LANDCARE CREATES AN OUTDOOR OASIS IN YOUR BACKYARD

or 25 years, Rob Crysdale of Landcare, has been creating outdoor dreams in the Toronto area. His award-winning team of horticulturists, landscape designers, stone masons and carpenters, design and build relaxing out-door oasis’ and stunning front yard curb appeal. Usual questions about accreditation and physical training for the job seem beside the point here, though Crysdale confirms there was a substantial amount of both. Landcare for him is mainly about what his clients take from the experience, not what goes into it. Did it meet their expectations? Were they consulted and listened to? Did it surprise them on some level, in a positive way? Did it come in on time and within budget? Was the process as seamless as it could be? Were any unexpected outcomes reconciled? These are the things that matter to him. S C A L E A N D P RO P O RT I O N A recently completed project in Toronto highlights a remarkable before and after transformation that captured a completed design vision, using a variety of styles and materials. In the front, Crysdale’s team created a soft canvass of variegated grasses with pops of lavender and Russian sage juxtaposed beside the cool grey of China granite steps. To counter the severity of the steeply sloped driveway, he installed another set of steps offering an easy and instant welcome to the front of the house. The ethereal feeling of the Russian sage and the cascading ivy work to soften the hard edges of the stonework and offer a surprising colour contrast to the shiplapped Spanish cedar cladding on the home’s facade.

TA K I N G I T O U T S I D E Recent studies have shown that people tend to be healthier and happier when they have access to nature. Blending indoor and outdoor living space has never been more current. The proliferation and choice of outdoor furniture and decor have grown with each new season. Houzz, an online resource for design and renovations, conducted a landscaping study that showed 56% of the those asked were updating their yards to make them more entertaining friendly. Homeowners are adding patios, bigger barbecues and fire pits. Houzz discovered that in 2013, 80% of households owned an outdoor grill or smoker and almost one-third of those people were purchasing newer and more elaborate barbecues. Outdoor space has become so much more than a backyard. It is another living area complete with mood lighting, upholstered furniture and sound systems. This comes as no surprise to the team at Landcare.

The lines between indoor and outdoor living have become increasingly blurred. Homeowners want their backyards, regardless of size, to reflect this new lifestyle, with minimum time spent on upkeep. Crysdale incorporates plantings and design features that enhance outdoor living and limit maintenance. His team ensures that a client’s outdoor space blends seamlessly and complements their indoor style and tastes. A quick tour of this family’s backyard and you are struck immediately by how on point his designs are. The homeowners agree, “Rob’s team took all of our input and created a calm and elegant backyard oasis with subtly and precision. It mimics our modern aesthetic inside the house.” With a nod to the kitchen, Eames chairs visible through the huge feature windows, the homeowners incorporated the same shape with a pop of red on the outdoor chairs bookending the dining table; which is a modern riff on a traditional picnic table. Integrating style and function, Crysdale built their gas barbecue into a corner niche just outside the patio door, incorporating a tiled workspace for prep and cooking.


Lighting is integral to a complete design. In the city, it is particularly vital to have a lighting design that meets the need for security and safety. The goal is to create a soft radiance and gentle luminosity, without turning the backyard into an amusement park at night. Strategically placed lighting takes its cue from the home’s architecture. Ground lighting softly highlights the dramatic textures of a mature maple tree, a tenacious reminder this is where history and future come together. Two stone gargoyles keep a silent guard amongst the feathery asparagus ferns at ground level and just beyond is a flat grassy area for play. Providing even more atmosphere and a gentle, soothing rhythm of sound, is a custom designed copper water feature bordering a trellis of climbing ivy.

The Sexy French Style of Lori Morris By Martha Uniacke Breen

People are often surprised when they see Toronto designer Lori Morris’ sumptuous, elegant interiors, to discover how down-to-earth she is in person. “I’m still a Dundas girl at heart,” she laughs, referring to the small Ontario town where she grew up. “I love elegant fashion, but to look at, not necessarily to wear. I’m much more comfortable in ripped jeans.” We visited Morris recently at her Toronto atelier, housed within two conjoined Victorian semis in the Annex neighbourhood, to chat about her highly identifiable design style which she loosely defines as “Sexy French.” “Sexy French is a fusion, or balance, between classic modernism and French. But there’s no particular style or look we concentrate on, though we do have our own style and originality as creators. It’s not really about colour or style; it’s about a feeling, how you want your home to feel.”

Since LMD’s founding in the late 1980s, the atelier has been enlarged and renovated several times as she has expanded; about twelve years ago, Morris bought the semi next door and united the two halves. Currently, the company employs a total of 30 people, including ten in-house designers who execute her ideas and works all over the world, employing local trades that enable the firm to offer the same experience to international clients as they can offer at home in Toronto. But she emphasizes that her hand touches everything the firm produces – from selecting fabrics, finishes and lighting to the final flourishes. (This year, the atelier is growing again, with a rear addition that will make room for more staff and showroom space.) Morris learned the fundamentals of proportion and space planning at design school in Toronto, but from childhood, she says, she always had a vision that was uniquely her own. “You can’t really teach anyone style; it gets curated over time, but style is something you inherently have.” She credits her mom and constant companion Eva, who from the beginning has been her muse and constant support, as giving her the confidence and grounding that has guided her success.

Whether the goal is classic contemporary or traditional luxe, one thing that all of her interiors have in common is their breadth of detail. Often, classical references such as Greek key motifs or elaborate architectural mouldings combine with varying tones within a colour family, such as pinks or greys and soft, sumptuous fabrics. Probably the best thing to come out of her academic experience, she says, was meeting LMD master designer and the firm’s creative director, Julie Ballard, who has been there since she first went on her own and has played a fundamental role in the firm’s success. “She’s the master space planner, creating hand-drawn perspectives that help our clients to visualize the finished space,” says Lori, adding that Julie’s sheer drawing talent is a marvel. “Then the team goes about turning it into reality.”


“Design will always be in my heart –that’s what inspires and excites me.” “People always ask me what my inspiration is, and it’s difficult to answer,” she confides. “I’m inspired every day by architecture, graphic design, beautifully presented food, interesting people. I love rich fabrics and ornate designs. I love music – just about every kind, from classic rock and soul to modern country. I have a very artistic mind, and as an artist, you are constantly inspired every day of your life.” Her favourite clients are the ones who know enough to trust her and “just let me go,” she says. “I don’t mean just go away and let me present a finished product without any input. I mean, once you’ve given me your preferences, tastes, desires and inspirations, to just have faith and let me go. Because we have such a wide palette, we can give you exactly what you want.” Though the firm may be best known for its sumptuous and rich interiors, she points out, doesn’t mean you are locked into that look. “Just because you might have seen a frilly pink bath that I did and you want a clean Zen modern look, doesn’t mean you have to compromise.” Her often-restless imagination is leading the firm in two exciting new directions this year. One is LMD’s first branch office and showroom, in the Muskoka town of Port Carling, offering a more casual, country approach to her signature style. “I’ve been designing cottages for years and I thought it would be great to present to clients in that setting. It will show the full breadth of colour choices and designs, but in a softer, more woods-inspired way.” At the same time, she and her team are putting the finishing touches on an exclusive limited-edition branded product line, to be marketed initially through the company website, with the possibility of future expansion and perhaps, even a flagship store. But, like the artist she is, she is constantly looking forward to new ideas and new ways to express her art. “I want to be able to share our style globally, so that many people will have a part of LMD. But design will always be in my heart – that’s what inspires and excites me.” SUMMER 2017 35 ■

MILESTONE Executive Chef John Horne on Auberge du Pommier’s 30th Anniversary

By Leslie C. Smith Peter Oliver created Auberge du Pommier (“Inn of the Apple Tree”) in 1987 because he believed he could serve a better lunch than what was currently available in Toronto. Turns out he was right. Thirty years, and countless lunches and dinners later, he’s still right. Oliver – South African by birth, Canadian by choice – had already had successful careers in stockbroking and commercial real estate, but developing restaurants proved his true métier. He went on to form a partnership in 1993 with WelshCanadian chef Michael Bonacini, when the pair debuted downtown’s iconic Jump Restaurant, then proceeded on to Canoe, Biff’s Bistro, Luma, and over a half-dozen other upscale eateries. Today, Oliver & Bonacini is one of Canada’s leading finedining firms, operating 18 unique venues. John Horne was just nine years’ old when Auberge du Pommier opened. The future Chef had no idea then what his adult life would look like or how it was destined to intertwine so closely with that of the

restaurant. He just knew that he enjoyed spending afternoons in the family kitchen in Midland, Ontario, helping his mother and grandmother cook and bake from scratch, using fresh ingredients from his grandmother’s sizable garden. At age 13, desperate to buy a ten-speed bike, he got a part-time job washing dishes in a restaurant north of town. The chef there was also a good scratch cook, and John learned a lot watching him. That’s when he and his best friend, Greg Arthur, started talking about becoming line-chefs one day. Fast forward to John at age 23. A graduate of the Niagara College Culinary Management program, he had moved to London, England, to train under the auspices of Chef Ian Wood at the Almeida Restaurant. Late one night, the phone in his flat rang. It was Michael Bonacini, calling to offer John’s flatmate, fellow Torontonian and chef, Jason Bangerter, the job of Head Chef at Auberge. Jason wasn’t at home, so Michael and John ended up having a long conversation. It was the first time John had heard of the restaurant, but it certainly wouldn’t be the last. This serendipitous contact helped smooth the way one year

later, when Bangerter called to offer John a job on the line. From there, John moved up to Junior and then Senior Sous-Chef positions, over a seven-year period. Like most who’ve been to Auberge, John said he “fell in love at first sight” with the place and its worlds-apart ambiance. “Being a country boy, I loved the European cottage feel of the fireplaces, the stonework and the big wooden beams.” Then, too, the people he’s worked with – chefs, sommeliers, general managers, dishwashers, wait staff – were and are, in his words, “amazing, just like family.” Much of Auberge’s Old World charm, the antithesis of many hoity-toity Toronto dining establishments, is due to Peter Oliver’s influence. It was he, after all, who originally moved two 1860s woodcutters’ cottages from Hogg’s Hollow to their present location at 4150 Yonge Street, York Mills, adjoining them to a Long Room and surrounding the whole with a terrace and trellised garden. As well, to this day, he personally conducts every employee orientation, ensuring that the service from kitchen to table is impeccable. SUMMER 2017 51 ■


Much of Auberge’s

Old World charm, the antithesis of many hoity-toity Toronto dining establishments, is due to Peter

Oliver’s influence. Michael Bonacini continues to be involved with the culinary programs at all Oliver & Bonacini restaurants, as well as overseeing the design and construction of the firm’s new projects. His prowess as a chef is renowned throughout the country, a fact he has parlayed into a successful secondary career as a TV star, most notably as the soft-spoken personality on CTV’s MasterChef Canada. As for John Horne’s own career trajectory, he decided in the late 2000s to leave Canada for a season to broaden his knowledge of French cuisine, working at the restaurant in Crillon le Brave, a luxury hotel in Provence, France. “I was cooking French food and I wanted to really understand it, ”he says. “Why they use certain ingredients, how it varies from region to region. Then I came straight back, full of piss and vinegar, inspired by the passion the French have for their food.” He’s put that same passion and love for 52 SUMMER 2017 ■

local ingredients, into his work back home. In 2010, John became Chef de Cuisine at Canoe. Two years ago, he was appointed District Executive Chef of both Canoe and Auberge, working at the latter alongside Chef de Cuisine, Malcolm Campbell.

Canadian components but remains, au fond, unabashedly French. It is also a very romantic setting, a fact attested to by the sheer number of proposals, weddings and anniversaries it has hosted over the past 30 years.

John Horne has become a star in his own right, winning awards and accolades, a champion for the idea of Canadian cuisine. Most of us believe our country doesn’t have its own style, but he points out that we are a land of immigrants, of people who adapted their native recipes to locally farmed and foraged ingredients. Our huge land-mass and diverse immigration patterns mean that there are many fascinating Canadian variants across the nation but no one typical Canadian dish, just as there is no one typical Canadian.

You can include John Horne in that number. He met his wife, Bonnie Woo, there. He proposed to her there, going down on one knee in the deserted dining room on a Sunday afternoon. They even married there, on the patio one beautiful May day – making it a true romance trifecta. (Their two children – Kaitlyn, 4, and Mason, 11 months – were, however, conceived elsewhere.)

Looking back at Auberge’s past three decades and the arc of his own life, John says: “I kind of grew up in there. It’s such a huge part of my life.” At only 39, the best part of his career still lies ahead, which means that Toronto fans of fine dining have yet another reason to celebrate.

Upon sale, gift or the death of the owner, tax will generally be owed on the difference between the fair market value and the adjusted cost base (ACB). The difference in those values can be substantial if the property has appreciated during ownership. That is when clouds can darken what has until now been a source of joy and happiness. In some cases, it may be necessary to sell the beloved family cottage in order to pay a hefty tax bill. It’s never too early to begin exploring tax planning strategies to help minimize the capital gains tax or defer the payment for as long as possible. You may want to consider these strategies: PRINCIPAL RESIDENCE EXEMPTION The principal residence exemption, if available, can shelter the gain on a principal residence from capital gains tax. A principal residence can include a vacation property, even if it’s not where you primarily live during the year, as long as you “ordinarily inhabit” it at some point during the year. A cottage is considered to be ordinarily inhabited by someone, even if that person lives in that property for only a short period of time during the year (e.g., during the summer months), as long as the main reason for owning the property is not for the purpose of earning income.

Oh Canada, how we cherish the relaxation of the summer cottage—but are there storm clouds on the horizon?

LIFE INSURANCE Although numerous planning ideas are available to reduce, defer or offset the tax liability that may arise on the cottage, one of the most common is the use of life insurance. You can purchase a life insurance policy to offset the tax liability upon death. Owners, however, often overestimate the amount and the cost of such insurance, so it’s important to speak with an expert about this option. USE OF A TRUST One way to own a vacation property is through a trust. People sometimes choose this method to avoid the deemed disposition of the property upon their death. A trust is not a legal entity. It is a relationship that separates the legal ownership of property from the beneficial use and enjoyment of that property. JOINT OWNERSHIP One common technique to avoid probate is to register title of the property in joint tenancy with right of survivorship (JTWROS), whereby each joint owner has an undivided interest in the entire property. This type of joint ownership means that upon the death of one owner, the property is owned solely by the surviving joint owner. This way, the joint owner may be able to bypass the estate so the property is not subject to probate.

FORM, FUNCTION AND NOW, DRAMA. In the rarefied realm of high-end European kitchens, Eggersmann can claim several exclusives. One of them reposes proudly in the windowed front of the Toronto showroom: a kitchen island clad in natural stone. It’s not merely topped with the grey honed finished stone, but faced with the uncommon material on all drawers, sides, back as well as top. The resulting unity of colours and materials gives a striking, sculptural—even monumental— appearance to the island. Eggersmann is the only manufacturer with the technology to do it. “No other company has this capability,” said Anthony Binns, co-owner of the Toronto showroom on Yonge just south of St. Clair, during a recent interview. “Furniture has a continuous look and this should be represented in the kitchen as well. Our kitchens are moving in that direction, where with the same stone facing on the cabinet we create a monolithic block with a furniture feel. The fact that it’s all stone, in a kitchen, is so unusual that it grabs a lot of attention from passersby.” The island is Eggersmann’s Unique in Silver Moon, a natural quartzite that’s harder than granite and more scratchresistant than marble, limestone, onyx or slate. Eggersmann’s supplier quarries the Silver Moon in Brazil. In sheets half as thick as and lighter in weight than the standard 3/4-inch or one-inch thick countertop thickness, making them suitable for cabinetry doors. Thinner materials means less material overall, making the product more environmentally friendly than traditional options.

The cabinets are constructed with dowel-joinery, which is standard for bespoke furniture. “The interior of the cabinetry is completely sealed: fronts, sides, edges and back in the same material. This gives you a hermetically sealed cabinet that is resistant to spills,” he added. Not only won’t you see spacers on an Eggersmann kitchen, you can select cabinets that would flummox a team of CSI investigators with their lack of obvious handles or grips. Instead, concealed motorized openers take their cue from a gentle push on the door, regardless of your height, or if you’re sitting in a wheelchair. Folding pocket doors, doors that slide over one another, or flipper doors that lift, ensure total, unobstructed access to the cabinet interior.

There is no shortage of business philosophies extolling the benefits of effective team building. One tried, and true method is to take the team into a new environment to recharge and connect as a unit. After the Cayman Marshall team had met an ambitious sales goal, Todd Adair decided to do just that. To build anticipation he only told them the basics: pack for somewhere warm, bring their passport and plan to be away a week. It wasn’t until everyone gathered at the airport after being picked up by limo that he revealed their destination. Think fan palms swaying in balmy ocean breezes, insanely clear turquoise waters, deep powdery white sand, rum drinks with little umbrellas, think Caribbean. Turks and Caicos to be exact.

Located 550 miles southeast of Miami, turn east at the Bahamas, where warm trade winds gently smooth away the harsh realities of a Canadian winter, like psychological botox. Home for the week? A private villa, complete with a cook, household staff, pool, tennis court, a life-size chess game and lush grounds. Three Dolphins Villa sits atop a quiet bluff overlooking Long Beach Bay, renowned for being one of the top kiteboarding spots in the Caribbean.

The first three days were for the team to come together, then on day four spouses and partners flew in to enjoy the remaining time. Day one saw the group paddle boarding across a wavy and windy ocean channel to get to a secluded area of mangroves. Turtles, baby sharks, rays, and schools of fish darted and weaved below their boards. Day two, the pampered guests snorkeled in calm, clear waters around the third largest coral reef in the world. Afterward, they were taken to more shallow waters to hunt conch for a BBQ on a nearby deserted beach. Along the way, the

captain moored on a chalk white sandbar where the team decided to leave their mark, well more a temporary tattoo. Like precocious toddlers in a sandbox, they spelled out the initials CM and 200M, in the sand. A Cayman Marshall drone had been documenting the day, and this picture became the defining image of the trip. Finally, arriving at the private beach, there was another surprise waiting. A full steak, lobster, and chicken BBQ all laid out. No hunting needed. Day three was a horseback riding adventure along the sea shore.

On the surface, this may seem more like an extravagant vacation rather than a typical team building exercise, but look deeper. The book, Good to Great, talks about companies as flywheels. Massive, heavy objects that only move because of momentum —mass times velocity. It takes immense effort to get a flywheel going just an inch, but as you keep pushing together as a team, it starts to move faster and with each turn picks up speed, its weight propelling it forward. This is known as, “The Flywheel Effect.” The team at Cayman Marshall has put their collective shoulders to their flywheel and built steady momentum since 2012. So, what’s next? More ambitious targets? No question: but as they position themselves in the Toronto market, there is another closely held business philosophy that has and will continue to guide their momentum. “The strength of the pack is the wolf, and the strength of the wolf is the pack,” from The Jungle Book. It reminds them even in the dog eat dog world of real estate; they are stronger as a team.

Five years ago, myself and three eager and energetic colleagues, opened the doors of Cayman Marshall for the very first time. Some of you may remember that 2012 was a turbulent time in the market and it seemed like every time something went wrong in the world, our buyers would freeze! Many predicted Cayman Marshall wouldn’t last a year, especially in such a competitive market. Our skeptics said we couldn’t start our own brokerage based on a “team model” and many said we certainly couldn’t start our own brand, create our own magazine, or succeed in scaling into other markets. Fortunately these people were wrong. Myself and every single person on the team proved them wrong. Together, we have solidified our brand in Ontario and we are now expanding into new markets and looking for new partners. It feels as though it’s been both a long time and a short time. Our achievements are modest and our company is still adolescent in the grand scheme of things. On the other hand, 5 years in a business that is rapidly changing and evolving is an achievement that we can be immensely proud of! It means that we have established ourselves – in fact, what we have done is build one of the largest Independent Brokerages in Ontario and certainly the fastest growing.

From our humble beginnings in 2012, we now trade in excess of $200 Million per annum with our new goal to hit the $300 Million mark for 2017. We are also proud to work with over 400 international partners that help give us the horsepower it takes to dominate with foreign buyers. It is also no small feat, and of great credit to the team we have assembled, that every single year we have almost doubled our sales. Last year while considering this editorial I was watching a children’s movie called “The Jungle Book” and I was inspired by this quote: “For the strength of the Pack is the Wolf, and the strength of the Wolf is the Pack.” This seemed to say what I was feeling perfectly. I could have never accomplished all of this on my own and this business is truly fun and rewarding when you surround yourself with people that have your back and share your victories.
