1) How long have you been running Krispies and tell us a little about your development? We have been running Krispies for 16 years. Over this time we have altered, adapted and adjusted to reflect the changing nature of our business. We have listened to our customers, learned from our colleagues in the industry and worked with our team to fine tune our product and our menu to really focus on our key successes and make the very best food we can. 2) What made you enter the ‘From Field to Frier’ award (National Fish and Chip Awards) and what processes helped you win? We have felt for some time that the attention we paid to our potatoes and our chip making process was special and what better of finding out if that was true than by being judged against your peers? We also felt this award was special because

it champions the unrecognised element of Fish & Chips. We believe that investing time and money in our application form to ensure it clearly and professionally laid out our knowledge and understanding of potatoes and frying chips was a key factor in our success. 3) How did you feel in the room at the awards on the day before and after winning? We were really nervous, more nervous than we’ve ever been. We never go into things expecting to win but that didn’t stop us really wanting to win! What was very interesting is how different it felt being a finalist (we have never been shortlisted before) and how amazing it was having the recognition from the great and the good in the industry. 4) Do you realise that two out of the last four winners of field to frier have gone on to win the independent prize the

But whatever happens we will still strive to make the very best Fish & Chips as long as we continue in this business. 5) How to you hope to capitlalise on the award win? Winning the From Field to Frier awards is not just about the day and the trophy it is about the whole year. People love chips and we wanted to take the opportunity to raise the profile of chips so we have lots of things planned to promote chips to consumers and the industry alike. Amongst the activities planned we will be appeared on the Isle of Ely stand at the Fry It Exhibition in Exeter in March, celebrating our win with our customers in April and launching a new marketing campaign to promote our chips in June. We will be proud to be ambassadors of potatoes and great chips for the whole of 2017. 6) Part of the prize was to present at the Isle of Ely Produce/Chippy Chat open day on September 17th are you looking

forward to doing this? Insurance of Champions Kingfisher Fish and Chips in Plymouth, Devon, the recently crowned No1 takeaway in Britain is the latest chippy to realise the benefits of taking out an insurance policy with the industry specialist, Wrapped
K
ingfisher Fish & Chips is almost unrecognisable from the business that Craig Maw and Nikki Mutton bought four years ago. Switching things up a gear from the minute the pair took over, they moved from pre-prepared chips to chipping and peeling their own potatoes, carried out a full refurbishment of the premises, installed a five pan high efficiency Kiremko frying range and put sustainability at the heart of the business. Wanting to protect the thriving business he and Nikki have built up, Craig recently started to question his insurance policy after speaking to a number of friers in the trade whose claims were not paid out due to inadequate or inappropriate cover. Craig comments: “Like most fish and chip shops, you just make the assumption that if there’s an incident, you’re covered. It wasn’t until we realised other shops had had fires and they later found out they weren’t covered that I sat up and started to take notice of the small print.” Aware that more top operators in the industry were turning to Wrapped for cover, an insurance policy which is specifically designed for fish and chip shops around its working practices, Craig looked into the policy and felt it was right for his business, working for him rather than against him. Wrapped also not only understood Craig’s business, but it also took note of the working
practices at Kingfisher and offered substantial discounts for demonstrating good practice, holding a 5 star Food Hygiene Rating for example as well as the NFFF Quality Award.

Craig was able to secure a further discount with the admission that as of January his existing range and a new three pan range will both be fitted with ANSUL fire suppression systems. Craig adds: “At busy times, we’re maxed out on our existing five pan range, so we’ve ordered another Kiremko three pan to increase capacity and future-proof ourselves. Both will be fitted with ANSUL fire suppression systems as it gives us added reassurance. It’s always on the back of your mind that anything mechanical can still fail. If there is a fire in one of the pans, the fire suppression system will extinguish it with immediate effect. I heard a fact recently that 80% of business that suffer a serious fire either never re-open or they close within 18 months. With this system, there’s a 48 hour turnaround before we can use that pan again, which is pretty good because it’s not going to put us out of business.” Also fundamental to Craig’s decision to go with Wrapped was knowing that the cover he was purchasing is open to improvements and that, over time, it would become even more tailored to the sector than it already is. He adds: “The fish and chip industry is evolving, it’s getting better and more stringent, and it’s important that insurance companies evolve and move at the same time. A policy that was suitable six years ago may not be relevant now because things are changing. “I feel extremely confident in the fact that we are more covered and better covered now, without a shadow of a doubt.”

C
atch Fish & Chips in Giffnock certainly don’t mess about when it comes to doing the business. The Celino family started the business a couple of years ago after 25 years in Italian restaurants. They still run the successful restaurant chain along with the new chain of Catch Fish & Chip shops which are building up very nicely, hardly surprising when they serve up fish and chips the way they do. Catch originally turned to KFE to install a range into the first site in Giffnock. Very soon they opened site two at Netherlee.

Netherlee opened recently with the Kiremko range from the Giffnock site, the 2 year old Kiremko 3 pan quirky wall range was moved to the new site as Catch in Giffnock’s business had developed so quickly it was already in need for a larger Kiremko range. Giffnock ordered a new Kiremko 4 Pan Wall range which includes the new 35kw flat bottom chip pans and High Efficiency flat bottom fish pans. Both sites are looking amazing with the powder coated white wall ranges. The Celinos were delighted last year when they were judged the best Fish and Chip Restaurant in Scotland by Seafish in the National Fish & Chip Awards. Also important to the growth of the business is reinvesting back in to it, and over the years Robert’s reinvented the colour scheme, changed the shopfront and designed its own marketable brand complete with a new logo and website.

As Mindy Singh whose family own the Queens chain says “It’s a godsend to have a company that doesn’t say no” Queens at Ibstock is the first customer to fit the new ‘Diamond’ front panels recently developed by Hewigo. “The new panels sharply reflect the colours coming down from the LED lighting to produce a stunning effect,” adds Mindy Singh. Equally stunning is a glass inlay into the counter top of a new range at Merchants, Redditch. The “shattered” glass that looks like sparkling crystal is lit from below by programmable LED. “The effect is so different from anything that I’ve seen before,” says Merchants Michael Jordon. “It also gives a warm feel to the top of the counter which customers have all commented on,” adds Jason Bate of Hewigo who designed the top. This range is also fitted with a stylish sloping front and ‘Diamond’ panels Over at Zan Fish in Derby where Nickos Zannetou now has six outlets, Hewigo has made it easier for Zan Fish to increase production at its Littleover shop. Such was the layout of the take-away/restaurant that it was not possible to increase the size of the new range to give 5 pans rather than 4. Through clever design Hewigo was able to manufacture a 4-pan range of virtually the same floor space but with larger pans. Coupled with Hewigo’s advanced high efficiency burners this produced a significant increase in cooking capacity. Atlantis at Quinton is another outlet to benefit from the Hewigo touch. It has an adjoining restaurant area and is fitted out in a way that does not in any way resemble the ‘usual’ fish and chip outlet. Nowhere to be seen are stainless steel front panels but instead blue herringbone style tiling. Wood finishing has been used including a wooden inlay into the top of the counter. When you add these developments to the fact that Hewigo is investing in excess of £200,000 into a dedicated service and maintenance unit including two new Service Engineers and a Service Administrator then you have an very attractive package “This will reduce downtime and ensure customers continue to get the support they need and demand ” adds Phillip Purkiss.

‘Out with the old, in with the new, for the colours are a-changing!’ Here at J.J. Blackburn and Co. we take pride in our flexibility and working closely with our customer’s specific requests.
O
ne of our most recent installations has been at ‘Fry Days’ Fish and Chip Shop, Frome Road, Trowbridge owned by Mr. Manuel Brazao and his sister Susie. Mr. Brazao has been in the fish frying trade for many years and in fact he gained his experience in the early days from working on a ‘BLACKBURN’ frying range manufactured and supplied by my father. We were very pleased to renew our acquaintance when he approached us to supply a new frying range for his own premises. Naturally the modern ‘BLACKBURN’ frying range is quite different from that original, traditional type Mr. Brazao first used but the company itself, which is still family owned and run, remains faithful to our core beliefs of quality, service and reliability. Apart from the usual requirement of manufacturing a fish frying range to fit the dimensions of the premises, and here Mr. Brazao needed a 3 – pan, 1 – chip box, gas heated counter range, several variations to a standard ‘BLACKBURN’ counter range were stipulated. Firstly, rather than having 3 standard size fish racks two larger cabinets were called for – NO PROBLEM.

Secondly, the shop name – ‘FRY DAYS’ was to be incorporated in the front design. As the panels were to be especially made with alternative vertical shiny and brush finish stainless steel stripes the centre panel was thus designed to be mainly brush finish stainless steel with the shop name engraved vertically on polished stainless steel. The overall result is a finely balanced appearance whilst accentuating the motif. – NO PROBLEM. Thirdly, an illuminated front was requested, although not standard blue lights. Could we do mood changing lights? Of course we can.... J.J. Blackburn & Co. has incorporated lights which can change colour, stay on a preferred single colour, (perhaps each day could have its own colour?) alongside other numerous options. In other words – the question is answered – NO PROBLEM. It is very pleasing to be able to accommodate our customer’s various requests and look forward to our next challenges!!!!!!!!!!

ere at Henry Nuttall we are at the forefront of High Efficiency Technology. We are constantly developing our Frying ranges to make sure our valued customers have the best possible Equipment and most energy saving solutions in their Fish and Chip shops. Q: What is it that improves the efficiency on your ranges? A: The efficiency is down to the burner and our digital control. The burner is a blown air style in comparison to jet/tube burners of the traditional ranges. This ensures a controlled heat transfer lowering gas bills. This consistent heat also provides a much longer oil life, due to the heating of the oil being consistent throughout the pan along with a less aggressive fashion. However, this is not less powerful as some people have concerns, this is actually much more powerful due to the high efficiency. The Henry Nuttall controls also work as a computers themselves, adjusting the burner to keep temperature from the basis of volume of product in the pan. For example, with a basket full of product in the pan, the control will increase the power to ensure that temperature quickly recovers and remains. This would be vice versa when the product leaves the pans, decreasing the power to remain at the temperature set. This auto – adjusting is what saves the gas, as well as being helpful in producing a consistent product. Mark Bennett of Bennett’s on the Waterfront in Weymouth, a very busy shop all year round, with large seasonal highs, changed to an High efficiency range ECO range from a traditional Henry Nuttall in Jan 2016. Mark commented: “The recovery time is fantastic and that’s going to have a huge benefit in the summer because within half an hour of opening we have a full restaurant and a queue already forming at the takeaway. With the old range, the temperature would drop and it would be three to four minutes before it would come back up. Now it’s almost instant and you can start cooking straight away.” Q: How can using a Eco Frying Range save you money? Case Study: Downey’s Fish and Chips Downey’s was established in 2011, when the family opened their first shop in Seaham. The family-run business has expanded as a result of its success and now occupies more sites along the coastal seafront, with a second shop in Seaham and one in Roker, Sunderland. his year’s shortlisted contenders were competing for prizes in 15 categories from Best Kebab Van to Best Newcomer and Best Fine Dining ahead of the fifth annual awards ceremony. Members of the public were invited to nominate their favourite kebab shops. These were whittled down to a shortlist based on the number of public votes received with bonus points for nominations from MPs. The winners were crowned after a final round of judging by the British Kebab Awards judges including Shadow Economic Secretary Jonathan Reynolds and fellow MP Nadhim Zahawi. The number of #BritishKebabAwards tweets of support that a contender got was also considered. The British Kebab Awards was established by the Centre for Turkey Studies (CEFTUS) and its founder Ibrahim Dogus in 2013. It is an important day for suppliers too, as much of the day will be spent exchanging ideas from across the industry, and attendees are given key time to talk to sponsors/exhibitors on the day. Already we have a great line up of speakers pencilled in including National Fish and Chip Independent Takeaway winners Kingfisher, Papas Fish and Chip TV Stars Dino and George (and hopefully Sid too), and Field to Frier winners Krispies plus Middleton Foods. Blazing Malachy Mallon, owner of the award-winning Dolphin Takeaway, Co Tyrone is aiming to net £15,000 for the Fishermen’s Mission by setting himself an epic charity cycle challenge - and he’s calling for the whole Fish & Chip shop industry to give their support.

alachy’s aptly named ‘Fish, Chips & Bicycle Clips’ UK Cycle Challenge is now officially launched and this summer he will become the first person ever to cycle to all the UK Top 10 Fish & Chip shops. He aims to cover the 1500 mile route in less than three weeks and hopes to raise £10 pounds for every mile cycled. The 51 year old owner of Northern Ireland’s Best Fish & Chip Shop is no stranger to challenges, having scooped the NI Regional Winner title in the Seafish National Fish & Chip Awards for the past two years running. As one of the UK Top 10 shops, he is now using his success to raise awareness and funds for the Fishermen’s Mission as well as supporting the Fish & Chip shop industry. Speaking at the recent cycle launch, Mallon said, “I’m passionate about cycling, about the fish & chips industry and about helping support our brave, hardworking fishermen – without them there’d be no Fish & Chips. Fishing is the most dangerous peacetime occupation in the UK and fishermen need our support 24 hours a day, every day of the year, that’s why I’m cycling for the Fishermen’s Mission. “It will be a tough challenge with plenty of hilly terrain, busy roads and unpredictable weather but I’m up for it and I’m very excited to see my friends at the Top 10 shops again. I’m asking everyone in the industry to rally together and give their support in whatever way they can to help me reach the £15k fundraising target – it’s an ambitious target but I believe it can be done.” Malachy added, “Seafish UK, most of the Top 10 shops and several other key industry players have already expressed their support and I’m confident there will many more in the coming weeks. I’m humbled by the goodwill and encouragement I

When the Boat Flounder’s Chowder House - Florida
T

As you approach the building, you will notice M/V FLOUNDER…55’ length, 6’ draft, and 20’ beam, 30 tons net weight; built by D. C. Beaux Shipbuilders, Meraux, Louisiana and commissioned in Bayou La Batre, Alabama in 1946. Captain Frank Flounder and later his sons, Fred, Floyd and Felix, shrimped this vessel from Key West, Florida to Tampico, Mexico thru calm seas, tropical storms and fierce hurricanes until she was retired in 1998. This grand old shrimp boat is complete with nets, sleds, mast and rigging and is ready to go back to sea at any time. The Marlin Bar showcases the huge 980lb, blue marlin, a USGFA World Record catch by Warren Culbertson, a noted Gulf

One day we Googled it, found it on the map and headed for the beach. They don’t seem to need to advertise. Even if there is a parking spot in the Chippy Chat & Fast Food Magazine • April 2017

parking lot (not a given) you are likely to have to wait. Even on a weekday, when you think no one else will be there. And what a very cool place. The place looks beachy, there are usually people sitting out front, waiting, and you can see this huge boat, The Flounder: Now that the temperatures have dropped about ten degrees, the entire restaurant is open, and it is heavenly. If it gets too hot or too cold, there are garagedoor-like barriers against the elements, but for most of the year, Flounders can stay open to the sea breezes. Prices are reasonable, portions are big, service is quick and friendly without being overly intrusive. There are volleyball courts, a landing and a large area for children to play in. We’ve seen a lot of birthday parties at Flounders; children’s and grown ups. They are owned by the same group that owns McGuires and Crabs: We Got ‘Em. Each of those restaurants has a unique menu, and we really like that each has such GOOD food.
So for our first visit, there are two MUST-ORDERS; to test a Florida seafood restaurant, you have to try their Seafood chowder and you have to test their hush puppies. Both were spectacular and memorable: They were so good, in fact, that less than a week later, we went back for more. We also had appetizers for lunch; I had the Baked Parmesan Oysters and Adventure Man had the Fish Tacos/ Nachos. Both were SO good. Worth a trip across the bridge, which only takes maybe 20 minutes from our house. The next time we went back, we also tried the Fish and Chips – very good, served hot and crisp, lightly battered, tasty fish – and a slice of the Key Lime Pie, which was also very good, although not quite as tart as we like it.

Last year seven out of the top ten fish and chip shops in the UK chose to attend with many other previous winners in attendance too. Semi-Final Plaice! A top UK chip shop has been celebrating the success of one of its regulars in the smash ITV primetime show The Voice.
J
ason Jones an RAC worker, from Brownhills made it all the way to the semi finals, and the owner is convinced that it is his regular fish supper that has helped him achieve this success. Andrew Mario from Mario’s Other Plaice in Brownhills said “Jason has been coming in here for a long time. Lots of our customers and staff were so excited to see him on TV every week and do so well. We look forward to seeing him back in the shop soon and eating his favourite fish and chips again.” Jason was chosen to go through to the semis by his coach Will.I.Am, he had impressed the Black Eyed Peas star with his rendition of I Feel It Coming by The Weekend. The 31-year-old singer was pinching himself to be coached by the star and also to go and visit the cast of Coronation Street too. Jason said reaching the semi-finals still felt ‘unreal’, adding: “Six months ago I was just working in a call centre now I was just one step away from the final of The Voice. Pride of Britain It was the turn of Friars Pride to showcase some of the best our industry has to offer recently. The destination for the final Q Partnership show of the fish and chip season was Exeter.
A
s ever the Isle of Ely Produce and Chippy Chat teams were present to gauge reaction and meet hundreds of shops from across the UK. The evening before key suppliers and shops were invited to meet up and enjoy a meal and a few drinks ahead of the big day itself. As usual we enjoyed ourselves to the maximum and met some fantastic people. On Sunday morning we made our way across to the Exeter Showground. After a quick set up we awaited the crowds. We were not to be disappointed. All day we

were encouraged by a steady stream of shop owners and their families who were looking for the latest trends and offers from the participating exhibitors. They were also given some excellent seminars from amongst others George Papamadou (Drywite Young Frier of the Year 2017) and Nikki Hawkins form Seafish. All to soon It was time to head home. Thanks to the whole Friars Pride team especially Louise and Charlotte for looking after us, and hear’s to Fry-It 2018!

he Rothley Fisheries and adjacent Time and Plaice Restaurant has been run by husband and wife Mandy and Jim Burke for the past 27 years. It is now time after all those years for Jim and Mandy to put their feet up and put this fantastic fish and chip shop up for sale. They moved in on April 1st 1990 with their two very young children 2 and 4. The accommodation suited as it has 3 bedrooms on suite a separate kitchen very large double lounge and a very big garden for the children to play. They also have their own private car park with room for 8 cars. The property is located in the heart of the village of Rothley Leicestershire. Bradgate Park is very close by which is a big tourist attraction and nice place to go for walks receives nearly 1 million visitors a year another great driver of trade for us. “ The current trading hours are: Wednesday to Saturday, 12 noon to 2pm Tuesday to Saturday, 5pm to 9pm The shop is closed on Sunday and Monday. Jim said “We are currently taking around £10,000 a week on these reduced hours. There is scope to increase trading hours and ultimately take more money too.” The shop has 12 loyal members of staff many of whom have been working there for over 20 years. The recent food hygiene rating gave the restaurant a very healthy score of 5 (out of 5). The chip shop benefits from recently having been fully refurbished and provides restaurant and take-away areas with additional ancillary preparation areas, kitchen, stores, potato prep area and more. The 3 pan range is less than 12 months old with the couple using rapeseed oil and Middleton GF batter too. The adjoining licensed fish and chip restaurant provides approximately 70 covers. The restaurant has both male and female customer toilets and its own entrance too. Rothley itself only has one fish and chip shop and has been growing all the time. Many of their regular customers come from far and wide too. On the first floor there is a three bedroom flat providing owner’s accommodation. The current format provides large front to back living room, dining area (current owners use the downstairs kitchen), family bathroom, three bedrooms including one en-suite shower room and WC.
