A trip of a Lifetime By Jemma Hennighan

ack in October I applied for a trip of a lifetime out to Patagonia with ‘Urdd’, and I was one of 25 other students in Wales that were fortunate enough to be chosen to take part on the tour. Going to the other end of the world to meet other people that speak the Welsh language has always been a lifetime goal of mine and I am glad that I participated on this 2 week trip out there with a group of amazing young people that are now great friends of mine. For this trip to go ahead I had to raise £2,400 towards the cost of the trip it had been a very busy 9 months organising all sorts of fundraising activities such as sponsored walks, cake stalls, a darts match and applying for grants. On October the 22nd I headed out to Heathrow Airport with the other 24 youngsters from all across Wales to Trelew in Patagonia. I spent 2 weeks in Patagonia during which time I participated in the Chubut Eisteddfod, visiting a Welsh medium school and visiting Ty Te Nain Maggie where I enjoyed the best ever tea and some amazing cakes to rival Mary Berry. I’m sorry nothing will beat the amazing ‘teisen ddu’ and tea out there! I did
many other activities but the list is so long I would be writing a magazine!! My experience was amazing and I cannot wait to visit again! I was amazed to see the Welsh language being spoken at such great standard at the other end of the world and made some wonderful friends at Ysgol yr Hendre with whom I wish to keep in touch with. What amazed me even more and will amaze many of you in the fish and chip industry is there is not one fish and chip shop out there!! Many individuals from Wales cannot wait to come back home for the favourite British meal Fish & Chips. I cannot describe how grateful I am to all who supported me for this trip. There are so many who gave time and money to enable myself to have a trip of a lifetime. I would like to give a big thank you to the Urdd for making this possible and choosing me to be part of ‘Taith yr Urdd I Batagonia 2014’. The saving now begins as I cannot wait to go back out there again.

PUKKA PIE-ONEERS
To raise brand awareness during the peak of pie season and drive retailer footfall, Pukka Pies recently launched a national taste challenge for consumers
F
ollowing a survey commissioned by the UK’s number one pie brand that revealed 60% of Brits are turning to quick-fix suppers of toast, cereal and crisps instead of a traditional meat and two veg meal, the company launched a search for 100 ‘Pukka Supper Pie-oneers’. The lucky taste-testers from across the UK that were selected for the exclusive challenge have become brand advocates at a time of year when sales of comfort food such as pies are expected to be high. Each ‘Pie-oneer’ received a month’s supply of vouchers for free pies and was asked to share their favourite dishes and combinations via its Facebook page to inspire others; www. facebook.com/pukkapiespukkapies. Rob Dixon, Head of Marketing at Pukka Pies, explains: “We decided to launch a Pukka Supper Pie-oneer taste challenge to encourage busy consumers to ditch quick-fix snacks such as toast or sandwiches and instead enjoy a quickto-prepare, warm and comforting meal that will satisfy or even better pop into their local fish and chip shop and have it prepared for them “We are so confident of the quality of our hearty pies that it seemed the ideal time to invite the public to put them to the test. We encouraged our Pie-oneers to share how they enjoy their dinner times so much more with Pukka and inspire others to create great evening dinners, too.” Pukka Pie-oneers were recruited via an entry form on the Pukka Pies website. There were over 1,000 applications for the 100 places.

The Year of the Kat 2014 was an incredible year for Chippy Kat, and John Dorys By Kat Deuchars

I
t was our reigning year as our Ballyhackamore shop smashed through as the regional winner of the Independant Fish & Chip Shop of the Year, and myself, Kat Deuchars as Northern Ireland’s number 1 young fish frier, after making the semi-final of the Drywite Young Fish Frier of the Year; both at the National Fish & Chip awards. With all of the publicity and media that followed, our sales increased so much that we had to take on extra staff to cope with the demand. The staff were extremely proud of their acheivement and the morale throughout the company has been at an all time high ever since. It has been

brilliant for the staff to get recognition for their hard work, and has made them even more determined to remain at the top of their game. For me, it has been an amazing learning experience, with new skills being continuously developed with each and every study trip that I have attended. John Dorys also embarked on a new business adventure, starting up a robust delivery system in 4 of our shops. My job, along with my colleague Jayne Connor, was to carry out the market research, coordinate the logistics, train the staff in the 4 sites, and implement the system. It was really fun and exciting to expand Chippy Chat & Fast Food Magazine • January 2015
10
the business in a new way. Providing a delivery service has enabled us to reach a wider market. It has especially benefited our elderly customers who can’t get out to get their fish suppers, people who don’t like to drive in bad weather, and of course our customers who don’t drive at all. I didn’t realise until we started deliveries, that a lot of our customers were getting taxis to and from our shop for their chippy tea! Of course, I didn’t want to quit after making the semi-final of the Drywite Young Fish Frier of the year in 2014. With the skills that I have developed, and the knowledge that I have learnt over the past year, I entered again for 2015. This time, I made the final! It is an honour to represent young friers across the country and be a part of raising the standards in our industry.
Being the only finalist from Northern Ireland, my only options are to swim or fly across to all of the events in mainland UK. Having said that, they have been worth every air mile. In 2014, I totalled up 10 industry trips, which included 22 flights in total. The trips included training days, a brilliant event at the Isle of Ely Produce, a great trip to the Florigo factory in Holland, an invaluable educational trip with Seafood Scotland, and the most recent was more of a social visit, for the fantastic Chippy Chat Ball (unmissable!). Helping with the staff training and applications for the Best Multiple Operator Award 2015 was another exciting thing that I got to be a part of the past year. I was delighted that John Dorys made it to the final. It nicely complimented the opening of our 7th shop in November. With the latest in equipment technology and the design following the current John Dorys theme, all that was left was to train up a new team of staff. It was very exciting to recruit and train the staff for a brand new shop. I would not have had the confidence to take on such a challenge, if it wasn’t for the knowledge and skills that I have developed over the past year. As an acknowledgement on behalf of the staff 11

for their hard work and achievements, we brought the Fishermens Mission down to the new unit in December to speak to the staff, and so that we could make a donation to give something back to the industry. Other things that I have been up to include studying, working towards Investors in People for the company, providing training to our ever growing work force and of course filming with Freddie Flintoff. Being part of the wider industry network, I have got to meet some of the best that the industry has to offer. I absolutely love the Fish and Chip industry and with some exciting new projects starting in the year ahead, I cannot wait to start 2015 with a bang.... watch this space!

New Chippy in Alan Partridge Country The first traditional fish and chip to be opened in the heart of the city in Norwich for some time is now up and running...it’s in Orford Place and called – what else - Orford Plaice.
A
nd the man behind the new enterprise is Alan Hunt, Norwich born and bred, whose family ran market stalls and shops in the city for many years. “I have always fancied running a fish and chip shop. It’s been hard work but we have finally made it and are now open for business. I am so pleased,” said Alan. While so many of our shops, restaurants and take-aways are run by national and international chains which can be seen in any High Street, it is always good to see another local business opening up. It has taken Alan more than a year to turn the fine old building, a former shoe shop and salad bar, into a fish and chip shop offering a comprehensive range of meals.

“It hasn’t been easy but when I walked into the shop the other day and saw the queue, and people sitting there enjoying the food, I thought to myself. It’s been worth it,” said Alan. “The response from members of the public has been fantastic. People have been wonderful,” he added. “Now it is finally up and running. I’ve got a good team of Ian Brown and Hayley Powell working in the shop and it’s lovely to hear all the things people have been saying. “It’s good to open a traditional shop likes ours in the city centre again,” said Alan. And what’s the most popular meal with customers ? “It’s still cod and chips,” said Alan.

A CHIP shop worker is attempting a unique charity endurance feat by piloting a flight simulator for a non-stop 48-hour “trip around the world”.
N
eil Hodgson, 42, will “fly” the equivalent of Manchester to New Zealand at Flightdeck Experiences, run by Steve and Vicky Emerson at Newchurch Road, Stacksteads. He works at Pete’s Chippery in Nuneaton. Flightdeck have given the use of the simulator to Neil for 48 hours from Monday, January 19 through to Wednesday of the same week. Neil will pilot the simulated Boeing 737800 Winglets which has a fixed base, fully enclosed cockpit and 12 seat replica aircraft cabin. Neil, who has Lancashire roots but now lives in Nuneaton, has become friends with Steve and Vicky after enjoying the flight

simulator experience on several occasions. He will be raising money for the breast cancer charities and the Teenage Cancer Trust . Neil said: “I will be flying the simulator from the UK to New Zealand which has never ever been done before. “The simulator Steve and Vicky have is fantastic, a totally realistic experience, which even trainee pilots use. “I am trying to raise £50,000 for these great charities. “Steve and the team at the simulator have been kind enough to lend me the simulator without any cost. He added: “It will be a test as I won’t be sleeping.” “Last year I did a sponsored head shave and body wax for fight against breast cancer and this is my biggest event to date. “I’m going to have co-pilots to keep me company and we will also have a live web feed.” Neil is asking people to support him through his Facebook page ‘charity flight simulator 48 hour challenge’ . Backed by a national PR campaign, Chip Week, which is run by Potato Council, offers a superb platform for chippies to boost sales and promote chip shop chips. One chip shop which has been using the high-profile campaign as a platform to showcase its tasty chip offering is Burton Road Fish and Chip Shop in Lincoln. After registering for the campaign, Des Anastasou and Lesley Graves, who run Burton Road Chippy, made use of the free promotional material – including themed posters and bunting – to draw in customers throughout the Week. Des, who has been in the fish and chip business for over 35 years, said: “Chip Week presents us with the perfect opportunity to not only showcase our quality chips, but to encourage the local community to support the campaign and enjoy a portion of our freshly cooked chips. “Taking part in Chip Week is a great way to promote your business and highlight the quality of your chips; holding events during the Week attracts local publicity which also brings new custom, and of course it’s great fun!” Burton Road organised a number of fun competitions and activities during Chip Week 2014 to encourage loyal customers and passing trade to support the campaign. ‘Guess How Many Chips’ to win a £10 Burton Road Chippy Voucher, ‘Pin the Chip in the Mouth’ to win free chips and ‘Potato and Spoon Races’, were just some of the fun activities which took place during the week, creating a real buzz and helping to increase publicity and sales. “We felt that running different daily activities would appeal to customers of

all ages and it was also a great way for our team to have fun!” explained Des. “All the money raised from our Chip Week events was donated to our chosen charity of the year, while 20p from every portion of chips sold during the Week was also donated to the charity.” What’s more, for the second year in a row the chip shop officially claimed the title of ‘Best Chippy Chips’ in Great Britain in the Choice Chip Awards 2014, with the highest number of votes from customers who felt they served perfect portions of freshly cooked chips. Des said: “After winning the Choice Chip Awards we saw an increase in sales of 10% which was amazing as February and March is usually a quiet time of year. We continue to use the Chip Week loyalty cards as they proved to be very popular; offering customers a stamp each time they spend over £5 and then offering £5 off when the card is full has been well received. “We would recommend every chippy signs up for Chip Week 2015 - by registering you receive all the promotional material you need and it’s all free. Mystery Shopping Do You Measure Up? In business, a major issue which faces us all is how best to attract and retain customers. Following this then often comes the matter of getting customers to buy more (and more often) and how best to encourage them to recommend your business to their friends and family

f as business operators we could achieve all of the above, we could greatly increase our sales and profits. Remember when you first opened your business– the excitement of the launch day and the final checks: new range and equipment installed, suppliers signed up, staff recruited, stock ordered, publicity and promotion undertaken and product pricing determined. After some time, you may see a levelling off of trade and possibly, a reduction from the peak levels reached after initial opening. Why are customers not coming in the numbers that they used to? Why are they coming less frequently? Why are they spending less when they do visit? For a business to be successful it is imperative to have answers to these very important questions – answers which will dictate the ongoing success and future of your business. At all times, the important views to listen to are those of your customers, and Seafish, the authority on seafood, have developed a Mystery Shopping Questionnaire to do just this, and which is used as part of the judging process for the various award categories as part of the annual National Fish & Chip Awards. Speaking to Fred Capel of Chez Fred in Bournemouth, Dorset, previous winner of the Fish and Chip Shop of the Year Competition and recipient of the Outstanding Achievement Award as part of the 2014 National Fish & Chip Awards,

Fred explains why as a business they use ‘mystery shopping audits’ as part of developing their operations: Why did you decide to recruit a Mystery Shopping Company when you are already doing well in business? I had seen how other companies had benefited from the use of mystery shopping within the catering industry. We all need checking, not just the floor staff and cooks, but also as managers and business owners too. It is a great tool for monitoring staff performance and helping to prevent complacency. What benefits does it provide you with? Accurate detailed feedback – the full report of each visit is with me via email within 24 hours of the actual visit What benefits does it give your business? Without doubt, it has led to greater consistency within the business. It also enables us to reward the real heroes within the business, for going above and beyond the set standard, by delivering outstanding customer experiences. After a few visits you start to see a pattern, which clearly shows where improvements are needed. What do your staff think about it? We started nearly two years ago. In the beginning, I think a few of them were worried it would be used to catch them out, but as most of the staff have now been mystery shopped, the staff have a great deal of trust in them – as the reports come back so soon after a visit, Chippy Chat & Fast Food Magazine • January 2015

the staff nearly always remember the actual mystery shopper customer and therefore know the reports are accurate and honest. Is it worth the money? Yes, it is definitely worth the money – every penny! In my view yes, in fact it’s debatable that it costs me anything in the end. It is a fact that in nearly two years of mystery shop visits in both the takeaway and restaurant sides of our business, in excess of 95% of those visits, the mystery shoppers have confirmed that they will both return themselves and also recommend family and friends to do so too. How often should a shop be Mystery Shopped? It depends on results. I generally have between two and four visits per month. The mystery shopper company call me each month to ask how many I need for the following month. They ask if I need restaurant or takeaway visits, or both – lunch or evening, any days to avoid, etc. So it really can be tailored to your individual needs. What do you do with the Mystery Shopper information received? I go through it all to analyse it and print off the report and share with all concerned. If certain staff members are named or flagged up, we offer help and improve together. Generally though, it’s a pat on the back for doing a great job – and for outstanding service, a financial reward is offered. They describe themselves as an ‘Organic Bistro’, I’m not 100% sure what that means, but I think I agree.

t’s a Fish and Chip Restaurant, something that’s in my blood. My papa had an award winning Fish and Chip Shop in Truro, Cornwall and I know he would have loved this place. He would have made time to speak to the kitchen and tell them how impressed he was. People often forget to congratulate good service and good food, instead just complaining when it’s poor. I’m a believer in showing appreciation for when people do things right. The staff were welcoming and friendly. We were shown to a table and given an English menu and a complimentary bottle of Icelandic Spa water. There’s plenty of choice on the menu.

Cod, Ling and Red Fish when we visited. The fish comes in fresh every day, so the menu changes depending on the catch. The fish of the day varies in price from 1290 isk to 1480 isk (£6.83 to £7.84) The fish is battered, but not with normal batter. The batter is made without eggs. It looks like normal batter and tastes great! The chips aren’t chips but potatoes, in wedges, but not potato wedges. The potatoes are oven roasted and tossed with parsley and locally produced salt. The salt is from the West Fjords. Lois had rosemary and garlic potatoes and I had ‘crispy’ potatoes. They were beautiful. The sauces, or dips, are made from Skyr, an Icelandic yoghurt type substance. mixed with an oil, which oil depends on what flavour is being made. Again, plenty of choice, Basil and Garlic, Ginger and Wasabi and Mango just to name a few. The food was delicious, no greasy after taste that you find with some fish and chip shops and just the right portion size too. Most certainly worth a visit if you’re in Reykjavik. is role will include working with the team across all outlets in Lincoln, Sleaford and Ruskington, ensuring high levels of customer service, customer satisfaction and quality of food continue to be delivered throughout the business. “My in-depth knowledge of the industry puts me in a great position to support Elite’s business plans and I’m delighted to join the company as the Operations Manager,” said Nigel. “Initially I trained as a chef and worked in a Lincolnshire pub before I became hooked on the industry after a threeday training course with the National Federation of Fish Friers (NFFF). “I became the manager of a Lincolnshire chippy and won the Young Fish Frier of the Year Award in 1998. ith our great chip shop reviews from home and abroad and in depth features lots of our readers are telling us they like to sit down with a cup of tea (or something slightly more alcoholic) and read the magazine. Online too numbers are increasing, with over 7,000 people registered and over 1500 visiting our forum and website every week, we are attracting great interest. Our approach is simple. We are an intermediate of that transaction offering our expertise to both sides in order for them to work efficiently. ife has been pretty busy to say the least, but I and all of my family have absolutely loved it. It has definitely been a year of hard work too… we were and still are determined that both our loyal, repeat customers and our new customers should get the best fish and chips, despite us being busier than usual. Without our wonderful team, none of the achievements this year would have been possible. Our fantastic take-away and restaurant staff have all gone the extra mile for our customers this year, even after a busy shift. We count our suppliers as part of our Quayside team too, without

them putting in extra deliveries and supplying us with exceptional quality ingredients over the year, we wouldn’t have been able to offer customers the experience they have had. To each and every one of our team, thank you. Our highlights have to be: Appearing on the BBC Countryfile TV programme in April as Whitby Fish and Chips were voted within the Dalesman top 75 things to do in Yorkshire – we made the entry at number 36 I might add! Locally, we confirmed our partnership with the North York Moors Railway, Britain’s most popular private heritage line with 350,000 Chippy Chat & Fast Food Magazine • January 2015

Together we launched the ‘Quayside Express’ which is the ‘Fish and Chip Flyer’ from Pickering to Whitby, through breath-taking scenery and our award winning fish and chips on the return journey. We enjoyed the Quayside raft race at the Whitby Regatta in August with a little help from a celebrity friend! Later that month, I was asked to consult British Airways on their new in-flight fish and chip meal. My brother Raymond took up a fantastic opportunity to go to the Hankyu ‘British Fair’ in Japan, where he worked at two huge department stores to show Japanese customers what the great British dish is all about. As a long standing family business, we are determined to ensure the future of the fishing industry for the next generation of our customers and for the people within the industry. This is why we are committed to serving MSC fish. We were the first fish and chip shop in Yorkshire to gain the Marine Stewardship Council accreditation, which is something we are extremely proud of. Recently, Dennis Crooks Fish Merchants, another long-standing family business in Whitby, have also achieved MSC certification. This is great because it means that we can now offer our customers MSC haddock from a local fish merchant. Not only are we passionate about sustainable fishing, but we try to support the fishermen and their families who go to sea to bring in the catch through the Fishermen’s Mission. This is a charity that we have supported for a number of years now and this week we have confirmed that we will be doing the Whitby Boxing Day Dip (into the North Sea!) once again to help raise funds for this wonderful charity. As for next year, the calendar is filling up already. As well as the popular Whitby events, we are also making plans to take fish and chips out of our home town in our very own catering trailer. Keep your eyes peeled at events for ‘The Whitby Fish and Chips Company’ catering trailer, it’s going to be great! To all the people who have supported Quayside on our journey this year, we have been overwhelmed with the good will and thank you all. 39
