Double-Digit Growth for Out-of-Home Eating
According to new research from Circana, the leading advisor on consumer complexity, the UK’s foodservice market is experiencing a resurgence. Consumer spending in restaurants, pubs, cafés and quick-service eateries returned to double-digit growth, with a rise of +10% year-on-year. This hunger for out-of-home (OOH) dining is not just a flash in the pan, as forecasts indicate a steady rise of +6% year-on-year in consumer spending throughout 2024, with visits also
expected to rise by almost +3%.
When asked about their financial situation over the next six months, 26% of consumers said they were optimistic and expected it to improve. With this increased confidence, nine out of ten consumers (91%) reported that dining out remains comfortably within their budget. Furthermore, almost onethird (32%) asserted that their restaurantgoing habits remained unchanged due to their stable finances, reflecting a +13%pp increase in this sentiment compared to last year. While 9% said they could no longer afford to eat out in bars and restaurants.
Seton Leung, Head of UK Foodservice, Circana, said: “Restaurant-goers are becoming smarter and adapting their spending habits in the eating-out industry. Although consumers are becoming more optimistic in their personal financial situations, the fact remains that the cost of eating out is a lot higher than it has been in the past, and one of the most popular money saving techniques is for consumers to seek out promotions.The alternative is that consumers will drop items from their order, or simply visit bars and restaurants less often.”
Amid rising dining costs, which averaged at +34% vs. 2019 prices, around 50% of consumers expressed that restaurant prices have become too much, with twothirds (66%) expecting prices to continue to increase. To curb spending, half of these consumers altered their dining habits, with 27% opting to dine out less frequently.
When dining out, many customers sought ways to save by looking for the best value opportunities, with 43% searching for promotions, 24% avoiding high-priced menu items, and 9% opting for less expensive alternatives. Customers were also being more careful with spending on extra items; 22% passed on starters, 15% on sides, and 24% on desserts. Additionally, 17% were scaling back on wine and other alcoholic beverages.

Pride of the South Coast
Brighton on the South Coast of England is only 50 miles from London. An ancient Town that is mentioned in the Domesday Book. The local team, The Seagulls (est.1901) is, of course, Brighton & Hove Albion. FA Cup Finalists in 1983.
It is a large and elegant City, home to the sumptuous Brighton Pavillion and was the most fashionable place in England during the reign of the Prince Regent. It is also full of interesting independent shops including no less than three Belgian Chips shops.
This highly successful chain of Chippies are notable for using Belgian ‘Fresh Farm’ potatoes, cooked in FlavOil High Oleic Oil and served with a very original and interesting variety of toppings.
Unusually for a seaside town, Belgian Chips do not actually serve fish, they rely entirely on a very tempting array of toppings, including Blue cheese, Ranch, Tikka Masala, Coronation Mayo and many more. Hence the Belgian moniker.
When you are focussed on the chips, you need to get everything right! Great potatoes, great frying oil (owner, Awat Ahmed uses FlavOil High Oleic Frying Oil) and expert friers. The topping are highly imaginative and have proved a great success in the seaside town. The chips are crisp, fluffy and delicious with the toppings , it is no wonder the shops are buzzing.

BBQ (if you please) and Sweet Chili. Awat has also introduced spring rolls, popcorn chicken and mozzarella strips with a selection of unusual seasonings. Whatever he is doing, it seems to work! Awat runs three chippies in Brighton alone and they are doing great business as these pictures show.
Brighton is a great town, it absolutely buzzes and is a hoot at the weekend. Careful though, it has whopping seagulls and they’ll have your chips if you are not careful!

Jamie Russo, Winner of two National Awards uses Frymax
Jamie Russo was over the moon to have been crowned a double winner at the prestigious Fish and Chip Awards in London in February 2024.
After working in the industry for nine years, Jamie jumped at the chance of owning his very own fish and chip shop and bought the Redcloak Fishbar in Stonehaven. Preston based Fylde Fresh and Fabulous, has been voted as the world’s best Biogas operator at the recent World Biogas Association awards held in Birmingham, winning the award for Best Biogas Plant: Below 1mWe.
The company which grows over 1000 acres of potatoes and operates 2 vegetable processing sites in Leeds and Preston, use the peelings from their plant to feed their Biogas Plant to produce 800Ke/h of electric and heat sufficient to power the Preston site and around 600 homes.

Fylde Fresh and Fabulous have plans in place to construct a second Biogas plant at the Preston site which should be in operation for 2026. The biogas plant at Fylde Fresh & Fabulous ensures that the whole potato is utilised to provide both a food and an energy source.
2014 was the year that Fylde Fresh and Fabulous really stepped up its role in helping the environment by investing in a £2m on-site biogas plant, using the latest Anaerobic Digestion technology. The gas produced by the potato trimmings is
captured by feeding these biodegradable trimmings into a large digester tank. This, balanced with grass silage and animal manure, produces sufficient gas to generate up to 1000kw per hour of both thermal heat and electricity from a combined Heat & Power unit.
All generated heat is used in the offices, the farm site and in the Fylde Fresh and Fabulous factories. The electricity is just as effective, completely powering the potato factories, with any surplus passed on to the National Grid. The waste product from the AD is a natural fertiliser that is put back on our fields enriching the soil and negating the need for industrial fertilisers. Quite simply, the Fylde Fresh and Fabulous biogas plant is a totally integrated self-sufficient operation. It makes use of all bi-products from the primary process of taking potatoes from the field, to the point where they’re ready to be distributed to ready meal manufacturers, food services companies and chip shops around the UK

A Legacy of Flavour: Drywite’s Non-Brewed Condiment
When you think about traditional British Fish and Chips, the nostalgic scent of salt and vinegar immediately springs to mind. For decades, this beloved combination has been a staple of British culture; a comfort food that brings people together. Keep Britain Tidy calling for the new government to urgently commit to deposit return scheme
Keep Britain Tidy, supported by environmental organisations, manufacturers and retailers, has written to Prime Minister Sir Keir Starmer urging him to work with the rest of the UK governments on urgently bringing in a deposit return scheme (DRS) to protect the environment from littered drinks packaging and dramatically increase recycling rates.
It is a scheme which is conditionally backed by award winning chip shop The Real Food Café, in Tyndrum.
The signatories include major soft drinks producers Coca-Cola, PepsiCo and Suntory, the British Soft Drinks Association, a raft of environmental organisations including WWF, Surfers Against Sewage and the Marine Conservation Society.
Research from circular economy nonprofit Reloop shows that currently more than 20 million drinks containers are incinerated, sent to landfill or littered each day. Keep Britain Tidy’s research shows more than 75% of litter by volume is the result of drinks consumption with more than eight billion containers wasted every year.
The previous government set a target of reaching net zero by 2050 - a target that is supported by 72% of the public – but the charity believes this will require stagnant recycling rates to increase significantly.
Keep Britain Tidy says the most effective way of achieving this ambition is through the introduction of a DRS, which will provide the infrastructure to help significantly increase recycling rates at no cost to the taxpayer.

Allison Ogden-Newton OBE said: “The environmental case of a DRS is clear.
The foundations are laid for the policy and our new government has a fantastic opportunity to bring this to fruition. Every day, more than 20 million drinks containers are ‘lost from the loop’ - either sent to landfill, incinerated or littered.
“Our message to Sir Keir is clear; the environment cannot wait another day.
“We believe the economic case for this industry-funded scheme is clear toothe cost for establishing and running the scheme will be met by drinks producers, not the taxpayer, and will eventually create up to 4,000 green jobs in the collection and sorting of materials.
“A deposit return scheme will provide the high-quality recycling needed to help the UK move towards a long-overdue circular economy for drinks packaging.”
The government estimates that deposits will drive down littering of these items by 85%, removing them from the environment and returning them to producers to make new products.
Previous polling carried out by YouGov on behalf of Keep Britain Tidy showed that two-thirds of the public support the introduction of a DRS scheme.
Sarah Heward from the Real Food Café said: “We organise regular litter picking around Tyndrum. Much of the many tonnes of little we collect is from drinks packaging tossed out of car windows and the introduction of such a scheme in the UK could be fantastic, but the devil is in the detail and the execution of it including education is important.”
More than 40 countries have already successfully implemented a DRS with the best designed seeing return rates of up to 98% as a result.

Pete Ups the
Pete’s Fish & Chips has been bringing a taste of Great Britain to Southwest Florida since 2012.
Back then it was owned & ran by Pete Rushton and his wife Dianne. Rushton is a proud Manc, a native of Manchester in Northern England, and he has the accent to prove it. Manchester lays claim to some of the best chip shops in the world. It’s a place where vowels tend to be bigger, where h’s tend to disappear, and where “think” becomes “fink.”
At first glance, the menu at the small, nofrills restaurant in a strip mall off Del Prado Boulevard in Cape Coral is exactly as you would expect.
Deep-fried beer-battered Icelandic fish (Atlantic cod) is served with chips (aka fries), on a roll, in a wrap, by itself in one or two pieces, or in a combo with shrimp, chicken or all of the above.
You’ll find shepherd’s pie and cheese & onion pasties, pork pies and sausage rolls in the freezer by the door.
But when Jim Jackman took over the fast-casual restaurant last July, he added an
unlikely item to the existing menu.
“A week after we opened I added the cheesesteaks,” said the New York native who owned Famous Philly Cheese Steaks in Denver for 23 years. “Now I have people coming in and saying someone told them about our cheesesteaks. That makes me happy.”
Why add cheesesteaks?
Jackman is more than confident in his subs.
“I honestly think by mid-season they will be right up there with the fish & chips in sales,” he said.
And he’s not the only one.
According to Jackman, Pete Rushton — yes, the Pete who opened the restaurant in 2012 with his wife Dianne and sold it in 2019 to Tony Marchese — said, “If you do them right, they’re going to smash.”
But why take over a fish & chips joint and add cheesesteaks instead of just opening a place that solely sells the Philly favourite?
“The location is great,” said Jackman who left the original décor in place and just added his logo to the door and his grill in the open kitchen. “It’s near the hospital, a school. There’s a lot of traffic going by.”

Philly cheesesteaks done your way
Customers coming by that location will find several of Jackman’s award-winning cheesesteaks at $9.29 for a regular and $12.29 for a large.
“Most go with ‘The Works,’” he said, referring to the cheesesteak served with onions, mushrooms, and a choice of green, jalapeno, hot sweet or pepperoncini peppers.
There are also plain cheesesteaks, and bacon, pepperoni, pepper, mushroom and pizza cheesesteaks.
All come with white American, provolone or Cheez Whiz and are served on Amoroso’s rolls Jackman has brought in from Philadelphia.
“I’m a cherry pepper guy,” said Jackman, who left Colorado and came to Cape Coral two years ago. “It gives it a little kick but not too much. I really recommend them.”
His favourite, which he eats a couple of times a week, with those cherry peppers, mushrooms, onion and provolone to “see the stretch of cheese.”
He’s also happy to customize cheesesteaks to meet diners’ requests.
Menu changes may be coming
Returning customers will also find all of the original Pete’s menu items available.
“I’ll keep that going at least until April or May and see how season goes,” Jackman said. “I can make 20 cheesesteaks in 12 minutes. The fish & chips are a little more labour intensive.”
He’s thinking about adding wings and sausage and peppers sometime down the road too.
But for now, cheesesteaks are the focus. “I honestly feel, and I’ve been saying this for 20 years, if I can get someone to try one just one time, they’ll be hooked,” Jackman said.

So finally, I got the chance to take a near 500-mile round trip to visit Graham Kennedy and the team at Bells Fish & Chips in Durham. As sponsors of the Field to Frier National Fish & Chip Award Isle of Ely Produce and Agrico variety Babylon were delighted to crown them as our chip champion earlier this year!

Iset off from Ely to Durham early one morning looking forward fervently to my train ride on the London to Edinburgh main railway line. Home to a UNESCO World Heritage site, Durham boasts heritage, beauty and convenience. On arrival you are greeted by its magnificent 12th century cathedral.
I soon arrived at one of Bells Fish & Chip Shop’s four outlets just outside of Durham. It is a large unit which Graham bought thinking it would make a good location for a chip shop and restaurant. He had to wait for change of use (from a car sales garage), a move that has since transformed the whole area into a retail sales destination, now crucial to footfall of the shop. Once inside it is immediately
clear they have a vision—one rooted in community, family, authenticity and a commitment to doing things right— and that’s why they have become the award-winning restaurant you see today. Whether it’s their relationship with local suppliers, widespread community work, or treatment of employees, they’ve always upheld the values that fuel their success.
I was joined on the tour by Oliver and John Boutwood, directors of Isle of Ely Produce who sponsor the Field to Frier award which Bells won. We were also representing Babylon (Agrico) cosponsors of the award.
Before trying the fish and chips we were taken on a behind the scenes tour of the building. On entering employees check in via a facial recognition system giving Graham a real-time visibility of staff whereabouts crucial with over 100 staff on call at any given time.
The potato store area was impeccable, all areas are temperature controlled and have airflow systems and air conditioning. There were two lots of peelers & chippers on hand,
ready for busy periods and in case of breakdown. Graham said “I see the chip preparer as one of the most important jobs in the building. Everyone buys a portion of chips, so they need to be consistently good. Many shops use a junior for this job, and it could lead to a drop in quality and effect sales. I would rather over rumble slightly which gives us a better-quality cut.” Graham and his team were very knowledgeable about chipping varieties, storage, preparation and of course the frying of potatoes, and this went a long way into him winning field to frier. All other areas were very clean, the shop unit flowed well, which was a result of Graham’s meticulous planning for the site. The shop is well laid out for Gluten Free meals. With separate areas and staff in charge there is no chance of cross contamination leaving the ample Florigo range to deliver perfect fish and chips for the nonCoeliacs! This is exactly what they did as our party were all treated to delicious fish and chips (mine with baked beans). The superb Norwegian haddock was from the vessel Geir and the Sagitta potatoes via G Cracknell
A highlight in the restaurant is the service hatch. It is one half of a traditional cool blue ice cream van, cleverly cut and placed over the pass.

I also revisited the Seaham branch too. As previously reviewed in September 2023 Chippy Chat, the Seaham Bells Fish and Chip Shop is simply incredible. Based on the local Seaham Pits, it has a mining theme, with some amazing prints from that era and it even has its very own coal mine shaft and coal train!
At Bells they constantly work to offer first class fish & chips in a first-class environment. Their restaurants are designed by Philip Watts Design, using high class innovative materials and concepts which are in the main thought out by Graham himself. Nothing - relating either to the food they source, prepare and serve - or the fittings and fixtures in their premises, is too much trouble for their customers.

It is the culmination of their ‘Field to Frier’ platform, which and also this year includes the story of the potato seed too. The day although dedicated to the potato in recent years has taken on the mantle of being a showcase for what’s also best practice in the industry. According to FASFA, the best method to educate and inform people about frozen at sea fillets is to see the process firsthand and meet the individuals behind the scenes. For many years, the fish and chip industry has been graciously invited to Norway and, more recently, Iceland & The Faroes to do precisely that, which is a terrific experience for the National Fish and Chip Awards winners and a huge highlight.
However, when I took over as Executive Director of FASFA and met with CEO of UK Fisheries Jane Sandell, they identified a market gap - there was still a large audience in the UK missing out, and here we have the Kirkella from UK Fisheries, situated in Hull. The rest is history; each time the Kirkella returns from the far Northern Arctic waters after 6-10 weeks at sea, Julie schedules days with the Kirkella team, ex-skipper Charlie and side kick Alfie gladly come out of retirement, and Kirkella tours are extremely popular. The Women’s Institute, fish and chip shop owners, media, seafood processors and distributors, and charitable organisations have all benefited from these visits.

The visits can last a couple of hours as visitors are led around the entire 81m vessel, taking in everything on board the modern trawler, including crew cabins, engine rooms, processing deck, and cold stores. Following that, Dylan or Danny, the resident chefs, make a delicious fish and chip lunch in the galley. With a team of experts on hand, various concerns and discussions are addressed, including quota information, catch care, consumption promotion, and recruitment of young people into the seafood sector.
