are regular diners at The Harbour View Restaurant in Seaton Sluice. Jo’s mother, Joyce left Blyth more than 20 years ago for a new life on the Greek Island of Corfu. She last visited the region in 2010 and visited The Harbour View after hearing about it from her daughter. Ever since then, whenever Jo visited her mother they would reminisce about the fish and chips that she said were just not the same in Corfu. Jo then decided to experiment with her takeaway food by storing it in the fridge and then reheating it the next day. To her delight, the food tasted just as fresh as it was when it was originally served giving Jo the idea to send a takeaway to her mother 2000 miles away. “A day before we went to Corfu, we bought two takeaway fish and chip portions, took them home, refrigerated them and the next day we wrapped them in plastic bags and packed them into our suitcases,” said Jo. “ Once we arrived at my mothers, we reheated them and the four of us enjoyed a real taste of home.” The couple then researched the regulations about importing food into Greece and discovered that there were no rules about importing fish and chips. “I cried tears of joy as I was eating the fish and chips, it was the nicest, most thoughtful present I’ve ever had.” RESTAURANT MANAGER, SARAH CRANSON WHO HAS WORKED AT THE HARBOUR VIEW FOR EIGHT YEARS SAID “It never ceases to amaze me the amount of people who queue up at peak times to eat our food and that’s because it’s a great experience to be here. I also get really impressed when someone comes into the restaurant and tells me that they have travelled all the way from Scotland just to eat our food. This takeaway to Corfu though is really special. Bay The force We asked Calum Richardson of the Bay Stonehaven to sum up life three years after winning the top prize at the National Fish and Chip Awards. Hopefully this advice will help one of the Top 10 shortlisted shops for 2017! By Calum Richardson

I

opened The Bay 10 years ago and since then, I’ve never looked back. In 2013, The Bay was awarded the prestigious Independent Takeaway Fish & Chip Shop of the Year Award. I’d always wanted to win the award and I’d entered it a few times before with no success. But looking back now, I was nowhere near ready to win but it was important for me to keep on trying as I was growing and learning different skills year on year. During the year of the win, The Bay’s turnover doubled and it’s increased year on year since. I really believe that the business is there to be had and to further your career and your business, it’s vital to look at options outside of the industry and think outside of the box. Following the win, everything took off for The Bay. A project which particularly

stands out in my mind has to be the creation of our bespoke Premium Bay Batter, which is free from any additives or artificial colourings. It only contains three ingredients; flour, raising agents and salt, and is available for both retail and foodservice use, as well as being the only batter we use at The Bay in Stonehaven. Now, three years on, we supply ESS Support Services Worldwide, part of Compass Group UK and Ireland, with the bespoke Premium Bay Batter. The batter is distributed to all the ESS offshore units in the North Sea as well as Government Services, the Defence Sector and Restaurant Associates. At the beginning of 2015, I was on the lookout for a new challenge so I decided to explore the ways in which we could spread our message about sustainability, provenance and nutrition further afield, whilst still maintaining our popular tourist hot spot on the shores of Stonehaven. After lots of designing and planning, we launched The Bay’s first mobile kitchen, The Bay on the Road. The bookings arrived immediately and have included birthday

be with you! parties, corporate events, fundraisers, weddings and festivals – all taking place right across the UK. Now in 2016, I’m heading back to Japan for the fourth year to promote and showcase the best of British fish and chips. Last year, we had a bumper year for sales with a record number of 1,600 portions of British fish and chips sold in one day! I absolutely love taking British fish and chips to Japan and hope to continue doing it for years to come. The win has encouraged people from all over the world to come and visit The Bay but one of my favourite visitors has to be a lovely woman from London. She saw coverage of The Bay’s win in Waitrose Food magazine and jumped on a train all the way up to Stonehaven to get me to sign a copy of the magazine, just to go all the way back home to London again! This shows the power of publicity and how many people a story like this can reach. Overall, winning the Independent Takeaway Fish & Chip Shop of the Year award was one of the biggest highlights of my career. I thought I’d be very emotional 7

To Hull and Back A popular fish and chips chain opened its second restaurant in Hull recently.

P

apa’s has transformed the former Swiss Cottage pub, at the junction of Holderness Road and Main Road, Bilton into the new restaurant which will have more than 250 seats as well as a takeaway area and 70 parking spaces. The takeaway section be will opened first with the full restaurant set to be serving by mid November. The latest venture follows the success of its popular eatery in Great Gutter Lane East, Willerby, which opened last year. The new restaurant was due to open last month but it was delayed slightly after thieves stole tools worth £4,000. Owner Sid Papas said: “We have been inundated with questions about when we are opening so when we finally did it was very busy.” “Everything is ready and the place looks amazing. We have a monster frying range with nine pans rather than just the two you normally have at most fish and chip shops. “The property was empty for over

a year so there was a lot of work to do and we had setback after setback. It has taken us months but the place now looks amazing.” The new restaurant will serve the same menu as the Willerby chain. Papa’s has already employed 60 people and more could follow. Mr Papas said: “We have already employed 60 members of staff from the local area and we were inundated with job applications. “We are still looking for more and we could have 80 employees in total. “I think this restaurant will prove to be just as popular as the one at Willerby. The feedback we have had is that people are really looking forward to it.” Papa’s caught local attention earlier this year when more than 3,000 customers flocked to Willerby restaurant in a single day (including Chippy Chat Editor Austen Dack) to celebrate the chain’s 50th anniversary. Mr Papas said: “We are really, really excited to be finally open. We don’t want to blow our own trumpet but the place looks fantastic.”

JFK and The Fishermans Festival – Klaksvik, Faroe Islands The Faroe Islands are an island group situated between the Norwegian Sea and the North Atlantic Ocean, with a population of around 50,000. The total area is about 1,400 square kilometres.

F

ishing is the main industry of the Faroe Islands and to protect local culture, the second largest city Klaksvik holds the Fishermans Festival in August every year. The festival is celebrated by the local residents with a series of events including competitions, exhibitions and lectures. JKF’s history goes back a century, to the early days of commercial fishing in the Faroe Islands, its home town of Klasksvik owes much of its development to the success of JFK during the early decades. After last years success, once again JFK invited Papa’s Barn in Ditton – (2017 Independant Takeaway Fish & Chip Shop of the Year finalist), to attend the Fishermans Festival and help with the celebrations. JFK arranged a temporary shop and exported potatoes from Isle of Ely Produce, Cambridgeshire for the Papa’s team to serve up fish and chips to the thousands of people of the Faroe Islands. Papas Barn says: “Both Craig and I were thrilled to be invited back for this years fishermans festival in Klaksvik. Once again, huge thanks to Jógvan and Hanus from JFK for looking after us so well. This years event was always going to be exciting due to the tremendous success of last time. With this in mind planning was key. JFK (owners of Gadus) decided that we needed a proper frying range and so approached Robert Fury from Florigo. It was an amazing day, with the new range and delicious fish from the Gadus our job was made so much better. The potatoes were from Isle of Ely, Cambridgeshire and were being hand cut all day, those guys deserved a medal. We made the national evening news and was maybe too enticing. The next day we estimate frying 7500 portions of fish and chips and queue times were up to 5 hours. Almost double the amount as last year!! Thankfully there was lots of live performances to keep people entertained until their main event.... The fish and chips. Everyone was so happy, from 10am Saturday until around midnight we fried and had lots of selfies with people in the queue. There was such a great atmosphere and celebration around the whole day. It truly is our pleasure being part of what seems to be, one of the busiest frying days in the world. “

Multiple Efforts Three of the UK’s leading fish and chip businesses have recently been announced as finalists in the Best Multiple Fish and Chip Operator Award for the 2017 National Fish & Chip Awards, organised by Seafish.

T

he three finalists – Clems Fish Restaurants (with four outlets across County Durham and one in Sunderland, Tyne and Wear); John Dory’s of Northern Ireland (with seven premises operating in Lisburn, Carryduff and Belfast) and Rockfish (with four Devon based establishments in Brixham, Dartmouth, Plymouth and Torquay) - will now compete against each other in the race to bag the top accolade and become the UK’s best multiple fish and chip operator. To secure a place as a finalist, shortlisted businesses have been appraised across a wide range of judging criteria including fish sourcing policies, outlet appearance and facilities, menu development and innovation, supplier relationships, marketing and promotion activity, and staff development and training practices. Over the coming weeks, finalists will receive further mystery judging assessments by industry experts to ascertain the level of customer service and quality of the fish and chips on offer. This final stage of competition judging will determine the overall winner that will be announced at the National Fish and Chip Awards ceremony in London on 26 January 2017. Black Tie and Jacket Potato! A night of camaraderie and celebration filled Ely Cathedral when the dedication of the local business community was praised at a glittering awards ceremony, with Isle of Ely Produce taking the ‘Best Community’ Business gong home.

T

he eighth annual Ely Standard East Cambridgeshire Business Awards was hosted in the Lady Chapel with a prestigious evening that recognises the best business talent that the region has to offer. Hosted by BBC presenter Sue Dougan said; “These awards provide recognition for companies and individuals who are contributing to the business success, best practice and positive environmental impact in East Cambridgeshire. “They are, undoubtedly, the region’s only awards for excellent business practice and hope to become hugely prestigious and highly valued, reflecting the achievement of winning companies. “It is about recognising and rewarding companies and individuals who are making significant contributions to east 18

Cambridgeshire’s business community and economic development.” Judges were particularly impressed with the quality of all of the 2016 applications entered into eleven different categories, she added. Entries were overseen by judges from the Chamber of Commerce and the Federation of Small Businesses. Isle of Ely impressed the judges with their annual Potato race. The event promotes the potato, fish and chips and also brings local farmers into the high street. This year over 50 people took part, it involved over 30 farmers and 2,000 people watched. It also raises over £2,000 for local charities too. Austen Dack said: “What a fantastic opportunity and brilliant awards night, we have worked so hard to earn this title and were humbled to win.” Next year the potato race will be even bigger, we already have our first chip shop entry with Luke Godfrey from Godfrey’s Fish and Chips in Harpenden taking part. The Fjord Angler! I was recently delighted to be invited by The Norwegian Seafood Council and Seafish for a study trip to Norway. I will tell you that that delight was muddied with a slight sense of fear having found out a similar trip last year ended up with all visitors in various states of nausea as they cruised out in high winds and choppy waters (but i needn’t have worried).

o with various travel sickness aids and more coats than Burtons I met up with my fellow travellers at Gatwick Airport. The trip was to reward the Top 10 regional award winners in the 2017 National Fish and Chip Awards. Also in attendance were...

We actually flew direct to Alesund in around two hours from Gatwick. We landed in glorious sunshine which was thankfully never to leave us during our entire three day stay. After check in to our waterside hotel we were given a briefing on the impressive Leinebris the brand new £31m vessel which was to take us out into the deep blue Norwegian sea the following day. We then moved on to the XL restaurant in the town where we were treated to various cod dishes. The house special was salted cod, which I did like but was grateful for the regular water top ups. Previous to that we had been served a fish ‘goujon’ which I was later told was actually the tongue of a cod. On the way back we stopped off at a kiosk who served ‘probably the best fish and chips in the world’, we didn’t actually try them but the irony was not lost on the group. Next day was the highlight of the trip. I looked out of the hotel window and to my joy the sea looked very calm. The group boarded Leinebris at around 9am. After our briefing we donned our special Norge/Leinebris suits and started a new ‘crew member’ tour. The sheer scale of this vessel has to be seen to be believed. Everything from hospital bay to sun bed, gymnasium to cinema room. Whilst we were out for only one day, normally 25

the crew will be away for anything up to four weeks at a time. Huge stocks of provisions are stored away and are on hand for the on board restaurant to keep the crew well nourished. We were served two excellent cod dishes and also lamb shanks too. After 2 hours of travel it was time to fish. Leinebris has no nets but instead uses lines and hooks. Thousands of hooks are sent out at a time all baited with Chinese squid. We sent out two lots of hooks (over 4,000) and after another 90 minutes it was time to haul in the catch.

They are then filleted boxed and frozen all in a matter of minutes in the ships very own factory. There was not a hint of sea sickness in the whole group, although we were all to sway a little for the next day or so.

In the evening we met up with more Norwegian fishing representatives. We exchanged ideas and of course had five courses of wonderful fish and wines too. Next day we debriefed from UK sailing trip and were giving the facts and figures for white fish in the UK. Whilst our cod stocks are on the mend, we still need to import much of what we need to keep our fish and chip shops replenished. In Norway it seems the boats are getting bigger and the quotas are being shared between families and groups to achieve this. One last pitstop before we left as we towered over the harbour and once again enjoyed some local fishcakes. We were given a talk about the town how it had been a scene of a devastating fire in the 1900’s as

the whole town was raised to the ground. Thankfully it has recovered and makes a fantastic weekend break destination. All too soon the trip was at an end and we were making our way back to the airport for the return trip. Thank you to my fellow travellers the #norwegian8 journalists and Seafish, and of course a massive thanks to Jack Robert & the Norwegian Seafood Council for their fantastic organisation (and showing us their country). Believe me this trip alone makes it worthwhile for you to get in the Top Ten.

The horses are on the track… This year KFE celebrates its 20th year and as part have hosted various events throughout the year.

FE’s first Race Day at Nottingham Racecourse on Wednesday 28th September was a huge success. Attended by nearly 100 customers and suppliers there was a great mix of experienced racegoers and first timers. Following a beautiful 4 course meal, there were tips and selections and some great banter by celebrity tipster John McCririck ably supported by 4 time Derby winning jockey, Willie Carson. All races were sponsored by Fish and Chip industry suppliers and The Georges Group and each company provided a “knowledgeable

person” for each race who selected the best turned out horse and presented prizes to the winning connections. KFE made a retirement presentation of champagne to David Lovell of Kerry’s, who attended on his last day in the business. How important is Business Interruption Insurance? Business interruption insurance is often overlooked because many business owners believe that other insurance policies such as buildings and contents policies will take care of any losses suffered as a result of an event such as fires and floods. Although buildings and contents policies will usually cover the initial damage to your property, they do not make allowance for any consequential financial losses your business will sustain in what can often be a long term interruption in your trading. What type of events does Business Interruption insurance cover?

y wife chose the Michael Jackson room and his songs start playing in surround sound from the moment we step out of the lift. A large caricature of Jackson himself by Czech artist Joseph Blecha hangs above the bed. The hotel has four wings – each representing a different musical genre – Contemporary, Jazz, Classical and Opera. As part of this experience the hotel also has a fully stocked music room with dvds and cds for you to enjoy, and a cinema room with regular shows. Other bedrooms include Elvis Presley, Ella Fitzgerald, James Brown, Frank Sinatra and The Beatles. Hotel Aria sits on a pedestrianised street right next to the fabulous Saint Stephen’s Basilica. In the afternoon between 4-6 we relaxed

with a complimentary glass of wine (or two) served with a selection of delicious cheeses. The courtyard is covered by an incredible $1.1m glass roof, and the upward view as the light fades is to die for. We were serenaded by a pianist on the space age piano one of only a few made in the world. After an evening out the last drink of the evening was saved for the roof top bar at the Aria. Fast becoming the place to be seen in Pest, the views dazzling by day are even more spectacular in the evening. The comprehensive breakfast is also served in the courtyard. The chef will cater for your dietary requirements and look out for the ‘egg man’. One morning we ventured to breakfast via the Spa area. We went for a sauna and a swim (there was also a gym) and used the steam room. Massages and treatments were available too and once again the musical theme is carried through. Centrally located we ticked off so many of the top ten things to do in Budapest

the Music very easily from the hotel, including The Citadel, Grand Market, Basilica, Szechenyi baths, Castle Hill, Ruin Bars & more. Much of this was also achieved with the help of a Budapest Card, which gave us free travel all weekend on public transport including trams, buses and Europe’s oldest underground too. It also gives you great discounts at many of the local attractions too.

The Big Fish

Part of our mission was to find the best fish and chips in one of the most centrally cities in Europe could offer. Having called ahead to the Big Fish and booked a table we arrived to be greeted by manager David who showed us to our reserved table. The group all then went up to the counter to order their meals. Those who wanted fresh fish selected their catch from the impressive display and then had them weighed and sent to the kitchen to be freshly cooked. Naturally I chose their cod and chips.

The food was tasty; my wife’s fish and chorizo paella was as good as any I’ve tasted. The fish and chips were delivered to me by the waitress with some trepidation. She knows the industry I represent and the incredible fayre it serves. They need not have worried, the scoop like chips were both crispy and fluffy, whilst the line caught frozen at sea Norwegian cod lovely and white and flakey. T

he Pickering War Weekend mostly centres around activities at the North Yorkshire Moors Railways which has its terminus in our town. This event brings between 15 and 20 thousand people into a town of only 7 thousand - many of them dressed in military uniform or other 40’s era costumes - with a surprising number of them hungry for Fish & Chips to accompany their dances, galas, parades and other activities. In order to survive this onslaught and “Fry for Victory” we have to prepare with almost military precision in a process that starts as sun as the summer rush stops at the end of August. Our shop is decorated inside and out, our staff dress up in period costumes, our fridges and freezers and potato store is filled to capacity and beyond - and everyone is on hand to man the trenches for three days of non-stop combat. But prepping the staff and the shop is really only the beginning. The traffic island outside our shop, dubbed Camp Cod for the weekend, is transformed into a seating area with bales of hay bought from local farmers, camouflage canvas and netting and the almost obligatory bunting. We also put up specially designed posters and banners around town, sponsor adverts and coupons in the special War Weekend newspaper and even make a special themed digital ad for the local theatre – which showed four classic old war films this year. Everything has to be right and everything has to be ready and, if we are very lucky and the weather is not awful, the War Weekend delivers a week’s worth of extra business in just three days – with costumed people queuing outside the shop, drinking their complimentary tea and coffee and admiring the spectacle that they are all here to both see and be part of. Not every chip shop has a ‘special event’ during the course of the year, but the War Weekend is certainly ours and we certainly could not do it without the hard work of our staff – with the cry “all hands to the pumps” even bringing two of our experienced counter girls back from University, just to make sure we make it through the weekend. So, if you’re visit Pickering in October and find yourself surrounded by men with uniforms and guns and women in lovely frocks and fur, don’t be surprised, just get yourself up to Potter Hill, take a seat in Camp Cod and remember… War is Swell!

Three of the UK’s leading fish and chip businesses have recently been announced as finalists in the Isler of Ely Produce sponsored From Field to Frier Award for the 2017 National Fish & Chip Awards.

T

he three finalists – Krispies in Exmouth, Devon; Papa’s Fish and Chips in Hull, East Yorkshire and Towngate Fisheries in Bradford, West Yorkshire – have been recognised for their efforts in creating the perfect chip and will now go head-to-head as they compete to make the final ‘cut’ and scoop this top accolade. To secure a place as a finalist, shops have been appraised across a wide range of judging criteria with a specific focus on the policies and procedures for the responsible sourcing of potatoes. Shops were also assessed on their potato knowledge, including types and seasonality, and the storage and preparation of the raw ingredients. Finalists will now undergo mystery shopping assessments and in-depth judging audits by industry experts to ascertain customer service levels and the quality of the fish and chips being produced.
