The KOUZINA culinary festival KOUZINA is the premier culinary event of the year in Eastern Halkidiki! In the shadow of the sacred Athos, in the cove of the bay of Mount Athos, on the sandy Ammouliani Island, at the foot of the Aristotelian mountain, in the Strymonikos bay, in the Akantios Bay, on the verges of Cholomontas, we invite you to smell and taste our organic products and flavours in a magnificent culinary feast, in which you participate as of this day! Enjoy! The Traditional Restaurant «Bakatsianos» The «Traditional Restaurant Bakatsianos» is built on the dense forest of Agia Paraskevi in Arnaia! It is one of the utmost quality culinary spots of Eastern Halkidiki. Its owner Dimitris Polyzos, studied the culinary art abroad and managed to combine his professional training with the local tradition, by creating dishes with unique character, tastes which make the best of out of the local products and highlight every tasteful aspect of the region. Today, you will enjoy an authentic ancient Greek menu prepared by him and the French chef Loic Palco, representing the «Centre Culinaire Contemporain Rennes», who travelled from the gastronomically famous Brittany to take part in the KOUZINA 2018!

Series of beluga lentils, smoked mackerel into onion marinade and beetroot mousse Scallops on groats, served with aromatic Cholomontas herbs* (* The wooded Cholomontas mount is known for its rich diverse flora and for the abundance of its natural assets. Six thousand plant and herb species grow on its slopes, which also bear its famous firs, and mushrooms -that grow everywherewithout human care)

Fresh cod fish** back - in a delicious fish broth, served with wild herbs and forest nuts (** The fish and seafood of Mount Athos gulf are renowned for their exquisite flavor. The reason they are so different from the rest is that the waters of the two bay are deep and clean, as the area has many sea currents and there are no organized cultivations to affect it. Thus, our seafood is caught in very deep waters, with the highest salinity in Greece, and rich in plankton and clean food, since no rivers or streams end up in the bay to disturb the balance of the water composition)

Desert Υoghurt*** mousse mixed with chili pepper, served on seasonal spoon sweet**** (***Yoghurt is the main product of the primary production in Arnea. In the traditional small factory, Antonis Karayiannis makes yogurt according to the recipe of his mother Angeliki, who was a famous shepherd and very good housekeeper. Antonis’ yogurt is made with a mix of local milk (goat / sheep / cow milk), so it is so delicious and tasty) (**** 4.500 trees/plants/herbs are found on the slopes and shadows of Cholomontas Mountain. Local women collect the fruits carefully and make uniquely tasteful sweets, revealing the nature’s taste and bringing you the aromas of the forest!)
