entral Virginia is rife with local farms, farmers markets and farm-to-fork restaurants. Come May 3, the Powhatan Farmers Market begins its 2018 season in Westchester Commons (15785 WC Main St.). Many of us have enjoyed discovering not just the amazing variety of fresh local fare, but also the men and women who have chosen the farming life and who make these meals possible for the rest of us. One of the more interesting persons is Eugene Hudders Eugene is not a so much a farmer as he is a forager. He has recently opened Foraged Kingdom providing mushrooms both for local consumers as well as area restaurants. Eugene says that he was always fond of nature and exploring the outdoors, but it was only about 12 years ago that he began hunting mushrooms in earnest. He had gotten his

first taste of morel — a sought-after mushroom with a nutty, meaty taste said to rival that of a well-seasoned filet mignon — and just like that, he had found his vocation. He spent the next several years with his nose in mycology books, learning to identify, forage, and cook them. He holds a certification in mushroom foraging and does most of it in the certified organic and certified biodynamic Crickets Cove Farm, owned by Marianne Cicala in Kenbridge. Biodynamic certification, though less well-known, is similar to organic certification, but with additional requirements such as the creation and management of a closed system minimally dependent on imported materials, instead meeting its needs from the living dynamics of the farm itself. This means that all of the mushrooms that Eugene forages and cultivates on Crickets Cove will be certified organic and

1 cup diced pancetta or bacon

1 quart chicken or vegetable stock

2 cups diced yellow or white onion

2 cups half-and-half

4 large leeks, cleaned and sliced (plus 1 cup julienned, for garnish)

4-5 medium peeled, russet (baking) potatoes cut into roughly half inch cubes; Yukon Gold potatoes can be substituted for a somewhat creamier consistency

1 tsp. minced garlic (or more according to your taste) 3 tablespoon butter

PREPARATION 1.) Cut green leafy tops off of leeks and put aside. Slice light green to white portion of leeks in half lengthwise. Place each half length flat side down and cut the leek into thin, C-shaped slices. The amount of cut leeks may seem excessive, but they are mild in taste and reduce significantly during cooking. [Note: Leeks can be dirty, so place all cut leeks in a large bowl, fill with water and agitate with your hand. Any sediment should sink to the bottom of the bowl. Empty rinsed leeks into a colander, return them to the bowl and repeat until the water in the bowl remains clear.] 2.) Using medium to large stock pot, brown and render the pancetta or bacon. Remove pancetta or bacon and set aside. Add 2 tbs. olive oil to pot, stirring to mix with the pancetta or bacon fat.

3.) Add onions, then add the cut and drained leeks. Let cook until onions and leeks are somewhat translucent and softened, stirring periodically to avoid browning or sticking to the bottom of the pot. Add the garlic and stir.

4.) Add 3 tbs. butter. When melted add the 3 tbs. all-purpose flour and stir until thoroughly combined. Add 1 quart of chicken or vegetable stock, then the potatoes and cook until the potatoes are tender. Cook time will vary depending on quantity and type of potato used.

5.) When potatoes are cooked through, remove soup from heat and add the halfand-half. Stir to incorporate. Use a hand blender to blend the soup to a smooth consistency. 6.) Serve in soup bowls, placing a pat of butter or swirl of olive oil in the center and using the pancetta/bacon and reserved leeks for garnish. Perfect with a crusty bread.

esidential landscaping is returning to its roots. Homeowners are no longer manicuring our backyards into submission. Instead, we are relinquishing our responsibilities and acknowledging with some relief that nature is a better gardener than we are. She can take care of herself – if we let her. The trend is called sustainable landscaping and it is characterized by low-maintenance garden designs that have minimal environmental impact. It plays out when we choose to plant native species, when we trade turf grass for “greener” surfaces or when we replace decks with patios constructed of permeable pavers. Plant species which have adapted to local soil and climate conditions are called native plants. Because they adapt in response to regional influences, native plants are relatively selfsufficient — they are often drought tolerant as well as insect and disease resistant. And natives help support local wildlife and beneficial insects by providing food and habitat. Homeowners are also cultivating a suburban version of farm to table. By introducing edibles like vegetables, herbs and even fruit trees into ornamental beds where they are both decorative and delicious, we give new meaning to the term locavore. And, we’re feeding our families with the home-grown produce of our own back yards. Even hardscaping is part of the trend. Sean Larkin, natural stone and hardscaping manager for Pete Rose, Inc., sees more and more customers building patios, walkways and driveways out of permeable pavers, which are installed with porous joints and a gravel underlay. “Rainwater seeps through the joints into a collection system below, where it slowly permeates the earth” he explains. In addition to reducing rainwater runoff, the systems trap suspended solids and help to filter pollutants. “Permeable pavers are so effective when used consistently,” Larkin adds. “Municipalities in the watershed are beginning to require them.” Raingardens are a more elaborate application of the same principle. Rainwater from a downspout, driveway or sump pump is collected in a shallow depression that has been planted with deep rooted, native species, where it is filtered, absorbed by the plants or diverted into the water table. Capturing runoff before it reaches the sewer system prevents local flooding, protects the watershed and recharges local groundwater systems. Raingardens also help control mosquito populations by minimizing the standing water where the pests breed. Gardeners are enjoying the fruits of their newfound freedom on paved courtyards that open onto several rooms of the house. These are permanent living spaces that function as extensions of our indoor space. Furnished with outdoor fabrics for year-round comfort, they often feature fully furnished kitchens, fireplaces or fire pits and water features, all illuminated with specialized lighting. Beautiful RVA, a coalition of public and private agencies dedicated to urban greening in and around Richmond, provides a list of 122 native or naturalized plant species on its website, BeautifulRVA.org. The site also offers four simple, environmentally friendly residential landscape designs for incorporating raingardens, permeable pavers and native plants into your own backyard.
