EDITOR’S NOTE Among the organizations that Cayman Marshall is pleased to support, one of my favourites has to be CNIB Lake Joe, the summer camp for kids living with sight loss and other challenges. Each August, the camp holds a big fundraising bash to meet its annual maintenance and operating costs, and to give even more help to campers. But three years ago, of course, all large social gatherings had to be put on hold, thanks to COVID. That’s when camp officials came up with the idea of Dock to Dock, essentially bringing the party to the people, albeit from a safer distance. Floating party boats loaded with celebrities, live music and volunteers cruised around the Big Three, stopping in at docks where participants had pledged to hold fundraising dock parties. Dock to Dock turned out to be one of the most exciting events of that summer – organizers blasted through their fundraising goal, and though the format has evolved slightly, it’s now an annual event. For 2022, the camp has an ambitious new goal: raise $170,000 for a new waterski boat, equipment and safety training. (See page 52 for the complete story, and learn how you and your friends can get involved.) There’s an added incentive: register your “dock” (real or figurative), raise a minimum pledge of $1000, and you’ll receive a specially curated Dock Box filled with goodies from some of the area’s finest eateries. It’s a great way to share the magic of summer in Muskoka with friends, and raise money for a fantastic organization at the same time.

We’re all taking our health more seriously after the last couple of years, so it’s important to be mindful of what we’re putting in our bodies. If you’re truly dedicated to becoming more health-conscious, it’s essential to know that some meats available at the supermarket contain harmful chemicals. An alternative is necessary. This summer, embrace premium restaurant-quality food that you can prepare yourself. Bolton Foods offers dye-free, preservative-free, Canadian prime beef products, USDA prime beef, free-range poultry with no chemicals or hormones, and wild ocean fish and seafoods – all delivered directly to your home or cottage. After speaking with Mike Boros, an industry expert and a passionate member of the Bolton Foods team, I learned all about the accessible, mouth-watering options to choose from for your next dinner party, or even your next family meal. Boros shared his top recommendations, and a few tips on how to prepare them too. Japanese A5 Wagyu beef is one of the finest grade meats you will come by. Juicy, tender, and world-renowned for its flavour, this perfectly prepared steak will impress your guests and treat your family. The key? Boros insists, “This is not a steak you want to walk away from on the grill.” Leave it in its flames for 30 seconds or so to build a nice crust, flip it, and grill for a minute and a half per side for medium-rare. Pair your meat with a full-bodied Shiraz, and you’ll be recreating a NOBU-quality dining experience at home.

SPEAKING OF NOBU,
Boros is excited to offer Chilean Sea Bass, a staple, year-round menu item at the fine-dining restaurant. Even if you seldom cook fish, this recipe is rather simple, and sure to satisfy your inner food critic with its decadence. Pair with a nice sake, some mirin, white miso paste and sugar, and you’ll be serving a summer game-changer. Bolton Foods’ fresh salmon with a full-bodied white wine, or Surf and Turf Lobster and Filet Mignon, also make for a tremendously flavourful, food-coma-inducing seafood night. If poultry is more your style, explore Bolton Foods’ extensive selection of quality chicken options, all free-range, Ontario, gluten, hormone- and chemical-free. Boros points out that preparation of their chicken products is actually quicker than a typical poultry product. Save time and invest in your family’s health with Bolton Foods’ delectable options. In fact, Mitchell Hooper, a competitor in the World Strong Man, has been sponsored by Bolton Foods. With an intense focus and commitment to physical health, Hooper has been given the opportunity to compete for a world deadlift record. Hooper’s exciting achievements speak wonders to the quality of Bolton Foods’ products, and make you feel comfortable and healthy enjoying them regularly, instead of supermarket alternatives. When you’re spending time with your loved ones this summer, treat yourselves to quality. Support the local folks, the ones who care about their products, their community, the health of those around them, and ultimately, cooking a dinner to remember.

MUST-HAVE SMART HOME DEVICES:
1
VACUUM
Not all smart home devices are about safety, security, and speaker. The Smart Vacuum is fast becoming an ubiquitous home appendage. Dyson has become synonymous with top-of-the-line vacuums and nothing beats the Dyson 360 Heurist. Run it from Dyson’s app and control it from anywhere; you can clean the house even when you’re not there.
2
DOORBELLS & LOCKS A great upgrade for home security and peace of mind is a smart doorbell, which allows homeowners the comfort of a video camera and two-way communication so that they can be sure of who’s coming to the door, whether you’re home or not. There are countless options available, but we lean towards Google Nest’s options, the line of Ring products, and Arlo as well. It’s best to pair your smart doorbell with a smart lock to fully integrate your smart home security. Google Nest’s Yale Smart Lock and the line of August and Schlage offerings allow for safe keyless entry and smart home integration.

THERMOSTAT A Smart Thermostat saves money, energy and anxiety. No more of those, "Whoops! I left the AC on while we went to Europe for the week" moments. Run the A/C before you get home or crank up the heat to come in from the cold. The Ecobee Smart Thermostat with Voice Control (Alexa enabled), the Honeywell Lyric T5 Smart Thermostat, and the Nest Learning Thermostat 3rd Generation top our list. Energy Star certified and compatible with multiple devices, these are sure to keep your house at the perfect temperature no matter where you are.
5
LIGHTING Energy, ecology, and environment are infinitely more important to homeowners in 2022 than ever before, and the ability to control your home’s lights remotely provides savings for you and the planet. Phillips’ Hue White and Color Ambiance smart lightbulbs are compatible with all three of our favourite OS hubs and provide 25,000 hours of light at 800 lumens.

GARAGE DOOR OPENERS
Many of us use our garages as the portal to the home, especially in the midst of a Canadian winter, so a smart garage door opener is a necessity for any smart home. The Chamberlain MyQ Smart Garage Hub is our pick. Monitor and control who opens your garage door from anywhere with a cellphone signal and receive real-time notifications through the myQ app. No more dead batteries or garage door opener remotes lost somewhere in the backseat; just tap your phone and slide into your heated garage (also controlled with your smart thermostat) to avoid winter (or summer) altogether.

pen-concept entertaining is in. You already know that. Hosts don’t want to be stuck in the kitchen while friends and family laugh and sip cocktails in the next room. The inclusive-cooking trend – in conjunction with the more-time-at-home movement – has ignited an outdoor kitchen frenzy! Luckily, Muskoka BBQ and Outdoor Kitchen Centre is your best asset for creating outdoor entertaining experiences at your home or cottage. Bringing an outdoor space to life requires creativity, skill, and extensive planning. That’s why when it comes to an undertaking of this magnitude, it’s best to trust the experts. At Muskoka BBQ and Outdoor Kitchen Centre, we’ll work closely with your family each step of the way to ensure you’re satisfied with your investment. I really want you to love outdoor cooking as much as I do! There are several reasons to make an investment like this in your outdoor space. Perhaps the most obvious is the unique entertainment experience it provides. Instead of spending a beautiful summer evening indoors, cook homemade pizza from your dock or deck as you overlook the lake with friends.

JULY 2022
Believe it or not, the use for your new outdoor kitchen will extend beyond outdoor enjoyment. It will also increase the resale value of your property. When it comes to increasing the property value of your home, every inch and how it’s utilized matters. Joel Adair, a sales representative from Cayman Marshall, states, “An outdoor kitchen adds a ‘wow factor’ to any home. It’s likely to be a massive differentiator between yours and the next. Outdoor kitchens can help a buyer visualize themselves and their family in the space. Creating an emotional attachment like this with your prospects will tremendously influence their likelihood of making an offer (and their offer price too). If they can see themselves pouring drinks with friends and firing up the grill all summer long, they’ll be ready to move in before they’ve toured inside.”
If optimizing your cottage for outdoor entertaining is something you seek, come by Muskoka BBQ and Outdoor Kitchen Centre and I’ll show you around. We’ll learn more about what your vision is for your outdoor space and give you a plan to bring your vision to life. When we’ve decided on the elements you’d like to include, we’ll personally install and set everything up ourselves, so you can rest assured that your outdoor hub is turnkey and ready to be enjoyed. I’m passionate about creating quality outdoor spaces for Muskoka property owners to enjoy with loved ones. Give us a shot and I promise the only thing you’ll be wishing is that we’d set up your outdoor kitchen sooner.

One Point Twenty One Coffee Roasters By Neil Madden | President, ECS Coffee
B
ack in 1985, I eagerly lined up to see "Back to the Future" on its opening night. I was so enamoured with what would become a pop culture classic, that it quickly found a home on the VCR, DVD and subsequent streaming services as my kids grew up. I must have made them watch it a hundred times, and it remains a movie that I must watch whenever I see it on the screen. In 2020, right before the pandemic hit, ECS Coffee bought a state-of-the-art small batch coffee roaster for our Burlington location. This zero emissions Bellwether roaster seemed from the future, with no external venting and no harmful pollution entering the atmosphere. It is even remotely connected to a team of master roasters and experts all over the world, helping us curate our blends to perfection. So as we searched for a new name for our coffee brand, it was just a coincidence that my daughter Brooke called me one day to suggest we get matching tattoos…(she is now 24) and when she pitched the idea I agreed immediately. So, the Roman numerals I.XXI are now permanently featured on both of us. Representing a nod to our favourite movie, One Point Twenty One references the electrical power in gigawatts to make time travel possible. Seeing as our new roaster was electrical, and since coffee does supply energy, the brand One Point Twenty One Coffee Roasters was created.

If you pop into our Burlington store almost any day of the week, you will see our roaster in action. We have curated our blends to our customers’ specific coffee and espresso machine needs. With fun names like 88MPH, Great Scott, Atomic Blend and Mr. Sandman, if you pay close attention to the packaging, the descriptions, and names, you will find some Easter egg references to our favourite movie. Beyond our custom blends, we roast 100% Jamaica Blue Mountain and 100% Kona coffee, along with a myriad of single origin coffees. Pop by, give us a try or order online. Then grab a cup of coffee, sit back with your favourite movie and you will quickly learn why our coffee “urns high praise.”

Locavore A Fresh Way of Thinking For a Changing Food System By Adrienne Roman
I
nitiatives promoting healthier eating and environmental protection are finally gaining momentum around the world. A number of industries are now endorsing a locavore lifestyle, a combination of the word “local” with the suffix “vore,” referring to either a planteating herbivore or meat-eating carnivore. The movement, which began in 2005 with a group of health-focused food enthusiasts in San Francisco, promotes eating as locally as possible with foods that are grown and prepared within 100 miles of home, while attempting to limit or completely eliminate non-local products. Sustainable farm-totable food systems are being established, raising conscious thought about the countless advantages of eating fresh over “tired" food, and bringing attention to the detrimental carbon cost that “food miles” have on our environment.
32
■
JULY 2022
The locavore ideology follows “communitysupported agriculture,” or CSA, a farming model built on transparency. It works to build the bridges that connect us to fresh food choices, eliminating distributor costs for the consumer, and supplying direct wages to farmers. There’s no denying industrialized agriculture is experiencing a crisis, and global communities are migrating back to the most logical solution, discovering the bounties that can be found in local food and drink. This shift in consciousness has also highlighted a focus on the need to ensure ethical farm practices and the importance of knowing exactly how food reaches our table. Urban landscapes are being transformed back into lush vegetable gardens, and indoor greenhouses can be utilized for seasonal fruits and vegetables that can be grown in winter.
Fairmont Royal York Toronto
Fairmont Hotels and Resorts are dedicated to reducing their footprint and supporting the CSA model, with the addition of their “Bee Sustainable” program in 2008, adding a honeybee apiary to the 14th floor of the Fairmont Royal York in Toronto, and establishing themselves as the very first hotel in the world to promote and protect them, all within a city centre. As the pollinators of 1000 of the 1200 varieties of crops that provide 80% of human food, bees play a crucial role in maintaining the balance of our ecosystem. An essential link in our food security, they enable the constant growth and reproduction of flowers, plants, and trees. Beekeeper Melanie Coates of the Toronto BeeKeepers Collective runs Royal York’s apiary of 500,000 bees, which reside in six onsite beehives and produce an average of 450 pounds of honey per year. Not only does the honey provide sweet magic for an array of mouth-watering recipes, the Royal York’s executive chef, jW Foster, and his colleagues also carefully tend to a rooftop garden filled with 45 varieties of herbs, fruits and vegetables. He’s dedicated to showcasing locally sourced menu items, managing energy and water conservation, and demonstrating a strong stewardship that’s globally echoed by progressive businesses wanting to forge ahead with positive change. SOME OF THE WAYS YOU CAN
Live Locavore • Find out which restaurants in your area support local farmers, and dine there. • Search for a local CSA (Community Supported Agriculture) program and invest in a farm: a farmer will provide a weekly box of assorted vegetables and farm products in return. • Visit local businesses and make connections with your community. • Seek out local vendors with fresh food options whenever possible. • Think about ways to eliminate waste and use glass instead of plastic. • Grow your own garden, and make preserves. • Shop at local farms and farmer’s markets. • Volunteer or work to help a local vendor sell.

JULY 2022
consumerist culture, Indigenous communities adopted a “Three Sisters” method to farming their primary crops of corn, squash, and beans. The corn stalks provided the perfect place for the beans to grow, while the squash plants protected them from weed growth along the ground. The nitrogen-rich beans and the mulch from the squash leaves created a microclimate that retained just the right amount of moisture in the soil. The cross-pollination of the people, the land, and their multi-dimensional relationships with food sustained their communities throughout the entire year. Unfortunately, many of today’s food choices are often seriously lacking in nutrient-dense ingredients, and saturated with an abundance of toxic ones that dominate supermarket shelves. Convenience foods high in unhealthy fats, sugars, and salt are around every corner; but luckily, so are the healthier options.
There are common threads of knowledge in the culinary wisdom transmitted across cultures and vast geographic regions, and the secrets they hold about how to successfully meet our nutritional needs are completely accessible, as is the capability to grow our own food and enjoy seasonally fresh options. Creating a healthier and more efficient global food cycle is achievable – from growing, to preparing and processing, to consumption and recycling.
Adopting a “kincentric” worldview, where humans are closely related to other natural entities, is a powerful first step. People connect through food. It’s so much more than just what’s on your plate – it’s a way of life.

Systemic change is ignited through information, education, and action. Fresh “fast food” recipes can be created just as easily with better ingredients; it’s just a matter of reaching for the healthier choice. Try to source local fruits, vegetables, and pasture-raised, antibiotic and hormone-free meats whenever possible. Make purchasing decisions that support local farmers. ne project that caught my attention recently is a beautifully crafted custom cottage on Topajo Road on Lake Joseph in Muskoka. The cottage is a contemporary masterpiece designed by Sophie Clapperton Designs. Clapperton has become known for her “unique, yet timeless, designs” throughout the GTA and Muskoka, gracing homes and cottages on Lake Joseph, Lake Muskoka, Lake Rosseau, York, Etobicoke, and elsewhere. Clapperton is at the vanguard of a new generation of designers who seek the perfect intersection between their craft and social and ecological responsibility. I recently sat down with Sophie to discuss inspiration, design, and the Topajo Road project, a newly come-to-market property on the exclusive Muskoka jewel, Lake Joseph. Naturally, I wanted to know from where she drew her inspiration for this project. “I have a lot of connection to New York,” says Clapperton. “We spend a lot of time in New York each year, so styles and inspiration I pull come from the New York aesthetic. Even [with the Topajo Road project], it’s a cottage but the colour schemes – for instance, the primary bathroom – are very Art Deco, black and white; and in the materiality, the way that we mixed metals from the New York scene. Inspiration also comes from a couple of other places: other designers and works that I see online, Instagram, and real estate on the lake.” The Topajo Road, Lake Joseph, property is a marvel, nearly 6000 square feet with 450 feet of frontage on one of the region’s most majestic lakes. Nestled into the landscape, the fivebedroom plus two-storey boathouse is every cottager’s dream.
The cottage is a contemporary masterpiece designed by Sophie Clapperton Designs.
“I like the juxtaposition of this one,” Clapperton says of the house. “We’ve got a dark exterior, which is trendy and really in. It’s very dramatic when you’re up close, but from a distance, on the lake, you almost don’t know the cottage is there. Most can’t see it unless you’re right up close to it, which is really,

standing the test of time in an environment that is timeless and natural. With natural beauty
unexpected, especially for an east-facing view.”
comes natural challenges. When I ask Sophie what she thinks is important when deciding what to spend on, she says, “Spend more money on windows and insulation – you’re going to save money in the long run. Those are things that you’re not going to change in 10 years.”
The challenge of designing for Muskoka is to balance the intention of the structure with the traditions of the region. As Clapperton notes, “The other part of this project that I really love – and it was one of the main concerns and focuses when designing it – was that we wanted it to be modern and contemporary, but still pull traditional aspects of Muskoka. We achieved this by doing simple things like exposed rafter tails outside. On the inside, even though we don’t have a lot of wood, we went with a variety of shiplap textures and replicated beams. You still feel like it’s a cottage without it being a wood cabin.” “The exterior has some modern aspects – for example, the roof overhangs have been cut short,” she adds, “[with] a sleeker profile siding and larger windows. We incorporated shed curved dormers with exposed rafter tails. Having those little elements brought it back to the classical scope, which will allow it to have more longevity – much more timeless. I didn’t want it just to look good for five years.” And that’s the true challenge:

She continues, “The element of the interior that people need to put more money towards is flooring. That’s something that you’re walking on every single day. If you have kids, they’re going to be playing on it. If you’ve got pets, you want to make sure that your hardwood is going to be durable. Make sure you’re picking something with a decent thickness to it, even an engineered product that you can resand and finish at least once or twice.” In the Topajo Road property, every square inch was taken into consideration. How do you achieve something that is crafted in such a detailed way but does not appear busy? As Sophie explains, “We balanced the use of texture by being consistent with the colour.” Most walls and ceilings are cladded with MDF details. Being intentional with the colour choice softens all these details for the eye.
“Going with a white or light colour on the MDF will soften the lines. If you were to go with a mid-tone colour, that can cast heavier shadows, which can be jarring to the eye. When you get to dark colours, the lines soften, however, almost too much – to the point where you can’t see them, eliminating all the work that you did.” It is important to find balance between these things. We can see examples of this done successfully throughout the interior of this cottage, from the intricate ceiling detail in the foyer inspired by a boat, to the unique patterns on the walls that were designed for each room. To highlight and enhance the craftsmanship of the building itself, light and décor had to be taken into consideration. Clapperton and I agree that these two things make the biggest impact on making the building feel more like a home, instead of a construction site. “Artificial and ambient lighting makes a big difference,” she explains.
“You want to ensure you layer the light, and have a mixture of overhead, decorative, and accent lighting. For example, by adding wall sconces in a room, you have an opportunity to add light to highlight a feature such as a piece of art; however, it also adds a soft layer of light that isn’t overhead.” Art, décor, curtains, and furniture add the final pieces to the puzzle that will make your home or cottage feel lived-in and cozy. “Adding furniture transformed this space and made it feel completely different,” Clapperton observes. “The finishing items like curtains and décor pieces filled up the space and got rid of the bare feeling. It also helped to eliminate echoes throughout the space.” The passion that Sophie has put into this project is left to speak for itself. Once you step through the door, the space is inviting, cozy, and warm. The connection to the outdoors and the lake is magnetic, with breathtaking water views from every room.

WATERSKIING WITH
SIGHT LOSS: CNIB LAKE JOE MAKES ANYTHING POSSIBLE BY MARTHA UNIACKE BREEN
D
oes living with sight loss mean you can’t become as good at waterskiing and wakeboarding as anyone else? Well if it does, someone forgot to tell Joshua Cook. Joshua, who is 23, started coming to CNIB Lake Joe as a camper with sight loss back when he was 12, and tried waterskiing at the camp three years later. “I wanted to waterski because I love the water,” he says. “I enjoyed winter skiing and snowboarding, and thought about putting the two awesome things together and trying them. It was a fabulous, thrilling experience.” CNIB Lake Joe Advisory Board member Daryl Knudson, a former counsellor and Waterfront Specialist at the camp, has seen countless kids like Joshua transformed by the experience of waterskiing. The sport is thrilling enough in its own right, Daryl says – being pulled behind a fast powerboat, the wind in your face. Some become skilled enough to cross the wake or drop a ski and go slalom. But for kids living with sight loss, it’s a lot more: learning how to waterski or wakeboard is a huge confidence-builder. That’s why the focus of the 2022 CNIB Lake Joe Dock-to-Dock: Taste of Muskoka celebration is particularly exciting. This year’s goal is to raise $170,000 to rebuild the waterfront program with a new boat and waterski/wakeboarding equipment, along with waterfront staff training and safety programs, provided by Waterski and Wakeboard Canada.

ON FIRST MENTION OF A WATERSKIER WHO IS BLIND OR PARTIALLY SIGHTED, SAYS DARYL, MANY PEOPLE ARE SURPRISED. Actually, it’s not that different from teaching a sighted person, but with just a few extra steps to help the skier get acquainted with their surroundings and the physical sensations of being up on skis and pulled by the boat. There’s lots of encouragement and praise, and excitement as another skier gets hooked on the sport! Joshua started working as a counsellor at CNIB Lake Joe five summers ago, and is following in Daryl’s footsteps, working with Daryl’s son Jordan, as a Watersport Specialist at the camp, teaching other kids with sight loss how to get up on waterskis and experience the joy of pushing past their own boundaries. His advice to first-timers: “Don’t be discouraged if you don’t get it the first or second or third try. Keep trying. Everyone here will pump you up. I promise them they will get up, even if just for 30 seconds.” “The waterfront at CNIB Lake Joe is a magical place, and it’s going to be a very exciting welcome back to
the camp for our guests,” says Daryl. “I’m looking forward to revitalizing the waterfront so we can continue to make a difference. And we very much appreciate the continued support of the community.”
Come Join the Celebration on August 13! CNIB Lake Joe’s Dock-to-Dock: Taste of Muskoka annual summer fundraiser started in the midst of the pandemic back in 2020, as a way of safely bringing supporters together to celebrate and raise funds for CNIB Lake Joe. It was such a success that it’s now entering its third year, bigger and better than ever. And this year, local restaurants are helping give 2022’s edition a delicious twist, with A Taste of Muskoka! Participants who raise a minimum $1000 pledge will receive a specially curated Dock Box, filled with goodies from some of Muskoka’s finest eateries. And on the big day, there’ll be prizes, entertainment, party pontoons, celebrity sightings, and a whole lot more! CNIB Lake Joe Dock-to-Dock: Taste of Muskoka promises to be the event of the summer, all for a great cause. And you don’t even have to have a dock to join in the fun! To become a dock host, go to cnib.ca/ DockToDock to register and receive your Welcome package. Create a fundraising page, name your dock, and start spreading the word! And on August 13, get ready to have fun and make a real difference for kids living with sight loss. See you on the dock!

M
ost brokerages advise you to put your property into the Multiple Listing Service (MLS) system, in order to get it in front of the greatest number of prospective buyers possible. But when it comes to Muskoka property – especially in the current market – that may not be the best, or even most desirable, route for you. Cayman Marshall has a better way to market your property, which not only ensures that only serious, wellqualified buyers view your property, but allows you to maintain your privacy and avoid the stress and hustle of listing with MLS. With a Cayman Marshall exclusive listing, your property will only be visible to members of our proprietary database. Personal viewing appointments are only scheduled after our agents have taken prospective buyers through a careful pre-screening process.

ith a steadfast dedication to their zero-waste brewing platform (water is reused for both irrigation and fertilizer), and distribution of their spent grains to feed livestock at local farms, Bench Brewing means business when it comes to environmental sustainability and upholding the important title of “stewards of the land.” Bench is also innovative; they released their first coolship beer last December. (Coolship is the Anglicized version of the Dutch/Flemish koelschip). “It’s a lambic style of beer that’s made onsite using our coolship open vat and
estate-grown hops. Lambic beers are fermented through exposure to wild airborne yeasts as opposed to cultivated strains of brewer’s yeasts, a distinct brewing style that originated in Belgium in the 13th century. We love it as it brings terroir to our beer. These airborne yeast strains that ferment our beer are unique to our location and give them a real sense of place. It has a beautiful distinctive flavour that we are really proud of,” says Matt Giffen, Founder and President.
Cosmic Cream Ale: 5% An ale that’s fermented warm and then laid to rest cold for a crisp and balanced result, and winner of Best Cream Ale at the 2019 World Beer Awards.
Whether it’s the ales from Belgium, Vanilla Cinnamon Porter, or lighter lagers brewed with Noble German hops, there’s a little of everything for everyone at Bench.

he “big red barn” at Niagara’s Oast House Brewers is rich in architectural history: it has been a fruit basket manufacturing headquarters in the late 1800s, an original Farmer’s Co-op Bank, and a John Deere tractor dealership. Today it’s home to one of Ontario’s original producers of traditional FarmhouseAles, reminiscent of the Franco-Belgian “olde” style small batch brewing. The barn is home to Oast’s Brew House and Retail & Bottle Shop. Climb upstairs to “The Hayloft,” a cozy and uniquely charming rustic event space complete with panoramic vineyard and brewhouse views. Committed to quality using native Niagara yeasts, local hops, and their own naturally filtered artesian well water, the brewers’ dedication to their craft is evident in their many accolades and five-star 82
