A
s the old saying has it, if March comes in like a lamb, it goes out like a lion – and vice versa.
Here in Port Carling, the first few days of March are looking distinctly lamb-like: a bit of sun, a few flurries, and mild temperatures (especially compared to the last couple of months). Should we believe the predictions, hunker down and prepare for a last roar from the lion come early April? I once had a conversation with a friend from Denmark, who said he was constantly amazed at the way we Canadians complain about winter. “You’re a northern country just like us, you should embrace winter!” he said, and he’s right. And in fact, we Adairs are a family of skiers, snowboarders and tobogganers, and while I’ve said it before, I’ll say it again: One of the best places in the world to enjoy winter is right here in Muskoka. There are great ski hills, lots of groomed snowmobile trails to drink in the scenery, and all kinds of outdoor adventures to enjoy all around the region. That’s one of the blessings that a lot of city folk discovered over the last couple of years, when many of you decided to move up to the cottage to wait out the pandemic. Muskoka is justly renowned as a terrific summer vacay destination, but while some restaurants and other venues do take the winter off, an increasing number are staying open year round. And with pandemic restrictions gradually easing, it’s a great time to come and check us out. You may just see winter in a whole new way.

M
uskoka is home to a wide range of wildlife. Some, like wolves, loons or moose, symbolize everything we love about untamed nature – while mosquitoes, blackflies and mice are another of nature’s forms that we see as a seasonal plague on cottage life. From the loved to the loathed, the management of your trees and the surrounding forest can influence the diversity and abundance of species on your property. Though we may not all have the ability, space or resources to manage our properties for wolves and moose, we can take smaller steps towards promoting desirable species while minimizing the disturbance from others. To accomplish this, we need to examine what makes individual trees good, bad or ugly – and what influence these characteristics have on wildlife.
From the top to the bottom, healthy trees have:

Less than 5% of dead/dying crown material
Branches with well-developed branch-bark ridges where they meet the trunk

A minimum of unhealed trunk damage from lost branches, poor pruning, plow damage, etc.

romoting healthy trees and forests on our properties with a variety of diverse species, ages and classes of trees provides habitats for many different kinds of wildlife, which depend on the availability of resources in the forest for food, shelter and raising offspring. Understanding what makes a tree desirable, both structurally and ecologically, can help property owners support desirable wildlife habitat while minimizing risk to the cottage. Healthy trees are more resilient to pest outbreaks, are able to spend more energy on reproduction (seed, cone, nut production), and pose the least threat to cottages and homes.

n nature, of course, there is really no such thing as a “bad” tree. Even dead or diseased trees play a role in contributing to forest ecological processes. However, on your cottage property, it is important to know how to spot trouble before it’s too late. Working with a professional arborist and forestry service like Muskoka Tree Solutions can provide peace of mind when tackling these property management decisions.
From the top to the bottom, “bad” trees have:
1)
Large amounts of dead canopy material, such as freshly fallen branches at the base, damaged branches, broken tops, or branches extending over utilities or buildings (exceeding 5-10% of canopy material)

Branches or secondary stems with bark inclusions (i.e., no ridge) where they meet the trunk, or bursts of branch production randomly along the trunk
3)
Large open cavities, vertical or horizontal cracking in the trunk, extensive bark loss, discolouration or fruiting bodies from mushrooms
4)
A lack of well-developed root flares, or root flares that have been buried by grade changes or material deposition
5)
Unstable excavated root zones, with visible damage or lifting root systems
Ugly but beneficial wildlife trees may feature:

Broken tops that provide nest building sites for osprey and other birds of prey

eauty is in the eye of the beholder when it comes to what constitutes an “ugly” tree – or a well-kept forest. For some, unusual forms, burls and knobs make for a romantic fairytale scene. For others, beauty lies in balanced, symmetrical trunks, orderly branching patterns and a clean-swept understory. But no matter which forest scene appeals more to you, good management means striking a balance. Remove too much dead or downed wood and you could disturb wildlife habitat; remove too little and it may pose a fire risk, or be unpleasing aesthetically. Though the bad and the ugly may share some features in common, the only real difference has to do with potential threats to buildings or infrastructure. “Ugly” trees actually have some advantages, by providing nesting, roosting and overwintering grounds for a wide range of pest predators.

Irregular branching patterns with tight cruxes, great for building nests out of sight
3)
Open cavities, or pileated woodpecker excavations, that provide habitat for everything from owls and ducks to bats and pine marten
4)
Flaking bark patches that can provide nesting sites for insect-eating birds, like brown creepers, or food storage locations for Canada jays

Loose root mats or upturned root systems that can be excavated for underground dens and burrows for foxes, wolves or bear

Dining out isn’t what it used to be. While in the past we often divided restaurants into the utilitarian and the elite, there’s been an evolution born of food networks, celebrity chefs, and endlessly and readily available global ingredients, and it’s brought diners a nearly infinite array of choices for their eating-out experiences. Additionally, now more than ever, the common home cook fancies him- or herself a gourmand or chef-de-cuisine, demanding that bistros, gastropubs, and eateries the world over elevate their menus and venues to attract an ever-more discerning clientele. Does this result in too many choices? It sure does, but we’re here to help. Combing through a plethora of back alleys, back roads, and baby back ribs, we’ve found some not-to-be-missed, tucked-away Southern Ontario restaurants that will surely have your tastebuds dancing, and your new air fryer dormant. igures Toronto describes itself as “the city’s most imaginative upscale resto-lounge” and, to be honest, the proprietors may be underselling the singularity of one of Yorkville’s can’t-miss hotspots. Since bursting onto the bustling Toronto restaurant scene in 2017, Figures has set itself apart from its peers not just in the unique conceit of the space, but the elevated, elegant, and avante-garde menu. Restaurateurs often use the term “experience” to describe their dining, but Figures doesn’t just earn that description; it redefines it. To enter the Avenue Road location is to immerse oneself in a living dream of revelry and reverie. The menu and decor are a pop-culture menage of the zeitgeist, outfitted in Marvel and DC comic heroes, Star Wars characters, and other pop iconography – not in a way that is intrusive, but rather to evoke the comfort of one’s personal nostalgia. It is impossible not to be teleported to another time, or world. Designed by Toronto-based firm Prototype Design Lab, Figures features a DJ booth, lounge, and collectible shop. The venue is truly unique, in an era where “unique” has often lost its lustre. The menu, built by a collaborative and equitable kitchen team model echoing the eclectic and democratic decor, is as playfully sui generis as the rest of the experience at Figures. The menu, refined as it is grounded in the restaurant’s creative framework, features dishes like A&W fried chicken bites, black truffle gnocchi, and slowcooked oxtail, among others. The cocktail list boasts the Web-Slinging Spider Hombre, Johnny Blaze, and the Empire Did Nothing Wrong (an argument to rival Han shot first), as delectable as they are imaginative. here are institutions and then there’s Rogues Restaurant. Opened in 1983 by Tony Pereira, Rogues has been serving Mississauga the finest in elevated dining for longer than much of its clientele has been alive. Pereira’s story is a restaurant industry fairytale: his rise from bussing tables at the fabled Windsor Arms Hotel in Toronto to owning one of Southern Ontario’s most celebrated restaurants is truly every restaurant worker’s dream come true. But Rogues Restaurant refuses to rest on its laurels, and for nearly four decades has been offering evolved, inspired, and tasty dishes. Under the watchful eye of executive chef Bevan Terry – who has been with Rogues since 1989 and purchased the restaurant from Pereira just over four years ago and oversaw a subsequent renovation – the Northern Italy and Mediterranean-inspired menu has been the talk of Mississauga even as the Toronto suburb has grown into an internationally recognized culinary landmark in and of itself. I
t’s seemingly a contradiction for a restaurant to be simultaneously a local institution and a hidden gem, but Stoney's Bread Company isn’t just any restaurant. An Oakville landmark since 2004, Stoney’s borrows its name from Toronto Argonauts legend Norm Stoneburgh (whose son Blake is a coowner with good friend Steve Chabot). Stoney’s has been serving discerning Southern Ontario diners “familiar classics that you love served with a modern twist” with unprecedented fanfare and celebration, not to mention celebrity. Prime Minister Justin Trudeau stopped by to make pizza while on the campaign trail in 2015, and the restaurant was featured in an episode of The Food Network’s “You Gotta Eat Here.” It’s also perennially named one of Oakville’s Top 10 Restaurants.

tepping foot into Shy’s Place in Dundas is like walking into a memory. To say the decor is steeped in nostalgia is an understatement. The late-1800s heritage home is outfitted in reverie, complete with a main floor of hockey memorabilia that would make the Hall of Fame jealous; a Kennedy Room of Life magazine covers; the Bird’s Nest, filled with the Toronto Blue Jays; a Windsor Room of Royals; and Shy’s Room, a tribute to co-owner Rod Millard’s father Shy, for whom the establishment is named. Few entities define their cities like hotels. They are cultural and architectural landmarks through which we can trace our histories and mythology. The Chateau Laurier in Ottawa, host to kings, queens, and Karsh. The Queen Elizabeth Hotel in Montreal, in the centre of the city’s golden mile, where John and Yoko staged their 1969 bed-in. The Hotel Chelsea in Manhattan, venue for literary giants like Sam Shepard, Jack Kerouac, Mark Twain, and Tennessee Williams to craft their legacies. The Savoy in London, boasting stays by Oscar Wilde, Judy Garland, Marilyn Monroe, and the Beatles. These
hallowed estates towered (often literally) over their cities, locations where their biographies were written, cultures refined, politics argued, and cityscapes defined. The hotel’s design is nature-based, inspired by Toronto’s unique four-season reality and lakeside setting. The planners worked in collaboration with International Landscaping in building the most eco-friendly and geographically attuned hotel the city has ever seen. Sharon Carlson, International Landscaping development designer, celebrates a unique feature in using “local granite from the Canadian Shield. And then also just incorporating that with some native plants, mindful of the urban context.” Over 3000 plants cultivated by International Landscaping can be found throughout 1 Hotel Toronto’s interior and exterior.
The establishment has committed itself to innumerable sustainability initiatives, such as zero waste through on-site composting, recycling all paper, plastic, glass, and hazardous waste, converting 100% of kitchen oil and grease into biofuel, and energy-efficient heating and cooling systems. Both 1 Hotel Toronto and International Landscaping “worked with local vendors and artists” in maintaining their mission, notes Carlson, including local woodworking studio Just Be Woodsy, who repurposed fallen Toronto trees into unique hand-crafted furnishings such as dining tables, grazing boards, host desks and side tables.

The attention to community and ecological concerns at 1 Hotel Toronto is seemingly endless. Using existing structures and infrastructure left over from the location’s Thompson Hotel days was key to maintaining the integrity of the project’s mandate. “There was an existing structure that was underutilized at the pavilion by a reflecting pond,” says Carlson. “We transformed that into a functional garden for the restaurant that uses different herbs, some fruit, flowering plants, and actually grows for the venue. Just having that opportunity to have that tactile experience for some of the chefs, to come out and have that harvest and grow some of the items onsite, is a unique experience.” The garden pavilion, which also boasts a “bee hotel” to increase pollination from local bees (plus a honey farm designed by Montreal apiarists Alvéole), supplies all on-property restaurants with herbs, fruits, lettuces, edible flowers, peppers, onions, and beans; and aspires to a larger contribution to the fare that makes its way to guests’ plates, in-room or at one of their dining options: 1 Kitchen Toronto, Flora Lounge, Casa Madera and Harriet’s Toronto. Each kitchen’s team is well-versed in eco-practices and maintains intimate relationships with local farmers to ensure farm-to-table offerings at their best while supporting their community.

Growing up in Waterloo, Cat was fortunate enough to spend all of her summers at her family cottage on Lake of Bays. Cayman Marshall sought after Cat for her enthusiastic, positive attitude and Cat is now thrilled to be building a career in Sales with the Cayman Marshall Team.
Kareina spent summers of her childhood at cottages in the Mactier and Nobel Area. She lived in Alberta for a couple years and loved the mountain views but really missed the lakes and maple trees and could not wait to get back to the peace that is Muskoka. She has been an educator for several years and has worked in customer service. Kareina is excited to be a part of the Cayman Marshall team.
Steve is a strong relationship builder, honest and dedicated to Customer Service. This combined with his intimate knowledge of Muskoka lakes and area has made him a consistent top producer. Steve is an avid cyclist and golfer and maintains residences in Toronto and Muskoka and ties to both communities. His mantra and favourite quote is to “get up, dress up, show up, and never give up”.
