Bristol Fashion the beers here, there is cider from Orchard Pig, a few carefully chosen wines and bottles of whisky which include the splendid Classic Laddie from the Bruichladdich distillery on Islay. Returning for lunch on Saturday, it was time to sample the food from Hook, who made a name for themselves as a simple fish and chip market stall in Dublin around the same time as Wild Beer were starting up, before opening a restaurant in London’s trendy Camden Town and now Bristol. Fish and chips here are far from traditional, the fish cooked in either crispy panko breadcrumbs (£10) or in a light tempura batter (£12), with the crisps salted with seaweed. Panko breadcrumbs originated in Japan and are lighter, crispier and larger than their European counterparts. At Wild Beer, you can choose the fish to come with four different sauces, tartar, chipotle, chimichurri or lemon cajun. While the panko had an acquired earthy taste, the other tempura option must have hardly been dipped in the batter and was all the better for it, with meaty flakes in turn able to be dipped into a lively piri piri and lime sauce. It’s not just fish and chips here either. A delicate ceviche (£6) saw a sea bream with Wild Beer ale added to the chilli, lemon juice and lime juice; with other highlights on the snacks menu gin-cured salmon; and the cheese board featuring cheese made in a dairy mere metres away from the Wild Beer brewery. hey will now battle it out as they vie for the Independent Fish and Chip Restaurant of the Year Award and aim to claim the title of ‘best fish and chip restaurant’ in the UK. To get to this stage and secure a place as a finalist, the restaurants have been appraised by industry experts across a wide variety of judging criteria including, responsible sourcing policies, menu diversification, restaurant facilities and appearance, staff training and development practices, and marketing and promotional activity. They have also received mystery shopping assessments to ascertain customer service levels and the quality of the fish and chips on offer.

Star of the East! A generous chippy is serving up fish suppers to homeless people at a city centre hostel.

E

ast Park Chippy, in Holderness Road, Hull, began giving out portions of fish, chips and mushy peas to homeless people at Dock House recently. It intends to continue providing free meals every Monday. East Park Chippy’s owner Matty Kinsley said he was spurred into action after reading in the local newspaper about homeless protesters camping in Queen’s Gardens. He said: “It’s something me and my wife have always wanted to do. We just saw in the paper about everyone sleeping in tents, and asked ourselves how we could help. “They are people. We all have our own problems and we felt like they deserve a good meal just like any one of us. “It’s just a small way we can give back to the community.” Mr Kinsley said his offer was graciously accepted by staff at Dock House. He said: “We want to do this every week. I

just rang them up to see if there was anything we could possibly do, and chose to come with fish, chips and peas to feed everyone here. “We hope it’s much better than a donation, because hopefully these people will have at least one meal they can look forward to each week.” Danny Allman, manager at Humbercare, welcomed Mr Kinsley’s offer with open arms. He said: “Matty said that it is something he wanted to do for the long term, which is fantastic. It will help get people through the cold months, as now is a tough time in the year and a warm, hearty meal will help hugely. “They’re never going to be able to afford anything like a full fish and chip meal, so this generosity will mean a lot to them. Rub a Dub Dub – Chip Manager Battered in a Tub! A chip shop manager from Bridlington has taken a dip in a bath full of batter to raise money for Children in Need and Chippy Chat played a starring role.

L

ucas Atkinson, manager at Audrey’s Fish and Chip Shop, spent four hours in the bath tub as the store raised cash for the charity. Other store staff were dressed up and out with collection buckets while Mr Atkinson lay in the batter outside the Queen Street chip shop. More than £300 was raised for the charity. Restaurant owner James Morrison commended his store manager for braving the cold in the bath tub. “It was my manager’s idea to do it. He was covered in batter, and sat in the tub from 12pm to 4pm. “We had collection buckets with him outside the store, and he’s been collecting sponsorship too. We were pleased that customers donated, as it’s a great cause he was doing it for. “Our other staff were out with him, dressed up, trying to spur him on and collect some money.” Mr Morrison said they used warm

We were planning how we could raise money for the charity, and he just came up with the idea. Three is the Magic Number!

The UK’s top three fledging fish and chip shops were announced recently by the 2017 National Fish & Chip Awards, organised by Seafish.

W

hittled down from an earlier top 10 shortlist, the three finalists Stargazy Fish Bar in Tetbury, Gloucestershire; Longsands Fish Kitchen in Tynemouth, Tyne and Wear; and North Beach Fish and Chips in Bridlington, East Yorkshire - will now ‘fry’ for glory in the race to bag the prestigious Best Newcomer Award in the ‘Oscars’ of the fish frying industry. To get to this stage and secure a place in the coveted final shortlist, businesses have been appraised across a variety of judging criteria including innovative approaches to running a new fish and chip shop, promotional activities, and approaches to sustainable and responsible sourcing. They also received mystery shopping assessments by industry experts, evaluating both product quality and customer service levels. Over the coming weeks the finalist shops will face further in-depth judging visits from an awards auditor, assessing both front and back-of-house operational aspects of the respective businesses. This final stage of competition judging will determine the overall winner of this award category that will be announced at the awards ceremony held in London in January 2017. Turning Japanese! My name is Grant and I work for Simpsons Fish and Chips, I was offered to go to Japan with my brother James to cook fish and chips in two of Japans largest British fairs as a reward for Simpsons triumph at the fish and chip awards. I was repeatedly warned about how busy it would be, 1000 portions a day I was told, some days will be more... at this point I was fairly sure that numbers were being exaggerated- I had already seen the set up of the fair from the year previous and saw how small the fryers were, so I had no problem in saying yes, whilst assuming that the numbers would be less.

he first week in Fukuoka was very enjoyable, the fair was very quiet when compared to Osaka, this gave me and James the opportunity to get to know the staff via google translate- they made us laugh and we very much enjoyed working with them at the fair. We went out during this week and tried a few traditional places and few restaurants that reminded us of home, okay it was an ITALIAN restaurant, but you can’t go wrong with a Pizza can you? Oh hold on, of course I managed to order the pizza with no cheese! I did look longingly at my brothers basic margherita and after assessing the menu once more I concluded that it didn’t mention a lack of cheese but it also didn’t say it had cheese so I called it a draw, we couldn’t help but laugh We were actually looked after very well by our agents, they took us out to try traditional Japanese food but did actually ask us on our preferences. So although we did have a few things we were sceptical about, overall we were catered for very well. But I’m just talking about simple things, like water.. we just wanted a bottle of water and it turned out to be something else a better example is

the croissant that wasn’t.., it was full of sweet potato and I still cant understand why.Then breakfast, there looked like there was a nice delicious pastry right next to the pancakes (I was overwhelmed to discover pancakes) anyway, these balls of joy turned out to be balls of octopus, they were closely followed by a mouthful of orange juice. But my favourite moment was whilst me and my brother were in Tokyo at the end of our time in Japan.., we went up the sky tree. The views were absolutely beautiful, as I mentioned at the beginning. However, I forgot my golden rule about trusting food. James suggested we have an ice cream, there was a couple of different ‘vinegars’ you could have on your ice cream or you could have plain. James was wise, but I took the gamble. I convinced myself that it couldn’t actually be vinegar on the ice cream, so I selected the blueberry vinegar whilst firmly crossing my fingers. Well needless to say really, of course it was the tangy taste

of vinegar all over my ice cream... all I’m trying to say is Japan is full of surprises. Osaka was so hard, the queues were huge and the hours felt even harder as the days went on. Everyone was able to leave their stands early, however we were cooking to order so we had to stay to literally the very end of the fair. we were staying so late I thought we were going to be left with the key to lock up the department store. We didn’t really manage to party so much this week, the hours were so long that we were literally either working or sleeping, the first few days in Osaka we went to Nara with a few of our new friends. This was really fun and

honestly I would do that again, I feel so lucky to of had the chance to see some of the things that I have. And we also went to Kyoto which was beautiful too, after all our hard work we went to Tokyo that I’ve briefly mentioned. Me and James made the most of this time and we really did pack a lot into the days we had. I would honestly recommend that should you get a chance to go to Japan then do, there’s plenty of things to do and the people are very pleasant. Customer service is obviously very important there, but the things you see, smell and taste are just so different and remarkable in more ways than one.

Family Tradition carried on at The Valley It takes all sorts to maintain a vibrant industry. This is no more clearly demonstrated than at The Valley Chippy, Atherton near Wigan where Chris Cartwright has recently completely refurbished his shop and taken delivery of a new Hewigo range.

W

ith so many ‘slick’ fast food outlets around it is refreshing to see that The Valley Chippy is a successful traditional shop in a terraced block serving the local customer. It is a lesson that a good product, recognising what your customers want and high levels of customer service, are still the key to success no matter how big your business or stiff the competition. Chris comes from a dynasty of fish and chip owners in the North of England. His uncle Phil has a number of shops and cousins Helen and Angela two in the Manchester area. All have an unswerving loyalty to Hewigo. “We needed to reorganise and refurbish the shop,” says Chris who has owned The Valley Chippy for seven years. “The old range had worked away for over 30 years but just couldn’t cope with busy periods especially Friday teatime when it’s manic. Naturally when it came to the new range I looked at others but eventually like the rest of the family I was convinced that Hewigo was the one. They could not have been more helpful.” The range is a 3-pan counter finished in brushed stainless steel with LED lighting. “It looks good and serves us well,” adds Chris. How important is Business Interruption Insurance? Business interruption insurance is often overlooked because many business owners believe that other insurance policies such as buildings and contents policies will take care of any losses suffered as a result of an event such as fires and floods. Although buildings and contents policies will usually cover the initial damage to your property, they do not make allowance for any consequential financial losses your business will sustain in what can often be a long term interruption in your trading. KFE – from Kiremko Range to Golf Range! The annual KFE Golf Trip took place at the end of October with a trip to Liverpool. 16 “golfers” travelled from all over Europe, well as far afield as London, St Andrews and various towns in Holland! Teams representing KFE England, Scotland, CF Capital and the Netherlands took to the fairways on day 1 at Southport and Ainslie Golf Club in a pair’s format with England taking a 2 point lead into day two.

ay two was at The Royal Liverpool Hoylake and the Open course from 2014 when Rory triumphed was in fantastic condition. A great competition ensued which went to the final holes when the team from “Scotland and any associated area” pinched the trophy from England! The only consolation was

that Paul “the Machine” Williams played the round of his life and ran off with the singles prize which was just as well because he was either wearing or playing with all the prizes. As usual there was never a dull moment just lots of good banter and good food and good friends. Great to see everyone from Holland and not forgetting both teams from south of the border. he certification comes at an exciting time for Miller’s, they’ve just been announced as a Fish and Chip Shop of the Year Award finalist 2017 and regional winners. Miller’s has been the only fish & chip shop in Haxby for the past 51 years but with a homecooked, gluten-free and Halal menu, as well as its popular “Bistro Nights” on Thursdays, the business has certainly moved with the times. Nick explains what the news means to the shop, “We’ve been responsibly sourcing our fish for years now but we wanted to make it official with the MSC accreditation. We feel the time is right to make our customers more aware of the dangers of overfishing and the importance of sustainability.” First opened in 2009, Fish & Chips at 149 is managed by Cori Jackson and owned by John Hutchinson and Sue Gilbertson. The team pride themselves on using the best possible ingredients and also offer a gluten free menu. Cori explains what the news means to the restaurant, “Applying for MSC certification seemed the logical thing to do. We need to start looking after the seas now so we can all

We are very proud to be able to offer our Bridlington customers an MSC certified sustainable choice.” A family run business, Stotesbury’s Fish and Chips has been on the Isle of Wight for nearly 120 years and was taken over by owner, Meli Selak in 2001. The team pride themselves on serving excellent quality traditional fish and chips, as well as offering a menu that includes homemade sauces including curry, ketchup, tartar and garlic mayonnaise. Meli explains what the news means to the restaurant, “As well as offering great fish and chips, we’ve always taken environmental issues seriously too. All of our packaging – from bags and trays to pots and burger boxes – are biodegradable. Going for MSC certification seemed the obvious thing to do. Splashy Sea Lions The sea lions that camped out in PIER 39’s West Marina apparently have been an international sensation for more than 25 years. A few California sea lions began “hauling out” in PIER 39’s West Marina shortly after the 1989 San Francisco Loma Prieta earthquake. The boisterous barking pinnipeds started arriving in droves and took over KDock in January 1990. At first they numbered from 10-50, but due to a plentiful herring supply, the available dock space and protective environment,

o San Francisco the population soon grew to more than 300 within a couple of months.

Great Dining PIER 39 is known for serving up some of the freshest and most delicious seafood dishes. With 14 full-service restaurants, you can enjoy an array of global cuisines, as well as San Francisco classics like clam chowder in a sourdough bread bowl and fresh seafood. Paired with fine California wines and stunning views of the Golden Gate and Bay Bridges, Alcatraz Island and the San Francisco city skyline, you’re guaranteed to have an experience you won’t forget! Another great way to take in the atmosphere of the area is to eat at one of the many fish stalls available. There were many places offering fish and chips so I decided on the place which seemed the most like a traditional “chippy” and which had the most people queuing. The Crab Stand at the Pier (fish) Market fitted the bill perfectly. I was served a

large portion of chips which were good but the best was the fish. Three pieces of Atlantic cod wrapped in Anchor Steam beer battery (A.S. being the local San Fran ale). Very crisp, very tasty and all for under $9 (about £7) and all set in a great location facing Alcatraz and all that “The City by the Bay” has to offer. If in San Fran it’s worth a visit. Yes, there are many touristy offerings there such as tacky souvenirs and gift shops but there are some really good food places to eat too including Pier Market. Obituary

Freda Tweedale (née Smith) 9th December 1938 – 24th October 2016 Freda Tweedale (née Smith), who was founder and co-director of The Elite Fish & Chip Company, passed away peacefully on Monday 24th October.

B

orn in Ripponden, West Yorkshire to Fred and Maud Smith, Freda grew up in the village and nearby Halifax. She was married to David Edward Tweedale in 1959 at Thornfield Methodist Church in Greetland. Freda was an integral part of the Elite and started the company with her husband in 1972. After beginning in Huddersfield, West Yorkshire, the family firm subsequently moved to Lincolnshire, expanded to three restaurants and four takeaways and is now overseen by Freda’s son Adrian, his wife Donna and Freda’s granddaughter Rachel. Freda is survived by her husband David, three sons Adrian, Simon and Stuart, grandchildren David, Stephen, Daniel, Amy, Mark, Rachel, Lauren, Georgia and Charley and her two great grandchildren Dexter and Florence. Freda greatly enjoyed dancing with her husband David, taking part in competitions in ballroom, Latin and rock and roll styles across the country. Adrian said: “My mother was an inspiration and was an incredibly dedicated woman. We wouldn’t be where we are today as a company without her hard work. “She will be greatly missed by family and friends alike as well as those who got to know her through the trade and her work with the National Federation of Fish Friers.” Granddaughter Rachel said: “My grandmother was always front of house in our restaurants, talking to customers and getting to know the people in our local community. She set the standard for what we try to achieve in terms of customer service, always going above and beyond.”
