“My family already have a business down here - Surfs Up Coffee Shop and Ice Cream Parlour - so when the land came up we snapped it up. “I thought there wasn’t anything this end of the pier so that it would be a good opportunity.” So Dan, who is an electrician by trade, decided to take a new career path and open up a fish and chip shop. And since it opened up at the start of August, its been going down a treat with customers. “It has been spot on so far,” said Dan, who was born and bred in Saltburn. “We serve good quality fish and chips - we use Icelandic fish which is frozen at sea, so you can’t get much fresher than that. “We do cod, haddock, homemade fishcakes, scampi, chicken nuggets, fish bits, fish and chip butties and sausages. “At the moment we are keeping it fairly simple but we do have plans to branch out into things such as food challenges. “We are also looking at expanding to give customers a seating area.” Oscars Fish and Chips is open seven-daysa-week from 11am until 7.30pm

I

have always loved the unresisting smell of fish and chips, and having my first full time job when I was 18 in my local chippy, I knew I loved working in the industry straight away and that it was something that I wanted to do for myself. I worked there for just over 3 years and gained great experience learning how to serve and later fry and generally learning the ropes of the business. I then moved house and left that job,

and soon after saw a job advertised in my local town for a server on a mobile Fish and chip van, I got the job and loved it straight away. The business came up for sale 3 years later and it was naturally the next step for Dan and I. We serve in and around Bideford, but also visit the nearby popular seaside resort of Westward ho! We serve at Surf bay holiday park, in Westward ho! throughout the summer, plus we also have a good all year round trade and a summer boost of holiday makers that come back year after year to enjoy our fish and chips. We only use Msc Atlantika cod that is freshly prepared daily, we also use Triple F chips, which are delivered fresh to us on a daily basis. We have a specials board which we always have something different on, such as battered halloumi with sweet chilli sauce, battered fish finger sandwich, and a really popular one was our beach burger, which was a homemade cod,

lemon and parsley fishcake, in a toasted brioche bun topped with pineapple salsa. As well as our local round, we serve at weddings too, which are really very popular, people love the fact that there’s fish and chips at a wedding. We also do lots of quiz nights and other social events too. We have started to invest and upgrade areas of the trailer, we have had a new worktop and Bain Marie fitted recently, and have replaced all the fridges and freezers also. With more plans in the future, of adding an extra chip fryer to make larger weddings and events easier to serve. We are looking into the possibility of getting a separate events trailer, serving just beer battered cod, scallops, mussels, halloumi, with some homemade fish cakes and pea fritters. “A delight to do business with” Colin Cromar purchased Cromar’s in St Andrews in 2013...

T

he shop had a range in already so he decided to continue with this for a while, Colin has always been a Kiremko user so the lack of service and quality on the existing range soon pushed him into a change. ‘I’ve bought more than one range in every shop I’ve owned and when I need service I get service, that’s the difference with KFE and what you need with a busy shop’ Colin explains. After several visits to discuss the configuration and a trip to the Qbtec factory in Holland to show his new business partner the factory where the ranges are manufactured he ordered a 5 pan High Efficiency Kiremko Counter Range. The range was installed in February 2014 after a full refurbishment of the shop. Cromar’s went on to become Regional Finalists in the National Fish & Chip Shop of the Year completion this year. Business has never been better so much so that they recently installed a Kiremko Allegro Unit to complement his range, the unit consists of 2 pans, a flat grill and an electric induction hob ‘It’s fantastic, the new range has made such a huge difference to business this summer, the speed of which I can get my products out now is phenomenal. This summer has been busier than any other, even last year when St Andrews hosted the Golf Open!’ says Colin ‘I would never buy any other range other than KFE, I’ve used KFE ranges for most of my frying life, the sales team are always helpful, knowledgeable, extremely polite; the ranges are reliable, well built and efficient. He ordered a 5 Pan Kiremko wall range and odour control unit and put this together with copper counters and exposed copper pipework giving the shop a classic contemporary look. Darren took the opportunity to attend the KFE School of Frying Excellence with a colleague prior to opening. The two day course was followed by a day’s onsite training, this was met with a fantastic reviews with them both commenting how professional and helpful it was. Indeed the whole set up and experience from start to finish has been a joy, ‘When I purchased the range I brought into a family and this was very important to me, we have had fantastic service and no issues. Tony and the office staff have kept in touch with me every step and still do now over a year later; I am very happy and would recommend Kiremko to anyone’. He added ‘I’ve had an absolutely mental summer, far busier than I expected; the range has been at maximum capacity for 8 hours solid a day and it has kept going and more, it’s the best equipment I have every purchased’.

Ship Ahoy! Scotrange has done it again, this time installing a 7-pan range on the only sail through fish and chip shop - McMonagles in Clydebank, Scotland . Saving John McMonagle so much money using less fat that ultimately his range could end up costing him very little!

J

o hn McMo nag l e, wh o own s McMonagles, the world’s only sail through fish and chip shop moored on the river Clyde, replaced his 15-year-old range, with a 7 pan Scotrange complete with built-in filtration last month after a need to increase capacity. Two years ago John signed up to Just East and now ranks No.1 in Scotland, increasing his sales four-fold since he started his business. Ranking No.1 with Just Eat in Scotland is exceptional as his business moors on the river Clyde and so his catchment area instead of being a 4 mile radius is a semi circle radius and on top of this is situated in a town, not a city! John realised that to increase capacity he needed a new range but, there was no room left on the boat. After learning about how reliable Scotrange is and also the service and aftercare being good John decided to contact MD Steve Wilkie, who said not a problem and to give double the capacity set about installing a 7 pan range. Johns produces two and a half times more volume of fish and chips now and Steve achieved this by increasing the size of the gas pipe to the new range which instantly boosted the gas getting through

to the range, the new range that Steve fitted has two pans less than the old range, this just demonstrates how flexible and innovative Scotrange is! Due to the way the range works, combined with built-in filtration, the lifes pan of the fat as vastly increased, infact John has not had to throw hardly any fat away, it is burning a lot less fat, so on a calculation of saving a £120 a week on fat, within 12 years the range could of paid for itself! It was very tricky installing a range on a boat and Steve manufactured it in two parts - a three pan and a four pan both sitting within one frame. While one range is being serviced, the other is still fully functional, an added benefit! Commenting on Steve’s ability to produce a range to meet the boat’s needs, John adds: ‘Steve’s advice was great. Even at the last minute he was changing things to improve the range. For example, we originally had flat glass in the hot box and Steve said it would look better curved, so he changed that at no extra cost to us. He also built little pins into the top of the range so that we can attach the checks and friers can clearly see customers orders. It’s all the little things like that that make a big difference. It’s not just John who’s clearly happy with the new range but customer’s too with some of the restaurant’s best Trip Advisor reviews coming in the last four weeks. The Story of J.J. Blackburn & Co. J.J. Blackburn & Co. is a family owned company manufacturing ‘BLACKBURN’ fish frying ranges since 1969. It was founded by John and Pat Byrom and Jesse Turner, (Pat’s father).

A

lthough the company has been trading for almost 50 years our association with the fish frying trade goes back to the early 1950’s as, in those days, Jesse was a commercial traveller selling to fish and chip shops in the north west of England. Subsequently, we have an in depth knowledge of the trade and, indeed, a true empathy and understanding of the requirements of the typical fish frier. Although John and Pat have sadly passed away the company has been run by their daughter Gill Byrom and husband Charles since 2000. Gill has been strongly influenced by the determination, dedication and hard working ethic of her parents to continue manufacturing a top quality range whilst also incorporating technological improvements where applicable. Examples of the changes in the ‘BLACKBURN frying ranges can be seen in the photographs enclosed. The white fronted range dates before 2000 where plain fronts were practically all that could be purchased as the advent of ‘exciting lighting’ had not yet occurred, whilst the others show how the design has changed to complement the desire of fish friers to modernise the look of their businesses. These are the cosmetic changes; the technological changes have been even greater to include all the necessary

requirements of CE certification and from the perspective of J.J. Blackburn & Co. to improve on efficiency figures, and ease of servicing the ranges as, of course, the easier it is to maintain our ranges the cheaper it will be for the customer to run them.

Our achievements thus far? We have continually manufactured ‘BLACKBURN’ fish frying ranges since 1969. The ranges were originally designed by John and continue to be developed by Gill. The company has remained in the same family for almost 50 years. Four who Train set for Awards Four of the UK’s leading fish and chip businesses have recently been announced as finalists in the Staff Training and Development Award for the 2017 National Fish & Chip Awards, organised by Seafish.

T

he four finalists - The Frying Squad in Bangor, County Down; John Dory’s in Lisburn, County Antrim; Fochabers Fish Bar in Fochabers, Moray and Papa’s Fish and Chips in Hull, East Yorkshire - will now go head-to-head as they compete for the top title in this award category, as part of what are regarded as the ‘Oscars’ of the fish frying industry. To secure a place as a finalist, shortlisted businesses have been appraised across a wide range of judging criteria including internal training policies and systems, training assessments to gauge the need for development, training support and forward plans for staff development. Over the coming weeks, the successful businesses will be subjected to unannounced judging visits from an awards auditor who will review the staff training and development practices, in addition to also ascertaining the level of customer service and quality of the fish and chips on offer. This final stage of competition judging will determine the overall national winner that will be announced at the awards ceremony to be held in London in January 2017. Sponsored by James T. Big-name act playing at MTV Crashes Plymouth recently went out for fish and chips ahead of their gig. With less than a few hours to go before day one begins, drum and bass quartet Rudimental said they wanted to experience the “true Plymouth” by grabbing a good ol’ portion of cod and chips before hitting the stage. Speaking backstage, Rudimental’s Piers Agget and Kesi Dryden said: “The weather was so bad when we got here that when we stepped off the bus, we were like ‘wow, let’s get back on the bus’.

“But it cleared up and I thought we’re going to go and get some fish and chips before our performance.” The stars walked into the Harbourside Fish and Chips and ordered their food. It is thought that they had in fact visited before. The band enjoyed their takeaway so much they told all of the audience! Eastside Fish & Chips (EFC) was created as a project of passion, between a group of friends and entrepreneurs. All being long-term Ex-Pats living permanently in Viet Nam our thoughts often drift to the things we miss from “Home”. We all have fond and proliferate memories of the Great Chippy Tradition. From “Mum’s night off”, Friday Chippy tea, to the after school “meeting place”, it was our Social network back in our day. Burgers and pizzas have become Global fast food behemoths, yet – despite an ingrained cultural tradition – Fish & chips retains its integrity in global popularity by the unique characteristics that made it great: Classic family/friend business model, community based, simple/healthy/ delicious food concept (with personal touches and individuality). This was too tempting to miss out on!

To provide a meeting point at the heart of beachside Da Nang for the “all sorts” that pass this way to enjoy humble food in a traditional value-for-money setting. Spot on chippy style beef and chicken pies and of course the Mighty Saveloy. We feed people well. Standard serves are 600g – in many cases a little more. Let’s face it, if you leave a chippy hungry, it’s not a chippy.

We work with key, well-established suppliers to ensure our ingredients have full provenance and of course deliver maximum taste explosion. Our Potatoes are classical “Atlantic” variety, which were imported to Viet Nam’s primary farming area, Da Lat, in the Central Highlands, in the early nineties. They are essentially their own strain of true Da Lat potatoes now. We purchase farm direct. Hand wash and peel. Parboil and triple fry.

The Family Twee It’s always been a family affair at The Elite Fish & Chip Company and now another member of the Tweedale family has joined the ranks.

L

auren Tweedale, 23, has joined the fish and chip chain at the Sleaford branch after relocating from Sheffield. Having worked in retail for the past two years, Lauren has made the move to be closer to family and to work in what she says is a trade that is in her blood. Lauren, who is the younger sister of Sleaford manager Rachel, said: “It’s great being back and working alongside my family, and in particular my sister. There’s a lot to learn but I feel like I’ve come back at the right time. I’ve worked out what it is I want to do with my career and to be part of the family firm is brilliant. “What I like is that there are so many options for me to progress within the company. As there are three very different restaurants and four takeaways, I’m spoilt for choice. With work also available at our Welbourne’s bakeries in Navenby and Ruskington, I’m going to be able to meet all my fellow staff, get to know our customers and learn so many new skills.” So far Lauren has been working at the company’s Sleaford branch, shadowing 38

her sister and reminding herself of the fast-paced takeaways and restaurant environment. “I’ve worked at the takeaway in the past, but there’s so much more to it behind the scenes. Guest of honour for the day was National Federation of Fish Friers president Gregg Howard, who welcomed everyone to the day and explained the importance of the day. More than 100 people gathered ( A NEW RECORD) at Isle of Ely Produce and were welcomed by host Chippy Chat Editor Austen Dack who delivered them the packed agenda for the day. Pete Legge, (from Legge Farms) took the visitors on a tour of part of his farm and talked through the process of what makes a great potato — from seed through to

We had some great presentations from award winning chip shops Towngate Fisheries, The Fish Bar Crewe, The Dolphin NI and Simpsons Cheltenham Andy Gray from Seafish told the chip shop owners about the launch of the findings of the largest piece of research into the fish and chip industry. Chris Prideaux from Tyco (Anul) talked about their fire suppression system, whilst James Low shared his situation regarding insurance when he was unfortunate to suffer three shop fires. In the evening many of the guests stayed

on in Ely and we went out for a meal and just a few drinks.
