RECIPE: Creamy Cucumber Salad
1 1/2 to 2 English cucumbers 1-2 tbsp salt 1/2 cup mayonnaise 1/2 cup sour cream 1 tbsp white wine vinegar 1 tsp sugar 1/4 tsp each salt and pepper herb of choice - parsley, mint, or chives (about 1 tbsp dried or 3 tbsp fresh chopped)
Slice cucumbers into 1/4" chunks. Place in a bowl and sprinkle with 1-2 tbsp salt, stirring to mix well. Let stand 15-20 minutes while you prepare dressing. Dressing: Combine mayonnaise, sour cream, vinegar, sugar, salt and pepper. Add herb of choice. Once cucumbers have stood 15-20 minutes, turn into a collander and rinse well to wash off salt. Drain well, then add to dressing and mix until well combined.

It's nearing that time of year! The burdock is flowering, and that means soon we'll be tasked with the burdens of picking burs out of our pets coats, off our clothes, or worse, from our skin! Ouch! As annoying as those little burs may be, it's the root that I prize! Burdock is a wonderful liver herb, the root can be dried and used in tea, or made into a tincture. It is considered generally safe for use by all, and is excellent for detoxifying and cleansing. Since your liver is primarily responsible for the balance and regulation of hormones, keeping it healthy can also help with other hormonal issues such as acne! This could be welcome news to many teenagers, and herbalist Rosemary Gladstar has a recipe for a tasty "rootbeer" tea! The leaves and seeds are also useful in salves or poultices and help with a wide range of skin issues like eczema, psoriasis, or other dry itchy conditions. Burdock is a biennial plant, meaning it will only put on leaves the first year, and the second year is when it will flower and produce seeds (the burs) and then die. The best time to harvest the root is during fall of its first year, when the plant will concentrate all of its energy into its giant tap root before resting for the winter! Good luck harvesting
though, that tap root can be tricky to get!! Rootbeer Tea Recipe: 1 part burdock root 1 part cinnamon chips 1 part sarsaparilla root 1/2 part dandelion root 1/4 part ginger root (chopped, not powdered) a pinch of stevia (for sweetness, use about 1/2tsp per quart) Combine ingredients in a small saucepan and add 1 quart of cold water. Bring to a simmer on low heat, cover, and allow to simmer for 2545 minutes. Strain and enjoy either hot or cold! For a refreshing summer treat, try mixing it with sparkling water!

“Due to conditions in the South Thompson River, water quality has been a major issue for that community for many years. They deserve good quality water and at last they’re going to get it.” “With this investment in the Pritchard Community Water System Filtration Project, families and individuals in the area will have reliable access to clean, safe drinking water. This is one of 120 such water projects in BC, and 1,425 across all of Canada,” said the Honourable Maryam Monsef, Minister for Women and Gender Equality and Rural Economic Development. “In addition to supporting communities such as Pritchard, we’re on track to eliminating all on-reserve long-term boil water advisories by 2021, ensuring that all Canadians have access to a clean drinking water supply. This means a better quality of life for those living in the area and new opportunities for job creation and sustainable economic growth.” The Honourable Selina Robinson, Minister of Municipal Affairs and Housing, stated “This investment in a new water treatment facility will help to ensure that people in Pritchard have access to safe and clean drinking water. The Province is working in partnership with the federal government to help deliver the services people count on, while helping to keep our communities and environment healthy for generations to come.” The funding will cover 100% of the eligible costs for the TNRD to upgrade its Pritchard Community Water System, including the river intake pumphouse, a new membrane filtration water treatment facility, primary and secondary disinfection, and distribution system piping. Detailed engineering and design work will be commissioned in 2020, with the objective to put the construction contract out for tender in 2021. The new treatment facility will be designed to meet guidelines for Canadian Drinking Water Quality and Interior Health Authority (IHA) treatment objectives.
