They are teaching farmers how to produce chocolate and even getting children and teens involved in both the chocolate production and business sides of chocolate. The results include sustainable communities who can use their natural resources and manufacturing power to provide for their families and thrive. Across the world in Ghana, ’57 Chocolate has a similar mission, they produce several chocolates using cacao farmed in Ghana. All the aforementioned chocolate makers use natural ingredients, high amounts of cacao and no additives. So, you get to taste real chocolate without the artificial additives and sugars. This holiday season, and always, please consider gifting and consuming ethical chocolate. Not only is it better for you, but it is also better for the world.

Throw your ingredients in a Slow Cooker and watch the magic happen. This Slow Cooker Hot Chocolate is warm, chocolatey, and rich. Top off with whipped cream and large marshmallows for a complete treat.

Instructions
Place the slow cooker on low and allow to sit for 10 minutes to get warm. Pour in the sweetened condensed milk and whisk cocoa powder to blend.
Next, pour in the half and half and whipping cream. Using a whisk and mix the ingredients. Add the baking chocolate, vanilla extract, and espresso powder. Stir occasionally and allow to cook for, at least, an hour and a half. Serve with whipped cream and chocolate syrup.

Spiked Hot Chocolate Recipe
Ingredients
1/2 cup granulated sugar 1/3 unsweetened cocoa powder 1/4 teaspoon Kosher salt 1/2 cup water 2 1/2 cups whole milk 1 1/4 cup heavy cream 1 teaspoon pure vanilla extract 1/2 teaspoon pure peppermint extract (optional) 5 ounces (about 2/3 cup) Original Kahlua or Mocha Kahlua 2 1/2 ounces (about 1/3 cup) high-quality vanilla vodka whipped cream (optional) crushed peppermint candy (optional)
Instructions
In a medium-sized saucepan over medium heat, combine sugar, cocoa powder, salt, and water and whisk to combine.mixture to come to a rapid simmer and pour in milk and cream. Stir often until heated through. Remove from the heat. Add the vanilla and peppermint extract (optional), Kahlua and vanilla vodka, and stir once more. She is one of the few African American women owning a Champagne brand. Her love for her hometown, Bedford-Stuyvesant (Brooklyn, NY), inspired the name of her brand, Stuyvesant Champagne.

WhiskeyWright™ is a Black Owned, Fine Handcrafted Spirit Co. making handcrafted liquor using various recipes for Whiskey, Tequila, and Rum. Whiskey was the first product followed by Tequila and Rum in subsequent years. There is a distillery in the Northern Virginia region that also provide tastings, tours, and merchandise to guests. THE HISTORY In 2015, Chef Edwin Wright was hit with the idea to infuse alcohol much like when he smokes a brisket or a pork shoulder. He experimented with different methods of smoke infusion and after a few taste tests, many people were asking him where they could buy it. In 2016 Wright developed a method to infuse the smoke flavor in the whiskey. Trial and error brought him to a method that was just right. After testing it at the bar he was convinced that this needed to be his life. He gave a sample to the Chief Engineer, his business partner, Ray Robinson and he loved it.
