A local historical researcher and heritage enthusiast is asking the public’s help in saving old law books headed for the dumpster if no one claims them, and the building that houses them.

Hans van der Doe of Chatham, a former vicechair of the municipal heritage committee in Chatham-Kent, was approached by Ontario

Infrastructure (OI) staff who manage the former Kent County Courthouse and Jail on Stanley Street regarding the books in the old law library, some of which date back to 1898.

He was given 30 days to remove the books as the two buildings – the former jail and courthouse which has a provincial heritage designation – are being readied for sale to the public this fall.

Local PC MPPs re-elected

How does Rick Nicholls spell relief? Re-election and a PC majority.

For the third time since 2011, Chatham-Kent Leamington voters chose Nicholls as their representative at Queen’s Park. Only this time, he’ll be sitting on the other side of the Legislature, part of a Progressive Conserva-

tive majority government.

That’s something the PCs haven’t had since the previous century. They’ve been out of office since 2003 when the Liberals took over running the province.

Nicholls appeared tired but quite happy on election night.

“I took nothing for granted,” he said, commending the candidates from the other parties – Jordan McGrail, NDP; Margaret Schleier Stahl, Liberal; and Mark Vercouteren, Green Party. “You

don’t run to the finish line, you run through it.”

This year marked the use of electronic voting, and results came in quickly. Major media outlets posted a PC majority 20 minutes after the polls closed, and gave Nicholls the riding about that time as well.

The numbers were a bit slower for Lambton-Kent-Middlesex, where Monte McNaughton returns to office. He too will now sit in power as opposed to opposition.

Nicholls looks forward to the change.

“The view’s going to be a whole lot different,” he said. “And the NDP is the Official Opposition.

The Liberals totally collapsed.”

McNaughton thanked his supporters for re-electing him.

“I am truly humbled.

Thank you to the voters in Lambton-Kent-Middlesex for re-electing me to serve you for four years in an Ontario PC majority government,” he said via Twitter.

Nicholls said the campaign this time around had a very different feel than in the past, attributing it to the general Liberal collapse.

came a two-party race,” he said.

McGrail supporter and campaign volunteer Bill Zilio wasn’t able to contain his disappointment with the results in C-K L. “I’m disappointed. I think Jordan has worked harder than anybody and has pounded the pavement every day,” Zilio said from McGrail’s campaign after party at Frendz in Chatham.

“I don’t know what we could have done different. Everybody worked hard and we had more volunteers than we ever had and we had a great campaign team. I’m just baffled.”

Nicholls expects the government to hit the ground running,

and predicts it will trample the Green Energy Act. “We will scrap the Green Energy Act,” he pledged. “We will put a moratorium on wind turbine development in Ontario.”

Nicholls said other local issues that need addressing include ensuring the concrete barriers are placed along Highway 401, and possibly twinning portions of Talbot Trail.

“We need to be smart about it.

It will take time to sort things out,” he said.

Nicholls said party leader Doug Ford will have some challenges choosing his cabinet.

“This is a great, strong caucus.”

Shropshire said a more appropriate group to take charge of the collection would be the local law society or the Law Society of Upper Canada. “The University of Toronto, for example, is a place that would have staff with the skill set and ability to store that type of collection,� he added.

Chatham-Kent chief librarian Tania Sharpe joined van der Doe on a tour of the old courthouse recently to see what books are left and what shape they are in. For the most part, as far as Sharpe could see of the remaining books, they are law books that have already been digitized, so the information in them is intact in digital form.

As of press time, the petition had 488 signiatures. “I am not letting up on Chatham-Kent Council, until this is saved for us,� van der Doe said to followers of his Facebook posts. “I cannot stress the importance that this will have on our culture and history of we the people, if we lose this building and Library.�

The Kent County Courthouse and Jail is also one of only four remaining buildings in Chatham that predate 1860, according to van der Doe. According to OI, whoever purchases the property must abide by the rules and regulations involved with a heritage designated property. “The building was designated by Chatham-Kent’s council on fifth of August, 2003 with the province’s approval (By-Law # 1852003) and registered with the Land Register on Feb. 3, 2004.

The Jail was officially closed in a ceremony held out front of the old building on July 4, 2014 ending 164 years of service,� van der Doe noted. “There have been many times in the past since the jail has

closed, we have shown concern with the property.

It’s not just a collection of old dusty books, tables and chairs. It’s a window into our past that holds the book, located in a building, that without their existence, we would’ve never been.�

With the provincial election results tabulated, a Highway 401 safety advocacy group is preparing to

continue its work.

The Progressive Conservatives won June 7, along with every MPP in the ridings along and bordering Highway 401’s “Carnage Alley.”

Safety advocates are optimistic concrete median barriers will soon be a reality.

Doug Ford promised during two campaign visits to the Chatham-KentLeamington riding to build concrete median barriers on Hwy. 401 between London and Tilbury. Advocates say this is an important pri-

ority for this region both from a safety perspective for drivers and first responders, and from an economic perspective as each time the highway is closed, millions of dollars of goods are held up from their final destination.

“Premier-Designate Ford said that he keeps his promises. I look forward to working with him and MPPs Rick Nicholls and Jeff Yurek to ensure this life-and-death issue gets the same treatment,” Alysson Storey, founder of Build the Barrier, a grassroots group advocating for concrete median barriers between Tilbury and London, said in a release. “We do not want one more life lost in a preventable crossover collision. Mr. Ford has the

opportunity to start this new chapter off on the right foot. He can do that by listening to his Southwestern Ontario MPPs and their constituents and getting this done.

Rick and Jeff have been working on this with us since day one, so there’s no learning curve and no reason to delay. It’s time to get this done.”

There were a total of five fatalities and 10 serious hospitalizations in collisions on Hwy. 401 between Tilbury and London in 2017, along with numerous incidents that caused significant property damage and road closures, but did not require hospitalization. This year continues to see a high rate of incidents on Hwy. 401 in Carnage Alley.

It’s time to fulfill those promises: Jakubec

Now that the provincial election is over and the Progressive Conservatives (PC) have a majority government, Water Wells First is holding them to their promises.

“PC MPP Monte McNaughton (Lambton-Kent-Middlesex) has always said he wasn’t in power,” said WWF spokesperson Kevin Jakubec in a statement, “So now that he is in power with a majority government, we’re expecting him to deliver on these commitments he’s made during the election.”

McNaughton wrote several letters to the Liberal government regarding well contamination concerns and brought the

issue of a health hazard investigation up in the Legislature, but received no answers from the province.

The Otter Creek wind farm project is scheduled to start construction this year north of Wallaceburg and is being opposed by area residents due the size of the turbines (almost twice the size of regular turbines), potential well issues and noise pollution worries.

WWF is calling for a repeal of the Ontario Green Energy Act as promised

by Premier-elect Doug Ford during the election campaign. In a letter to WWF dated May 5, Ford made a commitment to a full health hazard investigation into contaminated wells if elected.

“I, Doug Ford, and the PC Party of Ontario is

committed to seeing clean, safe water is available to every Ontarian,” the letter signed by Ford stated. “I commit myself and the PC Party of Ontario to stopping this travesty and commit that a full health hazard investigation is conducted in north Chatham-Kent so that the full extent of the health risks and the number of families affected is known. As Premier, you have my word, Kevin, we will hold accountable every party that did this.”

WWF has a Twitter campaign going currently to remind McNaughton and Chatham-Kent Leamington MPP Rick Nicholls of the promises made by their party.

“1. Action needed. Shut down turbines in Dover and Chatham Townships.

2. Action needed. Test all water wells for presence and level of Black Shale particles. 3. Action needed. Begin Health Hazard Investigation with Environmental M.D., Nephrologist, Toxicologist multidisciplinary team,” said one of the tweets put out by WWF. Nicholls, in his victory speech, said the first priority of his government is to do a line-by-line audit of the provincial budget to see just how much debt the Liberal government has accumulated in the past 14 years so they have a solid number to work from.

The returning MPP also told local media that his party is committed to scrapping the Green Energy Act and putting a moratorium on any wind farm developments.

During the process, Chatham-Kent residents will see a golf cart with inspection equipment driving on municipal sidewalks.

Permission has been granted under the Traffic and Parking bylaws for personnel

working on behalf of Sidewalks Plus.

The second part of the contract is to have a tractor with specialty equipment remove the identified trip hazards found and marked during initial inspections.

The equipment will be moving through Chatham-Kent for about a month, depending on weather conditions.

Pedestrians are asked to avoid the work zones during operations.

Will they keep those promises?

Now that people have had a chance to recover from the provincial election, it’s time to look to the future of Ontario and what a Doug Ford leadership looks like for Chatham-Kent.

A lot of promises were made, and with decimated Liberal ranks and PC majority, there will be no excuses not to make good on those promises.

For 14 years, the Liberals have governed our province and our local elected officials could point the finger of blame towards Toronto.

PC MPPs Rick Nicholls and Monte McNaughton weren’t able to get as much accomplished in opposition, but they were able to pass the blame.

Now, they won’t have that excuse to fall back on.

As members of the party in power, they will be held accountable for the promises made to water well owners, the people requesting a Highway 401 barrier, and all the other people who have asked them to take their issues to Queen’s Park.

A lot of their success will depend on Premier-elect Doug Ford living up to the promises he made about immediate action he would take on the Green Energy Act, the carbon tax, and, yes, even buck a beer.

Nicholls school bus safety legislation will hopefully make it to the top of the pile; the same for his bill to prohibit non-disclosure clauses as part of leases signed with landowners to have industrial wind turbines erected on their properties.

There are a lot of people counting on Nicholls and McNaughton to come through for them on pressing for a health hazard investigation and holding the people who refused to look into their concerns accountable. Ford stated on the election trail through Chatham-Kent that, if elected, he would call for just such an investigation.

Well, now he’s elected, and there are no excuses.

The hard work for Nicholls, McNaughton and Ford starts right away and it’s hoped the people won’t regret the blue tide that swept southern Ontario.

Dignity movement catching on Sir: This is an open letter to all of those who work at Long-term care homes.

I saw something beautiful recently. A young man died with dignity.

He died surrounded by his family and by the staff who had cared for him over the years.

This might sound morbid to those who do not work with the sick and dying everyday. But you do. You know what it means to comfort a grieving family. You know what it means to help someone when they are taking their last breath.

You know the pain of the family’s loss, because you feel it too.

Dignity did not end at the bedside that day. The young man had been dressed in his favourite hockey team’s T-shirt.

His family had placed his ballcap in his hands.

They said their goodbyes.

It was at that moment that the speakers echoed: “Honour Guard in five minutes. Honour Guard in five minutes.”

You could hear movement in the hallways: nursing staff, kitchen staff and volunteers.

They were piling into the elevators and heading down the stairways. They were heading to the main

entrance of the longterm care home.

After my colleague and I had placed the young man on our stretcher, and draped him with our quilt, a manager took his hockey jersey out of his closet. She placed the jersey on top of the quilt, neatly folding the sleeves just right.

My colleague and I took the elevator down to the main floor. The immediate family had been waiting just outside elevator. They were holding carnations. They each placed a carnation on the stretcher, and followed behind us as my colleague and I made our journey down the lengthy hallway toward the main entrance.

We were met there by the honour guard. There had to have been at least 30 of them. They were all standing there, poised, holding a carnation. Family, residents and staff stood side by side, waiting for us to venture past them. Someone played a rock ballad on their iPhone – likely one of the young man’s favourite songs.

The honour guard stood in two rows on either side of us. We slowly

made our way along as each member of the honour guard took a moment to place their carnation on the stretcher.

The honour guard began inside the long-term care home, and the last flowers were placed as we made our way out the main entrance. Out into the sunshine. Out in plain view.

There were people on the front lawn and in the parking lot: visitors and residents both. Their eyes were on us, on the family, and on the honour guard standing there emitting a quiet dignity. Death had walked right past them. But it was not fear and revulsion we saw in their eyes. Not at all.

They stood there, silently, mimicking those who had just placed flowers.

They offered a moment of reverence. You could see the wheels spinning in their heads, visitors and residents both as their racing thoughts came to the very real conclusion: “This is how they care for their dead. This is how they will care for me, or my loved ones. Out here in the sunshine.”

A month ago, this would not have happened. A month ago, the long-term

care home’s policy, like many of your homes, had been to take the stretcher out the back door. Our job was to be subtle: to slip out the back door unnoticed, as not to disturb the residents. Death was a secret. In the minds of the residents, their friends and lunchmates would all but disappear – and one day they would too. They would be erased.

Dignity is contagious.

There is a movement underway. It began in this area when the Chatham-Kent Hospice opened its doors. Their belief was always that residents come in the front door and should go out the front door. They believe in honour guards and reverence, and the community noticed.

Since then, long-term care home after long-term care home have been contacting us, notifying us that their policies have “changed.” They have embraced the movement.

They have embraced the front door. They have embraced the sunshine.

I’d like to invite you all to join us in the movement.

The sun feels great.

Old phones wanted for literacy program The Chatham Voice

The Rotary Club of Chatham is encouraging citizens to donate their old or unused Android smartphones and tablets.

The Rotary Club of Chatham is asking local residents to check their desk drawers for Android smartphones or tablets and chargers they are no longer using as part of a global literacy project they are organizing.

The Rotary Clubs of Chatham, Chatham Sunrise, Blenheim and Wallaceburg are in the process of setting up wi-fi stations in remote Guatemalan schools.

Donated Android smartphones and tablets will be used as e-readers, making educational materials and textbooks available to children.

“Tania, Alysson and I have been talking about how to get the word out about this initiative and get as many devices as possible into these schools, which often have little to no infrastructure or learning tools,” Peter Tanner, a Chatham Rotarian and coordinator of the project, said in a release.

Alysson Storey is Immediate Past President of the Rotary Club of Chatham in 2016-17 and Tania Sharpe is current President of the club.

“Many of us likely have a phone or tablet in our home that we’re not using. This is a great way to give these devices another function, and a very important function at that,” Sharpe said. “For these kids, this is a

lifeline to a better life. Without literacy skills their options are incredibly limited. This is an easy way to help kids learn to read, and give them an education they would never be able to access otherwise. Which is one of the pillars of Rotary service”.

“The citizens of Chatham-Kent are generous people and we’re great at helping out those less fortunate. This not only keeps these devices out of a landfill, it gives these students a chance at an education they would never have otherwise. It’s a win-win,” Storey said.

Operation BackPacks underway The Chatham Voice

While the current school year is winding down and summer activities have yet to be planned, Operation BackPacks is already underway.

This program aims to provide local children with a new backpack

full of grade-appropriate school supplies – the tools they need to achieve academic success – and help alleviate the financial stress parents face each new school year.

Operation BackPacks was started by staff of the Chatham-Kent Health Alliance Emergency De-

That first year they distributed 26 backpacks. Since then, the program has steadily grown, adding additional partners along the way – Kiwanis Clubs, United Way, Service Canada, Union Gas, financial institutions and others – to address the increasing need in our community.

Service providers came together in 2004 to ensure that families get the help they need through a more centrally co-ordinated and collective effort. United Way was asked to take the lead and currently provides administrative support for referrals from agencies, schools and parents, centralization of supply ordering, and volunteer recruitment for assembling and delivering backpacks to schools and communities.

ant Tiger, United Way of Chatham-Kent’s Women’s Leadership Council and numerous local organizations and businesses, Operation BackPacks strives to serve every child and family in need throughout Chatham-Kent.

Parents or guardians can request a backpack for their children online by visiting OperationBackPacksCK.ca. Here, at the program’s webpage, you can access the online referral form, supplies provided by grade level and information regarding where and when you can pick up your requested backpacks. The last day for referral submissions is Aug. 17.

You can support this program by donating money, supplies or your time! The easiest way is to sponsor one or multiple backpacks at $25 each. Sponsoring a backpack allows co-ordinators to monitor the quantity and quality of supplies and ensure each child receives the supplies they need based on their grade level. You can also donate your time by volunteering to help pack

Local realtors say May delivered only an average month in terms of home sales in the municipality.

According to the Chatham-Kent Association of Realtors, sales dropped 18 per cent from the all-time record May sales month from last year. A total of 141 units changed hands.

So far this year, sales have totaled 515 through the first five months, marking a decrease in nearly 13 per cent compared to the same period a year ago.

Steven Scott will run in Ward 4, while Les Banks is running in Ward 6, and Pierre Lambert is running for trustee for the French public school board.

Association of Realtors said unless inventories increase, there will be a further downturn in sales numbers.

“Home sales were running in line with their 10year average in May, but even that average level of activity may be hard to maintain going forward if new listings don’t start to pick up,” Carroll said in a media release. “With supply as low as it is, prices continue trending at record levels. This was again borne out in May, with the average price setting yet another new all-time record.”

The average price of homes sold in May was a record $214,832, up 3.1

per cent from May 2017.

The more comprehensive year-to-date average price was $199,904, up 5.9 per cent from the first five months of 2017.

The inventory cupboard is getting pretty bare.

There were 172 new residential listings in May. This was down 26.8 per cent on a year-overyear basis and marked the lowest level for the month in 25 years.

Active residential listings numbered just 170 units at the end of May, plunging 48.3 per cent from the end of May 2017. It was the lowest inventory reading at any point ever in the region.

A C-K haven for migrant workers

Being away from one’s family can be stressful to the mind, body and spirit.

That’s why Ira Simpson is involved in the Caribbean Love Ministry.

The migrant workers ministry started about 13 years ago in Leamington, he said, and it became connected to a church in Windsor.

In 2015, Simpson helped bring the ministry to Blenheim. This year, it is connected to Evangel Church in Chatham, with services Sunday nights.

“Most of these guys leave their families for eight months or two years, and sometimes it gets very stressful,” the Jamaican native and Ridgetown resident told The Chatham Voice. “The workload in the greenhouses and the fields is really stressful.

And they can become so

frustrated if there is an issue at home.”

That’s where the Caribbean Love Ministry comes into play.

“Church gives them hope: Trust God to take care of and help the family. That helps relieve the stress level,” he said.

Worshipping God is only one element of the church that appeals to the migrant workers. They are encouraged to pick up a musical instrument or lend their voices to the evenings.

“Singing, playing music – it kind of helps regenerate them,” Simpson said. “Most of the migrant workers who come up go there to worship and they really find it informative and fulfilling. They get to worship in their own native way and language.”

Simpson, who serves as the minister for the Caribbean Love Ministry, said several local greenhouses are quite supportive, and

one transports the workers to and from the services on Sunday nights.

He said the ministry’s efforts extend beyond the Sunday services, as there are also social activities designed to bring the foreign workers together.

And there are assistance programs, something Simpson said was needed.

“We also want to provide winter gear for them.

Some might get money from their employer, but they might not have enough to buy a coat for the winter,” he said. “We have a program where we can help them out.”

He believes more should be done to help acclimatize migrant workers to Canadian weather and culture when they come to our country.

“You can’t just throw them into the country and expect them to work. You have to educate them,” he said. “We want to ed-

ucate some of the newcomers, let them know about some of the things to expect when they arrive here in Canada. Nobody knows them. We want to give them counselling and guidelines.

“We give some background information. We want to be that ounce of prevention. It’s better than a pound of cure.”

Simpson pointed to one worker’s situation where the first-time visitor to Canada went into a gentleman’s club and wound up not having the money to pay for a dancer’s services he didn’t even know he had procured.

“He didn’t understand much about Canada. He only knew his Jamaican culture,” Simpson said, adding a friend helped get the man’s bill paid and out of the club.

In order to prevent and counter elder abuse, it’s important to know how to recognize it. In honour of World Elder Abuse Awareness Day this June 15, take a moment to familiarize yourself with the different types of abuse seniors may experience.

2. PSYCHOLOGICAL ABUSE Insulting, threatening, rejecting, isolating, manipulating and humiliating a person are some examples of psychologically abusive behaviour.

3. MATERIAL ABUSE Also known as financial abuse, material abuse refers to dishonestly obtaining or using someone else’s property. Pushing an elderly person to modify his or her will or asking for excessive pay-

ment after providing a service are two examples.

4. ORGANIZATIONAL ABUSE Organizational procedures that cause harm to older people, such as providing services in a rough manner, constitute abuse.

5. SEXUAL ABUSE All actions, comments and demeanours that negatively impact a person’s sexual identity or wellbeing are considered to be acts of abuse.

Finally, discriminating against someone based on his or her age (ageism) is also a form of abuse.

Physical, material, psychological — the elderly are vulnerable to many different forms of abuse.

“Some are teachers; some are ministers. A lot of people are educated. They get the opportunity to come to Canada and they take it,” he explained. “Some travel for the financial benefit. Others just come here because they want to travel.”

Simpson has been in Canada since 2008. Prior to coming here, he was a minister in St. James, Jamaica.

When he came here, he started to search for a place to worship, and found one in Leamington.

When he moved to Ridgetown, he brought his ministry with him.

“This is a calling. It’s something I have to take on with whatever little resources I have, to put this together to make this possible so some of the workers can benefit from it,” he said.

He is married with three children and works in construction during the day.

The Chatham-Kent element of the ministry began in St. Mary’s Hall in Blenheim, before shifting to Chatham this past January.

“Oh my God, this man is a blessing. He welcomed me to the family of the church,” he said of Couper.

Simpson said he recently spoke in front of the Sunday morning congregation at Evangel to celebrate the third anniversary of the ministry operating in Chatham-Kent.

“There was so much support in front of the congregation it overwhelmed me,” he said.

The Caribbean Love Ministry typically has about three dozen members show up each Sunday night, Simpson said, and those numbers will grow as the growing season progresses.

“It’s everybody invited. We want the migrant worker here to feel a part of the community. It’s a chance to interact to get to know them,” he said.

“To see what they’ve been through, to see their level of faith, you will think differently. Everyone can feel we are a part of the community, working to make it a better place.”

Service begins at 7 p.m. every Sunday at Evangel.

Given slated for repurposing The Chatham Voice

The Lambton Kent District School Board (LKDSB) senior administration has decided to repurpose the John N. Given Public School site for alternative programs.

With the repurpose plan, the site will not be declared a property surplus to the Board’s needs.

Last May, LKDSB trustees approved the consolidation of the John N. Given Public School Kindergarten to Grade 8 English Language Program at Tecumseh Public School for this September; the relocation of the John N. Given Public School Grade 7 and 8 French Immersion Program to McNaughton Avenue Public School in last September, and the closure of John N. Given as of July 1.

Currently, the LKDSB’s Adult & Continuing Education program occupies a leased property in Chatham. As well, the LKDSB currently houses some alternative Special Education programs in various locations throughout the area, such as the Positive Alternative to Suspension from School (PASS) program and Section 23, which offers educational programming to students who require an alternative to a traditional classroom setting.

Senior administration decided to consolidate these programs into the John N. Given Public School site in order to consolidate resources and support services, as well as create efficiencies for the system.

“After thoughtful consideration of the needs of the LKDSB and the com-

munity, we believe repurposing the John N. Given Public School site will be a positive transition for the students and staff who are currently decentralized throughout our system. By bringing them together in one site, staff will be able to better support our students and each other. As well, this

move is expected to continue to create efficiencies for the system,” said Director Jim Costello in a media release.

The LKDSB is working with its students and community partners to notify them of the location change, which is expected to be effective this September.

In a press release issued by Water Wells First spokesperson Kevin Jakubec Friday relating to the litigation between he and Chatham-Kent Coun. Jeff Wesley, he said an apology has closed the matter for good.

“Previously I, Kevin Jakubec, made public comments that suggested Mr. Wesley was a liar. It is not true that Mr. Wesley is a liar. I apologize,” Jakubec said in the release.

“Coun. Wesley and I have come to an agreement regarding the damages assessed in the Reasons for Decision of Deputy Judge Glenn C. Walker on July 27, 2017 and consider the

matter resolved. Neither Coun. Wesley or myself will have further comment on this matter.”

The apology stems from the grassroots advocacy group awarding Wesley a Pinocchio Shame Award in early 2017. Jakubec, at that time, said the award was not meant to hurt Wesley or his family, but was meant to bring awareness to the group’s fight to protect the aquifer running under Dover Township and much of the area north of Chatham where wind turbine projects are underway.

“I offer my apologies to you and your family.

No one was meant to be hurt,” Jakubec wrote in an e-mail last year.

Tailgate at dance recital? Oh, yes we did Dance is art. But it can come pretty darned close to a sport as well when you factor in the physical rigors involved.

And sporting events are prime spots for tailgates, right?

So what better reason to hold a tailgate party at a dance recital?

That’s what we did on the weekend, enjoying pulled pork, meatballs, salad, beverages, good company, and rain drops.

My task was the pulled pork.

I had a 15-pound pork shoulder in the freezer, so we were well armed. It went on the Big Green Egg Friday evening at 7 p.m. I was worried some of it was still frozen, or close to it, so I cranked up the heat slightly to 275 F to make sure it would be done by Saturday afternoon.

This was by far my smoothest long cook on the Egg to date. I hung out in the backyard into the early evening, listening to classic rock selections on my iPod, sipping on a cold beverage, and making sure the temperature was nice and stable.

A check at about 1 a.m. had me thinking it was going to be done ahead of schedule, so I dialed back the heat a little more, to 250 F, about where I normally cook a pork shoulder.

My target temperature was 200 F internal to allow the collagen and fat to break down.

I expected about 18 or more hours of cooking time.

At 6:20 a.m., the pork had blasted through its stall period and was already at 182 F. It typically stalls for hours somewhere between 150 and 160 F. I turned down the cooking temperature some more and had another nap.

By 1:30 p.m., it was done. I removed it from the Egg, placed it in a roasting pan, covered it in foil, and let it rest for about

1. Provide water and shade at all times. Don’t let your cat or dog get dehydrated during a heat wave. Always leave a bowl of fresh water at their disposal. Outdoors, make sure your pet has access to shade at all times.

2. Avoid walking your dog when the sun is at its strongest.

It’s highly recommended that you leave your pet indoors between 11 a.m. and 4 p.m., as this tends to be the hottest time of the day. Minimize your dog’s risk of heatstroke by taking walks early in the morning or later on in the evening when the weather is cooler.
