Billion Dollar Chips! Michael and Xochi Birch, the couple who founded social network Bebo and sold it for $850million, have bought Woolsery fish and chip shop, Devon and have re-opened it after a refurbishment.

S

peaking from his San Fransisco home, Mr Birch told the local Devon newspaper it was ‘a moment of madness.’ He said: “It made me feel very English; being American one has to keep clinging onto these things. “It was a relatively small project compared to

our other projects, but it is an important part of the village nonetheless.” Mr Birch said he was looking forward to visiting the chip shop soon, as good fish and chips are hard to come by in Silicon Valley. Manager Jay Oyarzarbal said the shop made everything in-house, using sustainable fish and local meat. This month’s featured fish and chip shop is in Norwich. The Grosvenor Fish Bar has been a family tradition for over 30 years. Serving freshly cut chips and perfectly battered fish, in a 1700’s listed building. In last year’s National Fish and Chip Awards they made the top 20 not bad considering co-owner Christian only took over from his father just 3 years ago.

C

hristian Motta, 43, worked for ten years in New York as an interior design and a costume designer for film and TV sets before returning to take over the Grosvenor Fish Bar from his father Mal. Mal Motta was born in Italy but grew up in Wales, where his father ran a chip shop in Caerphilly which was once visited by Welsh singing legend Tom Jones. “I always loved this shop,” he said. “I used to work in it when I was a 15 and when I had the opportunity to buy it and I thought it needed a face-lift so we renovated it as a project.

The Grosvenor Fish Bar is a long established traditional fish and chip shop, with a twist. Serving the usual chip shop fare, plus an interesting selection of sandwiches and wraps including sea bass, mackerel, tuna and rock salmon. They have seating downstairs for up to 50 – with ‘eat in’ and ‘take away’ at the same price. On my visit I took the alcohol route at the pub next door for If you want to have a beer or a glass of fizz with your meal, just order in the chippy and they deliver it to you at The Birdcage Pub just across the road. Soldiers who loved her experience was blogger ‘LelaLondon.’ “As it was our only full day in the city we had planned to cram in as much as we could. For fuels sake, we headed through The Lanes to experience the supposed magic Grosvenor Fish Bar. I never thought I would be able to praise a chippy…but YOU GUYS. This is the fish shop of all fish shops. Recently refurbished, the 90-year old Grosvenor Fish Bar is all the English tradition you could hope for with a retro Americana twist. With limited space at the ‘Bar’ itself, the owners have turned the lower floor into a cave of impossibly quirky bunker dining but have also teamed up with the adjacent pub – The Birdcage – should you want a tipple with your fish feast. Delivery included. Naturally, we did the latter. Surrounded by a gallery wall, trinkets, and smiling hipsters a-plenty, we placed

our gargantuan order and watched the door excitedly from our 70s-inspired chairs. Everyone’s heads turned as our order arrived. Taking up the entirety of our table, we powered through a Bass With Sass (crispy sea bass fillet wrap with lettuce and spicy mango salsa), Wako Taco (spicy steamed cod wrap, salsa, lettuce, cheese, sour cream), Shark Bites (shark nuggets served with a miso dip), a Cod Goujon (the classic), and fried pickles/battered gherkins with aioli. Coastguard Fish & Chips...

H

ayling’s premier fish and chip restaurant and take away is situated on the sunny South of the Island at Eastoke corner. The Coastguard Cafe was originally Coastguard Cottages. It was first established in 1942 by Victor and Annie Elliott. They opened the business as tea rooms, with a fish and chip takeaway next door. They also ran a fresh shellfish and a fruit and veg stall at the front of the building. The menu in those days consisted of cream teas, or eggs, beans, ham and peas etc. But in the 1960s you could order a beach tray, (which as its name suggests you could take it down the beach with you). And when you returned the crockery, you would get your 10 shillings deposit back which was equivalent to 50p in today’s money. The business has been kept in the family since 1942 till present day and is still run by Jeff Clark and his wife Caroline, also Jeff’s mum Irene who is now in her late 80’s still has an active role in the business. Their daughters Charlotte and Hermione work their too. Jeff tells us one of the secrets of their success in the fish and chip shop is using P100. “We only use the best ingredients, and after trialling all the leading brands we found that P100 outperforms its rivals. Add to that a very reasonable price, it makes it the right choice for our business. Although we have been trading since 1942 we always strive to stay ahead of the competition.”

Even then working for my parents it was apparent to David that all frying oils were different. “There Is No Substitute For Quality” says Andrew Marriott of Frymax

“I

Mr. Vella of Pizza Amore in Glasgow , a dripping user for 30 years switched to Frymax two years ago. “Since moving to Frymax my trade has increased by over 30%. ‘From Peeled to Frier’ James Houlston - YFF Finalist 2015 and Guest Editor

L

et’s go back to the start, I was 13 and needed a part time job to earn some money, Gregg and Caroline Howard had just opened their 2nd Our Plaice shop and they needed a potato person - perfect. I was trained in all aspects of potato preparation, there was a lot to learn but I had plenty of time. It started off as just a way of earning my pocket money doing a couple of hours every night after school but this was all to change, I had caught the bug and I wanted to learn everything else there was to know about fish and chips. After I had been working with the Our Plaice team for 2 years there was a chance for me to move on from just potatoes, even though I have learnt this is one of the most important and key aspects of our job creating the perfect chip - get this right and you are half way there. I moved up to being a runner for the frier and working on the counter serving; I was still only youngster but I had a lot of interest in the job I was doing. Working alongside the then current Young Fish Frier of the Year and Gregg Howard (a true captain of our industry) was a great opportunity for me to take in as much knowledge as I could. When I was 17 it was time for me to

move up to a full time frier but I was still new to fish frying in my eyes and still had a lot to learn before I was ready to enter myself into the Young Fish Frier competition. After 2 years of being a full time fish frier and asking as many questions as I could along the way, I felt I was ready to give Young Fish Frier Of The Year my best shot. The goal I set myself at 13 is finally becoming reality and it’s the best decision I have made. What a great 8 months they were. Entering the competition opens more doors in the industry than you could imagine and you get the chance to network with people with the same interests as you. Being involved gets you invited on trips to see all different sides of the fish and chip industry, we visited Isle of Ely Produce twice to see all sides of potato farming, we went to Amsterdam to visit Florigo ranges, Petershead White fish market and processing plant, Kerry foods took us to their flour mill, AAK oils gave us a tour of their oil factory. I am very passionate about our industry and it’s a great career for any young person to choose, fish and chips is our heritage and would encourage anybody to get involved, we are one big family. owpicker fish and chips is a dry dock gillnetter boat owned by Linda and Ron Ford. Found on the Oregon coast in Astoria. Their menu is pretty straightforward. Fish and Chips. Whole order or half order. Sodas. That’s it. It’s made fresh to order — crispy with a flaky interior. Sprinkle on a little malt vinegar and dip it in the homemade tartar sauce. This place is an old Bowpicker fishing boat that they pulled out of the water and converted into a walk-up food boat. They fry up fish as quickly as they can until they run out. So get there early! The local newspaper sums up the place nicely. Follow the old men, and you’ll find it.

Starting at 11 am, across Marine Drive from Astoria’s Columbia River Maritime Museum, you’ll see them waiting in a single-file line stretching down the steps and into the gravel. What they want is the same thing they had last time, the same thing they have every damn time, the only thing on the menu: The most famous fish and chips in Astoria. They are served in three-piece half orders and five-piece full orders out of a 28-foot-long, 1932-christened, converted gillnet boat called Bowpicker Fish & Chips, which for 15 years has been dishing out fish instead of hauling it in, from a parking-lot dry dock. In an old cannery town on the Oregon Coast, this is what passes for a food cart. (Across the street, the gas station has a falafel cart of the more traditional sort, but the line’s at Bowpicker). But don’t ask for halibut or cod or something. Astoria has no use for halibut. The breaded fish at Bowpicker is 100 percent Pacific Coast Albacore tuna, the steak of the sea, caught by local fishermen and fried lightly in a golden batter. And for a mere $10, you get five chunks of breaded albacore that add up to something like a half-pound. It is tender, and it is moist, and you do not need the lemon wedge. Heck, you barely need the tartar sauce—although you’ll use it. But damn: that tuna. There are no fine seafood restaurants in Astoria—none survive the tourist-free winter, said the man serving salmon chowder one morning. There is just this one amazing chip shack. Book, Line and Sinker Simpsons, Cheltenham’s famous chippy, have launched a book to educate young children on the journey of fish and chips from ‘field to fork’. The book will teach children about the source of their food and the truth behind where fish and chips come from.

T

he colourful book, titled ‘Where Do Fish and Chips Come From?’, follows main character ‘Bonny’ (the namesake of Simpsons Co-Founder Bonny Ritchie) on an adventure meeting the likes of Fisherman Frank and Farmer Fred. The book explores where their food is sourced from and how it is prepared. Co-Founder James Richie, from Simpsons Fish and Chips, said: “Teaching children the source of their food is incredibly important to us. Children often see food when it’s in packaging or cooked and ready prepared so we hope with our book to show little ones the process. In particular with Fish & Chips, how little is involved from sea to plate. Just fresh, natural ingredients, simply prepared and cooked.” Where Do Fish and Chips Come From?’ will be available from Simpsons Fish and Chips this summer. Simpsons launched the book recently at the Priors Road shop to schoolchildren from St Mary’s C of E Infant School.
