Agriculture—Dedicated Work that’s Essential to All by Carolyn Parks-Mintz, Author, Journalist, & Freelance Writer

From land prep to harvest, farming requires time and effort—as well as a crop-marketing strategy. However, it also involves labour of the heart—it is definitely not for the faint of heart, but it is also emotionally fulfilling in many ways for those who till the soil. A profession and livelihood dependent on a living, growing entity, which is impacted by weather and pests, demands dedication and resiliency. And those of us who need to eat—whether twolegged or four—are really glad there are stalwart men and women who take up the challenge. One of the advantages of living in a rural community is that it provides the opportunity of learning where and how food is produced, especially for children. The plastic-wrapped, boxed-up, and Styrofoam stacked products in grocery stores come from the land, from rich earth, and from tended livestock. While large corporate farms have developed in order to feed the millions of us, a plethora of smaller agriculture operations exist throughout our country— farms of various sizes that generate good food in eco-friendly ways. And Chase has many of them as neighbours. Long time farming couple Peter and Raymonde Murray of Pete Murray’s Corn Farm (formerly Wagon Wheel Ranch) have scaled back, but continue with an annual pumpkin patch, a fun corn maze, and raising sheep. After four successful decades, the “growing and production” tradition remains part of their lives. Brothers Lewis and Vincent Burkholder took over the Murray’s corn Sponsored by Todd

operation in 2020, and happily report they enjoyed a record year, despite pandemic travel restrictions and nearby highway construction. A huge bonus to the budding entrepreneurs was the sage advice, guidance, and equipment available from local farmers, including the Murrays. This generous assistance helped the brothers deal with the many trials of their first year—as did the six employees hired from the Chase and Pritchard areas. Their popular produce stand, established by the Murrays on VLA Road, will open again on August 1st and, in addition to delicious corn from the Burkholder’s 30 acres, it will also carry a variety of vegetables—such as carrots, broccoli, tomatoes, squash and cabbage. Golden Ears Farm, certified organic in 2016, is another multi-generational venture in the area, presently run by Tristan Cavers and Michelle Tsutsumi. In addition to hay, cultivated to supply an organic meat producer, and farm fresh eggs, they’re growing strawberries, asparagus, garlic, garden peas, sweet corn, tomatoes, and cucumbers. And their sixty fruit trees produce apples, pears, and plums. All their food crops are available at local farm markets, including here in Chase. Golden Ears flock of 200 laying hens

can be described as free-range birds, in that they’re moved around the acreage within mobile fencing, along with their custom-built wheeled chicken coop for egg laying. The two-fold benefits from this system are that the hens happily do what hens like to do—pecking, eating— and fertilize the soil at the same time. Tristan and Michelle share the nitty gritty of planting and all that goes with it. And as part of a Community Supported Agriculture (CSA) programme, Michelle publishes a weekly newsletter with farm updates, as well as recipes for some of their vegetables, while Tristan takes on the tractor and machine work. They both enjoy the relationships that are integral to their farming practices. Business partners Kristen From and Steve Van Hassel chose an unusual but accurate name for their farming business—“Ikigai.” A Japanese concept, it encompasses a calling, one’s reason for being, what drives one’s purpose, and includes contributing to a community. Experience as a farm intern and employee provided Kristen with the knowledge and skill to grow things— and she loves the lifestyle. In addition, as with so many farmers, providing good food to area residents is her main goal, is what gets her up every morning. Continued on next page...

cooking spray 1 teaspoon vegetable oil, or as needed 2 tbsp freshly grated Parmesan cheese ½ teaspoon salt ½ teaspoon garlic powder ½ teaspoon paprika ¼ teaspoon ground black pepper 2 pounds red potatoes, halved 1 tablespoon vegetable oil, or as needed ¼ cup sour cream (Optional) Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom. Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl. Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan. Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.
