Their senior management team, have in fact committed to undertake fundraising activities right throughout 2018, as just one of the exciting ways the Newcastle based business is planning to mark its milestone year. Blakemans have been confirmed as the headline sponsor for the hospice’s annual bike ride in May. This event will see entrants raise money through taking on a number of challenging courses from the MiniMac 9 mile route to the Ultra 90 mile course. A team from Blakemans will themselves be competing in the cycle event, with both participants and spectators being able to sample some of the manufacturers delicious sausages at a barbeque laid on by them at the end of the course. Other fundraising activity planned by the team at Blakemans during 2018 includes members of staff taking on the challenge of the Potters Arf Marathon, UK Corporate Games and Killer Mile, hosting a Fun Day at Newcastle Town Football Club and sponsored body waxes. A sustainable future for Fish City Belfast

ow the excitement has settled back to the daily drive of delivering high quality seafood for John and Grainne Lavery of Fish City in Belfast, the recent announcement of the business becoming the ‘UK’s Healthiest and most Sustainable’ is starting to sink in. This award-winning restaurant and takeaway has been winning awards since opening in summer 2016 and these latest two are the pinnacle as they were announced by Seafish and the leaders of their industry in London. Fish City was presented with the two UK awards, following their success in achieving a new and healthier offering to customers and ensuring that all of their seafood is sustainable. Developing new recipes and healthier choices for adults and children, John and Grainne continue to develop a unique experience which has a strong environmental focus and is core to Fish City’s ethos. “As well as enjoying good food, we want people to feel good about food and their contribution to ensuring our seas are protected for future generations”, stated John Lavery owner of Fish City, located on Ann Street Belfast. John explained how his experience of entering for the award has been a positive journey for him and his team. “Fish City’s foundations are 6

based on four buildings blocks: quality of food; sustainability; healthy eating; and education of those principles to our staff, and the general public. He continued, “Grainne and I have been fully committed to sustainability, protecting our oceans for future generations, and to healthy eating. We firmly believe they are interlinked and an integral part of the Fish City brand and its future growth. “We have endorsed the policies of the Marine Stewardship Council and the Marine Conservation Society and have been grateful for all of their support and guidance since our opening. Fish City is proudly the first retailer on the island of Ireland to be MSC certified and the first fish and chip corporate member with the Marine Conservation Society in the United Kingdom. “Since high profile celebrities, including Mick Jagger, endorsed the call for changes to our oceans, particularly with #nomoreplasic and now with further support published by Buckingham Palace, these issues are at last being talked about within the public arena and achieving the profile it deserves.” “A new European Strategy regarding plastics has been adopted, although how this EU Strategy will be implemented with Chippy Chat & Fast Food Magazine • April 2018

the proposed Brexit changes hasn’t been clarified, but again, it is a positive step forward” says John. “As well as ensuring sustainable seafood, we have taken measures in our business to remove plastic forks from our takeaway, adopt glass bottles for our restaurant table water, commissioned a recycling company to collect our waste and currently reviewing other ways the business can make a positive impact. “We have been proactive in building partnerships with various institutions and stakeholders. Among these are the Food Standards Agency in N.Ireland, resulting in Fish City being the first independent business to have achieved the ‘FSA Calorie Wise accreditation’. “We continue to work with schools through the Fish City Kids Club, to educate children of the importance of eating fish for a healthy diet and mental well-being. We also actively discuss the importance of sustainability and the protection of our oceans. “With our corporate colleagues, we work with local businesses, tourism agencies, food and restaurant associations to promote the fish and chip industry and our core beliefs. We know the strong link between tourism and business

hips have become a British staple, and we are often spoilt for choice when it comes to how to enjoy them, from sweet potato and crinkle cut to chunky and triple cooked. There are over 3.4 million ‘chip eating occasions’¹ in the UK, up by 1.8 per cent since 2016. The popularity of chip-based meals continues to grow, and there are no signs of this trend abating. Of course, one of the most popular ways to eat chips is with battered fish doused in quality vinegar, a great British classic. At a time when the choice of takeaways is endless, fish and chips remain a popular choice, with consumers eating approximately 167 million fish and chip meals a year². With a dish so steeped in tradition, it is great to see continued innovation in the sector, particularly to ensure the quality is high. More than one in three (36%) consumers visit fish and chip shops for the quality of food³, and we’ve seen such dedication to this through initiatives such as the National Fish & Chip Awards, which recently awarded Millers Fish & Chips in Haxby, York, the UK’s Best Fish & Chip Shop. Along with the demand for high quality and tasty dishes, the nation also remains traditional in its choice of accompanying condiments, with salt or vinegar voted as the most favoured topping, and

57% preferring vinegar to ketchup or mayonnaise.⁴ It’s important therefore, to ensure that the quality of the vinegar being used in our favourite dishes is also of an excellent standard. At Sarson’s, we are passionate about ensuring the quality of people’s favourite condiments match the standards provided by fish and chip shops. Complete with Digital Controls and Incorporating a ‘Three Stage Filtration ‘ for which we set the trend as we were the first to offer such a thing. ‘To the other extreme, Mario Crolla asked for something completely different for his new shop in Glasgow. He wanted a Gas Three Pan Basket Fry Range with a Built-in Electric Pan – why an Electric pan? Breaded Fish! In the West of Scotland they cook stones and stones of this extremely popular product known as a ‘Special Supper’. Wonderfry’s Wonder Range from Henry Nuttall Matthew Ashley owner of Wonderfrys in Bournemouth talks about his recent HN installation Have you had a complete refit of your shop? No, a partial refit mainly to the front half we’ve gone from a range island to a counter range from Henry Nuttall. It’s a big shop, there’s more control over a counter range and I feel more direct with my customers. How long have you been planning this? A little while now, our old range had started to cost money to maintain so it made sense to look for a new one. How are things since the refit? Good, we are taking more money and I have more control. The shop had been called Babers and we have rebranded to Wonderfrys. We have had the new name placed onto the range. How is the new Henry Nuttall range performing? The high efficiency fish pans cook very well and even after having them for a short while I think they use less oil. The installed Vito 80 is really good and gives you satisfaction that it’s cleaning oil better than you would. I compare it to having an electric toothbrush rather than a manual one. I use Frymax, the range and Vito system, they work well together. How does the high efficiency affect your level of service and food quality? It gives me a lovely consistent crisp batter in the fish pan and chips too.

What appealed to you about Henry Nuttall? Partly historic. I grew up with a HN Range in a chip shop in Weymouth. It hardly seemed to go wrong and the service was good. If my new range were to break down, it is easier to service and I can be back up and running very quickly. This makes servicing cheaper and means I lose less money in the shop. Pans can be changed in a morning without the need for welding. Amazingly the HN range went through the door, they completely break down to the frame so again less build time in fact our range went in within three weeks of our first meeting. Plus, the extractor system is great, the shop doesn’t seem to smell. How have you found the after sales service since you’ve installed your range? We had an issue with a burner so they came back and sorted it out. Jack Price the sales manager is my contact and despite bad snow the issue was resolved easily. Is there anything else you like? HN include an inspection hole for insurance purposes which makes it easier for us. Price wise we got great value too. Great technology/systems at a good price. The service plan is good too.

Fish and Chips Fuelled the Radio Star! As part of his Sport Relief Three Peaks Challenge BBC Radio 1 presenter Greg James made a pit stop at The Real Food Café, Tyndrum, Stirlingshire to refuel on their award winning fish and chips.

T

he broadcaster, who is undertaking the challenge affectionately known as the #Gregathlon for Sport Relief, had to abandon his previous attempt at the end of February as the country suffered the extreme weather conditions of the Beast from the East. However James vowed he would complete the challenge, and on Thursday cycled from Abington to Fort William ready to scale Ben Nevis on Friday 15th March. The BBC’s broadcast team was stationed en-route at The Real Food Café, a popular refuelling point, on the A82, for participants of the Three Peaks Challenge and welcomed him to the café around teatime along with a jubilant crowd of local supporters. The DJ and

his cycling team sat down to enjoy one of the café’s renowned fish suppers before speaking to some of the supporters who had turned out, as well as café owner Sarah Heward. Sarah said of the visit: “The café team has been following Greg’s journey since he started at the end of February and were sorry to hear that the weather had seemingly put a kibosh on his attempt. We were therefore delighted to hear that Greg will be completing the challenge, but also that he was stopping by the café on his way to Fort William. The café is always a popular re-fuelling destination for people taking the Three Peaks Challenge so we are very pleased that he decided to join us too. We do a lot of fundraising ourselves so it’s been wonderful to be involved with the Sport Relief event. The community always backs us with our charitable endeavours, and I was really pleased to see that a large number of them came out to send Greg on the next leg of his journey.” Situated under 50 miles south of Fort William, The Real Food Café in Tyndrum is well placed as a stop en-route for groups and individuals undertaking the Three Peaks Challenge, which traditionally finishes with Ben Nevis as the highest peak on the British Isles. Radio 1 DJ Greg James gave himself an additional obstacle for his Sport Relief challenge, cycling the 462 mile route between the mountains, which ascend over a total of 3,000 feet between them. The #Gregathlon took five non-consecutive days to complete and has raised over £800k for Sport Relief so far.

2018 British Kebab Awards Winners

MPs and Lords attended the British Kebab Awards VIP-studded ceremony recently at the Park Plaza Westminster Bridge Hotel in central London.

uests were treated to a cocktail reception, three-course Anatolianstyle meal and Bira, the first beer in the world to be brewed especially for kebabs. Chippy Chat Editor Austen Dack and IOE Director Oliver Boutwood joined them to cheer on the winners. Kebab businesses in every corner of England, Scotland, Northern Ireland and Wales battled for gongs in 16 categories from Best Newcomer to Best Fine Dining for the sixth annual awards. Interest has been so high over the last six years that the British Kebab Awards organisers announced the first National Kebab Week in 2019, set for February 11-17. This year members of the public nominated 5,012 of their favourite kebab shops. These were whittled down to a shortlist of 153 based on the number of public votes received with bonus points for nominations from MPs and councillors. Hygiene, online satisfaction ratings and the number of #BritishKebabAwards tweets of support that a contender got were also taken into account. Awards sponsors include headline sponsor Just Eat, a leading global marketplace for online food delivery, plus Booker/Makro, Cobra Beer, Big K, Alton & Co, Ace4Kebabs and Bira London. More Rabbit than Sainsbury’s!

With changeable weather to say the least the Easter period was a challenging one for fish and chips shops across the UK, but on the whole the nation still queued for their favourite dish especially on Good Friday when trade was brisk.

W

e were impressed by the amount of promotions ran during this busy time but one competition stood out as customers were encouraged to hop down to their local fish and chip shop! Olley’s Fish Experience in Herne Hill marked Easter by changing the shape of its chips and asking its customers to decide on the final version. With three Easterthemed varieties to choose from - lambs, rabbits and chicks whichever one topped the online poll was available from the Norwood Road chippy from Good Friday to Easter Monday in the takeaway and restaurant. Owner Harry Niazi comments: “Chips are one half of the nation’s favourite dish and the secret to what makes them crispy on the outside

and fluffy on the inside takes years of practice and experi-ence to get right. So it’s not often we change what we do, but this year we thought we would have some fun and get our customers involved too. Harry pays close attention to the variety of potatoes he uses and selects only the best A-grade products for his menu. Supper Up! For the last nine years, Britain’s fish and chips shops have been helping spinal cord injured people with the annual Great British Fish and Chip Supper. This year, we want to super-size the supper and make it the biggest ever – a year to remember!

A

n icon of great British food enjoyed on a summer sea front as much as a winter feast, fish and chips brings people together like no other meal. That’s why Spinal Injuries Association, the country’s leading supporter of people with a spinal cord injury is urging people to come together on June 1st (to coincide with National Fish and Chip Day) and enjoy a great British tradition, whilst also raising funds to support its work. Lynn, a teaching assistant from Nottinghamshire became a supporter of the great British Fish and Chip Supper after her brother who was paralysed in a motor bike accident, passed away. “The first fish and chips supper was hosted in our home, but it was so successful that next year we hired the local village hall and organised a quiz. I will never forget how Martin’s spinal cord injury impacted on him and the whole family. Having a charity there to turn to for help and understanding is vital. That’s why it’s great to support the Spinal Injuries Association in such a fun way, and with family and friends.” Lauren Theodosi from Spinal Injuries Association explained how fish and chips

We recently stayed at the captivating 25 Hour Bikini Hotel in Berlin

lying from Luton we arrived in Berlin in a little under 2 hours and sped through the city’s second airport. Armed with our Berlin Welcome Card we jumped on a train and arrived at our hotel in less than forty minutes.

The 25hours Hotel Bikini Berlin is as diverse as the big city and wild as the jungle. The Bikini Berlin resides in the bikini house in the City West. The restaurant and bar are located on the top floor with a surrounding terrace and combine the best view of the capital and the zoo. The past and the future come together in an exciting symbiosis in the West of Berlin, where innovative concepts and a heartbeat brimming with energy coincide with historic places. We booked into the (hotel) restaurant Neni, which matches award-winning gourmet cuisine with panoramic views from the top floor. We had the surprise menu, Balagan. A ramble through mezze,main course and dessert. Most fun with two or more people it tastes delicious! Innumerable plates with the most tasteful creations were served in a colourful mixture. And the more you are (there were 6 of us) , the bigger the spectacle.

We got a front-row seat of Berlin Zoo overlooking the monkey enclosure from our jungle room On the second evening we tried The Fish and Chips at Alexandra Strada . A growing company they are positioned at some of the biggest footfall sites in Germany. Their new design for Berlin Central station looks incredible. They offer you a full-fledged fish restaurant and attach great importance to their craft. As well as F&C’s they offered 13 varieties of finger, fresh fish, and 10 different fish rolls. Chips were blanched and were then fried to order and were actually rather good. Whilst their business model wouldn’t necessarily work here, their plans to grow are impressive and their branding is immaculate. On return to the hotel we adjourned to the floor for a night cap. Voted Europe’s best hotel bar The Monkey Bar on the 10th floor of our 25hours Hotel offers breath-taking views of the city and the zoo. And its terrace is the perfect place to relax. The rooms at the 25hours Hotel were quirky but fantastic. We got a front-row seat of Berlin Zoo overlooking the monkey enclosure from our jungle room. It even came complete with a hammock, which I promptly fell asleep on after a large gin (or two) from the bar on the first evening. Continued ¢

¢Continued The comprehensive breakfast is served in the Neni Restaurant. There is a super breakfast buffet and you can feast on a grand selection of hot and cold breakfast favourites. Sight seeing was easy in Berlin, we booked ourselves on a free walking tour to get our bearings on the first day, and then visited various museums and attractions using our Berlin Welcome Card which included a book which listed over 200 attractions to save money at! Public transport was free all weekend (with the card) so the small outlay more than paid for itself. Top tips included booking the Dome trip at the Reichstag for an early morning visit, taking Europe’s fastest elevator to the PANORAMAPUNKT at Potsdamer Platz(rather than the tv tower), and finding a local band playing in a club. We saw SPT (Stephen Paul Taylor) in the Privat Club, Berlin. A show full of energy and vigour as Bowie met the Men Without Hats. Thank you to all staff at the 25Hr Bikini Hotel for a wonderful weekend indeed. Berlin itself makes a fantastic weekend break. Our last beer stop was at the airport. Time for a litre of beer with Currywurst in a Bavarian Ski Lodge, opposite the departure hall! Currywurst seemed to be a very popular (but easy to make) dish in Berlin, one that is would easy to replicate on our own menus here in the UK, and could offer easy extra profit. remember the Chippy Bank opening in 1978, it having formerly been a shop owned by Bill “Billy Twin Tubs” Cubin, the businessman, councillor, former mayor, Stan Laurel museum founder and 24-carat local character. What I didn’t know, however (and despite the pretty major hint in its name) is that the Chippy Bank is housed in a former bank. Whatever, it’s chips this building is now famous for. While half the town seems to be queuing at the takeaway side of the chippy from about 5pm, those of us with higher culinary pretensions head to the saloon in order to experience the Chippy Bank sit-down service. We ordered fish, chips, peas and gravy all round, with a side order of curry sauce. With three cans of pop, our bill came to a shade over £25. We had to wait while the fish was fried, so we settled at a Formica table for four and wedged ourselves into the bolted-down seats in anticipation. Early evening and the place was heaving with customers enjoying that greatest of British pleasures - a sit-down chippy tea. The saloon is loud and bright, with harsh overhead lighting - what every self-respecting chip shop saloon would be. No one goes for the ambience, but there’s something reassuringly atmospheric about it, all the same. It’s also spotless and you could probably eat your fish and chips off the floor. Everything was fresh out of the fryer. The fish was thick, tasty and flaky, encased in the crispest of golden batter; the chips were just, well, stonkingly gorgeous; the peas perfectly mushy; and the gravy looked like liquid mud but tasted like liquid heaven. The Chippy Bank has remained largely and beautifully unchanged over the past 40 years. It’s stood the test of time very well and it is deservedly one of the bestloved businesses in town. The Chippy Bank in Ulverston doesn’t need to change a single thing - let alone its menu. I hope it remains as gloriously unchanged over its next four decades as it has since 1978. And if I’m still around at the age of 92, you can be sure I’ll be drooling at the thought of having tea there. The New Green Cross Code 2018 sees Weymouth award winning fish and chip shop Fish ’n’ Fritz going greener than ever. Owner Paul Hay is making sure the business is doing everything possible to make the business as green as it can possibly be

F

or years Paul has made sure that all the fish, Fish ‘n’ Fritz fries are sourced from sustainable sources, but now Paul is taking the business to a whole new level of greenness. The start of the year saw the installation of a new ‘Eco Friendly’ walkin freezer from Express Refrigeration that uses 33% less electricity with gas that has a GWP 3 (low greenhouse impact). Now the emphasis is moving onto plastic waste that is produced. All takeaway knives and forks have been replaced with wooden ones which come from sustainable forests. Paper straws have been introduced rather than plastic straws, that have a horrific impact on marine and bird life when they are carelessly disposed of. Their fish and chip boxes are fully recyclable, compostable and biodegradable. They are now made from 3 sheets of paper 2 of which

are recycled and the sheet that is in contact with the food is made from virgin fibres. All of the paper used is from sustainable sources and is FSC certified (Forest Stewardship Council). Paul is currently looking into ways he can change the takeaway bags from plastic to paper or vegetable ware. Paul says “Where we can, we are switching over to more environmentally and sustainable products. I am constantly looking out for new ways we can help improve the environment. The way I look at this issue is, if we can all do a little the world can change a lot.” It’s not the only initiative which Fish ‘n’ Fritz have embraced, their ‘Suspended Coffee Scheme’ has been a huge hit with customers and made a massive difference in the community, supplying hundreds of hot drinks and meals to homeless people.

Buyer’s Pride! Hundreds Flock to Fry-It show

I

t was the turn of Friars Pride to showcase some of the best our industry has to offer recently. The destination for the only Q Partnership show of the fish and chip season was show favourite, Peterborough. As ever the Isle of Ely Produce and Chippy Chat were present to gauge reaction and meet hundreds of shops from across the UK. We signed up lots of new partners and the team were enthused by the amount of enquiries we took The evening before key suppliers and shops were invited to meet up and enjoy a meal and a few drinks ahead of the big day itself. As usual we enjoyed ourselves to the maximum and met some fantastic people. On Sunday morning we made our way across to the showground. After a quick show brief we awaited the crowds. We were not to be disappointed. All day we were encouraged by a steady stream of shop owners and their families who were looking for the latest trends and offers from the participating exhibitors. I spoke to most of the exhibitors and they were happy with the amount of interest on the day and indeed orders that were taken. They were also given some excellent seminars from amongst others Peter Calvert the Drywite Young Frier of the Year 2018. All to soon It was time to head home. Here’s to the whole Friars Pride team especially Louise, Nathan and Charlotte for their hard work and hears to Fry-It 2019!

The Deep Fill Pies and Puddings are made with traditional fillings that have been passed down through generations, all encased in the baker’s unique shortcrust pastry. The Deep Fill pies are available in four tasty flavours – Cheese & Onion, Peppered Steak, Steak & Kidney, Potato & Meat, with the latest Deep Fill

addition, Steak & Kidney Pudding, now also available in the range.
