The highlight of the season is Christmas lunch, but with so many people to cater for and mountains of food to prepare, it can seem overwhelming. The Champagne Information Bureau has come up with a useful guide to help make your party sparkle during the festive season. 1. Champagne is ready to drink as soon as it reaches the UK, so all the hard work is done for you. 2. Always chill Champagne for at least four hours before serving. If time does not allow, plunge into ice water for 30 minutes. 3. Champagne glasses should be washed in hot, clean water without washing up liquid and left to drain dry for the ultimate sparkle. 4. When opening a bottle of Champagne slant the bottle at a 45 degree angle, twist the bottle and slowly let the pressure help push the cork out. The Champagne should sigh as it leaves the bottle and not a drop will be spilt. 5. If the bubbles die down in your glass, change the shape of the glass – saucer shaped glasses disperse the bubbles in Champagne very quickly. Ideally use a long-stemmed, tulip shaped glass for the ultimate and long-lasting sparkle. 6. When pouring Champagne, hold the glass upright and pour a small quantity of the wine into the glass. Allow to settle and top the glass up – but no more than two-thirds full. 7. When holding a glass of Champagne, hold it by the stem to avoid warming the Champagne. 8. Between glasses, store the opened bottle of Champagne in an ice bucket for no more than three hours. 9. It is a myth that a silver spoon put in the top of a bottle of Champagne prevents it from losing its fizz. To make sure it keeps it sparkle, open, serve and drink immediately. 10. National Champion, Gastropub 2008 On Thursday 18th September The Morning Advertiser newspaper threw a glittering black tie dinner for a 1000 guests made up of the country’s leading companies in the entertainment and hospitality industry at The London Hilton, Park Lane hosting ‘The Great British Pub awards’. The event was presented by Hugh Denis of BBC and by Andrew Pring, editor of The Morning Advertiser. At this event The Plough Inn, Christleton, Chester won ‘The National Champion, Best Gastropub 2008’. They also picked up the award for ‘North West Champion, Best Pub 2008’. The judges commented at the awards ceremony that these were two men (Raph Boydell and Philip Harland)

who had taken their pub ‘that extra distance’, providing top class food, much of it home-grown or reared at the premises whilst sustaining a wonderful traditional pub atmosphere. Asked to comment at the end of the awards ceremony Raph and Phil said they were not only delighted to win such a prestigious award but to bring it back to Chester, remarking with glee that the small area of Christleton was being talked about as Britain’s No 1 gastropub and place to visit.

Plant a container for winter colour WITH Christmas on the horizon, Rachel Roberts-Jones, supervisor, at Grosvenor Garden Centre, has some advice on planting for winter colour. 1.First of all, choose a container to suit your garden. For example, if you are looking for winter colour for your decking, consider contemporary zinc, or traditional frost-proof terracotta for patios and lawned areas. 2.Line the base of the pot with recycled broken plant pots or stones, protecting the drainage hole so that it cannot be blocked by compost. 3.Fill the container with organic, multi-purpose compost, to ensure your plants receive all the nutrients they need and stay looking good throughout the winter. 4.Now comes the exciting part – selecting your plants.
