Weymouth Chippy Tackles Cancer Cancer is a disease that touches all of us whether it be family or friends or even our customers. The owners of a Weymouth fish and chip shop are set to host their biggest ever fundraiser to raise awareness of prostate cancer.
J
ohn and Karen Pearce, who own Alf’s Fish and Chip Shop in Lynch Road, are attempting to raise money on behalf of New-Man Prostate Cancer Support Group. The support group sponsors free prostate cancer test days for men.

Alf’s Fish and Chip Shop will hold a giant raffle with a £1,000 cash first prize. John said: “A lot of customers who come in, quite a few of them have had prostate cancer. “Ladies get scans every so often for breast cancer. Men don’t checked for prostate cancer. “Last year, New-Man Prostate Cancer Support paid for 577 men to be tested and found that 97 of them needed to be referred to their GP. “Of those, half of them were found to have prostate cancer.” Graham Smith, a member of New-Man Prostate Cancer Support Group, said money raised would go towards funding more free tests for men. “If it is not discovered and escalates into the rest of your body, the outcome is considerably bleaker.” Alf’s Fish and Chip Shop is well known in the community for having raised money for a variety of causes over the years. Mr Pearce said: “This is the biggest fundraiser we have ever done. “Since me and Karen have been here we have raised about £30,000 for charities. Anyone who would like to buy a raffle ticket or make a donation should visit Alf’s Fish and Chip Shop. The raffle will be drawn on Wednesday, June 1.

Fish & Dips! This year’s Comic Relief raised a staggering £80 million for charities home and abroad. Simpson’s of Cheltenham were one of the many fish and chip shops in the UK who joined in with the fun collecting money raising their profile and of course tempting extra customers into the shop. We spoke to owner James Richie on how they got involved.
W
e did the ‘bath of batter’ 4 years ago for Red Nose Day and it was a great success, we raised around £660 by fundraising and getting sponsorship for a few weeks beforehand. Since then the bath has been out the back (of the shop), we use it to grow parsley for our homemade tartare sauce. This year we were thinking what we could do for comic relief and sat down with our PR team to discuss, however it was only a week before the day, & we were short on time. We loved the idea of a bath of batter again and went on the hunt for a local 10

celeb to get in. We asked local MPs, well known journos and even jockeys! (It was the Cheltenham Festival after all). When Claire Carter said she was game for a dip we were so pleased! She’s well known in the area for having the lunchtime slot on BBC Radio Gloucestershire. We only had a few days to promote and all donations were collected on the night so to get £220 in just a few hours was great. Most of it was loose change from orders. On top of this we raised more via people sending donations directly to Comic Relief as they’d heard about it on the radio. As she’s a presenter we received plenty Chippy Chat & Fast Food Magazine • April 2015

of publicity about our efforts, we were on BBC Points West and even made the montage on the main Comic Relief show. She spoke about it every day before and even had a count down on the day, I also got to speak to her live on the show. While she was in the bath Twitter went crazy, I’ve never had so many notifications! During the days after we were mentioned on Claire’s show several times and many customers have been talking about it since. We were busy too although it’s difficult to know whether that was because it was Cheltenham Gold Cup day or if the bath 11

of batter brought in any extra trade. She certainly had a few fans there. After Claire left two members of staff, Keleigh and Stephan took their turns in the bath to carry on the show, they did a great job chatting to customers and getting money in the buckets. It was great to raise money for the charity, and to get our community involved. It helps to keep fish and chips in the spotlight too.

Fish Face!
More than 500 students, celebrities, politicians, bands and fish and chip businesses have shared their #fishface in support of sustainable fishing.
T
he campaign organisers at the MSC and WWF have hailed the fish-facers as ‘Ocean Heroes’ after its success for Earth Hour 2015. George Clark, #fishface organiser explained: “Ocean sustainability is an incredibly serious issue. Nearly a third of fish stocks are overfished or depleted but there are some fishermen and boats that are fishing sustainably and making a huge difference.” In the second week of the campaign, MSC UK team travelled to Durham University where The Whitby Fish and Chip Company had their new van for its first event. Over 300 portions of MSC certified fish and chips were served to hungry students who exchanged a #fishface selfie showing their support for sustainable fishing and healthy oceans for their free, sustainable lunch. Adrian Fusco, Owner of Quayside Fish & Chips, was very pleased to be involved with such the popular #fishface event; “It’s been really well received and great to see how much interest it’s created at the University of Durham…it’s fantastic! It’s really important to us to be MSC certified; it’s our third fish and chip shop to be certified and our new van is our 4th outlet. We see the future of our industry is using MSC certified fish.”

The Hewigo 4 step challenge! The successful fish and chip outlet has had to adapt to meet the challenge of the many take-away options. Equally, the range producer, must constantly improve its ranges to meet this ‘new’ demand. Features that were perhaps seen as the novelty option a few years ago are standard today.
A
t Hewigo we try to make your choice simple. Our ‘standard’ range is equipped with frying pans, baskets, chip box, display cabinets, motorised extraction systems, mechanical gas thermostat controls and manual bucket filtration. However there are 4 steps that outlets can take to upgrade their new range to increase the performance and set even greater standards in their shops.
1 High Efficiency
High Efficiency is a phrase that is used very loosely in the UK, unlike Holland where it has a specific meaning. Hewigo ranges operate at 93% efficiency - the highest level achievable - and are certified by the gold standard Gastec. If you talk to a range maker about high efficiency ask to see the certificate. We have made more high efficiency ranges in the UK than all the others combined.
2 Filtration
Here the latest technology is three-stage filtration: In addition to the standard coarse and fine crumb filters, the returning oil is now sucked under pressure through a third microfilter. The result is a refinement of the oil such that it retains its optimum performance up to three times longer. 14

3 Digital Control
The advanced electronics allow the oil to be heated gently to prolong frying quality and provide turbo-control when demand is high. This can be combined with touchscreen technology, at eye-level if required, for even more sensitive and visible control. It can also be linked to a frying management system to give both information and diagnosis.
4 Design
The co-ordination of style and function is a vital aspect of marketing an outlet. Hewigo ranges can be finished in brushed or polished stainless steel with convex, concave or traditional styled front panels. Bespoke or standard graphic logos can be added for effect. Lighting is by LED which offers endless combinations of colour and lighting sequences and also saves energy. 3D signage, often to match exterior signage, can be incorporated together with laser cut graphic backlit panels. Climb aboard This month we see the introduction of a new concept for fans of fish and chips and owners of fish and chip shops alike. By Austen Dack

O
ver two years ago the team at Isle of Ely Produce sat down to decide how they could help promote fish and chip shops in the UK. John and Oliver Boutwood were adamant that in order for us to sustain and eventually grow our market place we would need to work together. It was then we came up with the idea for a national platform for fish and chips. A place where consumers can learn about our national dish, somewhere we can link to other national companies, and a site where we can create a fish and chip collective as big as the national chains of fast food providers. Somewhere we can promote the admirable work done by the likes of the Potato Council with chip week, Seafish celebrating the nation’s best, or even highlight the wonderful NFFF Q award holders. The name of this platform – “Great British Chippy” encompassing Twitter, Facebook and as GreatBritishChippy.com. It will have a fresh crisp and funky design and it will capture the tradition of fish and chips seeking to tempt in Brits and some of the 32 million people who flood into the UK on holiday (most of whom know of our dish). Although the concept is launched today greatbritishchippy will be developed over the next few months with your help. We already have some great people who

want to be involved. We are seeking partners (trade) and owners to help us build and create this platform. We are looking to have regular meetings with a team of people who will decide who, what and where to target once we launch to the consumer. We understand that individual shops work well in their market places, but feel there is a gap to promote our cherished brand (inter)nationally. This team will represent the whole industry and we are looking for people to come forward and join us. e was visiting the area for the annual South Shields Lecture, organised by the town’s former MP and Foreign Secretary David Miliband, on Friday. It’s become tradition that Mr Miliband, who now resides in New York, brings guests to his favourite restaurant and in the past few years has introduced the likes of Hollywood A-lister Patrick Stewart, former Prime Minister Tony Blair and Britain’s Got Talent judge David Walliams to its charms. Owner Richard Ord said: “It’s absolutely fantastic that Mr Miliband still brings these huge names to South Shields and we feel extremely fortunate that he chooses to bring them to our restaurant. “Sting enjoyed fish and chips with mushy

Saturday Night Takeaway Friars Pride is celebrating its 40th anniversary this year.

rguably the business can trace its heritage back to 1898, where the company was a tallow business in the Peterborough area. The Briggs family purchased this business in 1960 and 15 years later, the family incorporated Friars Pride Ltd, the company we know today. The family business marked the occasion at FRY I.T. 2015, which took place at the BIC in Bournemouth on 1st March 2015. The celebrations continued with the unveiling of a new 168 pallet purpose built freezer at the Norwich Depot. This

hippy’s Fish and Drink, the newest member of the Ethan Stowell Restaurant family, opened in 2014. The 600-square-foot space is bright and inviting with a wood floor, light grey walls, and a large neon red “FISH” sign on the back wall. The space shares an exposed brick wall with Staple & Fancy and has a big chalkboard menu above the kitchen at the back of the space. Chippy’s Fish and Drink has a menu packed full of seaside classics. The soups, salads, and snacks section includes: a Dungeness Crab Louie ($16), an Oregon Bay Shrimp Louie ($13), Oyster Chowder ($10), Salmon Chowder ($12), Clam Chowder ($10), St. Jude’s Albacore Tuna Poke ($14), Dungeness Crab Cocktail ($16), Oregon Bay Shrimp

The network celebrates a passion for high quality, sustainable frozen-at-sea cod and haddock, and will drive footfall for its members through an integrated marketing campaign.

aunched at the Norwegian Ambassador’s Residence by UK Director Jack-Robert Møller, the programme has united chippies based on their excellent food, sustainability credentials, first-rate venues and commitment to serving great fish to their customers. The 2015 marketing campaign will promote the selected chippies through a high-profile, national programme of activity, involving retail activation and PR. It will also build supply chain transparency by connecting the diner to the fishermen and add value through shared expertise between its members. Union Norge, gives fish and chip lovers an instantly recognisable symbol to show

quality and environmental commitment from shop members in the network. Consumers will also be rewarded for returning to shops within the Norge Network, with gifts available for repeat purchases and the chance to win a fantastic trip to Norway. The activity follows on from the success of the NSC’s 99p promotion in May 2014, where 99 fish & chips shops around the country offered portions for 99p in the first campaign of its kind. 83 percent of shops involved experienced an increase in customers on the day and over seven million people in the UK were reached thanks to excellent media coverage. Cod is the UK’s favourite fish, and Norway’s cold, clear waters are home to the world’s largest and most abundant supply of this much loved fish. Super Spud! Scientists are developing a genetically modified “super spud” free of fungal diseases and other pest problems.

ield trials are expected to be announced in June after the general election because of the public sensitivity of the research, which is expected to be opposed by anti-GM campaigners. Researchers at the Sainsbury Laboratory, a government-funded research institute based in Norwich, have already conducted field tests on a GM potato with a single additional gene. They have now drawn up plans to insert up to eight genes into a commercially-popular variety of potato, such as Maris Piper or Desiree.

Three of the additional genes will be targeted against a fungal disease called late blight, which can devastate potato crops and costs UK farmers £60m a year in control measures, such as spraying with harmful pesticides up to 25 times a season. The previous field trial, which ended in 2012 after three years, tested a gene transferred into potatoes from wild Solanum plants, which are related to potatoes and tomatoes. The gene conferred limited resistance to late blight, which causes worldwide potato-crop losses of about £3.5bn a year. However, in order to prevent the fungus itself from developing resistance to the GM trait, it is now necessary to incorporate two further genes that will enable the GM crop to remain disease-resistant for many years to come, said Professor Jonathan Jones, the head of the project. “Deploying one gene is not enough because the pathogen tends to become resistant so we’re trying to deploy three different resistant genes at once that recognise different parts of the pathogen which would make it much harder for the pathogen to evolve,” Professor Jones said. “If we get funded, then we hope to begin planting next spring [in 2015],” he added. Public opposition to GM foods, especially in parts of Europe, could result in many years of wrangling over regulatory and safety issues before these new crops are seen in UK supermarkets or takeaways. “Even if there were no excessive regulatory barriers, it would take about eight to 10 years. It will be small-scale to start with because it takes time to bulk up,” Professor Jones said. Earlier field trials had to be protected by a 12ft-high fence and 24-hour security at a cost of £46,000, paid as a one-off supplement by the research council.
