he wagon was carrying a substantial load of chipping potatoes, but unfortunately came off the highway at a bend in the road between Stretham and Chittering. A police spokesman said: “Thankfully the driver of vehicle has walked away uninjured and no other vehicles were involved. “The incident caused a considerable amount disruption to local traffic, but this being said we can all be grateful that - other than the vehicle itself - no other damage or injury has been caused” The A10 reopened after around six hours. The vehicle was carrying over 1,000 bags of potatoes & led to both lanes of the A10 at Stretham being closed. The police spokesman said: “It looked like the lorry has jack-knifed and is was partially in a field, blocking both lanes. “About 1,000 bags of potatoes had to be moved before the vehicle recovery took place. It is believed that the vehicle owner and other employees turned up to assist with moving the potatoes.”

MUSIC WAS MY FIRST LOVE! (but fish will be my last) By Austen Dack and Nick Miller

Tell us a little about the history of Millers? Millers is a fourth generation, family run fish and chip shop in Haxby. The shop is managed by myself, Nick Miller, and my father, David Miller. Fish and Chips has played such an important part in our family history, ever since my GreatGrandfather, Joe Miller opened his first shop during World War 2. I grew up in the shop and spent a lot of time here when I was younger – I was actually in a Seafish Training video that was filmed in our shop way back in the 90s! Nick, what were you doing in music? What made you change direction in your career? I spent a large amount of time travelling the world as a professional drummer. I played with a variety of live bands, spanning lots of genres and I’ve been lucky enough to be a part of some amazing world tours, theatre shows and even orchestras! After taking some time off, I found myself spending more and

more time in the shop. The more time I spent working at the shop with my Dad, the more I fell in love with it. Eventually, I was sitting in a studio in Nashville one day and realised I’d become so attached to the shop and my vision for it that I couldn’t think of anything else- it was time to go home. I’ve gone from playing in front of thousands of people on a Friday night to serving them fish and chips instead and I wouldn’t change a thing. How has Millers evolved particularly in the last year? We’ve made so many changes in the last year, from the type of batter we use and our serving procedures all the way to a complete shop renovation and the installation of a new Florigo range. My dad worked as a chef on a luxury cruise liner for a long time, so we came up with the idea of bistro nights: opening late once a week to offer an extended menu of seafood (all MSC certified!) to our customers. I’ve also introduced social media to the business. Nothing in terms

of digital and social marketing existed before I joined Dad in the shop, but now we’ve been able to spread the word of fish and chips far and wide thanks to the likes of Facebook, Twitter and Instagram! How was the awards process and are you entering again? The awards process was absolutely fantastic, exhilarating, exhausting and everything in between! I attended last year and, after experiencing it all for the first time, I just knew we had to enter. I was blown away by it all: the fantastic atmosphere, the friendliness of everyone there; just the spirit of everyone coming together to celebrate the industry we’re all so proud of. We just want to say thank you to Seafish for presenting us with such a great opportunity, because we’ve never looked back. This is the first time we’ve ever entered anything like this before, and it’s been such an amazing experience – not just for us, but for all of our staff and customers. The whole thing has been unforgettable and we can’t believe how much our community have got behind us throughout the year and all the way to the final. We’re delighted to have come third place and we’d urge anyone out there who hasn’t entered to stop thinking about it and get on it! What do you think of the wider fish and chip community as you get more involved? That’s probably the most powerful thing about the awards and the awards process as a whole – the camaraderie, good will and support of the industry for each other’s achievements. It’s easy to work away in your shop and only work with your suppliers but there is a whole industry out there that has a lot to be proud of. Kingfisher Take Top Spot at Fish and Chip Oscars

Kingfisher Fish and Chips in Plympton, Plymouth has been crowned the best fish and chip shop in the UK at the 2017 National Fish & Chip Awards, organised by Seafish.

he shop scooped the ultimate title - Independent Takeaway Fish and Chip Shop of the Year – at the awards ceremony held at the Park Plaza Westminster Bridge Hotel in London – an event widely regarded as the ‘Oscars’ of the fish frying industry. To secure the top spot, Kingfisher Fish and Chips had to progress through a rigorous, multi-stage judging process over a seven month period; encompassing several mystery shopping assessments and in-depth audits by industry experts, reviewing everything from responsible sourcing policies to menu diversification – and of course, customer service levels and the quality of fish and chips being served. The final stage of judging, held the day before the awards ceremony, put the shop’s presentation skills to the test as they faced a 14-strong specialist industry judging panel – ‘battering’ it out against the nine other regional* finalists in a ‘Dragon’s Den’ style pitch. Commenting on their award win after receiving the famous trophy from awards host, Nigel Barden, voice of food and drink on

BBC Radio 2, shop owners Nikki Mutton and Craig Maw said: “We are absolutely elated! o earn his spot at the top, George had to showcase his talents during a rigorous, multi-stage judging process; encompassing exam questionnaires and in-depth telephone interviews conducted by senior industry experts. He was subjected to further appraisal as he received a skills based assessment and underwent a personal interview during a comprehensive judging day at the National Federation of Fish Friers (NFFF) Training School in Leeds, West Yorkshire. George also received a mystery judging visit at his respective workplace to test his skills and knowledge whilst in his own working environment. Elise, 17, is the youngest ever contender for the Young Fish Frier of the Year award. Amazingly she completed the process at just 16, to gain second spot was incredible. James Houlston is no stranger to the award and is always consistently excellent at his job. Aged just 21 James should be proud of his achievements thus far. Andrew and Luke should also be very proud to have been recognised as outstanding young friers. These five are all names to look out for in our industry in the future. The Chips are Down for Mighty Imps! Lincoln City FC have recently become the nation’s second team after their exploits in this season’s FA Cup, and we think we have found out the secret behind their success By Austen Dack

Lesley said “We have always had a strong connection with the club, Chairman Bob Dorian has always been a regular customer- and came to cook fish and chips for the team during chip week in 2012. “The recent visit came about as Imps special management duo Danny and Nicky Cowley are regular customers Des was chatting to them about the previous club visit and invited the whole club to come for lunch again. We spoke to their dietician - the only condition for the menu was, no white bread! which only goes to show what a

Fintan Hits Sausage Jackpot! E

very brand and business likes to feel the love of its customers, and in a highly competitive world, all brands are working hard to stay relevant, competitive and top of their industry. In the food sector, this is possibly even more important to companies and manufacturers. That said, you can just imagine the smiles that were created at McWhinney’s a number of weeks ago, when the Irish Pork Sausages manufacturer was contacted out-of-the-blue by a famous chip shop in Northern Ireland, McNulty’s. When owner Brian McNulty received a letter complimenting his chip shops’ choice of pork sausages from 10 year old Fintan McIvor, he and the 119 year-old sausage manufacturer decided to reward this sausage fanatic. Fintan had written to McNulty’s praising the sausages that he regularly eats from their chip shop. The sausages were McWhinney’s Irish Pork Sausages, which the famous shop has used for many years. In his letter, Fintan described them as “succulent”, “full of flavour” and “yummy”, and declared that he simply refused to eat any other brand of sausage. As shop owner Brian McNulty explains. “Our sausages are made by McWhinney’s using only top quality pork. We have been using the same sausages for the past 30 years, thereby guaranteeing a consistent product to our customers.” In a gesture from both McWhinney’s and McNulty’s chip shop, young Fintan has already

The winners’ enclosure Henry Colbeck once again did the fish and chip industry proud at their recent What’s Cooking? 2017 exhibition. Held at Newcastle Racecourse this all-encompassing show provided a one stop shop of ideas for the Fish & Chip and Fast Food Market.

he weekend kicked off in style with a marvellous charity dinner for 200 plus guests. Lots of familiar faces tucked into their food and caught up with friends and colleagues. A few of us escaped into the fine city of Newcastle afterwards to sample the fantastic Geordie hospitality before tucking up ahead of the big day. Then onto the show itself. It was lovely to meet and chat to so many different people. The feedback we continue to receive from friers and suppliers at these events is still very encouraging, thanks for that. A special mention to Duncan Mclean, Jackie Pearson and the whole Colbeck team (Matthew thanks for your help) for your hard work and hospitality. Her Royal Fryness! Alison Blyth’s passion for food runs in her blood. She grew up surrounded by people who loved to cook, including her mother, a professional baker, and her brother, a trained chef.

B

lyth, who moved from England to the States in 1980, gained experience in Washington, D.C., restaurants. In 1988, she opened the popular La La Land in Rehoboth Beach, followed in 1997 by Yum Yum, a Pan-Asian bistro. In 2002, she opened go fish!, a fish-and-chips takeout shop. It was so wildly popular that she transformed the business into a 40-seat restaurant. Blyth isn’t about to rest on her chips. She has plenty of ideas—and has since launched Go Brit! and has the determination to make them a reality. It’s not surprising that go fish! and go brit! deliver an authentic experience. Growing up, London native Alison Blyth enjoyed the best of the “chippies,” the takeout restaurants offering the quintessentially British fish and chips. After finding smashing success with the upscale restaurants La La Land and Yum Yum in Rehoboth Beach, Blyth in 2002 decided to return to her roots—with a twist or two. The 40-seat Go Fish! restaurant offers all the British favourites: fish and chips, bangers and mash, mushy peas, shepherd’s pie and fisherman’s pie.

The US News Journal’s deputy feature editor Patricia Talorico wrote “It’s Alison’s more recent, sibling eatery to her flagship go fish! I’ve long been convinced that Alison offers the best fish + chips in Delaware. Indeed, I think she has some of the best fish + chips I’ve ever eaten. So, I was wondering how it would go at the second location. It’s a fun, light-hearted spot that Anglophiles should love. That’s Alison’s car. It doesn’t run anymore, but it’s a cool decoration. I think she told me it’s the same model – a British Leyland Mini 1000 – that Mr. Bean used to drive. This is a very casual spot. Don’t you love the Mind the Gap sign? Last time I visited London, I took the Underground everywhere. I was hearing that voice saying, Mind the Gap, in my sleep. No waiting staff. You order at the counter. They do have beer. If you’re eating in, they’ll deliver the food to the table. I got takeout – but I warn you: Eat it right away. Fish + chips ($10.95) is like pasta, it waits for no one. The crispiness of the batter will begin to soften if you wait too long. You don’t want that to happen. Soggy is not good when it comes to fish + chips. This batter is so terrific. It’s light, crunchy, wonderful. The fish is moist. Just as good as the Rehoboth location. They give you tartar sauce, but I asked for vinegar for dipping. Insurance of Champions Kingfisher Fish and Chips in Plymouth, Devon, the recently crowned No1 takeaway in Britain is the latest chippy to realise the benefits of taking out an insurance policy with the industry specialist, Wrapped

ingfisher Fish & Chips is almost unrecognisable from the business that Craig Maw and Nikki Mutton bought four years ago. Switching things up a gear from the minute the pair took over, they moved from pre-prepared chips to chipping and peeling their own potatoes, carried out a full refurbishment of the premises, installed a five pan high efficiency Kiremko frying range and put sustainability at the heart of the business. Wanting to protect the thriving business he and Nikki have built up, Craig recently started to question his insurance policy after speaking to a number of friers in the trade whose claims were not paid out due to inadequate or inappropriate cover. Craig comments: “Like most fish and chip shops, you just make the assumption that if there’s an incident, you’re covered. It wasn’t until we realised other shops had had fires and they later found out they weren’t covered that I sat up and started to take notice of the small print.” Aware that more top operators in the industry were turning to Wrapped for cover, an insurance policy which is specifically designed for fish and chip shops around its working practices, Craig looked into the policy and felt it was right for his business, working for him rather than against him. If there is a fire in one of the pans, the fire suppression system will extinguish it with immediate effect. I heard a fact recently that 80% of business that suffer a serious fire either never re-open or they close within 18 months. With this system, there’s a 48 hour turnaround before we can use that pan again, which is pretty good because it’s not going to put us out of business.” Also fundamental to Craig’s decision to go with Wrapped was knowing that the cover he was purchasing is open to improvements and that, over time, it would become even more tailored to the sector than it already is. He adds: “The fish and chip industry is evolving, it’s getting better and more stringent, and it’s important that insurance companies evolve and move at the same time. A policy that was suitable six years ago may not be relevant now because things are changing. “I feel extremely confident in the fact that we are more covered and better covered now, without a shadow of a doubt.”
