Colombian Lomo al Trapo Lomo al Trapo is more than a meal; it’s an experience – an awe-inspiring process that brings people together around the grill. That’s exactly what makes this meal one of Chef Rene’s favourites.
“The sense of wonder people have when they see how it’s made is only matched by the quality of the flavours created,” he explains.
Directly translated, Lomo al Trapo is “beef tenderloin in a towel,” and it is exactly that. To make this traditional Colombian dish, a beef tenderloin is encrusted in salt, swaddled in a towel, tied and placed directly on the fire. The preparation of this meal harkens back to a more primal way of cooking: no pots or pans needed – just a good bed of coals and a hefty cut of quality meat.

METHOD
• Tenderloin roast, trimmed of sinews and excess hard fat (can be a centre cut, full piece or large end)
Before you begin preparing the meat, it is important to start a very good fire using wood or charcoal (briquettes will not work). You want a good foundation of hot coals. By cooking the tenderloin directly on a bed of coals, you’ll be able to draw out the most incredible aromas, flavours and textures that other cooking methods would never be able to achieve.
• Olive oil • Kosher salt (important due to grain size and texture) • Fresh rosemary, thyme and oregano • 100% cotton butcher twine • 100% cotton cloth (must be large enough to wrap around entire tenderloin, can use two if using large tenderloin)
Once you have a good fire prepared, place the cloth over a cutting board and pour a generous layer of salt over it. You want the salt to be about ¼” thick, keeping it an inch away from the edges. Spread the herbs over the lower portion of the cloth, closest to you. You’ll roll this edge first. Place the tenderloin over the herbs and roll the cloth and tenderloin away from you, tightly tucking the loose edges in as you roll. Keep the bundle as tight as possible. Cut a length of butcher twine long enough to wrap around the tenderloin. Tie it around the end closest to you first – the ideal technique is the basic butcher knot, but a slip knot will also work. Continue to tie rings around the bundle two inches apart until everything is tightly bound. Place the roll directly on the coals of the fire and let it cook for 10 minutes on each side for a perfect rare. The purpose of the cloth is to hold the salt in place until it forms a crust. Don’t worry as the cloth begins to burn away, as the salt will protect the meat. After 20 minutes, use tongs to take the bundle off the coals and place it in a metal container to rest for 7 to 10 minutes. Using scissors or a knife, cut the cloth open. Remove the cloth and salt from the meat. Slice the tenderloin into rounds. Because Lomo al Trapo cooks on direct heat, the result is a wonderful gradient from deep red in the centre to more well done at the edges. If you’d like it less rare, you can place the slices on a hot grill for a few seconds per side. TO SEASON OR NOT TO SEASON? This cooking method is so rewarding, you’ll find that even unseasoned meat is superb on its own. However, if you’re looking to enhance the flavour, try rubbing rosemary, thyme, garlic, quality butter or olive oil into the tenderloin before wrapping it in cloth. Lomo al Trapo pairs perfectly with a gremolata or chimichurri sauce.

AT HOME ON THE BEACH For a builder who specializes in creating Muskoka cottages that are precisely tailored to their homeowner clients, and the land those homes occupy, we thought it would be interesting to see what kind of home SML Contracting founder Bruce Fitter might build for himself. And we weren’t disappointed.
“Muskoka Contemporary”
his isn’t the first Muskoka home Fitter and his company have built for his family in the area, but he plans to stay in this one for many years. So he filled it with the kind of details that will see himself, wife Lois, their four adult children, and a growing passel of grandkids through the foreseeable future. Previously, Bruce and Lois lived in another SML-built home on nearby Fairy Lake. But with grandchild number twelve due in January, they realized it might not be suitable for young children, with a sloped site that led down to a rocky shoreline and dock. They began looking for a more level site, preferably with a beach that the little ones could splash around in safely, and found this lovely, sprawling plot on Penn Lake. Penn, along with Fairy Lake, is one of a cluster of smaller lakes that connect

by water to Huntsville. “The beauty of these lakes is you can boat right into Huntsville for groceries or shopping,” explains SML project manager Jay Brubacher, who worked with Fitter and the team on the new house. “The docks there are really well-designed for boat landing.” The lay of the land was perfect for a bungalow, which not only allowed for wide-open views over the water, but for accommodating three generations each with their own needs. For youngsters, mum and dad (and grandparents) were always within sight and hearing (while allowing for some independence on both sides of that equation, as we shall see), and generous guest and kids’ rooms gave everyone their own space. And for Bruce and Lois, the design featured their own private sanctuary at the far end of the house, along with the ability to accommodate changing needs as they get older.

OF THESE LAKES IS
ruce calls the home’s aesthetic “Muskoka Contemporary,� with 21stcentury luxuries and style, but a distinct Muskoka accent. This is evident from the minute you pull up at the big turnaround on the forested side of the house. The entrance, sheltered under a timberframe portico, is centred at the apex of two arms comprising a gracious, carriage-house-like garage on one arm and the house proper on the other. The roof is clad in Enviroshake shingles, made of a blend of recycled plastics and wood fibre designed to closely resemble natural cedar shakes, but that unlike the real thing, lasts a lifetime. (Genuine cedar shakes clad vertical surfaces; according to Jay, cedar shakes made today are better suited to walls, since they are slightly less exposed to the elements, and can be stained.)
o Muskoka country house would be complete without plenty of local granite, and the house has two imposing chimneys clad in cut-granite facing stone, hand-selected by Bruce himself. Granite is also used for the patio flagstones (which continue into the house in the foyer and the Muskoka room on the lake side, blurring the transition from indoors to out). It also lines a wall in the front hallway, from which short corridors lead to the laundry and media room, then straight ahead into the main living areas, where big windows bring the view into full focus.

ost great rooms designed in the last fifty years or so feature big lakeside windows and soaring atrium-like ceilings; grand as they are, one can sometimes feel a little lost in all that open space. Here, partly owing to the one-storey design, the vault is more modest, giving the room a relaxed intimacy. Windows overlooking the view are a humane nine feet or so in height, next to a cut-granite-faced fireplace that features a raw-steel mantel, a crisp touch among all the natural textures. Overhead, weathered barn beams line the vaulted ceiling, a marked contrast to the polished Douglas fir timbers that define the structure elsewhere. The beams, according to Bruce, were a lucky find. “While we were building the house, we saw that an old barn in the area, built in 1871, was being pulled down,” he says. Seizing the opportunity, they trucked the old beams over to the site and gave them new life. Every Muskoka cottage worth its timbers has a Muskoka room, and the
Fitters’ is an elegant variation on the theme. Set on the lakeside corner behind the dining and kitchen area, it features knee-to-ceiling windows on three sides, intersected by another big granite-faced fireplace, this one woodburning and with a mantel made from another of the old barn beams. On warm days, the windows retract downwards into the foundation at a push of a button, transforming it into a true screen porch. Along with plenty of room for each of the Fitters, there’s a special room for grandkids to sleep and play, with multiple built-in bunkbeds, a cubby for playing in, and plenty of storage. There’s enough guest space that, according to Jay, all three generations of the family could visit at once. When the whole clan is up, it can get boisterous – that’s one reason why the media room is over by the front hallway, where kids can shout over video games while the grownups relax in the great room, undisturbed. The Fitters’ suite is cloistered in its own peacefully private wing on the other side, overlooking a view of rocks and water.

Stuart set about finding out who owned the hulk, and was told, “If you can get it out of the mud, it’s yours.” Thus began a two-decade labour of love, painstakingly restoring the old girl. Today, having appropriately rechristened her Born Again, Stuart takes pride in taking the family and the boat’s many admirers for rides around the lake.
Here, a Muskoka history buff’s eye immediately lands on a treasure: a gleaming, fully restored circa-1939 Ditchburn launch. The classic wood boat belongs to Bruce’s father-in-law, Stuart Silvester, and has quite a story.
Today, Bruce and Lois spend their days relaxing in the great room, and looking out across the lawn to the lake and the woods beyond. They’ve had offers to sell – some surprisingly generous – but they have no intention of moving on any time soon.
“Back in the sixties, it was crashed and half-buried for years in the mud on the Muskoka River,” recalls Bruce. (In those days, he says, people thought nothing of abandoning rusting cars or old washing machines in fields; this was kind of a

Osman Gurer is infatuated with wine, but not in an oenophile sense. He has an obsessive devotion to the preservation of wine.

From yachts, restaurants and houses, he creates custom wine cellars and wine cabinets through his company Focus Wine Cellars (FWC). Think state of the art, high-end and stunning spaces with individually cast silver hand sculptures, buttery leather handles, mesmerizing infinity-effect features and supreme production quality.

Today, FWC counts the luxury fashion house Louis Vuitton as a client: Gurer’s purpose-built refrigerated cabinets are used to store the label’s perfumes, since fancy fragrances, like wine, need to be kept in a controlled environment. “With each project, I’m trying to amaze people,” says the Turkish-born Gurer, who left a career as an engineer to design bespoke wine cellars. His Oakville, Ont.,-based business is a great distance from Istanbul, where it all began in 1993. Back then, he and his wife, Aylin, ran an interior design firm. The duo was asked to create a wine cellar in a home they were building. Then came another request. And another. Ever the engineer, Osman grew fascinated by the exacting nature of wine cellars, eventually abandoning house design to become the only maker of wine cellars in Turkey. However, he says, “From the very beginning the target was not just to be the only wine cellar designer in Turkey, but rather to be the best in the world.” 28 FALL 2020 ■

Printemps, the Parisian department store, only trusts its finest wines to FWC . And there’s a long list of hotel clients, too: among them, the Mandarin Oriental, Hilton and the Waldorf Astoria. For the latter, FWC installed a cellar in its Ithaafushi Hotel, the exclusive, yet-to-be-opened villas in the Maldives. Private wine collectors in China, Dubai, UK and India also rely on FWC cellars to cradle their finest bottles. One such dramatic estate in Hong Kong is featured as the cover of Paolo Basso’s 2015 book Sommeliers’ Heaven: The Greatest Wine Cellars of the World.

Another cellar sits inside a dwelling atop a hill in Uzbekistan. “Osman travels 250,000 km each year to oversee everything,” says Aylin of her perfectionist husband, joking she’s “his shadow supporter.” (She’s actually head of business development.) Osman’s stickler nature is a good fit in the wine world. Stowing bottles in the wrong conditions can spoil a precious collection – a devastating outcome for connoisseurs who wait years, decades even, to sample certain vintages. “The temperature must be very stable,” says Osman, noting his cellars never fluctuate more than 0.3 degrees centigrade. “Other key conditions include a high but not extreme level of humidity, protection from vibration and unwanted odours and the harmful effects of light.”
Wine-nerd details aside, it’s the look of these cabinets that truly amazes. Forget any basic, under-counter wine fridge you’ve seen in the past. Imagine a brass cabinet in the kitchen to match gold hardware. Or a genuine leather-finished fridge. Or another fronted with zebrawood, like the one recently installed in a beautiful home in Lake Simcoe’s Friday Harbour Resort, with brass finishes and an infinity-effect feature. “Walnut and brass are most popular this year,” says Aylin. “At the Interior Design Show in Toronto, we had samples of finishes and everybody gravitated to those.” If you can afford a hot fridge like this, get it out of the kitchen. sees a cabinet elegantly tucked between bookcases in a living room. Bespoke also means no boring handles – the door pulls, too, can be customized. Go with oak and leather for a dapper detail, or flashy with an illuminated neon handle. “As far as we know, there is no company in the world that offers this level of bespoke cabinets,” says Aylin. “Customers can change the size or material to their liking. It’s truly up to them.” (Pricing wildly varies, depending on the size, material and complexity of the job.) This means mansion-living isn’t a prerequisite for a solid cellar. “It can be in the basement, the living room or kitchen,” says Osman. “No matter what your square footage, collection size or location of the cellar, we’ll develop a unique design for it.” Osman is up for the challenge. He recalls a complex project in Istanbul. The wine-loving businessman was intent on a walk-in cellar, but there was no room for it in the existing home. “So to create the space for the wine cellar, we got into this enormous endeavour of digging under the swimming pool, which was sitting on a high rampart next to the mansion,” says Osman , noting professional miners were hired for the job.
Whether you go over-the-top or small and modest, an FWC wine cellar has attitude. During the process, the swimming pool had to be kept intact. And space was limited, which meant a tedious process of digging out the cellar by hand, then carrying out the earth in small sacks. Excavation alone took five months. The total duration of the project was seven months, including wine cellar installation. “At the final stage we connected the mansion and cellar with a nice passage,” says Osman . Whether you go over-the-top or small and modest, an FWC wine cellar has attitude. “It is not merely functional,” says Osman, likening it to artwork. “It can exude prestige, style and luxury.” Now that’s a refreshing thought we can all raise a glass to.

MUSKOKA HISTORY SLY FOX GOLF CLUB The first thing that greets you when your boat lands at the dock at Sly Fox Golf Club, at the southern entrance to the narrows separating the two bodies of Wahwashkesh Lake, is a plaque mounted on MacRae Rock, a sizable chunk of glacier-polished granite located on the shoreline. The plaque tells the story of two boys who lived, played and worked there more than 80 years ago. Their young lives ended tragically in August 1944, at the height of the fighting during World War II, when the two brothers died in action just one day apart. The younger brother, George Dougald MacRae, had joined the Royal Canadian Air Force, graduating as a pilot with the rank of flying officer. His older brother, Jamie Duncan MacRae, was a lance corporal in the Hamilton-based Argyle and Sutherland Highlanders infantry regiment. The Argyles landed in Normandy just in time to join an
Allied pincer movement, the “Falaise Gap” operation, mounted in mid-August 1944, which was designed to entrap a retreating German army. But in the heat of battle, Jamie MacRae was killed by enemy artillery fire – less than 24 hours after his brother went down in flames over Warsaw, a thousand miles away. Their home, the main lodge of the sportsmen’s resort, has stayed remarkably unchanged since the late 1930s and early 1940s, when as teenagers the two MacRae brothers guided the resort’s clientele to the best hunting in the nearby woods, and fishing in Wahwashkesh Lake, the largest freshwater lake in the Parry Sound district. While the resort still caters to hunting and fishing, the current owner, Herb Schmidt, has built a unique nine-hole executive golf course called the Sly Fox Golf Club. Sly Fox is the third golf course Schmidt has designed and built, and took more than six years to complete. It features two
miles of underground irrigation, capable of pumping 100 gallons per minute to service the sprinkler systems. The property, first developed in 1903, now consists of the 4,000-sq.ft. main lodge with a large wraparound porch, nine individual cottages, eight finger docks, and roughly 2,400 feet of water frontage, encompassing nearly 40 acres on a peninsula, surrounded by Crown land and water. As the plaque says, “This memorial is located at the site of the MacRae Family Hunting and Fishing Lodge, known as ‘The Linger Long Lodge.’” The brothers made the ultimate sacrifice for peace and freedom. And today, we honour their memory. The plaque concludes: “This memorial is placed here by those for whom this lake is a very special place and who enjoy Lake Wahwashkesh Lake ‘in peace and freedom.’”

Todd became the President of Cayman Marshall International Realty in 2012. He then became the majority shareholder and recently purchased the entire company. In Todd’s downtime, you will find him buying, building or renovating his own real estate projects, on the water wakeboarding and kite surfing, or hacking up the fairways of a local golf course. However, Todd’s most important job is being a husband and father to his family of four.
Ray has been enjoying Muskoka for the past 40+ years and is happy to call it home with his wife Johanna and their two boys. His passion for Muskoka is equally shared with everything real estate and his “this is what I do because I love it” approach.
With 25 years’ experience in sales and marketing, joining the Cayman Marshall team was a great fit for Michael. His “customer first” dedication to his clients has always resulted in successful long-term relationships.
