Wholegrain Banana, Blueberry and Peanut Butter Loaf

Makes one loaf Prep time 10 mins, cooking time 50 mins

Ingredients

• 3 bananas • 100ml Greek yoghurt (or a plant-based alternative) • 50ml olive oil • 1 egg • 1 teaspoon of cinnamon • 100g blueberries • 100g chocolate chips • 100g peanut butter • 300g wholemeal flour • 2 teaspoons of baking powder

Method

1. Heat the oven to 180C and grease a bread tin. Mash the bananas together in a bowl and then add the Greek yoghurt, olive oil, egg, cinnamon and blueberries. Mix well. 2. Add the peanut butter and chocolate chips and mix again. Sieve the flour and baking powder over the mixture, mix then add to the bread tin. 3. Bake for around 50 minutes, remove and allow to cool. Serve with sliced bananas, chocolate chips and blueberries and more

Pomegranate and Raspberry Chocolate Bites

Lemon and Basil-Infused Yoghurt, Fresh Berries, Almonds and Honey

Makes approximately eight ice cubes. Prep time five minutes, freezing time two hours-plus. Batch cook me! **You will need an empty ice cube tray for this recipe** Ingredients

• 200g good quality dark chocolate • 50g pomegranate • 50g raspberries

Method

1. Half fill a saucepan with boiling water and place a bowl on top of the pan. Break the chocolate up into small pieces and place in the bowl, allowing the heat from below to gently melt it. 2. Half fill each empty ice cube holder with the melted chocolate.

Spoon in a little pomegranate or half a raspberry into each one then fill with the remaining chocolate. Place in the freezer. 3. Freeze for at least 2 hours then remove and using a sharp knife cut the cubes in half. Eat immediately before they begin to melt.

Mix it up

Endless possibilities here. Go for milk or white chocolate (but I think the darker the better). Experiment with different fruits like passionfruit, blueberries, strawberries, orange and pear.

• 200g Greek yoghurt (or a plant-based alternative) • 1 lemon • 30g fresh basil • Around 100g fresh berries (strawberries, raspberries, blueberries) • 20g almonds • 2 tablespoons of fresh honey

Method

1. Spoon the yoghurt into a bowl. Grate the peel of the lemon and finely chop half of the basil. Holding back a pinch of the lemon peel, mix the rest with the yoghurt and basil. Spoon into a wide bowl. 2. Halve the berries and place on top of the yoghurt. Roughly crush or chop the almonds and sprinkle on top of the yoghurt. 3. Slice the remaining basil and sprinkle on top of the yoghurt along with the remaining lemon peel. Drizzle the honey over the plate.
